[ NAVIGATING MODERN TIMES ]
With CBT Psychologist Maria Makarycheva
In today’s world, even with incredible advancements in technology, rising incomes, and endless information at our fingertips, more and more people are finding themselves unhappy with their lives. Why is this happening? To find out, we spoke with Maria Makarycheva, a psychologist specialising in cognitive behavioral therapy (CBT), about the psychological challenges we face today.
Maria explains why many people, even those who seem to have it all, deal with constant stress and burnout. Join us as we talk with Maria and learn how to better manage the demands of modern life and improve our mental health.
Why is the number of people dissatisfied with their lives increasing every year?
We live in an amazing time. Our incomes and opportunities are constantly growing. We have access to an incredible amount of information and freedom. We use advanced technologies that simplify our daily lives.
However, despite all these achievements, the number of people dissatisfied with their lives continues to grow. This is especially noticeable among those who possess all these advantages.
What’s the reason behind this?
One of the key reasons is the social pressure of “success” and the constant comparison of oneself with others, especially through social media. We see the “perfect” lives of others and start to think that our own life isn’t good enough.
Modern society encourages multitasking and productivity, often leading to overload. People take on numerous responsibilities and projects, striving to be successful in all areas of life. This creates chronic stress and the feeling that they are falling behind and not coping. It’s important to remember that our energy is limited. For normal functioning, we need rest and the ability to simply relax.
What is true rest?
True rest includes three components: no competition, no responsibility for anyone at that moment, and enjoyment. That’s what real rest is.
What about the role of technology in mental health?
Another important factor of unhappiness is the more isolated lifestyle of modern people. Yes, our technology, ability to support ourselves, and the availability of a huge amount of food and clothing - these are wonderful things. But we still remain social beings who need another person, another living for self-identity. Therefore, isolation and limited social contacts can negatively impact psychological well-being.
How about people living in big cities?
People in big cities are almost never in silence, and thanks to electricity, it’s easy to confuse day with night and work as many hours as we see fit. And since the modern pace of life is accelerated and the demands on individuals are high, this can lead to burnout, decreased life satisfaction, and even depression.
Adding to this the massive flow and speed of information. This is unprecedented in history—the amount of information available to us daily through various channels: social media, advertising, email, television, and especially the internet. Despite information always being at our fingertips, people develop FOMO—the fear of missing out on some opportunity or something interesting. This generates increasing anxiety.
What are the consequences of such a lifestyle? How can we stop it?
If we don’t reflect on the fact that the modern pace of life, its demands, and opportunities are not always good, we may face negative consequences. Physically, this can manifest as chronic stress, insomnia, cardiovascular diseases, and other health problems. Emotionally, it can lead to burnout, depression, and anxiety disorders. Self-esteem can decrease as
people constantly feel they are not good or successful enough. As a result, the overall level of life satisfaction drops, potentially leading to social alienation and a decline in the quality of life in general.
Thus, despite all the achievements and opportunities, modern people face a number of challenges that can lead to dissatisfaction with their lives.
What can be done to cope with these challenges? And to feel happier and more satisfied with your life?
It’s important to develop mindfulness and self-reflection skills. This includes developing emotional intelligence, which helps in understanding your true needs and desires.
Can you give an example of how this works?
I like the analogy that emotions, feelings are like a compass; they help us navigate through our lives. Emotion is a reaction to what happens to a person. If a traveler ignores the compass, they risk getting lost. Similarly, if a person ignores their emotions, it’s difficult for them to understand what they like or dislike, what activities to engage in, whom to choose as partners or friends. They drift along, trying to orient themselves based on what others say and often end up in places where they aren’t happy. However, the compass only shows where things are; it’s up to the person to decide how to use that information. This is where Emotional Intelligence (EI) comes in. EI is primarily about recognizing one’s own feelings and understanding what causes these feelings—whether an idea or circumstance—and being able to choose how to deal with them. For example, at work, if your boss is unhappy with your work, your initial feeling might be anxiety, indicating perhaps that you don’t want to lose your job right now, which is normal. You observe that the anxiety motivates you to try even harder. If your EI is welldeveloped, you don’t succumb to anxiety>>
but rather recognise it as a path to burnout. Instead, you focus on confidence, reassure yourself, find alternative explanations for what happened, or simply accept that you’re allowed to make mistakes and choose to correct them, continuing to work at a sustainable pace. That’s how it works.
