Think outside the chocolate box when hosting a holiday cookie exchange The holidays provide a good excuse to bake and eat cookies. Not the traditional chocolate chip or peanut butter cookies that most of us eat during the rest of the year, but those special recipes that have everyone going back for a second taste. Hosting a cookie exchange is a great way to expose your friends to a wider variety of cookie recipes this holiday season. But before sending out invitations and asking your friends to make their favorite cookie recipe, consider thinking outside the chocolate box for your party this year. There are tons of ways to make your cookie exchange party unique. Start planning your party right away using a couple of these ideas. * Make it a themed cookie exchange. Theme parties are fun at any time of year, but take it one step further with your cookie exchange. Invite your guests to follow the theme with the recipes they choose to make. For example, consider hosting a black and white cookie party, explaining to attendees that the cookies must have a black or white element. Coconut, white or dark chocolate candies, nuts and sugar for icing are just several ingredients that fit the bill, and you can find dozens of recipes featuring these items. Or make it a chocolate party, where all of the recipes have a

Stir in peanut butter. Add corn cereal and marshmallows; stir. Pour into buttered 8-by-8 inch square pan or dish. When firm, cut into squares. * Up the game on the party favors. The purpose of a cookie exchange is to leave the party with a variety of holiday cookies, but you and your guests can have a lot more fun. Ways to think outside the chocolate box include holding a wine pairing with the cookies. Red wine and chocolate go well together, and your guests can

Directions: Preheat oven to 350 F. Mix butter and sugars in large bowl until light and fluffy. Add egg and beat, then add vanilla extract. Mix flour, salt and soda, and add gradually to butter mixture. Fold in chocolate pieces. Drop rounded spoonfuls onto greased cookie sheets. Bake 8 - 10 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes. Then place on a wire rack to cool completely. Gracious etiquette tips to survive holiday gatherings Whether you are hosting a fantastic holiday gathering or you’re the gracious guest, ask yourself this question: Are you comfortable with your knowledge of etiquette? Are you confident in your table manners or do you admit you take your cue by watching those around you? “It seems so many people only think about etiquette during the holidays and then the pressure is on to be perfect,” says etiquette coach Dubravka Vujinovic. “But proper manners should be important at every meal, whether you are sitting down to a formal gathering or casual dinner with friends.” Vujinovic is one of the etiquette experts at North Carolina-based Replacements, Ltd., the world’s largest retailer of old and new china, crystal, silver and collectibles. This time of year the company is bombarded with inquiries from those needing a crash course in proper social graces and entertaining. Questions range from how to set the table, to the best way to serve the perfect meal. Vujinovic offers these suggestions for your next event. * Break out the buffet Buffets settings are becoming increasingly popular. In this style of setting the host places the food, dinnerware and utensils on a sideboard or table and guests serve themselves. “I love buffets, because they are so stress-free for me as a hostess,” says Vujinovic. “Since the food is already on the serving table, I don’t have to keep running back and forth to the kitchen to keep bringing out different courses or dishes; I can relax and enjoy the evening. On the other hand, as a guest, I like buffets because this setting allows me to eat

the food I want; I don’t feel obligated to have to sample everything that is being passed around the table.” If you’re hosting a seated buffet, water glasses should be filled and on the table before your guests sit down to their meal. Guests should be guided to pick up their dinnerware and place it at their individual setting. * Set the perfect table If you opt to set your table in advance or if you’re a buffet guest setting your own place setting, remember, forks go to the left, knives then spoons to the right. The sharp side of the knife blade should be turned toward the dinner plate. And remember, only include utensils in your place setting that will be used for the courses you are serving; extra pieces may confuse your guests. The bread plate goes on the left of the dinner plate, glasses on the right. Don’t panic if you aren’t sure about the proper place setting for each meal. Vujinovic says you can find “cheat sheets” or place setting guides for various meals on the company’s website, replacements.com, under the site’s “neat things” tab. * Tips for hosts and guests Remember, the host/hostess always sits last. That person will let you know when it’s OK to begin eating. They may offer a blessing or statement or perhaps start by passing a dish. Always pass food around the table counter clockwise to your right and refrain from serving yourself first. Pass the salt and pepper as a set, even if you’re only asked for one. If you’re not sure which utensil

