ear the end of what is commonly referred to as the Ice Age, as glaciers began to retreat to the north, large puddles of water were left standing. One of those puddles was Lake Bonneville, formed about 30,000 years ago. It was a fresh water lake that covered the northwestern deserts of Utah, Nevada and Southern Idaho. For about 15,000 years, that lake dominated the Great Basin. 15,000 years ago, a geological event occurred near Downey, Idaho, north, between Preston and Malad at Redrock Pass, which lowered the depth of Lake Bonneville by 300 feet in just days! The water flowed from Lake Bonneville to the Snake River and then on to the Columbia, emptying into the Pacific. This catastrophic event created Lake Provo, a lake with no outlet. This event gave rise to the Great Salt Lake, after 5,000 additional years of inflow only and evaporation. When the frontiersman Jim Bridger discovered the Great Salt Lake in 1825, there were thousands of bison roaming the shoreline in Hooper, Clinton, Sunset, West Point, Clearfield, Layton and Kaysville. In fact, the bison created a significant pathway along the western shoreline. We know that trail as the Bluff Road. Early pioneers named this region of north Davis County the Big Range as it provided excellent grazing for livestock, just as it did for bison. Sadly, five years after Bridger’s visit, during the winter of 1830-31 severe snows in the valley stranded the beasts. They died where they stood. The victims of starvation, on the Big Range, that winter. Their impact remained! In the 1850s, pioneers using the Oregon Trail discovered that it was possible to pass through Salt Lake on their way to the Oregon Territory to rest livestock and restock. Once accomplished, they continued northwest on that old bison-trampled path to the City of Rocks in Southern Idaho, rejoining the Oregon Trail blazed by John Freemont and Kit Carson. That lonesome bison route was renamed the Old Emigrant Trail. Perhaps you’ve discovered the monument to its existence at 2500 S Bluff Road. I am a boomer! As a boy I remember listening to the radio a lot. My mother loved a serial soap opera called Young Dr. Malone. I remember listening to Gunsmoke. Sheriff, Matt Dillon, was read by William Conrad. I was a big fan of Gene Autry, too. I loved to hear him sing. Although Bing Crosby was the first to record Home on the Range, I had a personal preference for Mr. Autry’s version of the song; lyrics written by Dr. Brewster M. Higley in 1872 under the title of My Western Home. Home on the Range would become the State Song of Kansas in 1948. It well could be Syracuse City’s anthem! “Oh, give me a home where the buffalo roam[ed]…”

Syracuse City Updates 2020 Census Task Force The Mayor is forming a task force to assist the US Census folks to prepare for the 2020 US Census. This task force will be charged with helping to alert residents of the census scheduled for next year. An accurate reporting of all of us by location is critical to funding and representation. Question: What are these Syracuse Vision 2050 meetings I’ve heard about? Answer: As the City continues to grow and respond to changes to our community, such as the West Davis Corridor, the Mayor and Council recognize the need to update our City’s general plan. Prior to putting pen to paper, it is critical that we get input from a variety of stakeholders in the City, so that the diversity of opinions and viewpoints are represented in the plan. In order to begin the process, the Mayor specifically invited dozens of stakeholders – including long-time residents, landowners, business owners, recent residents, youth, and developers – to a series of meetings in which they will discuss and provide input on important items, such as transportation, housing, recreation, economic development, and land use. Meetings began in January and will conclude in early March. Input from the members of the Syracuse Vision 2050 team will be utilized by the Planning Commission and staff as they draft a general plan. The City Council will ultimately vote to adopt a final general plan, possibly as early as this summer.

Women in Entrepreneurship Panel at Syracuse High BY JORDAN CASEY
At Syracuse High School, for an FBLA/DECA project, we hosted a Women in Entrepreneurship panel. We invited women entrepreneurs from across the valley to come and talk to our students about their entrepreneurial journey, as well as give advice for our future entrepreneurs. They shared their stories about how they decided to become entrepreneurs and how they have both failed and succeed during their journey. It was an amazing experience for both the students at the school and the entrepreneurs that came and spoke.