What if a person lacks time for all of this, yet they genuinely want to change their life and find greater happiness with everything they already have?
This is a question of priorities. As mentioned before, many priorities are imposed by the modern world’s structure and advertising, often demanding that people forget about themselves and their happiness, preventing them from realizing what truly matters to them. Therefore, the responsibility to filter all this information and choose what to believe in, what to focus on, and how to perceive oneself lies with the individual. And yes, it’s difficult.
I know firsthand how challenging it is to let go of measuring oneself by the ruler of social success and approval, and how ingrained it is to tie one’s identity to outcomes. However, this only leads to anxiety, dissatisfaction, and depression. That’s why it’s difficult but crucial to value oneself, notice even small achievements, acknowledge one’s own pace, appreciate life, and know how to enjoy it (which is a skill that can easily be lost in the hustle and bustle).
Can you identify as a psychologist what is self-care?
I like this question! It’s definitely not about indulgences, massages, or treating oneself to good food, going on vacations. Those are ways we can care for ourselves. But whether love is present in that isn’t guaranteed. From a psychological perspective, self-love is primarily about a person’s relationship with themselves. It’s about how they speak to themselves in their inner dialogue—what tone and messages they use. If our inner dialogue is full of obligations (I must be successful), rigid rules (If I’m not successful, I’m worthless and don’t deserve kindness towards myself), criticism (This is bad! Not good enough!), demands (I must try harder), love doesn’t thrive there. It’s only when we change our inner dialogue to be friendly, compassionate, permissive, gentle, warm, and curious that love flourishes, and we become our closest and most reliable friend. [ V ]

LIFE IN MINATURE
THE ART OF SIMON LAVEUVE
VAMP MEETS
SIMON LAVEUVE, A FRENCH ARTIST, BORN & BRED IN THE PARISIAN SUBURBS
At a scale of 1/35, Simon Laveuve’s meticulously crafted miniature constructions open a window into imagined post-apocalyptic worlds, revealing troves of clues about the absent occupants of each dwelling. His works range from colourful bunting strung between posts to framed pictures on crumbling walls, each piece echoing a story. Drawing from his experiences growing up in the culturally diverse Parisian suburbs, Laveuve’s creations are a fusion of his memories and artistic vision.
In the bustling 13th arrondissement of
Paris, where Chinese, Vietnamese, Cambodian, and Laotian cultures blend seamlessly into the city’s fabric, Laveuve found a rich source of inspiration. “The Asian district of Paris is a monument of Île-de-France that never ceases to inspire me… I deliberately mixed genres and cultures to merge shapes, colours, and to tell this story,” he explains.
Vamp Magazine caught up with the artist to discuss his influences, creative journey, and the intricate details that define his unique miniature universe.
How did growing up in the Paris suburbs influence your perspective on urban life and architecture?
The Parisian suburbs are dense and constantly changing, teeming with culture and diversity. Home to a wide range of housing types, from detached houses to high-rise towers and makeshift shelters, these suburbs influenced my perspective on architecture and urban life. Housing is the common denominator for all suburbanites, and it has become the focal point of my work. >>
“The Asian district of Paris is a monument of Île-de-France that never ceases to inspire me… I deliberately mixed genres and cultures to merge shapes, colours, and to tell this story,”
Can you discuss any particular elements of Gailhoustet and Renaudie’s work that resonate deeply with your art?
From my crude tower made of uncoated concrete, I witnessed Renaudie’s unique architectural approach. “Les Étoiles d’Ivry,” inspired by brutalism and the modern movement, broke away from standardisation with its triangles, disarticulated floors, double levels, and inaccessible spaces, all forming stars. This non-conformist architecture deeply influenced my own artistic approach.
What initially drew you to photography, and how did your career in fashion, music, reportage, and publishing shape your artistic approach?
