Summer Officially Starts at the 2014 OC Fair This Friday OC Fair Offers 23 Days of Fun, Food & All Things Fair Costa Mesa, Calif. (July 7, 2014) – The 2014 OC Fair starts Friday (July 11) and will run until Sunday, August 10 (Wednesday-Sunday) with food, carnival rides, exhibits and activities for all. During the first hour of the 2014 Fair, Fairgoers can take advantage of free admission and parking during Free Opening Hour (Friday, July 11, Noon-1 p.m.) The Fair is open July 11 from Noon-Midnight and features the following promotions opening day and each Friday: Seniors Day: $2 off Senior (60+) admission plus free Ferris wheel and merry-go-round rides all day. $2 Taste of Fair Food: Enjoy Fair food samples for only $2 from Noon-4 p.m. $2 Rides & Games: Sold until 4 p.m. The OC Fair will kick off its summer of headline entertainment with The Offspring / Adolescents in the Toyota Summer Concert Series at the Pacific Amphitheatre, Journey Unauthorized – A Tribute to Journey in The Hangar, and X-Treme Freestyle Moto-X in the Action Sports Arena. Pacific Amphitheatre and The Hangar concert tickets and Action Sports Arena reserved seats include with free Fair admission for the same day so ticketholders are encouraged to come early and stay late. New this year, the OC Fair will be host to the first-ever OC Brew Hee Haw (July 11-13) with craft beer tastings, demonstrations and exhibits. There will be five sessions with more than 60 craft beer selections from local breweries each. Each session costs $55 per person and includes free Fair admission. Art Projects, Marionettes, Balloons and More to be Enjoyed on Family Art Day at the Festival of Arts, Saturday, July 19 Families and children are invited to enjoy a day full of art and entertainment at the Festival of Arts Family Art Day on Saturday, July 19, 2014. From 12noon – 3pm, the grounds will be full of fun activities, hands-on art projects, and more! Family Art Day is free with Festival Admission, and children 12 and under receive free admission all summer long. When children arrive, they will be given a booklet containing coupons that they’ll redeem for different projects and attractions. Kids will be able to create their own works of art at the Festival’s ceramic and mixed media workshops. The Coto de Caza News is an independent weekly newspaper. We are not owned or operated by any of the big daily newspapers. No reproduction, in whole or part is permitted without the express written permission of the Coto de Caza
Shortly after Orange County was created in 1889, the Orange County Community Fair Corporation was formed. This group put on a small fair in 1890 that included a horse race and a few exhibits in Santa Ana. In 1894, another group, the Orange County Fair Association, Inc., took over The first Orange County Fairs were primarily livestock exhibitions and horse races. At the turn of the century, a “carnival of products” was added and the Fair became an annual event. In ensuing years, the Fair was held in Santa Ana, but after World War I it was moved to Huntington Beach for two years and then back to temporary grounds on East Fruit Street in Santa Ana.
In 1916, the Fair was taken over by the newly organized Orange County Farm Bureau. The first OC Fair Board was elected in 1925 and the Fair relocated to Anaheim, across the street from the Orange County Hospital. In 1925, a rodeo and carnival were added to the Fair. OC Fair Clowns After World War II, the state formed the 32nd District Agricultural Association and made it responsible for the Fair. The state then purchased land occupied by the Santa Ana Army Air Base and some of it was earmarked for a new fairground. The Fair was first held at the new site in 1949 and it soon was designated as the permanent Fairgrounds. In 1953, the City of Costa
Mesa was incorporated - the new city included the Fair’s location. From 1949 to the present, the OC Fair has grown from a small, community, fiveday celebration to a 23-day festival that is one of Orange County’s most eagerly awaited annual events.

