MINISTER'S FOREWoRD
Origin Green: Key to Sustainable Growth Resourcefulness is the key to retaining our markets and achieving future growth and exports targets, writes Minister for Agriculture, Food and the Marine, Simon Coveney TD.
I
am delighted to introduce the Food Ireland Yearbook 2013, which is such a valuable reference for the Irish food and drinks industry. The food and drinks industry dug deep again last year to deliver a record €9 billion in exports through hugely challenging times. This was an overall 2% increase on the previous year and included strong performances from meat and seafood, as well as increases in exports of beverages. Lower global prices and reduced milk supplies had an impact on dairy exports and the prepared foods sector reacted with resilience to the many challenges faced. Food Harvest 2020 Exports are hugely important to the industry’s growth. Ability to develop new markets and to provide innovative products for developed markets will be key to a successful 2013. The 2013 Milestones for Food Harvest 2020, the industry-led growth strategy for the sector, include a target of achieving €9.3 billion in food and drink exports. Market prospects are reasonably good: however, in the case of many euro zone economies, lack of growth is likely to impact on trade levels. It is increasingly recognised that a vibrant agri-food industry has enormous spin off benefits for local communities across Ireland. As I emphasised in the 2012 Yearbook, over 70% of the industry’s expenditure is on Irish goods and services. This means that food and drink exports make a greater contribution to the economy than other manufacturing industry. Entrepreneurs can create new businesses and jobs. The development of FoodWorks by Bord Bia, Enterprise Ireland and Teagasc in 2012 to identify high potential start-up
food entrepreneurs was most welcome. I was impressed to see established companies share their experience and nous so generously with the FoodWorks participants. A second FoodWorks programme will be run in 2013. CAP The main policy developments in 2013 are focused around agreeing a reform of the Common Agricultural Policy with 27 Member States and the European Parliament. This is a major dossier for Ireland’s EU Presidency and I am committed to achieving the best possible outcome in order to support our productive agriculture supply base, which is key to achieving the levels of sustainable growth envisioned in Food Harvest 2020. Origin Green The launch of Origin Green in June 2012 by An Taoiseach was a central element in the positioning strategy for the Irish food and drink industry. Ireland enjoys a strong and enduring international reputation as a source of natural, high quality food, drink and ingredients, and with an explicit commitment to sustainability, Ireland can build on this reputation and be a world leader in high-quality food production. This recognition will be the key driver of our growth in the years ahead. Origin Green is a sustainability charter which commits participants to engage directly and robustly with the challenges of sustainability: reducing energy inputs, minimising their overall carbon footprint and lessening their impact on the environment. In doing so, industry will also increase its overall efficiency and competitiveness. By end-2014, the goal is to achieve 75% of food and drinks exports being supplied

by companies signed up to the Origin Green sustainability charter. Already, interest in Origin Green has been registered by 220 food and drink companies, representing almost 65% of Irish food and drink exports. To date, Origin Green is the only such sustainability programme in the world that operates on a national basis. As Minister for Agriculture, Food and the Marine, I see at first-hand the challenges faced by Ireland’s food and drinks industry. I am proud to play a part in creating an environment for growth, to forging links through trade missions and to promoting the industry’s ability to create, innovate and exploit all markets as they emerge. Best wishes in 2013. Simon Coveney TD Minister for Agriculture, Food and the Marine
INDUSTRY OVERVIEW
DELIVERING A STRONG AGRI-FOOD FUTURE Ireland’s agri-food sector can realise its growth and jobs potential, given the right environment, writes Paul Kelly, Director, Food and Drink Industry Ireland.
2
013 is a year in which the food sector can secure the progress that has been made over the last three years. Food and drink exports in 2012 were over €9 billion and 28% higher than the 2009 level. The challenge for 2013 is to decisively address constraints to expansion and growth. Achieving this will result in a significant employment boost and ultimately, the creation of 30,000 new jobs when the final targets of the national agri-food strategy Food Harvest 2020 are reached. Food Harvest 2020 has ambitious growth targets and a clear strategy that has been agreed by industry, together with the Department of Agriculture, Food and the Marine and its agencies. However, volume growth in exports requires more than just increased raw material supply, improved marketing and increased market access. It also requires policy changes across Government to ensure a competitive processing base, increased capacity utilisation and expansion, and a functioning domestic market. Many of the concerns that the sector has relate to policy priorities outside the Department of Agriculture, Food and the Marine which have the potential to either slow down or impede growth in the sector. To fully realise the sector’s jobs growth potential, it is vital to the wider economy that all relevant polices are clearly aligned with Food Harvest 2020.
To fully realise the agri-food sector’s jobs growth potential, it is vital to the wider economy that all relevant polices are clearly aligned with Food Harvest 2020.
Economic Impact, Jobs Growth and Competitiveness The sector retains significantly more of its expenditure (76%) in the Irish economy than the rest of manufacturing, where the figure is just over 30%. This reflects a strong Irish-based supply chain, which is far more likely to retain jobs and investment per euro spent in the economy. The sector impacts the wider economy unlike any other sector. Food Harvest 2020 sets a target to grow exports by 42% to €12 billion by 2020. If this is achieved, there is a massive potential to create new jobs across the wider economy. As output rises, employment is initially created directly in manufacturing and indirectly in sectors such as primary agriculture. As new jobs are created, the level of household income and expenditure throughout the economy will rise, creating a virtuous cycle of investment, job creation and growth. There is good reason to believe that increased volume will form a major part of this output expansion, due to the removal of dairy quotas, increased farm level productivity, new product innovation, increased global demand and improved market access.
4
INCREASED CAPITAL INVESTMENT The period up to 2020 will also be accompanied by increased capital investment, as firms seek to expand capacity and develop new products. Such investment will improve the competitiveness of the sector and increase productivity levels. This investment will create employment in other sectors, but will limit to some extent employment gains in food and drink manufacturing directly because of improved efficiency. If the Food Harvest 2020 targets are achieved, FDII estimates that 30,000 jobs could be created. However, to achieve this growth, we need the right environment. Industry has a central role to play, but government ambition for the sector must be supported by action. Achieving a positive outcome to the on-going CAP negotiations is an immediate priority. Any deal must ensure a competitive and sustainable raw material supply base for the Irish food industry, which utilises 90% of agricultural output. This requires a CAP focused on supporting the productive sector, targeting support to vulnerable sectors and the maintenance of an effective safety net mechanism. But

