Prepare medium-hot fire in grill. Brush grate clean and oil grate. Grill chops, over direct heat, turning once, to medium rare doneness, 5 to 6 minutes per side, or until the internal temperature reaches 145°F, followed by a 3-minute rest. Mix chili powder, oregano, cumin, salt, cayenne, granulated garlic and black pepper in small bowl. Rub both sides of pork chops with spice mixture. Let stand 15 to 30 minutes. Cook chops to an internal temperature of 145°F with a 3-minute rest.
Nutrition per serving (chop and rub): Calories: With machine running, drop garlic through feed 220; Fat: 14.5g; Saturated Fat: 3.5g; Cholesterol: tube of food processor to mince. Stop, add fresh 60mg; Sodium: 1220mg; Carbohydrate: 4g; Probasil, and process until chopped. Add lemon juice, tein: 27g; Fiber: 1g oil, salt, and pepper and process to make a thin wet rub. Spread both sides of pork chops with basil mixture. Let stand 15 to 30 minutes.

PRINTMAKING AND EARLY CALIFORNIA ART TO BE ILLUMINATED AT “ART TALKS: A LECTURE SERIES” On July 24th and July 26th, Festival visitors are invited to explore the medium of printmaking and survey early California art, as the informative special event series “Art Talks” continues. Forerunners to the art of printmaking go back centuries, even millennia. On Tuesday July 24th from 12pm-1pm, Festival of Arts exhibitor Vinita Voogd will lead an exploration of process and issues facing the modern printmaker. The discussion will be especially interesting to those who plan to attend Family Art Day at the Festival of Arts on Saturday July 21st, since there will be an enormous steamroller present that day to roll out prints for children and adults alike. On Thursday July 26th from 12pm-1pm, longtime collector of early California art Mark Hilbert will share his extraordinary collection comprised of paintings that offer a non-verbal communication of “People, Places and Memories” through the eyes of regional artists. Some of his collection can be viewed in two Art Published books, “The Good Life” and in “Millard Sheets”. Art Talks: A Lecture Series continues throughout the Festival of Arts 2012 season. On Tuesdays, experienced artists take attendees through topics of medium, influences, and current trends; on Thursdays, Orange County’s top curators, collectors, and conservators lead discussions on issues of buying, appraising, displaying, restoring and conserving fine art. Brown bag lunches from Gina’s will be available for purchase or you can bring your own! Art Talks: A Lecture Series is free with Festival admission. By Mike Thayer It’s grilling season, BBQ season, it’s time to fire up the smoker, the gas grill, the portable Weber, rub two sticks together, it doesn’t matter - put some meat on the fire! And what is the most popular accompaniment for a plethora of meats cooked in the great outdoors? No silly, not ketchup, its barbecue sauce! The person who invented BBQ sauce is unknown, but whoever he was, he was a genius! References to the sauce started appearing in 17th century English and French literature about the formation of the American colonies. The rest is history and boy has BBQ sauce been kicked up a notch with all kinds of flavors and varieties created over the last 400+ years! A traditional flavoring for pork, beef and chicken, sauce can range from watery to thick, from being heavy on the vinegar to being loaded with spice. Heck, there’s even mustard and mayonnaise based BBQ sauces. It’s a regional thing, there’s Carolina BBQ, Tennessee whiskey BBQ, Texas BBQ and the favorite of yours truly, Kansas City BBQ. What is your favorite sauce? Kansas City BBQ style: This is a thick, rich tomato based sauce that’s got some spice but is heavier on the sweet. Tomato, brown sugar and vinegar are the base ingredients. It doesn’t really penetrate the meat and is more like a frosting than a marinade. It glazes REAL nice though when put on the meat about 10 minutes before pulling off the grill, a beautiful finish. This is the most popular style of sauce in the U.S. and
what you see the most of in the bottled varieties on the grocery store shelf. Be careful with the store bought stuff though! The high sugar content of the “ready” varieties tend to burn real quick so keep an eye on your dinner. Texas BBQ style: This has more kick than Kansas City style. It has less tomato, less sugar and a lot more spice such as cumin, black pepper, chili pepper, and even chili powder. Meat drippings and hot sauce - Tabasco - are always a part of this style and fresh veggies like green bell pepper and onion are often added. East Carolina mop: This simple but tasty sauce was pioneered by the African slaves of Scottish settlers in the region. It’s a straight forward combination of hot pepper flakes, ground black pepper and vinegar. The reason it’s called a mop is because this thin concoction is literally mopped - basted - on the meat throughout the cooking process, the flavor really penetrates! With little if any sugar and no tomato in this style, East Carolina mop is a sharp contrast to other sauces. Western Carolina dip: From the hilly areas of North Carolina, most American sauces can trace their roots to this one. The recipe usually consists of a base of black pepper blended with tomato paste or tomato sauce, or ketchup, with vinegar added to balance it out. Like the East Carolina mop, this is a thin sauce that is mopped on the meat throughout the cooking process.
