Staying true to wellness goals in the New Year doesn’t always mean cutting out your favorite foods. derail your health and wellness goals: Slim Down with Leftovers: Control portion sizes by immediately reserving part of the dish for later use. Pre-cooked tenderloin and chops can be repurposed throughout the week for healthful salads, wraps and stirfries—keeping meals diverse while cutting down on prep time during hectic weeknights. Dress it Up: Tenderloin and chops are a no-brainer for fast family dinners, but they are also a perfect fit for elegant occasions. Stuffing chops with vitamin-packed veggies or rubbing tenderloin with flavorful herbs and spices elevates simple meals without the added richness of heavy sauces. Lean, Mean, Juicy: To keep them tender, lean cuts like chops and roasts should be cooked to an internal temperature of 145°F, with a threeminute rest, for maximum enjoyment. Roast Pork Tenderloin with Asian Dry Rub Prep time: 5 minutes Cook time: 15-17 minutes 2 pork tenderloins (1 pound each), trimmed 1 tablespoon packed light brown sugar
1/4 teaspoon ground cinnamon 1/4 teaspoon salt 1/4 teaspoon black pepper 1/8 teaspoon ground cloves 1/8 teaspoon ground cayenne pepper Preheat oven to 145°F. Line a medium baking pan with foil. Stir together brown sugar, ginger, cinnamon, salt, black pepper, cloves, and cayenne pepper in small bowl. Rub pork with brown sugar mixture. Place pork in prepared pan and roast for 15-18 minutes or until the pork’s internal temperature reaches 145°F. Remove from oven, cover loosely with foil, and let stand for 3 minutes. Cut into slices. Serving Suggestion: Serve the sliced pork tenderloin with brown rice tossed with thinly sliced scallions and fresh chopped cilantro. Steamed bok choy or broccoli drizzled with a tiny bit of Asian sesame oil make quick and easy side dish options. Stay Motivated All Year with These Easy Fitness Tips
In 2015, millions of people will make a vow to lose weight or start a fitness plan, but many will lose the motivation it takes to sustain a fit and active lifestyle within just a few weeks. With the right tools and support though, finding motivation to stay fit can be a snap. Father, New York Times Best-Selling Author, and “Extra” TV host Mario Lopez finds his motivation to stay fit using the techniques of his personal trainer, Jimmy Peña. Now, Peña wants to help people keep their fitness vows using the same techniques by offering these simple tips to maintain motivation all year long: Start Small – If you haven’t been active in a long time, don’t stress your muscles by doing too much too fast. Start slowly by taking the stairs or squeezing in a 20-minute jog on your lunch break. Build Up Endurance – Track your progress and continue to build upon your exercise activities – whether you’re running or jogging a route, walking a path, biking, swimming or weight training – to push yourself a little farther each week. Grab a Partner – “You can improve exercise performance by having a partner who pushes you to your limits. But if you prefer to workout solo, the built-in audio trainer in the new MOTOACTV from Motorola can provide motivation. It’s like having a personal trainer right in your ear,” says Peña. The new device tracks fitness stats including time, distance, heart rate and even calories burned. Then, upload your workout to www.motoactv.com to analyze the performance data tracked by the device – and challenge your friends to beat your latest stats. “A little competition can be a big motivator,” explains Peña. Mix it Up – It’s important to make a fitness schedule and stick to it, but that doesn’t mean doing the same routine over and over. To stay motivated, try changing your workout. From walking to running to cycling, you can always find a new activity to challenge yourself – and you can bring MOTOACTV with you. Sweat-proof and rain-resistant, this device also features a scratch-resistant Corning Gorilla Glass display. You can wear it on your wrist, clip it to your shirt, or purchase a mount to attach it to your bike during an outdoor ride, making it easy to change up your activities to keep you interested (sold separately).
Turn Up the Volume – “Music is key for most of my clients. When they’re running out of steam, the right song can help put them on track to meet their fitness goals,” says Peña. Creating playlists of different music that keeps you motivated for different types of activities can really help keep you going. Remember to refresh playlists, as you can quickly tire of the same music. “MOTOACTV is a personal trainer and a DJ all at the same time,” says Lopez. “It tracks all the data I need – from pace, heart rate, distance, miles logged, and it plays all my favorite music. It even knows the music I perform to best, which I have never seen before.” In addition, users can stay tangle-free, since the device allows you to enjoy a completely wireless workout via stereo Bluetooth enabled headphones, sold separately.

