Family-Friendly Treats Make For Summertime Fun Kids love to help in the kitchen. “Made It Myself” Tasty Treats provide a perfect summer activity that every kid will enjoy decorating – and eating. Rice cereal treats may be known for being square, but with some dazzling decorations and a little imagination, this take on the classic snack is totally outside the box. Mom and Dad will need to stir up the ingredients – dried fruits and nuts bring extra flavor and crunch to the traditional recipe – but once the treats cool, the kids can get in the kitchen. Use cookie cutters to create all sorts of clever confections. Add icing, sprinkles and sugars to flip flop cutouts for cute kicks – they’re sure to make a splash. Use this Easy Checklist to Be Worry Free While You’re Gone According to a recent national survey conducted by Harris Interactive, the vast majority of Americans (87 percent) are planning to take vacation trips this season. Water Off and Power Down: Unplug all nonessential appliances and electronic devices, including turning off power strips. Shut off the water-main running to the interior of the house. Give Your Washing Machine a Break: Avoid a possible flood due to a burst washer hose by shutting off your machine’s hot and cold water valves, usually located directly behind the washing machine. Boost Your Child’s Brainpower this Summer When that last school bell rings, kids celebrate the end of classes and the beginning of a long, lazy summer. But for many kids, the end of the school year also marks the beginning of summer brain drain - and it could do them more harm than you think. According to the National Summer Learning Association, all students experience learning losses when they don’t engage in educational activities during the summer months. * Students typically score lower on standardized tests at the end of summer vacation than they do at the beginning of the summer. * Most students lose almost three months of grade-level equivalency in mathematical computation skills over the summer months. * Low-income students also lose more than two months in reading achievement. So what’s a parent or guardian to do to help kids avoid summer brain drain? Elks Lodge Initiates Eight New Members from Five Different Communities

No. 2444, celebrating forty-three (43) years of service to the Saddleback Valley communities, is one of ten lodges in the Orange Coast District of the Benevolent and Protective Order of Elks (BPOE) whose headquarters is in Chicago, Illinois. The BPOE is a charitable organization with a 145 year history of giving, “Elks Care, Elks Share.”
MONSIGNOR HOLQUIN SPOTS SWALLOWS AT MISSION Happy anniversary Monsignor Arthur Holquin. Monday, July 1 marks the 10-year anniversary of Msgr. Holquin being named Rector and Pastor of Mission Basilica San Juan Capistrano, and last week he received a special gift of sorts. Mission San Juan Capistrano became well-known for the cliff swallows that nested there for decades, even centuries, but urbanization gave the swallows more options to nest and fewer and fewer swallows made the Mission their home. But they may now be coming back. “Father Michael Pontarelli told me, ‘I think there are swallows building a nest inside the Mission, near the back door of the rectory,’” Msgr. Holquin said. “So I high-tailed it over there and looked up. At first I couldn’t see it, but on the other side of a beam, you could see the very distinctive mud nest. About 60 seconds later, I saw a swallow fly out of it.” Swallows migrate from Argentina to the San Juan Capistrano Valley every spring to nest, so at first glance, one might not consider the significance of such a sighting. Not so fast, says Msgr. Holquin. “We always say the Mission is a place of living history,” he said. “I’ve always liked that motto. Living history is not just what’s happened in the past, but it continues in the present and into the future. “When we did the preservation work to the Great Stone Church, a lot of the swallows were displaced. We knew they were in the San Juan Valley, but when we realized they were not building nests within the Mission grounds, that was unsettling. It’s part of
our history.” So it wasn’t lost of Msgr. Holquin that the sighting came so close to his milestone anniversary. “Quite frankly, this is the first nest I’ve seen in the 10 years I’ve been here,” he said. “It’s a wonderful reflection of a place where history lives on. We knew they were getting close. We’ve had experts trying to lure them in with IPod calls. They said they were a block away. But now that they are here within the Mission grounds is very exciting.”

