STARFISH EXECUTIVE CHEF JARVIS YUAN IN “ART OF COOKING” Fine “AmerAsian” cuisine is on the menu at the Festival of Arts on Sunday July 29th from 1pm-2pm. Executive Chef Jarvis Yuan of Starfish Restaurant brings his bold flavors and precision skills to the Festival green as the latest guest chef in the Festival’s popular special event series “Art of Cooking”. Starfish is the latest culinary concept by Nancy Wilhelm, founder of Tabu Grill in Laguna (half a mile north). The Starfish menu highlights ingredients from the mysterious and magical countries of Thailand, Vietnam, China, Korea and India, and Executive Chef Jarvis Yuan brings them together with the depth and finesse. Born in San Francisco to Taiwanese parents, Chef Jarvis grew up in a restaurant environment at a very early age, with both his father and grandfather owning restaurants. On July 29th he’ll give Festival visitors a taste – both figuratively and literally – of Starfish when he prepares and shares a variety of dishes with the audience. “Festival visitors love to get to know the geniuses behind their favorite Laguna Beach restaurants,” said Susan Davis, director of special events for the Festival of Arts. “This season’s Art of Cooking series has quickly become a favorite Festival event, and it’s just getting warmed up. We look forward to Chef Jarvis Yuan’s Asian-inspired demonstration.” Foodies rejoice every Sunday at the Festival of Arts as “Art of Cooking” continues. Every Sunday from 1pm-2pm, this special event series takes place on the Festival of Arts green and is free with Festival admission.

By Sylvia Cochran A California vacation would be incomplete without a few deep-sea fishing trips. If you are following in the footsteps of your fishing buddies, there are at least three facts they forgot to tell you. What should you know about Southern California deep-sea charters before setting foot on deck? Deep-Sea Fishing Trips Follow Peak Seasons As noted by Sportfish San Diego, deep-sea charters usually target fish species by following a calendar denoting seasonal peaks. For example, if you have your heart set on yellowfin tuna, schedule your California vacation between the months of July and October. Conversely, if big eye tuna is your game, then August and September are the months that charter boat operators predict greatest success. Deep-sea Fishing in Southern California Is Regulated The California Department of Fish and Game (DFG) provides up-to-date information on open, closed, and partially closed fisheries. Check the listing frequently, as ocean conditions or dips in the fish populations may lead to early fishery closures. Moreover, fishing for some species from shore is governed by rules that greatly differentiate from regulations applying to deep-sea charters. Case in point are rockfish, which may be caught by divers and shore anglers year-round, but may only be caught by boat anglers between March 1 and December 31. The changing rules, bag limits, tackle restrictions, and depth constraints are the reasons why tourists going on
deep-sea fishing trips prefer to use the services of deep-sea charters. Not All Deep-sea Charters Operate and Cost the Same - Newport Landing (309 Palm St. #A in Balboa, CA 92661; 949-6750550) will charge you extra if the cost of marine diesel goes above the $4 per gallon mark. Rod rentals start at $12.50, and a half-day deep-sea fishing charter costs $41.50 for anyone 13 and older; the cost is $34 for anyone 12 and under. - Davey’s Locker (400 Main St. in Newport Beach, CA 92661; 949-6731434) offers an adult package price for half-day charters, which includes not only the $46.50 ticket price, but also a rod rental, one-day fishing license, and tackle. The company charges extra for onboard fish cleaning.
- Marina del Rey Sportfishing (Dock 52 Fiji Way in Marina del Rey, CA 90292; 310-822-3625) specializes in twilight charters. These deep-sea fishing trips last from 6 p.m. to 10 p.m. and cost $39 for each adult. In this case, adult pricing also applies to youngsters 12 and older. Those under the age of 12 pay $25. - Dana Wharf (34675 Golden Lantern in Dana Point, CA 92629; 949-496-5794) offers a special deal for Tuesday anglers: 50 percent off ticket prices. Good on half-day and three-quarter-day trips, this yearround promotion makes it affordable to go deep-sea fishing if $44 or $59 respectively for an adult ticket is a bit steep. Youngsters over the age of 14 pay the adult ticket cost.