Delectable: A Wine App That Could Revolutionize Drinking HAPPY GRAPES
By David White Alexander Niehenke began to appreciate wine ten years ago. But for the first four years, it was simply a beverage he enjoyed with dinner from time to time, especially when cooking at home. And then he put his nose in a glass of Cabernet Sauvignon from Justin, a winery based in Paso Robles, California. He was at a bachelor party, where few attendees were paying any attention to the wine inside their glasses. But for Niehenke, the aromas were intoxicating. Something clicked. So he promptly dove into the world of wine. For the next five years, Niehenke’s passion for wine grew steadily and predictably. As a resident of San Francisco, weekend trips to Napa
Valley and Sonoma were easy -- so he started driving north regularly. He began attending tastings, reading wine publications, and even collecting. And then he discovered Delectable, a mobile wine app. Since downloading the program last fall, Niehenke has been moving towards oenophilia at lightning speed. “The app has taught me about new producers, new regions, and even new varieties,” he explained. “I actually just learned about orange wine -- and tried my first one -- thanks to it.” An orange wine is made by treating white wine grapes as if they’re red -- in other words, soaking the skins and seeds alongside the juice during fermentation. Orange wines have become quite popular among some of the nation’s hippest sommeliers, and thanks to Delectable, Niehenke can see what those sommeliers are opening each night. Delectable traces its roots to 2011, when Alex Fishman was working in Dubai for Palantir, the data analytics firm best known for its work with the U.S. intelligence community. Shortly before returning home, Fishman and his girlfriend came upon a wine they’d enjoyed on many occasions. Wanting
to remember the bottle so they could purchase it in the United States, they looked to the label for information -- but were overwhelmed. Fishman recalled this experience a few months later over breakfast with in New York with Aaron Vanderbeek, a video-game designer. The two were old friends, and Fishman was detailing his desire to launch a mission-focused company -- ideally, one that would “make the world a more delicious place.” In short order, they realized that there weren’t any good mobile apps for wine enthusiasts. So Fishman and Vanderbeek began building Delectable. Today, the app identifies all a wine’s details from a photo and allows users to review and purchase wines. It also helps users discover industry professionals -- winemakers, sommeliers, and critics -- and see what they’re drinking. It’s no wonder why Delectable has been described as “the Instagram of wine.” Thanks in large part to this feature, Delectable could revolutionize consumption. As Fishman told me, “the wine market is broken because of a lack of information. That’s why consumers buy points. But the point system is flawed because people have
radically different tastes.” As consumers discover other enthusiasts on Delectable with similar tastes, they’ll discover new wines worth drinking. After all, it doesn’t make any sense to take the advice of a critic who has slapped “98 points!” on a bottle unless one shares that critic’s preferences. Delectable solves what Fishman calls “the matching problem” consumers face with wine critics. Niehenke is certainly drinking better thanks to the app. “When looking for new wines, I used to call my knowledgeable friends. Now, I can just open up Delectable to see what they’re drinking,” he explained. “When I realized I could follow pros, too, wow -- that was cool. I love seeing what my favorite winemakers -- people like Ross Cobb and Cathy Corison -- are drinking. Now, I follow people with similar palates to mine and un-follow people with different tastes.” Fishman is convinced that his app will fulfill its mission. “If we do this right,” he concluded, “the amount of global happiness that’s derived from wine will go up. People will drink better and better wines, since our suggestions will be tailored to individual users.”

10 simple ways to instantly improve your finances in 2015 Do you wonder how you could better manage finances? You’re not alone. When it comes to money, most people are far from perfect. Whether you make $20,000 a year or $200,000, some simple steps can start you on the right financial path, and some of them only take a few minutes to complete. “Personal finance is an intimidating topic, especially if you’ve made mistakes in the past,” says Michael McAuliffe, an adjunct instructor at Morton College and president of the nonprofit Family Credit Management. “But everyone has the opportunity to start fresh and make improvements. Your past missteps don’t have to dictate your financial future if you resolve to be proactive today.” McAuliffe recently co-authored a financial workbook titled “Personal Finance Made Easy.” Thanks to a grant from State Farm, the workbook can be downloaded for free at www. familycredit.org, or you can request a hard copy be mailed to you free of charge. You can use the workbook alone or pair with the free online video lessons. Topics covered include money management, savings, investing and more.
