lyon air museum summer vehicle exhibit Lyon Air Museum will host their summer vehicle exhibit showcasing seven iconic American Woodie automobiles. It’s only appropriate that these prime icons of American summer culture kick off their debut on the 4th of July at the museum, located on the west side of John Wayne Airport in Orange County. The Woodies Exhibit, featuring Fords and Chryslers, will carry on Lyon Air Museum’s reputation for displaying fine, vintage vehicles alongside historic aircraft. Last summer brought in seven exclusive Packards and the year before, ten impeccable classic Duesenbergs. This year’s exhibit will run through August 4, 2013. The first Woodies date back to the railroads of the early 20th century, when wagons were used to transport passengers and luggage between stations and other points. These “station wagons” utilized the forward section and chassis of a production automobile, coupled with a custom, lower cost wooden body. Although initially built for commercial use, they soon became available to the general public. Woodies were often rather attractive, but were popular mainly due to their economically sound price point, especially during the Depression years of the 1930s. Cost savings were a further factor as World War II brought on shortages of steel which was in great demand for the war effort. Post World War II saw a soaring

economy, with many Americans opting for a safer, all-metal automobile. The days of the Woodie appeared to be numbered. But what propelled the Woodie to its initial popularity resurfaced in the 1960s in a whole new culture – surfing. Woodies of the past were being sought after because they were inexpensive and had a high carrying capacity. Soon spacious Woodies were toting surfers, surf boards, food and beach party gear to the best surf spots around. The scene quickly caught on to the rest of the country through movies such as Gidget and Beach Blanket Bingo, and through music by The Beach Boys and Jan and Dean with songs like Surfin’ Safari, Surf City, and Boogie Woodie, all of which referenced the Woodie and further increased its

popularity. Today, the Woodie automobile is highly desired by car collectors, and by those who yearn to cruise the coastline in a symbol of sun, sand and surf. Maximize and Extend the Beauty of Roses with Proper Care by Melinda Myers Although June is national rose month, gardeners can keep their roses healthy and blooming all summer long. Through proper care and a few simple strategies both existing and new roses can continue to look their best throughout the summer months – maximizing their beauty and enjoyment for all. Water thoroughly whenever the top few inches of soil are crumbly and moist. Use soaker hoses or drip irrigation to apply the water directly to the soil where it is needed. You’ll lose less water to evaporation and reduce the risk of disease by avoiding overhead irrigation. Mulch the soil surface with shredded leaves, evergreen needles or other organic matter to conserve moisture, suppress weeds and improve the soil as they decompose. Keep your plants blooming and looking their best in spite of the heat, humidity and pests of summer. Immunize your plants against common environmental stresses such as heat and drought, while building their defenses against insects and diseases natural defenses with an organic plant strengthener, such as JAZ™ Rose Spray (gardeners.com). Enjoy your efforts and improve your roses appearance by harvesting a few rosebuds for indoor enjoyment. Prune flowering stems back to the first 5-leaflet leaf. You can prune back farther on established plants, but be sure to always leave at least two 5-leaflet leaves behind on the plant’s stem. Those gardening in cold climates should stop deadheading roses toward the end of the season. Allow the plants to develop rose hips. This helps the plants prepare for the cold weather ahead and increases hardiness. Plus, these red to orange fruits provide winter food for birds as well as attractive winter interest in the garden. OCTA’s board of directors adopted a $1.26 billion budget on June 10 to increase bus operations and continue making improvements to Orange County’s highways and roads. The proposed budget for the 2013-14 fiscal year that begins July 1 encompasses all services, project and programs administered by OCTA and includes a 4 percent increase in bus service. Highlights of the new budget include: $281 million for bus operations – an increase of $14 million over fiscal year 2012-13 $153 million in Measure M funds, the half-cent sales tax for transportation improvements, for voterapproved freeway improvement projects along the

