Preheat oven to 350°F. Place unwrapped brie on a foil-lined baking sheet. Heat for 12 to 15 minutes or until brie is warmed through and soft to the touch. Meanwhile, bring dried cranberries and wine to a boil in a small saucepan. Add fruit spread, reduce heat to medium high and simmer 10 to 15 minutes, stirring often. Sauce is ready when liquid has thickened and coats the back of a spoon.

New Year’s Eve Champagne By Julie Wimmer Champagne is a New Years Eve staple. Most people, when they hear the word Champagne, think celebration, and New Years Eve is one of the biggest, if not the biggest, celebrations in the world. Whether you are a Champagne and/or wine drinker or not, it is always fun to toast the new year with a sip of the bubbly stuff. Lucky for us, there are different kinds to choose from depending on your palate and budget. What are the different kinds of Champagne? Champagne, as most of us know, is basically sparkling wine, however, there are different types. There is sweet Champagne and dry Champagne, just like wine. When the bottle claims the Champagne is “Extra-dry,” that obviously means it is dry, however, “Brut” means it is the driest kind of Champagne. The sweet bottles of Champagne are called “Sec,” which is sweet, and “Demi-Sec,” which is the sweetest. Picking a dry Champagne or a sweet Champagne can depend on taste, food or price. My father is a wine connoisseur. He has been buy-

ing, tasting and testing wine’s since before I was born. We even had a full wine cellar, although it was raw (dug out from the basement with a metal rack put inside,) in our house growing up. Suggestions from my father: Sweet wine and Champagne, according to my father, go with cheeses, red meat and saltier fair. Dry wine and Champagne are better paired with desserts, fruits and sweeter dishes like a chicken dish with a sweet sauce. Buying Champagne When my husband and I went on our honeymoon in Nantucket years ago, we decided to over-splurge one night on dinner. We’d heard a particular restaurant was worth it, and it was, so we even splurged on the Champagne we ordered to toast ourselves. Each glass, however, was $25. We picked out what was considered an expensive Champagne, and it was certainly delicious, however, that price is steep. You can get a great Champagne at $25 for the entire bottle. You just have to know how to pick it. There are many brands, Korbel, Taittinger , Veuve (with that familiar

yellow label,), Dom Perignon, Freixenet and many more that we have seen at liquor stores or heard about from commercials or magazine ads. If you are having guests who know nothing about wine or Champagne and are only going to have a sip at midnight, then it’s okay to go with a Spumante (which you can get for $6) or Freixenet. If you care about the taste however, do some research. Dom Perignon is high end, and yes, delicious no matter what type you pick, but a bottle can run you $100 and up. If you have that sort of cash and want to spend it, great, you are very fortunate. Taittinger has been rated in wine magazines and they have bottles, both dry and sweet, that start at $23. A nice pick for a dinner party or New

Years Eve. Veuve is very popular, however they also have great prices (like Taittinger) and many fantastic tastes to choose from. This brand is a great option for a large party on New Years Eve.

New Ways to Enjoy Chocolate Humans have adored the taste of chocolate for thousands of years. Though generally viewed as a sweet treat today, it likely started as bitter beverage drunk by the Mayan people. Chocolate has seen many iterations since then, including the beloved chocolate candy we know today; however, there are other ways to enjoy chocolate in addition to the bar or bonbon. Chocolate expert and historian Beth Kimmerle offers some new uses for chocolate that you might not know about. Ditch the preconceived notions. Think chocolate is just for ice cream and late night snacks? Think again. Cocoa powder, a trendy spice for savories, is great on meats, while cocoa nibs can be used as a substitute for nuts in everything from baked goods to salads. Cook with cocoa. Try cocoa butter in place of cooking oil. Not only does it add great flavor, but it also imparts extra smoothness to desserts such as cookies and brownies. Drink it (not just in hot chocolate). No doubt about it, mobile technology is transforming the way consumers live and businesses operate. Today nearly 5 billion people use mobile phones around the world, with 1 billion of those phones being smartphones. According to research conducted by venture capital firm Kleiner Perkins Caufield Byers, Americans check their smartphones more than 150 times a day. Thanks to mobile technology, businesses of all sizes and industries - from your local brick and mortar shop to your favorite online retail site - have the opportunity to easily reach people on the go. Take Accents Style for example. This clothing boutique in Arlington, Texas, creatively reaches mobile customers by hanging incentives in the dressing rooms, including a 10 percent discount on a purchase when customers “check-in,” and a free pair of gold or silver hoop earrings when they “like” Accents Style’s Facebook page. Lucy Huang, owner of the business, says that her mobile efforts are paying off. “Our posts get great responses. The check-ins via mobile are big incentives for our customers to come into our boutique,” she says. Mobile is a vital channel for you to reach your customers and will only continue to grow. While mobile is a great vehicle for businesses to market to their customers, many business owners don’t know where to start or think it’s too complicated to do well. Below are answers to some of the most-asked questions from local businesses on how to more effectively reach the right audiences on the go. 1. As a business owner, how do I market on mobile without using a ton of resources? I’m just one person and