McAuliffe suggests 10 simple ways for you to start improving your finances immediately: 1. Stop, think, save - When out shopping, don’t mindlessly pile things in the cart. Take a moment to stop, think what you really need, and save by not buying extras. Cutting unnecessary spending is easy when you make a habit of briefly pausing to analyze what you really need. 2. Cut 5 percent - If your employer cut your paycheck by 5 percent, you’d be unhappy, but you’d still be able to survive. Why not make that cut now? Reduce the extras like your daily latte or weekly visit to the salon and the savings will mount quickly. 3. Save - Every little bit counts when it comes to savings. If you save just $5 a day - the cost of a fast food lunch - you’ll have $1,800 in a year. It’s OK to start slow and build momentum. The ultimate goal should be to save at least 10 percent of your net income (income after taxes and other deductions). 4. Budget - It sounds simple, but most people don’t have a solid budget. Create a spending plan now and stick to it. List all expenses and see where adjustments can be made.
Refer back to your budget regularly to stay on track. 5. Keep multiple savings accounts - The less accessible your money is, the easier it is to reduce spending. Keep multiple savings accounts and pay yourself first. One savings account could be designated for an emergency fund, another for a new car or a future vacation. 6. Make it visual - Discourage overspending by reminding yourself why you are trying to save. A photo of your vacation destination, for example, illustrates what you’re saving for; put it everywhere you spend money - wallet, computer monitor, vehicle, etc. 7. Make your money work for you - Consistent contributions add up over time, and thanks to the power of compound interest, the longer you leave your money untouched in a savings account or other investment, the more it can grow. 8. Home savings - If you own a home, you know it can cost a lot of money. Cut costs by doing home improvements and maintenance jobs yourself rather than hire out. Call your insurance agent and see if there is a lower rate for homeowner’s
insurance. Check into refinancing while rates are still low. 9. Manage checking accounts - You need a checking account, but are you really keeping track of your money? Online banking makes it easier than ever to balance your checkbook, track your spending and set up alerts when your balance goes under a certain amount. 10. Review your credit report From mortgages and car loans to employment and renting eligibility, your credit report and score affect many aspects of life. You can review your credit report for free annually by going to www.annualcreditreport. com. Make sure you know what’s on it and make corrections as necessary.
Why Getting Messy is Good
Playing outside and getting messy may just seem like fun to kids, but playtime actually has an important role in child development. Research shows that various types of play and parental interaction are vital to the healthy development of children. That’s why child care author and mom of three, Dr. Michele Borba is letting moms know it’s okay to let their little ones get dirty and have a blast doing it, instead of fretting about the mess. “By teaching kids that it’s okay to get messy sometimes and even encouraging it occasionally, we as parents show them that nobody is perfect, that accidents happen and most importantly, we teach them to be themselves,” said Borba. “Childhood is just too short to worry about getting dirty. Moreover, today’s advanced detergents, such as all(r) Oxi-Active, can remove many tough stains in one wash, but the memories that come with making them can last a lifetime.” “We’ve always known that kids and play are just a natural combo,” Borba said. “But new research also shows that letting kids engage in self-directed play has immense value for their social, emotional, cognitive and physical growth.” * Play expands kids’ minds and neurological development. Self-initiated play improves skills such as problem solving and interpreting and is important to brain development and learning. * Play boosts children’s creativity and imagination. Play gives children the chance to invent, build, expand, explore and develop a whole different part of the brain.
