ROTARY CLUB OF COTO DE CAZA /RANCHO SANTA MARGARITA TO HOST ANNUAL 4TH OF JULY PARADE AND FESTIVAL
Whole-Family Entertainment; Independence Day Proceeds to Benefit Local Charities Classic cars, homemade floats and marching bands will once again fill the streets of Coto De Caza Drive during the 34th Annual 4th of July Parade and Festival, hosted by The Rotary Club of Coto de Caza/Rancho Santa Margarita. Celebrating our nation’s independence, the summer festivities will host a variety of fun family activities including bounce houses, carnival games, on-site food vendors and a beer garden for adults. The celebration will kick off at 10 a.m. with the parade starting at Plano Trabuco and Coto de Caza Drive and ending at the Country Fair housed at the Sports Park in Coto de Caza. This year’s grand marshal for the parade will be local resident Major General William Lyon, USAF (Ret), a homebuilding icon and retired Air Force Commander who will be showcasing a vintage touring car or two from the Lyon family car collection. The parade will also feature local Coto De Caza community groups and leaders: While the parade and fair admission are free to the public, the Rotary Club will spearhead specialty sponsorship opportunities including the Country Fair vendor booths and parade entries. The 4th of July Parade is open to all ages, and registration is currently underway for event participants in the areas of classic cars, golf carts, self-made floats, sports teams and performance groups. “We are excited to once again celebrate our nation’s freedom with a parade that will certainly entertain and wow our local residents of Coto de
Caza and Rancho Santa Margarita,” said Darrell Starnes, member of the Rotary Club of Coto De Caza/Rancho Santa Margarita. “We are incredibly grateful for all the vendors and sponsors helping put this celebration together, and are looking forward to seeing this year’s parade float creativity.” For more than 30 years, the Rotary Club of Coto de Caza/Rancho Santa Margarita del Sol has supported local charities and sponsored school
programs, local high school scholarship programs and much more. This year, all event proceeds will benefit local youth programs, such as high school scholarship funds, leadership training at RYLA, and local Boy Scout Troop 636. What Makes America Great
By Bryan Golden In less than 200 years, America grew from a handful of colonies to become the greatest nation in history. In a few hundred years, we surpassed nations that were many times older. What makes America great? The two main elements that make America great are our people and our freedoms. Our people have a can do, nothing is impossible, spirit. Starting with the American Revolution, we have always conquered adversity, often in the face of overwhelming odds. We have more rights and freedoms than anywhere else in the world. Our freedoms are considered inalienable rights, not privileges granted by government. Our freedoms are the envy of the world. Every item in the bill of rights is a precious jewel, designed to ensure the immortality of our liberty. Our founders came from societies where government controlled its citizens. They had a solid understanding of the consequences of unchecked power. Our constitution was crafted specifically to limit the scope of government to prevent its infringing on individual liberties. Our constitution is a brilliant document, filled with foresight and understanding, that has withstood the test of time. The principles embedded in
the constitution are the foundation of our greatness. In America, each citizen can control his or her destiny without fear of interference by government or others. Our government was formed to serve the people rather than vice versa. Our government was designed to play a minimal role in people’s lives. Our doors have always been open to people from anywhere in the world who want to come here legally to work hard, contribute, and assimilate into our society. America’s reputation as a melting pot is derived from the fact that people from every walk of life can work together to create an unstoppable force for good. In America anything is possible. America is great because it offers its people unlimited opportunity to succeed by bringing their dreams to reality. In America, success requires hard work, determination, and persistence, not permission. We are constitutionally protected to prevent government from confiscating the results of our labor. America is an engine for unprecedented productivity. Our economic system has been responsible for civilization transforming innovations and discoveries. No other country has even come close and many other
