SMCHS Football Coach Harry Welch to Retire at End of 2013 Season Santa Margarita Catholic High School and Coach Harry Welch are announcing his retirement at the completion of the 2013 season. Coach Welch, now in his fourth season at SMCHS and beginning his 25th season as a high school head coach, has been one of the most successful coaches in the history of high school football in Southern California with 3 State Championships and 9 CIF titles. Coach Welch was named the third Head Football Coach at Santa Margarita on January 21, 2010 after 18 successful years with Canyon High School of Canyon Country (1982-93 and 2001-06) and three at San Juan Capistrano’s St. Margaret’s (200709). He enters the 2013 season with a 31-8 record as head coach of the Eagles, and a 252-55-2 lifetime mark, 10th amongst active California high school football coaches. Welch will retire after his 25th season as a head coach and 42nd year of coaching overall. Principal Ray Dunne, in an email to Eagle football parents expressed the school’s gratitude for Welch and his contribution to SMCHS. “Coach Welch has had a long and distinguished career, achieving significant milestones not only in wins
and championships, but very importantly in the way he has had a lasting influence on the lives of young men” Dunne said. “We are very fortunate to have had Coach Welch at the helm of our football program.” Coach Welch took over an Eagle football program at a low point in the school’s history. Welch took a 3-win team from 2009 and led them to a 9-3 record in 2010, including a trip to the CIF-Pac 5 second round. The next year, the Eagles finished with a 13-2 record, winning the CIF-SS PAC-5 Championship over San Clemente High School and went on to win the Division 1 CIF-State Championship with a thrilling victory over Bellarmine Prep of San Jose, 42-37. Last season the Eagles overcame injury and loss of quarterback Johnny Stanton, now at Nebraska, to advance to the CIFSS Pac-5 quarterfinal where they lost to St. Bonaventure, 21-27, ending the season with a 9-3 record. Coach Welch began as a head coach at Canyon High of Canyon Country in 1976. Michael Chang will be hosting his 3rd Tennis Classic this summer, July 26 – 28th, on the courts of the Newport Beach Tennis club. The former French Open champion and world #2 tennis professional, desires to improve the tournament year after year and make it distinctly different from other tennis tournaments held in Southern California. The main tennis tournament is a USTA Sanctioned event including Men’s and Women’s singles, doubles and mixed doubles with prize money awarded in the Open divisions. Newport Beach Tennis Club is the host site this year and as a special addition to the tournament, Newport Beach Tennis Club will host a Saturday night player party to include dinner and live music. Once again, the MCTC will open the tournament to a Non-sanctioned High School division. This tournament will host both boys and girls in singles and doubles, with scholarships awarded to high school tennis programs of the winning players. Eligibility includes players ranked outside the top 75 in SoCal. The High School division is positioned to energize players who may not otherwise consider tournaments. Additionally, there is an atmosphere of school spirit and camaraderie amidst the players plus a few surprises and gifts. This year’s charitable beneficiaries will be the Prince of Peace Children’s Home in Tian-

jin, China and The Chang Family Foundation. The Prince of Peace Children’s home was built to provide a loving place for orphan children with special needs. All of the children at POPCH have congenital illnesses, and most are affected by cerebral palsy or Down syndrome. While under their care, POPCH seeks to provide the children with a clean and loving home and to connect them with the best possible medical/surgical care and rehabilitation services according to their individual needs. The Chang Family Foundation dedicates it’s time to community service, and programs that combine sports, family, and faith. Last year’s charity tournament raised $20,000 for Habitat for Humanity and the Chang Family Foundation. The tournament hopes to raise even more this year for these impactful organizations. The 2013 OC Fair Opens This Friday Come & Get Free Admission & Much More Costa Mesa, Calif. Disney’s Mulan Replaces The Lion King During Segerstrom Center’s Movie Mondays on July 22
Segerstrom Center for the Arts’ free Movie Mondays will now present Disney’s Academy Award-nominated animated feature Mulan on July 22. Three Eagle Water Polo Players Named 2012-2013 All-American’s
Three SMCHS Eagle Water Polo players were recently named to the 2012-2013 NISCA/Speedo Girls All-America Water Polo Team. Recent Eagle graduate and now UC Berkeley student-athlete Emily Loughlin ’13 (San Clemente, CA.), and seniors to be, Kacey Avalos (Lake Forest, CA.) and Haley Wan (Irvine, CA.) were recognized as High School All-Americans by the National Interscholastic Swimming
Coaches Association, Emily and Haley received 2nd Team recognition while Kacey was placed on the 4th team. In addition to be recognized as a High School All-American’s, each student-athlete was also recognized as All-League and AllCIF team members following the 2012-2013 season in which they won the program’s 11th League Championship and claimed the
CIF-SS Division II Championship (program’s 2nd). In addition to being named All-CIF, Wan earned the Orange County and CIF Player of the Year honors. In order for a player to be considered as a NISCA High School All-America, athletes must compete for an interscholastic team and be scholastically eligible as determined by his/her state athletic association or school authority.