My earliest photographs aimed to create a universe, transfiguring reality into something otherworldly. Photography became my storytelling medium. I started with still life and portraiture, learning about framing and lighting like a painter. Travelling through the city and suburbs, capturing portraits for music magazines and album covers, taught me to depend on the interplay of place and light. This led to my first miniature, seeking a unique setting free from light’s constraints. >>
“The Paris suburbs are dense and constantly changing, teeming with culture and diversity. Housing is the common denominator for all suburbanites, and it has become the focal point of my work.”
[ ...“Through my work, I translate fears and dreams about shelter and survival, intrinsic to human nature.”... ]
Since 2016, you’ve been creating a unique miniature universe. What sparked this transition from photography to creating these intricate miniatures?
The desire to escape the constraints of reality and the digital realm spurred my transition. My first miniatures were ephemeral, crafted for photography. Working by plane, lighting, and framing, I dismantled each setup after photographing. This process evolved into a pursuit of tangible creation, distancing myself from digital retouching.
The concepts of habitat and survival are central to your art. What messages are you trying to convey through these themes?
Through my work, I translate fears and dreams about shelter and survival, intrinsic to human nature. The series “IDF2068” imagines the homes of tomorrow amid environmental decline. These future dwellings, from landfill huts to sea-bound makeshift homes, mirror today’s reality and suggest a possible norm for tomorrow.
How does your background in photography influence the narratives and details in your miniatures?
Though secondary now, photography remains integral to my work, providing an immersive dimension and serving as an archiving tool. My photographs capture the essence of my sculptures, which reside
globally with collectors, an honour for me.
What role do reclaimed materials play in your creations, and why is giving objects a second life important to you?
Reclaimed materials guide my creations with their shapes. Giving objects a second life feels natural, as these materials often become the starting point for my miniatures. CDs, tin cans, and other discarded items find new purpose in my hands.
Your pieces often depict themes of shelter and human absence. What drives your exploration of these themes?
I’m fascinated by the trace of human >>
presence rather than the presence itself. Occasionally, I include masked or indefinable human figures, inviting viewers to imagine themselves in my miniature world. Creating shelters reflects humanity’s primal essence.
Can you elaborate on the symbolism behind the concepts of height, inaccessibility, protection, and abandonment expressed in your work?
These concepts represent humanity’s quest for transcendence, exploration, and milestones. They symbolise our need to build, protect, and sometimes abandon.
How do you hope viewers will interpret and engage with the themes of resistance and insubmission in your art?
My work mixes resistance and resilience, offering a vision of “The Day After.” It’s an invitation to see and exploit the world differently, without demanding commitment.
What reactions or reflections from viewers have surprised or inspired you the most?
Viewer reactions often focus on detail, from pragmatic evaluations of structures to imaginative narratives. This variety inspires me technically and narratively.
How do you see your work evolving in the coming years?
I hope to continue exhibiting my work, creating immersive universes that blend sculpture, photography, and soundtracks. This sensory journey gives meaning and life to my art.
Are there any new themes or techniques you are excited to explore in your future projects?
My work evolves naturally, my ideas lead me to new experimental techniques.
What advice would you give to aspiring photographers and artists who are looking to develop their unique voice and style?
Trust your intuition and create something that appeals to you first and foremost. [ V ]

grappling with mental health issues.
Supported by the Malta Arts Scholarship and funded by the Malta government, Liv’s educational journey has equipped her with the skills and vision to make a substantial impact in the fashion industry. In our interview, we delve into her inspirations, the message behind her designs, and her aspirations for the future. Join us as we explore the depths of creativity and empathy in Livia Arrigo’s “In the Attic.”>>
Can you elaborate on the metaphor of “In the Attic” and how it reflects your personal journey?
This collection represents my journey of introspection and self-discovery. By “In the Attic,” I mean delving into the depths of my mind to understand the emotions and experiences from my past that influenced my behaviour. It’s about entering the attic of my mind, exploring what’s inside, and gaining clarity on how these elements shaped me.
How did Carl Jung’s concepts of self-acceptance and individuation influence your collection?
