POST OFFICE CREWS DELIVER LADERA RANCH NEWS
United States Postal carriers at the Mission Viejo Post office get ready to load this week’s edition of the Ladera Ranch News. According to Jerry White, publisher of the Ladera Ranch News,” Our goal is deliver the newspaper every week to every single family residence in Ladera Ranch. The newspaper which began in 2003, was adjudicated by the Superior Court in December of 2004 as a newspaper of general circulation for the communities of Ladera Ranch, Las Flores, and Wagon Wheel. As the only weekly newspaper exclusively for Ladera Ranch we try to deliver a superior newspaper, and in this context we are constantly striving to improve the delivery as well,” said White. “When we first initiated local delivery of the Ladera Ranch News” he continued, “We started with young newsboys who traveled throughout the communities of Covenant Hills, Oak Knoll, Bridgepark, Flintridge, Township, Terramor, Avendale, Wycliffe, and Echo Ridge. At that time we were the only publication in Ladera Ranch .Time has proven that the United States Post Office seems to be the most reliable method of delivery.” “Subsequently,” White continued,”
We branched out to include bulk stations where additional copies of the Ladera Ranch News were left in local retail businesses as well as subscriptions which were mailed primarily to out of town readers who wanted to keep up with events in Ladera Ranch.” White went on to say that” The Ladera Ranch News has also expanded into an electronic version
which is available on the web at Laderaranchnews.com. The newspaper has been constantly expanding and seeking new columnists, and local writers to augment our popular publication. One of our most widely regarded features is Society Scene by Kelly Bennett.” Kelly Bennett is the popular host of the television and radio show “Breakfast with Gary and Kelly”.
Her Society column is the most widely read Society column in all of Orange County appearing in five local newspapers. The Ladera Ranch News is part of the Mission Viejo News Group, which also publishes the Coto de Caza News, Mission Viejo News, San Clemente News, and the Newport News.

Adopting a Shelter Pet If you’re thinking about getting a new pet, consider going to an animal shelter to find that new family member. There are about 3,500 shelters in the United States that serve an estimated 5 to 7 million homeless animals, according to the American Society for the Prevention of Cruelty to Animals. Why adopt from a shelter? You will make a pet happy. By adopting from a private humane society or animal shelter, breed rescue group, or the local animal control agency, you’ll help a homeless pet find a new home. You will receive a healthy pet. Most shelters follow strict medical protocols including examinations when pets come in and vaccinations before they leave. In addition to medical care, shelters also screen animals for specific temperaments and behaviors to match each pet with the perfect family. Animal shelters have happy, healthy pets just waiting for someone to take them home. You will support your community and save money at the same time. Adopting from an animal shelter is usually less expensive, as your local shelter will just ask for a moderate adoption fee that will mainly cover basic routine medical care costs. Shelter pets are also usually already spayed or neutered and vaccinated. Finally, you help promote responsible pet ownership through your community. Questions to ask When you visit an animal shelter, ask the staff some key questions. Ask about: The pet’s history – Find out as much as you can about the pet’s background. Was it a stray or given Page 4
up by its owner? Did it come from a loving home? Did it live with other pets or with children? Medical and behavioral assessments – Find out what evaluations have been done and what lifestyle would suit it best. Ask about the pet’s interaction with the staff, and what their impressions are. The adoption timeline and process – Some shelters will let you take an animal home right away, while others take a slower approach. Find out what to expect up front. Spaying/neutering – Most shelters have policies
The Ladera Ranch News
to make sure that animals leave spayed or neutered. Some take care of this before the animals are available for adoption. Others schedule the procedure when the animal goes home and either finalize the adoption once it is performed, or refund the spay/neuter deposit once proof is provided. Every dog and cat deserves a home. When you adopt from a shelter, you provide a pet with another chance at finding love and a forever home.

