Hello Readers! This issue marks Saathee's 23rd anniversary. We began at a dinner table conversation, no business plan, no financing, just an idea. It turned into our first issue, all of four pages, essentially a photocopied folded flyer, back in May 1998. We continued with the support of family, friends, readers, advertisers, and a passion for the print medium. The last 14 months have have been tough, to say the least, for countless businesses and enterprises. We are slowly emerging out of the somber humbleness imposed on us by mother nature with human ingenuity, science and medical advances. We will persevere. The incoming summer promises of normalcy, or at least the beginning of it. Our journey is much like many other small businesses, began with humble means and grown into a viable enterprise via hard work and perseverance. We salute our fellow enterprises, many of whom are our advertisers, and continue our journey to be a valuable source of information and connection for the community. We were watching a cooking show one evening. The veggies were being karate chopped, stacked and sorted, and sent flying into pans. The chefs ran around like proverbial chickens with their heads lobbed off. The cameras panning this way and that way, with quick cuts and closeups. I guess that’s needed to make a cooking show more exciting, like some kind of sporting event. It only made me dizzy, and hungry. This was all being done in a “gourmet” kitchen. Just as the sous chef was sousing something and the pastry chef was buttering something, a deep, philosophical question arose in my head. Who anointed the French as de facto masters of the culinary world? People from around the world go to France to “study” cooking. Cooking food is universal, whether done on open fires in a village or in gourmet kitchens. It’s something done globally, multiple times every day. Cooking techniques are passed down through the generations, catalogued and occasionally refined. Yes, learning cooking methods outside of your familial background requires, well, learning. Culinary schools serve their purpose. And the French practically invented the concept of cooking schools. It then made its way to American shores. This is all on Julia Child, an American who trained in France and famously brought French cuisine to America. Millions of housewives of the era tuned in to her TV shows and bought her books. Also, partners in this effort, Hollywood, with its ability to create iconic imagery, characters, and stories, quite a bit of it was France-centric. In the grand scheme of things, what America does, and adopts, the world does. So, you have the French school elevated to a sort of global standard. Commonly used cooking-related terms: chef, cuisine, menu, sauté, braise, a la carte, entrée, hors d’oeuvres, gourmet, well you get my drift, are all French origin. Ah, but let’s face it, no French culinary school can cross knives with a Desi grandma or auntie or a dhaba cook and their time-softened and love-flavored cooking methods, passed down through generations and familial lines. Time stands still as the mustard seeds begin popping in hot oil and pinches of spices begin their heated dance in the pan. This is where magic begins. The base is prepared. She is proficient in the Jaipur and Lucknow Gharana of this art form. Guru Neena Jha has taught, choreographed and performed in the United States, Europe, China, Japan, Macau, Hong Kong and India. She is also an exponent of the Indian percussion instrument known as “Tabla” (drums) and has been teaching this rhythmic instrument since last many years. Guru Neena Jha has won prestigious awards in India and abroad.

Immersive Van Gogh Exhibit: Charlotte, NC (June 18-Sept 12, 2021) Immersive Van Gogh was created by the world-renowned master of digital art, Italy’s Massimiliano Siccardi, who for 30 years has been pioneering immersive exhibitions in Europe. His installations have been seen by over 2 million visitors in Paris. With the help of 60,600 frames of video, 90,000,000 pixels, and 500,000+ cubic feet of projections, this captivating digital art exhibit merges technology, theatrical storytelling, and world-class animation. Full Frame Documentary Festival: Durham, NC (June 2-6, 2021) The 24th annual Full Frame Documentary Film Festival is a dedicated to the theatrical exhibition of nonfiction cinema. Interstate Water Wars are Heating Up Along with the Climate By Robert Glennon, the Conversation

Dry times in the West The situation is most urgent in California and the Southwest, which currently face “extreme or exceptional” drought conditions. California’s reservoirs are half-empty at the end of the rainy season. The Sierra snowpack sits at 60 percent of normal. In March 2021, federal and state agencies that oversee California’s Central Valley Project and State Water Project – regional water systems that each cover hundreds of miles – issued “remarkably bleak warnings” about cutbacks to farmers’ water allocations. The Colorado River Basin is mired in a drought that began in 2000. Experts disagree as to how long it could last. What’s certain is that the “Law of the River” – the body of rules, regulations and laws governing the Colorado River – has allocated more water to the states than the river reliably provides. The 1922 Colorado River Compact allocated 7.5 million acre-feet (one acre-foot is roughly 325,000 gallons) to California, Nevada and Arizona, and another 7.5 million acre-feet to Utah, Wyoming, Colorado and New Mexico. A treaty with Mexico secured that country 1.5 million acrefeet, for a total of 16.5 million acre-feet. However, estimates based on tree ring analysis have determined that the actual