Carl Jung’s concepts of self-acceptance and individuation deeply influenced my collection. I designed it to take the viewer on a journey of individuation, starting with a cocoon to symbolise the beginning of self-discovery. The subsequent designs explore the inner reflections and experiences within the cocoon, culminating in a final garment that represents a butterfly emerging, symbolising the complete individuation process.
What role do techniques like embroidery and beading play in your collection, and how do they contribute to its overall message?
Storytelling plays a crucial role in my collection, and embroidery has long been used as a form of visual storytelling. I wanted to incorporate this historical technique to enhance the narrative aspect of my work.
I have a deep appreciation for intricate details, and beads provide the perfect medium to showcase this. By using beads in my embroidery, I can create detailed symbols that visually communicate psychological experiences. This approach allows for consistent visual language throughout the collection, ensuring continuity and depth in the storytelling.
How do you envision ‘In the Attic’ influencing the emotions and perceptions of those who experience your collection?
The aim of ‘In the Attic’ is to showcase we all face similar emotional experiences and mental health challenges, often feeling isolated. This collection aims to reflect those common experiences, allowing us to see
...“THE AIM OF ‘IN THE ATTIC’ IS TO SHOWCASE THE FACT THAT WE ALL FACE SIMILAR EMOTIONAL EXPERIENCES AND MENTAL HEALTH CHALLENGES, OFTEN FEELING ISOLATED. THIS COLLECTION AIMS TO REFLECT THOSE COMMON EXPERIENCES, ALLOWING US TO SEE PARTS OF OURSELVES IN EACH PIECE.”...
parts of ourselves in each piece. Each look represents universal emotional experiences, encouraging a shared understanding and acceptance.
The ‘Protection Coat’ is adorned with colourful beads, 3D spikes, and an intricately beaded armour symbol. How do these elements enhance the garment’s symbolism and overall message?
The ‘Protection Coat’ is adorned with colorful beads, 3D spikes, and an intricately beaded armor symbol, all of which enrich its symbolism and overarching message of security and comfort.
From the viewer’s perspective, these elements serve to visually communicate
a sense of protection The armor symbols visually communicate protection, while the spikes in the coat resemble natural defenses seen in animals that use spikes for protection. Additionally, the colors of the beads reflect those used in previous designs, symbolising awareness of various aspects of oneself.
From the wearer’s perspective, the coat offers physical comfort with its soft, fluffy texture providing warmth. The weight of the beads mimics the calming effect of a weighted blanket, offering reassurance and soothing anxiety.
What is the inspiration and symbolism behind the painted tree and gradient ruffles on the ‘Beneath the Surface’ gown, and
how long did it take to create?
Inspired by the acceptance of all facets of oneself, which is symbolized by the gradient ruffles representing the different colors of one’s identity. The tree, with a detail of an acron hanging from its branches, embodies shadows transformed into sources of strength rather than distress. The acorn hanging from the tree symbolizes the human psyche’s resilience in regenerating itself even after trauma.
Roughly estimated, it took around 300 hours to complete. However, crafting this gown was a labour of dedication where days blurred together, and I lost track of time.>>
How long do you usually spend on garments that feature a lot of beadwork, and what challenges do you face during their creation?
Creating garments with extensive beadwork is indeed a meticulous and time-consuming process. Each piece becomes its own marathon, often spanning weeks focused solely on beadwork.
Regarding the challenges encountered in creating this work, to be honest, from the moment I initially sketched my designs and committed to using beadwork embroidery, I was fully aware of what I was getting into. It meant countless hours dedicated to meticulous work and continuously summoning the willpower to persevere, ensuring I was always well-prepared with the necessary materials. Once I had embarked on this path, there was no turning back; I was committed to seeing it through to the end.
How did you decide on the materials and colours used in this collection?
I selected materials and colors for this
collection based on my fascination with fabric details and textures. Each fabric, color, and silhouette was chosen deliberately to convey a narrative, enabling wearers to engage with the story through both visual aesthetics and tactile sensations.
Do you plan to expand on the themes explored in “In the Attic” in your future work?
I will be expanding into a jewelry and accessories line inspired by the ‘In the Attic’ collection. However, for my next fashion collection, I’m also eager to explore a world beyond the cocoon.
How has working on this collection impacted your perspective?