Elks Lodge Honors the American Flag and Veterans in 2014 Independence Day Parade Mission Viejo / Saddleback Valley Elks Lodge No. 2444 (“Elks Lodge”) proudly displayed the American flag in its fifth year in the Lake Forest Ca Independence Day Parade with over 90 parade participants. The Elks Lodge delegation was led by the Elks Lodge Banner and members of the Lodge’s Boy Scout Troop 603 The scouts were followed by Elk members and their families handing out American flags, Elks Lodge key chains, American Flag mints, and American Flags plus other Independence Day memorabilia. Elks veterans, riding in convertibles, were honored in this year’s parade. Through the efforts of Past State Vice President and retired Fire Captain Harvey Boelts, the famous OCFA “Big John” fire engine accompanied the Elks Lodge members. It was driven by Mr. Boelts. The Mission Viejo / Saddleback Elks Lodge No. 2444, celebrating forty-four (44) years of service to the Saddleback Valley communities, is one of ten lodges in the Orange Coast District of the Benevolent and Protective Order of Elks (BPOE) whose headquarters is in Chicago, Illinois. Guests learned a little bit about refining their palettes at a special wine seminar with acclaimed Sommelier Margaux Pierog Kugelman, followed by the wine tasting featuring products from 18 wineries. The event netted $44,160 for Boys Town California. “I feel fortunate for the support shown to us by the local community, in helping make the second annual Uncork for Hope a huge success,” said Adam Miller, chair of the Uncork for Hope Committee. “I have immense gratitude for our title sponsors, First Team Estates and Christie’s International Real Estate, as well as our other sponsors, our host venue the Center Club, and the contributing wineries. I had a conversation with a patient the other day, an eighty-five year old doctor (retired). We were discussing how, when, in the 1960’s I was a hospital corpsman in Dr. Michael Tessier the Navy and he was an established physician, we were just starting to use new needles on every patient, as opposed to re-sharpening old ones. The old way sounds so barbaric. That got me thinking about the other things we do today to make dental work easier and better. Thirty-seven years ago, while in dental school, there was nothing that bonded to tooth structure. Today we can bond a 0.75mm thick porcelain veneer to the front surface of a tooth, dramatically improving its appearance while removing a lot less tooth structure. The old analogue x-rays required some nasty chemicals for development. Today, digital x-rays go right into the computer, where they can be e-mailed to anywhere in the world. The definition is dramatically better, and the amount of radiation they expose the patient to is way less than walking around in the sun. We also take digital panographic x-rays which are totally extra-oral, and show a complete picture of, say, the wisdom teeth and surrounding tissues, or any bone abnormalities like cysts or even bone cancer in the jaws that regular x-rays don’t pick up.

I wear a battery-powered headlight that gives me better illumination than I’ve ever had before (no more working in the dark). For smaller cavities, we use a sandblaster istead fo the drill. No anesthetic is required, and there’s no heat of friction which otherwise might result in fractured teeth in years to come. Replacing missing teeth is still done with fixed tooth-colored porcelain bridges (don’t come out) bridges made of toothcolored porcelain and have no unsightly or irritating external hardware. Alternatively, implants are as close to 100% reliable as anything ever is, they don’t involve the teeth on either side of the missing tooth. Frequently, where a root canal on a questionable tooth used to be the only option, now that offender is removed and replaced with an implant. We’ve been using a laser for the past six years to treat gum problems. The old way of using a knife to cut the gums and peel them off the bone to fix a defect in the boney socket in which a tooth is situated was very painful for about seven to ten days after the procedure. Today, the laser allows us to avoid the knife and sutures and the post-operative pain, and we can actually expect the gum tissue to re-attach to the tooth structure. 6th Annual Sarah DeMille 5K Memorial Run: Saturday July 19th Santa Margarita Catholic High School will host the sixth annual Sarah DeMille 5K Memorial Run on Saturday, July 19, 2014. The 5K is held in memory of Sarah DeMille (SMCHS Class of 2005). Sarah was a four-year cross country and track athlete at SMCHS who had a deep love for her sport and teammates. The Sarah DeMille Scholarship Award was set up in remembrance of Sarah Ashley DeMille. Sarah tragically died in an automobile accident while away at college in 2006. While attending Northern Arizona University, Sarah volunteered to accompany a friend driving a fellow student at NAU home for the weekend so the driver would not have to make the long trip on mountain roads back to NAU alone. The student driving the car lost control while trying to avoid hitting a deer that ran across the road. The run raises funds for the Sarah DeMille Memorial Scholarship Fund. The Sarah DeMille scholarship is awarded each year to a member of the girls cross country team who has a passion for running and her teammates, just as
