LEGENDARY USC FOOTBALL COACH JOHN ROBINSON, TO CHAT FOOTBALL WITH VISITING TROJANS, AUGUST 18, 4 - 6PM The Festival of Arts will be filled with the Spirit of Troy from 4 – 6pm on August 18th when painter and Festival exhibitor Fabrice Spies welcomes legendary USC football coach John Robinson for an afternoon of art, wine, live music and great stories. The Orange County USC Family is invited to attend. During the 2012 Festival of Arts Fabrice Spies, whose wife is a Trojan, exhibited a painting called “The Coliseum,” which depicts from an aerial perspective a USC football game in progress. He also exhibited the painting at a South Orange County Trojan Club meeting where Coach Robinson visited for a speaking engagement. Coach Robinson enjoyed “The Coliseum,” and that Christmas Mrs. Robinson gifted him with a print of it. Coach Robinson was twice head coach of the USC football team (1976–1982, 1993–1997), his tenure interrupted by time spent as head coach of the Los Angeles Rams. In both the college and NFL arenas Coach Robinson had great success, leading USC to four Rose

Bowl tournament championships and the Rams to two NFC title games. He is a member of the College Football, California Sports, Rose Bowl and USC Athletic Halls of Fame and remains one of the most popular figures in college football. Does your dog love to lay in the yard and soak up the summer sunshine? Does he lay on his back exposing his pink tummy? Catching a few sun rays may be fine for Fido, but if he’s in the sun too long, he can get sunburn. Your dog is especially at risk for sunburn if he has white or lightcolored fur or is a hairless breed, such a Chinese Crested or American Hairless Terrier. Even if your dog is darker in color, those cute pink noses, bellies, ear tips and pads of the paws can become sunburned too! During sunny days be sure to provide your dog with a shaded retreat. The best way to avoid sunburn, is to stay out of the sun! If your dog will be in the sun during a walk, out on a family boating trip or if he is a working breed, try using a product by Nutri-Vet called Sun Defense Sunscreen for Dogs. The spray, which is available at PetCo, blocks UVA and UVB rays and is comparable to SPF 15 sun-block that a human would use. The special formulation is safe for dogs, but they should still be discouraged from licking it off. Never use a human brand of sunscreen on your dog. Human grade formulas may be toxic if ingested. Typical signs of sunburn on a dog include red skin, blisters, peeling skin and soreness. If any of the skin is broken, raw or showing signs of infection, visit your veterinarian immediately. If you pet does get a little too much sun, help cool him down my spraying him with a cool, not cold, water mist. Also, dampen a washcloth and rub it over his belly and other sunburned areas. When the washcloth gets warm, be sure to re-dampen it with
cool water and keep applying to sooth your dogs discomfort. Once your pet has cooled off, it is safe to apply aloe vera to the sore red areas of his skin. Since it is a natural product, you don’t have to worry if he licks a little off, but try to discourage this, so the aloe vera can help sooth his sunburn. You can find nearly pure
aloe vera gel at health food stores. The gel contains enzymes that will break down inflammatory proteins and promote healing. If your pet doesn’t show signs of improvement in 2-3 days, visit your veterinarian.

Keeping Dogs Cool for Summer By MD Lynn I’m the proud mother to a blue heeler/ shepherd mixed dog named Jake. He’s my pride and joy, and I regularly get told by my kids that I treat Jake better than I treat them! I do! Jake is currently only nine months old, but he’s already a 70 plus pound bundle of energy. If you have dogs, especially if you love them the way I love my Jake, it’s important to understand that dogs can’t sweat like people do. When the summer heat hits, we sweat to cool down. Dogs, on the other hand, only have a limited number of sweat glands. Surprisingly, the vet tells me dogs’ sweat glands are in the pads of their feet! However, the sweat glands dogs do have aren’t enough to cool a dog down when the heat index rises in the summer. Another way dogs cool down is to constrict blood vessels in the face, head and ears. This is an autonomic response from the dog and not something he or she can control. Again, unfortunately, it’s not enough to keep a dog cool. So how do dogs cool down? They pant. Panting is the primary means a dog has to cool down. When you see a dog with his tongue hanging out, that’s his way of saying, “I’m hot!” Unfortunately for your little woofwoof, panting is a very inefficient way of cooling down. The air travels over the