Working on this collection has deeply impacted my perspective by allowing me to explore and express personal experiences and emotions through design. It has reinforced the power of storytelling through fashion and how garments can serve as vessels for conveying complex narratives and emotions. This process has also
heightened my awareness of the universal aspects of human experience, particularly in terms of emotional resilience and self-acceptance. Overall, it has enriched my understanding of the intersection between creativity, personal growth, and the ability of fashion to communicate profound messages.
Were there any specific challenges you faced while creating this collection, particularly in terms of design and execution?
I had a lot of fun creating my first collection, though not without its challenges. I faced many sleepless nights and moments of anxiety and uncertainty, questioning whether my designs would meet my expectations or would be good enough. For one of my designs, the construction was incorrect, requiring me to start over from scratch. Despite these difficulties, I did have someone around me who provided honest feedback and grounded me through the process whom I am extremely grateful for. [ V ]

[“NO MATTER WHAT WE SAY AS ARCHITECTS OR WHAT WE CLAIM, ARCHITECTURE, OR THE PROCESS OF CONSTRUCTING BUILDINGS, IS AN ACT OF DESTRUCTION.”]
The strength of architecture is it can enrich our appreciation of nature and empower us to take action to protect it.
In Norway there are tough contemporaneous discussions on protection of the natural environment. This includes restriction of building new huts allowed within 100m of watercourse. Mitigation can be where existing structures are being replaced, where exceptional sustainable design can be demonstrated, and where there is benefit to the community.
This retreat seeks a collaboration between mindfulness and nature practices. It encourages a personal journey of exploration that will guide you into a closer relationship with self, community, and the
environment. Why is nature calming? Because we are genetically programmed to find trees, plants, water, and other nature elements engrossing, we are absorbed by nature scenes and distracted from our pain and discomfort. Why do people retreat to nature? It is a time to disconnect and destress. Time to reset and rejuvenate the senses. A retreat to nature is instinctive for most of us and can be a therapeutic antidote to everyday stress.
Our quest is to find a new balance between construction and nature, and to encourage ecological preservation and enrichment. >>

As the temperature rises, it’s time to revamp your beauty routine and embrace the summer vibes with confidence. Nicola Powell, our in-house beauty expert and leading makeup artist, shares her top tips and tricks for achieving a flawless summer look. From skincare essentials to vibrant makeup advice, discover how to keep your skin radiant and your makeup perfect all season long. Get ready to transform into a summer goddess with these sizzling insights!
Skincare Saviours
With an abundance of products available on today’s market, choosing the right ones can be overwhelming. To simplify, I’ll guide you through a summer with just the right ingredients. Two main power players are niacinamide and vitamin C.
Niacinamide combats excess shine and oiliness with mattifying moisturisers, like gelbased or lighter textures. This ingredient has multiple benefits for the skin, from locking in moisture, combating fine lines and wrinkles, to helping control oil production and acne breakouts. It minimises the
appearance of pores, reduces inflammation, and can even help with eczema and countless other skin concerns. I absolutely love this ingredient for its endless benefits.
Another ingredient I recommend this summer is vitamin C (but not to be used in conjunction with niacinamide, as they don’t layer well together and must be used separately). Vitamin C helps even out skin tone and fight against pigmentation and sunspots. With its brightening and firming effects, it also acts as a skin barrier, making it a no-brainer.
Skin Prep
Skin primers are a secret weapon, using lightweight formulas to quietly prepare any makeup base. Prepping your skin prolongs makeup wear with gel-like, oil-control primers that colour correct and hydrate. There is a vast array to suit all skin needs.
If you have oily skin, look for mattifying primers with salicylic acid, which will help fight breakouts. If hydration is your goal, opt for a water-based formula with peptides and vitamin E among other ingredients.
Protect your skin from harmful UV rays while ensuring your makeup stays intact with waterproof sunscreen. Opt for a lightweight, nongreasy formula that won’t clog your pores and is
resistant to sweat and water. If you want your makeup to stay totally smudge-proof, consider using a waterproof setting spray.
