The message of the Gettysburg Address

n November 19, 1863, a speech was given by Abraham Lincoln that has become one of the most referenced speeches in history. The comments given on that day are referred to as the Gettysburg Address. In his remarks, President Lincoln stated that “government of the people, by the people and for the people, shall not perish from the Earth”. Although the origin of this statement is often disputed, I believe its content should be the focus. If we literally interpret the words of, by, and for, it is relatively simple to clarify the meaning of this statement. “Of the people” refers to the composition of our government. The fact is that the government is comprised of people who come from the people, like the elected officials who are usually your neighbors. Local government is not comprised of trained politicians but are people from the same walks of life as those they represent and face many of the same challenges.

The reference to “by the people” refers to the form of government we have in our city, county, state, and country that was formulated by the citizens. The government is run by the people THROUGH their elected officials. When we elect a senator, representative, or city council member, we authorize them to act on our behalf. “By the people” simply means we have the right to vote, and we choose those who represent us.

It is the statement “for the people” that creates the most controversy. When government acts for the people, its responsibility is to do what’s best for the citizens collectively. The definition of good is influenced by each of our experiences in life. Although disagreements often arise because of decisions that are made, it is important to remember that is it the form of government we have that gives us our freedom.

My intent is not to give a history lesson but to simply remind us how government should work. It is a good reminder for all of us. Hopefully, this subtle reminder will help us make sure that our form of government does not perish from the earth. Although our form of government is not perfect, it is the best there is. The Fourth of July is rapidly approaching, and it is a good time to reflect on the many freedoms we have. We have the freedom of speech, the freedom to worship as we please, the freedom to assemble, and the right to petition the government. These are just a few of the freedoms and rights that we have. It is my hope that as we celebrate the founding of our great country, we will consider the role government plays in protecting our freedoms, and we will be actively engaged in making sure government is by the people and for the people. A simple way to be engaged is to attend the city’s budget open house on June 8th, starting at 5:30 p.m. at the Senior Citizens center. I hope to see you there!

City of North Ogden Meet Our New Planning Director!

North Ogden City 2021 Municipal Elections

North Ogden City is excited to introduce our new Planning Director, Scott Hess! Scott has spent his career dedicated to local and regional planning and economic development along the Wasatch Front and most recently along the Oregon Coast. Scott brings a diverse professional background that spans the spectrum of urban planning. He earned his bachelor’s in Urban Planning and master’s in Public Administration from the University of Utah.

North Ogden City will hold a municipal election this fall to elect one mayor and two council members, each a four-year term. The filing period is from June 1 – 7, 2021 from 8:00 a.m. – 5:00 p.m. Declaration of Candidacy Forms or Nomination Petitions must be filed in person with the City Recorder’s Office at 505 East 2600 North, North Ogden, Utah. If necessary, a primary election will be held on August 10, 2021, with the municipal general election being held on November 2, 2021. All candidates for election are subject to financial disclosure requirements.

He, along with his wife Beth and their three girls, are excited to plant their roots in Utah, and he is looking forward to helping North Ogden City meet their planning and development goals. Welcome, Scott!

Water Conservation in North Ogden City Did you know every year, on average, household leaks can account for nearly 10,000 gallons of water wasted, and approximately ten percent of homes have leaks that waste 90 gallons or more per day?

To combat our drought conditions, there are ways you can do your part to check your home for these leaks. Common types of leaks found in the home are worn toilet flappers and running toilets, dripping faucets, water softeners, water heaters, and other leaking valves. These types of leaks are often easy to fix and require only a few tools and hardware that can pay for themselves in water savings. Correcting household water leaks can save homeowners approximately 10 percent on their water bills.

LAND USE PERMITS:

What are they for and when do I need one? BY KATIE GERARD

A central purpose of the planning department is to protect the health, safety, and welfare of the North Ogden citizens. The North

Ogden City Planning Department employees act with this purpose in mind. The planning department also works with citizens to help them exercise their rights as landowners. While doing this, members of the planning department must ensure that the rights of all the residents are not unreasonably infringed upon as contemplated in the North Ogden City Code. One way the planning department protects the rights of North Ogden City residents is by helping them understand city standards for contemplated improvements on their property through the land use permit application process. Land use permits ensure that a property owner who would like to build a fence, install or build a shed, or add concrete to their lot are able to do so within the requirements of the North Ogden City Zoning Code. This ensures that both the property owner’s interests, the interests of their neighbors, and the city as a whole are considered.

