Summer JUMP INTO with

GARDEN INSPIRATION

Spring is the time when flowers burst into bloom and nature puts on a show. A look around your own garden may have you thinking it’s time to spruce up your space with new ideas, but the uncertainty of continued water restrictions might have you thinking your options are limited. Nothing could be further from the truth. Inspiration for your garden is just around the corner at the Robert J. Cabral Agricultural Center, the home of the University of California Cooperative Extension Learning Landscape. The Learning Landscape is a demonstration garden filled with examples of useful ideas you can use in your own yard. Maintained by UC Master Gardeners, six small gardens are connected by paths and informational signage highlighting the themes of each section. To help with your shopping list to take to the nursery, we have loads of plants you may not be familiar with, but that perform well in the Valley. We also stock a kiosk with free seasonal gardening information. Sustainability may be a buzzword to some, but for the gardens it means everything is done with an eye to having a positive impact on our environment. This means we use efficient irrigation systems and irrigate only as much as necessary. All our planting beds are covered with mulch to preserve moisture and improve plant and soil health. The plants we have chosen,

except for the edibles, can thrive on low or moderate water: half or less than half of what a lawn would require. We plant lots of flowering things for the pollinators and beneficial insects, so hummingbirds, bees, butterflies and other insects can almost always be seen flitting about. Most of our paths are permeable, allowing rain water to infiltrate into the ground instead of running off to the storm drains, and we incorporate recycled and locally produced materials to reduce our carbon footprint. Nurseries big and small are now loaded with lower water options, but it can be helpful to see how they look in the ground before making the investment. Make the drive out to the Learning Landscape and get a vision for your new sustainable garden.

MANGIA BENE, RIDI SPESSO, AMA MOLTO Growing up, my family owned and operated a pasta company called Pasta Macaroni. Needless to say, we are very Italian. One of my favorite memories is making homemade pasta as a kid, and now my dad comes over and does the same with my sons. There’s just something about the smell of it all—the scent of a flour-covered countertop after fresh pasta is rolled, the bubbling pot of made-fromscratch sauce, the garlic-drenched bread. I think it’s the nostalgia, really.    Studies show that our sense of smell is closely linked to memory. This is because incoming smells first pass through our olfactory bulb, and this area of the brain is directly connected to two other areas strongly implicated in both emotion and memory.   And, for me, the smell of Italian food just triggers all of these sweet memories. Of course, every family has to rep their recipes as the best. But, the local establishments spotlighted in our Italian Tribute hold quite a flame (sorry mom). These spots make their own pasta and not only rep their family recipes, but share them with open arms and quality service.   Fusing local items with our overseas exploration, we dove a bit further in this feature—pairing Lodi wines with their tasty entrée counterpart, and exploring locally made olive oils and vinegars. So, next time you host a dinner party, opt for an Italian infused theme and pair and prepare like a true Italian (and a slight wine expert).    After feeling nice and full from that delicious Italian meal, walk a few of those carb calories off with help from our Walk on the Urban Side. Hit the streets of San Joaquin and explore little green gems sprinkled throughout our Central Valley—with many tucked and tree-canopied, serving as a perfect retreat!

In a conservative county, many members of the LGBT+ community felt as if they had to relocate to live as their true selves. At 17, Stockton native Jonathan Lopez struggled as he came out to friends and family. His traditional Catholic mother and her homophobic ex-husband ultimately presented an ultimatum: ‘If you live in our home, you can’t be gay.’    With that, Jonathan hit the streets during his senior year at Lincoln High School, couch hopping and staying at safe houses. “When your parents reject you, you rebel against the world,” Jonathan

roots, and many inspiring, upward-moving LGBT+ individuals.    “I began vocalizing the need for more resources in San Joaquin County,” Nicholas explains. It wasn’t until Oprah’s last show that he realized this was his fight. “She said, ‘You control your destiny,’ and I instantly realized this was something I needed to do myself.”   Nicholas connected with Riley JohnDonnell, organizer of Stockton’s first Pride Festival in 1992. Together they threw an event that raised $16,000 and ultimately secured the founding of San Joaquin Pride Center (SJPC).   “We decided from the start that this would be a resource for the entire county,” Nicholas explains. “That’s why a central Stockton location—with public transportation access throughout San Joaquin—was a necessity.”    In 2011 the center opened its doors on Weber Avenue and Sutter Street, in hopes to create a safe place—offering peer groups, a library, free internet, and like-minded people. However, the need for mental health services quickly became apparent, and Nicholas began chasing funds to create In April, SJPC was awarded a $1.8 Million grant to fund its LGBT+ Youth Program—Cultivating Acceptance—operating under the California Reducing Disparities Project, funded by the Mental Health Services Act (MHSA) and administered by the California Department of Public Health, Office of Health Equity. This means leaps and bounds for Nicholas, Jonathan, and SJPC. “In the next six months we plan to have our full clinical services up and running, one on one support, counseling services, substance abuse support, a probation program, and counseling for transgender individuals,” Nicholas adds.

