Sharpen Students’ Minds with Proper Nutrition Bells will soon be ringing, and parents may experience a sense of déjà vu for the first several weeks of school. That’s because the early part of each new school year is commonly spent reversing the effect of “summer brain drain” – when kids lose skills they mastered the previous year. According to a recent survey by DSM Nutritional Products and Pop Warner, 78 percent of parents are concerned about students’ difficulties retaining what they learned in school throughout the summer. A majority of surveyed parents understand the role of nutrition in physical and academic performance, but don’t make the connection to nutrition’s role in preventing brain drain. While many parents encourage their children to take vitamins and minerals to supplement nutrition, nearly half admit they aren’t clear about which nutrients support children’s brain health. What’s more, maintaining a well-rounded and healthy diet and taking vitamins and other essential nutrients that support brain health ranked significantly lower than other strategies parents use to prevent brain drain, such as sports and academic activities. Nutrition plays an important role in brain health year-round, says Elizabeth Somer, a nationally acclaimed registered dietitian, nutritionist and author. To help keep your students’ minds sharp as they head back to school, consider these tips from Somer: Eat fatty fish twice a week for dinner or supplement omega-3s. Omega-3s are highly concentrated in the brain and important to brain health, yet according to research published in the British Medical Journal, the average American diet contains less omega-3s from seafood than most other developed countries. Children and adults
should get the recommended two servings of fatty fish, such as salmon, per week. Offer a variety of healthy food options in the house. Giving children choices teaches them to take care of their bodies and empowers them to make better food decisions in the future. Stock the kitchen with lots of colorful fruits and vegetables, such as baby carrots, berries and bananas for snacks, and broccoli, green peas and mashed sweet potatoes for dinner. The nutrients in these foods are important for the brain. Along with calcium, low-fat milk supplies vitamin D, which is a nutrient essential for brain development.
Consider taking a multivitamin. No one eats perfectly. It is important to talk with your physician or registered dietitian about whether you or your children could benefit from a multivitamin. Registration Now Open for Orange County Coastal Cleanup Day on September 19 Orange County Coastkeeper expects thousands to gather to pick up trash across 91 miles of coastline. Orange County residents can now sign up to participate in Coastal Cleanup Day on September 19. Volunteers across the state head to California’s coast and inland waters by the thousands to lend their hands in support of clean beaches and waterways. This year, Orange County Coastkeeper and Jim Meyer with Trails4All take on all 42-cleanup sites in Orange County—organizing site captains and volunteer registration. The cleanup efforts help collect trash and debris from sites spanning across 91 miles of coastline. Last year, 7,053 Orange County volunteers collected more than 67,000 pounds of trash and recyclable materials during the three-hour event. With increased awareness about the impact of water pollution, Coastkeeper aims to beat that mark this year. “Most people don’t think about their personal impact on pollution until they see items lying on the sand that they throw away every
day,” says Courtney James, Orange County Coastkeeper ’s coastal cleanup director. “It is nothing short of inspiring to see thousands of people cleaning our waters and realizing that they can influence the future of our natural environment.” Vast amounts of debris litter the world’s waters causing harm to oceans, wildlife, coastal economies and beach-goers. Beaches serve as collecting spots for trash that travels from city streets and highways via inland waterways, storm drains, sewers and on the wind. Beach cleanups stand as a last line of defense to prevent debris from entering the ocean. Coastkeeper aspires to accomplish a zero-waste event and asks that volunteers bring their own cleanup supplies including a bucket or reusable bag, gloves and reusable water bottle. In addition to volunteering, residents and businesses can support Coastal Cleanup Day with donations and sponsorships. Families are working to stretch their back-to-school shopping budgets further this year, according to a recent survey by the National Retail Foundation. But saving money isn’t just about how much you spend on supplies; it’s also about making school supplies and equipment last as long as possible. Here are some tips for protecting your students’ school gear to help stretch your budget – and their gear: Talk with children about handling tech devices. Kids will be kids, and sometimes that means they’ll be tough on their stuff. Unfortunately, their school-mandated tech devices – such as calculators, tablets and laptops – can’t always take the beating. To reduce the risk of accidental breakage, talk to kids about proper handling and storage of their devices and the potential risks for breakage when drops, spills and hard impacts occur. Lighten the backpack load.