Interstate water disputes are as American as apple pie. States often think a neighboring state is using more than its fair share from a river, lake or aquifer that crosses borders. Currently the U.S. Supreme Court has on its docket a case between Texas, New Mexico and Colorado and another one between Mississippi and Tennessee. The court has already ruled this term on cases pitting Texas against New Mexico and Florida against Georgia. Climate stresses are raising the stakes. Rising temperatures require farmers to use more water to grow the same amount of crops. Prolonged and severe droughts decrease available supplies. Wildfires are burning hotter and lasting longer. Fires bake the soil, reducing forests’ ability to hold water, increasing evaporation from barren land and compromising water supplies. As a longtime observer of interstate water negotiations, I see a basic problem: In some cases, more water rights exist on paper than as wet water – even before factoring in shortages caused by climate change and other stresses. In my view, states should put at least as much effort into reducing water use as they do into litigation, because there are no guaranteed winners in water lawsuits.

Film Clips Ranvir Shorey Returns in Salman Khan’s Govind Namdev to Play Tiger 3 Historical Character Nana Fadnavis

Salman Khan and Katrina Kaif’s franchise hit Tiger 3 is currently filming. Emraan Hashmi has been added to the cast while Ranvir Shorey, who portrayed Khan’s handler Gopi Arya in Ek Tha Tiger (2012), will reprise his role in Tiger 3. Shorey did not appear in the 2nd film of the franchise, Tiger Zinda Hai. While writing Tiger 3, producer Aditya Chopra and writer Jaideep Sahni decided to bring Shorey back as the trusted aide of RAW agent Avinash Rathore portrayed by Khan. Director Maneesh Sharma hopes to film some major portions of the movie in Istanbul and Dubai once the pandemic situation improves.

Irrfan Khan’s Son to Debut in Anushka Sharma Production Anushka Sharma’s film company Clean Slate Filmz will produce the supernatural thriller titled Qala that will feature the late actor Irrfan Khan’s son Babil Khan alongside Tripti Dimri and Swastika Mukherjee. Taking to his Instagram handle to talk about his launch, Khan shared a video from the sets of the film saying, “I’m a bit skeptical about the phrase ‘getting launched’ because the audience should launch off their seats while watching our film and not any individual actor.” The film is being directed by Anvitaa Dutt. The film will stream on Netflix, no date has been announced. Talking about the film, Dutt said, “Mother-daughter relationships are sacred and often complicated. Veteran actor Govind Namdev, seen in myriad character roles over the years, will portray Nana Fadnavis in Arjun Rampal starrer period drama film The Battle of Bhima Koregaon, by directors Ramesh Thete-Aashu Trikha. The film also stars Sunny Leone and Digangana Suryavanshi. Namdev told an interviewer, “I’m playing a historical role of Nana Fadnavis who was a strong and wise person during peshwa reign. He is an advisor of a king and guides him on running the kingdom and helps to take wise decisions. It is a very complex character.” The film takes the audience back to the era of the Peshwa regime in Maharashtra two centuries ago. Celebrated art director Nitin Desai will recreate the period piece. The Battle of Bhima Koregaon is slated for a theatrical release on September 17.

Ajay Devgn Directs and Stars in MayDay Ajay Devgn has begun work on his fourth directorial, MayDay. The superstar also acts in this film along with Amitabh Bachchan and Rakul Preet Singh. It is scheduled for release on April 29, 2022. MayDay is inspired by a littleknown true incident, the 2015 episode of a Jet Airways DohaKochi flight that had a close shave due to poor visibility. The flight had 141 passengers and eight crew members on board. 28

Trouble arose when the flight, which took off from Doha, tried to land at its destination at Kochi but was unable to do so due to poor visibility. The plane was then diverted to Trivandrum where the visibility was equally poor, prompting the pilots to initiate a May Day call. After three failed attempts, the plane landed at Trivandrum airport with only 250 kg of fuel left. However, the minimum a Boeing 737 aircraft should have as fuel reserve is about 1500 kg. A trade expert says, “The incident made news at that point but was soon forgotten. Hence, audiences would be in for a surprise when they’ll see MayDay and realize that it’s inspired from a shocking, true incident. Also, the papers only reported about the incident but didn’t follow up with the case. So one hardly knows what happened later on. It’s an exciting idea that Ajay Devgn has chosen for his directorial venture.”

