the history of the orange county fair
Shortly after Orange County was created in 1889, the Orange County Community Fair Corporation was formed. This group put on a small fair in 1890 that included a horse race and a few exhibits in Santa Ana. In 1894, another group, the Orange County Fair Association, Inc., took over The first Orange County Fairs were primarily livestock exhibitions and horse races. At the turn of the century, a “carnival of products” was added and the Fair became an annual event. In ensuing years, the Fair was held in Santa Ana, but after World War I it was moved to Huntington Beach for two years and then back to temporary grounds on East Fruit Street in Santa Ana. In 1916, the Fair was taken over by the newly organized Orange County Farm Bureau. The first OC Fair Board was elected in 1925 and the Fair re-
located to Anaheim, across the street from the Orange County Hospital. In 1925, a rodeo and carnival were added to the Fair. OC Fair Clowns After World War II, the state formed the 32nd District Agricultural Association and made it responsible for the Fair. The state
then purchased land occupied by the Santa Ana Army Air Base and some of it was earmarked for a new fairground. The Fair was first held at the new site in 1949 and it soon was designated as the permanent Fairgrounds. In 1953, the City of Costa Mesa was incorporated - the new
city included the Fair’s location. From 1949 to the present, the OC Fair has grown from a small, community, fiveday celebration to a 23-day festival that is one of Orange County’s most eagerly awaited annual events.

OCC Theatre to Perform Children’s Play ‘Androcles and the Lion’ Orange Coast College will stage a summer production of “Androcles and the Lion” by Aurand Harris. The show will open on July 18 and run through July 25 in OCC’s Drama Lab Theatre. Show times include a 2:30 p.m. matinee on Saturday, July 18 and Sunday, July 19, and nighttime showings at 7 p.m. on July 18 and Saturday, July 25. There also will be 11 a.m. showings on Thursday, July 23 and Friday, July 24. One of the most popular children’s plays every written, “Androcles and the Lion” brims with silliness and joy, and features plenty of audience interaction. The show is geared toward children ages 5-12. “This is going to be a really fun show that everyone, children and adults alike, will enjoy,” said director and OCC theatre arts instructor Tom Bruno. Tickets will be available at the door and run $9 for adults and $7 for children, students and seniors. OCC’s Drama Lab Theatre is located off Fairview Road and Merrimac Way, directly behind the College’s Robert B. Moore Theatre. Parking is free on weekends, and metered parking is available during the week. Orange Coast College, founded in 1947, is one of the nation’s top transfer schools. With a student population of 25,000, OCC provides exemplary programs leading to Associate degrees and 130 career programs. The college’s 164-acre campus is located in the heart of Costa Mesa.
SO CAL ARTIST TIMOTHY J. CLARK UNVEILS COMMISSIONED PORTRAIT OF CHIEF JUDGE SANDRA LYNCH OF THE UNITED STATES COURT OF APPEALS FOR THE FIRST CIRCUIT IN BOSTON Southern California native and renowned artist Timothy J. Clark was recently commissioned to paint the portrait of the Honorable Sandra L. Lynch, Chief Judge of the First Circuit Court of Appeals in Boston. The 34” x 46” oil portrait was unveiled on June 4, 2015 at the John Joseph Moakley Courthouse in Boston’s Seaport District with Clark and his wife Marriott in attendance. Chief Judge Lynch’s family and friends and many other distinguished guests gathered to see the portrait for the first time. Presiding Judge Jeffrey Howard welcomed four speakers: Associate Justice of the Supreme Court of the United States Stephen G. Breyer; Retired Associate Justice of the Supreme Court of the United States David H. Souter; and two of her former clerks, Attorney Jack Pirozzolo of Sidley Austin in Boston, and Attorney E. Brantley Webb of Mayer Brown in Washington, D.C. Two other former clerks, Patrick Shin, Associate Dean of Suffolk Law School, in Boston, and Attorney Sarah Burg of Foley Hoag in Boston, unveiled the portrait. The painting is now a part of the permanent collection Page 4
of the Moakley Federal Courthouse, and hangs in the en banc courtroom. Chief Judge Lynch was nominated to the Boston-based court by Senator Ted Kennedy and was appointed by President Bill Clinton in 1995. She was the first woman to serve on the Court and the first woman to become Chief Judge of the Court. The New York Times has reported that Judge Lynch’s opinions were among the most cited of federal court of appeal decisions, and U.S. Law Week has called her “one of the most influential judges in the country”. This portrait commemorates Judge Lynch’s remarkable milestones. On June 15, Judge Lynch ended her seven-year tenure as Chief Judge of the First Circuit. The following day, Judge Jeffrey R. Howard began his term as Chief Judge. Timothy J. Clark is noted for his watercolors, oils, drawings and portraits. His work is represented in numerous public and private collections including the Smithsonian’s National Portrait Gallery, the Library of Congress, and the Museum of the City of New York. His work has been featured in solo museum exhibitions across the country, most recently

