e have finally reached the end of the year 2020, with much to remember and ponder. The pandemic will certainly be remembered as the cause for much of the disruption in our normal lives. We will reflect on this time on how we endured, adapted, and eventually survived this plague in our society. History will mark this period as a time when the world stopped, and we’ve realized that we have more in common than we thought. If nothing else, this virus should have taught us that by doing simple things like wearing a mask and physical distancing, together, we can overcome the big things. With the anticipated arrival of a new vaccine, it is hoped that this Christmas gift to the world will set us on a solid path to full recovery and normalicy. But let us not forget those families who lost loved ones, and the healthcare and public safety workers who led us through this difficult time. Heroes all, who sacrificed much.

The year 2021 will bring a new beginning with anticipation of parades, fireworks, pageants, and social activities. I missed seeing a room full people as we discuss important city issues as a council. I look forward to neighborhood events, the enjoyment of sitting through a great movie, and watching performances on stage. The absence of these events in life have been challenging, and our traditions must be restored.

Finally, with everything that we’ve had to cope with, let us be thankful for this Christmas season. It is a time to share, and bring enjoyment to others. Perhaps the best gift of all is appreciating what we already have. We are reminded in these simple words the greatest of all gifts, “For unto us a child is born, unto us a Son is given…”

Did you know you can eat and drink in the library? “Check out” Bean-A-Colada Coffee" at the Southwest Branch Library (2039 W 4000 S, Roy) Coffee is their claim to fame, but you can feast on well-crafted meals at very reasonable prices. Try a croissant with eggs, ham, cheese, and sun-dried tomato, perhaps a filling omelet, or a toasted bagel. Beana-Colada also offers many sandwiches, such as seared ahi tuna, Philly cheese steak, grilled Italian sandwich turkey and fixin’s, vegetarian artichoke & pesto grilled cheese, and a grilled chicken Panini are highlights. Wraps are also on the menu: California turkey club; veggie; or chicken bacon ranch. There are also kid-friendly foods. Their Facebook page hints that cookies and brownies are available too.

Roy City would like to offer a friendly reminder that gutters and storm drains are for runoff waters only (sprinklers, rainwater, etc.). When you are mowing your lawns, please sweep up or use a blower to blow grass clippings and fertilizers that get onto the driveways, sidewalks, and gutters or streets, and put them back onto your own lawn. Grass clippings can plug the storm drains and cause flooding; they also decompose in our streams and ponds and cause unnaturally high levels of nutrients that can harm aquatic wildlife. The Roy City storm water system runs through Meadow Creek Pond. This water is vital to the pond and must be kept clean. Please properly dispose of grass clippings, pet waste, paint fertilizers, tree leaves, seeds, etc., properly and help keep our city streets, as well as streams and rivers, clean. Please contact the Roy City Public Works Department to report violations at 801-774-1090. If it is after hours, please call Weber Dispatch at 801-6298221. Our current storm water ordinance is on our website at www.royutah.org.

+ CIT Y NEWS One of Roy Communities that Care Coalition's (CTC's) greatest objectives is to decrease e-cig vaping, and tobacco products 10% by fall 2021, as measured by students in 6th, 8th, 10th, and 12th grades based off of the state’s biannual Student Health and Risk Prevention survey (SHARPS). The survey measures students’ exposure to risks associated with their community, family, school and peer group and how they influence decision-making.

statewide (SHARPS Survey). These risk factors increase the likelihood of delinquency, teen pregnancy, mental health problems, violence, and dropping out of school.

Based upon the results of the SHARPS survey, nearly onethird of secondary students in the Weber-Morgan area indicated they had tried vaping products at least once.

Currently, the Roy Coalition is looking for volunteers to assist with strategies that have been implemented into their action plan.

Approximately 23.8% of secondary students in the state have tried vaping, students, in the Weber-Morgan area are nearly ten points above the average at 33.1%. Local students who regularly use e-cigarettes totaled 18.4% versus 12.4% for Utah overall, and 1.7% of Weber-Morgan students smoke regular cigarettes compared with 1.5%

2020 Holiday Home Decoration Contest

Weber-Morgan Health Department received $300,000 from a bill passed by the Utah State Legislature last spring, and is using the funds it received from a new tax on e-cigarette products which are targeted to subsidize programs working to lower that number. In addition to raising the minimum age for purchasing tobacco products – and in some cases e-cigarettes – to 21, the legislation tacked a 56% tax onto e-cigarette purchases. On July 1, the state began enforcing the tax. The Roy CTC is one of three recipients which will receive a portion of this grant money.