to use with each course, start on the outside and work in toward the dinner plate. Don’t cut more than one or two bites of food at a time, and never butter an entire roll or piece of bread. Instead, pinch off pieces small enough for one or two bites and butter those first. If you need to excuse yourself temporarily, place your napkin on your chair to indicate you will be coming back. Signify you’re finished with the meal by placing your napkin to the left of the dinner plate, and your fork and knife side by side diagonally across your plate with the sharp side of the knife blade facing inward and the fork tines up. Turn your cellphone on vibrate or don’t even bring it to the table. Enjoy the company of those around you. And what if you commit a major holiday fumble by accidently breaking a piece of the host’s dinnerware? “You should certainly offer to replace the broken piece, especially if it has sentimental value for the host or hostess. Pompom Fur Wreath Crafting time: Weekend project Skill level: Some experience necessary Supplies and Tools: Pompom makers: 2 1/2-inch, 3 3/8inch, 4 1/2-inch Bernat Softee Chunky Yarn: Grey Heather, Taupe Grey, Natural (2 skeins each) Scissors Hard foam tubular 12-inch wreath Bernat Faux Fur Pompoms: Grey Lynx, White Rabbit (2 each) Hot gun and glue sticks T-pins or 2-inch pins with pearl heads Decorative ribbon: 2 1/2-inch-by12-foot, blue-grey 1. Follow directions on pompom maker packages to create three different sizes of poms of various colors using chunky yarn. If desired, mix yarn to give some pompoms a speckled look. Make about 50-60, depending on the fullness of the desired look. 2. After making pompoms, place pompoms around wreath, varying sizes and incorporating fur pompoms, as well. The overall look should be a kind of hilly terrain look to give it