Employee Spotlight-Jody Howell Jody Howell – Court Clerk Supervisor As the Court Clerk Supervisor, Jody helps manage the day-to-day operations of the City’s justice court. She is involved with administering the judge’s decisions, organizing cases for court day, and following up with our court customers. Jody has been a dedicated employee of the City for over 19 years. She has held several positions throughout the years, including in accounts payable and in the Recreation Department. Recently, Jody worked with a team of coworkers to develop online court payment processing through the City’s website. So if you are unfortunate (but also fortunate) enough to interact with our court, you can now pay that fine online for your convenience. Jody is known for her outstanding organizational skills, and we are grateful for all she does for our City!

Public Works Updates During this time of season before the rain falls, we would appreciate your help to sweep the curb and gutters and dispose of any leaves, dirt, and debris into your garbage can. Keeping storm drain grates clear will improve the flows and quality of waters going to the Great Salt Lake. This will help beautify the City, increase curb appeal, and will allow “rain down the drain”. When fertilizing the lawn, please apply chemicals sparingly and follow directions accordingly. Don’t allow fertilizer to get onto the streets or into the curb and gutter. If this happens, please sweep up excess and dispose of properly. Thank you so much for making Syracuse City look appealing.
When do I need An Excavation Permit? Excavation permits are required for any work (except landscaping) that is performed inside the city right-of-way (ie. road, sidewalk, park-strip). Examples may include widening a drive approach, repairing underground utilities, and so forth. Permits are obtained at Public Works and online.
Secondary water pipes and reservoirs will begin filling midApril. Please remember to close your valves to prevent flooding situations. This month is a good time to prepare your sprinkler system and make repairs. It is recommended that you install your own shutoff valve and filter, if you don’t already have one. This is the perfect kickoff to the Easter season. We will also be having a combined choir and jazz band concert on Monday, April 15th at 7 pm at Syracuse City Hall. Victory Medal for Cold War Veterans BY RYAN SPELTS
Local DAV Commander Tom Montez, working with Larry Kerr and Ferron Johnson, all part of DAV Davis County chapter 14, have taken up the mantle of honoring those veterans who served in the armed forces from 1945 to 1963 in what has been called the invisible war. A medal was created to honor these veterans and some funding was provided for their purchase; however, once the initial funding was expended, the program virtually stopped. After some research, Larry found out who created the medals and learned that he could purchase them in bulk for $15 each. In speaking with his DAV Commander and other veteran friends, these men felt moved to continue to honor these veterans. Many of these veterans served in terrible times and conditions, serving in bases and active military zones across the world, especially around communist nations to protect free people in neighboring countries. The conditions were terrible and the war though unnamed could be called the actual cold war. These men and women served and can sometimes go unrecognized because they don’t get to carry a title like WWII Veteran. However, they served in submarines, drove tanks and conducted surveillance from Germany to North Dakota. For Utah veterans, this greatly deserved recognition is being made possible by this local DAV unit and led by two Syracuse Veterans, Larry and Ferron. Initially the group was able to raise $500 and purchase 33 medals to distribute. Spreading the word and holding an event to honor these fine veterans, they saw in the eyes and heard from other veterans who attended that they wanted the award and honor as well and wondered if it was possible. This motivated Larry and Ferron to start pulling together resources to be able to honor more of the 70,000 potential recipients, which would take over $1,000,000 in funding to give the medal to every one of them. That is why this group is raising money and holding small events to honor as many as they can. Named the Cold War Victory medal, it is an authorized medal which was supported by Chris Stewart, R-Utah, Congress and the Utah Veterans of Foreign Affairs. The medal (pictured) is a small token of much needed gratitude for the brave who served in those perilous times.
has 40 medals available and are looking for nominees. The public is invited to attend the upcoming event to be held at the Syracuse Recreation Center on March 29th at 5pm. March 29th is now officially recognized as Vietnam Veterans Day after being honored by President Barack Obama in 2012 and then made official for every year by President Donald J. Trump in 2017. This will be a great and fitting day to honor other veterans who served by giving out Victory Medals.

The funding for these local medals is 100% by donations and the medals are purchased in $500 bundles. The group is accepting donations as well as name submissions for the upcoming event and future events. Families can also receive the medal even if their veteran family member has passed away. ome people have all the luck! Have you ever known someone who was extremely lucky? Someone who seems to not only have a silver lining to their clouds but the rain drops are also diamonds! I am not talking about someone who is by nature positive or optimistic, but I am referring to people who against all odds are very lucky.
The Lucky Sister I have five sisters and each of them are great, but one of them is one of the luckiest people I have ever known when it comes to winning things in drawings. It all started when she was quite young-I would say 8 or 9 years old- and she along with the rest of our family attended a credit union banquet. There was a
drawing and she entered and won the grand prize…a TV. None of us could believe it and I was particularly miffed because she was younger than me and was now able to have a TV in her room since she had won it. What the heck!?! I recently texted her for details and she told me that she has had an incredible run at winning things in drawings. She listed off 15 drawings she has won something in with winnings reaching over $1500 over the years. She actually has a sixth sense when she is going to win a drawing. Maybe she should try the lottery or something.