* Play stretches our children’s attention spans. Playing outdoors just 30 minutes a day increases child’s ability to focus and pay attention. * Play boosts self-confidence and self-regulation. Kids learn to become masters of their own destiny without an adult directing, pushing, managing or scheduling * Play helps kids learn to enjoy just being in their own company, entertaining themselves and developing identity. Ease that guilt when your kid says, “I’m bored, Mom!” and wants to be amused by you. Borba urges parents to ask these questions:
* How much are your kids plugged into some kind of a digital device? (Did you know the average child is plugged in for 7 1/2 hours a day?) * How often are they glued to that TV or clicking that keypad? * How much free time do they have (unscheduled, unsupervised)? * How often do they go outdoors to just decompress? * Do your kids know how to entertain themselves and enjoy the great outdoors? * How do you respond when they get messy? NEWPORT BEACH FILM FESTIVAL TO AWARD THE IMITATION GAME WITH TWO TOP HONORS FILM TO RECEIVE AWARDS FOR BEST PICTURE AND OUTSTANDING ENSEMBLE The Weinstein Company (TWC) is proud to announce today that the Newport Beach Film Festival (NBFF)) will be awarding their recently released film THE IMITATION GAME with two of the festival’s highest accolades this year. The film, which has been the recipient of several festival awards since it first showed in Telluride and Toronto earlier this year, will be named Best Picture and Outstanding Ensemble Cast by NBFF. It will be screening at the historic Lido Theater in Newport Beach in January with members of the Orange County Film Society (OCFS) and select members of the film’s cast and crew set to attend. In addition, NBFF, along with their partners Screen International, Visit Newport Beach California and OCFS, will host a pre-BAFTA private reception at the ME Hotel in London on Thursday, February 5th with members of the cast also in attendance. TWC released THE IMITATION GAME in select theaters on November 28th and nationwide on December 25th. The film, which was produced by Black Bear Pictures and Bristol Automotive, has been nominated for five Golden Globe Awards including Best Picture, Best Motion Picture Actor in a Drama, Best Supporting Actress in a Motion Picture, Best Screenplay and Best Original Score. It was also included in the American Film Institute’s top 11 films of the year and nominated for three Screen Actors Guild Awards. Directed by Morten Tyldum, produced
Page 8
by Nora Grossman, Ido Ostrowsky and Teddy Schwarzman, with a screenplay by Graham Moore, the film stars Benedict Cumberbatch, Keira Knightley, Matthew Goode, Rory Kinnear, Allen Leech, Matthew Beard, Charles Dance and Mark Strong. Commented director Tyldum: “Our tremendous and heartfelt thanks go to the Newport Beach Film Festival and their partners Screen International and the Orange County Film Society. Their support is so important to us and we’re incredibly proud to receive such prestigious honors from them for THE IMITATION GAME this year. This is a film that recognizes a man who was a hero and saved lives, but was sadly persecuted in his lifetime. We are grateful to be shining a long overdue light on him.” “After the Newport Beach Film Festival team screened THE
The Newport News
IMITATION GAME at the Toronto International Film Festival, it was abundantly clear that this film and its cast were standouts”, said Gregg Schwenk, CEO and Executive Director of NBFF. “The film was exceptional at portraying the legacy and contribution of Allen Turing and the code breakers.” During the winter of 1952, British authorities entered the home of mathematician, cryptanalyst and war hero Alan Turing (Benedict Cumberbatch) to investigate a reported burglary. They instead ended up arresting Turing himself on charges of ‘gross indecency’, an accusation that would lead to his devastating conviction for the criminal offense of homosexuality - little did officials know, they were actually incriminating the pioneer of modernday computing. Famously leading a motley group of scholars, linguists, chess champions and intelligence officers, he was credited with cracking the so-called unbreakable codes of Germany’s World War II Enigma machine. An intense and haunting portrayal of a brilliant, complicated man, THE IMITATION GAME follows a genius who under nail-biting pressure helped to shorten the war and, in turn, save millions of lives. Fashion Show at the Ritz Carlton Raises $250,000 for Camino