Riverside Freeway (SR-91), Orange Freeway (SR57), Santa Ana Freeway (I-5), San Diego Freeway (I-405) and Costa Mesa Freeway (SR-55) $322 million in Measure M funds for street and road improvements, including $150 million for the O.C. What Dr. Michael Tessier I do makes people feel better and look better. What could be better than that? And, almost on a daily basis, my practice is finding new ways to take care of people. ”Dr. Tessier continued. “My office uses the latest in scientific dental advancements such as toothstraightening without metal braces (“Invisalign”); Tooth-colored porcelain crowns that have no metal in them and are subsequently dramatically more attractive and natural looking than the old porcelain-baked-on-to-metal type. I also recommend Porcelain veneers that, with a minimum of tooth structure removal, improve alignment, color, and evenness of front teeth, a process that is accomplished in a remarkably small amount of time. There are so many new scientific dental innovations that modern dentistry is a pleasure for me to practice. I often use a tiny “sandblaster” to do many of our smaller fillings, allowing us to do those fillings without discomfort and subsequently without anesthetic altogether. Another remarkable tool we use is the laser .We treat canker

or cold sores with a laser, dramatically shortening their life and the discomfort they cause. We do gum surgery with a laser (Periolase), not a knife, which is much more effective and greatly reduces any discomfort. Today Removable dentures can be anchored to implants, preventing them from moving and restoring more normal chewing. Another wonderful innovation is Implant crowns, which allow us to replace missing teeth without damaging the teeth on either side of the space where the tooth was originally located. We make an intra-oral appliance that keeps the lower jaw forward during sleep, reducing sleep apnea and all the other problems that the cessation of breathing at night can cause. I’ve been in private practice in Saddleback Valley since 1980 when I got out of the Navy. When the situation arises that we need a specialist, like an oral surgeon for wisdom extraction, or endodontists (root canal specialists), or periodontists (gum specialists) to save jeopardized teeth, I’m on a “first-name” basis with the best in all of those fields, who are all close by. We’re all living longer, and we’ll need our teeth longer. So it is my pleasure to have all of these good things we can do to make that happen. It’s better to have teeth left at the end of your life, rather than life left at the end of your teeth. Summertime Menu Planning Here are a few dishes that will add a flavorful kick to any table spread: No BBQ party menu is complete without a summer potato salad dish. Mix up a dish with red potatoes, green beans, olive oil, lemon juice, mustard and cheeses. Spice up this American classic with a few dashes of chipotle pepper sauce. When it comes to summer fare, baked beans are a must. Add some extra flavor to your regular baked bean dish this year by adding bacon, onion and chipotle pepper sauce. Sliders with Chipotle Ketchup Makes: 4 servings Chipotle Ketchup: 1/2 cup ketchup 1 tablespoon Tabasco brand Chipotle Pepper Sauce Sliders: 1 pound ground beef 1/4 cup chopped scallions 3 tablespoons Tabasco brand Chipotle Pepper Sauce 1/2 teaspoon salt 8 small rolls, about 2-inches round 2 slices Colby Jack cheese Green leaf lettuce In small bowl, combine ketchup and pepper sauce; set aside. Preheat grill to high. Meanwhile, combine ground beef, scallions, pepper sauce and salt in bowl; mix well. Shape 4 pieces. Top burgers with cheese; cook 1 minute mixture into eight 2-inch round longer or until cheese is melted. burgers. To serve, cut each roll horizontally in half. Rancho Eagle Scout Accepts Scholarship to UCLA by Karen Lake Adam Andrews seemed like a typical 8 year-old attending boy scouts, but now as a El Toro graduating senior, Adam is anything but typical. On Sunday, Adam Andrews, from Rancho Santa Margarita, was recognized for earning his Eagle Scout rank in a court of honor held at The Church of Jesus Christ of Latter-day Saints. His Bishop, Kirk Hess of Rancho Santa Margarita, spoke of Adam’s achievements to a packed audience. “When I think of Adam, I think of two words drive and ambition.” This same drive and ambition lead Adam to complete not only one Eagle project but two. In his first project he organized a collection of clothing, shoes and cash which he personally delivered to Lima, Peru. Adam explains, “I chose to pursue this project because it is a part of my Peruvian heritage. Thanks to the connections that my grandfather made when he was being raised in Peru, I discovered a need and I wanted to help.” The second one was a local project