Ham it Up with Green Eggs and Ham “Do you like green eggs and ham?” To answer the enduring question and celebrate the 50th anniversary of Dr. Seuss’s classic Green Eggs and Ham, The National Pork Board has teamed up with celebrity chefs Michael Symon and Melissa d’Arabian to bring the story to life with tasty new recipes inspired by the book. If you’re looking for recipes that your family will want to eat on a boat, in the rain or on a train, check out these new hammy creations: * Ham Sandwich with Greens and Eggs, courtesy of Michael Symon: Wake up to a warm breakfast sandwich that combines crisped Black Forest Ham with a fried egg, melted cheese, pesto and greens. * Ham and Green Egg Mini Tartlets, courtesy of Melissa d’Arabian: These surprisingly easy-to-make ham and egg spinach tartlets, with bread instead of pie crust, can be made ahead of time for an on-thego meal. Ham is a versatile option for breakfast, lunch or dinner since it pairs well with many flavors. From bone-in to boneless, from fullycooked to fresh, whipping up deliciously good, healthful meals with ham is a snap. For more information, including Green Eggs and Ham recipes from Mitzi Dulan, RD, CSSD and top food blogger, Jaden Hair (ham sushi anyone?), visit www.TheOtherWhiteMeat.com. You can also follow The National Pork Board on Facebook at facebook.com/TheOtherWhiteMeat and @allaboutpork on Twitter.
Tartlets
Yield: 4 servings Prep time: 30 minutes Cooking time: 12 to 14 minutes 1/3 cup finely chopped fullycooked ham 4 1/2-inch-thick slices soft white sandwich bread, crusts removed 2 tablespoons butter, softened 1/2 cup frozen chopped spinach, thawed and squeezed dry 2 ounces reduced-fat cream cheese, softened 3 tablespoons grated fresh Parmesan cheese 1 teaspoon 2% milk 1/2 teaspoon garlic powder 4 medium eggs Freshly ground black pepper Preheat oven to 375°F. Press Green Eggs and Ham Mini white bread with palm of hand until
flat and doughy, and butter both sides. Gently place in 2 1/2-inch muffin cups or 4-ounce ramekins, pressing to form 4 individual tartlet crusts. Mix spinach, cream cheese, Parmesan cheese, milk, and garlic powder in small bowl; set aside. To assemble tarts: divide ham among the 4 bread cups in muffin cups. Crack 1 egg into each tartlet crust, season with pepper, and top with a generous spoonful of spinach mixture. Bake in oven for 12 to 14 minutes or until egg whites are firm, but yolks are still moist. Cool slightly. If using muffin cups, remove from cups to serve. Recipe courtesy of Melissa d’Arabian.

LOCAL DENTIST DR. MICHAEL TESSIER REVEALS THE SECRETS OF OVERLy SENSITIVE TEETH A patient of long-standing came in s e v e r a l weeks ago, complaining that her teeth were sensitive, generally, all over mouth. When I visually Dr. Michael Tessier inspected her mouth, there was no evidence of cracked teeth, or tired-old fillings, or bad crowns, or gum recession- all the usual suspects. There was nothing that I could see that might contribute to tooth sensitivity. We treated the sensitive teeth on the right wide with the laser. When she came back two weeks later, she said that she couldn’t wait to have me do the left side, because all the sensitivity was gone on the right side. Positively amazing. So, when you eat ice cream, or drink a margarita, one of your molars, or maybe even a bicuspid, is sensitive. When you take that problem tooth to your friendly, neighborhood dentist, and he says you need that tooth capped (or crowned). What’s that about? When someone drills on a crystalline structure, like glass, or porcelain, or tooth enamel, the heat of friction from the drilling device puts microscopic fractures in the material. When a dentist has to put a big filling in a tooth, those little fractures pre-dispose that tooth to further fracture. The fractures
virtually split the tooth. Later, after years of chewing trauma, the nerve becomes irritated from this microscopic splitting during chewing or clenching. This hypersensitivity is usually manifested as temperature sensitivity. Just replacing the filling doesn’t help because the cracks are already there. A crown, on the other hand, holds the tooth together, like the band on a barrel, so the splitting activity stops. If the trauma to the nerve of the tooth didn’t damage that nerve irreparably, which would necessitate a root canal (removing the damaged nerve from the root of the tooth), a crown is all that’s necessary to allow you to return to the pleasures of ice cream-eating. There are also instances where a tooth is sensitive to cold or even sweets, and a fracture is not the culprit. This is most often a result of root sensitivity, where the root of the tooth is exposed due to gum recession. There is also a setting on my soft-tissue laser (Periolase) for treating teeth that are cold sensitive due to root sensitivity. Dr. Tessier says “If this article brings forward a question, please call me and we can chat. Consultation appointments are always complimentary. Please don’t hesitate to call my office if you have any questions about this process, or any other of the modern technologies we can use to make your smile whiter and your day better.” Dr. Michael Tessier is located in Los Flores plaza at 28562 Oso Parkway. Most major credit cards and dental plans are cheerfully accepted. Telephone (949)459 -7212