Health Center Photos by John Eckmier Continuing its beloved tradition of beginning the official holiday shopping season with a dynamic fashion show featuring South Coast Plaza retailers, the Auxiliary for Camino Health Center held its 2014 Camino Health Center Auxiliary Fashion Show at the Ritz-Carlton, Laguna Niguel. With more than 400 guests in attendance, all were welcomed by tuxedo-clad gentleman and escorted into the event. Total raised for this exquisite event was more than $250,000 for the nonprofit. The program started with welcoming remarks from Ericka Waidley, President of Camino Health Center Auxiliary then an invocation from Sister Martha Ann Fizpatrick from Mission Hospital. A special video presentation was introduced from Debra Drew, CEO of Camino Health Center which tugged at many heart strings as to how Camino Health Center helps so many. “Camino Health Center is truly blessed to have the support and engagement of the Auxiliary,” shared Drew. “Since it was formed in 1985, the Auxiliary has raised more than $6 million to enhance the health and quality of life in our community.” The fashion show then began, and it was spectacular! With featured designs from Anne Fontaine, Bally, Brunello Cucinelli, Diane von Furstenberg, DKNY, Donna Karan, Façonnable, Loro Piana, Marni, MaxMara, Saks Fifth Avenue, St. John and Stuart Weitzman, and Salvatore Ferragamo; each were truly outstanding and brought excitement to the ladies (and men!) in attendance. Prior to the event, folks were able to peruse the many silent auction items that were available which helped raise $60,000 for the nonprofit. These items always feature premier pieces and don’t forget the luxury opportunity drawings! This year’s opportunity winners included Pat Atallah of Tustin who won the Napa Valley Experience; Jimmie Montgomery from Costa Mesa won the Revitalize, Refresh and Renew package donated by Pacific Coast Cosmetic and Laser Medical Center, and Jennifer Bartusick of Newport Beach won the Bally Bloom handbag, matching wallet and patent leather ankle boots. The lunch menu for guests attending were Heirloom tomatoes with extra virgin olive oil, local burrata cheese and basil for starters. The main course consisted of Orange glazed chicken breast with mixed vegetables and almond quinoa, then dessert was a duo of crunchy chocolate cake, passion fruit curd, chocolate caramel sauce, berries and Greek yogurt panna cotta, raspberries and almond crunch. The event was made possible thanks to the generosity of Diamond Level Sponsor South Coast Plaza as well as support provided by: Bank of America, Mission Hospital Executive Team, Pacific Life Foundation, Linda and Rice Berkshire, Nanette Buccola, Anne and Michael Crawford, Sandy and Tom Ewing, Mary J. George, Susan and Keith Hoffnagle, Nancy and Jeffrey Lavigne, Ann and Jim Morris, Marjorie and Jay Warren, Marilyn and Steve Weber, Teresa and Ira Bell, MD, Mr. and Mrs. Arthur B. Birtcher, Mary Jane Foley and Glad To Be Here Foundation in Loving Memory of John V. Foley II, Patti and Sam Fukushima, Margaret and Ponnappa Kalimada, MD, Judy and Michael Leon, Susan D. Morrison and Bonnie and Phil Presicci. Camino Health Center is a fully licensed, community-based clinic that provides affordable, quality primary medical and dental care. The center serves over 120,000 visits annually through its medical clinic, mobile medical and diabetes vans, pediatric dental clinic and Women, Infants and Children (WIC) program. 13 Tips for Better Health in 2015 Simple Ways to Eat Smart and Move More for Your Healthiest Year
By Kim Galeaz, RD CD Happy New Year! It’s the time of year when we all make resolutions to eat better, exercise more and get rid of the stress. If you failed to reach your goals last year or need a little help keeping up the momentum, the New Year presents another chance. By following these 13 smart-eating and active lifestyle tips, you just might have your healthiest - and luckiest - year ever! 1. Eat breakfast EVERY day. Research shows that breakfast eaters are more alert and productive throughout the morning and that they are more likely to achieve or maintain a healthy weight. 2. Go for greens. Reach for green leafy vegetables like kale, collard, turnip and mustard greens more often. They are filled with bone-building vitamin K and numerous antioxidants, and according to folklore, may bring good luck because their leaves resemble money. 3. Fall in love with lentils and legumes. Learn to love dried beans like pinto, black, navy and garbanzo.
