2 Doors Down is the little sister to Chives Canadian Bistro, and as the name suggest, is located two doors down. Like the flagship restaurant, 2 Doors Down offers a unique, seasonally-inspired, locallysourced, unpretentious menu with some international flare.
Acadian Maple Products is a gourmet food producer, exporter and retailer. Our specialty is pure Nova Scotia maple syrup and maple products such as maple cream bars, candy and maple butter.
Executive chef and owner Craig Flinn says “This is the food cooks like to eat.” Casual urban dining at it’s best, with a drink menu to to match, 2 Doors Down is “your neighbourhood restaurant in the heart of downtown Halifax!” Visit this team’s latest offering, Temple Bar Cocktails & Kitchen, located right across the hall. Agricola Street Brasserie is located in Halifax’s vibrant North End and is a place where neighbours and friends gather in a warm and communal atmosphere while enjoying some of the best food and drink available on the East Coast. With Chef Ludovic Eveno at the helm, The Brasserie is an urban restaurant and bar serving locally supplied, seasonal home-style cooking where all charcuterie, breads, jams, sauces and desserts are made in-house. Offering 12 local beers on tap, and a wide selection of spirits, wine and cocktails, we appeal to a wide variety of tastes and pleasures. See our featured recipe on page 20.
Located in Downtown Dartmouth, Battery Park is a beer bar featuring 15 rotating taps that showcase the very best craft beer that the east coast has to offer. Chef Mark Gray heads up our kitchen where we produce a vast array of small bites and snacks. Our menu also includes larger sharing boards focused on cured, smoked and raw preparations of meat, fish, veg, cheese and desserts. See our featured recipe on page 30. Open year-round. Wine-Braised Chicken Stew
SERVES 6
BROOKLYN WAREHOUSE By Chef Stephanie Ogilvie 3 tbsp (45 ml) canola oil 6 whole chicken legs* (drumstick & thigh) Salt & pepper 8 strips bacon*, chopped 6 shallots, peeled, halved 1 small celeriac, peeled, diced 4 carrots, peeled, diced 4 cloves garlic, minced 1/4 cup (60 ml) tomato paste 3 bay leaves 15 thyme sprigs 2 cups (500 ml) Shitakes, steamed, halved
1. Heat oil in pan. Season chicken with salt & pepper and sear until brown. Remove from pan and set aside. 2. Add bacon to the same pan and render fat, add shallots, celeriac and carrots. Sauté until soft. Add garlic and sauté until fragrant. 3. Add tomato paste, sauté. Add the herbs and wine; reduce by half of its volume. 4. Add chicken stock and chicken legs and simmer for 1 ½ hours, or until tender. 5. Sauté mushrooms and place on dinner plates or large bowls. Top mushrooms with braised chicken.

Cheelin Restaurant has enjoyed over 20 years of service, making its mark on the Halifax restaurant scene. Fanny Chen came to Canada in 1989. Valley Apple Bread Pudding SEASONS BY ATLANTICA Chef Daniel Orovec 1 loaf white bread, cut into thumb size pieces 1 cup (250 ml), Spy apples, peeled, core removed, diced 3 cups (750 ml) milk 4 eggs 1 cup (250 ml) sugar 1 tsp (5 ml) vanilla 1 tsp (5 ml) cinnamon
1. Preheat oven to 325°F (163°C). 2. Toss bread and apples together. Combine remaining ingredients and pour over the bread and apples; toss together. Let stand for 15 minutes. 3. Line a 9 x 13-inch (23 cm x 33 cm) glass baking dish with parchment paper. Pour the pudding mix into the pan and spread evenly. 4. Bake for approximately 45 minutes. Let cool slightly before removing from pan to serve. 5. Serve with whipped cream, vanilla bean ice cream or crème anglaise. NS ground beef NS ground lamb butter onion diced garlic minced chopped mushrooms green peppers red pepper beef broth
2 X 28oz cans 1 can 2 cans 1 tsp (5 ml) 3 tbsps (45 ml) 2 tbsps (30 ml) 1 tbsp (15 ml) 1 tsp (5 ml) 1 tsp (5 ml)
stewed tomatoes tomato sauce red kidney beans turmeric chili powder oregano thyme coarse sea salt cracked pepper
METHOD In a good size pot, melt butter then sauté the ground meats until browned, Drain any fat that may have collected. Add in diced vegetables and sauté until softened. Add beef broth, tomatoes, tomato sauce and kidney beans, stir in spices and simmer for 1 ½ hours. Serve with your favorite bread. For added flavor consider serving with a topping of grated cheese.

