Recently the State Legislature completed its annual 45-day session. As an elected official, I followed numerous bills that could affect North Ogden. Several bills were proposed that would have decreased the ability of the city council to govern North Ogden, such as requiring higher density in all zones in the city, limiting how the city generates revenue, and allowing developers to hire their own building inspectors. Fortunately, many of the bills did not pass, however, such bills give insight into the thought process of some of our legislators. It is true that cities are subdivisions of the State, but I believe elected officials closest to their constituents have a better handle on dealing with the issues.

The recent legislative session caused me to ponder what is the purpose of local government. Before I identify what I believe the purpose is, let me explain the form of government in North Ogden. North Ogden operates under the SIX Member Council form of Government—five council members and a mayor. The mayor serves as the chief executive officer and only votes on matters in the event of a tie and cannot veto actions passed by the City Council.

essential services, and maintaining a sense of order and stability. The local government’s charge is not to provide social programs. In performing its duties and passing ordinances the overriding intention of local government is to contribute to the well-being of its citizens. To accomplish this, North Ogden provides other services after first utilizing its resources for public safety and essential services.

I strongly agree that public safety is

Essential services provided by North Ogden include providing safe drinking water, sewer services, and trash collection. Plowing and maintaining our streets is a service that contributes to the well-being of our citizens as it allows access throughout North Ogden. I commend our public works department for its commitment to meeting the obligation of the city in providing essential services. Elected officials also have an obligation to be fiscally responsible and to remember many in our community live on minimal incomes. This must be top of mind as we find the balance of fiscal responsibility, providing essential services, and creating a feeling of community that contributes to the well-being of our citizens. Thus, such things as recreation and parks, although secondary in nature, are also part of the city budget. We must always remember: “Government is by the people and for the people.” (Abraham Lincoln)

Our City Council at Work

The City Council held its regular business meetings in January. Here are some of the significant actions that were taken:

♦ The City Council was presented with Resolution 02-2024 amending the Consolidated Fee Schedule. Notably, an increase in fees at the North Shore Aquatic Center was proposed. The Resolution passed unanimously.

♦ The Sanitary Sewer Superintendent presented the Council with the 2024 Wastewater Planning Program which was collectively approved.

♦ Ordinance 2024-04, correcting inconsistencies and aligning Title 11 Land Use Code and North Ogden Public Works Standards regarding the Site Triangle Clearance Area was passed unanimously.

♦ An agreement with NRCS for the Federal Grant Funding Program for the Major Project 2550 Relocation was presented to the City Council and was approved.

♦ A Grading Permit Expansion Agreement to include rockcrushing within the Northview Estates Subdivision - Phase 9 was presented, discussed, and ultimately approved.

♦ The City Council was asked if they would be willing to contribute $2,440 for the military banners to be hung. The contribution was approved.

♦ Due to Lieutenant Crowther and Hindes retiring, Sgt. Boyette and Sgt. Child have been promoted to Lieutenant. Officer Mueller, Officer Holmes, and Officer West have been promoted to Sergeant.

♦ The Prominence Point development will begin soon and will be held to compliance with what is entailed in the Development Agreement. The South Towne study is complete and will be coming before the Council in the future to be adopted into the General Plan. Building and Business Licenses are up to date.

♦ Construction has begun at Lomond View Park for the Pickleball Courts, and the playground design has been completed. Maintenance of the sports fields is ongoing.

♦ Nate Allen With Utah Approves presented on approval voting, highlighting its benefits, and addressing concerns. The Council agreed to draft a letter supporting the exploration of approval voting for municipalities.

♦ The Council discussed amending fencing ordinances but decided to monitor the situation before making changes.

♦ Ordinance 2024-05 amending Hillside Protection Zones Accessory Building Lot Coverage was passed unanimously.v

♦ The Council approved participation in the Utah Rivers Council Rain Harvest Program with 100 barrels for a maximum of $2800.00 and a limit of 2 barrels per residence.

