The History of Valentine’s Day: Who was St. Valentine? By Scott Brodie This history of Valentine’s Day is shrouded in mystery. While every February 14, Valentine’s Day, couples send romantic Valentines, no one knows the true history of Valentine’s Day. Many believe the history of Valentine’s Day can be found in the question, “Who was Saint Valentine?” The Roman Catholic Church has three saints named Valentine, or Valentinus. Of these three, the history of Valentine’s Day supposedly honors the first Saint Valentine. So, who was Saint Valentine? Saint Valentine was a third-century priest in Rome. He was martyred. Any further answer to, “Who was Saint Valentine?,” is speculation. Yet, there are three theories about the history of Valentine’s Day. Each attempts to answer, “Who was Saint Valentine?” Who Was Saint Valentine? A Priest Marrying Couples. According to this theory on the history of Valentine’s Day, Saint Valentine was a priest during Emperor Claudius II’s reign. Because Claudius II believed single men were better soldiers than married men, he outlawed marriage for young men. Saint Valentine did not adhere to Claudius II’s proclamation, however, and continued to perform marriages in secret. When he was

discovered, Saint Valentine was imprisoned and sentenced to death. Who Was Saint Valentine? A Priest Freeing Christians. Another theory about the history of Valentine’s Day contends that Saint Valentine was sentenced to death for free Christians from Roman prisons. This is the least romantic history of Valentine’s Day, but it portrays Saint Valentine as a heroic and strong figure. Who Was Saint Valentine? The First Valentine. According to this romantic theory of the history of Valentine’s Day, Saint Valentine sent the first valentine. He supposedly fell in love while imprisoned. Perhaps it was the jailor’s daughter who he loved. Whoever the lady was, he sent her a letter signed, “From your Valentine.” The truth is, no one can answer, “Who was Saint Valentine?” Since it remains unknown, the question for today is not, “Who was Saint Valentine?” Rather the question is, “Who is Saint Valentine now?” Whoever he was, Saint Valentine is remembered as a strong, heroic and romantic figure. It is no wonder lovers have been sending love letters in his name, as valentines, ever since the Middle Ages.

capistrano Mission PROJECT to lure back the swallows Mission San Juan Capistrano’s enterprising Swallows Vocalization Project is now underway for the fourth and final season, an effort to lure the popular birds onto the mission grounds. The Swallows Vocalization Project incorporates speakers that play swallows courtship calls and songs in an effort to lure the swallows, which migrate from Argentina each March before returning to Argentina in October. The number of swallows nesting at the mission has diminished over time because of urbanization, which has given the swallows more options to build their mud homes. The Swallows Vocalization Project idea came from swallows expert Dr. Charles Brown, who was summoned to the mission in 2012 from the University of Tulsa, where he is a professor of biological sciences. Dr. Brown’s idea has worked. Swallows that flew overhead and might not have explored the mission and considered it a place to nest are now descending to the mission grounds, where they can build nests. “The recording is of courtship songs that males use to attract females. And males would be attracted too because they are very social birds,”

Dr. Brown said. “It’s a matter of attracting them in; we know they are overhead and in the area.” The project involves a systematic program of playing the courtship calls and songs a few times a day, when the weather is good and during the times the swallows would be foraging. Dr. Brown has suggested that this be the final year of the Swallows Vocalization Project so that he can incorporate a new phase in attracting the bird. Stayed tuned for Dr. Brown’s next idea. Five Decadent and Easy Chocolate Desserts for Valentine’s Day By Freida Thomas I can’t think of anything better than treating your sweetheart with a homemade dinner and an easy decadent dessert this Valentine’s day. I’ll leave the dinner up to you, but below are five sweet and delicious suggestions for desserts to make for your Valentine this year! Simple but Yummy Brownie Sundae The key to making this common dessert special is to cut your favorite baked brownies into individual hearts with a 3 ½ inch heart shaped cookie cutter. To assemble, use a white plate and squirt some raspberry sauce in a decorative pattern. Place a scoop of strawberry ice cream on one side of plate. Lay your heart shaped brownie up against the ice cream. Make the mood more romantic by slowly feeding this delish dish to your valentine! Chocolate Fondue What would Valentine’s Day be without chocolate fondue? Serve while the fondue is warm. Load up skewers with fruits of all kinds: bananas, strawberries, pineapples, apple slices, pear slices, and marshmallows. This dipping dessert is only limited by your imagination. Page 6

The possibilities are endless! Brownie Heart Cupcakes This is simple yet will convey your love on Valentine’s Day. Bake your favorite cupcake and brownie recipes. Simply take 2 frozen waffles, spread 1 side of each waffle with butter. Place sliced bananas, and 1 oz. of chopped chocolate in between the non-buttered sides of the waffles. Heat the waffle Panini, buttered sides out, in a medium skillet, covered, until he chocolate melts and the waffles are crisp and done, about 2 minutes per each side! Chocolate Drizzled Nuts with Sea Salt If your Valentine is a nut lover (notice I didn’t say nut), but a lover of nuts, try this sweet and salty recipe to

have with a glass of wine after your romantic dinner. You can make this with a single nut of your choice or a can of lightly salted mixed nuts. I prefer the mixed because I’m a lover of all nuts! Line a rimmed cookie sheet with parchment paper and spread out 2 cups of nuts on it. Next melt ¼ pound of semi-sweet chocolate, chopped in 30 second intervals, stirring after each interval, until the chocolate is

melted and smooth. Drizzle nuts with the chocolate and ½ teaspoon flakey sea salt. Place the cookie sheet with the nuts in the refrigerator until set, about 15 to 20 minutes. Break apart into pieces before serving. Any of these five easy yet decadent recipes will be appreciated by a chocolate lover, especially if they are made and presented with a kiss and an “I love you.”