METHOD Preheat oven to 350F (180 C). Beat eggs and cream until well mixed and frothy. Add in finely chopped vegetables and lobster (or protein of choice) if using. Heat an oven proof skillet (cast iron works well) and melt a tbsp. of butter. Pour in the egg mixture and cook over medium high heat until the edges begin to set. Place skillet into preheated oven and continue to bake until the top has set, approximately 10 to 12 minutes. Remove from oven, transfer to a cutting board and cut into wedges. Serve with a leafy salad. Perfect for a light lunch or brunch.
Agricola Street Seafood Chowder
SERVES 4-6
AGRICOLA STREET BRASSERIE Chef Ludovic Eveno 3 tbsp (45 ml) butter 1/3 cup (80 ml) carrots, diced 1/8 cup (30 ml) celery, diced 3/8 cup (90 ml) onions, diced 1 sprig of thyme 1/3 cup (80 ml) white wine 3/4 cup (185 ml) heavy cream 2 cups (500 ml) milk 1 tbsp (15 ml) cornstarch 1/2 cup (125 ml) yellow esh potatoes, diced 3 oz (85 g) scallops 3 oz (85 g) salmon 3 oz (85 g) halibut
1. Start by making the base. Melt 1 tablespoon (15 ml) of butter in a large pot over medium heat. 2. Add diced carrots, celery, and onions and sweat until onions are translucent. 3. Add thyme and then deglaze the pan with white wine until liquid is reduced by half. 4. Add the cream and milk and simmer over low heat for 10 minutes. 5. Whisk in the corn starch. 6. Add the diced potatoes and cook until almost fork tender. 7. Before serving, melt the remaining butter in pan over medium heat and add all the seafood.

The Lumberjack Pizza MORRIS EAST RESTAURANT Chef Ashley Davis 1 pizza dough ball 1/2 cup (125 ml) tomato sauce 3 large slices of bacon, cooked, halved 1 sausage, cooked, sliced 1 onion, sliced, caramelized* 1/2 cup (125 ml) smoked apple wood cheddar, shredded 2 tbsp (30 ml) maple syrup 2 tbsp (30 ml) fried rosemary** 1. Set oven to 450°F (230°C) for at least 30 minutes. 2. Stretch out dough to form a 12-inch (30.5 cm) circle. 3. Top dough with tomato sauce, bacon, sausage, onion and grated cheddar. 4. Bake for 15 minutes. 5. To finish, drizzle maple syrup over top of pizza and sprinkle with fried rosemary.

Got a smartphone? Love food? Great. There are THOUSANDS of people online who feel the SAME way. Any quick visit to Instagram or Twitter practically screams ’Food photography and social media were BORN to be together!’ If you’re already dabbling, or you’re curious to give it a try, we’ve got a few quick tips to help.
1. Natural Light Natural light is not essential, however, is almost always flattering. Position your food so that window light is coming from behind or the side of your dish. Trust me. Instant improvement.
2. Back Up Ok, so you’re eating THE BEST LOCAL FISH TACO OF YOUR LIFE in that amazing new restaurant but all we can see in your pic is a sprinkling of cilantro and some chopped tomato. If you back up and show the whole taco, the plate and maybe even the kitschy tablecloth, well then my friend, you’re telling a STORY, and everyone knows storytelling is where it’s at these days. But don’t forget the other diners around you. Be discreet. Your great food shot shouldn’t come at the detriment of their dining experience.