fund supported by the National Pensions Reserve Fund. The high rate of capital gains tax (CGT) is also an obstacle to investment in the sector. In short, a pragmatic approach must be taken to nutrition labelling and the assessment of origin labelling at national and EU level. There also needs to be a clear acknowledgement of the positive role of the food and drink industry in addressing obesity. Government must officially support industry efforts on reformulation, consumer awareness, research on physical activity and workplace wellbeing programmes. In conclusion, given the right environment, the sector can continue to deliver a high rate of return to the Irish state and its citizens, and be an engine for growth and job creation.

ew ways of treating conditions such as inflammatory bowel disease, irritable bowel syndrome and obesity are just a few of the potential results from research being carried out by Teagasc’s Food Research Programme at its Food Research Centres at Ashtown, Dublin, and Moorepark, Fermoy, Co. Cork. Led by Professor Paul Ross, the Teagasc food programme fosters science-based innovation for the agrifood sector in a way that will lead to economic development and profitability, with a clear focus on the needs of the food industry. Paul Ross is also a research professor at the Alimentary Pharmabiotic Centre (APC) at University College Cork, which has strong collaborative links with Teagasc as part of the two organisations’ strategic alliance in food research. “The Teagasc Food Research Programme involves approximately 250 people in applied research working very closely with the industry,” says Ross. “We are a development agency and our customers are companies in the agrifood industry. “We are there to support the research and development efforts of the industry. We work in three areas – cheese, food ingredients and food and health, and my own main research interest is in gut bacteria and the things that they produce, such as antimicrobials.” He points out that the agri-food industry is one of the brighter spots on the economic landscape at the moment. “We serve one of the best performing areas of the economy at the moment. There is a lot of buzz around the food industry at present, but a major rate limiting factor for the industry is our

ability to develop new value adding products and that’s what our research is aimed at supporting.” And his specialist area has a very important role to play. “There is a huge opportunity there to look at how food influences our health through our diet. There are 100 trillion bacteria in the human body – that’s 10 times the amount of cells in the body,” he says. “If a Martian came down and scanned us, they would probably think we were a bacterium. In our gut, there are 1,000 different species of bacteria and these have a major influence on our health. We have a whole galaxy of bacteria inside us and it is affected by what we eat.” It is well known that the gut microbiota, or the community of bacteria in our gut, is required for immune development in infants and maintenance

of health in adult life, and changes in the composition of the microbiota have been linked to a range of inflammatory and metabolic disorders. “It is also known that certain food ingredients can help programme the composition of the microbiota with positive health impacts,” Ross explains. “Everyone has a different microbiota and part of the work of the APC has been on profiling people’s microbiota composition – we have effectively been barcoding them.” Joint initiative with sfi One of the most important moves in the agri-food community saw Teagasc teaming up with Science Foundation Ireland (SFI) to launch a strategically important research funding call for ‘The Future Agri-Food’. The collaborative agreement aims to strengthen and