♦ The Council approved the purchase of a Weber County surplus property for future development.

♦ City Manager/Attorney Jon Call provided detailed updates on various city projects, including plans for a play feature at Waterworks Park and progress on infrastructure projects like the water reservoir and pickleball courts. He also mentioned a major piping project and clarified funding commitments, aiming to enhance city amenities while addressing community needs.

♦ Mayor Berube took a moment to acknowledge Chief Quinney's retirement, recognizing his dedication and service to the community, emphasizing the challenges associated with being a Police Chief. He expressed gratitude for Chief Quinney's leadership and care for his officers.

—Lieutenant Clark Crowther—

As one of the longest-serving employees, Lieutenant Clark Crowther’s retirement after 44 years marks the end of an era but also provides an opportunity to celebrate his contributions and legacy. Clark was hired in the public works department in 1980 and later moved into law enforcement, joining our police department at the age of 21.

LLaw enforcement has had a profound impact on his life, and in his words, “it has shaped my life, more than anything, because it has become my life.” Police work often involves a wide range of emotions, from moments of triumph and happiness to challenges and heartache. “Many of my memories aren’t things that can be put into print,” says Lieutenant Crowther. While some experiences may defy description or remain deeply personal, the memories associated with training his fellow officers are significant and meaningful. Watching their successes and growth is something he’ll never forget.

Lieutenant Crowther worked his way through the ranks, from Patrol Officer, Detective, Patrol Sergeant, Detective Sergeant, to his position at retirement, Investigations Lieutenant. He even functioned as Interim Chief! His involvement in community outreach programs

like teaching DARE at the local schools made a lasting impact on many of the students, as some still introduce themselves today and remind him that he was “Officer Friendly” more than 30 years ago.

With over 3,000 hours of law enforcement specific training, his knowledge, experience, and dedication will be missed. Lieutenant Crowther is sincere and selfless and served his time with high standards and morals. He has enjoyed his career at North Ogden Police Department, working with great citizens and colleagues throughout the years. He’s had a lifetime of great and wonderful experiences and memories to take with him, as well as a few he’d rather forget. He’s looking forward to retirement, with plenty of time with his family, especially his grandkids. If you know Clark, you know that he’ll be enjoying his retirement somewhere by a lake.

Thank you for sharing your career with us, Lieutenant, You will be missed so very much and never forgotten!

Continuing Improvements to Lomond View Park

If you have visited the Lomond View Park recently, you may have noticed construction crews and materials being staged there. Pickleball courts and a new playground would be the reason behind all of that.

If you or anyone in your family likes either of these two activities look no further, you’ve found the park for you. Lomond View Park is getting four new pickleball courts and a new playground with some awesome features and components, such as a multi-level play structure, free play components, and swing bays. Families from far and wide will be traveling to come see what Lomond View has to offer. With these new additions this park will surely have something for everyone in the family to enjoy. These new features should be open to the public in the summer of 2024. The rest of the park is still open to the public.

North Ogden City asks that you use caution when visiting the park as construction crews will be working to complete the installation for everyone to enjoy.

Ready to Serve– New Public Safety and Justice Court Building

The open house and tour of the new Public Safety and Justice Court Building was a success with many visitors from all over Weber County!

The fully functioning building is equipped with roughly 16,000 square feet of office space, 4,000 square feet of hallways and main lobby, and 7,000 square feet of storage. It was built to handle our build-out as our city grows, with some extra space for additional officers and support staff.

Designed to hospital standards and to withstand most disasters, the building features backup generators with backups to the backup generators to ensure continuous operation during emergencies.

The safety of our team is our number one priority. Many enhanced security features provide additional safety to our police department, justice court judge, and support staff.

These security measures not only protect individuals within the building but also contribute to peace of mind among our team.

As the Emergency Operation Center (EOC) for our city, this new facility can accommodate 80 computers and individuals, and in the event of a crisis, will play a crucial role in coordinating emergency efforts.