saliva and tongue and works to cool the dog similar to the way an evaporated air conditioner passes are through waterdrenched pads. What does this mean for Fido? It means that to keep your dog cool during the heat of the summer, you should take several steps. Let’s look at a few of them. Have Plenty of Shade for Your Dog Dogs have fur coats. Can you imagine wearing a fur coat that is tight fitting during 95 degree temperatures while in the sun? Your dog does this. If you don’t keep your dog inside your home with you, it is imperative your dog have PLENTY of shade where he or she can rest. Keep Plenty of Water for Your Dog Whether inside or outside, dogs need more water during the summer, not only for hydration, but to wet the tongue, rinse the saliva from the tongue and cool off. Dogs will drink more and play with water more during the summer months so be sure to offer more water, and ensure it is always fresh. If you have an outside dog, consider getting the type of water bowl that connects to a water hose so it will continuously refill as the dog drinks during the day. Reduce Fatty Foods During the Summer Our vet said it was best to go with a lower fat dog food for our big dog during the summer, to help keep Jake lean
and slender, and thus cooler. Heavier dogs will stay hotter than healthy weight dogs. Ask your vet before changing your dog’s diet. NEVER Keep Dogs in Enclosed Places During the Summer NEVER put your dog in an enclosed car, vehicle, camper, trailer, tent, or any other location where the dog cannot move around freely, reach water, etc, or where the temperatures are likely to be higher than the temperatures outside. The inside of cars can quickly reach triple digits of more than 120-150 degrees in the heat of the summer, and your dog doesn’t have the natural
defenses to protect himself. A dog left alone in an enclosed space, even with water, for any length of time is likely to have a stroke or die. If you are caught leaving your animal in an enclosed space, you can face possible criminal charges, some of which might even be a felony. If you are unsure of your dog’s health or how to keep your dog safe this summer, be sure to consult your veterinarian for additional information.Woof!Oh, and Jake says he likes swimming to keep cool in the summer.

Photos by Ann Chatillon It was a warm summer evening on the patio of the Ritz Restaurant and Garden in Newport Beach for over 100 guests who gathered for the Orangewood PALS Summer Mixer; PALS (Providing Assistance, Love and Support) is an auxiliary of Orangewood Children’s Foundation. This mixer was an opportunity to meet PALS members, enjoy great food from a legendary Newport Beach restaurant, have the chance to win amazing opportunity drawing prices, and learn more about Orangewood and its PALS auxiliary. All ticket sales, tips and opportunity drawing net proceeds benefited Orangewood. A mix of old and new PALS friends mingled on the patio adorned with white lights. Summer whites and colorful bright summer dresses seemed to be attire Ritz Managing Partner Ray Jacobi and PALS board member Alan of choice among the women, including PALS board co-chair Tracy Theodore Clifton. of Newport Beach who wore a sleeveless teal dress. Guests enjoyed mouthwatering Ritz appetizers including tomato tarts, chicken and beef skewers, and crab cakes. The bartenders were mixing up “Orange-tini’s”, a mixture of vodka, orange juice and Triple Sec for the signature drink of the evening. Opportunity drawings included stays at the Island Hotel, the Newport Beach Marriott Hotel & Spa (won by former PALS board member and Newport Beach resident Keri Dugan), Hotel Maya in Long Beach, and iPad Mini and a wine basket. Art of Cooking Series Continues on August 18 from 1 - 2pm Learn to create delicious dishes with Cathy Thomas, award-winning columnist, author and on-air host at the Festival of Arts Sunday, August 18 from 1 - 2pm. As part of the 2013 Art of Cooking series, she will demonstrate step-by-step some of her favorite recipes including kale salad with dates, marcona almonds, nectarine salsa, and green bean and tomato salad atop watercress and toasted farro. She will share samples of her finished creations with the audience. According to Cathy Thomas, part of the fun of cooking and entertaining is creating delectable dishes without spending hours in the kitchen. That’s been the focal point of her cooking classes and award-winning newspaper features for over two decades. Her quick-to-prepare recipes showcase flavorful ingredients, relying on fresh fruits and vegetables to make each dish colorful and delicious. As the longtime food columnist at the Orange County Register newspaper, Cathy won the first place award as the best food columnist in the nation from the Association of Food Journalists (in the large newspaper division). She pioneered the use of
culinary-based videos on the Web, taping in her home kitchen with legendary chefs such as Thomas Keller, Stephen Raichlen and Marcus Samuelsson. To make cooking more pleasurable for her readers, Cathy filmed hundreds of cooking “howto’s” and celebrity interviews for the newspaper’s website. Hot Weather Fixes By Georgia Lund Summer brings it’s own brand of fun and foibles. The hot weather that beckons us to come outside play also creates painful thigh rub caused from wearing shorts and having legs rub together when we walk. We get sunburned if we expose our skin to the sun without protection and self-tanner streaks if we try to skip the sun and tan indoors. And our hair frizzes de to humidity to so relegate it to a pony tail or hide it under a hat for most of the summer. Is there a way to fix to these hot weather foibles? Read on and find out.