An example of a common project that would require a land use permit is adding a concrete patio or RV parking pad.

Increasing the amount of concrete or other hard surface on a lot reduces the amount of land that can absorb rain or runoff water. Since the storm water is not retained on site, it enters the storm sewer system. This creates an impact on the storm sewer system, which leads to increased service fees. If too much stormwater enters the storm sewer system, it can cause problems such as overwhelming detention basins. To reduce the demand on the storm sewer infrastructure, the city has created a minimum vegetative area requirement for all zones across the city. This ensures that much of the storm water is absorbed on site by the soil and does not enter the storm sewer system. The North Ogden City Zoning Code exists, in part, to prevent this and similar problems.

Once a land use permit application has been received, a member of the planning department examines the request for compliance with the city zoning code, the property’s dedication plat, and known special restrictions, e.g., utility easements or geologic hazards. If the project is compliant with city ordinances, the land use permit will be approved, and the applicant will be notified of the decision. If a proposed project does not meet the zoning ordinance or there is a special restriction on the lot, a member of the planning department will contact the applicant to inform them of the restrictions or any changes needed. In these instances, if the project can work with modifications, city staff works with the applicant to provide options that will allow the applicant to modify the proposed project so it will conform to city code before work begins.

(Any accessory building 200 sq. ft. or larger requires a building permit). • Adding any impermeable surface such as concrete or asphalt. • When adding any fence. • Decks require a building permit (not a land use permit). Information needed to process an application: • A simply drawn plan that shows square footage of the lot to be built upon, the size and location of existing buildings or structures. (We don’t accept photos, aerial photos, Google Map, etc.) • The square footage of existing concrete/ asphalt on the lot. • The square footage of proposed concrete/ asphalt. • The square footage of the existing building footprint. • Plans and dimensions for any proposed structure, including height. • A site plan showing the dimensions of the proposed project and distances from property lines. • Any other site-specific information.

Honorary Grand Marshal of the Cherry Days Parade

George and Marie Cavanaugh

A long time ago, well over 50 years, a man named George Cavanaugh joined the Church of Jesus Christ of Latter-day Saints. He lived in South Dakota, and if you have ever been there, you know it’s not a very populated state and has even fewer church members. He wanted to marry a “Mormon” girl, so he set off for Brigham Young University. He was later successful and married the girl of his dreams, Marie. He convinced her to move to South Dakota where they farmed, had babies, and lived the gospel. George was set apart as the District President over four branches in a 200-mile radius, and Marie was the Relief Society District President. There was only one chapel, and the other three branches wanted a building to worship in, so a lot of fundraising went on. Then, Marie decided that they needed to make some ‘serious’ money. She made copies of her mother’s candy recipes and handed them out to all of the sisters, assigning them the task of bringing certain flavors. They would get together and dip the candy and box the chocolates. A letter came from Salt Lake City from Sister Belle Spafford, then Relief Society General President, telling the sisters that they were not to be the money-making arm of the church. Marie was innovative and suggested that they have priesthood holders box the chocolates and collect the money. In no time, the chapels were built. Marie was so caught up with the chocolate world and had made so many friends who wanted her to continue providing sweet confections, that she took a one-pound box to the local banker, asking for a loan of $15,000. The year was 1963, and she was a woman in a small community; what she was doing was unheard of. After he had eaten half the box, he gave her the loan and ordered 200 pounds of chocolate to be delivered to him for Christmas. Mrs. Cavanaugh’s was born. In 1972, George felt impressed to move to Utah. When asked if she would like to move back to her beloved mountains, Marie was thrilled. They moved their family to Bountiful and tested the market with their chocolates, never looking back. On paper, this small family business should never have succeeded, but with the Lord’s blessings and lots of hard work, the Cavanaugh’s are now a household name. They are in six locations throughout the valley: Orem, Valley Fair Mall, North Salt Lake Factory, Bountiful, Layton Hills Mall, and North Ogden. The Factory location also offers tours and free samples.