Avalos, Loughlin and Wan are the first All-American’s for the girls’ water polo program since Mackenzie Beck earned 4th team honors in 2011 and honorable mention in 2010. Avalos, Loughlin and Wan were 3 of 137 athletes nationwide to make the All-American team, 48 of which came from California, more than any other state by at least 30.
Lodge Honors Military Vets in Independence Day Parade The Lodge honored vets during its fourth outing in the Lake Forest California Independence Day Parade. The seventy-five (75) member Lodge delegation was led by the Lodge Charity Banner with members of the Lodge’s Boy Scout Troop 603 carrying the American Flag and other patriotic flags. The scouts were followed by Elk members and their families. Elk Members from all Saddleback Valley communities marched in the parade. The marchers were followed by thirteen (13) bikers from the San Juan Capistrano Eagles and six (6) convertibles and sports cars carrying eight (8) military veterans from World War II, Korea and Vietnam. At the back of the Lodge delegation was OCFA Fire Truck, “Big John 2”, driven by retired Laguna Beach Fire Captain Harvey Boelts. Mr. Boelts is a Past Lodge President currently serving as California-Hawaii Elks Association State Vice President for the Orange Coast District.
With siren engaged and the broadcasting of recorded messages about fire safety, Big John 2 was a “Big Hit” with the crowd lining the parade route. David McLeod, a Lodge vice president and chairperson of the parade committee said, “The Lodge members and their supporters extend their thanks to the Lake Forest community for inviting us and many other worthy groups to participate in this Independence Day Parade. Also, tremendous thanks go to the OCFA for the use of the Big John 2 Fire Engine. John Adams and the other founding fathers would be proud of this parade celebrating out nation’s independence.” Lodge Charity Banner and Boy Scout Troop 603 members. After the parade, the marchers went back to the Lodge for a barbeque where over 160 meals were served. More than twenty (20) Lodge volunteers helped organize and run the parade and barbeque.

The Adoption Guild of Southern Orange County kicked off the 52nd Annual Roy Emerson Adoption Guild Tennis Classic with its Tournament during the day, and then held a rocking Kick Off Party. Under balmy skies and a beautiful sunset, The Guild welcomed approximately 450 guests; Players and Non-Players alike, to The Tournament Kickoff Party, held poolside at the beautiful Newport Beach Tennis Club. Opening rounds for the Tennis Classic were held at Palisades and Newport Beach Tennis Clubs. Approximately twenty-one local restaurants and vendors donated fare for the hungry guests, including Brown-Forman, Estrella Damm, 3-Thirty-3 Restaurant, Amelia’s, Garduno’s, California Pizza Kitchen, La Cave Restaurant, Ho Sum Bistro, Sabatinos Sausage Co., Avila El Ranchito, Blue Water Grill, Quiet Woman, Rubio’s Restaurant, Newport Rib Co., Il Fornaio Restaurant, Newport Beach Tennis Club, Trader Joe’s, Hi Time Wine Cellars, Starbuck’s Coffee, Woodys Diner, and Nothing Bundt Cakes. The evening’s menu included delectables such as Salmon Street Tacos Meg O’Maley with Cary Hoyt, Jim Brandford, Val Gray Adams and cooked on site, Asian BBQ Ribs, Bacon Mac and Cheese, Beef and Pork Diane Mondini Sliders, Tequila Chicken Pasta, sausage and peppers, with cheesecake, assorted pastries, Bundt cake bites and Starbucks coffee for dessert. A tasting of Jack Daniels Tennessee Honey shooters was a new addition to the menu which was a crowd pleaser. Island Guitarist Freddy Zuma entertained the group during dinner, then everyone cut lose dancing to midnight to the sounds of Steve Donn & The Heart-N-Soul Band. A Photo Booth kept Guests entertained as well. With the kick off of the Roy Emerson Adoption Guild Tennis Classic, the Guild extended thanks to Party Underwriters Tom Carr, Dennis Claus, Ron De Avila, Jason Fisher, John Healy, and Tom Ochs, as well as its major corporate donors, Union Bank of CA, Coca Cola, Hi Time Wine Cellars, Dunlop Sports, William Harold Jewelers, Stephen and Pam Fossler, and Jackie Glass/the Kling Family Foundation. Chairman Laurie Moroch On Semi-Final Saturday, spectators were be treated to a Silent Auction offering items such as San Diego Charger Football tickets, men’s and women’s shades by Oakley, a