Knowledge Dhola–Sadiya Bridge The Dhola–Sadiya Bridge, also referred to as the Bhupen Hazarika Setu, is a beam bridge in India, connecting the northeast states of Assam and Arunachal Pradesh. Spanning 5.69 miles in length, it is the longest bridge in India over water. The bridge spans the Lohit River, a major tributary of the Brahmaputra River, from the village of Dhola (Tinsukia District) in the south to Sadiya to the north. Dhola–Sadiya Bridge has been designed to handle the weight of tanks weighing 60 tons and can serve as a defense tactical asset for India. The bridge enhances Indian Army’s mobilization capabilities and movement of troops and heavy equipment in the forward areas bordering China. The boatmen who used to deploy all their boats whenever an Army convoy arrived have lost a big share of their business. Around 150 boats used to ply between the two ends of the river and with opening of the bridge, their livelihood is heavily affected. The bridge was approved for construction in 2009 with funding from the Government of India as part of the Arunachal Pradesh Package of Roads and Highways. Construction began in 2011 and was completed in 2017. The bridge is named after Bhupen Hazarika an artist, singer, and filmmaker from Assam. Sadiya is his birthplace. It was once a thriving town until an earthquake struck on August 15, 1950 and the Brahmaputra River changed its course, engulfing half the town. Since then, the place has been struggling with transportation woes. Since India’s North East is a high-seismic region, the bridge was built using state-of-the-art equipment, including imported hydraulic rigs, and provided seismic buffers in all its 182 piers.

USA  Knowledge Lake Pontchartrain Causeway The Lake Pontchartrain Causeway, sometimes called The Causeway, is a fixed link composed of two parallel bridges crossing Lake Pontchartrain in southern Louisiana. The longer of the two bridges is 23.83 miles long. The southern terminus of the causeway is in Metairie, Louisiana, a suburb of New Orleans. The northern terminus is at Mandeville, Louisiana. In 1955, the Louisiana Bridge Company was created to undertake the construction project. It took 14 months to build the first two-lane span of the causeway, which opened in 1956. It is the longest bridge over water in the world (continuous). Several scenes in the 2020 superhero film Project Power starring Jamie Foxx were filmed on the causeway. The bridge was designated as a National Historic Civil Engineering Landmark by the American Society of Civil Engineers in 2013. The twin spans are situated 80 feet apart with seven crossovers / turnouts linking the two and providing space for breakdowns and other maintenance needs. The bridges are supported by 9,500 concrete pilings. The bridge system travels at an average height of 15 and 16 feet over the brackish waters of Lake Pontchartrain. There are three main ship passes, two elevated to 25- and 50-feet clearances. A drawbridge accommodates the larger ships. 54-feet long concrete slabs constitute the actual bridge deck and roadway surface. An expanded causeway, to handle more cars, opened to traffic on May 10, 1969. 80 police units and 30 maintenance trucks patrol the causeway at any given time. Other safety precautions included a radio station and 102 call boxes. Saathee.com

As the season gets warmer, we look forward to more fresh vegetables in the summer. Saturday mornings are spent in trips to Farmers Markets, and we also have plenty of farm stands that sell seasonal produce. One of the summer vegetables that is enjoyed by kids and adults alike is Okra, also known as Lady’s Fingers in many other countries. History Okra is an all-growing, warm-season, annual vegetable from the same family as hollyhock, rose of Sharon and hibiscus. Botanists believe okra originated in modern-day Ethiopia. Cultivation spread quickly to North and West Africa, the Middle East and India via established trade routes. It is known to be cultivated by the Egyptians in the 12 century AD, from where travelers brought it north and west to Mediterranean lands, and ultimately to the Balkans, and east to the subcontinent of India. It traveled south into the central lands of Africa and arrived in the United States in the 17th &18th century, with the slave trade from the Gold Coast, and was introduced as nkurumun. The word “okra” is derived from the word okuru, the name of the plant in the Igbo language of Nigeria. Okra brought in by slaves from Angola was called ochinggombo, later shortened to ngombo, and popularized in Louisiana as gumbo. The term Lady’s fingers, as the name suggests, is based on the shape of the pods. Besides its use as a food, okra is used commercially in many industries. The fiber from the stem of the plant is used to make polymers. The mucilage produced by the okra plant can be used for the removal of turbidity from wastewater. It is also being developed for use in making biodegradable food packaging.