George and Marie moved to Utah in 1972, and soon Marie had her chocolate business a household name.

Sometimes, people ask if this story is true and if the Cavanaugh’s really exist. George passed away eight years ago. Marie is still alive and well. The children are now heavily involved in the business, and Marie is still giving words of wisdom from the sidelines.

Grand Marshals of the Cherry Days Parade

Hi, my name is Ryan Berube, and I just turned 40 in May. I was diagnosed with Duchenne Muscular Dystrophy when I was three. I am the son of Jeana and Neal Berube and have lived in North Ogden for 39 years. I am sure many of you remember me roaming the streets of North Ogden in my powered wheelchair; that used to be one of my favorite past times. You may also remember me from Acres Market, now Lee’s Market, where I drove around the store assisting customers in finding merchandise. I was able to make many great friends in the North Ogden community through working there. I graduated from the awesome Weber High in 1999. Go Warriors!! I have been employed with Associated Food Stores for 15 years. It is a fantastic company. In 2018, I married the love of my life, Amanda. We were sealed in the Ogden Temple of the Church of Jesus Christ of Latter-Day Saints in 2019. I am so grateful for my savior Jesus Christ and His gospel. It is so reassuring to know that I can be with my wife and family for eternity. We have two incredible kids: Brady is 18, and Regan is 12. I love spending time with them and my extended family, including my fabulous parents and my absolutely fantastic brothers. I look up to my brothers Justin and Colton and their wives, and my completely adorable nieces: Sophie, Paisley, Addy, Sawyer, and last but not least, Cedar. I just love them! I also absolutely love spending time with my totally amazing best bud, Tyler Crittenden of North Ogden. My hobby is cars; I really enjoy all types. I love the United States of America; it is the best place on earth. I am so grateful for all of the soldiers that did, and do, valiantly fight for our freedom, especially my grandpa, Gene Hancock, who is my idol. He served in the Philippines during World War II, giving me a great interest in that war. One of the things that I really love about North Ogden is it is a place of tradition. Traditions are important to me. Let’s not forget to mention that this is an absolutely beautiful place, with picturesque views of the mountains all around us. My brother, Justin, was born on the Fourth of July. Ever since I can remember, we have gotten together on his birthday. We used to always go to the Cherry Days parade and the activities at the park afterwards and watch the fireworks. The tradition grew to involve our group of friends, as well as a barbecue that still goes on to this day; I refuse to miss it. I am humbled to be the honorary grand marshal for the parade. Thank you, Mark Miller and all the others who have helped him, for your hard work in making Cherry Days a reality this year!

LaMar and Mary Lee have lived in this great community of North Ogden for 45 years. They chose it for its beauty, great schools, and amazing people. LaMar taught choral music to over 16,000 students at North Ogden Jr. High and produced 18 broadway musicals during that time. He then became a junior high school counselor for 20 years. LaMar also sang professionally on the weekends in Los Angeles and toured all over the U.S. and Canada! When LaMar retired from performing professionally, he became a member of the Mormon Tabernacle Choir and toured all over the world with them. During that time, he and Mary Lee formed a performing group for teenagers called Rainbow Connection Entertainers, which they directed for 20 years, helping young people to develop their talents and providing entertainment for the community. Their goal was to teach them to find joy in sharing their gifts and watch them gain confidence in themselves as they performed. LaMar loved Cherry Days and became an integral part of it. He would have his sound system raised by the front-end loaders to the top of the Wells Fargo Bank and announce the parade. He then moved the system to the Bowery in the park and presented “Talent in the Park” all afternoon on the 4th of July. Later in the day, he relocated to the football field to do musical fireworks. The night before the 4th of July, he would use the sound system to announce the posse events at the arena. LaMar was also the MC for the Miss North Ogden Pageant many times, receiving the “Point of Light Service Award” twice for his hours of service during Cherry Days. LaMar and his wife Mary Lee have six children and 22 grandchildren who are the light of their lives. LaMar has served in the army and loves his country. Mary Lee was born on the 4th of July and has always appreciated the fireworks that we do every year for our country (and her birthday). Summer is upon us, and the North Ogden Parks and Recreation Department has been gearing up for nine months now. With youth sports, camps, the Aquatic center, and parks to maintain, they have their hands full. The department, known for being a fun and lively one by its staff, has had a somber tone of late. Parks and Rec suffered a blow last month when Dave Nordquist, the department’s former Director of Services, passed due to complications from Neuroendocrine Cancer. “He was one of the best men I have ever met,” claimed Tiffany Staheli, current Director. “He was always making people laugh and had a big heart.” Known as “Coach Dave” by many, he started his career at Mt. Ogden Jr High, later moving to Ogden High to coach baseball. While there, his team won 12 regional championships and a state title. His love of sports continued to flourish as he worked with the sports programs for the city of North Ogden. Dave started working at Parks and Rec around 2007 at the Aquatic Center. Coming from working with Ogden High and the Ben Lomond Pool, Dave was ready to take action. “He helped get things off the ground and structured, like the swimming lessons,” Tiffany commented. Dave worked at the Aquatic Center as the manager for a year and then accepted the position to be the Director of Services at Parks and Rec. Dave was esponsible for the soccer complex at Wadman Park, a local favorite, during his time there. The 13-acre public park boasts a hill used for sleigh-riding, a walking trail, a bowery with ample picnic tables, a playground, restrooms, and of course, the soccer fields. Dave knew the importance of parks and having places for youth to get out and enjoy, especially when it came to sports. He worked hard to ensure this. “He would always say ‘don’t tell