hair makeover by legendary stylist Laurel Chirico of Platino Salon, a 3-day stay at a Mammoth Lake Condo, a 3 month Membership to Palisades TC and RCI, gift certificate to Marbella Tennis Club clinic, brunch and a night’s stay at the Balboa Bay Club, original paintings by two local artists, a gift basket filled with products by La Mer, and a host of other treats were offered to guests for their bidding with all proceeds from both events going to the Adoption Guild. For over fifty years, the Adoption Guild of Southern Orange County has supported Holy Family Services Adoption & Foster Care Agency. With the hope of giving every child an opportunity to have a loving family, dedicated Adoption Guild volunteers work each year to present two major fund-raising events: the Patroness Tea and Roy Emerson Adoption Guild Tennis Classic in May. Cancer, itself, is not contagious, but the human papilloma virus is contagious, but the lesions of several strains have a predisposition to become cancerous.” But” says Dr. Tessier, “regular checkups from your dentist keep you free from these diseases and give you a sparkling smile as a bonus. Like all diseases, early detection is a big key to control and cure. When our office cleans and examines your teeth every six months,
that’s a great opportunity to do a soft tissue exam, along with examining the teeth, the bite, and the temporomandibular joint (TMJ) condition. We look for changes or irregularities in the soft tissue, spots, white patches, or raised (hyperplastic) tissue areas. We carefully check for lumps deeper in the tissues, in the lips or cheek tissues. “Of course we always give your tongue a close examination, particularly the sides of your tongue,” says Dr. Tessier. “We routinely and carefully examine the tongue with a mouth mirror and having our patient say, “Ahhh”, not “Ehhh”, allows better visualization of the back of the throat. And, the doctor adds” the lymph nodes should be checked to see If there is cancer growing somewhere- a malignancy- in the head and neck region. The lymph nodes will try to collect or filter the metastasizing cells out of the blood-stream. They will become swollen, sometimes visually apparent, and/or tender to the touch. There are lymph nodes along the border of the lower jaw, or a chain of them running down the front of the neck, or more at the base of the skull. Early detection is the name of the game,.” We’re all living longer, and we’ll need good health to achieve that.. So it is my pleasure to have all of these good things we can do to make that happen. It’s better to have teeth left at the end of your life, rather than life left at the end of your teeth. Yield: 4 to 6 servings For Crispy Fingerling Potatoes 1 pound small Yukon gold potatoes cut into wedges Kosher salt and freshly ground black pepper 3 tablespoons extra virgin olive oil 1 teaspoon roughly chopped fresh rosemary leaves, plus a couple of sprigs For Steaks Kosher or coarse salt and freshly ground black pepper 4 3/4-pound bone in rib-eye steaks, about 1 inch thick 1 large shallot, thinly sliced 1/2 cup aged balsamic vinegar 2 tablespoons unsalted butter For potatoes: Place the potatoes in saucepan and cover with cold, salted water. Set over high heat and bring to boil. Cook until potatoes are fork tender, about 10 minutes depending on size of potatoes. Drain and rinse under cold running water. Pat potatoes dry with paper towels and season with salt and pepper to taste. Set potatoes aside and begin steak. For steak: Sprinkle large cast-iron skillet with kosher or coarse salt; heat skillet over high heat for about 8 minutes, then add steaks. Sear until steaks are crusted brown, about 4 minutes; turn steaks. Sear to desired doneness or about 6 more minutes for medium rare. Transfer to cutting board and let rest while you make sauce. Wipe out pan and add shallot; cook, stirring, about 1 minute. Slowly add vinegar and 1 tablespoon of water and bring to a boil. Stir continuously until reduces and thickens, about 2 minutes. Remove pan from heat, swirl in butter, and season with pepper to taste. Drizzle sauce over steaks just before serving. To finish potatoes: Heat olive oil in large skillet over high heat. When hot, add seasoned potatoes, cut side down, and rosemary. Cook until golden and crispy, about 2 minutes per side. Sprinkle with additional salt and pepper to taste.