Choosing a Weight Loss Plan that’s Right for You Losing weight and getting into shape is a goal many Americans aspire to achieve. Choosing a weight loss plan that fits your lifestyle is a crucial first step in developing the diet that works for you. The road to a sound weight loss plan should begin with the following steps: Talk with your doctor First and foremost, speak with your doctor. Your healthcare provider can help you set attainable weight loss goals as well as discuss any medical conditions you have or medications you may take that could affect your ability to modify your diet. Talking with your doctor can help you find a plan that’s tailored to your particular needs. Choose the right plan for you One size does not fit all when it comes to diets. In fact, several studies featured in the International Journal of Obesity Supplements (IJOS) reported that adults with greater insulin resistance are more successful with weight loss on a low-carbohydrate diet compared with a low-fat diet. In such cases, a lowcarbohydrate diet such as the Atkins Diet has been proven to have positive
results on insulin resistance. Dieters start with a focus on carbohydrates from vegetables and slowly add back fruit, nuts and whole grains as one’s carb balance is established and weight loss goals are met. Opt for a diet backed by science over the latest fad. Commit to your Plan Losing weight and keeping it off requires a long-term commitment. Once you have developed your weight loss plan it is important that you stick with it. You need to make healthy changes to both your diet and lifestyle. Your diet should include foods you will enjoy eating for a long time, not just for a few weeks or months. Adopt a plan that gives you the ability to enjoy a variety of food options. For example, if you are a veggie lover, the Atkins Diet could be a good plan for you to follow. From day one, the lowcarb diet allows you to consume more vegetables than are recommended by USDA Guidelines. In fact, you can even follow Atkins as a vegetarian or vegan. Finding a plan that works for your lifestyle and incorporates more of the foods you already love will help reinforce your new healthier eating
habits. Drink more water The Beverage Institute reports that the average adult in the US gets a significant portion of their calories from beverages, mostly in the form of carbohydrates. Avoid drinking sugary sodas, juices and alcohol, and replace these with more water. Rally support
The first few weeks of the diet can be the most difficult. To be successful, look to family and friends who have made similar lifestyle changes for support and advice. Doing a little homework and smart planning can help you choose a weight loss plan that will help you be successful both now and for the rest of your life.
Three CUSD Schools Awarded “Innovation in Education” Grants Three Capistrano Unified School District schools Aliso Viejo Middle School, Aliso Niguel and Tesoro high school have been named recipients of the first “Innovations in Education” grants from Cox Communications. The CUSD schools are among 14 Orange County schools awarded grants to help fund advanced science and technology programs for students in grades K-12. The $1,731 grant for Aliso Viejo Middle School will support hardware and software purchases for the robotics and engineering class in which students learn to write computer codes and programming, and gain an understanding of logic, control parameters, and sensor feedback sequences. The grant application was written by science teacher Mark Groothuis. At Aliso Niguel High School, the $4,948 grant will benefit the school’s iPad Academy . More than 420 students use their iPads to take tests, share information about projects, and participate in online discussion groups in the Voluntary iPad Academy . The grant will provide iPads to students in the program who cannot afford their own device. The grant application was written by science teacher Erik Silberman.