SOUTHERN CALIFORNIA EDISON CONTINUES SUPPORT FOR COURTNEY’S SANDCASTLE Southern California Edison (SCE) has awarded an $8,000 grant to Courtney’s SandCastle Charitable Foundation (CSC). This compliments an $8,000 donation received last year, bringing SCE’s total financial support for Courtney’s SandCastle playground to $16,000. The grant funding is dedicated to the interactive raised tide pool feature and Marine Biology education in the universally accessible playground located at 987 Avenida Vista Hermosa in San Clemente. Phase I of the playground opened successfully in February alongside the new sports park and aquatics center. The phase II sensory gardens expansion is still raising money for its development. “Phase I of Courtney’s SandCastle has been a huge success. It is the goal of the CSC Foundation to continue our good work to raise funds for the city park system to ensure that children of all abilities are given the opportunity for play together. Having dedicated partners like SCE will help us reach our goal,” said CSC Foundation President Don Glasgow. “SCE’s grant helps to spearhead future marine biology programs for our youth on-site at the playground,” Glasgow added.” For more information on how you can help complete Phase II, please email don@courtneyssandcastle.com, call (949) 481-0116, or log onto the Courtney’s SandCastle website at www.courtneyssandcastle.com to donate using the PayPal secure charging feature.

San Clemente Cupcake Maker Teams Up With FAM to Help Feed The Hungry It is difficult to believe that hunger exists in Orange County. Most people think of hunger in terms of famine and mass starvation, terrible tragedies; not something that affects people every day in our own community. Hunger in our community is often more subtle. It’s a child who stuffs his pockets during lunch at school so he has food to eat at home in the evening. It’s a parent who is ironically overweight, because sugar and carbohydrateladen foods are often the least expensive at the local store. It’s a senior citizen who goes without food in order to buy medicine, further jeopardizing their already fragile health. The reality is that there are hungry people in Orange County. Family Assistance Ministries of South Orange County (FAM) was founded in 1999 by Ellen Gilchrist to continue to accommodate families that the Episcopal Service Alliance could no longer serve. They started with 135 and now they provide assistance to nearly 2,000 people every month; half of these are children and the elderly. The newest bakery in San Clemente, Oh For Sweets Sake at 111 Avenida Palizada in Old City Plaza, is teaming up with FAM, and will sponsor a canned food drive that will run July 1st through July 31st. Folks can bring a canned or boxed good and save $1 on a single treat or bring in 2 food items to save $3 on a six-pack. Donations received through the drive will help FAM feed those in need throughout South Orange County. Food items that are being accepted are cans of food of any kind and box food like macaroni and cheese, etc. (No glass items please) A contribution means much needed help, and hope, will be available to those who need it. Your generosity makes a difference. Your donation makes a difference! Visit Oh For Sweets Sake at www.ohforsweetssake.com and Family Assistance Ministries at www.family-assistance.org

Fashion Show Promotes Heart Health with Guard A Heart The Clubhouse at The Strand in Dana Point which sits overlooking the beautiful Pacific Ocean was the perfect setting for Guard A Heart’s 1st Annual Fashion Show, raising more than $25,000 for the non-profit’s support of “Know Your Risk, Save a Life” campaign. The evening was filled with beautiful fashions, delicious food and awards were given to those in the community who have embraced their cause. With a crescent shaped moon hovering over drifting clouds, the mild weather made way for a tropical mood. The evening started off with guests arriving by limousines – they were shuttled to the event from the beach parking area. Arriving to the clubhouse they were greeted by a red carpet affair complete with a step and repeat wall and throngs of paparazzi waiting to take their photos. Entering the 4 level architectural masterpiece, guests were surrounded with tropical foliage and colorful floral sprays. Around 150 guests enjoyed the evening’s festivities which included live music by Hope and Hawaiian Artist Brian Pi’ikea Vasquez. Tasty drinks were donated by Tommy Bahama, Blue Ice Vodka, and Vegan Wine and mouthwatering appetizers donated by K’ya, Vintage Steakhouse, Stillwater Grill, Gemmells and Socially Sweet. The program started with USMC Color Guards Timothy Black, Angelo Sarni, Andrew Grothem and Cress Forester escorting Ms. America 2012 Nicole Rash who sang a lovely