the recommended levels of vitamin B6 and folic acid are present in a half cup of cooked okra. The slimy texture of okra that may turn some people off is its most important nutritional quality. About half of the fiber in okra is soluble fiber in forms of gums and pectin. Soluble fiber helps to lower serum cholesterol, reducing the risk of heart disease. The other half is insoluble fiber which helps to keep the intestinal tract healthy, thus decreasing the risk of some forms of cancer, especially colorectal cancer. Culinary versatility Okra is prepared in Indian cuisine in many different ways. It can be fried, sautéed, stuffed, made into dry sabzi, or with a gravy, or added to raita and kadhi. In African cuisine, and in US, okra is served fried, made into gumbo, soup, stews and stir fry, and pickled. Whichever you prefer to eat it, do include this nutritious vegetable in your diet! Litigation or conservation Before Utah takes the precipitous step of appealing to the Supreme Court under the court’s original jurisdiction over disputes between states, it might explore other solutions. Water conservation and reuse make obvious sense in St. George, where per-person water consumption is among the nation’s highest. St. George could emulate its neighbor, Las Vegas, which has paid residents up to $3 per square foot to rip out lawns and replace them with native desert landscaping. In April 2021 Las Vegas went further, asking the Nevada Legislature to outlaw ornamental grass. The Southern Nevada Water Authority estimates that the Las Vegas metropolitan area has eight square miles of “nonfunctional turf” – grass that no one ever walks on except the person who cuts it. Wait, I actually did that. As the world gradually started shutting down, I grumbled from behind the only mask then available in a panicked market – the one I used to mow grass with. “It’s going to be bad,” I would go. “Soup lines wrapped around the corner; people dead on streets; millionaires and billionaires going bankrupt.” Bwahahaha! Last week, I had a meeting with a business partner (this time I had a better mask), and saw him at his laptop when I walked in. “Was just checking my investments,” he smiled. “Put $20,000 in last month. I now have $60,000.” Lots of things flashed though my head at that moment. What happened to the global market collapse? The rich seem to get richer. What part of the economy is hurting? My father looking over his Newsweek magazine and saying, “Stocks are gambling; and they don’t generate any jobs.” This business partner gave me a phone number scribbled on the back of a Publix receipt. “He charges $500 and you get his daily email with recommendations and his weekly newsletter. But keep it under your belt.” I stared at it when I got home. Tripling my money every month. Wouldn’t that be great. What would I buy with that windfall? Problem is, I couldn’t think of anything. I do need a grease catch tray for my grill … but that doesn’t require buying and selling bank or tech stocks. I threw the number in the trash. And here we are now. The market is supercharged. NASA Picks SpaceX to Land Next Americans on Moon Including First Woman on the Moon

At least one of those astronauts will make history as the first woman on the Moon. Another goal of the Artemis program includes landing the first person of color on the lunar surface. The agency’s powerful Space Launch System rocket will launch four astronauts aboard the Orion spacecraft for their multi-day journey to lunar orbit. There, two crew members will transfer to the SpaceX human landing system (HLS) for the final leg of their journey to the surface of the Moon. After approximately a week exploring the surface, they will board the lander for their short trip back to orbit where they will return to Orion and their colleagues before heading back to Earth. Dance and Yoga a Perfect Match Dances of India by Dr. Maha Gingrich It has been over a year since we have been dealing with the challenges of the pandemic and its physical and mental impact on our lives. By shutting down everything around us, it shut down our senses, positive interactions, ability to communicate and share our emotions, just to name a few. That is why I decided to go ahead with the 18th Anniversary of Dances of India as a virtual celebration on April 10, 2021. This show not only energized 2000 plus people who watched us but also my dancers and musicians. During these difficult times, I hope we will take a moment to reflect on the positive changes we want to make in our lives and to help others in need. I usually have a very busy schedule between family, job, dance classes, arangetrams (dance graduations), serving on the boards, community work, regular cooking, cleaning and so on. Many of you probably can relate to this schedule issue. As most of you know, when we have negative stress, or when we sit in one place for extended periods of time, whether it is at work, at home or in a meeting, we all experience the same side effects such as tight shoulders, stiff neck, headaches, fatigue, and tight back. Without yoga I would not be able to maintain my sanity and good health. I taught Yoga for several years and enjoyed every bit of it. Due to my busy lifestyle, I had to let go of teaching yoga. However, I still practice yoga when my body and mind call for it. This is a treasure that you can own for life and utilize as needed. This inspired me to write about the philosophical and religious similarities of Yoga and dance and its interdependence. I read that Patanjali’s Yoga Sutra was inspired by an encounter with Lord Nataraja. If that is true, I can easily see the connection. Lord Shiva is considered the Adi Yogi that is the father and founder of Yoga. He is the foremost among the yogis and the first teacher of the science of yoga. Lord Shiva is also the founder or king of Dances. Therefore, the sources of these two artforms intertwine and influence each other. Yoga means Union. In principle, lots of programmers jump in, inspect, and write or modify code that keeps the software growing and improving. Alas, “opensource thinking” is not quite the same thing. First of all, all the thinking out there is not from people who are motivated to really take the time to understand things and enjoy the process of creating insights for the pure enjoyment of doing it, or for the high that comes to an artist relishing the birth of their own brainchild. There are a lot of people for whom information production is a job. They are paid for this by people who may have motives and bias; of course the hands-on information artist may have their own motives and biases too, not least of which is to get the research Saathee.com