City committee meetings will be held in this new space, allowing City Hall to be utilized longer by adding more office space, hopefully getting an extra 20 years out of our current building before needing expansion.

From the initial planning stages as ideas were conceptualized to the final implementation where plans were built, everyone’s contribution has been invaluable to the project’s success.

Trent started with North Ogden City in 2004 when he was hired as a sanitary sewer maintenance worker. When the supervisory position in that department opened, Trent applied and was hired, still filling this role today. If you don’t know how a sanitary sewer system works, it’s completely gravity-powered, like a septic system. Pipes from each house flow to a sewer main that runs down the middle of the street. The sewer mains then flow into progressively larger pipes until they reach the Central Weber Sewer District.

Trent and his team of one other person are responsible for maintaining the sewer system, which spans nearly 100 miles. Their use of a camera on wheels to inspect these lines helps to identify any potential issues, ensuring the smooth operation of the system and safeguarding the health and safety of the community. The cleaning of these lines is done to prevent and collect any debris to prevent plugged lines and is done in the spring and goes through fall while the temperatures are warm. The inspection portion is to find and replace and or repair any sewer lines that are failing and takes place from fall until the spring when the temperatures are colder.

Passing the Grade 3 Sewer Collection Test is a significant accomplishment for Trent. This test is known for its difficulty and is typically given to someone with considerable experience.

Trent enjoys reading Tom Clancy and David McCullough books, running half marathons (he’s currently at 11!) completing a Spartan Race, and being with his wife and four kids. To know Trent is to admire Trent. His sense of humor makes him fun to be around, and the friendliness he shows to his coworkers is beyond compare. Whether he’s maintaining lines, snow plowing, helping a friend move their office, or just showing up for support, he’s amazing!

His favorite part about working for North Ogden City “is all of the friends and acquaintances I have made here over the years.” Those friendships are long-lasting and the work he does each day will benefit our city for years to come.

When we think of nicotine addiction we often think of cigarettes, vape products, and chew. However, a new product that is quickly gaining in popularity, especially with youth, is Oral Nicotine Pouches. Nicotine pouches are a smokeless and spitless form of nicotine. According to the Truth Initiative, “Unit sales of nicotine pouches have increased six-fold between 2019 and 2022.” Much like electronic cigarette products, nicotine pouches come in a variety of flavors from watermelon and mango to cinnamon and peppermint. These products also range in nicotine content from 3mg per pouch up to 12mg, which can make them highly addictive. Because these products are smokeless, spitless, and come in flavors resembling candy and mints they are easily disguised, making it simple for youth and others to use them unnoticed. These products are also commonly made using a synthetic form of nicotine, meaning the nicotine isn’t taken from the tobacco plant, but manmade. It’s a ploy the industry uses to insinuate the products are somehow safer than traditional tobacco; however, the nicotine contained in

Amanda has done a very good job in my classroom with homework, vocabulary words, assignments, etc. One thing that stood out for me was Amanda's willingness to help her fellow classmates with studying or writing down vocab words for them. For instance, a particular student was absent for the day, and we were writing down vocab words and I looked over and she has two notebooks out. She was writing the vocab words with definitions in both notebooks. I asked her why she is doing this; she replies simply because she is sick, and when she comes back she will be stressed about school work. I want it so when they come back from being sick and not worry about having to write vocab words. To me this is an awesome display of leadership. She did such a great job at leading by example that I have started to notice others in my classroom will do the same for people that are absent. It amazes me that such a small simple gesture has helped students find ways to help each other when they need it the most. She has been a light of happiness in my class.

The best people are those who do good just for the sake of doing it, and Mina is one of those people. She cares deeply about everything she does, and it shows in the quality of her work. Whenever there is a performance-based assignment, Mina goes above and beyond to be successful. She shows up memorized, prepared, and often with full costumes and comedic routines ready to go. She set an example for how to be a dedicated performer. The students and I all love watching her perform, and her work inspires others to do the same. Thank you, Mina, for being such a reliable, bright spot in the classroom!