They’re all rich in fiber and other nutrients that help fight cancer and heart disease. In Italy, lentils resemble coin-shaped money, so enjoy lentil soup for financial prosperity during 2015! 4. Choose whole grains vs. white refined. Whole grains can help reduce the risk of stroke, heart disease and diabetes and contribute to healthy weight maintanance. Choose whole wheat pizza crust, whole wheat penne pasta, brown rice, quinoa, popcorn, bulgur or oatmeal. 5. Have your cake and eat it, too. Or cookies, candy and donuts, as well. Sticking with your resolution doesn’t mean you have to give up all of your favorite sweet treats. Just have them in sensible, smaller portions. Try eating two bite-size cookies instead of a big one. Or cut your cake slice in half. Ultimately, sugar can have a place in a balanced diet so keep the things you love. 6. Go fishing. Eat more fish for those valuable omega-3 fats that promote a healthy heart and may help reduce incidence of depression.
Many countries start the New Year with fish since it represents good fortune, abundance and long life. 7. Get hoppin’! First, make a batch of Hoppin’ John. It’s a Southern dish of nutrient-rich black-eyed peas, onion, rice and bacon or sausage thought to bring good luck. Second, start hopping up and down because even hopping counts as valuable calorie-burning activity! 8. Become a Lean Mean Protein Machine. Beef and pork can be part of a healthy diet. Just choose lean cuts with “loin” and “round” in the name like sirloin and tenderloin (there are 7 lean pork and at least 29 lean beef cuts) and enjoy moderate, 3-ounce portions. 9. Say yes to low- and no-calorie beverages. Research shows they’re not only safe to enjoy, but they can help you reach and maintain a healthy weight. So there’s no need to give up your Diet Coke, flavored water or diet tea this year. Plus, they provide essential fluids since ALL beverages hydrate! 10. Spice it up. From cinnamon,
cloves, cumin and oregano, to rosemary, red pepper, paprika and turmeric, spices are a surprising source of powerful antioxidants. Do as the Danish do on New Year’s and eat stewed kale sprinkled with sugar and cinnamon for good luck and wealth. 11. Blend and balance. Substitute, switch and/or boost ingredients in recipes to maximize nutrients and keep the flavor. For example, make your famous mac and cheese with whole wheat elbows, low-fat milk, reduced fat cheddar cheese and add some peas, too. 12. Shop smart. You don’t always have to choose fresh fruits and vegetables to get nutrients. ALL forms count, including frozen, canned and dried. And, they may be more budget-friendly. 13. Move more. Don’t get overwhelmed with “exercising.” Just think of realistic ways to add more daily activity. Park farther away. Take the steps. Dance to your favorite tunes. Just get moving to burn calories and be a healthier you in 2015!

Walking to Exercise for Fitness Better Health and Fitness Are Just Steps Away By Nancy Shepherd For years it was believed that exercise for fitness had to be very strenuous to have any noticeable benefit. However, it is now recognized that something as simple as walking can be as efficient as more rigorous activities. The key is the type of walking you do. Simply strolling is better than nothing; it at least gets you moving and keeps your joints limber. But if you’re walking to exercise for fitness, you’ll need to step up the pace. Depending on your current health and your fitness goals, you can choose from brisk walking, power walking, and pole walking. Brisk walking can help you lose weight, improve your mood, manage Type 2 diabetes, lower blood pressure, and normalize cholesterol. Done consistently, it is as effective for reducing the risk of heart attack as jogging. As a weight-bearing exercise, it also contributes to strong bones and reduces risk from osteoporosis. All it takes is a good, supportive pair of walking shoes and enough space to work up to a good pace. Page 16
To gain the benefits of brisk walking, your speed should be fast enough to raise your heart rate, but still allow you to comfortably carry on a conversation. After a five to ten minute warm-up at a slower pace, increase to the brisk pace and maintain it for at least 30 minutes. You’ll get best results from engaging in the activity no fewer than five days a week. The next level of walking for fitness is power walking. At this level you can burn almost as many calories as jogging but without the jarring impact on your joints. In one study, women who incorporated three power walks per week into their walking routines lost five times as much belly fat than women whose workouts consisted of only brisk walking -- even though they burned the same number of calories. To take your workout to the power walking level, do your warm-up walk, then bend your elbows and swing your arms as you stride energetically. Strive for a pace of four miles an hour, an intensity at which conversation is no longer comfortable. Pole walking gives you all the
The Newport News
benefits of power walking and then some. Adding poles to your walking routine involves more muscles of the upper body, so you burn more calories and tone your upper body as well as your legs. Additionally, the poles provide stability and relieve some of the load from the hips and knees, which may make it easier for older people to take part. Walking with poles results in a greater aerobic workout without having to walk any faster. Even though using the poles raises the heart rate higher and burns more calories than walking without poles, walkers don’t perceive the exertion as harder. It has also been reported to relieve neck and shoulder pain. To pole walk correctly, it is best to get some instruction so you’ll get the most from your efforts. You’ll learn the proper length for your poles and the most effective techniques. Generally, walking with poles is like power walking, except that you will push down and back on the poles to propel yourself more powerfully with each stride. There’s no longer any excuse for
not working out. Walking to exercise makes improved fitness accessible to nearly everyone. Start where you are and do as much as you can do. As your fitness improves, step up to the next level of walking and you’ll be taking positive steps toward better health.

