Balboa Island Museum and Historical Society Historic Home Tour
Sponsored by the Balboa Island Museum and Historical Society, a Home Tour of eight historical homes will be held on Saturday, June 20, 2015, 11:00 a.m. to 3:00 p.m. on Balboa Island. The Tour will be a walking Tour where participants will experience the charm and history of some very unique historic homes. John French and Center Court Ace the Competition in the USHJA International Hunter Derby
John French and Center Court with Melissa Brandes of Blenheim EquiSports Photos by: CapturedMomentPhoto.com Calm and cool described the unusual weather as well as the unusually talented horse who earned the win in the $10,000 USHJA International Hunter Derby. After a rainy morning that drenched Del Mar, the cool afternoon air created an interesting challenge for the high performance hunters. However, sixyear-old Center Court, piloted by John French, impressed the judges from the first jump. The eleven elements in the Classic Round included a three-obstacle line requiring five strides from fences two to three and three to four. The flowing course continued with several long bending lines and three 4’3” options. The two panels of judges included the honorable Susie Schoellkopf and Mickey Maestro on Panel One and Bill Ellis sat with Rob Gage as Panel Two. Four professionals earned two spots each in the Handy Round. With top twelve scores ranging from 156 to 184, Nick Haness returned in the twelfth position on Karina Sanchez’s Zanzibar and in the fourth position on the Spring Classic III Derby Winner, Countdown (Sachi Porto, owner). in the tenth and sixth spots. Tara Metzner was sitting eighth on Davlyn Farms’ Come Monday and third on Chad Keenum’s High Five. And finally Derby veteran John French piloted the top two horses, previous Derby winner Soldier (Elizabeth Gabler, owner) and the young Center Court (Hiller Farms, owner), who came into the second round with a pair of 90s, four points ahead of Solider and ten points ahead of High Five. Emma Waldfogel aboard Kings Peak was the one amateur who battled it out with the pros in the second round. The Handy Round required choosing an option of 3’6” or 4’3’ vertical as jump one, galloping up a small hill to negotiate fence three followed immediately by a trot jump, directly to another option with either a bold one-stride at 3’9” in and 4’ out or an even bolder 4’3” two-stride. Scores in the eighties with wellearned Bonus points made for an exciting end to the competitive class. Known for his handiness, Haness and seven-year-old Countdown moved up two places with 18 total bonus points combined with scores of 82 and 87, for a well-earned second place. But the equine star of the day was Center Court, expertly piloted by John French. The pair earned 88 and 88 with 11 total bonus points

for a commanding ten point lead and the win. French recognized the horse’s ability at a young age, and went slowly as he matured. “We bought him as a four-year-old in England. I saw a video of him that I really liked. We didn’t do much with him last year, just a few shows. He turned six this month.” “He is the bravest horse,” the winning rider explained. “We started him in the First Years in Thermal, but there aren’t too many horses that can jump the big jumps like he can, so I thought why not do him in the High Performance. He was champion one week in Thermal, one week during the Blenheim Spring Series and also here at Ranch & Coast.” French then commented on today’s performance. “I’m just really happy with him. His first round was amazing. It was one of those rounds you remember for a while. He jumped so slow and so high over everything.” And the praise continued. “He’s probably one of the scopiest hunters that I’ve ever had. The fence could be 5’ and you could canter down to it slowly, and not feel like you have to leg him or tell him where to leave the ground, he just does it like no big deal. I think that is what is so appealing to the judges - he has that relaxed
look and then jumps so high over the jumps, so effortlessly.” As the inaugural USHJA International Derby Finals winner, French may have his next contender. “I’m tempted to take him back to the Derby Finals because I know he will just jump around whatever they put out there.” Wrapping up a cool, highperformance Friday, show jumping returns to the Grand Prix field with tomorrow’s $7,500 CashCall Mortgage Futurity followed by the $60,000 Grand Prix of California, presented by Equ Lifestyle Boutique.