Calm Sunburn Pain Oops! You forgot to apply sunscreen and now your skin’s on fire after a day in the sun. take a couple of aspirin to ease the inflammation and get into the coolest location you can find. Moving to the shade will get you out of the sun, but the heat will encourage the sunburned skin to swell and do even more damage. Move indoors to an air conditioned room to minimize the sunburn damage and pain. Remove Self-Tanner Streaks So your bottled tan looks really good, except for a couple of streaks on the palms of your hands (or some other small location). To remove the self-tanner streaks spritz the streaks with Windex or a similar window cleaner. Wait two minutes and wash with soap and warm water. This fix will remove the streaks , but it will also strip away all the self-tanner color on that area, so be aware you could go from streaked to white-spotted and use this fix sparingly.
Fix and Prevent Thigh Rub Shorts, sweat and walking cause friction at the point where thigh rub together. Ouch! Thigh rub, chaffing, heat rash, etc., can be quickly fixed by gently cleansing the area, applying baby powder or corn starch and wearing longer shorts or pants for a couple of days until the rash heals. To prevent thigh rub from happening (or reoccurring) generously apply a glycerin based lotion on thighs before donning shorts. a weekly deep conditioning during the summer by combing a moisturizing conditioner into dry hair, then wrapping hair in a warm, damp towel. The warm moisture will create steam and allow the moisturizing conditioner to penetrate hair shaft, smooth cuticles and stop frizz.

Pageant of the Masters Director Greenlights “The Big Picture” Audiences are amazed and enchanted by ninety minutes of tableaux vivants (“living pictures”), incredibly faithful re-creations of classical and contemporary works of art, with real people posing to look exactly like their counterparts in the original pieces. The Pageant of the Masters is arguably one of the most unique productions in the entire world. Every summer in Laguna Beach, California, audiences are amazed and enchanted by ninety minutes of tableaux vivants (“living pictures”), incredibly faithful re-creations of classical and contemporary works of art, with real people posing to look exactly like their counterparts in the original pieces. A live narrator is a guide through the story of each living picture accompanied by a full orchestra. In 2013, the Pageant of the Masters celebrates its 80th anniversary with the theme “The Big Picture” -adding a cinematic spin to its world-class presentation with classic masterpieces that inspired legendary filmmakers. Long before the curtain fell on last summer’s enormously popular production, The Genius, Diane Challis Davy, director of the Pageant of the Masters, was busily formulating her ideas for 2013’s celebration of art in “living pictures” – tableaux vivants – titled “The Big Picture.” She’s excited that this summer will mark the 80th anniversary of living pictures being presented at the Festival of Arts in Laguna Beach. But Challis Davy is also planning a tribute to the modern art of motion pictures and the ways in which the masterpieces of art history have inspired and informed the movies. When asked where she found her inspiration for the 2013 theme, Challis Davy laughed and replied, “In the bathtub!” She then went on to explain this was a reference to Busby Berkeley, the legendary Hollywood director famous for his extravagant and brilliantly-choreographed musi-
cal numbers in the 1930s. Berkeley, it seems, once told a reporter that his best ideas came to him while in the tub. Challis Davy’s playful comment is offset by the seriousness of her continuing devotion to the daunting logistics of putting on the Pageant. With its two casts of hundreds of volunteers, orchestra, narrator and crew of backstage artists and technicians, the Pageant of the Masters is every bit as complex as a big-budget movie shoot, with the biggest difference being that a movie only has to get a shot right once, while the Pageant hits the stage live every night for nearly two months! Challis Davy is quick to point out that masterpieces are once again included in the “coming attractions” of the 2013 Pageant. “We’ll have Vermeer, Gainsborough, Michelangelo, Gerome, Seurat, Rodin, Norman Rockwell. Designers for both stage and screen look to paintings and sculpture for historical information and inspiration. I thought it would be a new twist for the Pageant to take a look back at the work of the Masters that inspired great works of cinema.” As examples, THE BIG PICTURE will showcase how the genius of Michelangelo found expression in “The Agony and the Ecstasy,” how Thomas Gainsborough’s portraits influenced Stanley Kubrick, and how the works of Jean-Leon Gerome can be seen in films by directors like David Lean and Ridley Scott. And “the Master of Suspense,” Alfred Hitchcock, will also merit special attention. But, Challis Davy’s enthusiasm for the theme extends beyond film references. “What are movies but a series of still pictures?” she mused, “The Pageant is a series of still (but living) pictures. That seemed like an interesting connection to consider.” Longtime Pageant scriptwriter Dan Duling concurred. “The Pageant’s combination of art and theater alters the way we look at art. In a way tableaux vivants were the original ‘freeze frames.’ And looking at masterpieces through the viewfinder of motion pictures provides fascinating food for thought.”