South Carolina mustard style: This is a whole new BBQ sauce experience. Early German settlers developed this one and while good on chicken, its tailor made for pork. A little thicker than its Carolina cousin sauces, a simple recipe consists of mustard, vinegar, spices and a little sugar. Fantastic on a pulled pork sandwich topped with coleslaw. Tennessee Whiskey style: Made famous by the Jack Daniel’s World Championship Barbecue Invitational, this style has become so popular it now deserves its own category. This combination of vinegar, whiskey, molasses, spices, and Worcestershire sauce gives BBQ a whole new flavor profile. And BBQ sauce isn’t just for pork, beef or chicken anymore! Try the Western Carolina dip on grilled shrimp or fish. Put your favorite style on a pizza instead of traditional tomato sauce. If lamb isn’t your favorite, try it again with some Tennessee Whiskey sauce! And here’s a personal side dish favorite, toss some grilled cauliflower florets, baby carrots, baby portabella mushrooms and bacon bits together with some Kansas City style sauce. Delicious! Get your tongs out!

Pacific Chorale announces new season Orange County, CA organization to present concerts in Costa Mesa, Newport Beach, Huntington Beach and Fullerton, with guest artists including Pacific Symphony, bass-baritone Eric Owens, soprano Janai Brugger, the Southern California Children’s Chorus, and Irish dance ensemble A Gaelic Gathering. Pacific Chorale’s Artistic Director John Alexander and President and CEO Kelly Ruggirello today announced details on the Chorale’s upcoming 20122013 concert season, the forty-fifth for the Orange County institution. Pacific Chorale will present three concerts in the Renée and Henry Segerstrom Concert Hall and one in Samueli Theater at Segerstrom Center for the Arts in Costa Mesa. Other season venues include St. Wilfrid of York Episcopal Church in Huntington Beach, Newport Harbor Lutheran Church in Newport Beach, and Meng Concert Hall at California State University, Fullerton. The singers of the Chorale will also appear as guest artists in three concerts presented by Pacific Symphony, including Handel’s Messiah with John Alexander conducting, Mozart’s Requiem, and Puccini’s Tosca, the second semi-staged opera presentation in the “Symphonic Voices” initiative. Pacific Chorale’s annual Choral Festival will return in August 2012, bringing together choral singers from the Southern California community and beyond in a free public performance of choral masterworks. San Clemente Cupcake Maker Teams Up With FAM to Help Feed The Hungry It is difficult to believe that hunger exists in Orange County. Most people think of hunger in terms of famine and mass starvation, terrible tragedies; not something that affects people every day in our own community. Hunger in our community is often more subtle. It’s a child who stuffs his pockets during lunch at school so he has food to eat at home in the evening. It’s a parent who is ironically overweight, because sugar and carbohydrateladen foods are often the least expensive at the local store. It’s a senior citizen who goes without food in order to buy medicine, further jeopardizing their already fragile health. The reality is that there are hungry people in Orange County. Family Assistance Ministries of South Orange County (FAM) was founded in 1999 by Ellen Gilchrist to continue to accommodate families that the Episcopal Service Alliance could no longer serve. They started with 135 and now they provide assistance to nearly 2,000 people every month; half of these are children and the elderly. The newest bakery in San Clemente, Oh For Sweets Sake at 111 Avenida Palizada in Old City Plaza, is teaming up with FAM, and will sponsor a canned food drive that will run July 1st through July 31st. Folks can bring a canned or boxed good and save $1 on a single treat or bring in 2 food items to save $3 on a six-pack. Donations received through the drive will help FAM feed those in need throughout South Orange County. Food items that are being accepted are cans of food of any kind and box food like macaroni and cheese, etc. (No glass items please) A contribution means much needed help, and hope, will be available to those who need it. Childhelp Drive the Dream Gala Raises $325,000 for Life-Saving Programs The third annual Childhelp Drive the Dream Gala – Orange County, held at the Orange County Fair Grounds partnered with Barrett-Jackson with a crowd pleasing concert featuring Marilyn McCoo and Billy Davis Jr. that raised $325,000 for services benefitting California’s children in crisis. The Childhelp Drive the Dream Gala brought out OC’s movers-andshakers and celebrities including Sandie Newton, Jen Lilley, Jodi Sparks and Vicki Gunvalson from the Real Housewives of Orange County. The theme was A Night of American Dreams with everyone wearing red, white and denim chic. The stage