It’s November and the holidays are upon us! This is my favorite time of year, and knowing that more of our members will be returning to Innisbrook for the season makes it even more special. As we gather with family and friends this season, there will be more exciting events planned for your enjoyment. The South Course has re-opened with new Tifeagle greens and the reviews from our golf members are excellent! We hope you will join us for our famous Thanksgiving Day buffet and other dining options for the holiday season. We are also excited to announce that our Members’ only dinners have resumed in Turnberry Pub on Friday nights.

From the Desk of the Director of Golf: Valued Members, I hope everyone has had a chance to play the New Greens on the South Course. The Grounds Crew did an amazing job this summer as, like last summer on the North Course, they did everything In-House except Fumigation & Tenting. The Greens are now bigger and healthier than I’ve ever seen them. We also lightly overseeded all Tees, Fairways and Rough which had the course closed from Monday, October 15 through Thursday, October 25. Winter Rye Grass was applied however we did NOT overseed the New Greens! Copperhead will close for a light, wall to wall, overseed from Monday, November 12 through Wednesday, November 21. This has the Copperhead reopening on Thanksgiving Day (11/22). We will apply a Winter Rye Grass on Tees, Fairways and Rough & apply Poa Trivialis on the Greens. North & Island Courses will only be closed for three days to overseed all Par 3 Tee Boxes. The North Course will be closed from Monday, November 5 through Wednesday, November 7; reopening on Thursday, November 8. The Island Course will be closed from Monday, November 26 through Wednesday, November 28; reopening on Thursday, November 29. Although the Golf Courses will not be overseeded, they will have a liquid fertilizer that will be applied every 3 weeks all winter long. Please mark your calendars for our Members, Black Friday-Turkey Shootout being played on the Island Course on Friday, November 23. Please email Kyaw Htet to sign up at Khtet@innisbrookresort.com. This will be a two-person, team event that begins at 9am (Shotgun Start) that includes Lunch and Prizes. Price for the event is $55 per player and is open to Members and their Guests.

Tennis at Innisbrook A Word from the Pro

It is hard to believe that the Holiday season is here and a New Year is just around the corner. I just wanted to give everyone an update on the Professional Tournaments that we have coming to Innisbrook in April of 2019. There are two major Events, a Women’s Tour Event April 1-7 with several top 100 women playing, and a Senior Men’s Tour Event April 4. It looks like McEnroe, Courier, Blake, and Roddick will be playing on April 4. I am looking for volunteers for both events so please contact the Pro Shop if you are interested in helping out in any way. More marketing and advertising will start for these two prestigious events in early December. We have several upcoming events and socials throughout the Holiday Season. Please keep an eye on the event calendar and future emails. The courts are very busy so please remember to call and reserve your court time.

TIP OF THE MONTH Have you heard the term "muscling the ball?" What exactly does this mean? I believe that most players think that it means you are using your muscles too much to hit the ball over the net. This is true, but do you not use your muscles when you play? Of course you do. So, what is the difference between using your muscles correctly to hit a tennis ball and using them incorrectly and "muscling the ball" over the net? The answer lies in when and how you use your muscles in relationship to your timing. If you attempt to let your muscles control your timing you will muscle the ball, but if you let your timing control your muscles you are not muscling the ball. This is extremely important to understand. If you decide that you would like to develop more power in a shot and you proceed to hit harder than your timing will allow, your shots will become erratic and inconsistent. I have seen this scenario often. A player muscles the ball to gain more power and loses total control. Power comes from rhythm and timing, not just muscle and clobbering the ball! Many players figure if they just swing harder that should speed up their shots. And it does speed up their shots as they hit the back fence, hit the pro, break some windows and frighten a few passing dogs along the way! Timing and rhythm come from structured practice and repetition. If you would like your timing to control your muscles properly so that you do not muscle the ball, you must head to the practice courts, not just swing faster. When you are at the court hitting ball after ball, keep reminding yourself to relax and let the power take place naturally from whatever timing you possess at the moment. As your weekly practices continue you will notice that you are producing more power with the same relaxed swing. This is how you know that your timing is controlling your muscle.

If you decide to let your muscles dominate your timing and begin blasting the ball for more power, you will notice an out-of-control, tense, erratic stroke that rarely offers you increased power. You will work tenaciously but the stroke will still not improve in power. This is how you know that your muscles are controlling your timing and you still need more repetition. The bottom line: You simply cannot override the body's natural timing and rhythm by muscling the ball. This shortcut solution promises immediate supersonic speed but delivers a snail's pace. The power is in the process!

SEASON KICK-OFF DINNER DANCE It’s time to kick off the season and what a better way than with a dinner dance. Welcome back friends that have been away for the summer and get to meet new ones. The fun will happen on Friday, November 9 at 6:30pm at Edinburgh Ballroom. A choice of two entrees will be created by Chef. The dinner will also start with an Iceberg Lettuce Wedge and finish with a surprise dessert. Choice 1 Pan Roasted Breast of Chicken, Herb Scented Supreme Sauce, Wild Mushroom Risotto Choice 2 Korma Salmon, Apple Cucumber Slaw, Saffron Cream, Jasmine Rice A cash bar with Member pricing will be available beginning at 6:30pm. Fast Break Entertainment will have everyone up on their feet and taking a spin on the dance floor.