By Patti Winters The United States has a rich history, and Memorial Day is one of the holidays originated to show our respect for those who have died for it and the many freedoms we enjoy on a daily basis. Memorial Day (originally called Decoration Day) was officially proclaimed in 1868 by General John Logan, and first observed on May 30, 1868 by placing flowers on graves of Civil War soldiers at Arlington National Cemetery. Since 1971, Memorial Day has been celebrated on the last Monday of May, to allow for a three day Memorial Day Weekend. Discuss American history with your family. We get so busy with our day to day lives that we often forget to slow

down and really think about the reason our national holidays were started. It is important to discuss the pride we have in our country and how we appreciate those that came before us, especially with our children. Buy a poppy from the VFW. Beginning in 1922 the Veterans of Foreign Wars (VFW) took a Dutch and French tradition and began to sell poppies nationally, to raise money for veterans in need. Today these poppies are made my disabled veterans and sold each Memorial Day Weekend. Participate in the “National Moment of Remembrance”, which was started in 2000. This is a resolution asks American citizens to stop anything they may be doing at 3 p.m. local time, and ob-
serve a moment of silence. Show respect for fallen war veterans. Visit cemeteries or war memorials to show your respect. Lay flowers or place flags as a remembrance to what the war veteran has given for his or her country. Many cemeteries have fallen war veterans whose family no longer lives close by. You can “adopt” these grave sites to show that their service has not been forgotten. Spend quality time with your family and enjoy (and appreciate) the freedom that others have given their lives for. Most cities will have parades and other celebrations. If there isn’t a formal activity that you’re interested in, think of having a picnic or get together with family and friends.

Memorial Day Table Setting Ideas
Memorial Day is great time to celebrate and have fun! We often gather for and plan parties, lunches, events or dinners on this wonderful occasion. It is nice to present our food and drinks on a wonderfully decorated table. If you are hosting such an event, here are some great tips for decorating your table on Memorial Day! My first and favorite choice is the red, white and blue table setting. This is a pretty and colorful way to show your Memorial Day spirit! This table setting idea has many variations that you can choose from! You can use a red table cloth, blue table cloth or white table cloth for this table setting. My favorite is the red table cloth. It does not show spills and stands out. I like to use white plates. If it is an informal gathering or party, white paper plates can be used, though I recommend the plastic plates or sturdiest plates you can find. This will make your guests more comfortable and they will be less likely to spill their plate. Use white napkins. This can be paper napkins or cloth ones. Serve the beverages in blue cups. They can be blue plastic cups or blue glasses. The effect of the white plates, white napkins and blue cups look very nice on a red tablecloth. Add a beautiful
basket or vase of red, white and blue carnations in the center of the table. I like to use silk flowers. If you like, you can use real red and white carnations. For an added touch, place small flags in the vase or basket, among the flowers! If you decide to use a blue table cloth, use red or white plates, white napkins and blue or red plastic cups or clear cups or clear glasses. If you use a white table cloth, red plates, white napkins and blue cups or glasses look wonderful. For silverware, any type can go with this idea, even white plastic. This Memorial Day table setting is easy to set up and very affordable. It looks great! For a Spring like look that is festive and very pretty, use a flowered table cloth. For plates, the color choice is white, napkins can be white and the beverages can be served in clear plastic cups or clear glasses. Use silverware or white plastic ware. A large vase of all different types and colors of flowers look great in the center of this table setting. You can also just use white carnations in a basket. This table setting is colorful, attractive and very easy to do. It is very nice and makes a great Memorial Day table setting, if you do not wish to use the red, white and blue color theme. For an outdoor gathering, a red
and white checkered table cloth looks very festive with white plates, white napkins, white plastic ware and red or blue cups or glasses. My preference is using red cups or glasses. I like keeping to the red and white theme on this idea. It looks fancy, yet simple. I add a basket or vase of red and white carnations to the center of the table and it gives the table setting a fun and fancy look. This Memorial Day table setting is sure to please! Depending on how much money you want to spend, you can find many Memorial Day themed table cloths to buy. Some are flag themed and some are red, white and blue checkers, stripes or a mix. If you use these, use white napkins, white plates, white plastic ware or silverware, and blue cups or blue glasses. Place a basket or vase of white carnations in the center of
the table. You can also place small flags in the flower arrangement. This table setting idea is creative and looks great! These Memorial Day table setting ideas are sure to make your holiday table look special. They are very easy to do and cost very little. Your table will look beautiful, festive and fun!