Light and Dewy Skin
In summer, say goodbye to heavy, matte foundations and hello to fresh, dewy skin. Embrace your natural radiance by opting for lightweight, hydrating foundations, tinted moisturisers, or even tinted sunscreen. Let your skin breathe while still achieving that effortless, glowing complexion. Choose formulas with added skincare benefits so your skin will stay extra hydrated and reap all the rewards.
Bold and Bright or Shimmering Eyes
Elevate your summer makeup game with vibrant eye looks that pop! From electric blues to sunset oranges, don’t be afraid to experiment. Add a playful touch with graphic waterproof eyeliner and waterproof mascara to make a statement. Get creative and let your eyes do the talking. [ V ]

Stay Hydrated with Nuun.
You know it’s important to stay hydrated—but are you truly conscious of your daily hydration habits? When life gets busy, it’s easy to lose track of how many times you’ve topped up your water bottle or how much fluid you’ve consumed. Yet, maintaining proper hydration is crucial for overall health and well-being.
Hydration involves replenishing the water and electrolytes your
body loses through daily functions and activities. On average, humans lose just over 2 litres of water a day—more if it’s hot or cold, you’re exercising vigorously, or you’re consuming dehydrating beverages like coffee and alcohol. Along with water, your body loses electrolytes—electrically charged minerals such as sodium, potassium, and chloride. Without replacing lost water and electrolytes, you will become dehydrated, leading to a host of potential health issues. It’s that simple and that important.
Practicing daily proactive hydration can help you feel:
• More motivated
• More alert
• More energised
• More confident in your ability to move the way you want to
Enter Nuun (pronounced “Noon”), a company dedicated to keeping you as hydrated as humanly possible. Our drink tablets are fizzy, tasty, and loaded with electrolytes that keep you healthy and hydrated. Whether you’re a highly active athlete planning your next

Plus, our products are vegan, kosher, Informed-Sport certified, gluten-free, and low in sugar. An Interview with De Mondion’s Culinary Maestros, Executive Chef Clint Grech and Head Chef Gabriel Caruana
CELEBRATING CULINARY EXCELLENCE
Sat within in the heart of the ancient, walled city of Mdina, De Mondion has long stood as a leading example of gastronomic excellence. As the restaurant celebrates its 25th anniversary, it reflects on a journey marked by passion, innovation, and an unwavering commitment to quality. Under the guidance of Executive Chef Clint Grech and Head Chef Gabriel Caruana, De Mondion has achieved recognition as one of the world’s top 1000 restaurants on ‘La Liste’ and was among the first establishments in Malta to earn a Michelin Star in 2020.
Clint Grech, who has been at De Mondion for 23 years, has been instrumental in shaping its success. His leadership and dedication to using local, sustainable ingredients have elevated the restaurant’s offerings and deeply influenced Malta’s culinary landscape. Meanwhile, Gabriel Caruana, whose journey began at the age of 16, has brought his unique flair and enthusiasm, pushing the boundaries of culinary art. Together, they have crafted a dining experience that is both rooted in tradition and elevated by innovation.
Chefs Clint and Gabriel share their insights, experiences, and aspirations for De Mondion as they reflect on their shared journey and look ahead to the future.
Q+A – CHEF CLINT GRECH
De Mondion is celebrating its 25th anniversary. What does this milestone mean to you, especially having spent 23 years contributing to its success?
Over the years, I have witnessed De Mondion evolve while maintaining the same character and core principles since it opened its doors 25 years ago. During this time, we noticed a growing demand for local ingredients from our patrons. Consequently, a few years ago, we transitioned from relying heavily on imported ingredients to sourcing more local produce, aligning with our commitment to sustainability. In terms of service, we have always strived to uphold high standards while continuously seeking innovative ways to enhance and create memorable experiences for our guests.
Throughout the years leading up to this milestone, De Mondion has built its repertoire and pushed to be one of the leading fine dining restaurants on the Maltese islands. This achievement was marked by our inclusion among the top 1000 restaurants in the world on ‘La Liste’ and being one of the first restaurants on the island to receive a Michelin Star in 2020.