and writing done within deadlines, and without compromising their personal lives and hobbies. Secondly, information is not software. You can test software to make sure it works. It works; or it doesn’t. Information on the other hand is often in the form of words and loose language-based logic that can be used to knead raw data into various shapes and forms as desired by the shaper. So, information is not only inherently probabilistic but also variably probabilistic in its parts. Some of it can be true, some of it can be false, and there can be fifty shades of gray in between. Fact or fiction? That’s generally not an easy question to answer. It is hard to test the structural integrity of an adjective as we might with software, or something even more tangible, e.g. a bridge. Just how bad is “bad”? And when someone says there was a “lot” of this and a “little” of that, what do those words mean? Things are measured relative to some baseline measure, and maybe that measure resides inside the author’s head or, perhaps, and a bit more deviously, it’s relative to where the author would like the reader’s mind to go. The weightless mind The human mind is inflatable. It can be pumped up and set afloat to soar into the azure skies if there are no anchors to moor it to firm ground. This does happen when we read some headlines or watch a video clip that causes our minds to boldly go where no minds should have gone before. College Admissions Insider by Lindsey Conger Colleges have increasingly gotten more competitive: the applicant pools at Harvard University, Columbia University, and Dartmouth University increased by more than 30 percent for the Class of 2025. Therefore, having a strong resume that stands out is crucial for students applying to highly selective colleges or direct medical (BS/MD) programs. One way to do so is by gaining handson research experience. Here are three paths for high schoolers to achieve that. High School Research Pathways Students should first look at what their high school offers; some schools have a research class like the Advanced Placement (AP) Capstone program, which consists of two courses: AP Seminar and AP Research. Students will be mentored on completing research, writing a thesis paper, and making a presentation. If this AP course isn’t available to students, they can also participate in science fairs or ask a high school teacher to guide them through an independent research project. Airports Step Up Mental Health Assistance as Passenger Anxiety Soars By Katja Ridderbusch, Kaiser Health News

Airport chaplains have become close witnesses to people’s worsening mental condition. “No doubt, the pandemic has accelerated the need for our services to a new level,” said the Rev. Greg McBrayer. McBrayer, an Anglican priest, is the corporate chaplain for American Airlines and director of the interfaith chapel at Dallas/Fort Worth International Airport, the world’s largest airport chapel. During the pandemic, he said, he has seen depression, anxiety and addiction increase among the travelers and workers served by him and his staff of 20 chaplains. “We have encountered a tremendous amount of grief and fear,” McBrayer said, especially among airport employees. In the past year, he logged over 300 counseling sessions via Zoom and more in person. Many struggled not only with economic woes, health concerns and covid deaths, but also with feelings of guilt for being well and employed when some of their former colleagues weren’t. “We’ve seen a lot of workers come up to the chapel because they need a quiet space to sit, chill and maybe cry,” said Walker. In the early months of the pandemic, Hartsfield-Jackson also became a refuge for up to 300 homeless people per night, many with mental health conditions such as addiction and schizophrenia. They were redirected to hotels rented by the city. But now, with a $400,000 grant from the Transportation Research Board, the airport is working with researchers to study homelessness at airports around the world, including how to stage mental health interventions. “We will put together best practices of what airports can do to assist these vulnerable populations,” said Steve Mayers, the airport’s director of customer experience. He said people have been quicker to lose their temper, lose their patience or lose it altogether. “There was a tightness that I’ve never seen before,” he said. That’s why he brought on board Hancock, a nature meditation guide, to join his team of 40 volunteer airport chaplains. Special Presidential Envoy for Climate John Kerry Visits India

Kerry highlighted President Biden’s support for the enduring comprehensive global strategic partnership with India and the importance of two of the world’s largest economies leading together on climate action. The Spring of Hope the nearest CVS Pharmacy providing COVID testing. When some of us caught a cold, we feared the worst and even went through the dreaded nose swab process. I could hear the entire group let out a collective sigh of relief when the results were negative. Just as we resume our vacation activities, we are dropping layers of protection one at a time. Last year, mundane tasks like shopping without gloves, ordering take out, and mustering up the courage to dine in the restaurant seemed as bold as painting graffiti on Church Street in the middle of the night. Today, I am sending the children to school five days a week. And even though the drop off and pick up routine has hijacked my free time; the change has been welcome. A large part of our confidence has obviously been the availability of the vaccine. Even with a few cases of adverse effects, the overall sentiment has been positive. New variants of Coronavirus keep emerging and the world continues its fight for survival. Businesses in the hospitality and tourism industries, for example, are limping back to operation in response to people’s willingness to travel and the economy appears to be crawling in the right direction. It would be unrealistic to flip the switch and rewind to our former way of life. Even though our family has avoided contracting the virus so far, it has insidiously affected our perspective on all important matters. It also stole the carefree spirit of our children and I can’t recall the last time I felt unadulterated joy. After spending over a year under the cloud of a highly contagious disease, fleeting moments