United Cerebral Palsy of OC’s Life Without Limits Gala Raises $657,000 Photos by: Jon Didier Grace and Leonard Borrmann with Allergan Honoree, David Pyott United Cerebral Palsy of Orange County (UCP-OC) set a fundraising record of $657,000 in gross proceeds at their beautiful black tie gala at the Balboa Bay Resort in Newport Beach. Kathy and Chris Dubia as well as Allergan were honored during the event. Over 400 guests showed their support of UCP-OC which provides a range of vital programs and services to more than 3,700 children - and their families- with cerebral palsy, autism, epilepsy, Down syndrome and developmental delays. Guests were met by child ambassadors with special needs and their families as they arrived. A lively cocktail hour and expansive silent auction followed, and once inside the elegant black and white ballroom, attendees enjoyed live music with dancing, gourmet dinner, live auction, family speakers, and heartwarming videos with UCP-OC families and awards ceremony. UCP-OC Board Chair James Corbett and CEO Deborah Levy welcomed guests and acknowledged the evening’s major sponsors including The Allergan Foundation, Argyros Family Foundation and Horowitz Group. During the awards program, Gavin Herbert, Sr. recounted Allergan’s history as a company and longtime charitable support, before introducing Event Co-chair Dana Dowers with Honoree Chris Dubia David Pyott who accepted the Corporate Impact Award. Allergan has made substantial financial contributions and provided leadership and dedicated volunteers to UCP-OC for over 20 years. Event co-chair Dana Dowers gave a moving presentation of Kathy and Chris Dubia’s friendship and their longtime support and commitment to UCP-OC. The couple – who attended with their son Brian and daughter Christine - were honored with the first-ever Legacy Award for their 25 years of dedication to the health and welfare of people with disabilities. Margo, the featured speaker, was joined on stage by her son Deen and service dog Knobby as she shared their story of moving to Orange County two years ago and their struggles of finding childcare support. Deen has a diagnosis on the autism spectrum, is completely deaf on one side and suffers from epilepsy, high anxiety and sensory integration disorder. Through UCP-OC’s Respite and Inclusive Childcare programs, Deen is getting the support he needs throughout the day and is now thriving. UCP-OC board members and business leaders Dana Dowers, D.L.D. Insurance Brokers and Matthew Maletta, Endo Pharmaceutical served as the event co-chairs. Honorary committee included David Ball, Michael Hayde, Gavin Herbert, Sr., David Horowitz, Douglas Ingram, James Mazzo, David Deen and Margo Chadwick with Pyott, Geoffrey Stack and Michael Tenerelli. Nick, Lisa and Jacoby Gonchar Deborah Levy and service dog Knobby An elegant multi-course gourmet dinner included pan seared sea bass, lobster ravioli with royal trumpet mushroom followed by a delicious main course of pan seared filet of beef with jumbo prawn brochette, potato gratin with broccolini and baby carrots. Dessert alternated between blueberry mascarpone torte, lemon crème anglaise and chocolate brownie torte with caramel drizzle. Jim Nye was the event emcee and auctioneer. The top live auction item was a BBQ dinner on the beach in Irvine Cove with Rod Carew, Dennis Kuhl and Chuck Finley which brought in $15,000. ENVIRONMENTAL NATURE CENTER PRESENTS LEADERSHIP PROGRAM FOR MIDDLE SCHOOLERS On August 10, 2015, the Order of the Raven will flock again at the Environmental Nature Center (ENC). The program for middle school students flew for the first time in 2014 to rave reviews from participants: “Grant was telling me all sorts of details about camp on the way home,” said Raven Mother Rachel Hulan. “He must have had fun today, because I just walked into his room to remind him to take care of a chore, and he had fallen asleep! He NEVER takes a nap, so he must have been good and worn out.” “I think it is great to teach the kids these important skills, and their age is perfect to learn them,” said Raven Mom Xandra Laskowski. “I love the last resort kits and the fact they learned that they can’t be taken
to school and on flights. Real life stuff that will sink in. Can’t wait to hear about tomorrow! I am really impressed by what you are teaching the Students and Lacey loves being a Raven.” The eight day long experience is an opportunity for students entering 6th and 8th grade to learn life skills, get in touch with their innate capacity for contribution, and prepare for the transitions ahead. “The Ravens are challenged to make commitments to themselves and others,” said ENC Naturalist and Head Raven Leslie Helliwell. “They gain leadership skills and become more independent and self sufficient. They also have a lot of fun and develop new and old friendships.” Order of the Raven is separate from the ENC’s regular Nature Camp (where campers range from kindergarten to 5th grade), although Ravens spend a little time almost every day teaching younger campers a skill. They learn to do something one day, and have the opportunity to teach that skill the next day. “Joining the Order of the Raven is great experience for becoming a baby sitter or an ENC Leader in Training (high school volunteers that assist with campers),” said ENC Education
Director Lori Whalen. “Frankly, most educators shy away from this age group. But the ENC Naturalists are excited to encourage our Ravens as they grow and transition through the challenges they will encounter.” Ravens will be given an opportunity to do activities they couldn’t when they were younger, like venture out into the community on walking field trips to local businesses within about a mile of the Center. On their last day

Top Memorial Day Recipes Start the Summer Right with these Great Recipes By Derrick Riches It’s called the unofficial start of summer and this Memorial Day gives you the opportunity to break out the grill or smoker to start the summer right. These recipes were the most popular for Memorial Day last year and they are a great start to your summer barbecue season.