systems have failed miserably. America has a big heart. Whether in this country or elsewhere, we help those who can not help themselves. Americans are first on the scene in the wake of natural or civic disasters. We are there with food, supplies, medical aid, and money. Our brave soldiers travel the globe defending those who can’t defend themselves. In America there are no problems

Fa c t s Ab o u t t h e F o u r t h o f J u ly: Am e r ic a’ s I nd e p e nd e nc e Da y By Jennifer Phillips The 4th of July marks the signing of the Declaration of Independence by the men who are responsible for the start of the United States of America. In 1776, on July 2nd, the Continental Congress met to discuss independence. There was much political unrest at the time, with the thirteen colonies chafing under the rule of a King who was an entire ocean away. There were feelings of resentment over the lack of representation in England, for the Colonies. In short, the citizens of the original Colonies were unhappy, and the Continental Congress felt it was time to take the next step forward, towards independence, and self-rule. Two days after this meeting, on July 4th, these men signed a document, drafted by Thomas Jefferson, declaring the intentions of the Colonies to be free from the rule of the kingdom of Great Britain. What followed was a long, bitter war lasting roughly eight years. It eventually involved not only England and the United States, but also France, Spain and the Dutch Republic. The war ended in 1783, and the United States were finally free to govern themselves, but the date most celebrated is the date that began it all; the Fourth of July. While the 4th of July has only been an official paid holiday for federal employees since 1941, it has been celebrated thoroughly since the very start. Today the 4th of July is celebrated in the United States with parades, fireworks, picnics and
extravagant displays of patriotism. It has been that way for a long time, too. The list below illustrates some of the ways that this holiday has been celebrated in the past. * 1777- Thirteen gunshots were fired (once in the morning, and again in the evening) on July 4th in Rhode Island. Philadelphia held an official dinner, complete with toasts, 13-gun salutes, speeches, songs, parades and, yes, fireworks. * 1778- George Washington’s soldiers received a double ration of rum and an artillery salute. John Adams and Benjamin Franklin, acting as ambassadors to France, held a celebration dinner for their fellow Americans. * 1779- July 4th fell on a holiday, and was celebrated on Monday instead. * 1781- Massachusetts was the first state to recognize July 4th as an official state holiday. * 1791- The first use recorded use of the name “Independence Day” is found in this year. * 1941- The 4th of July is declared a paid holiday for federal employees. The traditions of the 4th of July celebrations run deep. It inspires in many American citizens feelings of patriotism, and pride in their country. It’s also a holiday for fun and family. Some of the long-standing celebrations in the United States include: * Since 1785, Bristol, Rhode Island’s Fourth of July Parade has occurred annually. This makes it the oldest continuous Independence day celebration in the United States.
* Since 1916, Nathan’s Hot Dog Contest has been held at Coney Island every 4th of July. The contest supposedly started as a way to settle an argument between four immigrants, over who was the most patriotic. * During the last week of June, since 1959, Detroit, Michigan and Windsor, Ontario hold a mutual celebration of both Independence Day and Canada Day. The celebration ends with a large fireworks display over the Detroit River. Clearly, Americans hold a special place in their hearts for this holiday, even this many years later. Many wars have been fought, and many lives lost, in the name of freedom and independence. Even in times of political unrest and economic struggle, Americans can, on this day, look back at their long, rich history of freedom and independence, and feel a sense of gratitude to, and pride in, their forefathers, and the men who followed in their footsteps.