+ A LOOK BACK

HOLIDAY TRADITIONS This year, we’re sharing some of the locals’ holiday traditions. Maybe you’ve heard of these traditions before, or maybe you’d just like to give them a try yourself. Behind every one is a fascinating history, originating from the families of Roy citizens. We hope that reading these stories will get you in the holiday spirit. BY JENNY GOLDSBERRY

Amber Slaughter: My grandpa, Loyde Hardy, was amazing with metal, and taught his skills to my dad, Rick. Together, they had a metalmaking business that supported missionaries from the Church of Jesus Christ of Latter-day Saints. Their profits would fund the entire mission for those who wanted to serve, but couldn’t afford to. After some thirty years, the business started failing and they sold it; however, before they closed, they made some aluminum molds for my aunts, uncles and dad. (My oldest sister was a baby at this time). To this day, we make suckers using the molds that my grandpa and dad made. Ever since we started dating, my husband and I have purchased a Christmas tree ornament for every year; one that represents the year. This year’s ornament is a glittery rainbow poop emoji. (Some good things but overall, “poopy") Chelsearose Herzog: My family plays “train” to torture the children. It’s a tradition that occurs before a single present is opened. The eldest member makes a path through the house, while making loud train noises. As they pass by the kitchen table, the next eldest joins the train. This continues, until everyone is in a giant line making train noises parading through the house 14 royconnection.com | December 2020

(and sometimes yard). It gets the kids excited, and makes them wait even longer for their Christmas presents. This tradition is three generations long (almost four at this point). Most years, we have at least twelve people participating. Stephen Patrick Kelly: We have a tradition where everyone in the family tries to be the first to say, "Christmas Eve gift!," and "Christmas gift!" to each other on Christmas Eve and Christmas Day respectively. It gets very competitive, to the point that my sister and I attempt to call each other after midnight and try to beat the others. My kids love it. I have done a little bit of research on the game and from what I understand, it's more of a Southern African-American game; how my very Caucasian family picked it up, I have no idea. Leah Smarsh: My grandma Edna always made hundreds of Christmas cookies every year. She'd make them in the fall, freeze them, and serve them at every family gathering during Advent. She just celebrated her 92nd birthday this week and hasn't baked in five years (she's on hospice now). Last year, I asked for her recipes, and she was brought to tears that someone in the family was carrying on her cookie tradition (albeit at a much smaller scale)! My friends and co-workers were thrilled with her cookies, and have already asked if I'm doing it again this year. Grandma Edna would keep trays of her decorated cookies covered in foil in the garage, where they'd keep cool and


fresh. One year, we had a cookie shortage because my grandpa accidentally spilled anti-freeze all over her trays of cookies! Des C. Woodles: We made a bunch of goodies ~ cookies, caramel corn etc., for neighbors and friends, and delivered them. Other traditions we enjoyed were going to see the Christmas lights either in Layton or Willard. We made hot cocoa before we left, and kept it in the crock pot while we were out, and came home to enjoy a mug, and either watched a Christmas movie or read a Christmas book. Allisonc Mu: I’m Polish, so we celebrate Wigilia. It’s still a celebration of Christ’s birth, but takes place on Christmas Eve. According to the Polish American Center, it is a multi-course meal that doesn’t feature any meat dishes. Preparation for this large feast begins when the special star, called the “Gwiazdka” is seen in the sky, days before Christmas Eve. Liz Ford Taylor: Christmas Eve we went to church, then drove around, looking at Christmas lights. Once we got home, we had breakfast for dinner: waffles with blueberries and whipped cream

and bacon. We opened one present (which tends to be our Christmas jammies, and watch a Christmas movie. Chris Taylor Smedley: Our Christmas Eve tradition is driving around doing a Christmas light scavenger hunt! We make a list of about 30 holiday things the kids have to spot and cross off their list; we love it, and have enjoyed it for many years now! Pam McGuffey Sakurada: One of our traditions is to invite family and friends over and make homemade candy canes. It’s great fun to gather around the table and pull candy, add color, and create our own shapes. Fun for all ages! Eliza Nakayu: After we turned eight years old, we would become Santa's helpers. After the rest of the family went to bed, one of us would get to help stuff others’ stockings (we never did our own), and sorted everyone's gifts.