When asked if there were any selections for the upcoming show that she’d always wanted to produce, Challis Davy cited the chance to incorporate memorable music from the movies – by Bernard Hermann, Alex North and other composers – and the chance to recreate a fresco by Michelangelo from the Sistine Chapel. On a lighter note, she said she’s looking forward to staging “a loving tribute to the Chicago Art Institute, courtesy of director John Hughes and his film “Ferris Bueller’s Day Off.” Of course, THE BIG PICTURE has a secondary focus, the 80th anniversary of “living pictures” at the Festival of Arts. That’s certainly worthy of celebration, and Challis Davy intends to revisit this remarkable history by highlighting some of the ways in which the Pageant has benefited from its connections with Hollywood celebrities. And, of course, the show will once again conclude with its traditional finale, Leonardo da Vinci’s “The Last Supper.” In 1936, that truly became “the big picture” that put the Pageant on the national map. Everyone associated with the production understands the Pageant
wouldn’t be possible without that spirit of volunteer dedication. As Challis Davy acknowledges, their dedication and loyalty are the remarkable engines that sustain the Pageant. “I’m lucky to be surrounded by people who love the hard work it takes to produce a very elaborate show,” she said. “I get inspiration from the scriptwriter, staff, composers, and from the scores of enthusiastic research volunteers who come up with great suggestions!” The Pageant of the Masters will be performed nightly from Sunday, July 7 - Saturday, August 31, 2013. Low and Slow BBQ in Half the Time A Pro’s Guide to Creating Perfect BBQ the Fast Way
By Jason Dean For many people barbeque is intimidating. We’ve all seen the TV shows featuring professional barbeque cook-offs. The pros make barbeque seem like a closely guarded state secret. They all have their special super-secret dry rubs, homemade sauces, custom blends of hardwoods and smoking rigs that look like a nuclear submarine on wheels. These guys and gals want the home cook to think that good, really good barbeque can’t be achieved without devoting your entire life to the craft. They’re wrong. With the proper planning, if you have a few hours on a lazy summer morning, you can be enjoying succulent, moist, smoky pulled pork for dinner. No nuclear submarine required. Tools & Hardware Required: 1 Gas Grill (Simple & Consistent Temperature Control, don’t be bothered by BBQ snobs. They can’t taste the difference, either. ) Heavy Duty Aluminum Foil Hickory or Apple Wood Chips Meat Thermometer Grill/BBQ Thermometer Grocery List 1 Boneless Pork Shoulder, sometimes called Boston Butt 1 64 oz. container of Apple Juice (no sugar added) Soy Sauce Page 22
Garlic Powder Salt 1 container McCormick Smokehouse Maple Dry Rub 1 package light brown sugar BBQ Sauce of your choice The night before the big day, we need to do a little preparation. We’ll start by making a simple brine for the shoulder. In a large sealable container (big enough to hold the shoulder and about 1 ½ gallons of liquid), pour ½ gallon of hot water. Add ½ cup of salt. Stir to dissolve. Add ¼ cup of garlic powder and 1 cup of soy sauce. (You can play with this brine a little. If you want some sweetness, add some honey or molasses. Have fun, don’t be intimidated.) Once the ingredients are incorporated, add a couple of pounds of ice to chill the brine (don’t skip this step, food safety is very important). Add the pork shoulder and place the entire container in the refrigerator for 8-12 hours. The next day, cut a sheet of heavy duty aluminum foil and add a couple of handfuls of your wood chips. You can pre-soak them, if you’d like, but it’s not required. Roll the chips tightly in the foil and poke it a few times with a fork. Make a few of these packages (3-5, depending on the level of smoke you like in your food). Set the packages aside for now. Start-up your gas grill (make sure you have plenty of gas) and set the

flame to its lowest setting. We’ll be using indirect heat, so only turn-on one burner (most grills have two or three). Allow the grill to heat-up for about 15 minutes. While the grill is heating-up, remove the pork shoulder from the fridge. Pour-out the brine and lightly rinse the shoulder. Pat the shoulder dry with a clean paper towel. Now for the dry rub. For easy clean-up, lay a sheet of aluminum foil on your countertop. Place your Pork Shoulder on the foil and liberally apply your McCormick Smokehouse Maple to the outside of the shoulder. Massage the rub in every fold and crevice of the meat. To help make a luscious, sweet bark, next add the brown sugar. Expect to use about ½ pound to liberally coat the surface area of the pork. Allow the shoulder to sit at room temperature for about 30 minutes, while you proceed to the next step. This will give the rub a chance to blend with and draw-out some moisture from the shoulder, creating a nice crust. Grab one of your wood packets. Using tongs, place the packet near the flame of your grill. When the wood chips start smoking, place the dry-rubbed pork shoulder on the grill, opposite the flame (indirect heat, remember). Close the lid. Carefully monitor the temperature of the grill. You are looking for a temperature of around 235-255 degrees.