Summer Festival 2015 with a rollicking, high-energy Fourth of July celebration featuring the everpopular tunes of Journey, brought to life by the tribute band, Faithfully. With a reputation for being a highly authentic Journey tribute band, Faithfully preserves the hits of one of the most beloved bands in America through performances of songs such as “Don’t Stop Believin,’” “Faithfully,” “Any Way you Want It,” “Open Arms” and “Wheel in the Sky.” Remaining one of the most popular rock bands in America to this day, Journey’s wide variety of musical genres including rock, jazz fusion, progressive rock, hard rock and pop rock have won them 25 gold and platinum albums and 19 top 40 singles. The Symphony’s Independence Day concert (always the most popular of the season!) begins early with picnicking on the grounds and culminates in a brilliant fireworks display set to music performed by the orchestra. The festivities also pay homage to America’s war heroes and veterans through a salute to the U.S. armed forces. Faithfully, enhanced by the musical force of the Symphony’s full orchestra, led by Principal Pops Conductor Richard Kaufman, rocks Journey’s hits on Saturday, July 4, at 8 p.m. at the Irvine Meadows Amphitheatre (formerly Verizon Wireless Amphitheater). Tickets for “Faithfully: A Symphonic Tribute to the Music of Journey” range from $25 (lawn seating) to $107 (orchestra seating); children under 14 are half price in most sections with the purchase of an adult ticket. “Stars and Stripes Forever” and ends with a breathtaking fireworks finale! Twists and turns and reinventions sum up the journey of Journey. The band began in San Francisco in 1973, when Neal Schon (guitarist) and Gregg Rolie (vocal and keyboard), members of the original Santana, experienced the breakup of the band and joined forces to create Journey. The addition of Steve Perry in 1977 took Journey in a more poprock direction, as well as to greater
commercial success, culminating in 1981 with the album “Escape.” Other key members included Ross Valory (bass), Jonathan Cain (keyboards), who replaced Rolie when he left, dissatisfied with the commercial direction of the band, Steve Smith (drums) and Perry. Additional upheaval led to Valory and Smith being fired in the mid‘80s. Randy Jackson, famous for his work on “American Idol,” came onboard as Journey continued its popularity for one more album, shortly before Journey disbanded. The band reunited in the mid-’90s, releasing an album, but never touring. While they did not recapture their earlier success, Journey has since continued with several new singers, discovering current lead singer, Arnel Pineda, from the Philippines, on YouTube. “Faithfully—A Symphonic Tribute to the Music of Journey” celebrates the music of Journey like never before. The Faithfully Band hails from Las Vegas and is comprised of members Joseph Finger (music director and drums), Christine La Fond (vocals), Michael Johnson (lead guitar), Keith Hubacher (bass), Tom Lipps (keyboards), and Jesse Bradman (vocals). In addition to performing the music of Journey, members of the band have each performed with headliners over the past several years in the Las Vegas area. The show is produced by Stephen Cook and TCG Entertainment.

Vocational Visions Nets $100,000 at Enchanted Evening Fundraiser Photos by: Ann Chatillon Over 300 guests helped Vocational Visions reach their fundraising goal of $100,000 at the organization’s 12th annual Enchanted Evening fundraiser. Chaired by community leader and Vocational Visions’ board member Hilary Hurt, the event was held at the Irvine Marriott Hotel with the theme, “An Enchanted Evening of Magic & Comedy.” ABM Industries was awarded with Vocational Visions’ Employer of the Year award during a special ceremony. Regional Director Jeffrey Leonard accepted the award on behalf of ABM and shared that ABM has employed ten clients through Vocational Visions’ Supported Employment and Direct Placement programs since March 2014. ABM is one of the largest facility management services providers in the U.S. with nearly 100,000 employees nationwide. The festive evening began with an expansive silent auction and cocktail reception. Volunteer magicians and Magic Castle members Randy Gastreich, Victor Globa and John Tonsick delighted guests with their strolling magic tricks during the initial reception. Dinner followed and included organic filed greens with point eyes blue cheese, walnuts, strawberries and champagne vinaigrette dressing, Rosarito chicken stuffed with corn, queso fresco and chili poblano with chipotle cream sauce. Desserts alternated between apple cranberry crumble and peanut butter with salted caramel cake. The opportunity drawing was generously donated by longtime supporter Montage Resort & Spa in Laguna Beach which included a two night stay for two with dinner and two in-room breakfasts. And the lucky was Andrea Haro who has been involved with Vocational Visions since 2014. World Champion Magician Johnny Ace Palmer topped off the evening with a spectacular magic show which included Vocational Visions participants. Clint Hufft served as both emcee and auctioneer for the live auction which included an Anaheim Ducks jersey signed by all current players, a Corum Admiral’s Cup Challenger watch valued at $14,000, and a four-hour