rendition of the National Anthem. The fashion show then started and featured the latest designs by Tommy Bahama Fashions, Marisa Kenson and Dr. Bahar Couture. Along with the group of models, Nicole Rash, Willie Gault and Vida Samadzai, actress and former Ms. Afghanistan strutted around the pool area in sophisticated panache modeling the fashion designs. The fashion show was under the direction by highly regarded fashion show producer Julie French. Several VIPs were awarded the Guardian of Hearts award for their philanthropic efforts on heart disease awareness and prevention. Dr. Bahar Sederati, lead internist with Bahar Medical Group; Dr. Douglas Harrington, CEO of Aviir Diagnostics; Susan Jeske, CEO of the Ms. America Pageant; Willie Gault, Founder of Athletes for Life, former America football wide receiver and Olympic athlete; and Lora Thomas, of Kyani were included in those honored. Members of the Guard A Heart Board of Directors including Hayward Sawyer, Jerry Nostadt, Tom Scuccimarra and Najib Khoury were in attendance and presented the evening’s awards. Other guests who attended included: Annie Nelson, founder of OC American Soldiers Network; Michele Berk, producer of Baywatch, creator, Soul Surfer, K-11; Debbie Durkin, Los Angeles Sustainable Producer; Janeane Bernstein Event MC and Radio Talk Show Host; and Damian Collins, entrepreneur. One hundred percent of proceeds from the event will go towards Guard a Heart’s “Know Your Risk, Save a Life” campaign, which uses donated funds to offer free cardiac testing for those who cannot otherwise afford it. Its mission to save lives is only made possible by countless volunteers within the community raising awareness of this highly preventable disease. Guard A Heart is a non-profit foundation dedicated to raising awareness of heart disease prevention by spreading the word to guard your heart and save your life. Cardiovascular disease is the leading cause of death in the United States. If individuals know their risk and take the necessary steps, the good news is that most cardiovascular disease is preventable. Although heart disease is typically diagnosed in adulthood, its roots are often found in childhood. Compelling research has shown that plaque buildup in the arterial walls begins very early in life and progresses through increasing degrees of atherosclerosis. Intervention strategies and healthy lifestyle changes to reduce heart disease risk should begin in childhood when reversal of the process is easier, not later in life when the disease is more fully developed. Guard a Heart Foundation provides funding for individuals who are unable to pay for cardiac risk assessments. Please visit www.guardaheart.org for more information Photos by: Brian Tierney Page 12

Fishing with Your Kids The Best Way to Have an Enjoyable Experience Fishing By Carl Kolchak Fishing with your kids should be a fun family experience, but it often can turn into a tedious chore. Tangled lines, a lack of action, and the suggestion of going fishing with your kids can turn from excited looks into bored faces in a hurry. Trying to keep up, especially if you have more than two children, can run a parent ragged, as he or she tries to make sure lines are in the water and everybody is having a good time. Here are some tips to make sure that fishing with your kids is a worthwhile and enjoyable adventure. First and foremost, you need to catch fish. Nothing creates the potential for boredom more than a fishing pole that just sits there with no fish biting! Pretty soon the children are wondering why they are there to begin with and fishing with your kids goes from a great idea to a very bad one in a matter of a few minutes. There are many things you can do to increase your odds of catching fish, giving the kids the excitement that will keep their interest. Go fishing with the kids in the early morning or late afternoon; these are the peak times for most species of fish to bite. During the summer, after supper is the optimal time to gather the equipment and head to the local fishing spot. If the kids are too young to bait their own hooks and cast out, you need to forget about doing any fishing yourself and concentrate on their needs. It’s no fun for a kid to stand around and watch you fish. Proper equipment is crucial to success when fishing with your kids. Do not bother with those “kiddie” poles that cannot stand up to the rigors of actual fishing. An inexpensive spinning reel and rod will do the trick; you aren’t going after world records, you simply want to catch fish. A spinning reel is the easiest type for a youngster to learn to cast with. If they are old enough to cast, make sure you put them in a spot way from trees and brush that will snag your child’s line and hook. Find an open area along the river bank or shore of the pond. Nothing is more frustrating while fishing than having to break your line, tie another hook on, rebait it and cast again, only to get caught up in the same branch or log! If you are fishing with your kids at a small pond, there are two species of fish that you can usually targetbullheads and pumpkinseeds. All you need for bait are night crawlers, which