Kansas City Rib Rub In Kansas City they know BBQ ribs. This is the barbecue rub recipe for traditional Kansas City-Style Ribs. Finish these ribs off with a good barbecue sauce and you’ll have a fantastic meal. Prep Time: 10 minutes Total Time: 10 minutes Yield: Makes a little more than 1 cup Ingredients: 1/2 cup brown sugar 1/4 cup paprika 1 tablespoon black pepper 1 tablespoon salt 1 tablespoon chili powder 1 tablespoon garlic powder 1 tablespoon onion powder 1 teaspoon cayenne Preparation: Combine all ingredients together and transfer to an air tight container. Maybe stored up to six months.
Fresh Corn on the Cob This is the general method for grilling corn on the cob. Remember not to remove the husks, they will hold in the moisture and keep the corn from burning. You might want to pull out as much silk as you can before hand Prep Time: 30 minutes Cook Time: 15 minutes Total Time: 45 minutes Ingredients: corn on the cob, husks intact
butter herbs Preparation: DO NOT REMOVE HUSKS. Do remove the silk. Soak in water for at least 15 to 20 minutes. Remove from water and pull down husks carefully -- DO NOT REMOVE -- and coat with herbal butter (made from adding your favorite fresh herbs to softened butter). Put the husks back up covering the corn and tie with a thin piece of husk at the top. Place on grill for about 15 minutes, turning.
BBQ Beef Ribs This is an easy way to prepare delicious, sticky beef ribs on your grill. Remember that the secret to indirect grilling is to make sure that the food doesn’t get any direct heat at all. You will need to rotate the ribs occasionally to evenly cook them. Prep Time: 20 minutes Cook Time: 3 hours, 30 minutes Total Time: 3 hours, 50 minutes Yield: Serves 4 Ingredients: 4 to 5 pounds beef back ribs (about 10 ribs) 1/2 cup ketchup 1/2 cup honey 1 4 ounce can green chilies, diced 1 large onion, chopped 4 cloves garlic, minced 1 teaspoon cayenne 1 teaspoon salt 1 teaspoon black pepper 1 teaspoon dry mustard Preparation: Trim excess fat from beef ribs. Combine salt, pepper and cayenne. Rub over the ribs. Preheat grill and prepare for indirect grilling with a drip pan. Place ribs on grill over drip pan and close the lid. Cook for about 3 to 3 1/2 hours over a medium low, indirect heat (try to keep the temperature under 265 degrees F.). To prepare sauce combine onion, honey, ketchup, chili peppers, garlic and mustard in a sauce pan. Heat over a low temperature, stirring until even and warm. When the ribs are nearly finished begin brushing the sauce on them until you get a thick
coating. B i g D a dd y ’ s C a r o l i n a S t y l e Barbecue Sauce Big Daddy says, “This is Carolina style barbecue sauce.” This means that it is vinegar and mustard based, as opposed to the ketchup and molasses based sauces of the mid and southwest. The combination of sweet and tangy flavors brings out the absolute best in grilled or smoked pork or chicken. Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes Yield: Makes about 2 1/4 cups Ingredients: 1 cup prepared yellow mustard 1/2 cup sugar 1/4 cup light brown sugar 3/4 cup cider vinegar 1/4 cup water 2 tablespoons chili powder 1 teaspoon black pepper 1 teaspoon white pepper 1/4 teaspoon cayenne 1/2 teaspoon soy sauce 2 tablespoons butter 1 tablespoon liquid smoke (hickory flavoring) Preparation: Mix all except soy, butter and smoke. Simmer 30 minutes. Stir in remaining ingredients and simmer for 10 more minutes. Grilled Sweet Potatoes It doesn’t take a lot to make delicious sweet potatoes. These grilled sweet potato slices get a quick blanch in hot water and then hit the grill to cook up hot and fast. Best part is that most of the preparation can be done in advance. Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes Yield: Serves 4 to 6 Ingredients: 4 medium sweet potatoes 1/2 cup melted butter 3 tablespoons brown sugar 1 teaspoon ground cinnamon Preparation: Cup sweet potatoes into 3/4 inch slices. Bring 3 quarts of water to a boil and add potatoes. Boil until potatoes are just starting to soften. Cool and peal. Combine butter, brown sugar and cinnamon, brush over potatoes. Place Potato slices on preheated grill over a medium low heat and cook