me how bad the sea is, just bring in the ships,“ Tiffany said this was of his many sayings. Dave not only worked hard at his job but he was a family man. “My dad found the good in people, even if he had to look a little longer or harder. He inspired me by being an optimist. He believed life should bring joy and not every situation required a serious approach,” Dave’s son, Brett Nordquist commented. “He was big and intimidating to some but had a huge heart, and he sought out those whom he felt needed a little more attention or instruction as a coach.” The North Ogden Parks and Rec Department has established and maintained 11 of the different programs with the help of people like Dave Nordquist. His legacy lives on through the residents who enjoy these programs and spaces. So, go out and enjoy all of his hard work, just like Dave would have wanted.

A non-profit organization that welcomes riders of all types, ages and interests.

N

ancy Mckay is a cityslicker who developed a love for horses later on. She was raised in the city, but her parents were raised on ranches and farms. “We loved to go to their farms,” Nancy remembers. Backcountry Horsemen is more than just a riding club, they also maintain trails used by hiker, riders and bikers.

As she and her three siblings grew up, something drew them all back to their ranching roots. First, her brother-in-law bought a horse, then her brother bought a horse, and finally she caved in as well. Horses have such a mystical nature that is, frankly, intoxicating. Soon, she was riding so much alongside her siblings, she started hunting for more riding buddies and more riding trails so that she could go out more often. That’s how she happened upon Backcountry Horsemen.

There, she was impressed with the young bucks and old cowboys in the organization. All of her new friends showed her new and more technical trails, how to camp with a horse, and even how to pick a horse when it came time to buy more. She hadn’t even been riding for five years, and now she had friends helping her pack to camp with her horse. “The friendships extend into our personal lives,” Nancy said. “It doesn’t matter if you’re a hardcore horse owner or a newbie, you’re all spending time around the campfire, watching out for each other in the wilderness, and you’re all friends.” But Backcountry Horsemen is more than just a riding club. They’re the organization behind public trails for horse riders, bikers, and hikers alike. Horses were the first to clear the paths along the Wasatch Front, and now horses are still performing the maintenance. “Our country was built on the backs of horses,” Nancy said. “If man didn’t have horses, we wouldn’t have anything. In fact, if you ever find yourself on a trail that