Braden is an outstanding 8thgrade student at Orion Junior High. He excels academically and athletically. Braden works hard in all aspects of his life, by earning a 4.0 GPA, excelling in all sports, and is a great friend to all. Braden exemplifies all of Orion’s core values. Braden is kind and respectful to his peers and to the faculty and staff at school. At Orion, Braden is a Peer Tutor and loves that he gets to interact with his peers in PE. Braden is currently in the school play and is also involved in many sports (soccer being his favorite sport of all). Braden looks up to his grandpa because of how kind and thoughtful he was—he also had a great sense of humor and Braden always appreciated that. Braden’s family, friends, and teachers at school describe Braden as being uplifting, fun, inspiring, and all around happy. Congratulations on this achievement, Braden! Cleaning tips and tools from the experts

Maybe it’s just the extra sunlight highlighting all my dusty surfaces, but in the early spring I’m called to all those forgotten corners to join in the “Great Spring Clean.” I gathered some cleaning advice from the experts to help make our spring-cleaning efforts quick, easy, and accessible. I interviewed two local women who own cleaning service companies, gathered some unique tips, and so much more.

Leora Warnes was a single mom seeking a flexible part-time job to supplement her income. She had been making natural cleaning products for use in her own home, and in 2015 came up with the idea to start a cleaning business using her products. Today, she and business partner Nicole Simmons run

Nature Maids, employing a team of six cleaners and service over 70 clients of all varieties. Nature Maids also partners with a company called Cleaning for a Reason, that offers free cleaning services for cancer patients. “I love that I have a company that helps people in simple ways but with a big impact. Working with elderly and disabled clients is especially rewarding.”

Leora’s Tools and Tricks

DIY All-Natural Cleaner Leora uses a special mixture of distilled water, essential oils, natural soap, and grain alcohol that works as a non-toxic all-purpose cleaner for all rooms.

Mr. Clean Magic Eraser is a sponge-like cleaning tool made of melamine that will remove a stain from just about anything. From marker and crayon on walls to mold and mildew stains in showers, this is a truly magical cleaning tool Leora swears by.

Glass Towels and warm water are perfect for quickly cleaning mirrors and glass doors in bathrooms and kitchens. These microfiber towels can be found on Amazon or in major retail grocery stores.

A Squeegee is essential for clearing water from shower doors after showers, which helps prevent water spots as well as hardwater deposits.

A Cleaning Supply Caddy stocked with your favorite cleaners, sponges, towels, and other supplies ensure that everything needed for cleaning a space is close-at-hand.

Focus on one area or one room; Leora says to make the most of your cleaning time. Don’t move on until one area is done, even if it takes you more than a day. Not having to backtrack will save you time and energy!

From an early age, Katie Winder knew, quite literally, the value of cleaning. Her parents owned a motel in Ogden, and well before her teenage years she learned both the ability to make money performing simple cleaning tasks along with the intrinsic rewards it can bring.

“As a teen I would go to my friends’ houses and help clean their rooms and leave feeling so great, like I helped improve their life in a small way. Its satisfying to walk away from something knowing you made it better.”

The Pink Stuff is a product Katie says she couldn’t clean without! This product is a mildly abrasive cleaning paste that can be found on Amazon and in most local grocery stores.

It removes stains from just about anything: tile, marble, wood, stainlesssteel, porcelain, ceramic, and more.

Pumice Stones are hard, usually rectangular shaped volcanic stones that are great for cleaning hardwater deposits. Katie uses them in toilets, and they can also work wonders on mineral stains on sinks, bathroom tiles and ceramic surfaces.

A Scrub Daddy is a sponge that changes texture and firmness depending on the temperature of the water. The Scrub Daddy is firm in cold water for tough scrubbing and soft in warm water for light cleaning, which makes it the perfect tool for nearly any mess.

Save the sinks and mirrors for last. When you clean a room, you’re going to be constantly rinsing out dirty sponges and towels in the sink, and the mirror can easily get splashed. Finish off your bathrooms with these areas!