The Big Canyon Country Club in Newport Beach raised $12,000 for Laura’s House Photos by Ann Chatillon The Big Canyon Country Club in Newport Beach was the place to be for The 2nd Annual Wine and Dine Event, which raised $12,000 for Laura’s House, a nonprofit whose mission is to change the social beliefs, attitudes and behaviors that perpetuate domestic violence, while creating a safe space in which to empower individuals and families affected by abuse. Guests dressed in “spring chic” attire including colorful cocktail dresses and casual suits and were treated to an array of gourmet delights as they mingled with other guests, perused the silent auction Wine Wall featuring more than 100 bottles of wine, tasted wine selections from more than 30 wineries from California, Argentina, France, Italy and New Zealand, and enjoyed a selection of Chocolates by Next Organics. Big Canyon Country Club Master Sommelier Steve Poe was on-hand to provide expert advice in choosing wines. Guitarist Jerry McFarland provided the evening’s entertainment. Special guests at the Wine & Dine event included a Laura’s House survivor who spoke about her experiences with domestic violence, what brought her to Laura’s House, and how through the programs and services she received, she has built a life that is free of violence for herself and her children. “We are delighted that more than 125 guests chose to join us for our 2nd annual ‘Wine & Dine’ event at Big Canyon Country Club, and we would like to thank the participating wineries for donating their wines for this event, as well as our pourers who volunteered their time to help make this event such a great success,” said Margaret Bayston, CEO and Executive Director, Laura’s House. “Proceeds from the event will be used to support our counseling, emergency shelter and outreach programs for families who are impacted by domestic violence. Local Psychotherapist James Sanders is Amazed by Major Personal Changes Even a Small Amount of Therapy Can Provide Well-known Rancho Santa Margarita psychotherapist James J. Sanders has been practicing for over 28 years, but he says he is still frequently amazed about the major personal changes that even a small amount of psychotherapy can provide. Sanders, a licensed marriage and family therapist specializes in helping people heal from betrayal, infidelity and other forms of abuse and trauma, says” many people are going through their lives carrying heavy emotional burdens that are causing them to be sad, disappointed, and even depressed about their lives, then after only a little bit of psychotherapy, they sometimes suddenly feel elated, happy and productive again. After all these years,” Sanders says” I am still amazed at some of these remarkable changes.” The Coto de Caza News reporter asked the longtime psychotherapist what was the goal of his profession? He replied: “A goal, without a plan, is only a wish. Let’s get a plan together and meet your goal! Most people are merely striving for some form of happiness without a specific goal in mind. Along the way, most people meet with large emotional and psychological obstacles which can really get in the way of their happiness. Divorce, death of a family member, abuse and betrayal are difficult for anyone to deal with, but professional marriage and family therapists can be of prompt and significant assistance in getting a plan together to relieve their sadness, distress, and help them back to productive and happy life styles.” Sanders is also the author of an informative book called“ I Already Am What I Want” which he says enables people to identify facets of their own lives which showed the pathways to their success and personal happiness. He also provides therapy and executive coaching to an already successful clientele that just wants to become healthier and even more productive. Marriage counseling is also another Page 14

significant aspect of his practice says Sanders.” You don’t have to be having trouble with your spouse to need marriage counseling. You and your spouse may be getting along just fine but there may be difficulties with a child, an aging parent, or a variety of relatives,” replied the psychotherapist. “Even the most wonderful marriages are constantly being challenged by things that occur outside the marriage such as jobs, educational commitments, travel requirements, and financial conflicts. Of course, there are hundreds more of these things which a marriage or family therapist can quickly identify as an impediment to a happy and productive family relationship,” says Sanders. “It’s also important to consider when a child would benefit from psychotherapy. Many times a child will confide to the therapist that there’s a serious personal issue that is deeply disturbing to that child, the child would not confide that same information to the parent for reasons of embarrassment or inability to express it accurately and precisely. This is often the case with bullying or child abuse that maybe occurring outside the home where everything seems otherwise perfectly normal. So if a teacher or a classmate should happen to suggest that your child might be having some emotional problems, be sure to promptly have the child seen by a state licensed family therapist,” Sanders added. When Sanders was asked “what has been the greatest reward your profession or your most interesting part of your daily work”, he replied: being able to initiate a change in individual lives and generations of families. I am really amazed about the change that can happen in others with a bit of help.”