features a bridge”, she says “I can almost guarantee those were brought up by pack horses.” Now, 10 years after her first ride with Backcountry Horsemen members, Nancy has found herself as president of the Wasatch chapter. She’s served as chapter treasurer and even state treasurer for the non-profit. “It’s not something we just do for fun,” she said. “It’s a valid purpose and a needed purpose.” Anyone and everyone can follow in Nancy’s footsteps, and you can start while you’re young! This very month Backcountry Horsemen is hosting a youth clinic to teach kids ages 8-15 horse packing, camping, and trail safety. The clinic is June 18-20, so don’t wait another minute to sign up! Young Poet Wins Award MaeLee has always loved to read books from a very young age. As soon as she could write, she began writing stories and plays with the goal of being an author one day. She learned about Reflections and thought it was fun how any student could use their talents to create their own works of art in various categories. She was extra excited this year about the theme being “I Matter Because…” She got her pencil and began to write, but the words didn’t come easily. She used a dictionary to look up words, and then, little by little, everything came together. By taking her time and working hard, she finally saw what she wanted to do. With everything that occurred in the past year, she was determined to create something to remind everyone why he or she truly matters.

After reading what she wrote, many people quickly realized what she had written was special. MaeLee’s poem won the Award of Excellence at her school, council, region, and even the state of Utah. At nationals, her poem took 3rd place, earning her an Award of Merit and a bronze medal. She is very happy the poem did well, but her real hope is that anyone who reads her poem will feel how special they are and why they are so important. We are very proud of MaeLee and everything she has accomplished!

They may also experience headaches, irritability, forgetfulness, and even depression. Treatment for OSA includes the use of a CPAP machine, surgery, or an appliance worn in the mouth made by a specially trained dentist. Most people are familiar with CPAP machines that are strapped onto the face and air is forced into the mouth or nose, holding open the airway and reducing those interruptions in breathing while you sleep. Although very effective, many avoid treatment because they don’t want to use a CPAP machine. The good news is that dental appliances can also be very effective in treating many cases of OSA and are much more comfortable! Wonderfully enough, it stops the incessant snoring as well, which will no doubt please your sleeping companion!

Draydon Croston Saves his Mother's Life North Ogden Resident Draydon Croston saved his mother MariJo Croston from drowning in the Weber River last summer. He was 13 years old last year when he was awarded a certificate and coin of Bravery by the North Ogden Police Department, and was chosen by the American Legion Auxiliary to receive a youth Hero award. The situation shifted from fun to life-threatening when MariJo tried to exit the river but instead got swept away through a rough and rocky stretch of the river below Henefer. When the river swept her past the spot where the family planned to exit the river, Draydon saw the danger and immediately went to help. He said he didn’t want her out there by herself. She was having a hard time holding her head above the water but thankfully she managed to cling onto the tube. Draydon held on to his mother’s tube through the really rough water until he was finally able to reach out his long leg and grab onto a tree log with his foot to stop them. With the quick action that Draydon saw and acted on, MariJo luckily only sustained a broken rib, bruises, and cuts when the outcome could have been much worse. She and her husband are very thankful for his bravery. “He’s a really easy going kid,” said MariJo. “He didn’t think twice about going after me in the river knowing no one else could. The rest of our group had already made it out of the river.” Her husband Ryon jumped back into his tube as fast as he could when he realized she couldn’t stop. “He tried so hard to come and catch us, but we were going way too fast, he just couldn’t make it. He yelled after Dray “don’t let go Dray, please just don’t let go of your mom” over and over. I had actually yelled for Dray to let go of me because I didn’t want him to get sucked in also.” Thankfully he didn’t listen! MariJo explained it was the scariest thing she has ever gone through. “I was so shook up, bruised, bleeding and sore. I couldn’t stop shaking and crying afterwards. My husband Ryon just held me and kept saying with complete shock in his voice “oh my goodness” he just kept hugging me tighter and didn’t let go. He yelled back to Dray as Dray was trying to get his tube out of the water, “thank you Dray, just thank you... for saving my wife”. As Dray’s step dad since age 8, he has always taught our boys respect, opening car doors for me & all females, and to honor their Priesthood - which is a part of our religion. We all feel so proud of him and know his responsible nature and his actions in life helped him to be calm and brave that day. He was, and is still so humble. Never once bragged about it, told 28

He is the youngest in their family and he enjoys playing comp basketball for the Wasatch Front basketball club and he also loves soccer and golf. He enjoys working and earning money from their cotton candy business named “Fluff ‘N Stuff” and he is also a member of the National Honor Society.