entertainment package from Johnny Ace Palmer. The evening highlight was a special musical performance by Vocational Visions participants including Travis Cooper, Michael Di Mattio, Patricia Fritsche, Judy Hunt, Wayne Hunt, Holly Powers, Tracy Roberts, Jeff Simanson and Keith Smith. Sean Ikola was the “magician” and the heartwarming performance was choreographed by Vocational Visions’ Patti Porto. Top event supporters included The Nickoloff Family, Electron Beam Engineering, Cotti Foods Corporation, Mike Danzi, Pacifica Food, LLC and Wahoo’s Fish Raco. Electron Beam Engineering has sponsored the Enchanted Evening fundraiser since its inception in 2004. Founder and President Richard Trillwood became involved with Vocational Visions as a board member over 20 years ago. His daughter and Electron Beam Engineering Executive Sales Manager Hilary Hurt followed in her dad’s footsteps by serving on the board and chairing the Enchanted Evening fundraiser for the past two years. The family’s 48 year old daughter and sister has been a participant at Vocational Visions for many years and has benefited from Vocational Visions’ full spectrum of health services and employment opportunities for adults with developmental and intellectual disabilities. Since 1974, Vocational Visions has provided vocational, economic and social services to Orange County adults with intellectual/developmental and other disabilities. In partnership with Saddleback Valley Unified School District, Vocational Visions has eight comprehensive programs that serve more than 600 men and women by providing pathways to employment, life-long learning, and community inclusion. Vocational Visions participants are identified by state agencies as requiring health and/or vocational rehabilitation. Effective treatment increases the level of functioning for many of these men and women, thus maximizing their quality of life vocationally, economically and socially. Segerstrom Center for the Arts Announces the Line-Up for Movie Mondays 2015 Summer is around the corner and that means Segerstrom Center’s Movie Mondays will soon return for the ninth year. Each year, thousands of film lovers gather on the Center’s Arts Plaza to enjoy evenings of free fun-filled activities, outdoor dining and screenings of five films on consecutive Mondays. Movie Mondays 2015 kicks off on July 13 with the zany musical and two-time Academy Award®-nominee Little Shop of Horrors. Movie fans look forward to these annual FREE alfresco Movie Mondays on the Center’s Arts Plaza. Families and fans from all over the Southland arrive early to stake their places on the plaza and enjoy early dinners, music and people watching. Since the movies are projected on the side of Segerstrom Hall, everyone has a great seat. Set-up begins at 5:30 p.m., with the movie starting at dusk (approximately 8 p.m.). Guests are encouraged to bring beach chairs or other easily portable seating items, snacks and picnic suppers. Each Monday will also feature different food trucks serving culinary sensations throughout each screening. Barbecues and similar food preparation are not permitted. Easy 4th of July BBQ Ribs By Mary McShane This is an easy and great tasting 4th of July BBQ ribs recipe for your gathering of family and friends. The unique combination of cranberry sauce, your favorite BBQ sauce and brown sugar will encourage you to use it with more pork recipes. 2 lbs Pork ribs Marinate 4-6 hours in a mixture of: - 3/4 can beer - 1/4 cup olive oil - 1/4 cup BBQ sauce Mix for basting/dipping sauce: - 3/4 cup BBQ sauce - 1/2 cup cranberry sauce - 2 tbls. chili sauce - 1/2 cup brown sugar - orange juice to your desired consistency Grill low (200-250) for 2-4 hours depending on thickness of the ribs and baste as needed. To reduce grilling time: parboil the ribs in marinate mixture with water added to cover the ribs until meat is gray or bake at 350, in marinade mixture until meat is lightly browned. Children like these ribs best when they are cut, after grilling, to the size of riblets. The riblets also make a great party food. Have a Flag-Waving Fourth of July! I’m bringing a fantastic flag cake to this year’s party - it serves a lot of people and it’s easy to make. I’ll let you in on two little secrets that make this cake taste extra good: instant potato flakes keep the cake tender and moist, while mini chocolate chips give you little bursts of chocolate with every bite. The colorful fruit on top not only adds great flavor, but it turns this cake into a showstopper that has guests “oohing” and “ahhing” in delight! If you’re going to a potluck party this year, I have some tips for being a good guest: * Keep it safe: It’s tricky to keep hot foods hot and cold foods cold, so make sure the food you’re bringing will be safe at room temperature. For example, on a hot summer day, vinegar-based salad dressings are a better choice than mayonnaise-based ones. * Keep it simple: Bring dishes that are ready to serve. Asking to pop something into the host’s oven for “just a few minutes” is inconvenient for the host and the guests waiting to eat. * Keep it practical: Label your dish so that guests know what they’re getting. It’s also a big help if you bring your own serving utensils - the host won’t be forced to hunt for something and the line won’t get held up waiting.