for about 10 to 15 minutes, turning once. When the sweet potatoes as soft through the middle and browned on the surface they are ready. A Carolina BBQ Rub Chuck Ozburn sent me this fantastic, classic-style Carolina barbecue rub recipe. Try this rub next time you want to make a traditional Carolina Pulled Pork. Prep Time: 10 minutes Total Time: 10 minutes Yield: Makes about 1 cup Ingredients: 2 tablespoons salt 2 tablespoons sugar 2 tablespoons brown sugar 2 tablespoons ground cumin 2 tablespoons chili powder 2 tablespoons freshly ground black pepper 1 tablespoon cayenne pepper 1/4 cup paprika Preparation: Combine all ingredients in a small bowl and mix well; use as a dry rub
on beef, chicken, lamb or pork. Grilled Tri-Tip Roast This simple beef tri-tip roast is perfect for many uses. Grill it up, low and slow, and serve it as it is, or cut it up for fajitas, tacos, enchiladas or anything else that calls for a flavorful meat. Prep Time: 15 minutes Cook Time: 1 hour Total Time: 1 hour, 15 minutes Yield: Serves 4 Ingredients: 2 pounds tri-tip roast 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon ground black pepper 1 teaspoon salt Preparation: Lightly oil the cooking grate on your grill. Preheat grill and prepare for indirect grilling. Combine garlic powder, onion powder, pepper and salt. Rub it over the surface of the tritip roast. Place tri-tip on grill, fat side up. You can place a drip pan under it to catch the drips which will make a great gravy later. With the grill on low cook for about 1 hours or until it reaches your desires doneness.

Makes: 4 servings 4 bone-in pork loin chops, 3/4-inch thick 2 garlic cloves, peeled 1 cup fresh basil leaves, packed 2 tablespoons fresh lemon juice 2 tablespoons extra-virgin olive oil 1 teaspoon coarse salt 1/2 teaspoon freshly ground black pepper With machine running, drop garlic through feed tube of food processor to mince. Stop, add fresh basil, and process until chopped. Add lemon juice, oil, salt, and pepper and process to make a thin wet rub. Spread both sides of pork chops with basil mixture. Let stand 15 to 30 minutes. Prepare medium-hot fire in grill. Brush grate clean and oil grate. Grill chops, over direct heat, turning once, to medium rare doneness, 5 to 6 minutes per side, or until the internal temperature reaches 145°F, followed by a 3-minute rest. Boating Community Comes Alive Memorial Day Weekend Some Safety Tips from BoatUS After the brutal winter there’s a mad rush for boaters to get back on the water for the summer boating season’s annual kick-off, Memorial Day weekend. But the nation’s largest recreational boaters group, Boat Owners Association of The United States (BoatUS) says “not so fast,” and urges boaters to be prepared by following these five tips: Ensure all safety gear – life jackets, radio, flares and other items – are ready to go. If you have the newer, more comfortable inflatable life jackets, be sure to open them up, inspect and test by filling with air and let them sit overnight to ensure they will keep you buoyant. A free Vessel Safety Check is offered by the US Coast Guard Auxiliary and US Power Squadrons can also be requested by going to www.safetyseal.net. Avoid a springtime sinking by ensuring any drive gear such as outdrive bellows (inboard/outboard), shaft packings (inboards), livewell and engine cooling plumbing, or through-hull fittings are not cracked, rotted or severely corroded. Boaters, in their rush to get back on the water, sometimes take short cuts on these critical safety and spring