Adjust the flame accordingly. When the smoke packet is exhausted, you can remove it with tongs, and add another packet until your desired level of smoke is achieved. (4-5 packets is generally a good level of smoke flavor) Allow the meat to cook until an internal temperature of 140 degrees is achieved. Remove the shoulder from the grill/smoker and loosely wrap in aluminum foil. Place the meat in your pre-heated 350 degree oven and continue the cooking process until an internal temperature of 195 degrees is reached. (There are those who say that finishing the cooking process in the oven is “cheating”. To those I would ask to consider that there is no difference in the method used to heat the pork once the desired level of smoke is achieved. Provided we are using dry heat (versus boiling or frying), the method of simply reaching the proper temperature to allow the connective tissues to break down, rendering a perfectly pull-able hunk of pork, is inconsequential. ) After the pork has reached 195 degrees, allow the shoulder to rest on a countertop for another 20-30 minutes. You may then begin the process of pulling the pork, and snacking on perfect pieces of bark. Add your favorite BBQ sauce or not, the choice is yours.

How to Cool Off Quickly After Being in the Heat By Sophie Spyrou If you have spent any length of time outside in intense heat, it will not take long to start feeling the effects of the raised temperatures. What can you do to cool off quickly after being in the heat? Immerse Your Feet in Ice Cold Water After you have been out in the heat, you will notice that your feet will swell up, even if you have taken care to choose a comfortable pair of shoes that do not constrict your feet but allow them room to breathe. Help relieve the swelling of hot, tired feet and cool off at the same time by immersing your feet in a large bowl filled with ice cold water. Fill a large bowl with cold water and add plenty of ice cubes to cool feet down even quicker. You will soon feel a drop in temperature, as your feet cool off and the swelling goes down. Spritz with Cold Water A small bottle that is full of cool water can help cool you off when you have been out in the heat. Since the product is worn on the neck and designed to absorb a chemical through your dog’s skin, it is inevitable that the dog will also inhale the product, which can make him sick. If you notice your pet acting dizzy, lethargic or nauseated after applying any commercial brand flea & tick preventative, discontinue use of the product, quickly wash it off the animal if possible and see your veterinarian immediately. Be sure to take the product packaging to the veterinarian’s office so they can see what products(s) may be poisoning or causing allergic reactions in your pet. When preventing fleas, you need to think of flea prevention not only for the pet, but also for the areas where he lives, including your yard. Page 24
Repelling fleas & ticks in your yard Cedar is a natural repellent for fleas and ticks. When landscaping your yard, try using cedar based mulch. If you dog is in a kennel style enclosure, try making a perimeter of mulch around his enclosure as a barrier for the fleas. You can also try planting Tansy around the dog kennel enclosure, out of reach of the dog. This low toxicity plant has a fern-like appearance and is normally not consumed by pets, but since it does have a low level of toxins, it is best to keep your pet away from the plant. Tansy is a natural flea repellent. Repelling fleas & ticks on your pet Make a daily visual check of your pet. Look on his tummy, under his arms, behind the ears, near his mouth and anus. If you see little specks of black, you may be seeing flea waste, or a flea itself. The fleas can be black or red if they have fed recently. Use a flea comb to go through your dog’s fur in areas where you can’t see his skin. If you flea comb looks “peppered” your pet probably has fleas. To make a homemade flea spray, thinly slice a lemon or lime, and put it into two cups of water. Bring the mixture to a boil, and then let it sit and steep. Allow it to cool overnight. In the morning, put it into a spray bottle and use it

on your pet as a flea repellent. Be sure to spray behind the ears, in the armpits and around the base of the tail. Avoid the pet’s eyes. This preventative should last at least a half a day. Reapply as needed. Another simple flea spray is a mixture of one cup of water with a few drops of eucalyptus essential oil and lemon essential oil. Making a homemade flea collar is also a safe way to prevent fleas on your pet. Sprinkle a rope or cloth collar or bandana with eucalyptus essential oil, lavender essential oil, tea tree essential oil, citronella essential oil or geranium essential oil. Be sure to re-apply the oils to the collar at least once a week. You can also feed your dog a few natural items to help repel the fleas. When eaten, these items will be excreted though your dog’s skin, making him less than tasty to fleas. Add one teaspoon of natural apple cider vinegar to your pet’s water bowl. The acidic vinegar will be excreted though the dogs skin, warding off fleas. Try adding brewer’s yeast to your dogs daily food rations. One teaspoon per 30 pounds of dog weight is recommended. You can find Brewer’s yeast tablets at your local pet store, or health food store. Be sure not to use baking