Holiday films certainly have a place in our culture. When I went to Facebook to ask for your favorite Christmas movie quotes, I got more responses than I knew what to do with! Christmas Vacation, Elf, the Grinch and Home Alone were certainly the most popular. It’s funny how lines from these holiday movies jump into our heads even when it’s not the Christmas season. A few months ago when we put my four-month-month old daughter in her pink fuzzy bear suit, we couldn’t help but laugh at how cute and bulky she looked. Her appetite for her fists was as strong as ever, even though she no longer had access to her

hands. It reminded us of Ralphie’s brother from A Christmas Story after he was all bundled up to go outside and said, “I can’t put my arms down!” Other times when I'm trying on clothes, I find myself reenacting Jim Carey’s Grinch. “Ooh…. Ahh… Hmmm….That’s it, I’m not going.” Our Mayor and City Council Members have shared a little about themselves, and divulged their favorite Christmas movies, holiday treats, movie snacks, and a few family traditions. Who knows, maybe you might be inspired to try something new this year!

Mayor Robert Dandoy’s favorite holiday movie is "White Christmas" with Bing Crosby, because it really hits home for him.

"During my active-duty years serving in the Navy, there were a couple of times that I didn't know if I'd be home for Christmas, or somewhere out to sea.” His sixto-eight-month deployments were a long time to be away from home and family. He connects personally to the challenge of balancing service to country with the desire to be with family during this holiday.

She loves it because it emphasizes the importance of relationships, and how they are established and strengthened. Her favorite snack while watching the movie has to be caramel corn! “White Christmas provides a glimpse of members serving in the military who are not able to be with loved ones, and how they rely on one other's strength and memories of holidays past, to get them through. The movie also provides a better understanding of how life-long friendships are created during a climate of conflict. Sometimes during war, all you can count on are friends.” He loves how enjoyable the movie is, and the lesson that "there will always be better days ahead!"

Ann Jackson

Ann Jackson and her family are big movie watchers, so it makes it hard to narrow it down to just one. Her top three choices are "Christmas Vacation, Elf, and Christmas Story."

“You can tell we are big fans of comedies… We always enjoy watching them with a big bucket of popcorn, some chocolate, and a Coke.” Her family has a tradition of getting together Christmas Eve and playing games and exchanging white elephant gifts. “When my kids were little, my husband and I would never put their names on their presents, because they were always trying to figure out which gifts were theirs by shaking and sometimes unwrapping them. Since we have four kids, we used code names such as Beatles members, Simpson characters, and other famous foursomes. Every year our kids thought they had figured out who the gifts were for, but they were never right!”

She enjoys making her father's traditional recipe for English toffee & caramels.

Another favorite Christmas tradition of hers is making English toffee and caramels from her father's recipes. “It's something that all my family and friends look forward to receiving every holiday season.” She also gets a kick out of giving gifts to all her children and grandkids. “I always go overboard every year, even though I promise myself I will cut back.” For her, the greatest gift of all is having four wonderful children, eight precious grandkids, two sons-in-law, and a daughter-inlaw to celebrate Christmas with. “I hope they all know how much I love them all year long, not just at Christmas.”

Joe Paul

Christmas wasn’t always a happy time for Joe Paul. For a long time, Christmas brought a resurgence of grief.