don’t have the time. A business’ social presence is a free and easy way to connect with potential customers on mobile. That’s because what you do on your page instantly translates to mobile - and your customers are already there, waiting to hear from you. Of the 1.15 billion people on Facebook, more than 70 percent access the site from their mobile phone. Furthermore, people on the go are actively looking for businesses in their area: according to a recent Google study, 95 percent of smartphone users search for local information and 59 percent of smartphone users visited in-person after searching for local information. Given people on their phones usually have limited time and attention spans, it’s important to

create compelling and concise content including photos and short videos. For example, North Carolinabased barbecue company Bone Suckin’ Sauce promoted its Facebook photo post on mobile with the hook: “Which is better on the grill? Fish, chicken, vegetables, or steaks?” - to encourage conversation among fans. The company saw an 83 percent increase in online store sales as a result of promoting posts like these. 3. How can I manage my mobile marketing when I’m on the go, too? Tools like Facebook’s Pages Manager app or Hoot Suite’s Social Media Manager app allow you to manage your pages on the go, whether you post photos, respond to customers via comments, or create ad campaigns. You need to think mobile to grow your business Just looking at the growing number of times per day people access the Web on their phones, it’s no secret that mobile marketing needs to become an integral part of your consumer marketing strategy. So don’t wait any longer: Think mobile and you’ll be able to reach new customers and keep current customers returning.

New Things for New Years Day: the Challenge By Christi Bowers This is a challenge for you to do new things on New Years Day to start off the New Year right. If you just do anything, no matter how crazy, no matter how stupid, no matter how unlike you- you’re making your beginning to changing things for the better for 2014. You may think that nothing will change if you do something different, but you will never know until you try. And, the silliest things may be the ones that do the most good for you. I am going to give you a list of potential things you could do on January 1, 2014 (or January 1st of any year). Try any ten out of fifteen of these, or come up with some on your own. Brainstorm. Get together with a friend. Make it an activity for New Years day. Just do it, and come up with the ideas and then make them happen! 1. Call a relative you haven’t spoken to for the past year. Surprise them! Stop saying that if they wanted to talk to you, they would have called you. Stop worrying that they still hold a grudge for something you did ten years ago. Start the reconnection, and see what happens! 2. Visit a relative that you don’t

often visit. Call first, or just show up! So what if they aren’t there, at least you made the effort! If they are, they may be truly surprised and gracious to see you! 3. Go to an old folk’s home and offer to volunteer for an hour doing anything they need. If you have a talent, you could offer to sing for an hour or do magic tricks for an hour. 4. Go up to one person in Walmart or any store that you don’t know, and introduce yourself and make a new friend. If all the stores around you are closed on New Year’s day, then just take a walk in your neighborhood and talk to someone. This might be best done in daylight hours! 5. Call a charity and make a $10 donation. (You could give more if you can afford it.) 6. Say one nice thing to someone you care about. 7. Wear something totally out of context for yourself. If you always wear jeans, wear a dress. If you always wear coat and tie, put on some jeans. 8. Make a recording of yourself singing, and send it to a record company. If you have a different talent, do that. For instance, if you write poetry, send a poem to a

publishing company or submit to a new website. 9. If you’re a content producer, write an article for a subject you have never tackled, or a new category like finance. 10. Go New Years day carolling. Go to your neighbor’s houses and start singing songs outside their doorstep! Sing songs that celebrate the new year! 11. Take a drive down a road you have never been on before, and enjoy the view. 12. Instead of using lights, use candles all evening long once it gets dark on New Years day.