Fashion ideas for women Bring in those dresses that have the lighter colors like pale pinks and light greens from the summer, and then layer with your darker winter pieces. Sweaters and tweed jackets are hot right now and transition well from fall through winter, and are even wearable in the spring. Tops and bottoms in the same print are en trend, and easy to wear, especially when hosting. If you don’t have time to over think what to wear. Too busy making sure everything else is right, and just want to put on something you know is fashionable and will work. There are also all kinds of jackets this season. Go for leather jackets, jackets with prints and your solid colored jackets. Just remember that if you pick a jacket with a louder print, you’ll want to pick something not-soexciting underneath. Olive Crest OC Hosts Annual “Power of One” Luncheon Photos by: Steve Lee Photography An overflow crowd of 340 guests were in attendance at Olive Crest Orange County’s “THE POWER OF ONE” luncheon at the Westin South Coast Plaza Hotel. Co-Masters of Ceremonies for this event, which honors Olive Crest’s adoptive and foster families, included Tim Bauer, Executive Director of Development at Olive Crest Orange County, along with Wendy and Tim McMahan. In celebration of National Adoption Month, David Pelzer, #1 New York Times and International best-selling author, inspirational speaker, and internationally recognized humanitarian, was the keynote speaker. “Pelzer is an outstanding example of the personal power each of us has to make our lives meaningful and to make a difference in this world,” stated Tim Bauer. “He is such an inspiration to us all. He has been very familiar with Olive Crest’s work over the years,” Bauer continued. Guests in attendance were privy to a reception that included mingling with Pelzer along with bidding started the day off with fruit and cheese display that included domestic cheeses with fresh and dried fruits and nuts, sliced baguette and crackers and fresh fruit and berries including tray passed miniature quiche and Raspberry and Brie in Phyllo Abigail Pearson, the 9 year old adopted daughter through Olive Crest of Marcy and Norm Pearson, opened up the program giving the blessing. She is the youngest and one of three adopted children from Olive Crest in this family. Lunch for the attendees included a preset mixed fall greens with crumbled goat cheese, candied pecans, dried cranberries and Mirabelle pear vinaigrette. The main entre included a grilled breast of chicken with season vegetables, wild mushroom risotto, with pommery mustard and thyme sauce. Dessert was a trio of mini pumpkin cheesecake, dark chocolate mousse, and a wild berry shot. “For over four decades, Olive Crest has become the premier facilitator of foster children and children in dire need,” stated Pelzer. “They are the ultimate safe haven. Simply put . . .Olive Crest is the Cadillac of service. You want to talk about unconditional love, professional, unconditional love . . .that is Olive Crest. Bless all the work they do,” Pelzer continued. The event concluded with guests in attendance being asked for their support to help Olive Crest’s over 1,000 children and families in Orange County during the upcoming holiday season and throughout 2016. IF AN EVACUATION IS ADVISED Discuss what to do about power outages and personal injuries. Draw a floor plan of your home, and mark an escape route from each room. Locate the main electric fuse box, water service main, and natural gas main. Learn how and when to turn these utilities off. Teach all responsible family members. Keep necessary tools near gas and water shut-off valves. Remember, turn off the utilities only if you suspect the lines are damaged or if you are instructed to do so. If you turn the gas off, you will need a professional to turn it back on. Pick one out-of-state and one local friend or reative for family members to call if separated by disaster (it is often easier to call out-of-state than within the affected area). • Post emergency telephone numbers near telephones. • Teach children how and when to call 911, police and fire. • Teach children how to make long distance telephone calls. • Instruct household members to turn on the radio for emergency information. COMMERCIAL Commercial and industrial sites offer the opportunity and need for more detailed planning and sometimes new construction or other preparations to facilitate putting the plan into action when necessary. This may include such things as: • Preparing electrical equipment for quick disconnect. • Preparing equipment for quick evacuation. • Keeping raw materials and products on pallets for quick removal. • Providing means for opening all necessary doors manually in the event of a power outage. Arranging for transportation when needed. • Arranging for storage space when needed. • Keeping on hand all items needed for rapid cleanup and restoration of production. EMERGENCY ACTION PLAN PREPARE A DISASTER SUPPLY KIT • List of important phone numbers (family, physicians, etc.) • Copy of insurance policy. • Credit cards and cash. • An extra set of car keys. • Inexpensive rabbit-ears television antennas to use when cable goes out. • Special items for infants, elderly or disabled family members. • Extra batteries. • Matches. • Clock (wind-up or batteryoperated). • Blankets or sleeping bags. • Scissors. • Plastic garbage bags. • Map of the area. • Clean change of clothes & rain gear. • A supply of non-perishable packaged or canned food and a non-electric can opener. • A first aid kit and prescription medications. • Flashlights and extra bulbs. • Battery-operated lanterns. (Candles and kerosene lanterns are fire hazards.) • Working fire extinguishers . • Battery-operated radio. • Assemble supplies you might need in an evacuation. Store them in an easy-to-carry container such as a backpack or duffel bag. Put aside in a special box in garage. Keep heat-sensitive items inside home and rotate stock throughout season. Batteries can go in refrigerator. WATER Having an ample supply of clean water is a top priority in an emergency. A normally active person needs to drink at least two quarts of water each day, hot environments can

double that amount. Children, nursing mothers and ill people will need even more. You will also need water for food preparation and hygiene. Store a total of at least one-gallon per person, per day. You should store at least a two-week supply of water for each member of our family. If supplies run low, never ration water. Drink the amount you need today, and try to find more for tomorrow. You can minimize the amount of water your body needs by reducing activity and staying cool. Store water in sealed, unbreakable containers. Identify the storage date and replace every six months Sandbags The use of sandbags is a simple, but effective, way to prevent or reduce floodwater damage. Properly filled and placed, sandbags can act as a barrier to divert moving water around instead of through buildings. Sandbag construction does not guarantee a watertight seal, but is satisfactory for use in most situations. Sandbags are also used successfully to prevent overtopping of levied streams and for training current flow to specific areas. Untied sandbags are recommended for most situations. Tied sandbags should only be used for special situations when pre-filling and stockpiling may be required for specific purposes such as filling holes, holding objects in position or to form barriers backedby supportive planks. Tied sandbags are generally easier to handle and to stockpile, however sandbag filling operations can generally best be accomplished at or near the placement site and tying of bags would waste valuable time and effort. If the bags are pre-filled at a distant location, due consideration must be given to transportation vehicles and placement site access. The most commonly use bags are untreated burlap sacks available from feed or hardware stores. Empty bags can be stockpiled for emergency use and will be serviceable for several years if properly stored. Filled bags of earth material will deteriorate quickly. A heavy bodied or sandy soil is most desirable for filling sandbags, but any usable material at or near the site has definite advantages. Course sand could leak out through the weave of the bag (to prevent this double bag the material). Gravely or rocky soils are generally poor