Sarah did. The money goes toward college expenses. A large turnout is expected for this year’s celebration. The event includes a challenging 5K run for runners of all ability levels, one-mile fun run for kids 10 and under, goodie bags, t-shirts, a variety of vendors, music, and a pancake breakfast. Sarah’s family resides in Dana Point. The DeMille family has been instrumental in planning the event and will be in attendance. “I believe Sarah is there watching, cheering and challenging every runner to give their best just as she always did,” said Gil Garcia, head coach of Santa Margarita’s girls cross country team. “My hope is that all of you will join us on July 19. Whether it your sixth time or your first time, I am positive you will have a great experience.” This course is the SMCHS Cross Country home course and features times comparable to what you would run at Mt. SAC. This is a break from your normal summer road racing series and a chance to get out in the hills.

the history of the Sawdust festival The Sawdust was originally called the Laguna Artists and Gallery Owners Association after breaking away from the Festival of Arts in 1965, in protest of that show’s jurying system. That first festival was located on a vacant lot at the bottom of Park Avenue (on the Peacock lot) with only a few dozen exhibitors. It was called the ‘Rejects Festival’ by the media. There was no show in 1966, but the show did reappear, with more exhibitors, in 1967 on an empty lot on North Coast Highway (The Kronquist lot). That show was a great success and led to the artists moving to its current location on Laguna Canyon Road, leasing the property from Walter and

Dorothy Funk, and when the artists spread sawdust on the ground to combat the dust and mud, the media called it the ‘Sawdust Festival,’ and that name has identified the show for decades. Looking for room to expand, in 1968 the show moved to its present three-acre site at 935 Laguna Canyon Road, welcoming one and all with the promise to educate the public as well as provide a sales outlet for unrestricted art.Today, artists demonstrate their art in designated “demo” booths where the public is invited to participate, as well as working in their own booths. The lovely eucalyptus grove with its rippling waterfall provides an irresistible background. The Sawdust Art Festival is truly a local event. All artists exhibiting in the festival are residents of Laguna Beach. Unlike some other non-profit organizations dedicated to the arts, the Sawdust Art Festival’s administration is made up of exhibiting members. Each year, exhibiting

One of the first facades ~1978~ artists are elected as members of the Board of Directors. In addition, booth locations are determined by an annual lottery, usually held in February. Because the show is nonjuried, enthusiastic amateurs display their work along with accomplished veteran artists, providing the spice and variety that make every show different from the last. In keeping with the spirit of its beginnings, the Sawdust Art Festival intends to be different from other art shows, visualizing itself as an artists’ “happening” rather than a stuffy exhibit. To that end, the artists
themselves build a unique village of individual booths from the ground up each summer. The architectural designs are as varied and interesting as the work they showcase. Once the booths are finished, the sawdust goes down, the landscaping goes in, music fills the air and once again the Sawdust Art Festival magically returns for another summer. PROTESTORS, PONIES, PROXY PROBLEMS POSTPONE OAK GROVE COTO EQUESTRIAN CENTER TAKEOVER
Picketers protest hostile takeover meeting