* Keep it yours: If you need to take your serving dish home, be sure to label it. A bit of masking tape with your name on it can be discreetly placed on the dish so it doesn’t get mixed up with someone else’s. Independence Cake Makes 20 servings
1 cup water 1 cup instant mashed potato flakes 2 2/3 cups all-purpose flour 1 tablespoon baking powder 3/4 teaspoon salt 2 teaspoons ground cinnamon 1/2 teaspoon ground nutmeg 2 2/3 cups granulated sugar 1 cup (2 sticks) butter or mar garine, softened 4 large eggs 3/4 cup milk 2 cups (12-ounce package) Nestlé Toll House Semi-Sweet Chocolate Mini Morsels 1 container (8 ounces) frozen lite whipped topping, thawed 2 cups sliced strawberries 1/2 cup blueberries PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan; line with wax
paper. HEAT water to boiling in small saucepan; remove from heat. Stir in potato flakes until moistened. Cool to room temperature. Combine flour, baking powder, salt, cinnamon and nutmeg in a medium bowl. BEAT sugar and butter until crumbly. Add eggs one at a time, beating well after each addition; beat in potatoes. Gradually beat in flour mixture alternately with milk. Stir in morsels. Spoon into prepared baking pan. BAKE for 45 to 55 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 15 minutes.
Invert onto wire rack; remove wax paper. Cool completely. Transfer to serving platter. FROST sides and top of cake with whipped topping. Just prior to serving, arrange strawberry slices and blueberries on top of cake to represent the American flag. The competition continued after the Grand Prix with the $5,000 Pony Derby, also presented by Markel Insurance. A unique opportunity for this division, the classic and handy rounds were held on the grass. With an overall total of 175, Augusta Iwasaki rode Ava Peck’s large pony Kingston to a decisive win. In her classic round with Kingston, Iwasaki received an 87 and in her handy round, scored an 88. “I’ve been riding him since Thermal. He’s actually owned by Ava Peck and I’m very lucky to get to ride him,” Iwasaki says of her win. “I like the hunter derbies since they’re different. It’s something new and fun.” Second to Iwasaki was the large pony Party Favor with Brooke Morin in the irons. Iwasaki earned third place on her medium mount Small Suggestion to round out the top three. Karen Perlow, once a pony rider and now a professional, wanted to see this special event come to life. “The derby started last year for the Page 22
kids to have something to look up to,” she said. “It gives preparation for the future, for the nerves, and to think about something other than points.” Intended to go along with the Red, White, and Blue Classic, Perlow created the Just A Minute Perpetual Trophy. Just a Minute, aka “Minnie,” was purchased by Sam Perlow and Art Gottfried at the AHSA pony auction so Karen could start her pony career. “Minnie” led Karen to many championships in the Small Pony Hunter and equitation divisions. Karen and Just a Minute competed at the USEF Pony Finals in 1987 and 1989 with top calls in all classes. This award is presented in dedication to Just A Minute and to future wonderful ponies and their riders. Notably, “Minnie” was in foal at the time of purchase. In later years, that foal was Grand Green Small Pony at Pony Finals in Lexington, Kentucky. Still going strong as one of the pinnacles for pony riders, Iwasaki will be heading to Lexington in August to compete several mounts in the small,

By David White On January 12, 2007, one of the world’s greatest violin players set up shop in the L’Enfant Plaza Metro station in Washington, D.C. Wearing jeans, a long sleeved T-shirt, and a Washington Nationals baseball cap, 39 year old Joshua Bell pulled out his instrument handcrafted by Antonio Stradivari in 1713 and purchased in 2003 for nearly $4 million and played six classical songs for rush hour commuters. The setting of Bell’s 43 minute performance was unusual, to say the least. By the time he was 14, the violin prodigy was soloing for the Philadelphia Orchestra. At 17, he made his first appearance at Carnegie Hall. He has performed as a guest soloist for the New York Philharmonic three times and currently directs one of the world’s most celebrated chamber orchestras.