Free Fishing Day is Saturday, July 6 The California Department of Fish and Wildlife (CDFW) invites anglers to celebrate summer by fishing for free this Saturday. July 6 is the first of two Free Fishing Days in 2013, when people can try their hand at fishing without having to buy a sport fishing license. All fishing regulations, such as bag and size limits, gear restrictions, report card requirements, fishing hours and stream closures remain in effect. Every angler must have an appropriate report card if they are fishing for steelhead or sturgeon anywhere in the state, or salmon in the Smith and Klamath-Trinity River systems. CDFW offers two Free Fishing Days each year – usually around the Fourth of July and Labor Day weekend – when it’s legal to fish without a sport fishing license. This year, the Free Fishing
Days were set for the Saturdays following Independence Day and Labor Day (July 6 and Sept. 7). Free Fishing Days provide a low-cost way to give fishing a try. Some CDFW regions offer a Fishing in the City program where anglers can go fishing in major metropolitan areas. Fishing in the City and Free Fishing Day clinics are designed to educate novice anglers about fishing ethics, fish habits, effective methods for catching fish and fishing tackle. Anglers can even learn how to clean and prepare fish for eating. Anglers should check the rules and regulations at www. dfg.ca.gov/regulations/ for the waters they plan to fish. In large pot, boil water and potatoes. Cook until tender, drain and cool to room temperature. Combine potatoes, olives, green onions and celery in a large mixing bowl and set aside. In medium bowl, whisk together red wine vinegar, mustard and capers. Gradually whisk in olive oil, then season with salt, pepper and parsley. Pour dressing over potato mixture and toss until evenly coated.

Ranchos Charming Cast-iron Kids Romp through EL Paseo Center Life like sculptures Bring a Touch of Whimsy to one of Rancho’s Most Popular Gathering Spots By Cheryl Scott Shoppers and passers-by often do a double take when they catch a glimpse of the sprightly children in EL Paseo Center that are the result of a unique partnership between a forward-thinking developer and an artist focused on the inner child in all of us. While some Rancho Santa Margarita residents have called the sculptures “cast-iron kids,” they are really made of a more precious metal: bronze. The sculptures are the work of Dallas-based artist Angela Mia De La Vega.Kahl and Goveia designed, developed and manage office and retail Properties in Orange County California. The 16 statues in the center were created using the developer’s own children as models, De La Vega said. “The process was very demanding. Their wives took pictures of the kids in poses we selected. The pictures were taken from every conceivable angle. I use them as a guide as I sculpted the forms in clay. They were created especially for the EL Paseo Center. The statue of two girls on a fence was created using Kahl’s daughters as models. The three children rolling a wagon wheel included his son Michael as the child who is grasping the wheel. “This most important and challenging part of the process was capturing the expressions,” De La Vega said.” For the Boy with the Wheel I wanted to capture the expression of pure joy and freedom. For the two little girls sitting on each side of an elderly man, which I named ‘Education, ‘I wanted an expression of rapt attention. We wanted to portray all of the emotions displayed so openly on the faces of children. “ Anyone seeing the statues will agree that the faces say it all. However, the expression on the face of a statue must be a reinforced in the body of the sculpture. To learn how the body is structured De La Vega did what many sculptors since their days of Michelangelo have done. She studied human anatomy extensively and in great detail. “An exhibition called Body World, which is traveling the country for the next few years, was a great source of visual information regarding the movement and function of the human body, she said. The city of Rancho Santa Margarita had a hand in developing the artistic concept of the shopping center. “We wanted to make each public place something special,” said Richard Reese, one of the designers of Rancho Santa Margarita. “There had been plans for public works of art by the original Rancho Santa Margarita Company for the project. So the developers of the EL Paseo Center were providing something the city founders had been planning for. It definitely enhances that shopping center and the city to have these beautiful works of art in a public place where they can be enjoyed by everyone. “De La Vega studied art in college in Pennsylvania where she grew up. She also studied in Spain for a year. “My interest was always in sculpture, she said. “I of course, love the work of Bernini, Michelangelo and Rodin. “I never seriously thought about going into any other form of art. “A mother of three, De La Vega has built a life league career from a new sensibility in the development community that seeks to enhance everyday experiences of people in today’s cities. “I was contacted Page 10