Between books and laptops, students tend to pack a lot of heavy items in their backpacks during the course of a school year. As the load increases, backpack zippers may break, and seams may tear from the daily stress. Reduce the wear and tear by ensuring your kids don’t over-pack their bags. Not only will this reduce strain on their backpacks, it will lighten the load on students’ backs as well. Consider a protection plan. Research shows that some school essentials – such as backpacks and laptop batteries – break or stop functioning within the first 1-2 years of use. To help keep costs down, many retailers offer reputable protection plans, such as SIMPLR, which can help repair or replace the equipment for free or a fraction of what you’d normally pay on your own. Sharing isn’t always caring. Even if your child handles his calculator or laptop with care, his friends might not. Establish guidelines with your
kids at the start of the school year about what items can be shared with others at school and which cannot. For those things that can be shared, consider encouraging your child to establish ground rules when sharing with friends. Guidelines could include when the item should be returned, tasks for which the item will be used and an understanding that items will be handled with care. Don’t forget about bikes. Kids who ride their bikes to school can be just as hard on their bikes as they are on their school supplies. A tuneup at the start of the school year can keep the bike running smoothly and help catch wear and tear, such as damaged spokes or worn tires and brake pads. Writer: Sean Zeitler Photos by: Robert Russell For the second consecutive week, the Santa Margarita Eagles football team hit the road as they traveled to Santiago High School to take on the Sharks in a highly anticipated matchup. When all was said and done, the Eagle faithful left Corona with a 59-14 victory as the Eagles improved their record to 2-0 on the season. The Santa Margarita Eagles were led by Stanford-commit KJ Costello’s efficient evening, completing 2835 passes for 423 yards and five touchdowns. In the first two games of the season, Costello has now completed 70% of his passes for 773 yards and eight touchdowns to no interceptions. Behind a staunch offensive line, Costello has had plenty of time to pick apart secondary’s with
a slew of options at receiver. Costello’s main target is senior Dylan Crawford, who in the first two games has managed nine receptions for 235 yards and four touchdowns. Junior Grant Calcaterra is making a name for himself as a sure hand, hauling in 10 catches for 195 yards and a touchdown. Standout basketball point guard Noah Rasheed has shown that he has handles on the court and the football field, as he is averaging 117.5 yards per game on 13 catches with a long of 80 yards and a touchdown. The Eagles’ aerial assault would not be possible without the stellar rushing game in large part to senior Trey Green in the backfield. Green is averaging nearly 10 yards per carry (9.8) on 20 carries for a total of 195 yards and two touchdowns. What does not show up in the box score is

CRUNCHTIME! Tesoro Titans Meet Mater Dei Monarchs
MOB SCENE: Mater Dei ball carrier mugged near goal line Photography by Aaron Hartwell On a muggy, moonlit Friday night perfect for football, busloads of energetic Tesoro Titan fans bailed out of their buses and vans and burst into the Eddie West Field sometimes known as the Santa Ana Stadium next to the Orange County Central Jail. The Tesoro team and their fans let the Mater Dei crowd know that they were ready for a rumble and everyone in the stadium was soon certain of that. Tesoro stunned the mighty Mater Dei Monarchs with a spirited 18 yard scoring run by Quarterback Devon Modster giving the Titans the 7-0 early lead. The quarterback also scored on a later 6 yard sprint past the goal line and completed 24 of his 35 passes. With the Monarchs surging ahead to lead at half time 14-7 then scored again early in the third quarter to bring the score to 21-7.Tesoro suddenly surged again, bringing everyone in the stadium to their feet with a seventy- six yard, eleven play
combination culminating in another incredible six yard scoring drive bringing a gasp to the Mater Dei crowd as Tesoro cut the Monarchs lead to 21-14 with but four minutes remaining on the clock in the third quarter. Titan linemen and defensive backs soon stymied another attack by Mater Dei and after a surprise penalty after a forced punt, Mater Dei marched ahead to increase their lead to 28-14 and escalated their offense for the remainder of the game. Tesoro cheerleaders were undismayed and the loyal Titan crowds were hoarse from their intense cheers throughout the final whistle signaling the end of an intense and immensely interesting competition between two talented teams. While Mater Dei plays at La Mirada this evening, Tesoro hosts against 7th ranked Upland, at home tonight, The following Friday the Titans play against El Toro in their South Coast League opener at home on October 9th -another exciting contest!

