Mini cheesecakes - the perfect little something sweet Mini Pear-Ginger Cheesecakes with Gingersnap Crust Ingredients: Cheesecake ½ cup water 125 mL 8 dried pear halves, chopped (dried apples can be substituted) 1/3 cup crystallized ginger 75 mL 3 packages (8 oz/250 g) low-fat cream cheese, room temperature 2 eggs, lightly beaten ¾ cup granulated sugar 175 mL Crust 40 gingersnap cookies, processed to form crumbs (about 2 cups/500 mL) 3 Tbsp canola oil 45 mL 2 Tbsp brown sugar 30 mL 2 Tbsp granulated sugar 30 mL 2 tsp salt 10 mL Instructions: Preheat oven to 325 °F (160 °C). In medium saucepan, bring water, dried pears and crystallized ginger to simmer over medium heat. Reduce heat to low, cover and simmer for about 12 minutes until water is absorbed and pears softened. In food processor, process pears and ginger until course paste forms and cool about 10 minutes. While paste is cooling, make crust. To make crust: combine all crust

ingredients. Spray miniature cheesecake pans with canola oil. Divide crumb mixture evenly among mini cheesecake pans and press firmly into bottom. Bake crusts for 8 to 10 minutes until golden brown around edges. Remove from oven and set on wire rack and cool completely. Reduce oven temperature to 250 °F (120 °C). While crusts are cooling, continue making cheesecake filling. In large bowl, beat cream cheese and gingered pear paste together on low until light and fluffy. Beat in eggs. Add sugar and beat until smooth, frequently scraping down sides of bowl with spatula. Transfer filling into liquid measuring cup or pitcher and pour filling into crusts, dividing evenly. Place in oven and bake about 30 minutes until filling is set. Remove

The Wizard of Oz Lands in the O.C. at Segerstrom Center for the Arts

Segerstrom Center for the Arts in Costa Mesa announces that the first North American tour of the new stage adaptation of THE WIZARD OF OZ will play February 11 – 23 in Segerstrom

Hall. Click your heels together and join Scarecrow, Tin Man, Lion, Dorothy and her little dog Toto, as they journey through the magical land of Oz to meet the Wizard and obtain their hearts’ desires. Watch

out for the Wicked Witch of the West and her winged monkeys as you rediscover the real story of Oz in this fantastic musical treat for all the entire family. Don’t miss the feature story in

As the holidays roll around, it’s natural to want to spread good tidings and cheer with festive decorations like wreaths, candy canes and Santa Claus figurines. But this year, instead of digging out the same old holiday decorations, why not create some new looks that will last the entire winter season, even after you put away the gift wrap and ornaments? Stimulate the senses Nothing says winter like the fresh smell of pine and the soft, warm glow of candle light. Repurpose simple glass bottles into an outdoorsy candlescape with Krylon Natural Stone Textured Finish spray paint. Available in eight colors, like Olivine, it goes on easy

and gives you the natural beauty of stone and an elegant, professionallooking appearance. Once dry, wrap artificial garland with pinecones around the bottle’s neck or let the garland cascade down the bottle. Place pine tree-scented white taper candles in the bottle openings, light and enjoy for a fresh look and smell that will stimulate your senses well into 2014. Color works wonders Another easy way to excite the senses during a drab, gray winter is with pops of color. For a decorative display that lasts all season, avoid the red and green color combination associated with Christmas and

branch out with more contemporary choices like teals, blues, purples and pinks. Metallics like silver and gold are also a great way to glitz up the season without looking like the North Pole in overdrive. Try Krylon’s ColorMaster Metallic in Gold to spice up old ornaments, vases, frames, centerpieces and more in no time at all. Group spray-painted ornaments or pine cones in a hurricane vase or glass bowl and display on the mantel for added ambiance to any living room. Deck the halls Looking for a way to display the abundance of holiday cards from friends and family? Repurpose an old window shutter to create a unique display. Start by spray painting it with a festive shade, such as green or burgundy, which adds a touch of holiday spirit. Once dry, hang the shutter in the kitchen or entryway and place holiday cards in the slats of the shutter for a creative way to stay organized. Once the holidays have passed, you can still use the shutter to display birthday cards, thank you notes, party invitations and more all year long. Outdoor decor The inside of the home isn’t the only space you can be creative.