13. Say one romantic thing to your partner. You could even write a small poem. Who cares if it rhymes. Let me tell you that just getting any poem can melt someone’s heart, even if it doesn’t make any sense and isn’t anywhere near being a poetic masterpiece. 14. If you’re a child, offer to do the dishes. Do some chore other than what is normally asked of you. 15. Go outside and take a walk. Don’t come back until you learn at least one new thing about your neighborhood.

Easy to Create 5 Course New Years Day Dinner By Kimberly Sharpe Now that I have a family I enjoy spending New Years day cooking for my loved ones. I always like us to have a large meal that we can sit down and share together. It is a way for us to celebrate the day. Here is a guide to a simple to create five course meal that is affordable and fairly fast. 1) Ham You will need a ham that is a large enough for your whole family to enjoy. I prefer a boneless variety but I normally buy whatever is on sale. You will need two cans of Pineapple Slices and tooth picks. Save the pineapple juice that the pineapples are housed within in your refrigerator. You will need them to make potato’s. Take your ham and place it in a roaster pan. Now open your two cans of pineapple slices. Stick a slice of pineapple at various points all over your ham. Use the tooth picks to hold the pineapple in place. Place two cups of water into the bottom of the roaster. Now cover your roasting pan with the lid or tinfoil. Place your ham in an oven at around 385 degrees. Cook the ham until thoroughly done. This might take a long time if you buy a raw ham but if you purchase one that is already cooked you will be looking at only a couple of hours. Simply follow the directions on the ham. 2) Whipped Potato’s Peel as many potato’s as it will take to feed your family. Simply boil the potato’s until done. Now mash them by hand or with a blender. Place several tablespoons of butter and a cup of milk in the potato’s as you mash. I also like to chop up fresh chives to place within the potato’s. Page 6

3) Rolls I like to buy the rolls that are in a refrigerator section of your store. These frozen rolls you set out all day to let rise but you can use any rolls that you desire. Simple buy whatever you want or make your own from scratch. 4) Cream Corn with Sour Cream and Cornbread You will need one can of cream corn. A tub of sour cream. One box of the jiffy corn bread mix. And a bag of shredded cheese. Take the cornbread and prepare it according to the box of directions on the jiffy box. Now take the cream corn and poor over the top of the cornbread. Once this id done take the sour cream and frost the cream corn about an inch thick. Now completely cover the sour cream with the shredded cheese. Place into the oven beside your ham and cook for half an hour until

the cheese is completely melted and everything looks done. This is a wonderful and tasty fast side dish that is always a favorite in our house. 5) Sweet Gravy Once your ham is done, drain off the juice and mix it with the saved pineapple juice in a skillet. Add brown sugar to sweeten the mixture. Now take two tablespoons of corn starch and hot water. Mix this together in a cup and pour into the ham drippings, pineapple juice, and brown sugar. Bring this to a boil and stir until thick. This is your wonderful sweet gravy. This is great on your potato’s, ham, and even biscuits. This quick and easy dinner is sure to please your entire family. It is tasty and affordable. It also does not require that you spend hours in the kitchen preparing a decent meal for everyone.

What’s Your New Year’s Resolution? By David Robertson Christmas has past and the new years celebrations are upon us, but has all this over indulgence had an effect on our health? The new year is a great opportunity for kicking some of those bad habits and working off some of those gained extra pounds! Lets look at the most popular new years resolutions; Spending more time with those important to you Make plans to spend more quality time with friends, family and loved ones. Sometimes it just takes a moment to step back and re-evaluate what is important to you in life and to make sure you reflect this in your free time. There may be a need for big changes in your life to free up time to do this, maybe you’ve been devoting too many evenings to selfish activities. More exercise In these times, many of us don’t get enough regular exercise from our daily working lives. This can lead to long term health problems both physically and mentally, effecting your motivation, zest for life, well being, physical appearance, stamina, life expectancy and many more factors. Whether you decide to join a gym,