35th ANNUAL GREEK FESTIVAL BRINGS “A TASTE OF GREECE” TO ORANGE COUNTY JUNE 21-23 Orange County’s 35th annual “A Taste of Greece” festival will be held on June 21-23 at St. Paul’s Greek Orthodox Church (4949 Alton Parkway, between Culver Drive and Jeffrey Road, Irvine, CA 92604). More than 11,000 guests are expected to attend the three-day festival, which will feature traditional Greek cuisine, wine tasting, live music, authentic Greek dancing with lessons and boutique booths reminiscent of the Plaka, a well-known picturesque historical neighborhood of Athens. Festival hours are 5 p.m. to 10 p.m. on Friday, June 21; noon to 10 p.m. on Saturday, June 22; and noon to 9 p.m. on Sunday, June 23. Festival admission is just $3 per person with free admission on Saturday, June 22 from noon – 5 p.m. for seniors older than 65 years. Children under the age of 10 are admitted free (with parents or an adult) throughout the three-day festival. Elks Lodge Receives California Legislature Assembly Recognition

Mission Viejo / Saddleback Valley Elks Lodge No. 2444 (“Elks Lodge”) has received from 73rd District Assembly Woman, Diane L. Harkey, a California Legislature Assembly Certificate of Recognition. The certificate recognized the Elks Lodge for its donation of $14,000 for the purchase of a K-9 dog and dedicated support for the Orange County Sheriff’s Department and for the safety of its community. Starting in the early 1980’s, this is the Elks Lodge fifth donation of a fully trained K-9 dog to the Orange County Sheriff’s Department. The Mission Viejo / Saddleback Elks Lodge No. 2444, celebrating fortythree (43) years of service to the Saddleback Valley communities, is one of ten lodges in the Orange Coast District of the Benevolent and Protective Order of Elks (BPOE) whose headquarters is in Chicago, Illinois. The BPOE is a charitable organization with a 145 year history of giving, “Elks Care, Elks Share.”

Parents, teens invited to sign up for emergency preparedness training Registration is now available for the city’s next Community Emergency Preparedness Academy (CEPA), an award-winning program designed to prepare adults and teens for disasters. The free training will take place each Tuesday and Thursday from 6:30 p.m. to 9:30 p.m. July 9 through Aug. 8 at the Norman P. Murray Community and Senior Center, 24932 Veterans Way. This is the 10th year of the program that prepares residents to work together before, during and after a disaster. In recent years, the city has hosted separate teen summer academies to appeal to youngsters in the community. Parents and teens are invited to attend this summer’s academy together, which will emphasize family preparedness and household readiness. “Residents, adults and teens can be a great asset when trained in agency priorities and responsibilities regarding disasters,” said Paul Catsimanes, the city’s emergency planning manager. “The training helps students to identify their own role in supporting the agencies and facilitating preparations for their own recovery and that of their neighborhood.” Led by emergency personnel from collaborative agencies, the academy is a 27-hour certified curriculum that follows FEMA guidelines for citizen emergency response teams. Residents learn about law and fire disaster operations, fire safety, light search & rescue, CPR/First Aid/AED certifications, basic crisis intervention and neighborhood mobilization. The sessions include hands-on exercises where students extinguish real fires, extricate bodies from heavy debris and treat mock injuries in response to a simulated earthquake. Add water, 1 tablespoon at a time, if mixture seems too dry or begins to stick. Salt and pepper, as desired. Place eggplant mixture in bowl of food processor; process until mixture is chopped and combined. Measure out 1/2 cup chopped beets; set aside. Add remaining chopped beets to eggplant mixture. Process until dip is desired consistency. Transfer dip to serving bowl. Stir in yogurt, if desired. Stir in herbs and reserved 1/2 cup chopped beets just before serving. Serve with pita chips and vegetables for dipping. If not served immediately, cover and refrigerate up to 6 hours. Allow to stand about 15 minutes before serving if chilled.