Make a lasting statement before houseguests even step inside your home by focusing decorative attention to the outside. Line walkways and driveways with lights or faux miniature pine trees, and place white flameless candlesticks on each windowsill to add a simple touch of holiday spirit without going overboard. Prop a vintage snow sled outside the front door to welcome guests. So, this year instead of the same decorations, consider some fun and easy ways to re-beautify them into pieces that you’ll be proud to display throughout the winter season. Whether it was the ghouls trick-or-treating on Halloween, the gobbles of great food on Thanksgiving, or the gatherings of loved ones over the holiday season, you will likely be hosting an event at your home in the upcoming months. Food and friends make the perfect pairing for celebrations - but that can mean spills and splashes on carpets. There’s no need to panic when you know the tricks the pros use to treat tough holiday carpet stains. “It is important to treat spots and stains promptly and properly to avoid letting them do permanent damage to the fibers,” explains Barry Lichtenstein, a certified master textile cleaner and owner of Amcho Carpet Cleaning in Framingham, Mass. “This can cause damage to either the color or texture of the fibers.” From splashes of punch and gravy to smears of caramel and cranberries, the holiday season can leave your carpet looking drab. Lichtenstein says many homeowners with good intentions are actually making stains worse by incorrectly treating the spots. He advises homeowners to avoid these common mistakes when treating carpet stains: * Do not over-saturate the stain with cleaning products. This just makes a small spot larger. * Do not rub the carpet. This can cause damage to the texture of the carpet. * Do not put water on a dry soil. Rather, make sure to vacuum it first. When fighting the inevitable drips and dribbles of entertaining at home, Lichtenstein says there are a few general best practices for treating carpet stains. 1. First, remove as much stain material as possible. If it is dry, vacuum up as much as you can. If it is semi-solid, scrape or scoop it up with a spoon or dull knife. If it is liquid,

blot it up. 2. Next, blot the stain with cool water, and then blot dry. 3. Make foam using a mixture of 1/4 teaspoon clear liquid dishwashing soap in a cup of tepid water. Be sure to always test any cleaning agents in an inconspicuous area of the carpet first to ensure there is no adverse reaction with the flooring. If not, apply the foam with a sponge or soft brush to the stained area in a wiping motion going toward the center of the spot. If you start in the center with circular motions, the stain will spread. 4. Finally, blot with cool water, then blot dry. From candy canes to fudge to Grandma’s famous yams, most stains can be cleaned using these techniques. For additional stain removal information, Lichtenstein recommends visiting the Carpet and Rug Institute (CRI) Residential Spot Solver on carpet-rug. org, or choosing a spot remover from the CRI list of tested and certified products. In addition to stains, parties mean more foot traffic in your home. As people come and go during your holidays, you’ll likely notice extra soil on carpets and other flooring. There’s no need to panic that your carpet investment is compromised. Simply vacuum regularly with a quality vacuum that has received the CRI Seal of Approval, which means it’s been tested thoroughly for soil removal,-soil containment and the ability to maintain the texture and appearance of carpet. Frequent vacuuming is also a great way to keep the air in your home clean, especially

during the long months of winter when we spend most of our time indoors. A high efficiency vacuum from the Seal of Approval list removes 80 percent or more of the soil in a carpet - making carpet a good option even for allergy sufferers. “Carpets and upholstery fabrics should be cleaned on a regular basis before they show overall soiling or staining,” Lichtenstein says. “When a high level of overall soiling or staining has been reached, there is always some permanent damage that has occurred. For the best results, clean the fabrics before they reach that level of soiling.” How often should you vacuum? The CRI recommends high-traffic or pet areas be vacuumed daily, medium-traffic areas be vacuumed about twice a week and lighttraffic areas should be vacuumed weekly. For tough holiday stains or deep set-in soils, it may be time to call in the professionals for help. Working with an IICRC certified firm (a leading certifying body for the cleaning and restoration industries) that uses CRI Seal of Approval equipment and cleaning agents ensures your carpets and upholstery will be cleaned the right way by knowledgeable experts.

local Dentist Dr. Michael tessier Discusses Beautiful, Quick and easy solution for unsightly Black fillings Over the past thirtyfive years in the dental field, one of the most significant changes I’ve seen is the appearance of people’s Dr. Michael Tessier back teeth. We usually talk about front teeth when talking about cosmetic dentistry, but the appearance of the back teeth is also significant. I remember when I started in dentistry looking at mouths full of black fillings. I seldom see that anymore today, particularly in Southern Orange County where my practice is located. As an example, several years ago, there was a trailer for a Goldie Hawn movie in which this lovely actress threw her head back and laughed loudly, displaying a mouthful of silver/mercury amalgam fillings, which had turned black. Hardly consistent with the rest of her Hollywood visage. When silver fillings get old, they corrode- effectively rust- and it’s this silver oxide that turns black. And, that blackening is so pervasive that it often turns the whole tooth very dark. Last week the checker at