3. Tall Food vs Flat Food I follow this simple little rule and it works really well for me. I shoot tall food (a stack of cookies, an ice cream sundae, a layer cake) from straight on and flat food (rolled out cookie dough, pizza, toast) from overhead. This works for me 99.999 percent of the time.
4. Filters Cameras capture a small fraction of colours the human eye can see, and for this reason I rarely share pics that aren’t tweaked. I want my images to look how MY MIND saw them, not how my camera decides it saw them. My current favourite apps to tweak and edit pics are VSCO (free) and Snapseed (free), although there’s also a huge trend for people to share pics with #nofilter.
5. Hashtag It I love Instagram. It’s an awesome place to search for pics of things you’re interested in and hashtags are how you do this. Placing a number sign (#) before a word, or multiple words strung together with NO SPACES, with your pic or in your comments, make your pics searchable, and allow you to search for other like-minded people that will understand your obsession with #lobsterforbreakfast. I keep a note on my phone of all the hashtags I like to use and then I just copy and paste them when I post a pic. And if you eating great Nova Scotia food why not show off your local pride by adding one these hashtags to your tweet?

Stout Cake BATTERY PARK BEER BAR & EATERY Chef Mark Gray
SERVES 4
1/2 cup (125 ml) local Stout (dark ale) 1/2 cup (125 ml) unsalted butter 1/3 cup (80 ml) cocoa powder 1 cup (250 ml) all-purpose flour 1 cup (250 ml) white sugar 1 tsp (5 ml) baking soda 1/2 tsp (3 ml) salt 1/3 cup (80 ml) sour cream 1 egg
1. Simmer the Stout and butter over medium-low heat. 2. When the butter has melted add the cocoa powder and blend until smooth. 3. Place flour, sugar, baking soda and salt in a separate bowl; mix. 4. Beat sour cream and egg in a stand mixer. 5. Combine chocolate mixture with egg mixture. 6. Now combine the flour mixture with the chocolate and egg mixture. Mix until just combined. 7. Pour the batter into a 12-inch (30.5 cm) spring form pan and cook for 20 - 30 minutes at 350°F (177°C). 8. Test cake with a skewer. If it comes out dry it is done. Lobster Cake SERVES 6-8 with Roasted Vegetable Relish and Lemon-Thyme Aioli ATLANTICA OAK ISLAND Chef Konrad Haumering 2 lb (900 g) lobster claw and knuckle meat, coarsely chopped 1/2 cup (125 ml) mayonnaise 1/2 cup (125 ml) onion, minced 1 tbsp (15 ml) garlic, minced 1/2 tbsp (8 ml) mixed fresh tarragon and chives, chopped 1/4 cup (60 ml) celery, finely chopped 2 cups (500 ml) fine bread crumbs Vegetable oil for frying Roasted vegetable relish* Lemon thyme aioli**
1. Mix all your ingredients in a large bowl to bind. Taste and season accordingly with salt and pepper. 2. Shape the mixture into little round cakes and place on a baking sheet, cover and refrigerate for 1 hour to let the cakes set. 3. With a non-stick pan heat oil over medium heat and sear the cakes on both sides until they are golden brown. Serve on a roasted vegetable relish*.

HINT: *To make a roasted vegetable relish combine diced roasted red, green and yellow peppers, diced zucchini, diced eggplant, diced tomato, finely chopped red onions and chopped mushrooms. **Place 1 egg, 1/2 tbsp (8 ml) Dijon, 1 tbsp (15 ml) minced roasted garlic and juice of 1/2 lemon in a bowl. How to Shuck an Oyster Like a Pro

1) The right tools for the job Before the shucking begins, it’s important that you find the right tools for the job. This includes a clean rag or dishcloth, a solid surface (a wooden cutting board is perfect), a severing platter and a proper oyster shucker. Although there are many types of oyster knifes, we really like the style pictured to the right. The sharp tip allows for easy entry into the hinge of the oyster and the sharp edge makes severing the adductor muscle a snap. Some people also like to wear a glove while shucking to provide some additional protection. Gloves can range from a basic rubber dish glove to a stainless steel mesh glove. At the end of the day, having the right tools for the job will make for a much safer shucking experience.