accelerate research and science-based innovation in Ireland’s agri-food sector. SFI and Teagasc have agreed to jointly fund research grants between scientists from the agriculture and food disciplines and scientists from other scientific and engineering disciplines. “Continued innovation in the area of agri-food is essential to maintain Ireland’s status as a leader in both the primary production and secondary processing of agri-food worldwide. The commitment of Teagasc and SFI to supporting science-based innovation in this sector will undoubtedly prove invaluable to the future of the agri-food economy in Ireland,” noted Simon Coveney TD, Minister for Agriculture, Food and Marine. The joint initiative aims to bring a broad range of disciplines and technologies to bear on strengthening innovation in the agrifood sector and to offer opportunities to scientists in a wide range of disciplines, including genomics, robotics, material science, nanotechnology, immunology and ICT. The convergence of this broad range of disciplines will help underpin the profitability, competitiveness and sustainability targets set out in the Department of Agriculture’s Food Harvest 2020 strategy. “Teagasc’s aim is to support science-based innovation in the agri-food sector and the broader bioeconomy,” explained Director of Teagasc, Professor Gerry Boyle. “These goals serve to underpin profitability, competitiveness and sustainability within the sector. The agri-food sector within Ireland has a number of unique and advantageous characteristics; the international reputation of Ireland’s food industry, its continued success in export growth and its potential for expansion and development, place agri-food at the forefront of achieving the national goal of sustainable economic renewal. The agreement signed between Teagasc and SFI will serve to further develop the success of the agri-food sector both domestically and

internationally.” Director General of SFI, Professor Mark Ferguson said that the agreement “builds and strengthens scientific and engineering research in the area of agri-food an area of great strategic value to Ireland’s long-term competitiveness. This agreement will prepare the Irish scientific community to compete, lead and win in relevant EU Horizon 2020 funding programmes and other relevant international funding.” Food Harvest 2020 Research and development and the exploitation of knowledge are critical drivers of technical change, productivity growth and profitability in the Irish agrifood sector. Food Harvest 2020 emphasised the need for the Irish agri-food sector to embrace a “smart” approach and to take advantage of “green” opportunities in order to achieve sustainable growth. It concluded that the sector must prioritise research and development, foster creativity and maximise adoption of best practice. Teagasc’s Food Strategy for Technology and Knowledge Transfer will contribute to the attainment of the Food Harvest 2020 goals by developing an environment of effective food technology transfer built on partnerships with industry.

Teagasc’s strategy contains a number of key actions which will ensure that the formidable food research outputs, expertise and infrastructure within Teagasc are fully utilised and exploited for the benefit of the Irish food and agriculture industries. Proactive and systematic engagement with the food sector is at the core of the Teagasc strategy. The Technology Transfer Office will develop and promote partnerships with industry, while at the same time supporting researchers with protection of Intellectual Property, assessment of commercial potential and exploitation of market opportunities. The main objectives are to: 1. Implement best practice in food technology and knowledge transfer; 2. Map Teagasc technologies; 3. Develop the Teagasc Technology Portfolio; 4. Foster key collaborations and strategic partnerships with industry, state agencies and other stakeholders; 5. Establish a high-profile and effective Technology Transfer Office; 6. Global Trust Certification: Certifying Integrity The recent international horsemeat scandal has brought food integrity and supply chain traceability to the fore. Markets and consumers are seeking reassurance. Global Trust can offer that reassurance.
G
lobal Trust has been in operation as a certification body in Ireland since 1997 and it fully understands the Irish and associated international food chains. Indeed, Global Trust is ideally positioned to assist both markets and producers to consolidate and, where necessary, rebuild trust. Global Trust carries the widest portfolio of standards services for food companies in Ireland, ranging from safety to quality and environmental systems. “Post the horsemeat scandal, food companies and their brands are going to have to demonstrate a level of trust, competency, honesty and transparency to markets that hasn’t been seen before,” states Peter Marshall, CEO of Global Trust. “The Global Trust service differs from our competitors and it strives to connect ‘trust’, ‘do good’, ‘high competency’ and ‘good culture’ with our clients’ brands. Culture and competency, more than rule books, determine how an organisation behaves in everyday operations. “A trustable company needs people in it who want to embrace the goal of being trustable and push the organisation towards it. Global Trust
can harness and communicate this trustability.” More than ever, the global food industry is looking towards third party external validation of supply chain integrity and competency credentials. Over the past 10 years, Global Trust has delivered results and reassurance for the Irish and international food industry and as a result, the company has become a trusted leader in providing assurance solutions for many market buyers. Global Trust has developed an enviable list of leading retail and food service partners across Europe and North America that are seeking good products and competent services. Impressive Client Base Global Trust recognises and communicates the competence and customer relationship management that is evident in their list of certified clients: “It is our role to provide reassurance on competency and intention,” Peter explains. “We facilitate markets which are interested in surprising and delighting their customers and also those who are more are focused on just getting the product correct.” Global Trust works with its Irish clients to help create a long lasting competitive

advantage, making it difficult for competitors to duplicate. “Global Trust has become an international success story because our clients have become successful,” Peter notes. “While over 80% of Global Trust business is now overseas, the company remains loyal to its Irish roots and commitments and all our business revenues and our certification decisions revert back to Ireland.” The Global Trust portfolio of services for clients continues to grow in Ireland and across the world and its business standing has recently been strengthened through a new relationship with SAI Global Assurances. Global Trust is now the Irish Division of SAI Global Assurances. However, Global Trust remains an Irish based and registered company and continues to be managed and directed by its Irish management team under the continued direction of Chief Executive, Peter

