If you share an eagerness for time to develop the amazing characters that come with bottle age or perhaps you are limited with abundant space to optimally store wine for long term cellaring, then allow us to be your personal sommelier and curate a collector’s selection of finely aged wines.

The Saddler’s Creek Annual Museum Release is the perfect time to collect and enjoy some beautifully cellared wines which are in their prime. We have carefully selected and tasted each wine for the 2019 Museum Release and unanimously agree, these gems are in their optimum drinking window and are wonderful to enjoy now or will note further cellaring potential. This year, we also feature the CELLAR ESSENTIALS! A selection of wines crafted for longevity displaying all the essential traits of a wine with excellent cellaring potential lead by our new release, members only, Equus Collection Series 14 Shiraz. The CELLAR ESSENTIALS are my personal recommendation for any cellar collection. Delicious drinking!

Cabernet Sauvignon Collection MUSEUM RELEASE 6 PACK 2 0 0 8 BLU E GRA SS CA B ER N ET SAU VIGN ON
As soon as you place the glass near your nose there is no mistaking this wine for Cabernet Sauvignon, still displaying youthful herbaceous notes coupled with a warming earthiness and signature American Oak char. The palate has softened over time but the fruit and tannins are still carrying this wine along its journey. A short stint in your decanter will reveal a silkiness perfectly matched to a lovely lamb roast. 2 0 0 9 BLU E GRA SS CA B ER N ET SAU VIGN ON

At first this wine was a little shy but after some time chilling out in my glass the traditional Bluegrass aromatics were front and center. The palate displays lovely fruit and chocolate characters backed by savoury tannins, synonymous with this style of Cabernet. Let this wine sit for a little while to ‘breathe’ before you enjoy with an equally flavoursome meal. 2 0 1 2 BLU E GRA SS CA B ER N ET SAU VIGN ON
This Cabernet Sauvignon, straight off the blocks, is a true Bluegrass with an inviting aroma of plum, mulberry and blackcurrant with lovely overtones of choc mocha. The mouth feel is generous with forward dark fruit character and a lovely finish that seems to go on for days. This Bluegrass is still very youthful so decant well or cellar for a little while yet, up to 5 years.

The 2016 harvest in Langhorne Creek proved to be an outstanding vintage creating wines of incredible flavour and structure, making this Cabernet Sauvignon a must for the cellar. Deep, dark and delicious, it is soft and elegant yet powerful. Aromas of subtle dark fruits, reminiscent of Black Forest Gateaux. Sour cherry and soft blackberry flavours with an underlying mocha choc oak backbone. A full bodied and well structured palate, the length is long and lingering. Limited production of just 240 cases.

Red Blend Collection

The 2012 vintage saw ‘The Blend’ become Cabernet dominant and at 7 years aged, this wine is still so youthful. A deep and inviting wine that just seems to feel like it is giving you a big warm cuddle. The palate is lush with plum and mulberry flavours, supported by lovely cedar and spice. This wine will lay easily for another couple of years. However, I would not hesitate to enjoy it now. 2 0 0 6 BLU E GRA SS S H I R AZ CAB ER N ET

The first release of “The Blend” is ageing gracefully. Choc mocha, cassis and cigar box fill the nose, followed by a palate which is smooth and elegant. Still displaying hints of primary fruit supported by the savouriness of a fine aged red. The Series 12 Cabernet Shiraz is a very elegant blend of Cabernet and Shiraz which is aging gracefully. Showing some hints of floral aromas with fine velvety tannins. A lovely wine to just sit and sip away on now. However, this wine will further develop for up to another 5 -7 years.