A quick internet search reveals hundreds of stories and even some videos of some very lucky people. One told of an Australian man who was nearly killed in a car accident and was even taken off life support and yet still survived. When he awoke, he celebrated his unlikely survival by scratching off a lottery card on which he won about $12,000 US. A local news station thought that was fascinating and so they brought him on the news and purchased him an additional lottery card
so he could reenact the moment when he won the money. He proceeded to scratch off and win an additional $180,000 US on live TV. That is a lucky man. I think the fact that he survived a major car accident was the luckiest part.
The 4x Lottery Winner Another story told of Joan Ginther who has won the lottery 4 times. Did you know you are more likely to be struck by an asteroid than you are to win the lottery? Well Joan has defied that statistic by winning 4 times -and not small tickets either; she has won over $20mm.
The "I Escaped Death 9 times" There was also the story of a man who had escaped death not one or two times but 9 times. In very dramatic accidents or health scares. He was pulled from a frozen river after his train derailed and crashed. 17 others lost their lives and Frane Selak only had a broken arm. As if that wasn’t lucky enough, a year later, he was on a private plane which started to lose altitude quickly. There was a malfunctioning door and Frane was blown out of that door when it opened. He then fell into a haystack (true story) and was the sole survivor of 20 people on that plane. The last time he defied death was when he swerved to miss a truck on a mountain road. His car struck the guard rail which threw him from his car (he must have had a thing about not wearing seatbelts!). He watched as his car careened 300 feet into the canyon below. To top all of this off, in 2003 Frane won $1.1 million from the lottery, making him a wealthy man. Now that is lucky!
Lucky Symbols There are many symbols of luck
that we as a society have developed. Ancient sailors viewed the albatross as a sign of luck; to the English, the horseshoe is a sign of luck; to the Native American the dreamcatcher is lucky; and Americans view the Rabbit’s Foot as lucky...well maybe not for the rabbit, but you know... for the guy who buys it. And what about 4 leaf clovers? So is being lucky a thing of chance? These examples would seem to suggest that some people are luckier than others. When I talked to my sister about her luck at winning things, she said she has always considered herself lucky. She read somewhere that you can envision yourself winning and it will happen. Maybe she simply benefited from “proof” in her own mind that she could win because of that early win at the credit union banquet and has thus always assumed that she would win in future drawings and attracted that success to herself. If you read the popular book or watch the movie titled The Secret, you will find conversations with many very successful people who believe and teach that the Law of Attraction is the key to luck.

The Parking Spot There are many philosophies of success and the art of creating luck. I believe that you can attract to you success but it does require a conscious effort. My kids and I have a running joke about my parking spot at our local Walmart®. The second stall was available a couple of times in a row after we had taken a few consecutive trips to the Wal. I jokingly told my kids that they saved that spot for me and that it had become my spot. I am

The question many would pose; “Are some people just born lucky, or can one create luck?” I remember starting off really well at a job which was an exact alignment of my skill set which I had developed over a 20 year career. The supervisor said, wow you are doing really well at this, you’re like an overnight success! I responded, yeah anyone else can be an overnight success too, so long as they do what I have done for the previous 20 years before they start here. He laughed and agreed that my previous experience was the key. So can we really create our own luck or is it a simple math
amazed now at how many times we pull into the parking lot and my spot is there waiting for me. It is an ongoing joke with my kids. The other day, someone was in my spot but the one next to it was open. My kids exclaimed “how could they let someone have your spot dad?” I figured one spot off wasn’t too bad.

Tricks and Tips to Help You
CREATE YOUR OWN LUCK
Pursue worthwhile things that matter to you: Decide what it is, and read, study and learn everything you can about the subject. Put one foot in front of
the other. Start moving forward and start learning as you go. I have often taught a new sales person to go get their nose bloodied, or go make mistakes. I don’t think you even know what you don’t know until you make mistakes and learn from them. Also know in advance what you are willing to sacrifice to achieve what you want.