Ribs, Pigs and Watermelon Raises $50,000 for American Family Housing As we say goodbye to summer and another season of spectacular things to do along the Southern California coast, American Family Housing’s 4th annual fundraiser, Ribs, Pigs and Watermelons Professional BBQ Competition and Summer Festival, is sure to be remembered for its feel-good cause and unique theme of events that attracted thousands to Huntington State Beach during the August 7-9 weekend. Shedding light and a little lightheartedness on a somber subject, the non-profit organization teamed up with a long list of loyal sponsors to pull off a culinary extravaganza that raised awareness and critical funds to support homeless adults and families in Orange, San Bernardino and Los Angeles counties. With over fifty professional BBQ teams filling a quarter-mile stretch of the State Beach parking lot alongside the boardwalk, the event engulfed the beach with that unmistakable smell of spicy barbeque smoke and the powerful scent of craft beers, raising over $50,000 for American Family Housing programs that provide an array of urgently needed social services and affordable housing options to vulnerable populations facing barriers to housing stability. Sponsors of the event included Yelp OC, Southwest Material Handling, Inc., OC Mazda, Rainbow Environmental Services, Chef Jason Fullilove, Hub International, US Bank and BJ’s Brewhouse, who provided all of the handcrafted sodas and beers for guests. Sanctioned by the Kansas City BBQ Society, the event attracted top nationally ranked BBQ teams -- including teams from the TLC reality television show BBQ Pitmasters -- who competed for the $10,000 grand prize while cooking up some savory meats for the hungry crowds. The winning teams included Grand Champion Pig Skin BBQ from Iowa and Reserved Grand Champion Hickory & Spice from Tustin, Calif. The People’s Choice Award, determined by the public in attendance, went to Twisted Brisket from Costa Mesa, Calif. The best tastings throughout the weekend included bacon candy, moink balls—an all-beef meatball wrapped in bacon—ribs, chicken, tri-tip, brisket, sausage, bacon-flavored kettle corn and cotton candy and more. Thousands of pounds of watermelon were on hand for consuming, with competitions attracting children and adults alike. On Saturday afternoon, families joined in for the Kids Que, an event that allowed children ages 6 to 15 to compete in their own BBQ competition. Parents stood by as their children barbequed burgers and steaks. Team “Brenden’s Smokin’ Hart” won the 6 to 10-year-old division and team “Jayden’s Smokin’ Hart” won the 11 to 15-year-old division. Guests who wanted a home-on-the-range experience had the unusual opportunity to compete in cow-milking contests, and for those who were less apt to get their faces and hands dirty, a classic car show provided an atmosphere of old-fashioned fun. Without a doubt, the eating contests provided the most entertainment for both participants, who got to stuff their faces, and the bystanders who watched in shock and awe. People truly ate their hearts out, devouring ribs and watermelon in record time. Later, they got a chance to dance it all off with live music from some great local bands that included the American Vagrants, Rockaholics, and Maureen and the Mercury 5. 3 hearty breakfast recipes for everyone in a hurry Breakfast is the most important meal of the day. Everyone has heard that saying, but unfortunately, breakfast is also often the most forgotten meal of the day. Instead of enjoying a hearty, nutritious breakfast, many people opt for simple alternatives on the go because they believe creating a wellrounded breakfast will take too long. That couldn’t be farther from the truth. To show you just how easy it can be to create a wonderful breakfast, here are a few recipes that will have you reinvisioning the bagel and hitting your busy morning with a little extra spring in your step. Eggs Florentine Bagels Ingredients 2 Plain Bagels, split and toasted 2 tablespoons unsalted butter 1 1/2 tablespoons all-purpose flour 1 1/2 cups milk, heated 4 large eggs 1/2 cup fresh baby spinach leaves Directions Melt butter in a small saucepan over moderate heat and whisk in flour. Cook, whisking constantly, for two minutes. Whisk in milk in a stream, until smooth. Simmer, whisking, until thickened, about three minutes and Page 18
reduced to 1-1/4 cups. Keep warm, covered, off heat. Fill a medium skillet halfway with water and bring to a boil. Break eggs into separate teacups and pour into water. Cover skillet and remove from heat. Let eggs sit for about 4 minutes until whites are set. Place bagels on serving plates and top each with 1/4 of spinach, using a slotted spoon top with a poached egg and 1/4 of sauce. Serve immediately. Smoked Tomato, Basil and Brie Bagel Ingredients 2 bagels, split and toasted 4 oz. warm Brie bought or homemade) 1 large tomato, quartered and 2 tbsp. low-fat sour cream smoked 4 tbsp. tomato salsa 2 leaves fresh basil Nonstick cooking oil spray Directions Homemade black bean hummus: Toast a Plain Bagel and set aside. 1 can (15 oz.) black beans, rinsed Quarter and smoke one large tomato and drained and set aside. Top Bagel halves with 1/2 garlic clove, chopped warm Brie and tomato quarters. Add 2 tbsp. fresh lemon juice basil. 2 tbsp. extra virgin olive oil Santa Fe Bagel Thins Bagel 1/4 tsp. cayenne pepper Ingredients 3/4 tsp. ground cumin 1 100% Whole Wheat Bagel Thins Directions bagel Separate and toast Bagel Thins 3 egg whites 4 tbsp. black bean hummus (store- bagel. and 1 tablespoon of low-fat sour cream. Spray nonstick frying pan with cooking oil and put on stovetop under medium heat. Beat three egg whites together in mixing bowl and then pour into heated frying pan. Once eggs are cooked through, place on open-faced English muffin and top with salsa. Homemade black bean hummus: Mince all ingredients together in food processor until smooth; refrigerate. These recipes are quick, easy and can give you just the lift you need to start your day. So give them a try.