BUSINESS SUPPORT PROGRAMMES
SUPPORTING FUTURE DEVELOPMENT Bord Bia’s Small Business Open Day 2013 highlighted the variety of supports available to Irish food and drinks companies.
T
he 2013 Bord Bia Small Business Open Day showcased a number of programmes designed to support food producers and ensure that the reputation of Irish food at home and abroad retains its high level, despite current concerns over food production in Europe. ORIGIN GREEN Padraig Brennan, Senior Business Analyst with Bord Bia, gave attendees an extremely enlightening presentation on Origin Green, which focuses on the vital and surprisingly profitable area of sustainable food production. The Challenges facing food production in the 21st century are significant. Climate change, severe weather events and bio fuel demands are already causing significant volatility in global food prices. Agricultural production currently consumes 70% of the world’s fresh water usage and by 2025, two thirds of the world’s population could be living under water stress conditions. By 2050, the world will need to produce 70% more food, with less land, water and energy, while also reducing greenhouse gas emission levels. Padraig cited companies like Sainsbury’s, Unilever, McDonald’s and Nestlé, all of which have made sustainable production a core part of their business strategy because consumers want it, because their staff want it, because retailers want it and because it can deliver significant cost savings. According to the presentation, Ireland is starting from a good position with regard to sustainable food production. Among European nations, Ireland produces some of the lowest levels of carbon dioxide per kilo of beef and we have an extremely favourable water stress level, currently at 0, which

means Ireland experiences no water stress. The idea of a programme like Origin Green is for Irish food producers to act early and use our strong starting position to make sure that Irish food production is among the most sustainable in Europe. SIGNIFICANT SAVINGS ACHIEVABLE The case for sustainable production is not just one of necessity: Origin Green has already delivered significant savings to companies it has worked with. For example, Kerry Group’s sandwich brand, Freshways, while working with Origin Green, discovered that unused bread crusts that had been costing the company €7,500 per annum to dispose of could instead be sold for
12
bread crumb production for €8,000 per annum. Simply by examining what it was disposing of and how, the company turned a yearly cost into regular income. Atlantis Seafood, based in Wexford, conducted a routine water consumption analysis and discovered it was using 400 litres per hour on a Sunday, when the business was closed. An investigation traced the problem to a faulty ball-cock and a simple replacement delivered an annual saving to the company of €4,000. Embracing sustainable production techniques means being as efficient as possible with your resources, using the minimum amount of inputs to produce the maximum level of output, with minimal waste. As a result, implementing sustainable production

techniques almost always produces cost savings, or new sources of income. To date, 174 companies have registered an interest in working with Origin Green and 33 have submitted plans for sustainable targets. Targets being set by Irish companies working with Origin Green are as diverse as reducing energy costs by 20% by 2015, implementing rainwater harvesting by 2014 and even reducing salt content of products by 15% by the end of this year. THE HORSEMEAT SCANDAL
Learning The Lessons from the Horsemeat Scandal Raymond O’ Rourke, Food & Consumer Lawyer, examines the horsemeat scandal and its implications for the future of food labelling in the EU.
The horsemeat scandal originally came to light when the FSAI found horse DNA in products labelled as beef burgers.
F
ollowing a Food Safety Authority of Ireland (FSAI) authenticity survey of beef burgers in January, it was revealed that certain burgers contained traces of horsemeat not declared in the list of ingredients. This was clearly a consumer protection issue i.e. the fraudulent marketing of mis-labelled ingredients for foodstuffs. Initially, there was no evidence of a food safety problem. There was confusion as to the source of the horsemeat and commentators argued that this is one of the outcomes of a globalised economy. While at first it seemed the horsemeat had originated from other countries – Poland, Romania or the Netherlands – at the end of February, the Department of Agriculture, following Garda investigations, declared that B&F Meats in Carrick-on-Suir had been sending horsemeat, which was labelled as beef, to a customer in the Czech Republic, via a UK meat trader. So food companies in Ireland had both participated in food adulteration, while at the same time being supplied with adulterated product. How could this adulteration have happened when consumers have been told in the past decade that the food industry is highly regulated with traceability systems from ‘farm to fork’?
MISLEADING THE PURCHASER The use of horsemeat as a replacement for beef in meat products while continuing to label the product as beef breaks the main principle of the EU food labelling rules contained in Directive 2000/13 which state that labelling must not: “mislead the purchaser to a material degree, particularly as to the characteristics of the foodstuff and, in particular as to its nature, identity, properties, composition, quantity, durability, origin or provenance, method of manufacture or production.” New food labelling rules contained in EU Regulation 1169/2011, which unfortunately do not apply until December 13, 2014, for the first time in EU law place the obligation on suppliers to food businesses not to supply food
16
they know to be non-compliant with food labelling rules – thus, the reason you keep hearing meat traders state they did not ‘knowingly’ supply horsemeat instead of beef to food manufacturers/ retailers. The European Commission, in discussions with Member States, on February 19, recommended that Member States carry out a coordinated control plan with a view to establish the prevalence of fraudulent practices in the marketing of certain foods for a period of one month. The results of these tests, published on April 16, 2013, gave Ireland a clean bill of health, with no samples testing positive for horsemeat. The worst offender was France, which had more cases of horsemeat in beef products than any other EU country