go for daily jogs, cycle or work out at home etc.. the trick is to keep at it. Try to find a way of exercising that is enjoyable to you and will fit easily into your daily life otherwise you may not stick at it for long. Dieting Everyone loves to indulge over Christmas with all that extra food in the cupboards. The New Year is the perfect time to re-evaluate your eating habits, so that the over indulgence in food and drink doesn’t turn into a habit that follows on into the new year. Enjoy life It’s very easy in this day and age to get caught up in the rat race and lose perspective of what we are doing on this planet. Sometimes we need to look at whats important to ourselves and begin making sure our efforts in life complement what you feel is important as an individual. Quit smoking Everyone knows, or should know the terrible effects that smoking has on the body. After a matter of weeks of quitting the habit the quitter will feel noticeably healthier physically, but the battle will still be a long and challenging one. Quit drinking Many people undertake a detox

around this time of year, or even go the full hog and give up completely. Many people over Christmas and new year drink more than they normally would and this alone can be a reason to start a detox. The effects of alcohol on the liver can be fatal when in excess and even on a small scale drinking effects sleep and energy levels. Get out of debt Christmas affects all of us financially and for some this may have pushed the bank balance into the minus. In other cases the bank balance may have already been in the minus, either way this is a great time to make those changes needed in order to get your life back on track financially. Learn something new Learning or doing something new

is a great way to start the new year, this could be something that puts you in good stead in time to come, such as doing evening classes or it may be something just for personal enjoyment such as horse riding.