the supermarket had mostly clean, white teeth, except for the two lower left molars with very large mercury/ silver amalgam fillings. They’d probably been in her mouth for twenty years, and while they could have been clinically sound, she probably did not realize how they affected her appearance. By removing and replacing that black filling with a tooth-colored plastic restoration, or a toothcolored porcelain filling (lasts longer than plastic), or, in the case where removing the filling would leave the remaining tooth structure too weakened, a tooth-colored crown (or cap), the tooth could be returned to its normal, unremarkable appearance. Given the law of unintended consequences and the first rule of medicine-“Do no harm”-we avoid doing dental work that isn’t absolutely necessary. But a procedure like that is relatively non-invasive, and the effect is both dramatic and beautiful. Worth thinking about. If you have any questions about any things dental, please call my office (949-459-7212) to make a complimentary consultation appointment. The office address is 28562 Oso Pkwy at the intersection of Oso and Antonio Parkways in Rancho Santa Margarita.

PACIFIC SYMPHONY’S “HOLIDAY ORGAN SPECTACULAR,” FEATURING ORGANIST TODD WILSON, BROADWAY VETERAN LISA VROMAN AND PRINCIPAL MUSICIANS Cascading notes swirl in a reverberating mural of majestic sounds as the William J. Gillespie Concert Organ fills the concert hall with the nostalgia of holiday classics during Pacific Symphony’s annual “Holiday Organ Spectacular,” part of the Pedals and Pipes series. The evening ignites with the talent of virtuoso organist Todd Wilson, Broadway soprano Lisa Vroman and accompanying Symphony principal musicians: Timothy Landauer, cello; Benjamin Smolen, flute; Barry Perkins, trumpet; and Mindy Ball, harp. Visiting the Symphony for the fourth year, Wilson, head of the organ department at The Cleveland Institute of Music and curator of the E.M. Skinner pipe organ at Severance Hall, also performs organ works by Bach, Widor, Carter and Purvis. This concert takes place one night only, Tuesday, Dec. 17, at 7:30 p.m. in the Renée and Henry Segerstrom Concert Hall. Tickets are $15-75; for more information or to purchase tickets, call (714) 755-5799 or visit www.PacificSymphony.org. “The music for this concert covers the gamut from warmly expressive to thrillingly virtuosic, and shows off every aspect of the great C.B. Fisk organ—every tone color from softest to loudest,” says Wilson. “The pipe organ is a natural medium for holiday

music and is a ready partner for voice and instruments. We have a number of fresh, new arrangements of holiday favorites on this year’s program, and there is sure to be something to suit every taste!” The program features treasured Christmas songs “The First Noel,” “Ave Maria,” “O Holy Night,” “The Little Drummer Boy” and much more! Decorating the concert hall with good cheer, the audience is invited to join in singing along to popular holiday favorites “Deck the Halls,” “Angels We Have Heard on High,” “Silent Night” and “Joy to the World.” Symphony Pacific Symphony/Holiday Organ Spectacular musicians and Vroman guide the audience in an acoustic display of holiday fun. “It’s a real pleasure to collaborate with these superb and versatile performers,” enthuses Wilson. “Lisa Vroman sings everything from the classics to Broadway with style and a real communicative flair. Barry, Mindy, Tim and Ben are all topnotch musicians and the variety of instrumental colors combines with the organ in all sorts of beautiful and exciting ways.” One of today’s finest concert organists, internationally acclaimed for his virtuosity, Wilson is the director of music and worship at Trinity Episcopal Cathedral in Cleveland.

He also serves as house organist for the newly restored Aeolian organ at the Stan Hywet Hall and Gardens in Akron, Ohio. He has performed in major cities throughout the United States, Europe and Japan, including concerts at Symphony Hall in Birmingham, U.K., Walt Disney Concert Hall in Los Angeles, Orchestra Hall in Chicago, Severance Hall in Cleveland, Meyerson Symphony Center in Dallas and Uihlein Hall in Milwaukee. His latest CDs on the JAV label feature a live recital of American music from the National Cathedral in Washington, D.C., and “Live from Severence Hall,” a concert of music for trumpet and organ. Establishing herself as one of America’s most versatile voices, Vroman garnered Theatre Critic’s awards for her Broadway role as Christine Daae in Andrew Lloyd Webber’s “The Phantom of the Opera” during a record-breaking run in San Francisco, and she also had a return engagement at the Ahmanson Theatre in Los Angeles. In 2008, Vroman made her Carnegie Hall debut with the New York Pops, starred as Lili Vanessi in “Kiss Me Kate” with Glimmerglass Opera, sang the role of Birdie in “Regina” with Utah Opera, made her New Jersey Opera debut as Rosalinda in “Die Fledermaus,” and premiered two