choices because of their permeability characteristics. Sandbag barriers can easily be constructed by two people, as most individuals have the physical capabilities to carry or drag a sandbag weighing approximately 30 pounds the use of sandbags is a simple, but effective, way to prevent or reduce floodwater damage. Properly filled and placed, sandbags can act as a barrier to divert moving water around instead of through buildings. Sandbag construction does not guarantee a watertight seal, but is satisfactory for use in most situations. Sandbags are also used successfully to prevent overtopping of levied streams and for training current flow to specific areas. HOW TO FILL A SANDBAG Filling sandbags is a two-person operation: One member of the team should place the empty bag between or slightly in front of widespread feet with arms extended. The throat of the bag is folded to form a collar and held with the hands in a position that will enable the other team member to empty a rounded shovel full of material into the open end. The person holding the sack should be standing with knees slightly flexed and head and face as far away from the action of the shovel as practical. The shoveler should carefully release the rounded shovel full of soil into the throat of the bag. Haste in this operation can result in undue spillage and added work. The use of safety goggles and gloves is desirable and sometimes necessary. For large-scale operations, filling sandbags can be expedited by using bag holding racks, metal funnels, and power loading equipment. However, the special equipment required is not always available during an emergency. Bags should not be filled more than half full or less than onethird their capacity. PLACEMENT Remove any debris from the area where bags are to be placed. Place the l/2-filled bags lengthwise and parallel to the direction of flow. Fold the open end of the unfilled portion of the bag to form a triangle. (If bed bags are used, flatten or fire the tied end.) Place succeeding bags on the folded or fired portion of the previous bag and stamp into place to eliminate voids and form a tight seal.

Asparagus Tart 1 sheet frozen puff pastry, thawed 2 cups Jarlsberg cheese, shredded 1 pound asparagus 1 tablespoon olive oil 1 tablespoon fresh thyme leaves salt and pepper Heat oven to 400 F. Prepare baking sheet with parchment paper. Roll out puff pastry into 16-by10-inch rectangle, trimming uneven edges. Place on baking sheet. With knife, lightly score pastry dough 1 inch from edges to mark rectangle. Using fork, pierce dough inside markings at 1/2-inch intervals. Bake until golden, about 15 minutes. Remove pastry shell from oven and sprinkle with shredded cheese. Trim asparagus spears to fit crosswise inside pastry shell. Arrange in single layer over cheese, alternating ends and tips. Brush with oil, sprinkle thyme leaves and season with salt and pepper. Bake until spears are tender, about 20 minutes. Tomato Gratin 8 medium ripe tomatoes 1/4 cup balsamic vinegar 1/2 cup extra-virgin olive oil 4 garlic cloves, sliced 4 sprigs fresh thyme (or 4 basil leaves, chopped) salt and pepper, to taste 2 ounces toasted pine (pignoli) nuts 1/2 pound (8 ounces) grated Jarlsberg cheese Heat oven to 350 F. Cut tomatoes in half. In bowl, whisk together vinegar, olive oil, garlic, thyme, salt and pepper; gently mix in tomatoes. Transfer to ovenproof dish, turning tomatoes cut side up before baking 15 minutes.

When tomatoes are cool enough, remove skins before returning to baking dish. Sprinkle tomatoes with nuts and cheese. Return to oven and bake about 10 minutes, or until cheese turns golden and bubbly. Serve as bruschetta on sliced, toasted Italian bread or as a side dish to fish and meat.

Cheesy Mashed Potatoes 4 large baking potatoes, peeled and cut 1 cup Jarlsberg cheese 1 cup milk 1 container sour cream 1/2 cup butter 1 teaspoon salt 1 teaspoon ground black pepper

Heat oven to 350 F. Place potatoes in large pot of salted water and bring to a boil. Reduce heat to medium-low, cover and simmer until tender. Drain and bring potatoes to food processor. In food processor, add cheese, milk, sour cream, butter, salt and pepper. Process all ingredients with potatoes until smooth. Pour mixture into baking pan and cover with tin foil. Bake 30 minutes. Uncover potatoes during last 10 minutes to allow browning. Sensational Platters Platters featuring savory finger foods are a flavorful and easy solution for holiday entertaining.