Persevere: I have always loved the story of the man who dug to within 3 feet of gold in Napoleon Hill’s Think and Grow Rich. The man in the story catches the gold
fever and heads west to dig for gold. He staked a claim and began digging. He eventually found some gold and was excited to mine the vein. He would need to get some help and raise money to get the equipment he needed to mine the ore. He borrowed and enrolled family and friends in the cause and went back to the mines with the needed but expensive equipment. They pulled out the initial haul and were excited because they had found a rich vein that was sure to bring wealth and prosperity to the man and his family. Unfortunately the vein they had found soon ended and they began to only pull up rocks. They drilled and drilled hoping desperately to find again the vein but they were unsuccessful. They quit and gave up. They sold their equipment to a junk dealer and went back home to answer to unpaid debts. The junk dealer was an enterprising man and wondered about this mine. He decided to get the advice of a mining engineer to see if there was still a possibility of finding gold in the abandoned mine. The engineer surveyed the project and said that he believed the previous operation failed because they didn’t follow the fault line and that they were merely 3 feet from where gold would be found. He was right. The junk dealer found gold and pulled millions of dollars worth from the same mine that bankrupted the previous miners.

Seek Expert Opinions: The junk dealer showed wisdom in seeking the advice of a successful person in his new field of pursuit. I have often had the chance to hire
new sales people at various jobs I have had over the years. One of the most challenging things I experienced were sales people who, with all sorts of promise and potential, would listen to a negative family member or friend and remove themselves from the chance to succeed. I always say, if you want to learn something, don’t ask the guy on the couch with an opinion on everything, ask someone who is good at it. And if you want to be great at something, ask someone who is great at it and replicate their approach.

Be flexible: I have often found that success looks different from what I had originally envisioned in my mind. My first

I found success in other ways that weren’t so time consuming. They still took work, just not life consuming work.

It also made me grateful for where we had come from.
These tips might not help you win the lottery and definitely will not help you survive a plane, train or car crash, but I believe they can help you create some of your own luck in your life. I have also found that timing is everything. Sometimes the stars align yet at other times they do not. It takes wisdom to know when things aren’t aligning so you can adjust the set of your sails. Like the ocean the tide comes in at times and recedes at others. You can either be frustrated at the receding sea or you can grab a board and enjoy the waves. Recalling Stoker's Nursery BY CHUCK WRIGHT
As soon as we got out of the truck we were met by a tall young man who said, “Welcome to Stoker Nursery. I’m Sid, anything we can help with?” We were introduced to the entire family there (Dad, Delmer; Mom, Ardell; Sister, Sheila) because it truly was a family business. This was the beginning of a long friendship with the family. Later as I became the garden manager of the Grand Central that turned into Fred Meyer, the Nursery became one of our prime suppliers for our garden centers. Delmer Stoker worked at Hill Air Force Base as street and grounds keeper. He built a greenhouse on the west side of Hill AFB. He took pride in the looks of the base. In 1966 he left the base on a medical leave, and took his love of plants. Eventually he opened what became known as Stoker’s Nursery & Garden Center. He began with a simple cold frame beside his garage, then built a small greenhouse in the backyard, which quickly became too small, so he rented a greenhouse on Antelope Drive. In 1968 with wife Ardell and children Sid and Sheila, they began the first greenhouse on 1000 West, in Syracuse, Utah. After that they built one or two each year. In 1969 Delmer talked Sid into quitting his job at RC Willey and coming into the business fulltime. They were selling plants in most of Northern Utah as well as Idaho and Wyoming. Sid was a hard-working man who also instilled this in his kids. After Delmer passed, Sid took over full management of the business. Even though Sid was plagued with medical problems, he always had a smile and hearty handshake for all he came in contact with. I bought many plants from the Nursery as the garden manager. It was a pleasure working with him and all the family. I spoke with Jerry, his wife of almost five decades, and she said, “Let everyone know what a kind and generous man he was.”