Segerstrom Center’s Candlelight Concert Gala Raises $2.2 Million

Segerstrom Center for the Arts celebrated the 40th anniversary of its Candlelight Concert fundraiser; during the annual holiday gala, nearly 400 donors and friends gathered to support the Center and honor the past chairs of the Candlelight Concerts. This year’s event raised $2.2 million. True to its name the entrance, lobbies and Segerstrom Hall glowed in candlelight and the evening’s entertainment featured Rock and Roll Hall of Famers The Beach Boys. Betty Huang served as chair with Dee Higby, vice chair. Piaget was this year’s Presenting Sponsor. Center chairman Larry Higby welcomed the guests by noting that the money raised “will help to ensure the continued success of Segerstrom Center for the Arts … support that will help the Center continue in its mission of bringing the world’s finest artists to Southern California for all to enjoy … and support that allows the Center to continue expanding its nationally renowned education programs, which bring the magic of the performing arts to over 300,000 students, families, and teachers each year.” Terrence W. Dwyer, the Center’s president, thanked underwriters, among them Presenting Sponsor Piaget and Diamond Sponsors Jane and Jim S.L. Huang, with Elizabeth An, Gordon Clune and Elizabeth Segerstrom Driscoll, S.L. and Betty Huang and Elizabeth and Henry T. Segerstrom. (Photo by Steve Dawson) The “event” began as guests walked through the Center’s candlelit Arrival Gardens and past Sonora Elementary’s Bell Choir to enter Segerstrom Hall’s lobby. Sonora Elementary, located in Costa Mesa, utilizes many of the Center’s Arts Teach programs. The reception offered the first Candlelight Concert silent auction – two surfboards signed by the Beach Boys and donated for the occasion by Deborah and Larry Bridges. Deborah Bridges and Mark Johnson were the lucky winners of the auction. The champagne bar was provided by Elizabeth and Henry T. Segerstrom and Champagne by Shanaz and Jack Langson and Betty and S.L. Huang. As always, Segerstrom Hall was transformed into a spectacular ballroom, with tiers covering the 1,000 seats of Segerstrom Hall in graduated tiers for dining. And as the music by The Beach Boys revved up following dinner, dancing overflowed from the dance floor onto the tiers and through the tables. A highlight of the evening was a medley of carols sung the 13 past Candlelight Concert chairs attending accompanied by thirty participants from the Center’s Six Days of Broadway program. This education program is a summer musical theater camp that offers classes in musical performance, monologue interpretation, audition technique, scene work, dance and more. Tony Award® nominee and Broadway/film star Erin Dilly led this past summer’s 2013 Candlelight Chairs - Dee Higby, Ruth Ding, Betty Huang (Photo program along with Broadway veterans Stephen Buntrock, Danny Gurwin, by Steve Dawson) Hank Stratton and other guest instructors. The inaugural fundraiser to help raise money to build a major performing arts center in Orange County was held in a vacant Kresge five-and-dime. It was transformed into an elegant ballroom with the use of candles. Since then, the annual gala has been called Candlelight Concert. Each event includes a cocktail reception, dinner, dancing and a concert by a major artist. These include such greats as Diana Ross, Frankie Valli and The Four Seasons, Jay Leno, Natalie Cole, Tony Bennett, Diana Krall, Kenny Loggins, Harry Belafonte, Johnny Mathis, Donna Summer and Smokey Robinson. The Center is an acclaimed arts institution and multi-disciplinary cultural campus. It is committed to supporting artistic excellence on all of its stages and engaging the entire community in new and exciting ways through the unique power of live performance and a diverse array of inspiring education programs. As Orange County’s largest nonprofit arts organization, the Center owns and operates the 3,000-seat Segerstrom Hall and intimate 250-seat Founders Hall, which opened in 1986, and the 2,000-seat Renée and Henry Segerstrom Concert Hall, which opened in 2006 and also houses the 500-seat Samueli Theater, the Lawrence and Kristina Dodge Education Center’s studio performance space and Boeing Education Lab. Just Say No to the New Year’s Onslaught of Fad Diets and Lose Weight By JC Curtis What’s your holiday weight gain damage? Did you put on 5, 10, 15 pounds? You’ve probably already been plotting how you can lose those pounds as quickly as you’ve put them on. There’s a right way and a wrong way to go about it. Here’s why you should stay away from those new years fads, and how you can achieve real weight loss instead. - A feast for the weight loss industry. This is the time of year the weight loss industry waits for you! What are they hoping for? They’re hoping you’ve done a whole lot of eating from thanksgiving through new years. The more you gain, the more they know you’ll be looking to pay for a quick fix. They’re not looking for you to put on a lousy 5 pounds, but 10 pounds or more, they’re dancing in their glory. They’re the only ones hoping for a fatter country coming out of these holiday. They’ve been waiting to unveil their ad campaigns that have been prepared months ago, set up to prey on your weaknesses. Those companies invest big money into studying your habits, and the emotions behind weight issues. They aren’t designed to help you, they’re designed to get your money. They advertise promises, but they don’t offer the long-term solution people need. So, if you’ve gained weight, you’ll be making a big mistake by buying into those fads. What will happen, is you’ll keep struggling to lose those same pounds, because you’ll keep losing and gaining. - Quick fixes don’t work. If you get a promise of something that seems “to easy,” you better consider any consequences. You hear about get rich schemes all the time. They advertise a program, and “all you need to do is pay $49.99 and you’ll be rich tomorrow!” Most of us know that hard work and saving is how we can make it rich, but many of us still are quick to charge up their offer on our credit card. We all want to instantly succeed, but quick fixes often leave us standing in the same place, or worse. How many times have you paid for something useless, and nothings changed? When it comes to weight loss, quick fixes don’t work because they make us do things, like starve, cut out our favorite foods, do things like only drink liquids, etc., and we end up miserable. They slow down our metabolism, teach us unhealthy habits, and they confuse us, even going so far as causing eating disorders for some. If you want successful long-term weight loss, you need to make sensible changes, like starting an exercise program, Page 14

eating the right amount of calories, and boosting you metabolism by eating 5-6 small meals each day. Quick fixes assure you’ll be a yo-yo dieter, and that’s what you need to change to ever see success. - Get back to winning habits. If you’ve gained a few holiday pounds, it’ll be as easy as going back to your normal habits and getting a little bit of extra exercise to shed those pounds. Most people get all stressed out when they feel their pants a bit tighter, but don’t fret! If you’ve been at a pretty good weight before the holidays, you were doing something right to begin with, so get back to it. Do all the things you were, but perhaps add in a few extra walks throughout the week. Refrain from giving into trying any fads, because you’ll end up all mixed up about weight loss, and heading into something that’s unhealthy only over a few pounds. Don’t let fads ruin what was once a healthy weight for you. Begin today by remembering all the things that had you at a healthy weight. Start the day with breakfast, go for walks, plan your meals, eat enough, journal write, whatever helps you feel good and supports health is what a winning weight loss plan is about. - Change is what healthy weight loss takes. Have you been struggling to lose weight for a longtime? If you have, I bet you’re hoping this will be the year you lose it. Many people start out the new year wanting to change something about themselves or their lives, and what better time to start. If you have a lot of weight to lose, you especially need to stay away from fads.