Let your bed breathe! At night we sweat and shed skin cells, which can harbor dust mites, ugh, gross! Making your bed right after you climb out of it can trap the moisture and bacteria. Experts recommend leaving the blankets exposed to oxygen and sunlight for at least an hour to help reduce moisture, bacteria, and dust mites.

The summer of 1892 was not kind to Gideon and Sarah Alvord. They lost all three of their children, Ira, Lottie and Martha, to Diphtheria, burying each in the span of just three weeks. Martha’s death was especially tragic. Having recently lost her younger siblings, she fell sick the day before she was to be married. 26-year-old Martha was engaged to Abiathar R. Smith (Richard.) Richard was a wealthy rancher, and 39 years old in the summer of 1892. He had just completed building a large mansion in which they would reside after the nuptials. However, the couple never had the chance to enjoy the beautiful home. The community mourned with Martha’s family. Martha was described as “being loved by all on account of her pleasant, kind and benevolent disposition.” She was associated with the Sunday School, where she worked tirelessly. Martha’s body was dressed in her white silk wedding gown and interred on July 5th, 1892, the day that should have been her wedding day.

A memorial was held on July 10th for all three Alvord children, with such a large turnout the meeting house could not hold all the attendees. After the service a band led a procession to the cemetery, where the community decorated the graves. Reportedly, the procession

ran the entire distance between the meeting house and the cemetery. Richard Smith commissioned an elaborate memorial to honor Martha. The marble carving depicts Martha in her wedding dress, and the epitaph reads “Erected to the Memory of Martha Jane Alvord, Born July 25, 1865, Died June 27, 1892, Erected by Abiathar R. Smith.”

Richard eventually married in November of 1893. He and his wife took residence in the mansion he had built in North Ogden.

Ira, Lottie and Martha are buried next to each other at the Ben Lomond Cemetery. Richard went on to have four children, two of which preceded him in death. He passed from Diabetes in 1909 and is buried on Martha’s left the row in front of her and her siblings.

Recently, the State Historic Preservation Office cleaned Martha’s monument. The marble was stained black from a tree over the statue, and in need of deep cleaning. With ladders and brushes, preservationists and volunteers worked carefully to scrub the handcarved marble face and flowers, using a special cleaner that works overtime, soaking into the marble and brightening it as time goes by.

Next time you are at Ben Lomond Cemetery, look for the tall white statue of Martha, who will forever be a bride.

Saluting Our Service Members: Military Spotlight

“I took an oath to defend and protect my Country and the Constitution. This oath is as binding on me now as when I first took it in 1978, regardless of my enlistment status.” -Desiree Huven

After having interviewed Chief Master Sergeant Nathan Huven in January, I eagerly looked forward to the opportunity to talk with Master Sergeant Desiree Huven, the other half of this incredible couple.

Desiree was born in Germany but immigrated to the United States when she was very young. Desiree speaks of the trials her mother went through in the closing chapters of WWII, having spent several years in a refugee camp and finally making her way to western Germany. Her mother eventually met her stepfather who was serving in the US Air Force. Her stepfather, a born Tennessean, brought the family over to the US.

This family legacy of service continues to this day, with her son finishing up a term of service with the Air Force as well, having graduated from the Air Force Academy, serving as a developmental mechanical engineer, and reaching the grade of Captain.

“Being a military family comes with a unique set of challenges and opportunities,” she said. “There is more understanding, patience and sacrifice, and a better perspective on life, one built on a lifetime of friendships.”

What captured my attention most was the positive attitude and strength which Desiree has shown through the challenges and opposition she’s

faced in her 25-year Air Force career. As a woman enlisted in the armed forces, she faced a significant amount of resistance, from mild dismissal at being in a male-dominated institution, to actual resentment over her achievements. Desiree worked as a Personalist, an area that allowed her to grow personally, and then as a Professional Military Education Instructor where she trained others in leadership and management skills—areas of her life where she shined and excelled. Throughout her career, Desiree demonstrated exceptional professionalism, pride in her accomplishments, and a desire to prove to herself that she could, and would, succeed.