A Night with Gatsby Benefits Local Foster Youth at the 2015 Anaheim Ducks Jubilee Photos by Ann Chatillon Ducks team captain Ryan Getzlaf with Tracy and Mike Bilek Flapper dresses, top hats, and tails abounded at The Colony House in Anaheim in support of Orangewood Children’s Foundation. A sold-out crowd of 500 guests joined the Anaheim Ducks for their Great Gatsby style “Ducks Jubilee” casino night, bringing a roaring ‘20s retrofit to the annual fan-favorite costumed cocktail event. Ducks players, dressed in tails, top hats, and gold bow-ties and pocket squares, mingled with the crowd, posed for photos, and joined guests at the gaming tables. The event committee was led by Orangewood’s 44 Women for Children auxiliary members Kelly Bozza and Stacey Kinney, and the title sponsor was The Klein Family (Bill and Jenny Klein and daughter Whitney were in attendance). Guests enjoyed ‘20s style cocktails which included the Gin Rickey, Manhattan and The French 75. There was also a champagne tower, various buffet stations, catered by 24 Carrots Catering and Events the buffet stations located throughout the venue had a Great Gatsby Inspired menu which included International cheese display, grilled petite lamb chops, shrimp cocktails, phyllo-encrusted spinach stuffed mushrooms, gorgonzola crusted beef tenderloin crostini, mashed potato martini station and a carving station with prime rib. At the floating dessert display guests enjoyed Salted caramel tart, crème brulee spoon, a yummy deconstructed snickers in a Ducks player Corey Perry, Michele Ryan and Tim Ryan (Ducks EVP shot glass, chocolate pot de crème, mini lavender bars, key lime tarts and & COO and Orangewood board member) pecan bourbon tarts The musical entertainment, Blazing Pianos, got the crowd out on the dance floor, dancing to cover tunes from the ‘20s to today. A jazz trio provided themed background music for guests in “The Captain’s Club” casino room, where Vegas-style games of Blackjack, Craps and Roulette were offered. An extensive variety of silent auction items were available for bidding. Guests could also purchase tickets for five opportunity prizes. Up for grabs were Anaheim Ducks Autographed Wine Package Item; a basket with an Anaheim Ducks #10 Corey Perry Autographed Jersey, Edmonton Oilers #4 Taylor Hall Autographed Jersey and four (4) Plaza Level tickets to the April 1, 2015 Anaheim Ducks vs. Edmonton Oilers game. There was also a Toshiba Slim LED 40” TV; a Strider Paddleboard package from Jimmy Styks including one paddleboard, adjustable paddle, leash, fin and storage bag with 2 paddleboard sessions/ 1 Kayak During a brief program, Ducks Head Coach Bruce Boudreau welcomed the crowd. Boudreau drew laughter and applause when he commented on his top hat and tails attire, saying, “It’s been suggested that I bear a striking resemblance to a board game character. But, no, I am not the Monopoly man!” Orangewood CEO, Chris Simonsen, thanked the crowed and the Ducks organization for supporting the Foundation, saying “Thanks especially to Ducks player Matt Belesky, event co-chair Stacey Kinney and Ducks the Ducks players who are so generous and gracious with their time at player Devante Smith-Pelly tonight’s event.” Also in the crowd were Ducks co-owner and long-time Orangewood supporter, Susan Samueli (founding chair of the Orangewood’s 44 Women for Children auxiliary and also an Orangewood board member); Ducks players including Team Captain Ryan Getzlaf, NHL 2012 All-Star Corey Perry, Cam Fowler, and goalie Frederik (Freddy) Andersen; title sponsors Jenny and Bill Klein and daughter Whitney Klein; Kelly and Jim Mazzo; past 44 Women board chair Lupe Erwin; and Orangewood board member Sandi Jackson and husband Doug Jackson. Founded in 1981, Orangewood Children’s Foundation is one of the leading providers of services to current and former foster youth. Their mission is to provide life-changing prevention and intervention programs for abused and neglected children, young adults and at-risk families through one-on-one support and community partnerships to end the cycle of child abuse. Last year they helped over 1,500 children and teens with programs that prepare them to make a successful transition from the foster care system to independent adulthood. Preheat oven to 350°F. To prepare baking pan, brush inside of a Bundt pan thoroughly with melted butter. Liberally sprinkle powdered cocoa over butter, then turn upside down and tap to remove excess cocoa. In small bowl, sprinkle baking soda over dates. Add water and set aside for 20 minutes. In large bowl, beat butter, sugar and vanilla until creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, fold in date mixture and flour until well mixed. Batter will be thin. Spoon mixture into prepared pan. Bake for 35 to 40 minutes or until a skewer inserted into the

center comes out clean. Allow to stand for about one minute, then carefully turn onto a plate. To make the caramel sauce, set saucepan over medium heat and add sugar, cream, vanilla and butter. Cook, stirring often, until sauce comes to a boil. Reduce heat to medium-low and simmer for 2 more minutes. While cake is still warm, use a wooden skewer to make holes all over the top of the cake. Pour half of the warm sauce over the warm cake. Garnish with glace cherries, if desired. Let stand for 10 minutes before serving. Cut into slices and serve with remaining sauce. Serve immediately.