If you don’t, the only thing you’ll have in the new year are disappointments. To achieve long-lasting weight loss, you’ll need a long-term approach, and that means broader changes for success. You’ll need to make many changes to how you’ve been eating, to your exercise, to your environment, to your habits, and you’ll need to get educated about what long-term success is really about. Most of the population is failing at weight loss because they’re confused, and they get tricked into believing weight loss can come quickly. People believe it because it’s what they want to hear, and they buy into anything that preaches hope. How many advertisements do you see each day that boast “quick weight loss?” Plenty! There’s always got to be a reason behind it, and that’s to get your attention, and for you to empty your pockets. Research plans that are free and offer a sensible approach. The best weight loss plans are those that are free, and have your best interest at heart. Search online, you’re sure to find great websites. Also, look through magazines at your local bookstore for weight loss tips. - Slow and steady proves a winner. When we follow a plan that doesn’t deprive us and isn’t overly restrictive, we get the results we want. The secret to weight loss, is to follow a plan we can follow for the long-term. By taking it slow, we take the time to get used to the changes we’re making, and as we stick with each change, we’ll keep losing weight. Many people try to lose an unrealistic amount of weight each week, and they wonder why they don’t get

their intended results. If you make one change each week, you’ll be improving your health, as long as those changes are sensible. In the long run, your time and efforts will be rewarded, as long as you’re following steps that are proven winners. Try crazy schemes, and you’ll keep losing and gaining, and the struggle will continue. Changes you make, should be those things you can stick with over your lifetime. If you make a change that you can only “sacrifice” and do for a week, what do you think will happen? You’ll throw that change away in a heartbeat once the week is over. Most fads put you right back to where you started, or far worse off. If you’re patient, give change the time to become habit, keep building on those changes, you’ll have lasting results. We all wish it were as simple as a packaged box that says, “follow this, this, and this,” but it’s not. If we’re serious about losing weight, it takes a lifestyle change, not just a shortterm new years resolution to do it. We need to take action and change from what we’ve been doing, because there are no miracles. We’re responsible for our health and our choices, and we should never reach for unhealthy measures in our quest for weight loss. This is a great time to try to loss weight, because what better way to start the new year out fresh, with new goals, and a willingness to get healthier. Stay away from fads, learn about sensible weight loss plans, and you’ll achieve long-term weight loss.

New year, new you: Five easy tips to get more fiber For many, the new year provides a reason to examine the changes we would like to make for a healthier life. This January will be no different for the many Americans who will think about improving their diet. Focusing on fiber intake is one important and easy modification to consider. Research has shown that fiber has a wide range of health benefits, but Americans struggle with getting their daily dose. The FDA recommends consuming 20 to 30 grams of fiber per day, but less than 3 percent of Americans actually do so. “When it’s New Year’s resolution time, most people focus on foods they should avoid to make their diets more healthful,” says registered dietitian Dawn Jackson Blatner, brand ambassador for Sunsweet Growers Inc., the world’s largest handler of dried fruits. “I love talking to people about adding fiber to the diet because it flips the typical healthy eating resolution on its head. Instead of focusing on what you can’t eat, it’s all about selecting those better-for-you foods like prunes and prune juice to add into the diet. It’s a more positive way of looking at health.”

People typically associate fiber with digestive health, and fiber does play a critical role in regulating digestion. In addition to digestive health, the benefits of fiber include: * Helping to keep you feeling fuller longer, which can aid in weight management * Lowering cholesterol, specifically with soluble fiber found in foods like apples, oats and beans * Reducing the risk of developing heart disease and diabetes According to Blatner, adding fiber into the diet can be easy and flavorful with just a little planning. Ideally, she recommends choosing foods with natural fiber rather than overly processed foods with added fiber. Natural fiber sources give you the added bonus of vitamins, minerals and healthy phytochemicals. Here are Blatner’s five quick tips to increase natural fiber intake this new year: “Veggify.” Add vegetables to your omelets, sandwiches, pizza and pasta. Add veggies dipped in lowfat dressing at lunch and start dinner with a little garden salad with chopped prunes for extra flavor. Bean boost. Add beans and lentils

to up your fiber intake. Add black beans to tacos, garbanzos to salads, kidney beans to stir fries, white beans to pasta dishes and lentils to ground beef before making burger patties. Fruity snack time. On-the-go portable fruits such as apples, pears and oranges are good betweenmeal choices. For Value, Avoid the Familiar HAPPY GRAPES

