Christmas Dessert Ideas Recipes for Your Christmas Dessert Table By Heather Shockney Everyone loves the smell of cookies baking in the oven and pies cooling on the counter, what goodies will you be making for your dessert table this Christmas? Here are a few suggestions of some tried and true dessert recipes. First we will start with the cookies, this can be a great way to spend a snowy day with your children, and they will love to help you bake. A favorite Christmas cookie is the Sugar Cut-out cookie they are easy to make and lots of fun to decorate, here is a recipe for them from the food network, I use it every year and they turn out great. 4 cups sifted all-purpose flour 2 teaspoons baking powder 1 1/2 cups sugar 2 eggs 3/4-cup butter (1 1/2 sticks) 2 teaspoons vanilla extract Colored Icing, recipe to follow Preheat oven to 350 degrees F. In a bowl, stir together flour and baking powder. In another bowl, beat butter with sugar until fluffy and light. Beat in eggs and vanilla. Stir in flour mixture, a third at a time to make stiff dough. Divide dough into 4 pieces. Roll out a portion of cookie dough to 1/4 inch thick. Cut out shapes using cookie cutters. Place on lightly greased or nonstick cookie sheets. Bake until lightly golden, about 10 minute, rotating baking sheet halfway through cooking time. Cool completely on pans about 5 minutes, transfer to cooling racks and cool completely before decorating. Colored Icing: 1/2 cup confectioners’ sugar 1 1/2 tablespoons water 3 to 4 drops food coloring, plus more as needed Colored sprinkles, optional In a small bowl, mix sugar and water to form a thick, smooth icing. Stir in food coloring to reach desired shade. Drop icing onto cookies using a small teaspoon and smooth with the back of the spoon. Make additional bowls for additional colors. Additional multi-colored sprinkles can be added on top of icing before it dries for more decorative cookies, if desired. Next a Family Favorite is the Peanut butter Blossoms. 48 Hershey’s Kisses 1/2 cup shortening 3/4 cup creamy Peanut Butter (I always use Jiff but you can use whichever type your family prefers) 1/3 cup granulated sugar 1/3 cup packed brown sugar 1 egg 2 tablespoons milk 1-teaspoon vanilla extract Page 2

1-1/2 cups flour 1-teaspoon baking soda 1/2 teaspoon salt Granulated sugar 1. Heat oven to 375°F. Remove wrappers from chocolates. Hide them or there won’t be any left when you need them. 2. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and the brown sugar; beat until fluffy. Add egg, milk and vanilla; mix well. Stir together flour, baking soda and salt; slowly beat into peanut butter mixture. 3. Shape dough into 1-inch balls. Roll in granulated sugar, I use sugar thats been colored red and green, place on ungreased cookie sheet. 4. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around the edges. Remove from cookie sheet .Place on rack to cool . This recipe will make about 4 dozen cookies. What dessert table wouldn’t be perfect without some delicious pies? These can be the traditional pumpkin and pecan or you can add a few new ones to the bunch. Here is a great recipe for a easy Chocolate Mousse pie 1 Oreo pie crust (pre-made from store) 2 boxes instant chocolate pudding 1 tub of cool whip Chocolate chips to garnish Mix up pudding according to box for pie, with half the tub of cool whip with mixer. Put into crust then cover with remaining cool whip. Add chocolate chips on top to garnish and refrigerate till ready to serve. You might want to consider making two of these they usually go fast. The next dessert is for a Low Carb pumpkin Cheesecake; this would be great for your guests that are watching their weight. Low Carb Pumpkin Cheesecake Butter - enough to grease the pie pan 1/2 cup of ground nuts (I prefer pecans, you can probably use any nut) 1/4-tsp cinnamon 1/2 tsp Splenda 16 ounces cream cheese, softened 1/2 cup Splenda 1/2-tsp vanilla extract 2 eggs 1/2 cup canned pumpkin 1/2-tsp pumpkin pie spice mix Heavily grease the bottom and sides of pie pan. Mix together nuts, 1/2 tsp Splenda and cinnamon Place nut mixture into greased pie