Personally, walking into work feels like entering a second home. Being part of this ever-evolving restaurant and The Xara Collection feels like I’ve built a second family. I was excited to celebrate this milestone with a special 25th-anniversary menu we prepared for our guests during the month of July
Reflecting on your journey from a 16-year-old student to Executive Chef at De Mondion, what are some of your most cherished memories?
I have a plethora of memories from my years at De Mondion. Some of my favorites include:
– Having a young team where we all grew and developed our skills together.
– The Xara Palace hosted King Charles (then Prince Charles) for a week, and the De Mondion team cooked and prepared all meals for his Royal Highness.
– Over the years, De Mondion has hosted several celebrities, including famous actors, singers, and politicians.
surreal!.
How did your grandfather’s catering establishment in Mellieha influence your decision to pursue a career in catering, and how have those early experiences shaped your work at De Mondion?
As a young boy, my playground was different. I was fascinated by the large machinery, like the industrial oven that took up the size of a room, the smell of freshly baked bread (which I can still smell today), the family working together, the taste of divine doughnuts, and, most of all, my grandfather cooking.
As I got older, I spent my summers working in the establishment, learning the culinary industry’s ropes. I learned what it was like working Sundays and preparing for the ‘summer afternoon rush.’ From then, I decided to enter the Institute of Tourism Studies, where I wanted a mix of experience and the right education for my path to becoming a professional chef.
Achieving the Michelin Star was a significant milestone for De Mondion. Can you share what this achievement means to you personally and professionally?
At De Mondion, we continually strive to provide our patrons with the best food, service, and experience. Being awarded the Michelin Star was a significant milestone for the team’s hard work.
“BEING PART OF THIS EVER-EVOLVING RESTAURANT AND THE XARA COLLECTION FEELS LIKE I’VE BUILT A SECOND FAMILY. I WAS EXCITED TO CELEBRATE THIS MILESTONE WITH A SPECIAL 25THANNIVERSARY MENU WE PREPARED FOR OUR GUESTS DURING THE MONTH OF JULY”
Your first internship was in the UK. Can you describe some of the most memorable experiences and what you learned from them?
One of my happiest memories from my first working experience was a fishing trip with the Chef. What we caught on the day was then served as a special on the menu.
A skill I learned at the restaurant and still use today is butchery skills. I recall being handed the knife and following the rhythm of other full-time chefs.
Together with culinary skills, I also learned life skills. As a student, you experience living independently and immersing yourself in the working world.
Spending two weeks at La Gavroche with Michel Roux must have been transformative. How did it influence your culinary style and philosophy, and how have you applied these learnings at De Mondion? Working at La Gavroche was an experience of a lifetime. I learned the importance of sauce the finishing touch to complete a dish is nothing without a sauce. I also started learning the importance of sustainability and zero waste, both of which I brought and implemented in my kitchen as much as possible. Last but not least is the use of butter. Yes, La Gavroche taught me ways and means of incorporating it. >>
– During COVID, walking into an empty restaurant and kitchen felt
Head Chef Chef Clint Grech
What were some of the challenges you faced in transitioning from a student to running the kitchen at De Mondion, and how did you overcome them?
I have learned how to lead a team, handle responsibilities, and control stress levels.
How do you integrate the traditional influences from your family’s catering business into the modern culinary practices at De Mondion?
One of the main influences was watching my family work in the establishment’s kitchen and the adrenaline rush from running an a-la-carte kitchen and service. As an ode to my grandfather, I make a modern version of his dessert Baba au Rhum.
What is your approach to balancing innovation with tradition in the dishes you create for De Mondion?
I take traditional Mediterranean flavours and incorporate new techniques to showcase our local cuisine in a modern light.
Looking ahead, what are your aspirations for the future of De Mondion, especially as it continues to build on its Michelin Star reputation?
Our goal for De Mondion is to continue pushing new ideas and enhancing our guest experiences. I want each day to be better than the last.
Are there any new culinary trends or techniques that you are excited to explore in your future projects at De Mondion?
More integration from chefs and their personal touch significantly enhances the dining experience by adding unique flavours and a personalised approach to each dish.
How do you envision the next 25 years for De Mondion, and what role do you see yourself playing in its continued success?
I envision expanding the brand, possibly overseas, and aiming to continue leading the restaurant to new heights of success.