become mandatory as a means of providing an additional assurance to consumers about the authenticity of the meat in processed food products. MANDATORY ORIGIN LABELLING Unfortunately, on the question of origin labelling, the Report is silent. In the wake of the recent horsemeat scandal, many commentators argued that the scandal could have been averted if producers and manufacturers had to mandatorily label the origin of meats used as an ingredient in processed foods, such as meat pies, lasagne etc. Compulsory origin labelling would not be a Raymond O’Rourke, Food & Consumer Lawyer. complete panacea, but it certainly would have made it more difficult for meat traders to pass off horsemeat as beef. – with more than one in every eight Following the comments samples testing positive. of President Hollande at the Paris Agriculture Show on February 23, the LOWERING CONSUMER French & German Governments, at an CONFIDENCE Agriculture Council a few days later, In the meantime, consumer confidence demanded that the Commission’s in the food supply chain has been work on origin labelling be speeded severely dented. for corporate bodies. The Government should increase the fines for food mis-labelling and introduce a new statutory penalty of fraudulently mis-labelling food products, which should be calculated as a percentage of a company’s profits as a means of deterring fraudulent behaviour. Restoring consumer confidence Food safety and public health are of paramount importance, but as the horsemeat scandal demonstrates, cases of food adulteration can undermine consumer confidence in the food supply system as profoundly as food safety outbreaks. The FSAI, which has done the consumer a great service by its work in this area, must continue to get full Government support for its enforcement of food law and there must be no attempt by the Government to support ‘light touch’ regulation or private food industry standards. In conclusion, full origin labelling throughout the food chain and mandatory DNA testing must be introduced immediately, in particular for meat used as an ingredient in processed meat products. Only then can the consumer be truly confident of the authenticity of the food they purchase.
In the EU, numerous food regulations were introduced as a means of regaining consumer confidence in the safety of foodstuffs after the BSE and Belgian Dioxin crisis in the late 1990s.

Seafood Sector Set for Growth As Irish seafood exports increase by 18%, the recent Dublin Seafood Summit highlighted further opportunities for growth.
B
IM recently hosted a Seafood Summit entitled ‘Irish Seafood – Becoming a Global Seafood Player’, aimed at key seafood industry players and the investment community, which highlighted opportunities for growth. “Ireland has significant unused potential,” Gorjan Nikolik, Food and Agribusiness researcher with Rabobank International, told the conference. “With major production resources available, there is an opportunity to become a global player in the aquaculture industry. Economies of scale can be achieved very quickly in this business, even without a large domestic market in place.” He says funding for the industry is also available from outside of Ireland, with venture capital attracted to innovative sectors outside of the high tech industry since the dotcom collapse of a number of years ago. Other potential investors include the aquaculture sector and the meat industry. “I think that as aquaculture grows and matures, it will become more and more similar to the farming of poultry and pork and this will motivate investments from the large meat companies,” he said. “We can foresee that the investment potential arising from Chinese companies looking to secure supply for their domestic markets is another major opportunity. Seafood will be in demand long after meat demand is satisfied in China.” Outlining key trends and changes that will occur at a global level, Food Futurist Christophe Pelletier pointed out that even a very small share of the Chinese market would offer a significant boost to the Irish industry. “If every Chinese person was to eat 100 grams of Irish seafood just once a year, that would equal 150,000 tons a year”,
Pictured at the BIM Seafood Summit, ‘Irish Seafood – Becoming a Global Seafood Player’ are key speakers: Christophe Pelletier, Food Futurist; Minister for Agriculture, Food and the Marine, Simon Coveney TD; Matt Dempsey, Agricultural Trust; Gary Hooper, CEO, Aquaculture New Zealand; and Gorjan Nikolik, Food and Agribusiness Researcher, Rabobank International.
he noted. “And in the coming years, seafood consumption per capita per year in China is expected to rise from 26 kg today to 36 kg in 2020. Just a 1% share of that market would be greater than 500,000 tons a year.” PHENOMENAL GROWTH The Irish Seafood Sector is performing exceptionally well, showing phenomenal growth on the export market, with sales up 18% to a value of €493 million in 2012 compared to 2011. With declining demand and prices in traditional markets such as the UK, Germany, Spain, and France, due to the economic downturn, opportunity is knocking in emerging markets such as China, where a growing middle class is driving increased seafood consumption. Jason Whooley, BIM CEO, highlighted the need to scale the sector in order to take advantage of the opportunity that exists in emerging markets. “Appropriate scale will enable a company or a group of companies working collaboratively to invest in marketing, research and skills, all of which provide access to new markets and improve company performance,” he said. “In turn, this will result in the
18
sector delivering much needed jobs and exports. BIM’s goal is to assist with the development of one or two entities with a turnover in excess of €50 million in each of the key seafood categories – shellfish, pelagic, salmon and whitefish. These entities will in turn be supported by a range of innovative, smaller seafood companies.” Collective Route to Market Scheme Greater collaboration within the sector and the establishment of appropriate joint venture operations and partnerships will play a key role in the achievement of this goal. BIM’s Collective Route to Market Scheme, which was launched in January, is aimed at promoting such collaboration by offering seafood companies grantaid assistance and expert advice to work collectively to reduce duplication costs, boost profitability and increase competitiveness on export markets. The scheme will deliver €400,000 in funding the industry and it is anticipated that between four and six seafood collectives will apply for financial and business development support under it.