Superior Court May Get One More Opportunity to Rule on Hostile Takeover The July 2nd Special Meeting and vote to recall the Silver Bronze Corporation Board of Directors,(which owns the Coto de Caza Equestrian Center), elect a new SBC Board of Directors and to amend the SBC Bylaws has been eagerly awaited, and was attended by approximately 128 present and former Coto de Caza residents, and Equestrian Center members. Oak Grove officials who had organized the takeover meeting arrived early at the Coto Valley Country Club to find 23 mounted horsemen and another 37 protesters, some carrying signs which read” Horses not Houses”, and” Save Our Horses Say No to Rezoning the Equestrian Center for Housing Tracts”. Inside the Clubhouse where the special meeting was held, however, roughly 100 proxies, which Oak Grove claimed represent a “majority of the SBC Equity Members” that were given to SBC Directors Randy Bruska, Robert Atkins, and Signe Radovich were not accepted by the Ballot Box, the election service counting the ballots, reportedly based on legal advice from Tom Brockington, a lawyer with Rutan & Tucker. Chase Exon, a corporate lawyer with O’Melveny & Myers in Newport Beach, who was present at the Special Meeting, argued that the roughly 100 proxies were valid and should be counted, to no avail. Silver Bronze Corporation Board of Directors Board President, Ken Agid, then adjourned the Special Meeting Protesters on horseback outside Coto Valley Country Club for lack of a quorum. In recent days certain concerned Coto de Caza residents expressed their worry about the hostile takeover of the Silver Bronze Corporation, which has 188 members, many of whom no longer live in Coto. There is a contingent of members who would like to monetize their memberships. Robert O. Hill of Oak Grove LLC has purportedly offered $30,000 to some SBC members for their memberships. His statements that he intends to have houses built on portions of the Equestrian Center and the Merryhill School property have apparently frightened many Coto de Caza residents but the prospect of building homes in this area may not be the most terrifying thing about the possible Oak Grove takeover of the Coto de Caza Equestrian Center. They cite a couple of even more disturbing facts. One of which is that Mr. Hill already knows that he cannot develop a residential property on a small part of the Equestrian Center for many reasons including the fact that literally hundreds of Coto de Caza residents are opposed to such a development including The CZ Master board of directors which passed a resolution to not support any zoning changes or changes to the Coto Specific Plan relating to the Equestrian Center and all abutting properties (Merryhill School, General Store and Maxwell Stables). Also, the board of directors for Los Ranchos Estates, is reporting that its’ position Orderly crowd attends July 2 special meeting to recall Silver Bronze is the same as CZ Master. Similar policy positions have reportedly been taken board by the Coto de Caza Village Homeowners Association, and the Rancho Colinas Homeowners association. So in the face of all of this opposition and realizing he cannot build any residences on this property, why is Oak Grove so desperately pursuing the hostile takeover of the Coto de Caza Equestrian Center? The most alarming reason may be found in Mr. Hill’s own statements that he “is not in the business of building homes”. He states that he acquires properties and sells the properties to other developers. So if instead of acquiring only a small portion (4.8 acres )of the Equestrian Center, what if he and his Oak Grove comrades acquired the entire 29.5 acres?(Note: this will actually happen if he is able to remove the entire board at the August 13 Silver Bronze meeting.) By converting the non-profit Silver Bronze Corporation to a profit making corporation he could begin rapidly raising the Equestrian Center rates to unbearable limits until all of the horses were forced to move out. The empty and unprofitable former Equestrian Center could then be promptly demolished and the neighbors would have no choice but to allow Mr. Hill and his Oak Grove comrades to sell off their 29.5 acres of prime Coto de Caza property for development. While this scary scenario might still be prevented by the Superior Court hearing sometime around August 8th, it could probably never happen in Coto de Caza. Summer jobs: stepping stones to something bigger As millions of high school students prepare to head back to the classroom in just a few weeks, many may reflect on their summer jobs serving tables, operating cash registers, tracking inventory and assisting customers. To most, those summer jobs were solely for the purpose of having a little extra cash, or maybe to build a college resume. But students should consider the long-term knowledge gained in such a short span of time. These hourly positions often provide the building blocks for something bigger to come in the future: a career. The restaurant industry hires hundreds of thousands of seasonal employees every summer, including high school students getting their first taste of the working world. Onehalf of all adults have worked in the restaurant industry at some point during their lives and one out of three adults got their first job experience in a restaurant, according to the National Restaurant Association. But can summer jobs in restaurants lead to bigger and better things? Research shows that nine out of 10 salaried restaurant employees started in hourly positions, and 80 percent of restaurant owners began their industry careers as hourly workers. Nearly all restaurant employees say Page 22