2015 Pageant of the Masters Tickets On Sale Now Happiness Made Easy with Tickets to “The Pursuit of Happiness” Tickets for the much-anticipated 2015 Pageant of the Masters are on sale now and make the perfect holiday gift for the art lover on your list. Nothing says holiday cheer more than tickets to this summer’s production “The Pursuit of Happiness.” “The Pursuit of Happiness” will explore the many sources of happiness, both ancient and modern, through the theatrical performance of “living pictures.” The 2015 Pageant of the Masters will be a sentimental journey through depictions of pastimes and activities that gave people joy long before the instant gratification of the computer age. “The Pursuit of Happiness’ promises to be a fun and entertaining show,” says Ticket Services Director Lucia McLeod. “‘Buy tickets now when good seats are available at advance prices.”
The Pageant of the Masters, recently featured in The New York Times Magazine, is one of the most unique productions in the entire world. Audiences are amazed and enchanted by ninety minutes of tableaux vivants (“living pictures”), incredibly faithful re-creations of classical and contemporary works of art, with real people posing to look exactly like their counterparts in the
original pieces. Advance tickets are $15 - $230. A Pageant ticket also entitles you to free unlimited admission to the Festival of Arts grounds all summer long where you can enjoy original artwork by 140 of Southern Orange County’s finest artists, art classes, musical entertainment, special art events, dining at Gina’s Alfresco and so much more. Tickets may be purchased by
calling 1-800-487-3378 or online at www.PageantTickets.com. The Pageant of the Masters will be performed nightly from July 8 through August 31, 2015. The Festival of Arts is a non-profit organization that produces The Festival of Arts – California’s Premier Fine Art Show and the Pageant of the Masters. Proceeds support the arts in Orange County.
New Ways to Enjoy Chocolate Humans have adored the taste of chocolate for thousands of years. Though generally viewed as a sweet treat today, it likely started as bitter beverage drunk by the Mayan people. Chocolate has seen many iterations since then, including the beloved chocolate candy we know today; however, there are other ways to enjoy chocolate in addition to the bar or bonbon. Chocolate expert and historian Beth Kimmerle offers some new uses for chocolate that you might not know about. Ditch the preconceived notions. Think chocolate is just for ice cream and late night snacks? Think again. Cocoa powder, a trendy spice for savories, is great on meats, while cocoa nibs can be used as a substitute for nuts in everything from baked goods to salads. Cook with cocoa. Try cocoa butter in place of cooking oil. Not only does it add great flavor, but it also imparts extra smoothness to desserts such as cookies and brownies. Drink it (not just in hot chocolate). Chocolate and red wine naturally complement each other and now, instead of tasting them side-by-side,
you can enjoy them together in one glass. ChocolatRouge Wines blend fine red wine and rich chocolate flavors in one bottle, creating a deliciously different twist for chocolate and wine enthusiasts. You can even use the wine in a cocktail inspired by a classic cake, and in a fruity sangria. Chocolate Sangria (Serves 4) 1 apple, cut 1 orange, cut Handful of sliced grapes 1 bottle ChocolatRouge Sweet Red 5 ounces soda water Dash of brandy Combine wine and fruit in a pitcher and let sit for one hour. Then, add soda water and brandy. Serve over ice with a twist of orange as a garnish. Red Velvet 2 ounces ChocolatRouge Milk Chocolate Several splashes pomegranate syrup Blend ingredients with ice until smooth, and serve. The Newport News