Namaskar, Y’all by Shyama Parui Bags were packed, the car trunk was stuffed with beach chairs and tents and after grabbing our favorite snacks, we set out on our Spring road trip. We sang, we argued, we paused our debate on the best “Avenger” to admire the rows of pecan trees and vast farmlands of rural Georgia, and those in the back seat even dozed off from time to time. Much to our surprise, we even spotted “Trump-Pence 2020” signs on billboards. The leisurely pace and vibe continued until the rumbling in our tummies reminded us that we had to stop for fuel for us and the four-wheel vehicle we were steering. That stop at the fast-food restaurant changed our mood from “relaxed” to “hyper alert”. We geared up with masks, toilet seat covers, sanitizing sprays and approached the restroom with trepidation. I was horrified when I realized that I had forgotten to carry disposable gloves. We practically ran out of the place clinging to the sandwiches and drinks, as soon as “maskless” humans entered. If 2020 was known for despair, then 2021 is slowly showing sign of optimism. For that reason, we continued our journey. Checking in to a hotel still seemed risky, so we rented a house with a few of our close friends who were a part of our pandemic bubble. Decisions about our destination and activities were dictated by the fact that the pandemic is still lingering. Ghee Roast Tangy Paneer

Paneer dishes are probably the most common choices in the vegetarian menu. If you are looking for a new variety, different than usual paneer dishes like matar paneer, paneer kadai or paneer butter masala, here is a unique recipe - Ghee Roast Tangy Paneer. This gives you a refreshing taste with a pinch of sweet (Jaggery). Try this recipe for a change and you will make it more often. By Charu Tiwari Find more recipes by her at CharuTiwari.com

Ingredients 400 grams- Diced Paneer (Indian cheese) 1 cup- Yogurt 6 to 8- Garlic cloves 1 inch- Ginger 1 cup- Finely chopped Onion 1 tablespoon- Cumin seeds 1 tablespoon- Coriander seeds 1 tablespoon- Fennel seeds 1 tablespoon- Fenugreek seeds ½ tablespoon- Black pepper whole 8 to 10- Dry red chili whole 1 teaspoon- Red chili powder 1 teaspoon- Turmeric powder 3-4 tablespoons- Tamarind paste (Substitute: brown sugar and lime juice mixed in equal parts) 1 tablespoon- Powdered jaggery (or brown cane sugar) 4 tablespoons- Ghee (Clarified butter) Finely chopped coriander for garnishing Salt as per taste

Directions 1

Take yogurt in a big bowl; add turmeric powder, red chili powder and 1 teaspoon salt. Mix well to form a paste.

Marinate diced paneer with the paste made in the previous step. Keep the bowl in the fridge to rest for 25- 30 minutes.

Take cumin seeds, coriander seeds, fennel seeds, fenugreek seeds, black pepper whole, dry red chilies (whole) in a pan and dry-roast these whole spices on low-medium heat for 4-5 minutes or until they splutter.

Now transfer these whole spices in a grinding jar. Add garlic cloves, ginger and tamarind paste. Grind these spices into a fine paste.

Heat ghee in a pan, add chopped onion and sauté till they turn golden brown. Now add spice paste which was prepared in previous step, mix and cook for 34 minutes on low-medium heat.

Add marinated paneer along with all the marinating paste left, mix gently with spices and cook covered for 3-4 minutes. Add 1 tablespoon jaggery powder and salt as required, give it a gentle mix.

Cover the pan again and let it cook for another 2 minutes on low heat. Transfer in a serving bowl and garnish it with chopped fresh coriander. Serve hot with Naan/Chapati/Rice.

Biden’s Migrant Crisis and the Impact on Immigration Reform Lindsey Graham (R-S.C.), co-sponsored a bill earlier this year to provide legal status to thousands of DACA recipients, known as Dreamers, said earlier this month that given the situation at the US southern border, he would likely not even support his own bill if brought up for a vote. Graham was quoted as saying that getting bipartisan support for such a bill would be “really hard…until you stop the flow”, which is a grave sign for advocates of reform. Graham has largely been seen as a reformer within the Republican party and his lack of support for reform would likely render any hopes for genuine reform dead on arrival. All of this continues to come under the constant heat of the pandemic, which has highlighted the American’s global preeminence in science, research and logistics. While the US lags behind some of its Western counterparts in vaccine distribution, the fact that much of the vaccination innovation has been powered by US firms and its immigrant workforce is a testament to the importance of maintaining a robust immigration system. As an immigration practitioner, I am reminded as to the miraculous and awe-inspiring impact that foreign nationals continue in our country daily. From construction workers to front-line nurses to vaccine researchers, the lifeblood of ongoing American ingenuity is directly tied to our ability to constantly reinvent ourselves and take the best of the world’s culture and make it our own. However, for all the promise and hope that comes with romanticizing reform, addressing serious and complicated realities, many of which give policymakers a choice between only bad options, is going to be required to occur first. Whether Biden’s team is up for the challenge remains to be seen, but one thing is clear – the multi-faceted challenges that continue to exist in the country’s immigration system are not going away any time soon.