the industry is a good place to get a first job and learn basic working skills. Even if you didn’t have a summer job in a restaurant, it’s still a hot spot for career opportunities. This year is the 14th consecutive year that the restaurant industry is posting stronger job growth than the overall economy, with employment now totaling more than 13 million. Eightyeight percent of restaurant employees say restaurants often provide the opportunity to start at the bottom and move up to management. And it’s going to keep getting better. The National Restaurant Association projects that restaurant and foodservice outlets will add 1.3 million new positions over the next 10 years. It’s no wonder training for a career in this growing industry is on the rise. Nearly every state in the U.S. - 47 in total - now implements ProStart, a two-year program that brings the industry and the classroom together to give 95,000 high school students across 1,700 schools nationwide a platform to discover new interests and talents, while opening doors to fulfilling culinary and restaurant management careers. ProStart is just one of the programs offered by the National Restaurant Association

Educational Foundation (NRAEF), which is committed to ensuring it supports the development of a highly-trained and professional talent pool through scholarships and educational programs. Since 1997, the Foundation has granted $15 million in scholarships to students and educators, giving them a jumpstart on successful careers. In addition to the ample employment opportunities the restaurant industry provides, its employee base is incredibly diverse, consisting of people from various backgrounds, speaking many languages and with different skill sets. Eighty-one percent of restaurant employees say the industry is a place where people of all backgrounds and experience can open their own business. Millennials make up a large percentage of today’s workforce and this group tends to gravitate toward organizations that do good for others. In fact, Jim Lewis, CEO of the National Society of High School Students, recently told Forbes that Millennials are responding to companies that focus on helping others and want the sense that they are giving back to the community. And restaurants are certainly part of that trend. In fact, more than nine
in 10 restaurants are involved in community service.-For the past 15 years, the NRAEF, in partnership with American Express, has presented the annual Restaurant Neighbor Award to celebrate this outstanding charitable service performed by restaurant operators. It’s companies like these that will continue to attract Millennials as they seek out career opportunities with socially responsible companies. As summer comes to a close and students return to school, they can feel confident in saying they not only spent their summer making some extra spending money in a restaurant, but also had the opportunity to build a foundation for a bright, fulfilling career.

July 16th is the We Care Wednesday community Food Drive at the OC Fair
In addition to offering an unusual assortment of delicious food and summer fun, OC Fair officials have made a commitment to address some social problems impacting people in our local neighborhoods. On Wednesdays, the 2014 OC Fair offers Fairgoers the chance to give back while saving on admission with the We Care Wednesday community donation drives. July 16th is the We Care Wednesday community Food Drive, taking place from Noon–3:00 p.m. Donate five (5) cans of non-perishable food
and receive one (1) free entry ticket and one (1) free carnival ride good for that day only. Representatives from the County’s two main Food Banks will be on-site to collect and later distribute the donated canned goods. “The food donated during the OC Fair Food Drive will help supply the Food Banks during the lean summer months when food donations typically decline,” said Mark Lowry, Director of the OC Food Bank. Last year the OC Fair Food Drive collected nearly 40 tons of food which allowed thousands of meals to be provided to vulnerable families living in Orange County. The OC Food Bank and Second Harvest Food Bank supply nearly 40 million pounds of food annually to hundreds of Orange County churches, soup kitchens, shelters, senior centers, and social service organizations. Those organizations provide food to homeless individuals, unemployed persons, individuals with disabilities, seniors living on fixed incomes, and the working poor. The 2014 OC Fair’s theme this year is “Summer Starts Here”