was decorated with a very large American flag hanging up for all to see with red white and blue colors adorning the table linens along with decorations exemplifying the patriotic spirit of America. After a scrumptious dinner of salmon, halibut and steak with risotto, baby carrots, then cheese cake for dessert, attendees enjoyed a silent auction and grooved to the R&B classics of Marilyn McCoo and Billy Davis Jr. The Mistress of Ceremonies for the evening was Sandie Newton with Julian Movsesian, owner of Succession Capital Alliance, as the event’s honorary chair. Special awards were given out at the event from Childhelp CoFounders, Sara O’Meara and Yvonne Fedderson. Julian and Aleen Movsesian were presented with the Childhelp Philanthropic Award, for their commitment and generosity towards children’s causes. The Childhelp Lifetime Award was presented to Patti Edwards for her hard work and dedication to Childhelp; she has been supporting Childhelp for 30 years. Special thanks also went out to Craig Jackson, Chairman and CEO of Barrett-Jackson Auction Company, for his continued support of Childhelp and for this successful event. Folks were also privy to a variety of live auction items. Low and Slow BBQ in Half the Time A Pro’s Guide to Creating Perfect BBQ the Fast Way
By Jason Dean For many people barbeque is intimidating. We’ve all seen the TV shows featuring professional barbeque cook-offs. The pros make barbeque seem like a closely guarded state secret. They all have their special super-secret dry rubs, homemade sauces, custom blends of hardwoods and smoking rigs that look like a nuclear submarine on wheels. These guys and gals want the home cook to think that good, really good barbeque can’t be achieved without devoting your entire life to the craft. They’re wrong. With the proper planning, if you have a few hours on a lazy summer morning, you can be enjoying succulent, moist, smoky pulled pork for dinner. No nuclear submarine required. Tools & Hardware Required: 1 Gas Grill (Simple & Consistent Temperature Control, don’t be bothered by BBQ snobs. They can’t taste the difference, either. ) Heavy Duty Aluminum Foil Hickory or Apple Wood Chips Meat Thermometer Grill/BBQ Thermometer Grocery List 1 Boneless Pork Shoulder, sometimes called Boston Butt 1 64 oz. container of Apple Juice (no sugar added) Soy Sauce
Garlic Powder Salt 1 container McCormick Smokehouse Maple Dry Rub 1 package light brown sugar BBQ Sauce of your choice The night before the big day, we need to do a little preparation. We’ll start by making a simple brine for the shoulder. In a large sealable container (big enough to hold the shoulder and about 1 ½ gallons of liquid), pour ½ gallon of hot water. Add ½ cup of salt. Stir to dissolve. Add ¼ cup of garlic powder and 1 cup of soy sauce. (You can play with this brine a little. If you want some sweetness, add some honey or molasses. Have fun, don’t be intimidated.) Once the ingredients are incorporated, add a couple of pounds of ice to chill the brine (don’t skip this step, food safety is very important). Add the pork shoulder and place the entire container in the refrigerator for 8-12 hours. The next day, cut a sheet of heavy duty aluminum foil and add a couple of handfuls of your wood chips. You can pre-soak them, if you’d like, but it’s not required. Roll the chips tightly in the foil and poke it a few times with a fork. Make a few of these packages (3-5, depending on the level of smoke you like in your food). Set the packages aside for now. Start-up your gas grill (make sure you have plenty of gas) and set the
flame to its lowest setting. We’ll be using indirect heat, so only turn-on one burner (most grills have two or three). Allow the grill to heat-up for about 15 minutes. While the grill is heating-up, remove the pork shoulder from the fridge. Pour-out the brine and lightly rinse the shoulder. Pat the shoulder dry with a clean paper towel. Now for the dry rub. For easy clean-up, lay a sheet of aluminum foil on your countertop. Place your Pork Shoulder on the foil and liberally apply your McCormick Smokehouse Maple to the outside of the shoulder. Massage the rub in every fold and crevice of the meat. To help make a luscious, sweet bark, next add the brown sugar. Expect to use about ½ pound to liberally coat the surface area of the pork. Allow the shoulder to sit at room temperature for about 30 minutes, while you proceed to the next step. This will give the rub a chance to blend with and draw-out some moisture from the shoulder, creating a nice crust. Grab one of your wood packets. Using tongs, place the packet near the flame of your grill. When the wood chips start smoking, place the dry-rubbed pork shoulder on the grill, opposite the flame (indirect heat, remember). Close the lid. Carefully monitor the temperature of the grill. You are looking for a temperature of around 235-255 degrees.