Food forecast: U.S. embraces European traditions to create authentic cuisine stateside Not long ago, adding international flair to your foods simply meant incorporating a dash of spice or trying a new cooking method. Today, Americans expect more out of their food, and the newest culinary trends are inspired by European traditions in order to create delicious, unique cuisine closer to home. As more people seek the high quality and craftsmanship they’ve come to expect in European products, U.S. restaurants and food makers are creating American originals based on international customs, and the results are surpassing expectations. Keep an eye out for these top food trends: 1. Icelandic skyr You can’t go to a grocery store today and not see shelves stocked with Greek yogurt made domestically, the perfect example of how Americans have adopted an international food and made it their own. While it’s dominated the yogurt market for the last couple of years, another yogurttype food is making a splash in the U.S.: Icelandic skyr. Traditionally used as a way to preserve fresh milk, skyr is made from skimmed milk with the cream removed. The straining process gives it a creamy texture. It’s also low in fat and sugar, plus skyr is higher in protein than its Greek counterpart. Look for U.S.-made skyr at your local grocer - some foodies deem it to be the next Greek yogurt, so if your supermarket doesn’t yet have it, it likely will by the end of the year. 2. Artisan cheeses Europe is well-known for having some of the best cheeses in the world. But you no longer have to travel overseas to find expert cheese-makers who create these decadent delights. For example, cheesemaking traditions in the Alpine region of Switzerland have been used for centuries to craft quality cheeses, but today the same techniques are followed in the creation of Roth Grand Cru Alpine style cheese created in Wisconsin. Made with fresh milk in large imported copper vats and aged a minimum of four months, the resulting cheese is mild, nutty and smooth, earning numerous awards. It’s easy to jazz up your favorite dishes with international flavor by swapping out your standard go-to cheeses with this versatile variety. Try adding Roth Grand Grand Cru to potatoes gratin, Panini sandwiches or as the base for your next fondue. To create an artisan cheese plate, pair it with fresh apples and pears,
almonds and figs for a fantastic blend of flavors guaranteed to delight the taste buds. 3. Neapolitan pizza Forget thick crusts and loads of toppings, Americans today are looking for more out of their pizza pies. The rise in the popularity of Neapolitan pizzas is evident in restaurants across the country, giving Americans a unique taste of this traditional Italian dish. What makes a pizza Neapolitan style? Originating from Naples, Italy, a Neapolitan pizza features a thinner crust that is baked quickly at high temperatures, typically in a wood or stone oven. The toppings are minimal with the sauce often being the dominating feature. The classic pizza Napoletana margharita - created in1889 as a tribute to the queen of Italy - simply includes tomatoes, mozzarella and crust made from wheat flour. 4. Fine chocolates Chocolate lovers agree that your common milk chocolate candy bar found on convenience store shelves doesn’t hold a flame to fine European chocolates. But thanks to a growing interest in dark chocolate and high-end desserts, American chocolatiers are giving their international counterparts a run for their money. Creating premium chocolate is considered an art form where expert chocolatiers use only the finest cocoa to create indulgent treats. Whether it’s a dark chocolate bar of 85 percent cocoa, a smooth and creamy truffle or a decadent
chocolate covered caramel, the passion for fine chocolate is alive and well in the U.S. The confections can be found at specialty stores and even the candy aisle at your local grocer. If you have a taste for international flavors, you don’t have to look beyond our borders to find the finest foods. From rich cheeses to fine chocolate treats, European traditions are thriving in the U.S. as food experts adopt these methods and make them their own. Grand Cru Grilled Potatoes Ingredients: 2 teaspoons unsalted butter 1 1/2 pounds baby gold or red potatoes, thick sliced 2 small Vidalia onions, chopped 3 green onions, chopped 1 teaspoon chives, diced 2 cloves garlic, chopped 6 slices bacon, fully cooked,
chopped 1/4 teaspoon black pepper 5 ounces Grand Cru Original, shredded and divided 1 sprig rosemary, stem removed Directions: Preheat grill to medium. Cut butter into small pieces and place in bottom of 8-by-8-inch disposable foil pan. Layer potatoes, Vidalia onions, green onions, chives and garlic in pan. Top potatoes with bacon, then cover with half of Grand Cru Original. Season with black pepper and rosemary; cover pan with aluminum foil. Place potatoes onto grill and cook for approximately 45 minutes or until potatoes are tender. Remove foil, top with remaining Grand Cru and continue to grill until cheese is fully melted and browned. (To prepare in the oven: preheat oven to 400 F and bake for at least 1 1/4 hours.)