“It is possible to still be feminine and to lead,” she commented. “You don’t have to adopt manly attributes. Just go and give it your all, 120% effort all the time, and you will succeed regardless of your sex. Don’t do anything in half measures, but give everything you have to the work you’re in.”

In thinking about the current state of our country, Desiree says, “People may think we spend too much money on the military, but all of us are safer and freer because of the sacrifices of selfless individuals. In an election year, the right to vote and participate in our democracy should not be taken lightly!”

Desiree spoke of faith guiding her life and her perception of the world has been influenced by her service. She has confidence that God is in control of things and that we can rely on that, despite unrest and difficulties in the world.

“I took an oath to defend and protect my country and the Constitution,” she reminded me. “This oath is as binding on me now as when I first took it in 1978, regardless of my enlistment status.” She noted that she was not even a citizen of the United States at that time, finally becoming a naturalized citizen after 15 years. She is grateful for her the US and wanted to give something back and not take for granted the life and Country she has come to love.

Marry Me Chicken

Marry Me Chicken finds its origins in Engagement Chicken, a recipe given by a fashion editor in Glamour Magazine to her assistant who then made it for her own boyfriend, and a proposal followed. What makes it such an incredibly simple dish is its versatility. Marry Me Chicken went extremely viral online, with tens of thousands of searches for it monthly, which is what convinced us to try it, and we think you should too.

Ingredients

• 1 Tbsp. Olive oil

• 4 Chicken Breasts

• 1 tsp. Salt

• 1 tsp. Pepper

• 3 tsp. Minced Garlic

• 1 tsp. Dried Thyme

• ½ tsp. Dried Oregano

• ½ tsp. Red Pepper Flakes

• ¾ Cup Chicken Broth

• ½ Cup Heavy Cream

• ½ Cup Sun-Dried Tomatoes drained & chopped

• ¼ Cup Grated Parmesan Cheese

Instructions

- Preheat oven to 375° In a skillet that can go in the oven, turn to medium heat, and add olive oil.

- Season your chicken on both sides with salt and pepper.

- Cook your chicken on both sides for about 5 minutes per side—it won’t be completely cooked. Place the chicken on a plate and set aside.

- Add garlic to your hot skillet and let it cook for 1 minute before adding thyme, oregano, red pepper flakes, chicken broth, and heavy cream. Cook for 5 minutes, stirring occasionally.

- Drain and chop up your sun-dried tomatoes and add to your skillet, along with the grated parmesan cheese.

- Return the chicken to the skillet, spooning the sauce over the chicken.

- Bake for 18 to 20 minutes. You will know it is done when the chicken is cooked through. I like to use a meat thermometer.

- Serve over cooked noodles or rice and a veggie or two on the side.

Chicken Pot Pie Pasta

2 Tbsp. Butter

3 Cooked and Cubed Chicken Breasts

½ Small Onion, Diced

4 Celery Stalks, Diced

3 Carrot Sticks, Peeled and Diced

4 Cloves Garlic, Minced

8 cups Chicken Broth

2 cups Half & Half

2 tsp. Salt

1 tsp. Black Pepper

½ tsp. Garlic Powder

½ tsp. Dried Thyme

½ tsp. Ground Sage

¼ tsp. Cayenne Pepper

1 16 oz. package of Egg Noodles

2 cups Frozen Corn

2 cups Frozen Peas

2 Tbsp. Corn Starch

In a pot, melt butter and add chicken breast. Cook 5 minutes on both sides until cooked through, place on a cutting board to rest. In the same pot add diced onion, celery, and carrots. Sauté until veggies are softened, about 5 minutes.

As the season unfolds and nature comes alive with colors and scents, we invite you to bring that same freshness to your dinner table. Melissa has gathered and tried four delicious chicken recipes that are perfect for those busy spring evenings and sure to awaken everyone’s taste buds.