This blend illustrates the collaboration of two noble varieties with two creative minds to produce an outstanding wine. The Ryan’s Reserve Cabernet Shiraz is crafted from quality hand selected fruit from Langhorne Creek. This classic Australian blend is for lovers of big gusty reds. This harmonious blend of Cabernet Sauvignon and Shiraz displays vibrant aromas of cassis with subtle spiced cherry and cedar undertones. The Cabernet Sauvignon gives immense structure and backbone, offering intense dark fruit flavour and long assertive tannins. The Shiraz then fills out the mid-palate with rich, mouth-filling dark fruits and a supple, velvety texture, balancing the Cabernet to create a superbly powerful blend.

Bright golden in colour with the slightest hint of green hue. Delicious buttered toast and cashew nut aromas, the hallmarks of aged Hunter Semillon. The palate is rich and flavoursome, slightly caramel with lovely length. The acid still keeps the wine slimlined given its age. The 2006 Reserve Semillon is drinking lovely now. 12 years young and looking divine. The 2007 Reserve Semillon shows fresh citrus fruits on the nose with a hint of lovely aged toastiness, reminiscent of fresh, warm croissants. The palate is still fresh and lively with upfront flavours of lemon but not as tart as younger Semillons. The finish is long and persistent. A selection of premium Hunter Valley and Tumbarumba fruit from an exceptional vintage provides juicy, ripe, tropical fruit aromas with subtle lanolin notes. The palate is enriched with Beurré Bosc pear and nectarine flavours highlighted with gentle acid and mouth filling creaminess. The French oak influence is delicate and well balanced giving a nutty complexity and seamless length. Every sip begs for another. A Chardonnay of lovely finesse and elegance making it ideal for medium term cellaring, evolving the wine into rich velvet butter.

The 2013 vintage in Langhorne Creek produced outstanding wines with amazing flavour and texture. Lovely aromas of rich red fruits backed by elegant spice and briar. The palate is full bodied yet soft and seamless from 22 months maturation in Amerian Oak Barriques. Dry on the mid palate with grippy tannins on the finish makes this the perfect food wine with rich hearty meals like slow braised beef cheeks. Rare Wine Magnum MUSEUM RELEASE
‘VERY LIMITED QUANTITY’

This was the fifth release of the Bluegrass Cabernet Sauvignon. This classic wine showed excellent long term cellaring potential when produced. Therefore, 100 Magnums were also bottled and then carefully cellared. The large format bottles were chosen to enhance the longevity of this exceptional wine. Each subsequent year, a magnum was opened and evaluated by our winemakers to note the cellaring progression and characterises unique to this wine.

Today, only 50 magnums remain of this very rare wine. Being at its optimum cellared potential, we are now releasing the remaining reserves of this wine to our Club Equus Members. Due to the delicate stage of this wine, please allow it to settle for a few days after transporting. Prior to serving, allow the bottle to stand for a day and consume in one sitting. It is recommended to serve in a large Bordeaux style wine glass. The shape of this glass will enhance the delicate aromas and allow the flavours to evolve. The broad bowl directs the Cabernet to the centre of the tongue to balance fruit, tannin and acidity while the height of the glass creates distance between the wine and mouth, enabling the wine breathe. Today, the wine comes across as opaque deep crimson colour with a brick red hue. Slight spice and oak notes reveal hints of vanilla and espresso. The subtle cassis and mint flavours fill the palate showing a soft line and lingering length. It is a great wine of layered complexity which will continue to unfold in the glass. This iconic Cabernet Sauvignon is an intrinsic piece of Bluegrass history and sure to be the conversation centre piece on any dinner table…. This Bluegrass Cabernet Sauvignon is truly a great wine to be shared with good food in great company.

Langhorne Creek terrior contributed a powerful structure and body with good length of flavour. The 2017 vintage in the Hunter Valley produced outstanding wines and the Shiraz was no exception. Sourced from old vines which produced beautiful fruit intensity, spice and elegance. Mudgee sits at a higher altitude, which allows slower ripening. This delivered outstanding colour intensity, depth of flavour and earthy complexity. Cold Soaked for five days prior to a cool ferment. Matured for 20 Months in American Oak with 22% new Hogshead Oak. Langhorne Creek 36%