by Bruce Kahl and Joseph Goveia after they saw my work,” De La Vega told Coto de Caza News. “They wanted to capture the spirit of childhood in a series of life-size statues. “To create the sculptures De La Vega used an ancient technique known as “lost wax “ ,that dates back to the Greeks. She first creates the sculptures in clay, down to the finest detail. Then she makes a mold of silicon painted over the clay. A mold is cut open and removed from clay, to be filled with wax that will make a replica of the statue. The wax is dipped in tubs of liquid plaster and ground glass, which makes a shell of the work once the wax, is melted. That shell was used as a mold and is filled with molten bronze, which is the only part of the process not done by De La Vega herself. “I use foundries in Mexico and in Lubbock, Texas,” she said. The statues in Rancho Santa Margarita were done in Lubbock.” As a child, she used to sit in a hollowed out trunk on her family’s property in Pennsylvania, creating clay figurines from the soil around the tree. “I spent hours there, “she said. ‘The soil was rich in clay so it made a very good medium for my little figurines.” De La Vega’s husband Artemio is in the development business and was one of the first to use sculptures in retail centers. ‘This is very much a trend of our times,” she said. “So shopping centers are now

incorporating sculpture or other works of art in their designed. I met Bruce Kahl and Joe Goveia through my husband. Now I’m working on a project for them in a shopping center in Oxnard.” De La Vega has been working as a professional sculptor for 12 years. She and her husband have three children, Alexa 12, Arianna 11, and Federico 5.all of them pose occasionally she only for their mother. “I’m currently using our five-year-old to model for the work I’m doing for the Oxnard center.” That work is a portion of a ship being steered by two boys. It has proved so popular since it was placed in the center that she is now creating “the back half” of the boat, which will be placed nearby. “I have been really blessed to be able to work in the area I love,” she said. “I am really gratified that the Coto de Caza News is interested enough in my work to do an article about the sculptures. I’m glad that community enjoyed them. That’s what they are there for. Plaza EL Paseo is located at EL Paseo and Alma Adea in Rancho Santa Margarita. The 16 sculptures done by Angela Mia De La Vega are located throughout the center. ClubCorp Charity Classic Raises $157k Benefiting Three Charities Photos by Courtney McManaway Photography A sold-out crowd of 125 guests, all elegantly dressed in black tie attire, were in attendance at the Inaugural Dinner Gala to kick off the 2013 Aliso Viejo Country Club ClubCorp Charity Classic. Aliso Viejo Country Club, a member of the ClubCorp family of clubs, hosted this two-day Charity Classic, which included a Dinner Gala, followed by a Golf Tournament and CharityFest, featuring live music, food stations, beer garden, and wine tasting. The two-day event raised $157,000.00, a company record-breaking amount and three times the amount the club raised last year. Signature Control Systems, Inc. of Irvine was this year’s Title Sponsor. “It goes without saying that many, many individuals, companies, and members of Aliso Viejo Country Club contributed to this success, and we trust the charities welcome this outpouring of philanthropic support from this event. I congratulate the staff at Aliso Viejo Country Club, the Charity Classic Committee, and all members on their contribution to the 2013 Charity Classic and its incredible and record breaking result,” stated Brian Smith, President and CEO of Signature Control Systems, Inc. This year’s event far surpassed the Club’s initial goal, to benefit three worthwhile charities including Muscular Dystrophy Association’s Augie’s Quest, the ClubCorp Employee Partners Care Foundation, and CHOC Children’s Hospital. The EL Paseo shopping center in Rancho Santa Margarita is bustling with activity in July. Spa Gregorie’s is changing their location and moving out of EL Paseo and into a more private spacious location on Tomas street in Rancho Santa Margarita and they have scheduled a Grand opening Ceremony next week. The owners of Willow Manor, which also occupied another nearby storefront in EL Paseo have announced that they will now expand into the vacant Spa Gregorie’s location. EL Paseo has been one of the city’s busiest shopping centers in terms of transition. More than ten businesses have either moved in or changed locations in the past 18 months, including Crown books, Embarcadero restaurant, Art and frame, Bruxie’s waffle shop, Mi casa Mexican Restaurant, Dr. Kathleen Anderson’s Santa Margarita optometry, Willow Manor, and Spa Gregorie’s. HOTTEST JOB IN RANCHO SANTA MARGARITA
If anyone complains about the air conditioning in the office be sure to hand them a copy of this story about two local men who obviously have the hottest jobs in Rancho Santa Margarita. While the entire state of California was sweltering with record-setting heat, the temperatures in Rancho Santa Margarita were also approaching the mid-nineties. Ripping the damaged red-hot tiles off the roof of the Mercado Del Lago shopping center may not require the skills of an acrobat, but it certainly qualifies as the hottest job in Rancho Santa Margarita. Wide-brimmed hats were certainly helpful for the skilled workmen and roofers who labored in the Santa Margarita sunshine for several hours on Tuesday of this week who most certainly deserved a well-chilled lemonade for their mighty efforts. What Dr. Michael Tessier I do makes people feel better and look better. What could be better than that? And, almost on a daily basis, my practice is finding new ways to take care of people. ”Dr. Tessier continued. “My office uses the latest in scientific dental advancements such as toothstraightening without metal braces (“Invisalign”); Tooth-colored porcelain crowns that have no metal in them and are subsequently dramatically more attractive and natural looking than the old porcelain-baked-on-to-metal type. I also recommend Porcelain veneers that, with a minimum of tooth structure removal, improve alignment, color, and evenness of front teeth, a process that is accomplished in a remarkably small amount of time. There are so many new scientific dental innovations that modern dentistry is a pleasure for me to practice. I often use a tiny “sandblaster” to do many of our smaller fillings, allowing us to do those fillings without discomfort and subsequently without anesthetic altogether. Another remarkable tool we use is the laser .We treat canker