comic operas by composers John Musto and William Bolcom with the New York Festival of Song. She is a frequent guest soloist with major theatre and opera companies as well as orchestras. The Pedals and Pipes organ series continues on Sunday, Feb. 9, 2014, when organist Dennis James provides the soundtrack to the 1921 silent film “The Three Musketeers.” On April 4, 2014, is game-changing organist Cameron Carpenter. This series is generously sponsored by Valerie and Barry Hon and receives additional support from American Airlines, The Westin South Coast Plaza and PBS SoCal.

Sink shopping 101: Is your sink ready for the hectic holidays? From enjoying a nice cup of coffee in the morning to putting the final touches on a homemade pie, the kitchen is the center of the home any time of year, but especially during the busy holiday season. The kitchen will be put to the test, filled to the brim with friends and loved ones, whipping up the family’s secret recipes. In order to handle the holiday season with ease, your sink needs to be in tip-top shape. Is yours up for the challenge? It may be time to replace your current sink if it’s leaking, chipping or the finish is lackluster. Before you make the big purchase, here’s your guide to buying a functional and stylish sink for your kitchen. Right size, right fit The first question to ask when looking for a new kitchen sink is about the sink size and number of bowls: Is your current sink too big, too small or just right? Keep in mind you should select a sink that fits in the existing countertop opening unless you are planning on replacing your counters. The main factor to consider when selecting your new sink is the number of bowls. To help make the selection, think about your kitchen habits and preferences. If you have limited counter space, you may want to select a single bowl sink; not only does it give you more workspace, it can also Page 14

accommodate larger trays and skillets. If you like to multi-task at the sink by soaking dishes on one side while prepping the meal on the other, a dual bowl sink will better meet your needs. Along with the number of bowls, also consider the depth when choosing a new sink. With a shallow sink, it’s easier to see any items left in it; the more depth a bowl has also means there’s more room, allowing you to worry less about dirty dishes being seen from afar or toppling over the edge. It’s easier than you think to find the right depth and style - Moen has a wide variety of stainless steel sinks; there’s a perfect option to meet all of your cooking and cleaning needs, with both single and double bowl configurations available. Best of all, every Moen sink features SoundSHIELD sounddeadening technology, assuring exceptional noise reduction. Suitable type Once you find the configuration and depth that’s right for your kitchen, it is time to select the sink type. A drop-in sink is level with your countertop, easy to install and is compatible with laminate and ceramic surfaces. Moen’s drop-in sinks feature a recessed deck, allowing sponges, or other wet items, to be placed on the inner ledge to drain back into the sink, as opposed to the countertop.

The Ladera Ranch News

The other type of sink installation is an undermount. Here, the sink lip is mounted under the countertop, giving the counter a continuous flow into the sink, and making it easy to wipe away food, crumbs and water. Undermount sinks are a great fit for kitchens that have granite, marble or soapstone countertops. Since it adheres directly to the counter, these solid surface options can better support the weight of the sink. The gauge, or measurement of the thickness of material, should also be considered while shopping for a sink. Remember, the lower the number, the thicker the steel. Cooks and busy families may prefer heavier gauge sinks that will do a better job of resisting dents that can come from frequent use. Thicker steel will also minimize vibration from a disposal and prevent flexing or bowing when the faucet is mounted directly to the sink. Adding a second sink is a smart idea for kitchens with two cooks and households that frequently entertain. Creating a separate food prep station or beverage center complete with running water prevents congestion around your main sink and helps make the room feel more spacious. Choosing a bar/ prep sink that coordinates with the

rest of your kitchen is easy. Once this new work area is complete, you’ll appreciate having this practical luxury in your kitchen. Visually pleasing The last step is to pick the sink that is aesthetically pleasing to you and fits in with the style and decor of your kitchen. Kitchen sinks come in a variety of materials and finishes, the most popular and cost-effective material is stainless steel. It’s easy to clean and maintain, and has the added benefit of being heat and stain resistant. Breaking down each aspect of a potential kitchen sink purchase makes shopping a manageable task. Just remember to start with the basics: the configuration, how the sink will be installed and the overall look you’re trying to achieve to supplement your kitchen’s design. For more information about the Moen kitchen sinks, visit moen. com- or call 1-800-BUY-MOEN (1-800-289-6636).