More than 1,000 commuters came within earshot of Bell that morning and witnessed a world class performance from a musical genius on one of the finest instruments ever crafted. Yet among the mass of hurried Metro riders, Bell went almost unnoticed. What does any of this have to do with wine? Quite a bit. Giant corporate producers dominate the wine market. In the United States, three brands E. & J. Gallo, the Wine Group, and Constellation produced 172.3 million cases of wine in 2012, accounting for roughly 50 percent of wine sales. Yet most of the world’s finest wines are produced by small, unassuming, and largely ignored grape growers. Unlike the big brands, these vignerons produce wines that reflect the regions and vineyards in which the grapes are grown. Their wines have a distinctiveness that can’t be matched by mass produced alternatives. In other words, wine consumers are surrounded by Joshua Bell level brilliance. Serious wine enthusiasts are finally paying attention. To some extent, the relative anonymity of most wine producers is understandable. The United States is home to more than 8,000 wineries. Three in four produce fewer than 5,000 cases per year; about 50 percent produce fewer than 500,000
cases. Other wine producing countries boast similar ratios; the back roads of Italy, France, and Spain are full of passionate vignerons who make miniscule amounts of compelling, soulful wine. And just as Bell can be readily ignored once separated from a “brand name” institution like Carnegie Hall, it’s easy to overlook the excellence of these small producers. They don’t have the kind of status that comes with a recognizable brand name like, say, Veuve Clicquot, which produces more than 1 million cases of Champagne annually. This lack of name recognition has enabled big producers to effectively monopolize the wine market, especially in the United States. But that’s changing. One man who helped launch this shift is Kermit Lynch, a writer and musician who started to recognize these growers more than three decades ago. With a $5,000 loan from his girlfriend, he opened an eponymous wine shop in northern California in 1972. He soon became a distributor and importer as well, visiting Europe regularly to look for the wine equivalent of Stradivarius wielding fiddlers in a Metro station. And he began educating consumers about the virtues of traditional wines artisanal projects, produced with
minimal intervention, that express a sense of place. Lynch inspired many imitators. These days, if you walk into any good wine retailer and watch how the geekiest consumers shop, you’ll undoubtedly see people flipping bottles over to check the import label. These savvy shoppers know that in addition to Lynch, they can rely on importers like Neal Rosenthal, Louis/ Dressner, Terry Theise, and Peter Weygandt to bring in good wine. The tastes of these small importers are, without question, ascendant. Sommeliers and boutique retailers, too, are beginning to eschew what Lynch calls “pop” wines heavy, oaksoaked concoctions designed for mass appeal. At restaurants and on retail shelves across the country, consumers can now find interesting, small-production wines more easily than ever before. And America’s booming wine tourism industry is proof that consumers appreciate wine beyond Sutter Home and Barefoot. Consumers are finally recognizing that the subway-station musician they’ve long ignored may be a treasure waiting to be discovered. Prepping for a party: make-ahead appetizers make summer entertaining easy Don’t let the first “ding-dong” of the doorbell catch you up to your elbows in dirty dishes and half-finished appetizers. For your next party, prepare your appetizers ahead of time with these simple tips and recipes: “Let’s not reinvent the wheel. Take items you already know how to make and turn them cool and trendy with some add-ons,” says Chef Richard Worthen, culinary instructor at The Art Institute of Seattle. You can dress up egg, tuna or chicken salad with a variety of flavors and spices. He recommends chopped cilantro instead of chopped parsley, adding chipotle to egg salad or adding almonds, walnuts or pistachio nuts for some crunch. For a gluten-free appetizer, try lettuce cups. “You could do a quick chop of a variety of three-to-four items and put it in a lettuce cup,” says Chef Brian Shulse of The Art Institute of California - San Francisco, a campus of Argosy University. “It can also go traditional Asian - ground pork with some spices that can just be popped in the microwave to heat before serving.” “You could do a flat bread with seasonal vegetables on it,” Shulse says. “Make the bread in advance, roll it out, put olive oil on it, add seasonal vegetables, and bake.” Worthen recommends tomato toast, which is made by taking cut tomatoes and rubbing the juice and pulp into french