Herbed Eggplant & Beet Dip

Spicy Beet, Fruit & Nut Bars

Makes 28 bars Preparation Time: 25 minutes Bake Time: 20 minutes 1 jar (15.5 ounces) Aunt Nellie’s Harvard Beets 1 package (15.25 ounces) spice cake mix 1 cup packed light brown sugar 1/4 cup canola or vegetable oil 1 large egg 1 cup dried mixed fruits, chopped if necessary 1/2 cup chopped walnuts, pecans or almonds (or a combination), toasted Confectioners’ sugar Preheat oven to 350°F. Drain beets. Puree beets in food processor or blender until smooth; set aside. Line 15 x 10 x 1-inch baking pan with aluminum foil. Spray lightly with nonstick cooking spray. Place cake mix in large bowl. Add pureed beets, brown sugar, oil and egg. Beat on low speed of electric mixer 2 minutes or until completely combined, scraping bowl as necessary. Stir in fruits and nuts. Spread dough evenly in prepared pan. Bake 20 minutes or until pick inserted in center comes out clean. Cool completely. Sprinkle with confectioners’ sugar. Cut into bars.

Makes 4 servings Preparation Time: 30 minutes 1 jar (16 ounces) Aunt Nellie’s Sliced Pickled Beets 1/2 cup shredded carrots 1 tablespoon prepared horseradish 1/2 cup spreadable cheese (such as goat cheese or herb/garlic soft cheese) 2 large soft flour tortillas (about 10to 12-inch diameter) 10 green onions (green part only) 10 thin slices deli roast beef Drain beets; chop. Discard beet liquid. In medium bowl, combine beets, carrots and horseradish. Spread 1/4 cup cheese evenly over each tortilla, leaving 1-inch border. Arrange 5 green onions (do not chop) on each; press lightly into cheese. Place 5 slices beef on each tortilla covering green onions, then sprinkle beet mixture evenly over beef. Roll up in parallel direction of the green onions. Wrap each roll tightly in plastic wrap. Refrigerate up to 4 hours. To serve, remove plastic wrap; cut each tortilla into 2 pieces.

Baby Beets & Olives

Makes 6 servings Preparation Time: 15 minutes 1 16-ounce jar Aunt Nellie’s Whole Baby Pickled Beets, drained 3/4 cup assorted pitted olives 1 to 2 tablespoons orange zest 1 clove garlic, minced 1/2 teaspoon cracked black pepper Combine all ingredients in medium bowl. Serve at room temperature or chilled

Bean & Vegetable Salad

Makes 4 servings Preparation Time: 30 minutes 1 can (15 ounces) READ 3 or 4 Bean Salad 2 cups vegetables, cut into thin strips* 1/4 cup very thinly sliced red onion, optional Cracked black pepper Chopped parsley, optional Dressing: 2 tablespoons reserved bean salad liquid 1 tablespoon apple cider or wine vinegar 1 tablespoon olive oil 1 large clove garlic, minced Drain bean salad; reserve 2 tablespoons liquid. For dressing, combine reserved bean salad liquid, vinegar, oil and garlic. Whisk until combined. In large bowl, toss together drained bean salad, vegetables and onion, if desired. Toss with dressing. Season with black pepper and stir in chopped parsley, if desired. Serve at room temperature or chilled. *Cut vegetables into thin strips about 2 x 1/4 inch. Vegetables can be one or a combination of: carrot, celery, bell pepper, cucumber, zucchini, yellow squash, or other favorite vegetable.

Smoked Salmon & Beet Wraps

Makes 4 servings Preparation Time: 30 minutes 1 jar (16 ounces) Aunt Nellie’s Sliced Pickled Beets 2 tablespoons finely chopped red onion 1 to 2 tablespoons capers 1 to 2 teaspoons lemon zest 1/2 cup spreadable chive cream cheese 2 large soft flour tortillas (10- to 12-inch diameter) 8 slices smoked salmon 1/2 cup baby spinach leaves Drain beets; chop. Discard beet liquid. In medium bowl, combine beets, onion, capers and lemon zest. Spread 1/4 cup cream cheese evenly over each tortilla, leaving 1-inch border. Place 4 salmon slices over cream cheese; press lightly. Top each with spinach. Sprinkle beet mixture evenly over spinach. Roll up. Wrap each roll tightly in plastic wrap. Refrigerate up to 4 hours. To serve, remove plastic wrap; cut each tortilla into 2 pieces.