or cold sores with a laser, dramatically shortening their life and the discomfort they cause. We do gum surgery with a laser (Periolase), not a knife, which is much more effective and greatly reduces any discomfort. Today Removable dentures can be anchored to implants, preventing them from moving and restoring more normal chewing. Another wonderful innovation is Implant crowns, which allow us to replace missing teeth without damaging the teeth on either side of the space where the tooth was originally located. We make an intra-oral appliance that keeps the lower jaw forward during sleep, reducing sleep apnea and all the other problems that the cessation of breathing at night can cause. I’ve been in private practice in Saddleback Valley since 1980 when I got out of the Navy. When the situation arises that we need a specialist, like an oral surgeon for wisdom extraction, or endodontists (root canal specialists), or periodontists (gum specialists) to save jeopardized teeth, I’m on a “first-name” basis with the best in all of those fields, who are all close by. We’re all living longer, and we’ll need our teeth longer. So it is my pleasure to have all of these good things we can do to make that happen. It’s better to have teeth left at the end of your life, rather than life left at the end of your teeth. Orange County Projects Receive $123.6 Million in State Funds The California Transportation Commission (CTC) allocated $123.6 million in funding to Orange County projects that will help improve freeway conditions and increase road safety for drivers and pedestrians. At its Sacramento meeting on Tuesday, June 11, the CTC approved a total of $41.6 million in Proposition 1B State-Local Partnership Program (SLPP) funds to OCTA and local Orange County projects, with $6.9 million to six local projects and $34.8 million to OCTA freeway projects. Together with prior allocations that also include $49.9 million to local agency projects, the commission has signed off on a total of $84.7 million in SLPP funding for Orange County’s roads, freeways and public transit. Additional allocations from the meeting include: $40.6 million in State Highway Operations and Protection Program funds divided among safety and maintenance projects on the Costa Mesa Freeway (SR-55) in Costa Mesa, Santa Ana and Tustin; a slope stabilization project on
the Corona del Mar Freeway (SR-73); and safety projects in Huntington Beach, Irvine, La Palma and Westminster. $35.9 million in Proposition 1B Trade Corridor Improvement Funds (TCIF) to the City of Fullerton for the State College Boulevard Grade Separation $2.5 million in State Transportation Improvement Program (STIP) funds to landscaping on the Riverside Freeway (SR-91) widening project from the SR-55 to Weir Canyon Road. $1.4 million to OCTA for planning, programming and monitoring activities. $1.5 million to the City of Costa Mesa for landscaping projects Commissioners also discussed the new Buy America provision under the federal Moving Ahead for Progres in the 21st Century Act (MAP-21) that ensures transportation infrastructure projects are built with Americanmade products. According to the Federal Highway Administration, the new provision now requires Buy America be
implemented in contracts with utility companies for utility relocation services. H o w e v e r, s e v e r a l u t i l i t y companies that are in the process of relocating utilities are not yet ready to meet this provision, and may not be able to meet the Buy America requirement for as long as 18 months, said Caltrans Right-ofWay Chief Brent Green. This has resulted in project delays statewide, with nine state projects and 39 local-agency
projects delayed in the near-term, Green said. Back ribs also are referred to as “baby” back ribs because they are smaller than spareribs. Spareribs, usually larger and heavier than back ribs, are known for their delicious, meaty pork flavor. Dry rubs are a mixture of herbs and spices applied to ribs just before barbecuing to create an intensely flavorful, smoky crust. Ribs are often basted with sauces during the barbecuing process to enhance flavor and to create a sweet and savory glaze. For best results, brush ribs generously during the last 30 minutes of cooking. Always use tongs, not a fork, to turn ribs as they cook – piercing the meat causes juices to escape. When grilling ribs, adding aromatic wood chips like hickory, apple or oak to the preheated coals infuses the meat with the distinctive smoky flavor prized in authentic barbecue. Sweet, Spicy, and Smoky Spareribs Serves 6 Prep Time: 10 minutes, Cook Time: 2 hours 5 pounds spareribs, cut into 4-rib slabs 1 tablespoon moked sweet paprika 1 tablespoon kosher salt 2 teaspoons dried oregano 2 teaspoons cumin, ground 1 teaspoon ground chipotle chiles, or chili powder 1 teaspoon garlic powder 1 teaspoon onion powder 1/2 cup honey, heated until liquid Mix paprika, salt, oregano, cumin, chipotle or chili powder, garlic powder and onion powder together in small bowl. Sprinkle generously over both sides of ribs. Let stand at room temperature while preparing grill. Prepare outdoor grill for indirect medium-hot grilling. For a gas grill, remove cooking grates.