yeast. Repelling fleas & ticks in your home Regular house cleaning is essential to minimize fleas. Vacuuming every 2-3 days is mandatory with pets. Try sprinkling Borax (laundry detergent) on your carpets and let it sit for 24-48 hours before vacuuming. This will help kill the fleas, eggs and larvae. Repeat the Borax treatment every 2-3 weeks. Washing bedding, pillows, blankets, sofa covers and rugs in a hot water wash will also help end the flea cycle. By adding eucalyptus oil to the final rinse cycle of your wash, you can also eliminate most dust mite. ***NOTE: These recommendations are for dogs only. Do not use these remedies on cats. Many types of essential oils are toxic to cats.***

At the July 2013 meeting, a policy change was made regarding the costs charged to homeowners for calling DwellingLIVE to register guests instead of using DwellingLIVE’s online registration website (free). Each homeowner will be permitted three (3) call-ins per month at no charge (down from 5). On the fourth call, a $5 assessment will be billed to the homeowner’s account. For example, if a homeowner makes eight calls, they will be assessed $25 (3 free calls, 5 calls at $5 per call). The change is being made because the association is currently paying for calls made by Village residents to the gates, which can be in excess of 250 calls in a given month. Remember, the computer is always free and there is no limit to how many guests you can register at www. czmaster.org
Encroachment survey that has gone out to try and determine the encroachment status of all homeowners. To date, we have 247 survey responses and we are looking for a 100% participation rate. lf you receive a second letter, please help us all out and fill it out and return it. We will be following up with all homeowners who have indicated a desire to maintain their encroachment status to ensure we have a valid agreement on file. This is just a reminder that all new encroachment submittals require a survey and the boundaries to be clearly marked. Candidates will be invited to speak at a Candidates’ Night on September 11. The annual election is scheduled for October 9. Developers to Put $30 Million to Build Elegant Senior Living Facility in Coto de Caza to Replace Former Merryhill School This is the fourth in a series of articles on the proposed senior living project planned for the site at the former Merryhill School. Following a meeting at the Coto Valley Country Club on July 18 the developers agreed to meet with us to discuss their plans and to answer questions that were raised at the meeting. The Coto de Caza News will continue to do interviews and reports on this project which will be published in the newspaper each week. In the past three weeks we have interviewed Tom Grabiel, one of the Oxbow Partners who are planning to develop the property in conjunction with its development and planning partners, Chandler Pratt and Watermark who would own and operate the proposed facility. In future articles the Coto de Caza News will publish interviews with several other individuals. This week we are interviewing David Freshwater, the proposed director of operations at the facility in Coto de Caza. Coto de Caza News: What is your background in operating assisted living facilities such as the one proposed? David Freshwater: Hi, my name is David Freshwater. I’m Chairman, Watermark Retirement Communities, Inc.and President, The Freshwater Group, Inc. I’ve been involved in the seniors housing industry since 1985 when I founded The Fountains, a company known for its development and repositioning expertise. After growing its portfolio to 19 communities, in July of 2005, The Fountains sold the majority of its assets and operations to Sunrise Senior Living. I then formed The Freshwater Group and Watermark Retirement Communities to fulfill my dream of developing a new breed of resident-centered communities based on the seven dimensions of well-being. Watermark, based in Tucson, operates 31 independent living, assisted living, memory care and nursing communities across the nation that provide accommodations and services to over 6000 seniors. I received my undergraduate degree in architecture from Miami University and a Masters in Finance from the University of Arizona. I am privileged to serve on advisory boards for the College of Architecture, Planning and Landscape Architecture (CAPLA) and the Eller School at the University of Arizona. I also serve on the Board of Overseers for Imago Dei and I’m a member of the board of directors of Watermark for Kids, a not-for-profit organization formed by myself and my operating partner, David Barnes, to support underprivileged children primarily in cities in which Watermark does business. Coto de Caza News: What about some residents’ concerns that this project will negatively impact property values? David Freshwater: Let’s take a good look at what we have now. The property in its current unkempt condition that has for years sat in disrepair is certainly negatively impacting surrounding property values. As proposed, our development will cost close to $30 million. This is a significant investment in the redevelopment of this property. It will significantly Page 26