When he was eight years old, his mother died unexpectedly just a few days before Christmas. She was 42 at the time of her passing, and her death was caused by a blood clot. Her death took the whole family by surprise. Joe's mother was buried on Christmas Eve, and on Christmas Day they opened the presents meant for her; they returned them the next day. Six months later, his father died on Father’s Day. “I think he just lost his will to live. I watched him go through hell for six months. They ruled [that he died of] natural causes at 49 years old.” After his father's death, Joe was placed in the care of his second-oldest sister, who was 20 and single at the time. Anyone who has lost a loved one knows what it’s like living through the anniversary of their passing; imagine the weight of losing a mother and father that early in life ~ it was a difficult time for their family. Joe's children have helped him transform the grief that surrounds the holiday season into joy and hope. When children came into his life, he and his wife realized that they could start their own traditions. They have two daughters and two sons. Each Christmas Eve, they all write a letter to Jesus, telling Him what they have done that year, and what they hope to do the next year. They also buy and read a new Christmas book every year. Joe has a passion for guns, so he finds himself quoting “you’ll shoot your eye out,” from A Christmas Story. His kids seems to quote Mr. Narhwal from Elf, saying “Bye Buddy, I hope you find your dad,” whenever the situation allows. One year they received a popcorn-maker for Christmas, and now that's Joe’s favorite movie snack.

6 quarts popped corn 2 cups brown sugar 1/2 cup Karo syrup 1 cup (2 sticks) butter 4 tsps cream of tartar 1/2 tsp salt 1 tsp baking soda

Bring brown sugar, Karo syrup, butter, cream of tartar, and salt to a boil and cook over low heat for 5 minutes. Remove from heat and ADD 1 tsp BAKING SODA. (Beware, this becomes foamy) Pour over popped corn in a large roasting pan (disposable aluminum turkey roasting pans work great). Bake at 250 degrees for one hour, stirring every 15 minutes. Pour over waxed paper, spread out and let cool.

Several years ago, Diane and her family planted 5,000 pine tree seedlings, so they could choose their own Christmas tree yearly. For the first two years, they chose the largest trees in the entire field, which at that time were only one to two feet tall! They dug them up so they could have a live Christmas tree, and planted them in their backyard the following spring. “They're very tall now!” she said. “Every Christmas Eve, we have a special dinner with all the family, and focus on the “true meaning of Christmas.” We choose and emphasize a special Christmas concept each year, and attach a reminder on our Christmas socks.” It might be a candy cane to represent the shepherds, or a star to represent the Star of Bethlehem. “It's nice to look at our stockings and remember what each emblem represents.” They also incorporate service to others into their annual Christmas traditions, and finish the festivities on Christmas Eve with a reading of the Christmas story from Luke.

Bryon Saxton’s favorite Christmas movie is Die Hard with Bruce Willis. If you’ve seen it, I don’t think we even need to mention the most well-known quote from that movie. You know what it is!

Kettlecorn is his favorite movie snack, and he loves their tradition of having dinner and stockings at Grandma’s house. And what do they enjoy eating there? Noodle Casserole and Pork Chops in Mushroom sauce. Sounds divine! One thing is certain: the Roy City Council cares about the community they serve. If you have a concern, reach out, and participate in their meetings. I recently moved to Roy; watching city council meetings in other cities has taught me that it’s my civic duty to be aware of what’s happening in the city I live in, and let my voice be heard. If you have a comment ~ if you see something happening in the city that is going well, or if you see something that needs some attention, let them know. You can watch the meetings on YouTube (if you watch them after the fact, you can turn the speed up to x2 to make them sound like chipmunks!). Each of the council members care about you and the city as a whole. I firmly believe that it is at the local government level we can really make the biggest impact, and personally, I think Roy is in good hands. Merry Christmas!

he cold air seemed to freeze the inside of my nose as I initially walked down my front porch steps to go deliver newspapers. It had been snowing the night before and big chunky flakes continued to drift to the ground to muffle every sound except my feet squeaking in the snow. As I began to move, my body started to warm up inside my old blue coat with newspaper ink smeared on the sleeves. The winter solstice was still approaching so dusk continued to draw out it’s time below the horizon the way I wished to draw out my time under my covers. It was about 5:45 a.m. as I walked the two blocks of my paper route. The roads had yet to be plowed, the sidewalks yet to be shoveled, so I tromped my way along while everyone else in the neighborhood was still asleep… or at least I thought they should be. The fresh blanket of snow accentuated the blushing glow of the Christmas lights decorating some of the homes on my route. I can’t tell you how much the memory of this feels like home. The Christmas lights in yards and fringing the roofs, icicles dangling from porch covers, cats eyeing me from inside the homes, crunching the frozen ice in the gutters. It’s vivid and wonderful even though I probably wouldn’t have described it that way when I was delivering the papers. My home was smack dab in the middle of my paper route. I had it from about the time I was in 4th grade until about 8th grade. It didn’t matter the weather, every day I went out. Although sometimes my dad graciously offered to drive his car when the papers were especially big or the weather was especially atrocious.