Immigration Matters by Rishi P. Oza President Joe Biden’s inauguration and 100-day agenda promised to be ambitious and has attempted to tackle some gargantuan policy issues facing the US. The passage of the massive American Rescue Plan Act of 2021 solely with the use of Democratic votes signaled the President’s willingness to use his political muscle to push through a huge $1.9 trillion dollar package aimed at buoying the US economy as it recovers from the COVID-19 pandemic. However, the glow of Biden’s election has run headfirst into the realities of governing, particularly on the immigration front. The surge of migrants from Guatemala, Honduras, El Salvador and Mexico to the United States’ southern border has placed a huge strain on the Department of Homeland Security, which has had to scramble to handle the budding humanitarian crisis. These migrants, fleeing poverty, violence and dysfunctional governance in their home countries, appear to be responding to Biden’s softening of his predecessor’s hardline immigration stance, as well as the new Administration’s willingness to house migrant children, who were previously removed expeditiously. The problem has been an intractable issue for multiple administrations, as the poverty, drug trade and ineptness of these governments has caused an increasing number of migrants to flee these broken societies. While returning individuals to their home countries may seem like an obvious immediate response, addressing the core issues of what is causing the migrant flow has emerged as a top priority for the Biden team. Absent resolving some of these systemic issues, policy makers should not expect any type of differing behavior from individuals simply seeking a better life. Community Organizations services it always had. On any given day, we make the same choices we always made after buying the vital, vital essentials like food and toilet paper. In 2019, before the virus, you had the same dollar in your pocket, and the same tough choice. Where do I spend this? And the billionaires were still fighting for that dollar. Looking back at my credit card statements for tax purposes I noticed that I had spent over $5,000 on Doordash and other food delivery services alone. I had food delivered to my home, but also to the kids, and to relatives across the country in hard hit areas. It seems awful and wasteful. But thinking about it, I simply shifted my spending habits from one billionaire to another. I just made one stockholder richer than the other. My food delivery actually kept lots of local restaurants open, and lots of delivery guys employed. My online purchases kept warehouses open and delivery trucks running. Economies are flexible creatures. Unless the loyal subjects run out of money. I have been scratching my head about this issue for a while now. And consumer behavior remains a mystery to me. I mean, where do you start cutting those expenses when it really hits the fan? I have talked about monetary velocity much over the years. The same dollar yanked out of your pocket continues to travel and ripple through the economy in a complex way. That dollar can generate many jobs because it keeps getting spent over and over. The meager stimulus payments barely make a month’s rent for most people, but unless tucked under a mattress by the landlord, the money moves through the economy in a pretty sophisticated manner. In the end, the rich don’t lose sleep over running out of money. They can spend millions every week and still have billions left over on their deathbeds. They worry about us running out of money. It’s about that one dollar, and the competition for that dollar. When the going gets rough, what decisions do you make about where to spend that dollar? That’s where the big sell happens. Is it Netflix or canned beans? Is it the vacation or the rent? Is it new sneakers or tomatoes? I am sort of on a budget. But I am also on a mental health roller coaster during a time when income is low and social interactions are limited. The entire planet is butting its head against the gate to be let out, so it can breathe again. And in this unique time, in this once-in-a-lifetime crisis, we have that dollar, and we have the call of the capitalistic wild waving at us, and sometimes we make strange decisions. We are not big stockholders. We don’t own islands. We don’t fly on private jets. Sometimes instead of food, we buy jeans because … because?

This is not cooking; it is food tradition, it is in the air, an uncodified technique and oldschool flamboyance (dang it, another French origin word). I’m convinced the French stole the idea of “Sauteing” from Desi pan frying. We just didn’t give it a culinary name early enough or have a TV show or Hollywood making films like An American in Mumbai. Other “French” methods are also suspect. No matter. Some of the best meals I’ve had were from food carts or hole in the wall joints or roadhouses and dhabas. Mom and pop joints. Along with home kitchens of friends and family. And that’s that. Don’t need a Paris-trained chef and his crew of sub chefs to have an otherworldly food experience. Just channel old Indian tradition, heat some oil and melt some ghee and the air itself becomes an ingredient, and mouths begin to water. Happiness on Earth. This also holds true for Thai, Mexican, Italian, Cajun, and myriad other cultural kitchens and their particular traditions. Cooking learned over time, honed, and passed down through generations, is the best culinary school of all. Restaurants, dhabas, kitchens, eateries, whatever you want to call them, are best when a sense of home-grown comfort is infused into the food, along with the plating and the Parisian fuss if you will. No disrespect to culinary schools, yes, there is art there, but sometimes the best food in the world is, well, less fussy. What was grandma’s kitchen but a utilitarian gourmet kitchen…spices at the ready nearby, pots hanging on walls, plopping down on the floor as a workstation, if needed, to chop veggies. Yeah, there was no huge refrigerator holding contemporary cooking needs. In her time, folks shopped and bought veggies and dairy on a daily basis. This was when fresh and organic were everyday items, not some type of elite food categories. Ghee was and is the hardy butter and cooking fat, and it doesn’t require refrigeration. Her kitchen even had industrial strength ventilation. Just open the doors and the windows. Later that night, I pondered further upon the purposeful pickiness of Parisian pots, pans, poaching, pairing, and plating so pervasive in our food preparation. I lay in bed, a lovely, single pan and belly satisfying meal cooked by my wife still comforting my entire being. I slept and dreamt of cuisines, kitchens, and places where food is prepared everywhere. The unfathomable varieties of foods and methods of preparation, and perky chefs of dizzying cooking shows, swirling around in my head. The next morning, I woke and cradled my mug of hot masala chai. For the life of me, I couldn’t figure out why also craved a croissant.