Tesoro High School will use its $5,000 grant for science laboratory classes as students gather, analyze, and share sensor data collected using hand-held devices, such as in measuring water content in soil, UVB radiation, solar energy, energy from photosynthesis, and light needed for growth. The data can then be shared and processed wirelessly on any
device with a web browser such as a smart phone or tablet. The grant application was written by science teacher Amy Varricchio. The “Innovation in Education” grant program, which is in its inaugural year, invited principals, administrators, and teachers at eligible schools to submit a grant application for classroom projects that focus on skills-
based learning, STEAM (Science, Technology, Engineering, Art/Design, and Mathematics), digital literacy, or cyber citizenship (responsibly using the Internet). A panel of educational, community, and business leaders helped Cox score the applications.

Inaugural Holiday Tea Supports OC’s Newest Charter High School
The Ladera Ranch News

Photos by Ann Chatillon More than 250 Orange County ladies (and a few men too) gathered recently for tea at The Balboa Bay Resort to raise money for The Academy – a public charter high school in Santa Ana funded by Orangewood Children’s Foundation and opened in August, 2013. The event was presented by Orangewood Children’s Foundation. Major sponsors were Black, Starr and Frost; the Samueli Foundation; and Valaree and Elizabeth Wahler. The event started off with the opportunity drawing which included nine items plus a premium opportunity drawing for a chance to win a pair of Black, Starr and Frost diamond earrings valued at $9,900. The winner of the earrings was Judy Dennis. During his remarks, Alfredo Molina (Chairman and CEO of Black, Starr & Frost) offered a surprise live auction item of a $5,000 gift certificate plus dinner for eight in the Black, Starr and Frost vault. The successful bidders were Susan Samueli and Jaynine Warner. Event co-chairs Andrea Casaw and Erika Clemons then came up and welcomed guests, Academy founders Susan Samueli and Sandi Jackson Tea committee members Kimberly Kirksey (center) and Rochelle Kadin discussed the history of and need for The Academy. (right) with Rochelle’s daughter Lillie (left) During the lunch break, guests enjoyed a selection of tea sandwiches including: egg salad with cornichons; smoked turkey, pommery mustard & artisanal pickles; European cucumber & herbed chives cream; smoked salmon & watercress; and apple & brie Cheese. Guests were treated to a yummy quartet of desserts: a chocolate yule log, a miniature pumpkin pie, a holiday éclair filled with raspberry mousse, and a pistachio torte. After lunch was served, Head of School Anthony Saba shared with the audience the unique benefits of the school including a laptop for every student, a focus on project-based and work-based learning, and the STEAM curriculum. First year results include a 97% attendance rate and 50% of students on the honor roll. He explained the need to fundraise for a public school, saying “California ranks 49th in the U.S. in per-student funding. As a public charter high school, The Academy receives the same funding as other public schools in California. But through the fundraising efforts of Orangewood, we are able to make The Academy a great school with amazing teachers and experiences for our students.” Academy student Nadia (Class of 2017) shared about her difficult elementary school experiences. She was bullied by kids who thought she was weird, and didn’t feel like her teachers cared about her education. All Academy Head of School Anthony Erika Clemons and Andrea Casaw this deeply affected her self-esteem to the point where she stopped dreaming with the Snow Queen aka-Lacey James Saba with daughter Haley about her future. At The Academy, Nadia is thriving. She has a group of friends who care about her deeply, and she describes everyone at the school as a family. The support from Academy teachers, staff, and Head of School, Anthony Saba, has reinvigorated Nadia’s passion for life. “Mr. Saba took me aside one day and told me that I could be anything I wanted to be. Nobody had ever said that to me before. It totally changed the way I think about my future.” The event netted $85,000 for the operations of the high school and Orangewood plans to make it an annual holiday event. Orangewood Children’s Foundation is a private, nonprofit organization. Founded in 1981, it is one of the leading providers of services to children in foster care. Recognizing that nearly 50% of foster youth do not graduate from high school, in August 2013 the Foundation opened