Preheat grill on High. Turn 1 burner off. Place disposable aluminum foil pan over off burner and add 2 cups water to pan. Replace grates. Adjust heat to 350°F. For a charcoal grill, place disposable aluminum foil pan on 1 side of charcoal grate. Build fire on opposite side, and let burn until coals are coated with white ash. Spread coals in grill opposite pan and let burn 15 to 20 minutes. Add 2 cups water to pan. Position cooking grate in grill. Lightly oil cooking grate. Place ribs over foil pan and cover grill. Cook, adding water to pan as needed, until ribs are browned, fork-tender, and meat pulls away from end of bone, about 2 hours. (For charcoal grill, add 10 briquettes to fire every 45 minutes to maintain heat.) During last 20 minutes, occasionally brush both sides of ribs with warm honey. Let stand 5 minutes, cut into ribs, and serve hot.

the history of the orange county fair
Shortly after Orange County was created in 1889, the Orange County Community Fair Corporation was formed. This group put on a small fair in 1890 that included a horse race and a few exhibits in Santa Ana. In 1894, another group, the Orange County Fair Association, Inc., took over The first Orange County Fairs were primarily livestock exhibitions and horse races. At the turn of the century, a “carnival of products” was added and the Fair became an annual event. In ensuing years, the Fair was held in Santa Ana, but after World War I it was moved to Huntington Beach for two years and then back to temporary grounds on East Fruit Street in Santa Ana. In 1916, the Fair was taken over by the newly organized Orange County Farm Bureau. The first OC Fair Board was elected in 1925 and the Fair re-
located to Anaheim, across the street from the Orange County Hospital. In 1925, a rodeo and carnival were added to the Fair. OC Fair Clowns After World War II, the state formed the 32nd District Agricultural Association and made it responsible for the Fair. The state
then purchased land occupied by the Santa Ana Army Air Base and some of it was earmarked for a new fairground. The Fair was first held at the new site in 1949 and it soon was designated as the permanent Fairgrounds. In 1953, the City of Costa Mesa was incorporated - the new
city included the Fair’s location. From 1949 to the present, the OC Fair has grown from a small, community, fiveday celebration to a 23-day festival that is one of Orange County’s most eagerly awaited annual events.

Tickets for these events go on sale Saturday, March 2, at 10 a.m. via Ticketmaster or at the OC Fair & Event Center Box Office, which is open Saturday and Sunday 10 a.m.–4 p.m. Due to construction scheduled through June, the Box Office is only accessible from Gate 4 off Arlington Drive near Fairview Road. 2013 OC Fair Features All-Star Action Lineup in the Action Sports Arena July 12-August 11 Reserved Seats for All Action Sports Are On Sale Now and Include Free Fair Admission It will be mass chaos at the Motor Home Demolition Derby at the 2013 OC Fair on August 8 and 11. The 2013 OC Fair (July 12-August 11) brings Fairgoers closer to the action with an exhilarating lineup in the Action Sports Arena. The 23-day program provides excitement for all daredevils and adrenaline junkies, including motocross, Monster Trucks, bull riding, extreme rodeo, mixed martial arts, canine agility demonstrations, dodgeball and demolition derby. Starting off the 2013 OC Fair with an explosive performance is X-Treme Freestyle Moto-X featuring high-flying motorcycle stunts on Friday, July 12. The rest of the weekend also packs a punch with the 39th Annual Speedway Fair Derby (Saturday, July 13) and SummerFist VI – Mixed Martial Arts (Sunday, July 14.) The first full week of the 2013 OC Fair is dedicated to cowboys and cowgirls alike as bull riding, rodeo and equestrian action takes center stage. The hair-raising Extreme Rodeo pits Page 24
brave cowboys against raging bulls on Wednesday, July 17, and Friday, July 19. Monster Truck action with quad racing can be enjoyed on Thursday, July 25 and Saturday, July 27. The third week of the 2013 OC Fair showcases the agility of dogs and humans alike.