As to the contention that some residents have voiced, there is absolutely no evidence that senior living communities in residential neighborhoods have ever reduced surrounding property values. In fact in the only study of which we are aware that addressed this topic, the findings supported this contention. In 2010, a leading national appraisal firm, Health Trust, was hired to evaluate residential properties adjacent to and surrounding a senior housing community in a high-end Connecticut residential neighborhood. Their report concluded that there was no reduction in value in these homes compared to homes further removed in the neighborhood or in similar sized homes in other comparable neighborhoods. In short, this study concluded there was no negative impact whatsoever. While Watermark has never commissioned appraisals, it has much anecdotal experience having operated retirement communities in many residential neighborhoods through the country. For example just in Southern California, it currently operates communities in Dana Point, Palm Desert, and Beverly Hills, all of which are located next to and within residential neighborhoods. In the case of Dana Point (The Fountains at Sea Bluffs), access to the property is deep within a residential neighborhood and is surrounded on three sides by very expensive homes. In Palm Desert (The Fountains at the Carlotta), Watermark operates a CCRC that is surrounded on all sides by singlefamily homes in golf course developments. And finally, in Beverly Hills (Watermark at Beverly Hills), our community is located on a very residential street surrounded by very expensive condominiums and townhouses. In none of these instances have we experienced that homes in these areas are at all diminished in value because of their proximity to our

communities. It simply is not the case. Coto de Caza News: Who will receive the tax benefit from the increase in assessed value other than Coto de Caza? David Freshwater: Property taxes flow to the State and the County, thereby increasing County revenue to support services to the County at large. Coto de Caza News: How will this development fit inside Coto de Caza ? David Freshwater: Architecturally ,the buildings will be designed to fit into Coto with a Rancho/ Hacienda style. Access can be controlled just like the other commercial uses within Coto. Watermark and its development and planning partners, Chandler Pratt and Oxbow, are willing to work with representatives of the various neighborhoods to help ensure compatibility in design and operation. For example, if traffic is a problem at a particular intersection or the gate at certain hours, Watermark will schedule its shifts and deliveries to avoid these hours. There are few other uses, including residential, where this is possible. Watermark and Chandler are owners and operators. We want to fit into the neighborhood because we are going to be neighbors once it is finished. We operate a number of senior housing communities (many much larger than what we are proposing here) in the middle of residential neighborhoods. They fit nicely into the neighborhoods. They all are compatible. We would appreciate the opportunity to let the concerned residents of Coto see and to tour them. And let them see just how benign the use can be and just how easily senior housing can “fit” in this location. Coto de Caza News: Is this development compatible with the preservation of the protected community concept? David Freshwater: We have a plan to manage

Relatively speaking, this use will create very little traffic (and therefore intrusion into the protected community) than most any other use. No community is completely “protected” from outsiders. Workers from outside the gates are needed for a number of uses inside Coto. The Coto de Caza Golf and Racquet Club, and the Coto Valley Country Club facilities, the equestrian facilities, and tennis facilities all have guests and a myriad of workers for their success. On occasion, every homeowner in Coto hires workers – yard maintenance, handymen, carpenters, electricians, plumbers and the like – to help maintain their homes. Our community will also have workers but unlike every other example I just gave you, every one working in our community will be subject to a rigorous criminal background check before they will be permitted to start work. As a licensed facility in the State of California, Watermark must adhere to this standard or it will face sanctions by the State. Watermark is willing to discuss with representatives of Coto other possible operational guidelines that it could impose to help mitigate concerns about our staff infiltrating the neighborhood once they are through the gate. Coto de Caza News: Since residents pay a premium to live in a community; what is the effect of the project staff, visitors and vendors having access to the gated community? David Freshwater: Although when Coto de Caza was planned the two commercial properties were exempt from being governed by or burdened from any fees imposed by any homeowners association in Coto, we understand and can appreciate that this is a concern some residents of Coto have expressed. We would not expect to have the gated entry and security for free. We are willing to work out an equitable sharing of the costs for these services as Tom Grabiel discussed in Coto de Caza News article on August 9. Coto de Caza News: Will there be a significant traffic impact? And how does it compare to the traffic volumes of the former school? David Freshwater: We hired RK Engineering Group, Inc. to complete a traffic study of the proposed use. The results indicate that traffic is significantly reduced compared to the previous school use. The report examined peak morning (7am - 9am) vehicle trips per hour and peak afternoon/ evening (5pm -7pm) vehicle trips per hour. The proposed assisted living use produces 12 vehicles per hour in the morning period and 20 vehicles per