By David White ‘Tis the season to party. With 2014 just a few weeks away, holiday party season is in full swing. So hosts everywhere are assembling menus, fretting about guest lists, and blowing their budgets on decorations. Fortunately, selecting wines doesn’t have to be stressful or expensive. Just avoid the familiar. As New York University economics professor Karl Storchmann recently explained to Food & Wine, “[The market] adds a premium for certain places or grapes.” Consider Champagne. Under European Union trade laws, wine can only be sold as “Champagne” if it comes from the Champagne region of France and is made in the “traditional method,” which is a very expensive process. While real Champagne is a treat, it’s expensive -- even “budget” options

cost upwards of $35 per bottle. Like Champagne, America’s iconic wine regions are pricey. Napa Valley makes some exceptional Cabernet Sauvignon. But it’s nearly impossible to find a decent bottle for less than $35. Sonoma County’s Russian River Valley produces some lovely Chardonnay, but most cost $25 or more. The list goes on. Trophy regions are almost always expensive. Fortunately, the world is awash in affordable, great-tasting wine. As Storchmann explained, just as some regions come with a built-in surcharge, others come with a builtin discount. Finding such wines is as easy as opening up your palate to unheralded regions. Storchmann should know. In addition to teaching at New York University, he edits the Journal of Wine Economics. So he spends quite a bit of time studying these issues. With sparkling wine, there are plenty of affordable options so long as you’re willing to forgo Champagne. Two of my favorite sparklers from America, the entry-level bottlings from Roederer Estate and Domaine Carneros, can be found for less than $20. More affordable options are found outside the States. For around $15, Graham Beck in South Africa makes a delightful bubbly. If you’re only looking to spend about $10, consider Cava, a Spanish wine that’s

produced just like Champagne but using native grapes. After all, no one is going to ask if they’re drinking “real” Champagne while jockeying for position under the mistletoe. Wines from Spain and South Africa are worth considering when stocking up for a party. When I’m asked to help select a crowd-pleasing white, I often suggest Albarino, a high-acid, aromatic variety grown across northwest Spain. Good Albarino is almost always a hit, as it’s appealing to almost every white wine drinker - it has qualities that remind me of Riesling, Chardonnay, and Sauvignon Blanc. For around $15, I’m particularly fond of the offering from Paco & Lola. But affordable and delicious options abound. When I’m asked to help select a crowd-pleasing red, I typically steer people towards Spanish Grenache. Most Spanish vintners produce Grenache that’s juicy and approachable, like Pinot Noir, but ripe, like Cabernet Sauvignon. So it appeals to almost every red wine drinker. For around $15, Bodegas Borsao’s Tres Picos is an amazing value. Of course, it’s important remember the crowd. While values are easier to find with obscure grapes from outside popular wine regions, some guests might be terrified of grapes with