An off property trip to the Bok Tower and Gardens is planned for Monday, November 26. Located in Lake Wales the Bok Tower boasts beautiful gardens and the Singing Tower carillon. Within the grounds are the historic homes of Pinewood Estates which will be decorated for the Season. The bus will depart from the Osprey Clubhouse at 9:30am and return time estimated to be around 5:30pm. The package price for the Gardens, tour and lunch is $32.91. MERCHANDISE SALE Friday, November 30 through Monday, December 3 • Edinburgh Ballroom The annual merchandise sale will take place at Edinburgh Ballroom beginning with a Member exclusive shopping day on Friday, November 30 from 12 noon to 8pm. Members will have the first chance to purchase a wide variety of items all at deeply discounted pricing. Saturday December 1 and Sunday, December 2 the shopping continues and will be open to the public from 8:30am to 7pm. The final day of the sale will be on Monday, December 3 from 8:30am to 3pm. Don’t miss out on this annual event and complete your holiday shopping list.

THE GINGERBREAD PJ PARTY Wednesday, December 19 Edinburgh Ballroom • 6-8:30pm Innisbrook families love the Gingerbread PJ party! Join us this year for the fun on Wednesday, December 19 in Edinburgh Ballroom. Decorate a pre-assembled Gingerbread house or one from scratch. All the trimmings are available to create your own signature house. To add to the fun the kids get to enjoy the party in their PJ’s, watch a Holiday Movie and enjoy hot chocolate and cookies. A cash bar with seasonal specialty cocktails will be available. The event is priced at $25 per family which includes (1) gingerbread house and $8 each additional house. MEET FISHER Fisher is a beautiful 8 year old chocolate lab who loves bringing his family, the Reeder’s, to dinner at Market Salamander Grille patio. Fisher is a French fry connoisseur and highly recommends the ones offered up at the Market Salamander Grille.

The warm weather outside won’t deter the spirits of those that will gather at Innisbrook’s annual caroling at the fire pit at the Osprey Clubhouse patio on Tuesday, December 11 at 6:30pm. Just bring your holiday spirit and we’ll provide the song sheets, hot chocolate and cookies. The event is complimentary for Members and resort guests.


DECK THE HALLS FRIDAY, NOVEMBER 30 • 6-8PM It’s the time of year when we deck the halls of Innisbrook with pretty lights and ornaments. The official Innisbrook tree lighting ceremony, which will kick off the holiday season, will take place at Inverness Hall on Friday, November 30 at 6pm. Bring the family and enjoy the Eastlake Choir and festivities that have been planned for our Members and resort Guests. In addition we will be adding the Innisbrook children’s tree which will remain undecorated until the lighting ceremony. We welcome all our Innisbrook Families to bring their own hand made or special ornaments to be placed on the tree.

BREAKFAST WITH SANTA DECEMBER 1, 2018 INVERNESS HALL • 8:30AM The famous couple from the North Pole will be visiting Innisbrook on Saturday, December 1. Join Santa and Mrs. Claus for this year’s all new and improved “Breakfast with Santa” at Inverness Hall. The doors will open at 8:30am for a scrumptious breakfast buffet including a Pancake Bar, Cookie Decorating and Letters to Santa. Santa and Mrs. Claus will make their appearance at 9am, individual appointments to meet with Santa will be pre-arranged and a confirmation will be e-mailed in advance. Professional photographer will capture your child’s precious moments during your appointment time. Reservations will be required for the event, reserve your “table” by calling the holiday hotline at 727.942.5544. CURRY GROUPER Ingredients:

8 ounces of fresh gulf grouper 1 tablespoon red curry past 5 ounce jasmine rice 1 ounce toasted coconut shavings 3 ounces coconut milk

1 tablespoon fresh chopped dill 1 each European cucumber 3 tablespoon vegetable oil .5 tablespoon Dijon mustard 2 ounces of white vinegar

1 ounce annatto seed Fried parsnip ribbons Fried carrot ribbons

Preparation

Cucumber Salad

Shave cucumber on a mandolin thinly so the flesh is almost translucent. Place in a bowl with white vinegar, heavy cream, fresh chopped dill, 1 ounce vegetable oil and mustard. Mix well, season with salt and pepper to taste. Refrigerate for one hour.


Annatto Oil

Toast annatto seeds in a small pan over low heat for about 2 minutes. Add 1 to 2 ounce of oil and remove from heat. Let the seed sit in the oil for 5 minutes. Strain oil into a small bowl.

Coconut Rice

In a small saucepot bring 7 ounces of water and 3 ounces of coconut mild to a boil. Add in jasmine rice, stir, reduce heat to a simmer and cover until rice is tender. At time of platting add toasted coconut to rice reserving a small amount for garnish.

Grouper:

Rub grouper with curry paste and season with salt and pepper. Place in a hot pan flesh side down for about 4 minutes. Turn fish gently over and finish for an additional 3 minutes.

Platting and finishing preparations:

In the center of you plate place a generous portion of coconut rice shaped roughly as the piece of grouper being prepared. Top rice with toasted coconut shavings. Place grouper filet directly on rice. Spoon annatto oil around the plate in a circular fashion. Finnish with fried carrot and parsnip ribbons.

With a pair of tongs place a nest of the cucumber salad on top of the grouper.


F.E.A.S.T Project Over the years November has been the month when the Innisbrook family has generously donated food for the F.E.A.S.T project. This year we’ll begin the collection as early as possible to help fill the shelves of the F.E.A.S.T pantry. You can help with a donation of food items or a contribution made out to F.E.A.S.T. F.E.A.S.T has served the area for over 30 years. Beginning at the Palm Harbor United Methodist Church F.e.a.s.t has grown to fit the area's needs including Palm Harbor, Oldsmar, Ozona, Crystal Beach, Dunedin, and Safety Harbor. Over 90% of contributions go directly for food. Over 35 regular volunteers support 1 full time employee. Drives such as ours help to provide food for the “leaner” months