Have your group hold on to each other the entire time. There is safety in numbers. Even if you have seen our hometown from an airplane, I imagine the experience is quite different in a basket of a hot air balloon. Imagine the coolness of the morning air as you silently float 4,000 feet above Ogden Valley. The memory is sure to last a lifetime! The first place I think of when I think of exotic meat is Roy, Utah’s Burger Bar. I make the drive past the joint regularly, and it’s always interesting to see their exotic meat of the week on the standup sign on the sidewalk: yak, alligator, and some animals I’ve never heard of before. When I go to a restaurant, I tend to order what I know I like, but every now and again, it’s fun to have what I call a “form an opinion” meal. Oceanmart is also a cool place to visit, and they have recipes posted around if you want to make something you’ve never prepared before, like crab or even octopus! One time, my husband brought home an octopus, and I’m proud to say I tried it, but eating it was freaky-deaky.

I know my mom is trying to thin out the hens and chicks in her flowerbed that are encroaching on her daffodils. Choosing the Right Wood for the Job BY JEFF SPENCER

Grill master Jeff Spencer of Kent’s Sports is going to bring tips and recipes all summer in this feature!,

It’s spring and spring means grilling season officially begins! The two most frequently asked questions I’m asked by new pellet grill owners are, “What’s the best wood type for grilling?” or “What’s your favorite wood?”. The answer requires a couple questions. First, “What are you cooking?” Second, “What is your tolerance for smoke flavor?” Each wood has it’s own unique flavor profile. For example, mesquite tends to have a more powerful and pungent flavor whereas fruitwoods tend to be much milder and even add an almost sweet

note to meats. Hickory is one flavor that most everyone is familiar with because most commercially smoked meats like bacon are smoked with hickory. The Green Mountain pellets we sell are blends with three wood types which enhance the flavor profile. Experienced pellet grill chefs have been blending pellet flavors for years. A simple guide. • Beef - Mesquite or Cherry • Poultry - Mesquite or Hickory • Pork - Apple or Hickory • Fish - Alder, Oak or Hickory • Veggies - Hickory or Alder The bottom line is finding the flavor you prefer. A big part of the enjoyment of using wood is finding the combination that is best for you.

Smoked Salmon Recipe Ingredients: 1 or more salmon fillets (I prefer skin on); skin off requires a grill mat or foil. Season with Green Mountain Fish Dry Rub, or salt and fresh-crackeded pepper. Set grill to smoke at 180 degrees, Start cooking: Smoke 40 minutes or until muscle layers separate with light pressure from fork. If using probe thermometer in thickest section of fillet, cook to 120 degrees and rest covered for 15 minutes. The FDA recommends 145 degrees for salmon; however, in my opinion, this produces overcooked, dry salmon.

Having a plan in place and appointing a health care agent to make decisions can alleviate many financial and emotional burdens that would otherwise be placed on the shoulders of loved ones.

any people have heard of probate; however, far fewer have heard of living probate. Probate is required when someone passes away with a will (testate) or without a will (intestate). Probate can be avoided by using a properly funded trust. Living probate differs because it is required when a person is still alive but loses capacity prior to death. The process involves filing with the probate court to be appointed as a conservator (financial agent) or guardian (medical agent) of the incapacitated person. Financial powers of attorney and an advanced health care directive can keep you out of the living probate process and save various court costs and attorney fees.

I highly respect judges and their ability to gather information and make good judgments; however, they do not always have enough information to make the best decision. I had a client whose brother took advantage of their mother to the mother’s detriment. My client’s brother petitioned the court to be appointed the sole conservator and guardian of their incapacitated mother. My client initially agreed to the brother’s appointment as long as he agreed to follow the terms of a care agreement that would protect their mother and her estate. The brother breached nearly every term of the agreement, put the mother in a retirement home, and depleted the estate for his own benefit. Leaving decisions up to a judge can create problems for your heirs.