hour in the afternoon/evening peak hours compared to the school use that produced 107 peak morning trips and 80 peak afternoon/evening trips. (As Tom Grabiel discussed in Coto de Caza News article 2 on August 2.) The consultant’s report is supported by Watermark’s own staffing analysis In the morning shift, there will be approximately 18 staff arriving at 6:00 am; 4 staff arriving at 8:30 am; and 6 staff arriving at 9:00 am. Additionally, there will be approximately 4 staff leaving the night shift at about 6:00 am which means the bulk of our morning traffic would avoid the peak period of 7 a.m. to 9 a.m. Total trips during this period would be about 10 per day, varying slightly each day. Similarly, our own staffing schedule shows that there will be approximately 11 staff leaving between 5:00 and 7:00 and no staff arriving between that same period. Adding to this there will be food deliveries (which can be limited to hours between, say 9:30 and 4:00) as well as a few resident visitors, who tend to be dispersed throughout the day and early evening, many of whom will be visiting from homes within Coto. In short, the consultant’s report reflects relatively closely the traffic numbers that Watermark expects based on its own staffing analysis. To put this all in perspective, with visitors, deliveries and staff, we expect there will be approximately 10 trips during the peak morning hours and 11 during the peak afternoon/early evening period. According to our traffic engineer this would be the equivalent of the traffic generated by only seven (7) houses. This is further evidence that this proposed use is indeed a quiet and very compatible use for this property compared with just about any residential or commercial use that can be envisioned for the site. Coto de Caza News: What about residents’ concerns of increased ambulance traffic and noise? David Freshwater: At the last meeting with residents of Coto, I said that I thought there might be 3-5 emergencies per week that would require emergency vehicle responses at a community this size. Some residents reacted that this was completely untrue and grossly understated based on their own experiences at senior facilities they have visited. As a result, after that meeting I personally reached out to several of the directors at Watermark communities that are similar in size to that which is planned for the site in Coto regarding the number of emergency vehicles are logged at these communities per day or per week. The results of that survey confirmed that, if anything, my estimates are high not low.
While there are occasions when emergency vehicles transport residents in a non-emergency mode (that is without lights or siren), even taken together, the executive directors indicated that the number of instances of emergency vehicle visits to our assisted living communities is less than one per day and is closer to 3-5 per week. Residents of assisted living and memory care communities do have emergencies and require response from or transportation by ambulances on occasion but the frequency of these types of visits are far less than what would be experienced in a nursing facility. Watermark has made arrangements in all its facilities located in residential neighborhoods to have ambulances arrive with lights but without sirens. This would also be the case in Coto de Caza . In fact, it is our understanding that ambulances responding to emergencies within the Coto de Caza community now do so without sirens (except when necessary like, for example, in a blocked intersection). Therefore, we conclude that there would be virtually no impact to the Coto de Caza community due to increased ambulance traffic and noise associated therewith. Coto de Caza News: Will there be any significant parking and lighting impacts? David Freshwater: The County of Orange zoning code requires 1 space per every 4 beds in a community such as this. We are proposing 46 spaces for this site. Using all of the appropriate zoning standards we will have abundant parking for this use. While we have yet to specify exact landscape and parking lot fixtures for use at this development (that would occur several months down the road in our process), we can pledge to select lighting fixtures that would minimize impact on neighboring homes. It has been our practice in our other facilities to work with a committee of homeowners to insure that such selections are appropriate for the use. Coto de Caza News: What would be the effect of the vendors serving the project? David Freshwater: It is true that we will have various vendors visiting the community on a regular basis (food service primarily). This said, we have successfully limited delivery times to specific windows in all of our other communities in residential neighborhoods. For example, we have restricted food and other deliveries to after 9:00 in several of our communities at the request of our neighbors. This can be easily arranged and accomplished.