2) Cleaning and positioning Clean your oysters by rinsing them under cold running water and removing any grit or mud. Place the oyster between your folded rag or dishcloth with the hinge exposed. The hinge is where the oyster naturally opens and closes, and it is usually more tapered than the opposing end. Make sure the oyster is right side up, that is that the curve is on the bottom, and the side that is more flat faces up.

3) Making the insertion With the oyster secured on a surface, within your cloth, in one hand use an oyster shucking knife to find the deepest crevice in the knuckle. With a decent amount of pressure, wiggle the knife into the space until the shell releases, then give it a twist to pop the joint open. Try to mimic the action of opening a doorknob. Be extremely careful during this step to avoid any accidents with your oyster knife.

With your knife fully inserted, slide the edge of the blade horizontally down the shell to sever the muscle that connects the oyster to the top shell.
Keep the oyster as level as possible during the process to not loose the liquor in the shell. The liquor is an important element in the oyster tasting experience. This briny liquid helps to provide a true taste of the oyster’s origins – otherwise know as it’s ‘merroir’.

The Kitchen Party: A True Maritime Tradition If you were born and raised in Nova Scotia then you will be quite familiar with the tradition of a kitchen party. At its essence a kitchen party features good food, great East Coast music, and conversation that ensures nobody will be engrossed in their smartphones.
WHY THE KITCHEN? The Fridge - It’s right there, so nobody ever has to leave a conversation to grab another cold beverage. Close Quarters - Kitchens are usually smaller than most other rooms, so it naturally forces everyone to be in close proximity. Conveniently Comfortable People come and go from a kitchen party – sometimes staying for hours, sometimes just a drop in to say hello – so instead of people taking off their shoes and get settled in, everyone just goes to the kitchen for convenience.
THE KITCHEN PARTY STAPLES EAT A kitchen party is not a sitdown dinner; rather everyone is on their feet and moving 46
around, so opting for self-serve items such as chips and dips and fingerstyle foods that people can nibble on is the best route to take. Take advantage of Nova Scotia’s world-class seafood! A big pot of seafood chowder set over a low heat on the stove, so guests can help themselves, is always a welcome sight, as are bacon-wrapped scallops. No need for fancy china, coffee mugs and tea cups work as make shift chowder bowls. For a fancier affair set out vegetable platters and a charcuterie board of various meats and cheeses. As long as it’s local you’ve kept to the spirit of the Nova Scotia kitchen party. DRINK No mixed drink is more ingrained in our DNA than rum and coke. The Captain once ruled the kitchen party but now it’s being overthrown by incredible Nova Scotian-distilled rums such as Ironworks’ Bluenose Dark Rum and instead of the cola spice it up with a little local content, such as Propeller Ginger Beer. That said, the kitchen party isn’t complete without beer. BE MERRY No kitchen party is complete without music, whether it’s a fiddler or guitar player in the corner or great East Coast music played on an iPod attached to speakers. Classics choices such as the Barra MacNeils, The Rankin Family, Bruce Guthro and Gordie Sampson highlight the plethora of options to make your playlist shine. Ashley MacIsaac and Natalie MacMaster’s wizardry on the fiddle can spice up your party with a greater Ceilidh feel to it while Joel Plaskett, Wintersleep, Dave Gunning and The Stanfields are more contemporary performers that are sure to make your party memorable. Of course, no kitchen party is complete without a rousing rendition of Stan Rogers’ Barrett’s Privateers or The Mary Ellen Carter. ARGYLER LODGE AND RESTAURANT Chef Jonathan Joseph 2 2-lb (450 g) butternut squash, halved lengthwise, seeded 2 tsp (10 ml) canola 2 tbsp (30 ml) coconut oil 1 cup (250 ml) chopped onion 1 cup (250 ml) chopped carrots 1/2 cup (125 ml) chopped peeled honey crisp apples 1 tbsp (15 ml) Thai red curry paste 1 tbsp (15 ml) grated fresh ginger 1 tbsp (15 ml) lemongrass paste 3 ½ cups (875 ml) chicken broth 2 bay leaves 1/2 cup (125 ml) whipping cream 3 tbsp (45 ml) honey 6 tbsp (90 ml) sour cream, loosen with some cream Chopped fresh cilantro Julienned (cut in thin strips) fresh ginger
1. Preheat oven to 350°F (177°C). 2. Brush cut side of squash with canola oil; place squash, cut side down, on large rimmed baking sheet. Roast until tender, about 1 hour. 3. Cool the squash slightly and then scoop squash out into a large bowl. Measure 3 cups squash (reserve any remaining squash for another use). 4. Heat coconut oil in large pot over medium-high heat. Add onion, carrots, and apple; sauté 5 minutes. Add curry paste; stir 2 minutes. 5. Add chicken broth, bay leaves, ginger, lemongrass paste and 3 cups squash. Bring to boil; reduce heat to medium-low and simmer uncovered 1 hour. Discard bay leaves. 6. Working in batches, purée soup in a blender until smooth. Return to same pot. Stir in cream and honey. Season the soup with salt and pepper. 7. When ready to serve rewarm the soup over medium-high heat. Divide soup among bowls. Drizzle with sour cream; and garnish with cilantro and julienned ginger.