bread slices. This can serve as a base for any type of spread. Shulse says people tend to go to proteins, such as shrimp cocktail and cubes of steak, and not to the veggie tray. He says you can make all kinds of skewers with different meats, then add fresh chopped herbs and citrus to Greek yogurt for a quick and easy sauce. Another great make-ahead protein is tuna tartar, which can be made with a high-quality ahi tuna steak and served with store-bought kettle chips. Phyllo-wrapped asparagus, made with store-bought phyllo dough, is another easy recipe, along with water chestnuts wrapped in bacon. Simply wrap one third of a slice of bacon around each water chestnut, roll in brown sugar and bake at 425 degrees until brown and crisp. Try these easy make-ahead recipes courtesy of Shulse: Spicy Ahi Tartare Yield: 10 servings Ingredients: 2 pounds Yellow fin/Ahi tuna, diced in 1/8-inch pieces 1/2 cup cucumber, washed, dried, diced in 1/8-inch pieces(optionalpeel) 1-2 garlic cloves, crushed, peel removed and minced 1-2 serrano or jalapeno pepper, seeded, minced fine 1 shallot, finely minced (substitute 2 green onions) 1 orange, washed, dried, zested,
juiced 1 lime, juiced 1 teaspoon dry oregano (or 2 teaspoons fresh) 2 teaspoon ground cumin 2 teaspoon kosher salt (or more to taste) 1 teaspoon sugar 1 bag thick potato chips (like Kettle chips) or crackers Directions: Gently mix all the ingredients together and refrigerate, covered, until ready to use. This will hold for two to four hours (or up to overnight). To serve, gently mix and place in a serving bowl with a spoon, with the chips on the side. Lettuce Cups Yield: 15 bites Ingredients: 2 tablespoons sesame oil 1/2 yellow onion, small dice 1 tablespoon garlic, smashed, peeled, minced 1 tablespoon ginger, peeled, grated fine (or use micro plane) 1/2 bunch green onions, minced, white and green kept separately 1 pound ground pork or turkey 1 teaspoon Kosher salt 1/2 cup water chestnuts, small dice 2 tablespoon soy sauce 2 tablespoon Hoisin sauce 1-2 tablespoons Chinese hot mustard 1/2 cup peanuts, crushed or chopped 15 Iceberg lettuce cups, cut into
3-inch squares Directions: Over medium-low heat, preheat a medium size saute pan for 30 seconds. Add the sesame oil and swirl the pan until it is fully coated with oil. Add the onion, garlic, white part of the green onion and ginger. Sweat for several minutes until the mixture begins to look translucent. Turn up the heat to high and add the ground pork. Cook on high, stirring until the meat turns pale brown. Turn the heat back down to medium-low and add the salt, diced water chestnuts, soy sauce and Hoisin sauce. Cook until moisture evaporates. Turn the pan off and add the Chinese hot mustard to taste. After this has cooled down, cover and refrigerate. Can be made up to four days in advance. Reheat gently in a microwave or saute pan until just warmed through. Place in a serving bowl, top with peanuts, and serve with lettuce cups.

Open to Rising 5th- 8th Graders (Incoming Freshman) Over the past 20 years our summer camp has helped students learn and develop the basics of each event. Specialized group and individualized instruction will be given each day. Our camp has been very successful in identifying campers’ strengths and
giving them a good idea of what they should focus on once they are on the team. Many previous campers have developed into fine hurdlers or jumpers in addition to sprinters only after they have discovered their ability to be successful in the event from trying it out during the summer camp. This camp is open to 5th-8th