Molecular Gastronomy Workshop In recent years, the emergence of the discipline of molecular gastronomy has brought new focus on the interface between food science and culinary practice. Thus, the food scientist of the future must increasingly recognise how their skills in areas like food chemistry, sensory science and food science apply in a culinary sense as much as in the processing plant. To foster discussions in this regard, UCC hosted a one-day workshop with national and international experts in the field of Molecular Gastronomy. The day included a mix of presentations and panel discussions and facilitated the exploration of the implications of these developments both for the food sector in general and for the specific training of a new generation of graduates with the requisite skills.

New Standard for premium Food Safety With its new premium Foodcert standard, Schütz places the focus firmly on product and process safety.
A
s a producer of industrial packaging, Schütz is certifying its production plants around the world to the Food Safety System Certification standard FSSC 22000. The newly created Schütz premium Foodcert standard ensures the comprehensive food safety of Schütz IBCs and PE drums far beyond legal requirements. With it, Schütz guarantees not just material safety, but full product and process safety throughout the supply chain, too. Schütz Foodcert IBCs and drums comply not only with the provisions of international food law but also include additional risk-minimising features, are produced just-in-time to customer specification and offer fully traceability. To ensure worldwide application of the Foodcert standard, Schütz is successively obtaining certification of all of its production plants to the latest industrial standard, FSSC 22000 (Food Safety System Certification, based on ISO 22000 and PAS 223), which has already been granted to the plants in Killala and around the world in Germany, China, the USA, Brazil and Malaysia. The necessary preparations are in progress at other plants, which will soon also hold the certification. The FSSC 22000 standard is recognised by the GFSI (Global Food Safety Initiative), an international collaboration of leading food producers and retailers. The main objectives of the initiative are to ensure consumer safety and cooperation within the production chain. Prevention Measures Since industrial packaging is normally used at the start of the food chain – for instance, for concentrates, intermediate products and raw materials – even
With its premium Foodcert products, Schütz has created a new standard for the food industry – in which safety takes top priority.
the slightest impairment can trigger an enormous multiplier effect. Hence the particular need for risk minimisation! Maximum safety requirements call for extensive prevention programmes. That’s why Schütz has implemented a number of HACCP concepts in accordance with PAS 223 (Publicly Available Standard) and ISO 22000 (International Organisation for Standardisation). These standards apply to the buildings, plant and machinery, in fact, the entire production environment, and include detailed hygiene regulations for employees and cleaning rotas for workplaces. They also stipulate measures to avoid contamination with foreign bodies or dust, protection when handling waste, as well as glass and blade management. Machinery maintenance regulations and inspections, systematic pest control throughout the entire production site, instructions for the controlled use of all materials, especially chemicals, and strict control of incoming goods complete the package. Customer-Driven Solutions All Schütz Foodcert packaging products are produced exclusively to individual customer order. This general practice of just-in-time production helps to prevent opportunities for contamination from arising because, as in the case of blow-moulded IBC inner bottles, they are taken straight to final assembly immediately after production. An additional advantage is that each step in the production process and every component can be clearly associated with the corresponding packaging. The barcode sys22
tem of identification additionally permits seamless traceability – all the way back to batch and process level! Yet another great feature is that, on request, the packaging expert will also assign individual identification numbers to articles and packaging. The finished packaging is then immediately loaded and shipped without first being stored. About Schütz Schütz has been producing customised packaging solutions for over 30 years. The FDA-approved containers already established on the market satisfy the material guidelines of the US Food and Drug Administration and the EU. And when it comes to material, the same principle applies to all packaging: all IBC inner bottles, valve fittings, screw caps, drum bodies, lids and bung plugs are produced exclusively from new, single-grade HDPE. The raw materials used are food-safe, as are all dyes and gaskets. Components that come into contact with the filling product are checked to ensure conformity with migration limits. DRINKS INDUSTRY
Drinks Industry Vital to Economy A new report from the Drinks Industry Group of Ireland (DIGI) highlights the importance of the drinks industry to the Irish economy.
A
new report from the Drinks Industry Group of Ireland (DIGI) found that the Irish industry is responsible for total purchases of over €2.8 billion each year. Industry purchases include: ingredients used in processing, such as apples, barley and milk; non-industrial services such as IT and marketing; industrial services; and labour costs and wages. Measuring the value of inputs is a method of evaluating an industry’s contribution to the domestic economy. The report, ‘Purchases of Inputs by the Drinks Industry’ by Anthony Foley of Dublin City University Business School on behalf of DIGI, shows that in addition to the direct economic benefits of 64,000 jobs, over €1 billion in exports, €1.8 billion tax revenue in VAT and excise and almost €7 billion in personal expenditure (including VAT), the drinks industry is a very substantial purchaser of inputs. “The economic contribution that the drinks industry makes to the Irish domestic economy each year as detailed in this report demonstrates the importance of the sector,” said Chairperson of DIGI and Diageo’s European Corporate Relations Director, Peter O’Brien. “What is particularly significant is the high proportion of investment in domestic service and materials - 62% in services and 42% in materials – worth €800 million, and greatly exceeds the domestic content levels of other leading sectors in the country, such as the high-tech and chemical sectors. It is apparent that where the industry can, it is supporting domestic business.” DOMESTIC PURCHASING Wage, salaries and personnel costs are one of the highest inputs and total €1 billion per annum, with retail, wholesale and on/off-trade sectors paying €690
million in personnel costs each year and the manufacturing sector paying a further €311 million. Purchasing of Irish materials and services for use in drink manufacturing in Ireland is worth €800 million to the domestic economy. Of the total purchases by manufacturers - €1.558 billion which excludes goods bought for resale - a high proportion of those materials and services are domestically sourced, at 62% and 42% respectively. The latter figure includes 50k tonnes of apples, 200k tonnes of barley and 300 million litres of milk purchased from Irish farmers by the Irish drinks industry each year. The sector is responsible for a far greater proportion of domestic purchasing than the chemical and technology sectors. While personnel costs are the highest input purchased by the retail, wholesale and on/off sectors, at €690 million per annum; this is closely followed by the amount spent on materials and services other than food and drink at €583 million. The amount spent on food purchasing is valued at €243 million. The total value of retail sales is €7 billion. The drinks industry spent €147 million on capital assets and investment purchases in 2010 and estimate a further €450 million will be invested over the next few years. 23
Peter O’Brien, Chairperson of DIGI and Diageo’s European Corporate Relations Director, is pictured with economist Tony Foley of DCU Business School, report author, on a barley farm in Athy, Co. Kildare.
PROCUREMENT INPUTS “The drinks industry, both manufacturing and retail, plays a very substantial role in the procurement of inputs as is apparent from this report,” noted author of the report, Anthony Foley. “Previous DIGI reports have identified the direct economic benefits which derive from the drinks industry in terms of employment, output, exports and tax revenue and the positive impact which the sector has on tourism. An industry also contributes to the economy through its procurement from other suppliers. “As identified in this report, mainly through the use of official CSO data and identified assumptions where data is insufficient, the drinks industry is a major purchaser of goods and services. This is true of both the manufacturing and retail sectors of the industry. The analysis shows that the manufacturing sector in the drinks industry pays €217 million in wages and salaries, buys €901 million annually in materials, buys €33 million in industrial services and €587 million in other services and will invest over €450 million over the next few years.”