you can catch yourself on any damp spring or early summer evening. Get the children involved in this, by letting them go out and catch them for themselves. All they need is a flashlight and a bit of coaching. Catching the worms will be almost as much fun as catching the fish. If you need to buy your bait, many convenience stores actually sell worms during the fishing season. Night crawlers can be kept in a container in your refrigerator for weeks; only be sure that everyone knows what is in that container to avoid unwanted surprises. Once you are at the pond, space the kids out so they will have their own areas to fish and avoid tangling their lines. You do not need to use floats or bobs. Have a number four snelled hook tied to the line with a pair of split shots secured about eighteen inches up from the hook. A snelled hook is a hook that comes already attached to a short piece of monofilament with a loop tied at the end. You can tie it right to your line; the number of the hook, in this case a number four, is an indicator of the hook’s size. The split shot will give you or your child added weight on the line, allowing the line to be cast further. Hook the night crawler on and cast out. Place a forked stick into the ground and lean the pole against it. When the fish bite, your child will see the line start to move. It will either begin to go out as the fish runs with the bait or there will be a distinct jerking motion that your child can
easily detect as the end of the rod as it snaps back and forth. Now is when you have your child pick up the rod and try to set the hook. Teach them not to simply reel the line in, but to give the line a good, quick yank in an attempt to hook the fish. They will be able to tell in an instant if the fish is on by the tension and feel of the line. Have them reel in, but not too fast, always being sure not to let the line go slack. Pumpkinseeds, a common pond dweller, are small in size, but their streamlined shape allows them to put up a great fight for their stature. They will zigzag to and fro in the water until your child can land them. They have sharp spines on their back fins that need to be avoided. It is important for your child to learn how to properly handle a fish once it has been caught, so as to be able to release it unharmed. Show your child how to hold the fish and remove the hook, teaching them not to be afraid of doing this. Until your child is old enough to handle this alone, you will be doing the removing, as well as putting on the worm and casting out. Bullhead will bite one right after another on a good day, and they can keep you running from child to child as they land them or lose them. Let your child either catch the fish or be responsible for it getting away, as this will help them learn what they did right or wrong. They will get a feel for when the fish are biting, when to set the hook, and how fast to reel in. Eventually, they will be able to hold the pole and
know when the fish are biting, without having to lean it against the stick. If you are going to be fishing with your kids at a river, add more split shots so you can cast out further. Rivers are more unpredictable in that there are many more species of fish that can be caught; trout, bass, white and yellow perch, suckers, pumpkinseed, and carp are commonly caught on night crawlers here in the Northeast. The potential is there for your kid to hook some decent sized fish; avoid the temptation to jump in and land the “big one”. Fishing with your kids at a river can be made even more fun by assigning each species of fish a point value. The more desirable the fish, such as a bass or trout, the higher number it is assigned. Have your kids keep track of how many points they have accumulated, with some sort of reward or prize going to the winner. Teach them to be sure to leave the pond shore or riverbank the way they found it, litter and garbage free. If the fish are not biting, a pair of binoculars can come in handy as there is bound to be something of interest around the water, whether it’s a kingfisher, a mallard, or a muskrat. Fishing with your kids can be great fun, enhanced by their learning to appreciate the outdoors and actually catching fish. Put yourself and your children in a situation where they have the best chance to succeed, and you and they will look forward to spending this time together long after they have grown up!