Start with the roux. In a large, heavy-bottom pot, heat oil on medium-high heat. When hot, add the flour and whisk until incorporated. Reduce the heat if it’s browning too quickly and starts smelling a bit burnt. Once the roux reaches the perfect color, stir in bell pepper, celery, onion, garlic, and okra. Cook for about 5 minutes or until the veggies are softened, stirring every 15 seconds or so. Stir in stock and crushed tomatoes. Mix until well combined, then stir in cauliflower, spices and seasonings (paprika, garlic powder, onion powder, oregano, thyme, bay leaf, salt, pepper, Tabasco, liquid smoke and Worcestershire sauce). Bring to a simmer and then cook for another 15 minutes or so, until the cauliflower is tender. Serve with cooked rice Stuffed Bhindi Ingredients ½ lb small baby okra 4 tbsp oil 1 tsp. methi seeds 1 tsp. mustard seeds ½ tsp. hing/asafetida For masala 4 tbsp or ¼ cup coarsely ground peanuts 3 tbsp sesame seeds 2 tbsp roasted besan (gram) flour ¼ tsp hing (asafetida) 3 tbsp coriander powder 1 tbsp cumin powder 2 tbsp red chili powder 1 tsp garam masala 2 tsp sugar 2 tsp amchur powder 2 tsp garlic paste ¼ cup chopped coriander leaves 1 tsp turmeric powder Salt to taste Instructions Wash the okra and pat dry. Remove the stem and slit them vertically. Prepare the filling by mixing all masala ingredients. Stuff each slit okra with the filling. Heat oil in a wide pan. Add the mustard and methi seeds and hing. Place all the stuffed okra in the pan. Toss gently till coated with oil. Cover and let it cook for about 8-10 minutes. Keep stirring gently from time to time. To make it crisp, let it cook for 5 more minutes without the lid.

The HLS award is made under the Next Space Technologies for Exploration Partnerships (NextSTEP-2) Appendix H Broad Agency Announcement (BAA). In parallel with executing the Appendix H award, NASA intends to implement a competitive procurement for sustainable crewed lunar surface transportation services that will provide human access to the lunar surface using the Gateway on a regularly recurring basis beyond the initial crewed demonstration mission. With NASA’s Space Launch System rocket, Orion spacecraft, HLS, and the Gateway lunar outpost, NASA and its commercial and international partners are returning to the Moon for scientific discovery, economic benefits, and inspiration for a new generation. Working with its partners throughout the Artemis program, the agency will fine-tune precision landing technologies and develop new mobility capabilities to enable exploration of new regions of the Moon. On the surface, the agency has proposed building a new habitat and rovers, testing new power systems and more. These and other innovations and advancements made under the Artemis program will ensure that NASA and its partners are ready for human exploration’s next big step— the exploration of Mars.

However, we don’t always float. So if someone were to urge us to jump from atop a cliff, it is unlikely that we would. Our survival instincts, and common sense, provide the anchor that holds us back from going where the mind can certainly go but where it would be foolhardy for the body to go. The extraordinariness of this is that we don’t have to strain our intellectual powers to do some complex analysis to end up alive. Our common sense comes rushing in, seemingly from nowhere. “You’ve got to be kidding me!” we say incredulously to the huckster who’s attempting to get us to plunge into the gaping void. We are barely aware of it, but we clearly have a hidden autonomous system that unilaterally activates when we contemplate something that is detrimental to our existence, and it steps in to protect us from ourselves. The heavyweight mind So, like Muhammad Ali, we float, at times, like a butterfly - maybe even most of the time - but when the time comes, we rise to the occasion, and, like the indomitable heavyweight, sting like a bee. The irony is that when we think we’re thinking, we float; and when we’re not aware of any conscious thought, we sting. If somehow we could do more stinging and less floating, would that not make us a bit more successful in the boxing ring of life that we have been thrust into? Maybe when we feel safer, we end up floating up like a helium-filled balloon, and it’s only when we’re faced with a real threat is when the genie that is bottled up inside us rises up and scoops us out of harm’s way? Can’t we unlock our private magic genie at other times too, when we’re not quite as much in real mortal danger? There is a lot of fiction out there. The challenge is to keep that fiction from sucking us in and transporting us to some parallel universe where we become unwitting characters in a plot constructed by mysterious and unscrupulous authors. We need to think critically. Or more critically, we need to not think so that our genie can come out if its bottle more often, and do its magic. Avoid opensource, I say. Write your own code if you must, and let it run free!