ischbein Saxon are the UK manufacturer of the renowned Fischbein sewing equipment, Saxon sealers and bagging equipment, including fillers, bag placers, automated bagging and palletising systems. At this year’s Total Processing and Packaging show at the NEC Birmingham, June 4-6, Fischbein Saxon will be launching the new TOS -3000 Tape Over Sealing System. Tape over sealing overcomes the issue of ‘product leakage’ on bags by applying a hot melt adhesive tape over the sewn bag top. This then ensures that no product can leak out of the holes, a common problem with fine powder

producers, such as milk, flour, malt and similar products. In addition, an inner liner seal can be conducted on the inner liner/coating of the bag to provide a ‘sift proof closure’. The sealer can be supplied independently, integrated into an automated sewing or bagging line, or retro fitted onto your existing line. Visit stand L60 at Total Processing and Packaging to see how the machine works, as well as Fischbein’s other bagging / bag closing machinery. Contact Fischbein Saxon on 0044 8443 722877 or email sales@fischbein-saxon.co.uk for more information.

MATERIALS HANDLING
HYSTER: For Demanding Food & Drink Applications Irish Lift Trucks, part of the OHM Group of companies (www.ohm.ie), is the sole distributor and official dealer of HYSTER materials handling equipment in Ireland.
T
he HYSTER product range, from Irish Lift Trucks, is the most extensive and complete forklift truck offering on the Irish market today, with over 140 models covering the entire spectrum of load handling requirements, with diesel, gas and electric counterbalance forklift trucks manufactured here in Ireland, as well as warehouse equipment, including powered pallet trucks, order pickers, reach trucks & VNA equipment. HYSTER enjoys a very strong profile among the country's leading food and drink companies, including Heineken, Lir Chocolates, Total Produce, Coca-Cola, Fyffes and Diageo, to name but a few. Case Study Indeed, HYSTER’s recent work with Coca-Cola Beverages in the Czech Republic is a perfect example of how they can make a real difference to the day-to-day running of a modern food/ beverage company. Coca-Cola Beverages has a main production facility and logistics centre in Prague, with eight other branches across the Czech Republic acting as distribution centres and providing interim storage. Before talking to HYSTER, the company had faced several materials handling challenges,
such as purchasing trucks from multiple suppliers, resulting in a mixed fleet, uneven utilisation rates and increased operational costs across the nine sites. High seasonal demand meant the fleet needed to expand at certain peak times. There was always a difficulty in getting hold of the right number and right type of truck on short term contracts, and there were constant technical difficulties and rising service costs. HYSTER audited the existing fleet and became the single supplier for all nine sites. They implemented a flexible five-year full maintenance lease program for the fleet, which can be enlarged or reduced at any time, as well as a truck replacement programme. HYSTER also now provides a dedicated short term hire fleet for six months of the year, conducts on-site training for operators and provides service and back-up support. The Benefits The benefits to Coca-Cola Beverages have been great, including the ability to enlarge or reduce the fleet according to demand, and greater efficiency, achieved through the choice of higher capacity trucks and double pallet handling attachments, allowing more pallets to be transported simultaneously. Productivity has improved thanks to the reliable and easily serviceable HYSTER products and service expertise, with increased product familiarity and reducing overall service costs. For example, the production line is served by a 3.0T Hyster H3.0FT Fortens that can transport two pallets at the same time. Previously, this operation was served by two 1.5T trucks. In Coca-Cola’s raw materials warehouse, there is limited space, so items are transported by elevator. Maximum manoeuvrability and low truck height is crucial in the application which 27
HYSTER’s recent work with Coca-Cola Beverages in the Czech Republic resulted in huge operational benefits.