For many people, there comes a time when they lose the capacity to make decisions prior to death. This can cause financial and emotional problems for the remaining family members. For example, some spouses may not have each other listed on all bank accounts. If the spouse listed on the account became incapacitated, the non-incapacitated spouse would not have access to those funds to keep the lights on or pay other bills. Some spouses keep separate bank accounts for various reasons and solve this potential issue by creating a financial power of attorney. This month, we honor Colonel Noel S. Schvaneveldt. Thank you for your service to our country! According to Colonel Noel S. Schvaneveldt, “a patriot is one who considers others more than himself. This includes a love for country.” He entered the United States Army after receiving his bachelor’s degree from Utah State with Distinguished Military Honors and after he entered the United States Army. He served in the United States Army from 1956 to 1985. His service spanned the United States (Oklahoma, Virginia, Utah, Georgia, and Kansas) as well as Germany, Japan, Vietnam, Taiwan, Korea, and Saudi Arabia. During his service, he received training as a paratrooper with the 173 Airborne Brigade in Vietnam, Quarter Master Career Course, a master’s degree from Utah State in Food and Science Technology, and Defensive Language Institute in Arabic. Colonel Schvaneveldt held positions as Continental Army Command Logistics Department, Instructor at Army Civil Affairs School in Georgia, Ft. Leavenworth Army Command General Staff, Ogden Defense Depot Commander for Defense Property, and Deputy Commander. He received many awards and commendations including two Bronze Stars and the Legion of Merit. Noel S. Schvaneveldt

After retirement from the Army, he continued working. He received his second master’s degree from BYU, served in the Ogden Temple for over five years, and served three missions with his wife to Fiji, Oregon, and Virginia. As a substitute teacher at Ben Lomond High and Weber High, he also worked in investments for The United Way of Northern Utah and as a cashier at Macey’s in Logan. His biggest regret is that his body is incapable of continuing to serve like he used to. He said his service was, “an honor and a pleasure to give.” He married his sweetheart, Margaret, in the Logan Temple. They have been happily married for 65 years! Their family of over 100 now includes nine children, 29 grandchildren, 35 great-grandchildren with four more greatgrandchildren on the way!

Pack a PICNIC The Devil is in the Details

I don’t have a recipe for deviled eggs. I just add a bit of this and some of that, just like my mom makes them. My husband, however, was once in the hotel/restaurant business, so he has a deviled egg recipe from one of his chefs. What do our eggs have in common? Horseradish. It’s really what makes a deviled egg devilish.

First, place the desired number of eggs in a large pot and cover with water. (For our recipes below, you’ll need 10 eggs. It’s always a good idea to boil a couple more, in case of cracking.) Bring eggs to a boil and boil for 3 minutes. Remove from heat, cover, let stand for 15 minutes. Then drain the eggs and shock them in an ice bath to make peeling easier. Our egg holder holds 20 eggs, so we each made five (you cut each in half, of course) for the recipes below.

MOM’S DEVILED EGGS

RHETT’S CRABBY EGGS

5 eggs, cut in half the long way and remove yolk,reserve egg halves to fill ¼ cup mayo 2 tsp cocktail sauce 2 oz. crab meat (fresh and real beats the imitation stuff in this recipe) 2 tsp creamy prepared horseradish ½ tsp yellow mustard ⅛ tsp ground mustard ¼ tsp salt ⅛ tsp pepper Smash the yolks with a fork, add the rest of the ingredients, stir until well-blended and creamy. Taste, then add more salt, cocktail sauce or horseradish, if desired. Pipe into egg halves. Sprinkle with paprika. Serve.

Zucchini Corn Salad RECIPE FROM BUDGETBITES.COM PHOTO BY HAILEY MINTON

2 Tbsp high heat oil (peanut, light olive oil, or avocado oil) 3 ears fresh sweet corn 2 zucchini 1/2 red onion 2 pinches of salt and pepper 1/4 cup chopped cilantro 2 oz. Feta cheese