Human Options’ Serious Fun Nets $394,000 Event co-chairs Demetria Moore, Artyn Gardner and Tamie Rus Photos by: Lisa Renee Baker Human Options raised some serious funds at their Serious Fun fundraiser at the Balboa Bay Resort in Newport Beach. The Irvine-based nonprofit netted $394,000 and honored Keith Swayne and daughter Anne Swayne Keir for their significant support of Human Options’ mission of working to stop the cycle of domestic violence in Orange County. This year’s theme, Black Tie Masquerade, was an inspiration for nearly 400 guests who enjoyed a silent auction and cocktail hour with live theatrical entertainers, special awards program, live auction and dancing. Community leaders Artyn Gardner, Demetria Moore and Tamie Rus served as event co-chairs. Honorary chairs Don Crevier and Laguna Beach Mayor Robert Whalen introduced the 2015 Dove Award honorees - Keith Swayne and Anne Swayne Keir - and shared their lifelong friendship with the family and significant philanthropic support of many causes. The award also honors the memory of Judy Swayne, who passed away on November, 29, 2014.Keith and Anne continue Judy’s vision representing David and President Emeritus Victoria Collins, Ph.D. future generations of philanthropists and community leaders. The Swayne Family has modeled a powerful commitment to philanthropy for the past 30 years. Founder of the Orange County Community Foundation, Judy served on the board of directors of Human Options for many years and was board president in 1986. Keith provides leadership to a number of key nonprofit organizations including board positions at Whittier College, Boys and Girls Club of Laguna Beach, Naturebridge, Orange County Human Relations Community Partners and the Orange County Community Foundation. Anne, the current board president of the Swayne Family Foundation, is developing a strong presence for the foundation in her home state of Hawaii. She currently serves on the boards of The Hawaii Arts Alliance, Hawaii Public Radio, Kua and Mental Health America. After the awards program, an elegant gourmet dinner featured a choice of pan seared beef filet, crab crusted barramundi or vegetarian wild mushroom ravioli. The decadent desserts were a chocolate mango gateaux with salted caramel and masked tiramisu with cocoa coulis and crème anglicize. Human Options CEO and co-founder Vivian Clecak then took the stage and shared the vision of Human Options. A vision that includes their core values for the community. The mission of Human Options is to provide safe haven and life changing programs to help abused women, their children and families rebuild their lives, while working with the community to break the cycle of domestic violence. Now in its 34th year, Human Options provides a full continuum of services to stop the violence – from prevention and early intervention programs to emergency shelter and long-term transitional housing. Over 20,000 clients are served annually and independent academic research consistently verifies that 90% of their residential clients continue to be violence free one year or more after graduating from the program. Metrolink and the Orange County Transportation Authority (OCTA) have teamed up to offer the OC Fair Express for those heading to the 125th edition of the OC Fair. Passengers along Metrolink’s Orange County and Inland Empire-Orange County lines can transfer for free to the special round-trip OC Fair Express direct bus service from the Anaheim Canyon, Santa Ana, Irvine, and Anaheim-ARTIC stations. “The OC Fair has historically been an outstanding event, but parking and traffic can be an issue,” said Chair
Huntington Beach, the Laguna Hills Transportation Center, the Village at Orange, and the Junipero Serra Park and Ride in San Juan Capistrano. The OC Fair Express will drop off and pick up passengers at the Yellow Gate. Metrolink riders who take the OC Fair Express will receive a coupon good for a $3 admission to the OC Fair. Those customers will save $9 on adult admission, $4 on senior admission and $4 on youth admission when using a coupon. The OC Fair Express will run Fridays during the OC Fair from noon until midnight, and on Saturdays and of the Metrolink Board of Directors Sundays from 10 a.m. until midnight.