Red Wine and Vanilla Bean Panna Cotta
Yield: 6 servings 1 orange 1 cup blackberries and or raspberries 1 vanilla bean, cut in half 3 cups Las Rocas Garnacha wine 2/3 cup sugar 1 cup whole milk 1 1/4-ounce packet unflavored powdered gelatin 2 cups whole Greek style yogurt Fresh mint sprigs for garnish Remove a wide, 2-inch-long strip of zest from orange with sharp paring knife. Peel and segment orange and toss with blackberries, cover and refrigerate. Scrape seeds from vanilla bean. Place seeds and pod in small saucepan. Add wine, 1/3 cup sugar and orange zest strip. Simmer over medium-low heat until reduced to 1 1/4 cups, about 35 minutes. Discard vanilla bean pod and zest strip. Cool completely. Set aside 1/4 cup for serving. Combine milk with remaining 1/3 cup sugar in medium saucepan. Sprinkle in gelatin and let stand, undisturbed, until gelatin softens, about 4 minutes. Cook over medium heat, stirring occasionally, until gelatin and sugar are just dissolved (do not boil); let cool. Whisk in 1 cup of wine reduction and yogurt until smooth. Pour into six 6-ounce ramekins or jars, cover and refrigerate until set, at least 3 hours or overnight. If using ramekins, dip bottom of each ramekin in warm water to loosen. Invert each panna cotta onto a plate. If using jars, skip this step. Drizzle panna cottas with reserved wine reduction and garnish with oranges and berries and sprig of fresh mint.
Goat Cheese Crostini with Grilled Peaches, Serrano Ham and Marcona Almonds
Serve with Las Rocas Rosé, a fruitforward seasonal wine with notes of raspberry and strawberry. Yield: 1 dozen crostini 12 slices French bread, sliced on the diagonal into 1/2-inch-thick slices Extra virgin olive oil Kosher salt and freshly ground black pepper 12 thinly sliced pieces Serrano ham 2 ripe peaches, halved, pitted and sliced onto 12 thin wedges 2 ounces goat cheese, crumbled (about 1/4 cup) 1 tablespoon roughly chopped Marcona almonds Preheat grill. Brush each slice of bread on one side with olive oil and sprinkle with salt. Grill, oil-side down until lightly golden brown, about 3 minutes. Remove from grill and place a piece Serrano ham on each. Drizzle peaches with 1 tablespoon of olive oil and sprinkle with salt and pepper to taste. Grill peaches until grill marks appear, turning once, about 1 to 2 minutes per side. Place warm grilled peaches on top of each crostini and sprinkle each with crumbled goat cheese and Marcona almonds. Drizzle them lightly with additional olive oil. Serve.

the history of the Sawdust festival The Sawdust was originally called the Laguna Artists and Gallery Owners Association after breaking away from the Festival of Arts in 1965, in protest of that show’s jurying system. That first festival was located on a vacant lot at the bottom of Park Avenue (on the Peacock lot) with only a few dozen exhibitors. It was called the ‘Rejects Festival’ by the media. There was no show in 1966, but the show did reappear, with more exhibitors, in 1967 on an empty lot on North Coast Highway (The Kronquist lot). That show was a great success and led to the artists moving to its current location on Laguna Canyon Road, leasing the property from Walter and Dorothy Funk, and when the artists spread sawdust

on the ground to combat the dust and mud, the media called it the ‘Sawdust Festival,’ and that name has identified the show for decades. Looking for room to expand, in 1968 the show moved to its present three-acre site at 935 Laguna Canyon Road, welcoming one and all with the promise to educate the public as well as provide a sales outlet for unrestricted art.Today, artists demonstrate their art in designated “demo” booths where the public is invited to participate, as well as working in their own booths. The lovely eucalyptus grove with its rippling waterfall provides an irresistible background.
One of the first facades ~1978~ other art shows, visualizing itself as an artists’ “happening” rather than a stuffy exhibit. To that end, the artists themselves build a unique village of individual booths from the ground up each summer. The architectural designs are as varied and interesting as the work they showcase. Once the booths are finished, the sawdust goes down, the landscaping goes in, music fills the air and once again the Sawdust Art Festival magically returns for another summer. It is truly a unique experience in the arts that brings visitors back year after year.
The Sawdust Art Festival is truly a local event. All artists exhibiting in the festival are residents of Laguna Beach. Unlike some other non-profit organizations dedicated to the arts, the Sawdust Art Festival’s administration is made up of exhibiting members.