names they can’t pronounce. This is where South Africa crushes it. Last year, I spent some time with Andre Shearer, a South African entrepreneur who began sharing his nation’s wines with the world when the last remaining Apartheid laws were abolished in the early 1990s. Today, his company, Cape Classics, is the largest importer of South African wines to the United States. “The value of South African wines is extraordinary,” Shearer explained. “The past few years have actually been very good for us, because Americans are seeking value... and American consumers are open minded and willing to try wines from unfamiliar places.” To most Americans, South Africa remains an unfamiliar place. So when I’m asked to select budget friendly Chardonnay and Cabernet Sauvignon, I almost always look to South Africa. The entry-level offerings from Glen Carlou, a winery in Paarl, South Africa, are always impressive. Wine is agricultural. So if you and your guests crave the iconic, you don’t have a choice. Pacific Symphony/Nadja Plays Mendelssohn Singing lines of sweet emotion transform into a joyful and abundantly virtuosic showpiece—Mendelssohn’s Violin Concerto—which soars in the hands of electrifying violinist Nadja Salerno-Sonnenberg, who also leads Pacific Symphony from the concertmaster’s chair for the remainder of the program. but enough to spot what I think is the biggest element of their playing that needs help,” says SalernoSonnenberg. “And that is what I try to do. Hone in on that one thing and try to make a difference.” Mendelssohn, a musical genius from childhood, wrote some of his best known works in his teens, but completed his last orchestral composition, the Violin Concerto, at age 36, six years after famously hearing the opening line in his mind. He wrote to his friend Ferdinand David, “I would like to write a violin concerto for you next winter. One in E Minor runs through my head, the beginning of which gives me no peace.” Mendelssohn wrote the three movements to be played attacca, as one continuous flow of music. The sweet melodies and sensitive scoring tug at the emotions, while leaving the audience uplifted by the bravura display of this virtuosic showpiece. Being the first female composer to win the Pulitzer Prize for Music in 1983, Zwilich combines skill and inspiration, illustrating a hopeful spirit that gives her a unique musical voice. With a vigorous exterior and ravishing lyricism throughout, “Prologue and Variations” was described by New York Daily News as “a taut and succinct work tackling many deep emotions that all come across with confident expressive authority.” “If I could only use one word to describe the Zwilich piece, it would be...cool,” says Salerno-Sonnenberg. “I love that it demands everything from a string player...variety of sound, accuracy, rhythmic pulse. It is extremely rewarding to play and to listen to. The ‘Carmen’...well, it’s ‘Carmen’! Maybe the singularly best arrangement I have ever heard. Not only are you hearing all the spectacular tunes from that amazing opera, but this arrangement is ultra moving and exciting. Knocks it right out of the ballpark.” Born in Moscow in 1932, Shchedrin composed the “Carmen” Suite for his wife, Mayya Plisetskaya, who was the prima ballerina of the Bolshoi Ballet at the time. Based on Georges Bizet’s opera, “Carmen,” he created a flamboyant, fun and enduringly popular piece, filled with Spanish dance rhythms requiring four percussionists playing a huge array of instruments, timpani and strings. Salerno-Sonnenberg is highly regarded for her compelling performances, daring interpretations and dedication to her craft. Her 2013-14 engagements include a

five-city North American recital tour with pianist Anne-Marie McDermott, and orchestral engagements around the U.S. She leads New Century Chamber Orchestra’s 22nd season which includes the world premiere of Michael Daugherty’s new violin concerto, “Falling Water,” written for her. In May 2014, Salerno-Sonnenberg releases the 11th recording for her record label, NSS Music, an allcommissions CD with New Century Chamber Orchestra, featuring works by Clarice Assad, William Bolcom, Daugherty and Zwilich. In addition, she has hosted a “Backstage/Live from Lincoln Center” program for PBS, appearing in the PBS/BBC series “The Mind,” even talking to Big Bird on “Sesame Street.” She was the subject of the 2000 Academy Awardnominated film, “Speaking in Strings,” an intensely personal documentary on her life, which premiered at the Sundance Film Festival. The film was released in theaters nationwide and subsequently premiered on HBO’s Signatures channel in 1999. Now in his second season, Gutiérrez is the assistant conductor for Pacific Symphony and serves as music director of Pacific Symphony Youth Orchestra. He served as associate conductor of the National Symphony Orchestra of Costa Rica from 1998 to 2011, and is the founder and director of the internationally known chamber

ensemble “Trombones de Costa Rica.” Gutiérrez has guest conducted for the Kalamazoo Symphony Orchestra in Michigan, the Honduras Philharmonic, the Tatui Summer Festival Wind Orchestra and MIMU Festival Chamber Ensemble in Brazil, the University of Texas Symphony Orchestra in Austin, and Costa Rica’s National Symphonic Choir. Gutiérrez has served as assistant conductor of the Austin Symphony Orchestra in Texas; music director of the University of Texas University Orchestra; music director and conductor for the 2011 University of Texas Opera Center production of Mozart’s “Così fan Tutte” and prepared the national and international casts of Puccini’s “Madama Butterfly” for the Costa Rican National Lyric Opera in 2007.