The Academy, a free charter high school in Santa Ana for community, underserved and foster teens. Now in its second year of operation, The Academy has 240 students between its freshman and sophomore class. For more information, visit www. orangewoodfoundation.org and www.theacademyoc.org. 5 Best Dog Breeds for Families By Ashley L Do you have a child that is bugging you constantly for a dog? Are you running out of excuses for getting one? Maybe it’s time to add that new furry member to your family, but before you decide, there are a few key factors you should take into consideration. While we all tend to choose the cutest puppy we see, it’s not necessarily the best way to choose a dog. When looking for the perfect dog for your family, be sure to also consider size, temperament, your living situation, and cost of ownership. Gaining knowledge of these factors, will ensure you find the best suitable breed for your family’s lifestyle. With over 150 dog breeds to choose from, it can be a bit overwhelming finding the right breed for you. So, to lend you a helping hand, I have compiled a list of 5 of the best known dog breeds for families. 1. Labrador Retriever Recognized by the AKC, as the most popular dog breed in the United States, these gentle and affectionate dogs make excellent pets for families. Smart, obedient, and devoted, Labs are good with children of all ages, as well as other dogs and pets. Although, they are known to be very friendly, they are also a very protective breed, and are great choices for those wanting added security for their family. As a member of the working class, Labradors are extremely energetic and require lots of exercise to stay healthy. 2. Golden Retriever Similar to the Labrador, Golden Retrievers are very sweet and affectionate family dogs that love pleasing their owners. Their patience and gentle disposition, make them great companions for children of all ages. Whether it’s chasing a ball, swimming in a lake, or hiking in the mountains, these highly intelligent animals are ready to take on any challenge that comes their way. Like other larger dog breeds, Golden Retrievers are extremely energetic and require daily exercise, to keep healthy and burn off excess energy. 3. Beagle Known to most as the hunting dog, these floppy eared hounds make great pets for families with children. They are very gentle, loving, and loyal animals with spunky personalities, that are sure to win over your heart. Although, Beagles are very intelligent animals, they have been known to be quite stubborn, and love to get into mischief. Their innate ability for tracking and curious nature often get these pups into trouble. For this reason, they do best in homes, with large fenced in yards, to provide security and decrease the chance of your pet running off. Beagles do well in most living situations, but are very energetic and require lots of exercise. 4. Bulldogs Don’t let their tough exterior fool you, Bulldogs are one of the most gentle dog breeds and have a very sweet personality. Their thick, rugged build make them an excellent choice for families with rambunctious children. Although, they are not the most energetic of dog breeds, they love to play and require lots of attention. The Bulldog’s mellow attitude make them a great indoor pet, and perfect for families who live in apartments or have small yards. 5. Dachshund Nicknamed the “weiner dog”, for its hot dog shaped appearance, Dachshunds have been a family favorite for years. Their short, stubby legs and long, floppy ears are sure to make you smile. Similar to the Bulldog, Dachshunds are definitely not the most energetic breed, but love attention and make great indoor pets. Although, they tend to be shy around new people, they adapt well to most living environments, and get along great with other pets and children of all ages.

You can see it in the gentle foothills, and sense it from the warmth of Village of Sendero named your neighbors. Since opening last June, Sendero, our first village, has blossomed. U.S. Community of the Year Parks, paseos, trails, pools, and three clubhouses are all welcoming hundreds by the National Association of new Ranch residents. Our sports field, Sendero Farm and The Marketplace of Home Builders are on the way. Both family and 55+ neighborhoods are thriving, and folks are enjoying a fun-filled calendar of events courtesy of the nearby nature reserve, plus all the Sendero activities staged by our own RanchLife team. It’s a whole new to-do list, made for good times, vivid memories, and a full life. Visit RanchoMissionViejo.com to see more. S E N D E R O N E I G H B O R H O O D S (from the $300s)