Stoker's Nursery had the first greenhouse in Syracuse. Sid Stoker took over the family business after his father Delmer passed. A kind and generous man, Sid always had a smile for everyone. Well Jerry, that is an easy task, because anyone who knew Sid was aware of this. That’s not to say Sid was a push-over. Quite the contrary. When it came to the nursery, he knew what was needed and expected everyone to match his work ethic, but he didn’t ask anyone to do what he would not do. That is likely why he was hesitant to ask for help one year when the snow load became too heavy for the greenhouses and several collapsed. In the spring, he could not muster up the strength to clean up the mess, and discovered he had colon cancer. One Saturday, there were about 50 family and friends that came to help with the clean-up. He said, “I guess I’m a proud man, not wanting to ask for help, but I realized that if you let people help you, it can also be a blessing to them.” When asked about his cancer he said, “I think you can drive yourself crazy if you sit around and ask ‘Why me?’ I just figure those were the cards I’ve been dealt and you try to do your best to make it through.” Sid E. Stoker passed away December 16, 2017 at the age of 69. What an asset to his family, community, and most everyone who knew him. I’m so glad to have been one of those and I think he might be spreading a little joy in heaven with his beautiful geraniums.

These beautiful english bulldogs under a year old came into our home just a few short months ago, yet feel like they have been apart of our family forever. The moment we saw Inga, it was love at first sight, she came right up to us and was ready to go home. What really sealed the deal was she has the same birthday as her human sister, April 17, which is shortly approaching for her first birthday and human sister’s eighth birthday. Inga has been nothing but a perfect family member, sleeping all day long, eating, eating and did I mention eating? She has a very calm demeanor about her and loves all the neighborhood children, and will follow them around like a guard dog. She is VERY protective of her humans. Vladimir came into our lives very shorty after Inga when I assumed Inga needed a buddy because she was just so lazy and needed someone to play with while her human siblings were at school. At first Igna was very upset with us, did not like him, wouldn’t let him touch mom or dad and don’t even think about touching her sister or brother. It took her a few days to
come around to the fact this little man wasn’t going anywhere and she needed to start to love him, and now they act just like siblings, fighting over toys and attention. Vladimir is very hyper, not like your typical english bulldog, he can run all day long and takes very little naps, rarely snores and acts more like a yorkie, although he does have an appetite bigger than his sister’s. The CRAZIEST part about Vlad is when we were registering him through the AKC his serial number pulled up and told us his birthday. You would never believe it, but he has the exact same birthday as his human brother of June 24.

Aaron and Kristi Christensen left the sunshine state to open up their own gymnastics business after falling in love with Syracuse.

aving performed and competed as a gymnast for most of her youth, Kristi Christensen knows the pure joy of being on the mat. She also knows the pressure that she felt regarding preforming at competitions. She and her husband Aaron set out to create a different kind of gymnastics center. After her competing years, she also coached and fell in love with helping children realize the thrill of being able to perform gymnastics moves with confidence. After having five kids of her own while living in California, she took up coaching again about three years ago with a friend who owned a gym in Fresno. She was reminded how much she loves coaching and seeing the elation in the eyes of the children she coaches. Aaron and Kristi started thinking of making a change in their life. Though they loved the sunshine and weather in California, they wanted to find a place that

was more family friendly. After selling Aaron’s printing business, they started looking for where to land next. Kristi had two sisters who had recently moved to Utah and so they took an auto tour of much of the state. During their tour, they discovered many towns that they liked but fell in love with Syracuse and the dynamic it has of being a small town that still has tons of fun stuff for the family. It is like stepping back into the 50s where the kids can play outside and there are lots of neighborhood kids to play with. Kristi says it reminds her of Sandlot when she sees all the neighborhood kids riding around the neighborhood on their bikes. Syracuse also didn’t have a gymnastics center and so they moved their family here and opened Upbeat Gymnastics. The vision Kristi and Aaron have developed is a gymnastics center that is different from most. They
encourage children from walking age to 13 years old and of all shapes and sizes to come and enjoy classes. They are a non-competition, recreation gymnastics teaching company. Their name speaks of their philosophy of building up students in a fun and upbeat way. Gymnastics helps with other sports performance, because it helps with coordination and balance but most of all, it helps with confidence. Kristi knows that some parts of gymnastics can be intimidating and sometimes scary. However, when a child accomplishes a goal, they realize they can do hard things. This is a place where kids can come and learn courage. The gym also has some unique business approaches. They do not have an annual fee or membership costs. It is a pay-as-you-go gym where they encourage trying it out. Aaron said that he didn’t want parents to worry about paying an annual fee if their child only stays interested for four months. This way parents can just pay as they go and only pay while they are still attending the gym. The gym has all apparatuses; spring floor, beams, uneven bars, vault and a tumble track. They also added in a