Adjust the flame accordingly. When the smoke packet is exhausted, you can remove it with tongs, and add another packet until your desired level of smoke is achieved. (4-5 packets is generally a good level of smoke flavor) Allow the meat to cook until an internal temperature of 140 degrees is achieved. Remove the shoulder from the grill/smoker and loosely wrap in aluminum foil. Place the meat in your pre-heated 350 degree oven and continue the cooking process until an internal temperature of 195 degrees is reached. (There are those who say that finishing the cooking process in the oven is “cheating”. To those I would ask to consider that there is no difference in the method used to heat the pork once the desired level of smoke is achieved. Provided we are using dry heat (versus boiling or frying), the method of simply reaching the proper temperature to allow the connective tissues to break down, rendering a perfectly pull-able hunk of pork, is inconsequential. ) After the pork has reached 195 degrees, allow the shoulder to rest on a countertop for another 20-30 minutes. You may then begin the process of pulling the pork, and snacking on perfect pieces of bark. Add your favorite BBQ sauce or not, the choice is yours.

del mar race track celebrates 75th season Story by Tom Weinum Photos by William Casper Del Mar Race Track, where the Turf Meets the Surf, is opening its 75th Anniversary season on Wednesday, July 18, 2012 continuing to September 5, 2012. Traditional Opening Day features the One & Only Truly Fabulous Hats Contest which in itself is an incredible event with 5 different categories of prizes. Since the sun never lets up during July, August and September, wearing hats is highly encouraged and inspired the stylish shade tradition. The celebrations are just beginning with many giveaways, the Summer Concert Series and featured stake races . To kick off the Anniversary Season, Saturday July 21 Del Mar will give $75 to every 75th person entering the park. Parking is $10 and Valet is $20. Admittance to the Stretch Run is usually $6.00 and $10.00 to the Clubhouse except on Opening Day when it’s $10 & $20. Racing is Wednesday through Sunday with Mondays and Tuesdays being dark days except Labor Day. Post time is 2pm except Fridays at 4pm. Weekends are Family Weekends with numerous family promotions. Every Wednesday is Free & Easy Wednesday with free Stretch Run admission, program and seat as well as half price beer, soda and hotdogs at the Stretch Run concessions. You must be a Diamond Club member which is FREE plus half price admission for the whole season. Senior Citizen (+62) members get in free on Thursdays. There is the Turf Club Membership which has a dress code and exclusive perks for members who want a more elite atmosphere. The Track offers its Summer Concert Series every Friday which is quite an entertainment bargain for free with paid admission to the Track and otherwise $20 after the completed race schedule that day. There are 12 concerts this season. Details of the races and celebrations as well as directions, transportation and prices are well outlined on the Del Mar website: dmtc.com Only 60 miles and an hour’s drive south of Orange County, Del Mar offers an entertaining getaway day for the whole family. The Track offers 2 gift shops with plenty of collectables, 5 fine restaurants with views of the Track and 5 snack bars serving burgers and fries, sausages, chicken, pizza and sandwiches. Take the tunnels leading to the infield of the track where there are concession Page 18
stands offer beers and cocktails, sodas and snacks as well as ice cream, coffee and cookies. There facilities available for groups of any number for any special event. Contact the Track for info and reservations. Besides the Track there are the Fairgrounds as well as several beaches and parks nearby. Taking the Train to Del Mar can be a wonderfully relaxing day trip. Amtrak and The Coaster as well as Metrolink Weekend specials from Union Station arrive at Del Mar Station with free shuttles to the Track. Del Mar was opened in 1937 with Bing Crosby greeting the first customers thru the gates. Bing and Pat O’Brien were partners in the Racetrack and by 1940 the Track became a hotbed of well known Entertainers/ Movie Stars of the time. The Track was closed during 1942 thru 1944 due to WWII. In 1947, the Santa Fe Railroad made Del Mar a stop from LA. In 1949 Willie Shoemaker was just beginning his legendary career at the Track. In 1956 Johnny Longden becomes the winningest jockey in history until he was passed by Shoemaker in 1970. In 1984 Trevor Denman takes over calling the races with his signature “And away they go.“ The Track continues to lead all tracks in the country with average daily attendance and wagers. There are 42 stakes races during the season topped off by the $1,000,000 TVG Pacific Classic (Gr. I) for those that enjoy betting on the horses. The Track facilities are wide ranging with available seating on 6 levels as well as trackside standing view on the infield and around the outside. Customers can view the horses in the Paddock area before they are paraded onto the track. A new added feature to your Del Mar experience is Del Mar Mobile. This new App for your phone brings customer service to the palm of your hand featuring on-track mobile wagering, streaming live races, race replays, Cybertote as well as a calendar of events.