SERVES 4
BLOMIDON ESTATE WINERY About the pairing: Blomidon Estate’s Cuvée l’Acadie is a méthode traditionelle sparkling wine made from 100% L’Acadie Blanc grapes grown on their ocean estate vineyard. Aged for a minimum of 25 months prior to disgorging, the result is a brut (dry) sparkling wine with a mix of classic L’Acadie citrus, stone fruit and pineapple aromas with the rich toasty brioche notes of extending aging. A great match to this dish which is inspired by Nova Scotia’s traditional way of enjoying lobster.
15 litres water 1 1/2 cups (375 ml) salt 3 tbsp (45 ml) cayenne powder 1 tbsp (15 ml) each celery salt, ground ginger, paprika
1. Place water, salt, seasoning, garlic and lemon slices in a very large stock pot. Add potatoes and bring to a boil. 2. Reduce heat to medium and cook potatoes for 8 minutes.
1/2 tbsp (8 ml) each nutmeg, cloves, allspice
3. Add the lobsters head first to the pot. Cover and cook for 6 minutes. The lobster should be bright red.

4. Add corn to the pot and cook for another 4 minutes.

Gidney Fisheries is a privately held, family-owned lobster company spanning four generations of the Gidney family, located in Southwestern Nova Scotia. We purchase our lobster products directly from local fisherman in the Bay of Fundy and St. Mary’s Bay, Nova Scotia. We have freshcaught lobster for 9.5 months of the year and supply our clients in the off-season from our temperature controlled lobster holding facilities in Metaghan and Centreville, with a combined 400,000 plus lbs of holding.

Cranberry Orange Scones
MAKES 8 SCONES
MASSTOWN MARKET 2 3/4 cups (690 ml) all-purpose flour 4 tsp (20 ml) baking powder 1/4 cup (60 ml) granulated sugar (plus extra for topping) 1/4 cup (60 ml) instant skim milk powder 1/4 tsp (1 ml) salt 1/2 cup (125 ml) shortening 1 cup (250 ml) cold water 1 tsp (5 ml) finely grated orange zest
6. Form dough into a ball, and place on the prepared pan. Flatten the ball into an 8-inch circle, about 1-inch (2.5 cm) think. 7. Use a knife to score across each round, making 4 cross cuts, to form 8 scones. Sprinkle granulated sugar on top. 8. Bake in preheated oven for 20-25 minutes or until light golden brown.

1. Preheat oven to 375°F (190°C). 2. Line a baking sheet with parchment paper. 3. Combine flour, baking powder, sugar, skim milk powder and salt in a bowl. Cut in shortening using a pastry blender. 4. Add the water, orange zest and cranberries. Gently stir with a fork to mix wet and dry ingredients. 5. On a sheet of wax paper, or lightly floured surface, carefully knead the dough several times until ingredients are uniformly mixed.