is provided by the HYSTER three-wheel J1.60XMT trucks, S1.5S pedestrian stacker and a P2.0S pallet truck. The same scenario occurs in syrup production. Ergonomics are vastly improved for operators. HYSTER equipment is easy to operate and can manoeuvre in tight spaces and aisles. For example, when order picking, stock is easy to access and to transport, while the H5.5FT is equipped with a raised operator compartment for optimum visibility over tall loads. Complete Partnership “Irish Lift Trucks working with HYSTER are committed to being much more than a lift truck supplier,” explains Conal McCourt, Irish Lift Trucks. “We offer a complete partnership capable of responding to the full spectrum of materials handling issues: whether you need professional advice on fleet management, warehouse design, driver training, service support or reliable parts supply, you can rely on Irish Lift Trucks. “We would welcome the opportunity to discuss any aspect of the range of products and services we offer and if we can be of any assistance regarding current or future projects, please do not hesitate to contact us.” For further information, please visit www. www.irishlifttrucks.ie or telephone (01) 4034100.
BAR CODING
BARCODE CELEBRATES 40 YEARS The industry standard GS1 barcode is 40 this year, with more than five million barcodes scanned every day.
I
n 1973, the grocery industry came together to agree on one way of doing business by adopting an industry standard barcode. This remarkable cooperation marked the beginning of the GS1 organisation. GS1 Standards allow companies and trading partners to use a “common language” to identify, capture and share supply chain information globally. Most importantly, global standards allow trading partners to work together to optimise their supply chains, driving cost performance and revenue growth, while also enabling regulatory compliance. Consumers also benefit from GS1 Standards by helping companies to better communicate accurate product data via smart phones and barcode-scanning mobile applications. What started as a way to speed grocery store checkout has become the global language of business - a common way for trading partners around the world to identify, capture and share information about products, locations and more in real-time. Now, more than five billion GS1 barcodes are scanned every day. UNIQUE PRODUCT IDENTIFICATION Today, GS1 Standards make it possible for stakeholders in the food industry to achieve visibility, efficiency, traceability and safety through the use of standard, unique product identification and barcode scanning. “Trading partners use our standards to share data in order to transact business, and they need to be able to automate these
business processes to reduce cost, human error, or to improve safety and system interoperability,” said Mike Byrne, CEO of GS1 Ireland. “For example, manufacturers and distributors must communicate product information and company location, at a minimum. A common language is essential for trading partners to be able to understand each other and to conduct business around the world efficiently.” DRIVING SUPPLY CHAIN VISIBILITY As one of 111 GS1 member organisations around the world, GS1 Ireland brings together stakeholders, including manufacturers, distributors, retailers, solution providers, regulators and industry groups, to agree and implement standards that make both supply and demand chain operations faster, safer, more effective, less complex and less costly. GS1 Standards enable organisations to: • Provide a common, globally accepted language for the exchange of information; • Identify, capture and share information automatically and accurately; • Deliver efficient supply chains; • Reveal information vital to product visibility, traceability and consumer safety, uniquely identifying items around the world; • Manage inventory more efficiently; • Provide data accuracy and speed
28
point of purchase for consumers; Gather information for accurate and immediate reporting; • Comply with regulatory requirements impacting their business. The standards they have helped Irish organisations to implement over the last 40 years will drive supply chain visibility into the future, and will continue to evolve to keep pace with the changing business landscape. GS1 Ireland is working with its members to shape the future, particularly where business is influenced by the emerging omni-channel environment and where consumer demand is empowered by mobile technology. Data – big and small – will become the key to succeeding in the connected world and standardising product data for consumers, trading partners, and regulators, represents a big opportunity. GS1 Ireland will continue to bring industries together to develop and implement standards that address key business challenges now and for many years ahead. •