Q+A with Chef Gabriel Caruana
What initially drew you to the world of gastronomy at the young age of 16, and how has that passion evolved over the years at De Mondion?
From a very young age, I was always looking forward to the next meal. I was interested in new dishes and what my mum was cooking. As I got older and became a chef, I looked forward to the dishes I would prepare for our diners using new ingredients.
Can you recall any pivotal moments or mentors who significantly influenced your early career and contributed to your success at De Mondion?
Working abroad, I learned a lot about various cultures, how systems work, and the use of different ingredients.
Having worked alongside chefs from prestigious establishments, how have these experiences shaped your culinary techniques and philosophy at De Mondion?
The Chefs welcomed me into their ‘homes’ and treated me with the utmost respect. I have learned a lot from them and I am forever grateful.
The most important lessons from such prestigious establishments are the importance of being highly organized and the emphasis on seeking new ingredients and flavours. Another important lesson is when creating a dish, we need to try not to overcomplicate it and focus on showcasing the elements making up the plate.
What key lessons did you learn from working with Michelin-starred chefs in the UK and the Maltese Islands, and how have you applied them at De Mondion?
Key lessons learned from working with Michelin-starred chefs include the importance of discipline in maintaining high standards, perseverance in overcoming challenges, consistency in delivering exceptional quality, and the value of working as a team to follow the chef’s aim.
Your cooking philosophy is to enhance ingredients without overshadowing them. Can you explain how you achieve this balance in your dishes at De Mondion?
The ingredient is the key and the foundation of every dish. However, for this, one needs good-quality produce. At De Mondion, we focus on balancing flavours so that all ingredients can be showcased.
How do you select the ingredients that become the focal point of your culinary creations at De Mondion?
Seasonality plays a big role in this, and we adapt according to what is available from our in-house sustainable projects and the fields of Xara Gardens. When menus are being created, we work around the ingredient. >>
Chef Gabriel Caruana
[...“Keeping the restaurant busy and healthy while gradually moving forward requires strategic planning, a dedicated team, and a fundamental emphasis on quality”...]
It is a significant achievement to have been instrumental in acquiring one of the first Michelin stars for the Maltese Islands. Can you share more about that experience and its significance to you and De Mondion?
I have worked at high-end restaurants for 8 years, and I am sure my colleagues feel the same way. Having Michelin come to Malta has further fueled our passion for achieving high standards for the culinary scene on the island and is an incentive for recognition for our hard work.
How has the Michelin recognition impacted your career and the culinary scene in Malta, and what does it mean for De Mondion’s legacy?
For De Mondion, being awarded the Michelin Star after over two decades of service and pushing fine dining in Malta was the cherry on the cake. Personally, it is a privilege to work at Michelin-starred restaurants and an ‘extra seasoning’ to my career.
What unique elements do you bring to the Michelin-starred De Mondion restaurant that set it apart from other establishments?
I would describe myself with these two words: ‘Spontaneously Planned.’ Upon joining the De Mondion team, I and Executive Chef Clint push to add gradual elements of fun and youthfulness, whether in the menu or overall experience.
Additionally, I focus on shining a spotlight on Mediterranean elements such as fine olive oil, vinegar, citrus, and exploration of the seafood world.
How do you continuously innovate while maintaining the high standards at a Michelin-starred restaurant like De Mondion?
We learn a lot from our guests and have a strong team behind us working tirelessly to bring ideas together.
What are your future goals and aspirations within the culinary industry, particularly with De Mondion in mind?
Keeping the restaurant busy and healthy while gradually moving forward requires strategic planning, a dedicated team, and a fundamental emphasis on quality. It’s essential to instill the note that ‘ingredient is key’ in everything we do, whether you are a diner appreciating the meal or an aspiring chef learning the craft. This
focus on premium ingredients ensures the sustained excellence that drives both customer satisfaction and long-term success.
Are there any particular culinary trends or new techniques that you are excited to explore and integrate into your work at De Mondion?
I am not particularly fond of trends; however, I do want to develop and look into ‘raw cuisine.’ This method involves leaving the ingredients in their natural state and carefully complementing them. [ V ]