pan and swirl it around to coat the bottom and sides of pan. Pour out any nut mixture that doesn’t stick, set pan aside. Beat the cream cheese, Splenda, and vanilla with electric mixer on medium speed. Add eggs and beat until well blended. Separate out one cup of batter and mix it with the pumpkin and spice. Pour plain batter into the nut crust Top with pumpkin batter. Bake at 350F for 30-40 minutes or until center is almost set. Refrigerate overnight. Here is a great recipe for Peanut butter Fudge this can be made and placed in tins to store or given for gifts. Peanut butter fudge 1 cup of sugar 1 cup of brown sugar 2 tablespoons butter 1/2 cup of evaporated milk Few grains of salt 3/4 cup of mini marshmallows Heaping cup of peanut butter 1 teaspoon of vanilla Cook sugar, butter, milk, and salt to soft ball stage (234-238 degrees F). Add marshmallows and peanut butter and immediately remove from heat. Do not stir. Cool to room temperature. Add vanilla. Beat until mixture is creamy, thick, and will hold its shape when dropped from a teaspoon. Pour into well-buttered shallow pan. Cut in squares. Another great candy recipe is the Oreo Balls They are great in tins and given as gifts as well. Oreo Balls 1 20 oz package Oreo’s (crushed) 1 8 oz package cream cheese (softened) 1 package White Almond Bark Combine crushed Oreos and cream cheese. Shape into balls Refrigerate to harden or 15 to 20 minutes in freezer

Dip balls in melted almond bark Put on metal cookie sheet Refrigerate to harden You may want to include some different types of beverages to go with the desserts; here are some that will go great with all the Christmas goodies. Sweet Hot Buttered rum 2 cups firmly packed brown sugar 1/2 cup butter 1 pinch salt 3 sticks cinnamon 4 whole cloves 1/2 teaspoon ground nutmeg 2 cups rum whipped cream ground nutmeg Put all ingredients, except the rum and cream, and nutmeg into crock pot. Add 2 quarts hot water. Stir well. Cover; cook on low for 5 hours. Stir in rum. Top individual servings with whipped cream and a dash of nutmeg. Another Christmas Favorite is Hot cocoa 3 tablespoons unsweetened cocoa powder 1/4-cup sugar 4 cups milk 1/4-teaspoon vanilla Miniature marshmallows Blend cocoa and sugar in a small bowl. In a medium saucepan, heat milk to scalding. Mix about 1/3 cup of the hot milk into the cocoa-sugar mixture, then pour cocoa mixture into hot milk in the saucepan; stir until well blended. Stir in vanilla. Serve with mini marshmallows and a candy cane dipped in the cup. 4 servings These recipes along with all your family favorites will make a great dessert table at your Christmas dinner. You could also have the entire guest bring their favorite dessert and everyone can try new recipes.

piecrusts just waiting for a filling. This is primarily the type of pies that we will be creating in because they are quick and easy and you can really make them festive Christmas pies with minimal effort. Chocolate peppermint pie You will need a chocolate cookie piecrust, cool whip, vanilla pudding, peppermint flavoring, and pieces of peppermint candy. We are going to fill the piecrust with a nice mint flavored vanilla pudding, and spread cool whip on the pie. To make this pudding, you simply need a few drops of peppermint flavoring, which will be added to the vanilla pudding, creating a nice peppermint flavor. Sprinkle tiny pieces on crushed peppermint candy on top of the cool whip. This makes a very festive Christmas dessert for holiday get-togethers where you need a dish to pass. Christmas Reindeer Tracks You will need a chocolate cookie piecrust, cool whip, vanilla pudding, mini chocolate chips, and one plain Hershey’s milk chocolate bar. Mix the mini chocolate chips into the vanilla pudding, and pour this mixture into

the chocolate cookie crust. Set the pie into the refrigerator so the pudding can thicken for about half an hour or so. Spread cool whip over the top of the pie, and shred the plain Hershey’s milk chocolate over the pie, this makes a very delicious and festive Christmas dessert. Christmas Chocolate Banana You will need a chocolate cookie piecrust, cool whip, banana pudding, mini chocolate chips, a banana, and one plain Hershey’s milk chocolate bar. Into the chocolate piecrust, slice the banana, arranging the slices so they line the bottom of the pie shell, and slides if you have enough. Mix the mini chocolate chips into the banana pudding, and pour on top of the sliced bananas. Set the pie into the refrigerator so the pudding can thicken for about half an hour or so. Spread cool whip over the top of the pie, and shred the plain Hershey’s milk chocolate over the pie. With these Christmas pies, you will be the talk of the party. No one will believe that that these Christmas desserts only took a short time to make.