SERVES 8
JUST US! COFFEE HOUSES Chef and Co-Founder Debra Moore 1 cup (250 ml) warm water 2 tsp (10 ml) active dry yeast 3 cups (750 ml) organic flour 1 1/2 tsp (8 ml) salt 3 tbsp (45 ml) olive oil 3 sweet potatoes, scrubbed clean, roasted at 400°F (200°C) 2 yellow onions, peeled, sliced, caramelized until brown 2 tbsp (30 ml) local non-GMO canola oil 8 cloves garlic, minced 2 tsp (10 ml) cumin 1 tsp (5 ml) cinnamon 1 tsp (5 ml) cloves 2 cups (500 ml) water 1/2 cup (250 ml) green lentils 1/2 cup (250 ml) spinach, chopped Salt & pepper to taste
1. Start by making the dough. Combine flour and salt and set aside. In another bowl combine the water and yeast. Let stand 5 minutes. 2. Add the oil and half the flour mixture to the water. Mix for 2 minutes, until smooth. 3. Add the rest of the flour; knead for 5 to 7 minutes, until smooth. 4. Put in a greased bowl and let rise for 1 hour. 5. Meanwhile roast sweet potatoes in oven preheated to 400°F (200°C) until soft; about 30 minutes. Let cool, peel and mash. 6. Sauté garlic, spices in canola oil one minute. Add salt, pepper, lentils and water. Bring to boil, simmer for 20 minutes. Stirring. 7. Add chopped spinach, cook for 10 minutes. The lentils should be soft but not mushy. Drain and season with salt and pepper to taste 8. Cut dough into 8 pieces. Roll each into a ball. Cover and let rest 20 minutes. 9. Roll each ball into 8 inch (10 cm) circles. Layer with sweet potatoes, lentils and onions. Fold top half over and seal edges well. Cut slits in top, put on parchment lined cookie sheet. Brush top with olive oil or egg white wash. 10. Bake in oven preheated to 400°F (200°C) for 15 – 20 minutes.

Knoydart Farm is a certified organic dairy farm belonging to Angela, Adam and Frazer Hunter and overlooks the ruggedly beautiful coastline of the Northumberland Strait. In 1998 they decided to take the plunge and bought the dairy farm in Knoydart, halfway between New Glasgow and Antigonish.
One of the best “taste” experiences in Antigonish offers fantastic Taste of Nova Scotia-inspired cuisine at reasonable prices. The menu includes unique seasonal recipes featuring our fabulous homemade seafood chowder, loaded with fresh Atlantic seafood including haddock, shrimp, salmon and scallops and another favourite, our panko-crusted haddock, pan-fried to golden brown.
“Locally Inspired and distinctly different.” Along the scenic Sunrise Trail as you enter the seaside village of Pugwash, you’ll find the Hillcrest View Inn, sitting atop the crest of a hill overlooking this charming village. They produce organic Gloucester and Caerphilly cheeses in a variety of flavours, including peppercorn, garlic, dill caraway and cranberry. Mrs. MacGregor’s has been delighting shortbread enthusiasts with our delicious shortbreads since 2004. Using a generation's old family recipe, our classic Scottish Shortbread is the heart for our other yummy shortbreads such as Canadian Maple, Lavender & Lemon, and Chocolate. Every cookie melts in your mouth. Prepared in small batches, we bake with only the finest ingredients, from the creamy butter to the Belgian chocolate. 3. Try a freshly shucked oyster. From the Northumberland Straight to the South Shore, the waters surrounding Nova Scotia produce world-class oysters. Located in the pristine North of Smokey region of Cape Breton Island, this forward- thinking cooperative returns dividends to its members, while maintaining adequate reserves to ensure that the Co-op is able to withstand the challenges of the continually evolving fishery and world markets. The Co-op purchases fish from over 160 fishing vessels in the local area and has a processing plant specializing in cooked and frozen lobster and snow crab.