Cut chicken into cubes and let sit. In the same pot, pour in the chicken broth and half and half. Add salt, pepper, garlic powder, thyme, sage, cayenne pepper and stir together well. Set temperature to medium high heat. When it starts to boil, add your noodles. The egg noodles taste super good and cook quickly for a meal like this. Add 2 Tbsp. corn starch to a little cup and stir in cold water—just enough to make a thin paste. Pour the starch-water into the boiling pot and stir. This will help thicken the sauce. Let boil until noodles are cooked, about 8 minutes. Add cubed chicken and frozen corn and peas. Mix it all together and voila! Dinner is ready to be served.

BBQ Chicken Drumsticks

4 tsp. Minced Garlic

1 Tbsp. Lime Juice

2 Tbsp. Olive Oil

2 tsp. Salt

½ tsp. Pepper

12 Chicken Drumsticks

BBQ Sauce

First, pat down the chicken with a paper towel— this helps the chicken to crisp up while cooking. In a bowl add garlic, lime juice, olive oil, salt, and pepper. Spread all over the drumsticks and let it sit for 40 minutes to marinate.

Bake marinated chicken in a pan on the stove for 5 minutes on each side.

Preheat oven to 425°.

Add BBQ sauce on the chicken and place on a baking rack. I like to spray the rack with non stick spray for easy clean up. Place rack on a cookie sheet that is lines with parchment paper (easy clean up) and into the oven for 5 more minutes. These were a hit in our home. Hope you and your family enjoy them too.

Chicken Mini Tacos

Tacos

Shredded Chicken (cooked)

24 Street Taco Corn Tortillas

4 cups Shredded Cheddar Cheese

Olive Oil

Toppings

Sour Cream

Salsa

Guacamole

Fresh Chopped Cilantro

Sprinkle taco seasoning on uncooked chicken and cook in your slow cooker on high for 4 to 6 hours. Once done, shred with two forks.

Preheat the oven to 425°.

Place parchment paper on cookie sheet.

Brush olive oil on one side of the corn taco shells and place down on the parchment paper. Place shredded chicken in the middle of the shell with some cheese. Bake for 12 minutes.

Fold tacos (careful, they are HOT). Top with your favorite toppings and EAT!!

Lemon Garlic

We got this recipe from eatwell101. com. We didn’t change a thing except we had to omit the garlic for one of our daughters (food allergy). Everyone loved this meal.

3 to 6 Boneless Chicken Thighs

2 cups Green Beans

3 Tbsp. Butter

4 Garlic Cloves

1 tsp. Paprika

1 tsp. Onion Powder

¼ tsp. Salt and Fresh Cracked Black Pepper

½ of a Freshly Squeezed Lemon Juice

½ cup Chicken Stock

1 Tbsp. Hot Sauce

¼ tsp. Red Chilli Pepper Flakes

½ cup Parsley

Dry out the thawed chicken with a paper towel removing

any moisture so the chicken will brown better when cooking.

Combine onion powdered, paprika, salt and pepper in a bowl and rub all over chicken and set aside. Place green beans in microwave safe bowl. We used frozen green beans and they were fine but next time were going for the fresh ones. Microwave for 8 to 10 minutes until almost done.

Place 2 Tbsp butter in a skillet on medium low heat until butter is heated and place chicken thighs skin down. Cooking for 5 to 6 minutes on each side until the chicken is browned. Place on a plate and set a side.

Place 1 Tbsp of butter in skillet at a low temperature until the butter is melted and add parsley, garlic, hot sauce, red crushed chili pepper flakes, & precooked green beans.

Cook for 4 to 5 minutes then add lemon juice, chicken stock. Let simmer on a low setting until sauce is thickened. Remove the green beans and place in a separate serving dish. We added cooked rice to our plates making the meal more filling. Plate your chicken and green beans on your plate next to the rice and drizzle some of that sauce on top.

Seriously so yummy!