Mission San Juan Capistrano will kick off the holiday season by hosting its annual “Christmas at the Mission” on Saturday, Dec. 7 from 5:30-8 p.m. A magical night under the stars will allow revelers to visit the Nativity scene, meet St. Nicholas, and enjoy the beauty of the Mission’s gardens, all lit up for Christmas. Christmas at the Mission is held in conjunction with the City of San Juan Capistrano’s annual Tree Lighting ceremony and community-wide holiday celebration. Events and activities include live music performances throughout the Mission, ringing of the historic bells, Santa’s Workshop with cookie and ornament decorating for kids, photos with St. Nicholas, Native American Basket Weavers, tours of Serra Chapel led by volunteer Mission docents, the Mission Treasures exhibit, the Mission Clubhouse, and food vendors serving tamales, pizza, hot cocoa, sweets and more. Some of the performance groups include the Dickens Carolers, Chamber Singers, Orchestra Musicians, Ballet Folklorico, Mariachis and more. There will be a special Mission Store Trunk Show in the Historic Sala Building featuring handcrafted Mission religious jewelry and rosaries. Guests can visit the Sala to meet the artist, Arasely Chelsea Rios, purchase rosaries and other specialty gifts and enjoy special sampling opportunities. Al Jarreau at Breakfast with Gary and Kelly Radio on TV Taping Gary Bergeson with Al Jarreau, Kelly Bennett and Bart McHenry Photos by Smooth Jazz Family Saddleback Colleges radio station KSBR 88.5FM and the City of Mission Viejo presented seven-time Grammy Award winner Al Jarreau at the McKinney Theatre located on the campus of Saddleback College. Jarreau appeared on KSBR Radios Breakfast with Gary and Kelly radio on TV taping to a crowd of around 350 attendees. The three-hour broadcast was live on the radio. The television broadcast will air on the City of Mission Viejos MVTV Channel 30 Tuesday through Sunday evenings at 8:30 p.m. and also on Saddleback Colleges SCTV Channel 39 Friday and Sunday mornings at 11:00 a.m. throughout the Cox Communication cable system in South Orange County. During the one-hour interview, Jarreau told stories of his career, how he started in San Francisco teaming up with Jazz great George Duke, making his first album, and his love of music. He especially talked to the students in the crowd encouraging them to learn all they can and experience other forms of music and inspiring them to live their dreams. Jarreau also wowed the crowd singing five songs and giving the audience a peek into his music-making scat abilities with Larry Williams accompanying him on piano. Williams has been with Jarreau for more than 30 years, and has played with George Benson, Herbie Hancock, Patti Austin, Paul McCartney, Michael Buble, Michael Happy audience members await their turn in line with CD’s in hand. After the show, Jarreau stayed 90 minutes signing autographs and posing for photos with guests who waited in line; talking to each person and making that connection with those who love his music. There was also KSBR merchandise for sale outside the McKinney Theatre along with a big screen TV for the live broadcast as well as coffee and muffins provided by Its a Grind in Mission Viejo. Around 40 volunteers and staff made the event possible. Other guests appearing on Breakfast with Gary and Kelly were Bart McHenry, Dean of Fine Arts and Media Technology for Saddleback College and Mission Viejo Mayor Rhonda Reardon. McHenry talked about the different programs available for students of the Fine Arts Division from music to theatre while Reardon shared with the audience her charitable program that helps keeps children and teens away from prescription drugs. Another guest on the show was the Vice President of Research and Development at the KSBR Test Kitchens for the “Cooking for Kelly” segment - actually, it was comedian Tom Riehl who got the audience into the Thanksgiving spirit by showing Gary and Kelly how to properly stuff a chicken for a holiday meal. His antics really gave everyone a good laugh! Breakfast with Gary and Kelly will welcome next month saxophonist Eric Marienthal who is one of the most respected and versatile musical talents on the scene today. His long and distinguished career has included stints Bob and Susan Strong from Mission Viejo pose with the great Al with legends Al Hirt and Chick Corea. Pineapple Upside Down Cake Yield: 8 servings Serving size: 1 slice Canola oil cooking spray 1/3 cup packed dark brown sugar 4 to 5 pineapple rings (about 1/4 of whole pineapple) about 1/2 inch thick 2 tablespoon chopped crystallized ginger 1 1/4 cups all-purpose flour 3/4 cup whole-wheat pastry flour 3/4 cup granulated sugar 1 teaspoon baking powder 1 teaspoon baking soda 1 cup low-fat buttermilk 1/2 cup canola oil 2 large eggs 1 1/2 teaspoon vanilla extract Preheat oven to 350°F. Generously spray bottom of 9-inch, nonstick layer cake pan with canola oil cooking spray. Sprinkle evenly with brown sugar, then arrange pineapple rings on top in one