How long do you Have to Add a New Vehicle Purchase to your Insurance Policy? By Roger Grow
One of the biggest myths I hear about is when someone buys a new vehicle and they are told by the salesman or a friend that they have 30 days to add that vehicle to their insurance. I hear this ALL the time and let me respond as loudly as you can hear this, THERE IS NO STATE LAW OR MANDATE! THIS STATEMENT IS 100% FALSE! Each carrier is different, and each situation is different. Many policies do give you a small window of 2-4 days to get insurance placed on a new purchase, some offer more time but each carrier and policy is different. I contacted five insurance agent friends of mine and asked them about the carrier they represent and how many days their company gives to add a vehicle. Unfortunately some of them didn’t even know and only one of the five gave me the correct number and one called back after he read the policy to change his answer. There are carriers who allow up to 30 days, but only a few and even with

those, the policy must match certain conditions. So the moral of the story is that when you are buying anything that needs insurance don’t take a chance on it not being covered the way you want it to be covered. We had a very nice lady a couple of years ago who swapped out her cute little sports car and upgraded it to the newest model. She heard those words from her sales person, “You have 30 days to add this to your insurance.” So on day 30 she called to add the car to her policy. Unfortunately, this was AFTER she had been in an accident earlier that day. She thought nothing was wrong because of what the car salesman told her, however the car had no coverage. Her policy mandated that she add the vehicle to her policy within seven days. She now had to personally cover the damage to the car she hit and the damage to her car. Fortunately no one was injured, otherwise this could have cost her family everything they had.
Insure your brand new car right away! DO NOT wait 30 days. Other considerations come into play when you have a loan on the vehicle. The bank has loaned money on an asset and they want it insured the day you purchase it. If you wait to add it, the bank may add forced placed insurance to your loan for that initial 30 days and the cost could be much higher than actually adding it to the policy correctly in the beginning. Take this pro tip of the month and add it the day you buy or as soon as you can, don’t take the risk!

passed the Tax Cuts and Jobs Act (The Act). The Act makes sweeping changes to the U.S. tax code and impacts virtually every taxpayer. These changes are now in effect when filing your 2018 individual and business tax returns. Individuals are more impacted by the provisions of the act than any other class of taxpayer. This update is to alert you to some tax changes from tax reform.
INDIVIDUAL TAX RATES: The Act reduced tax rates by 2-3% in each bracket and also made tax brackets wider. The individual income tax rates for 2018 range from 10% to 37% depending on your taxable income. Capital gain rates range from 0-20% depending on the income tax bracket.
STANDARD DEDUCTION: The Act doubled the standard deduction for each filing status (Single - $12,000 and Married Filing Jointly - $24,000). These increases may make it more advantageous to take the standard deduction instead of itemized deductions.
CHILD TAX CREDIT AND FAMILY CREDIT: To help mitigate the elimination of the dependency exemptions, the Act doubled the Child Tax Credit from $1,000 to $2,000. The Child Tax Credit is available for dependents age 16 or younger. The Child Tax Credit is phased out starting at taxable income of $200,000 for single and $400,000 for married filing joint returns. This means that more families will benefit from this credit. The Family Tax Credit is a new $500 credit available for dependents age 17-24 with similar phase out rules.
CORPORATE TAX RATES: The Act adjusted the tax rate for all C-Corporations to a flat 21%. Due to this change, it may be advantageous to reevaluate the entity structure of a business. Companies that are S-Corporations, LLCs or Partnerships may benefit from this flat tax rate because it could be lower than the rate on individual taxes.
PASS-THROUGH INCOME DEDUCTION: The Act created a new deduction for Pass-Through Entities which include LLCs, Partnerships, S-Corporations, Sole Proprietorships and rental activities. This deduction can be up to 20% of the income that is reported on your return from a pass-through entity. This deduction will reduce taxable income which in turn will reduce taxes.
DEPRECIATION: The Act changed the requirements for an asset to be eligible for bonus depreciation. Certain new or used assets (including equipment, furniture, livestock, and some vehicles) acquired in 2018 are eligible for bonus depreciation. Bonus depreciation allows for the entire purchase price of the asset to be deducted in 2018. P
eople the world over make plans to visit our beautiful state. We have some of the most incredible places and natural landscapes in the world. One of these is right here in our back yard and now there is a great new way to see Antelope Island. Tice and Jamie Child opened Antelope E-bikes last spring and rented the old Marina building just past the causway. The idea is that you cannot enjoy the island as much when you drive through it. It is best explored on foot or on a bike. This way you can see the landscape and wildlife up close and personal. We were able to go take a tour this last fall and it was the best experience. We loved the sense of freedom of riding the bikes and the intimacy of experiencing the island up-close and not confined inside a car. We passed some incredible bison and other birds and critters along the way. With the wind in our hair and the bike helping us not to get too tired while climbing the hills, it was beautiful. The best part is that our tour happened around sunset and we pulled up to a rock outcropping, got off the bikes and walked around to the west facing side of the rocks. We were able to witness the most incredible sunset I think I have ever seen. The picture cannot do justice to the beauty of looking over the Great Salt Lake at sunset, the colors were stunning and the peacefulness of that day will long be remembered. I love making unique “green” food for my family’s St. Patrick’s Day meal. These enchiladas are full of flavor and are an easy weeknight dinner. They taste like you spent hours though! Split into two pans and pop one in the freezer to have on hand for busy nights or unexpected guests.
Enchiladas Verdes
2 cups rotisserie chicken, shredded 1 teaspoon garlic powder 1 teaspoon ground cumin 1 teaspoon onion powder ½ teaspoon chili powder 4 oz can diced green chilies ½ large yellow onion, diced (3/4 cup)
3 cloves garlic, minced 1 tablespoon olive oil 28 oz can green enchilada sauce, divided ¾ cup sour cream 12 flour tortillas, soft taco sized 3 cups Monterrey Jack cheese, shredded 1/3 cup cilantro, chopped (recipe continued on next page)