The Deseret News and The Salt Lake Tribune recently announced they will no longer be a daily newspaper starting on January 1, 2021.

My paper route gave me a reason to take what ended up being a meditative walk every day, but unfortunately, those days of delivering newspapers probably won’t be around for my children. I’ve seen my sister sadly let go of her route when the Standard Examiner decided they would no longer drop off her papers at my parents home for her. It didn’t make financial sense to continue the job. The Deseret News and The Salt Lake Tribune recently announced they will no longer be daily newspaper starting on January 1, 2021. Their weekly newspaper will be delivered by mail from here on out. According to the New York Times, “The economic decline caused by the coronavirus pandemic has pummeled a local newspaper industry already struggling with declining revenues, layoffs and pay reductions in newsrooms across the country.” This doesn’t mean stories won’t be written, but we will need to go online to read them. As our world shifts, let us not forget the role the newspaper plays in our society. It helps keep us accountable. It brings to light things the average person might not know about. The bad news that so many want to avoid can help us make changes to the way we approach the future. The good news can help us see the progress we have made and be inspired by those around us. The information we read can help us make educated decisions or lead us to research further into an issue. We can think critically about what we read or listen to and discuss our opinions with others. The news gives us things to think about that might not have otherwise crossed our minds. The press is a critical element in our freedom so I hope we can support it during these times of change. Ye Old Holiday Recipes

Parsley Stuffing

We’ve found a couple of classic favorites from THIS SPACE RESERVED readers that are time tested and approved! Recipes

This recipe comes to us from Sarah Ford. Her husband’s stuffing recipe came from England and across the plains with his ancestors. It was handed down and taught to every generation and now he’s taught the kids to make it. His great great grandfather was Charles Lambert, a stone mason on the Nauvoo temple in Illinois and also the Salt Lake Temple. In fact, he carved many of the old headstones in Salt Lake City cemetery and Bountiful city cemetery. The recipe for Parsley stuffing is attributed to his line. Heavy bread torn into pieces Lots of softened butter Parsley

That’s it! It’s a time consuming, labor intensive process, but everyone loves it. You have to use the densest, heaviest bread you can find. Tear it into pieces. You wash and finely mince parsley leaves, pat the excess moisture out, and mix with the bread. Then you take softened butter and with your hands, mix it through the bread and parsley. I can’t even tell you amounts because it varies. It’s all done by a “feel.” However, we use six to eight loaves of bread, six to eight bunches of parsley, and 2-4 pounds of butter to feed everyone. The bread is then roasted in the oven until it is toasted golden brown. It has to be watched carefully so it doesn’t burn. Our kids have helped with it since they were old enough to tear pieces of bread. We make a lot, enough to last for a week or so after Thanksgiving. It also freezes really well.

Christmas Breakfast This recipe came to us by Jill Bonsteel, who had a great grandmother who would put milk gravy on everything. They call it Christmas Breakfast. Cooked ham slices Eggs sunny side up or over easy Homemade bread broken up Milk gravy with ham drippings (recipe below)

All ingredients are cut in small pieces and mixed all together. One year, they used fresh bread, a hillshire farms summer sausage powered eggs and powder milk and it turned out fine too.

Paula Deen’s Milk Gravy Recipe 1 -2 tablespoon vegetable oil or 1 -2 tablespoon vegetable shortening 4 tablespoons all-purpose flour 3 cups whole milk 1 teaspoon black pepper 1⁄2 teaspoon salt

Use ham drippings instead of oil

Heat 1-2 tablespoons oil in a skillet over medium heat. Whisk in flour, whisking constantly for about 1 minute. Slowly add milk, whisking constantly. Stir in pepper and salt and continue cooking. Whisk constantly for about 10 minutes, or until thickened.