layer. Sprinkle chopped ginger pieces in spaces around pineapple rings and in their centers. In medium bowl, whisk together all-purpose flour, whole-wheat flour, sugar, baking powder and baking soda. In another medium bowl, whisk together buttermilk, canola oil, eggs and vanilla. Mix wet and dry ingredients until combined. Pour batter over pineapple-brown sugar mixture and bake until top is lightly browned and wooden skewer inserted into center of cake comes out clean, 40 to 50 minutes. Let cool for 5 minutes, then run knife around cake edges and, using oven mitts, invert cake onto large serving plate. Note: Whole-wheat, all-purpose flour can be substituted for whole-wheat pastry flour. 1/2 teaspoon confectioners’ sugar Preheat oven to 350°F. In 9-inch round baking pan, whisk together whole-wheat pastry flour, all-purpose flour, sugar, cocoa powder, baking soda and salt. In small bowl or measuring cup, combine water and vinegar. Make well in center of flour mixture in pan and pour canola oil and vanilla extract into well. Pour water-vinegar mixture over top of flour and then stir well to blend all ingredients.

Bake until set and toothpick inserted into center comes out clean, about 30 to 35 minutes. Place cake on rack to cool in pan. Once cool, sprinkle with confectioners’ sugar. Frozen Grasshopper Pie Yield: 8 servings Serving size: 1 slice Canola oil cooking spray 1 1/4 cups finely crushed chocolate wafer cookies or chocolate graham cracker crumbs 3 tablespoons canola oil 4 cups mint chip reduced-fat ice cream or frozen yogurt, softened 1/3 cup chocolate shavings Preheat oven to 350°F. Spray 9-inch pie dish with canola oil cooking spray. In medium bowl, mix cookie crumbs and canola oil until combined, then press mixture into prepared pie dish. Bake until fragrant, 6 to 8 minutes. Allow to cool completely. In large bowl, place softened ice cream and mix well until uniform texture forms, similar to soft-serve ice

When ready to serve, heat knife under hot water and use it to cut pie into slices. Note: An ice cream or frozen yogurt without green food coloring is recommended. To make chocolate shavings, use a vegetable peeler to peel strips from a thick block of chocolate. If the chocolate crumbles as you make the shavings, put it in the microwave at 10-second intervals to soften it slightly. Mini cheesecakes - the perfect little something sweet Pear-Ginger Cheesecakes with Gingersnap Crust Ingredients: Cheesecake ½ cup water 125 mL 8 dried pear halves, chopped (dried apples can be substituted) 1/3 cup crystallized ginger 75 mL 3 packages (8 oz/250 g) low-fat cream cheese, room temperature 2 eggs, lightly beaten ¾ cup granulated sugar 175 mL Crust 40 gingersnap cookies, processed to form crumbs (about 2 cups/500 mL) 3 Tbsp canola oil 45 mL 2 Tbsp brown sugar 30 mL 2 Tbsp granulated sugar 30 mL 2 tsp salt 10 mL Instructions: Preheat oven to 325 °F (160 °C). In medium saucepan, bring water, dried pears and crystallized ginger to simmer over medium heat. Reduce heat to low, cover and simmer for about 12 minutes until water is absorbed and pears softened. In food processor, process pears and ginger until course paste forms and cool about 10 minutes. While paste is cooling, make crust. To make crust: combine all crust

ingredients. Spray miniature cheesecake pans with canola oil. Divide crumb mixture evenly among mini cheesecake pans and press firmly into bottom. Bake crusts for 8 to 10 minutes until golden brown around edges. Remove from oven and set on wire rack and cool completely. Reduce oven temperature to 250 °F (120 °C). While crusts are cooling, continue making cheesecake filling. In large bowl, beat cream cheese and gingered pear paste together on low until light and fluffy. Beat in eggs. Add sugar and beat until smooth, frequently scraping down sides of bowl with spatula. Transfer filling into liquid measuring cup or pitcher and pour filling into crusts, dividing evenly. Place in oven and bake about 30 minutes until filling is set. Remove

from oven and set on wire rack about 1 hour to cool completely. Then cover with plastic wrap and refrigerate for at least 4 hours before removing cheesecakes from pan. To serve, garnish cheesecakes with crystallized ginger. Tips: The cheesecakes can be also

made in non-stick mini muffin tins that are sprayed well with canola oil and/ or lined with cupcake holders. Dried pear halves may be substituted with dried apples. Yield: 24 mini cheesecakes.