Rediscovering Riesling, the Noblest of Grapes By David White If you ask a sommelier to name her favorite grape, there’s a good chance she’ll say Riesling. If you’re surprised, then it’s probably because you associate Riesling with the sweet, simple German wines of yesteryear, like Blue Nun, Liebfraumilch, and Piesporter. These wines were -- and still are -- affordable and approachable. And they’ll always have fans. But they do a disservice to true Riesling. Fortunately, that could soon change. New York City sommelier and restaurateur Paul Grieco is on a mission to make sure that Americans give Riesling the respect it deserves. Grieco’s crusade began in 2008, when he announced a plan to focus on Riesling all summer long at Terroir Wine Bar in New York City’s East Village. In a “single-minded attempt to get guests to at least try this noble grape,” Grieco offered only Riesling as his by-the-glass white wine offering. As he tells it, “the staff was incredulous and the guests suspect, but with 30 different glass pours... we set upon a massive inspirational and educational scheme that was challenging and fun.” His campaign quickly took off. In 2010, 14 wine bars in New York joined together to create a Riesling Pub Crawl; several well-known Riesling producers visited the city; and Grieco organized a concert where only Riesling was served. Last year, about 200 bars and restaurants across the country took part by hosting events, offering specials, and agreeing to spread the gospel of Riesling. This summer, the “Summer of Riesling” attracted nearly 500 participants. (To see if anyone is participating in your community, head to www.SummerOfRiesling.com.) Misconceptions still abound, but consumers are starting to recognize that Riesling is a serious grape. Over the past several years, Riesling sales have steadily risen. And sommeliers are finding that consumers are extremely receptive to the grape. Riesling’s greatest strength is its versatility. First, there’s its geographical diversity. While its ancestral home is Germany, where Riesling has been grown in the Rhine and Mosel Valleys since the 14th century, it’s also the most planted grape in the Alsace region of France. The grape is also experienc-
ing a resurgence in the United States, especially in New York’s Finger Lakes. And there are sizeable plantings of Riesling in Austria, New Zealand, and Australia. There’s also its sweetness. Some Rieslings are syrupy and lusciously sweet -- and work as dessert. Others are bone dry, pairing best with raw fish, subtle cheeses, and other light dishes. Most fall somewhere in between, and are the perfect match for spicy Asian cuisine, like Thai and Indian. All are marked by high acidity, which is why it’s such an adaptable food wine. And all are extremely fragrant. It’s no wonder why so many sommeliers love Riesling. Don’t ever let Riesling’s sweetness trick you into thinking it’s not a serious wine. Sommeliers also evangelize about Riesling because it’s so good at capturing terroir, or a wine’s sense of place. In part, this is because most Riesling is fermented in stainless steel, so it isn’t manipulated through oak aging or other winemaking techniques. The grape is remarkably transparent -- German researchers have found a link between soil type and flavor in Riesling. Riesling grapes sourced from slate vineyards tend to produce wines with citrus aromas, while grapes sourced from limestone vineyards typically result in more tropical fruit aromas. As Robert Parker, the world’s most famous wine critic, recently explained, “If you want to talk about terroir, talk about German Rieslings or Alsace Rieslings, where the wines are naked -- there’s no makeup.” Even though Riesling sales have been rising, Grieco and other Riesling proselytizers still have their work cut out -- Riesling accounts for just 5 percent U.S. wine sales. But it’s not by accident that Riesling has long been known as the “noblest of the noble grapes.” So don’t be surprised if the next time you dine out, your waiter steers you towards a glass of Riesling. You should also be aware that the lien being auctioned off may be a junior lien. If you are the highest bidder at the auction, you are or may be responsible for paying off all liens senior to the lien being auctioned off, before you can receive clear title to the property. You are encouraged to investigate the existence, priority, and size of outstanding liens that may exist on this property by contacting the county recorder’s office or a title