(continued Enchiladas Verdes) Preheat oven to 375 degrees. Place chicken in a bowl and add garlic powder, cumin, onion powder, chili powder, and green chilies. Stir to combine and set aside. Add olive oil to a small skillet and heat to medium. Add onions and cook 5-7 minutes or until they start to brown a little. Add garlic and cook for 1 more minute. Add onions and garlic to chicken. Add ¼ cup of enchilada sauce to the chicken mixture as well then stir to combine. In a separate bowl, add remaining enchilada sauce and sour cream. Whisk to combine. Spray the bottom of a 9x13 baking dish with cooking spray. Ladle about ¾ cup of the sauce mixture into the dish and spread with the back of a spoon. Add 1/3 cup chicken mixture to center of tortilla then sprinkle about 1 tablespoon of cheese. Roll up tightly and place seam side down in the baking dish. Repeat with the rest of the tortillas. They will be packed in tight. Pour sauce mixture over the top, being careful to leave the open ends of the tortillas exposed (so they can get crispy). Add remaining 2 cups of cheese to the top. Bake in 375 degree oven for 30 minutes or until golden brown and bubbly. Garnish with cilantro. Serve with Avocado Green Salsa (recipe on right). A FEW TIPS: • This can easily be made in two smaller pans. Pop one in the freezer and save it for later! • Warm tortillas in the microwave before assembling for more pliability.

Growing up in the Houston area, green salsa was a staple at every Mexican restaurant. There are many different versions, but this one reminds me of my home state the most. It is bright, tangy, creamy and bursting with flavor! It is a must-have accompaniment to my Enchiladas Verdes!
Avocado Green Salsa
½ lb fresh tomatillos (4-5) ½ cup large yellow onion 4 cloves garlic 2 ripe avocados, pitted and skin removed 1 jalapeno, stem and seeds removed ½ bunch cilantro Juice of ½ a lime 1 teaspoon salt ¼ cup water Remove husks from tomatillos and wash to remove stickiness. Cut in quarters and place in food processor or blender. Add the rest of the ingredients and blend until smooth. Add more water if needed to create desired consistency. Taste and add more salt if needed. *No need to remove stems from cilantro.

When I first met my wife, she and I were both starving college students. This poorness was ever present in our grocery shopping. I would go to Melissa’s apartment and she would be eating dinner, which usually consisted of a baked potato. That was it. Sometimes, when she could afford it, she would put ketchup on the potato, but she couldn’t afford toppings. I thought she was crazy, but little did I know at the time but the potato contains all of the nutrients we need to survive, a healthy choice for my starving student wife-to-be. Today potatoes have actually gotten a bit of a black eye because of how we prepare them. Deep frying for fries or chips is just one example.