Remove the husks and silk from the corn cobs and cut stems off. Brush the surface of the corn with oil. Heat a cast iron skillet or grill pan over medium heat for at least five minutes, giving it plenty of time to build up a lot of heat. Once very hot, add the corn cobs. Allow the corn to cook, turning occasionally, until the kernels have become bright in color and some have developed deep char marks. This should take about 15 minutes total. While the corn is cooking, slice the zucchini in half lengthwise and the red onion into thick rings. Brush it all with oil. When corn is finished cooking, remove to a cutting board to cool slightly and add the zucchini in the pan. Cook the zucchini on each side until well charred (about 10 minutes total). Lastly, cook the onion slices until charred on each side (about 5 minutes total). Slice the zucchini into half-rounds or quarter-rounds. Chop the onion into small pieces. Roughly chop about 1/4 cup of cilantro. Stand corn cobs on end and use a sharp knife to slice down each side to remove kernels. Combine all vegetables in a large bowl. Season with salt and pepper and toss to combine. Crumble the feta on top. Serve immediately or chill to serve for later. (MORE RECIPES CONTINUED ON PAGE 46)

Wonton Chicken Salad BY HAILEY MINTON

This recipe is adapted from Applebee’s wonton chicken tacos and it’s a family favorite! I found it a lot easier to assemble it as a salad rather than trying to bake the many wonton wrappers in a taco shape.

Coleslaw 1 red cabbage, about 2 lbs 3 grated carrots 1 bunch of fresh parsley, chopped 1 cup mayo 2 Tbsp applecider vinegar 2 Tbsp Dijon mustard 1 tsp celery seed ¼ tsp salt ¼ tsp pepper Chicken mixture 4 chicken breasts ½ cup stir fry sauce 1 cup asian sesame vinaigrette dressing ¼ cup olive oil ¼ cup soy sauce ¼ cup teriyaki sauce 4 stalks of green onions, chopped 1 bunch of cilantro, chopped 1 package of wontons Cut up raw chicken breasts into cubes, add to mix and marinate in the sauce three hours or overnight. Preheat the oven to 350 degrees and drizzle olive oil on a cookie sheet. Lay a single layer of wonton wrappers down flat to cover the pan and brush the top with olive oil. Bake for approximately 12 minutes or until they start to turn golden. Let them cool before crunching them up in a bowl to serve them in. Assemble the coleslaw by cutting the cabbage into strips and mixing all the ingredients together in a large bowl. Place the chicken mixture in a warm skillet or large frying pan. Once the sauce starts to bubble, cook without stirring on mediumhigh heat for 4-5 minutes. Then stir and cook for another 4-5 minutes. Serve in bowls with a base of the coleslaw, add the chicken with some sauce, wontons, green onions, and cilantro.

The juice of 3-4 key limes, or more if you like it extra tart 1 8 oz packaged cream cheese, softened Whipped cream, optional for serving 1 Tbs butter, melted 4 graham crackers crushed into crumbs 1 14 oz can sweetened condensed milk In a stand mixer, beat the cream cheese on high until smooth. Reduce speed to low, slowly pour in sweetened condensed milk, and beat on low speed until completely incorporated. Roll limes on a clean cutting board to loosen juice and cut, squeezing directly into the mixing bowl. Beat on low speed until completely incorporated.

Brazilian Limeades BY KIM CROOK

6 Tbsp granulated sugar ½ cup fresh lime juice (about 5 limes) ½ tbsp lime zest (from 1-2 limes) ¼ cup sweetened condensed milk ½ of a 6 oz package fresh raspberries* (about 2/3 cup) Club Soda (flavorless, cold) In the blender or magic bullet, blend the sugar, lime juice, and lime zest. Add the sweetened condensed milk and fresh raspberries and blend until fully combined. Split the blended mixture between two tall glasses. Fill the glasses the rest of the way with club soda. Skim off the foam with a spoon and add more soda until the glass is full again. Repeat this process until the glass is mostly your drink with little foam left.

Pulse graham crackers in food processor until fine crumbs or crush in a Ziploc bag to your liking. Pour in 1 Tbsp melted butter until you have a mixture that resembles wet sand. Add a layer of graham cracker crumbs to the bottom of your desired glass (the amount needed depends on the size of your glass), spoon the key lime pie filling on top (repeat with another layer of graham cracker crumbs if desired) then add pie filling. Top with whipped cream and a lime wedge for serving if desired. Use your straw to mix the drink and enjoy! If the drink starts to separate, just mix again with your straw. *You can substitute the raspberries for strawberries (half of a 16 oz package) or any other fresh fruit you want to try. Amount of fruit will depend on how strong of a flavor the fruit has, so don’t be afraid to experiment!