insurance company, either of which may charge you a fee for this information. If you consult either of these resources, you should be aware that the lender may hold more than one mortgage or deed of trust on the property. NOTICE TO PROPERTY OWNER The sale date shown on this notice of sale may be postponed one or more times by the mortgagee, beneficiary, trustee, or a court, pursuant to Section 2924g of the California Civil Code. The law requires that information about trustee sale postponements be made available to you and to the public, as a courtesy to those not present at the sale. If you wish to learn whether your sale date has been postponed, and, if applicable, the rescheduled time and date for the sale of this property, you may call 1-800-281-8219 or visit this Internet Web site www.recontrustco.com, using the file number assigned to this case 10-0115453. PHILHARMONIC SOCIETY OF ORANGE COUNTY ANNOUNCES FINANCIAL RESULTS OF 2011-12 SEASON
Yo Yo Ma
Itzhak Perlman
On Monday, July 23, the Philharmonic Society of Orange County announced an unaudited surplus of $15,810 for the fiscal year ending June 30, 2012. Reports show total revenues of $4,186,337 and total expenses of $4,170,527. The figures were released at the organization’s annual meeting, which took place at Soka Performing Arts Center. Officers for the 2012-13 season were elected at the board meeting immediately following: Sabra Bordas, Chairman; Douglas H. Smith, Immediate Past Chairman; and Noel Hamilton, Secretary/Treasurer. New board members include international banker Anthony Mastrangelo. The Committees board members include Toni Sobel, President; Karen Wolff, Past President; and Sandi Campbell, President-Elect. The annual meeting also featured a performance by the Philharmonic Society’s Musical Concierge, Dr. Randy Polevoi, who received his Doctorate in Musical Arts from the Page 18
University of North Carolina at Greensboro. Dr. Polevoi performed Schubert’s Impromptu Op. 90, No. 3 in G-flat major; Ravel’s Jeux d’eau; and Gershwin’s “Swanee,” as well as two pieces by Chopin: Nocturne in Dflat major, Op. 27, No. 2, and Prelude Op. 28, No. 16 in B-flat minor. The Society’s 2011-12 season included an unforgettable performance by violinist Joshua Bell leading the Academy of St. Martin in the Fields, the Orange County debut of acclaimed tenor Charles Castronovo, pianist Marino Formenti performing the complete set of Beethoven’s Diabelli Variations, as well as performances by an extraordinary roster of major American orchestras, such as the Chicago Symphony Orchestra with music director Riccardo Muti, the Baltimore Symphony Orchestra with trailblazing female music director Marin Alsop, the Cleveland Orchestra with music director Franz Welser-Möst, guitar virtuoso Pepe Romero and the

Los Angeles Philharmonic, and the New York Philharmonic with music director Alan Gilbert. The 2011-12 season also marked the 120th anniversary of the opening of Carnegie Hall and the 25th anniversary of Segerstrom Center for the Arts. In honor of its partnership with Carnegie Hall, the Philharmonic Society paid tribute to its East Coast partner throughout the season. Presented at Segerstrom Center for the Arts, this West Coast salute to Carnegie Hall’s 120th anniversary festivities featured select programming from when New York City’s cultural gem—Carnegie Hall—first opened its doors in 1891 with Peter Ilyich Tchaikovsky on its stage. As part of this celebration, the Mariinsky Theatre Orchestra led by conductor and music director Valery Gergiev performed four of Tchaikovsky’s beloved symphonies. The Society looks forward to the upcoming 2012-13 season. The season highlights include recitals by
world-renowned soloists cellist YoYo Ma, violinist Itzhak Perlman and pianist Louis Lortie. Returning to the Orange County scene are Gustavo Dudamel with the Los Angeles Philharmonic and Esa-Pekka Salonen with the Philharmonia Orchestra. Other highlights include renowned Beethoven interpreter Sir John Eliot Gardiner leading his Orchestre Révolutionnaire et Romantique and Monteverdi Choir with two blazing performances of Beethoven’s late masterpieces—the Ninth Symphony and the Missa Solemnis—the second of which will be heard in Orange County for the first time on period instruments, as well as the Grammy Award-winning Parker Quartet and the St. Lawrence String Quartet performing the first and last of Beethoven’s late string quartets, respectively. The Donna L. Kendall Classical Series will continue for its fourth season.