“This year, Stockton Pride will honor the political losses we’ve faced in the last year, celebrate the advancements, and also declare that the fight for equality is ongoing. And not just for LGBT+, but for all our diversities—to honor and celebrate that! –Nicholas Hatten, SJPC Executive Director additional programs. “We realized in that first year that we weren’t prepared to serve fully.”   As SJPC worked to expand they teamed with Elena Kelly of Transgender Alliance to provide things like name change services and new clothing, and focused on fundraising opportunities like the Stockton Pride Festival that welcomed a whopping 4,000 attendees in its first year.   “One of the Pride Festival’s major pulls is the drag show,” Jonathan adds with a smile. And if

it weren’t for this feature, he most likely wouldn’t be sitting in front of me today, representing the center and the festival— as head of the Entertainment Committee, and the Youth Outreach Director.    Jonathan’s made quite a name for himself as Hellen Heels, a Drag Queen performer that dazzles crowds on the weekly, from Sacramento to San Francisco. And during the day, Jonathan visits local public schools and organizations to spread cultural awareness, and share his story.   “When I came out, my mom didn’t know or understand. She had no exposure or access to information, and didn’t know what to do or think... or how to support me.” And though Jonathan mended his relationship with his mother years ago, he harnesses his experience to ensure that San Joaquin youth are provided with an outlet, and that families are educated in sensitivity and acceptance. howls and cries from hundreds of other dogs just like him. He spends just mere minutes a day outside, removed from the loud, chaotic, and frightening shelter atmosphere. And sometimes, a hand reaches through his chain link door to gently pat his head. If he’s lucky, one day a hand will reach in and stay—saving him from becoming a part of the 20 percent of shelter inhabitants that are put to death.    For an animal capable of experiencing a rich emotional life, this is no way to live. There can be no denying the effects shelter life has on an animal’s emotional and physical well-being—and it will become apparent if you walk the aisles, passing hundreds of dogs excitedly wagging their tail in hopes of love, while others face the wall and shiver in fear.

Local shelters are tirelessly fighting to find forever homes for their current residents, and to stress the root of the problem—spay and neuter. Adopting a shelter dog supports this fight on both ends, as each adoptable dog is spayed or neutered, microchipped, and up to date on all shots. Stockton Animal Shelter has even waived adoption fees through their Stockton Adopt-A-Bulls program that aims to improve the lives of a breed highly ranked in both shelter population and euthanasia statistics nationwide.   So, the next time you get the feels from a Buzzfeed article, imagine living it. We must all take a step away from the modern sprawl of city-scapes and suburban neighborhoods. And, fortunately for us, the many townships that have flourished within our agricultural wonderland have offered ecological havens for ourselves and the many creatures that call our valley home.

Micke Grove Regional Park Japanese Garden

One of our county’s most cherished landmarks of historic and aesthetic value—the Japanese Garden—has been a treasure for visitors since 1965. Lovely bamboo thickets, Japanese maples, and stone lanterns adorn trails and skirt stone steps. A large pond rests at the very center, thick with vibrantly colored koi and bridges believed to hinder evil spirits. Lapping along the waterline is the tea house, used for both ceremonial events and rental purposes.

Oak Grove Regional Park Boasting its own 10-acre lake seasonally stocked with catfish and trout, a nature center with in-depth exhibits on the local wildlife, and two nature trails—Oak Grove Regional Park is only a slip off of I-5 from 8-Mile Rd. The park offers an 18-hole disc golf course, unique to our county. Picnic benches are perfectly placed around tall, leaf-splayed trees to offer a superb lunchtime retreat.

Cosumnes River Preserve Indulge your wild side with over 50,000 acres of untouched ground and over 11 miles of nature trails. The Cosumnes River Preserve prides itself in its residency of over 250 bird, 40 fish, and 400 plant species. It’s an ecological wonderland, abundant in

massive oak trees, marshland, and thickets. Be warned! Coyotes and mountain lion also call this wilderness their home.

University Park Located at the center of one of Stockton’s most historic regions, University Park sprawls across 102 acres, featuring medical offices and the Stanislaus State University Extension. Whether it’s the soothing tick of your family’s heirloom grandfather clock, or the reliability of your vintage timepiece that sits on your wrist everyday, most of us posses a deep sense of nostalgia and respect for the timepieces in our lives. It might be for this reason that House of Clocks has been serving residents of Lodi, and indeed the better part of Northern California, since 1970.   House of Clocks’ story begins more than 46 years ago as a learned trade by Joe Hohn during military deployment in Germany. Bringing this practical skill of clock repair back to where his family resided in Lodi, House of Clocks has grown over more than four decades into the still

family-owned and operated business credited as being the largest clock shop in Northern California. The inventory there is as carefully collected as one might expect from such an established clock authority. At the top of every hour occurs an eclectic mix of playful chimes from German cuckoos, refined dinging from mantelpiece clocks and assertive dongs from stately grandfather clocks. This diverse array of product is acquired from all corners of the world and varies from new and unique pieces to vintage and genuine antique pieces over 100 years old.    So, what is it that keeps customers coming back to classic timepieces in this highly digital age? The Hohns believe it’s because you simply can’t put a price on sentimental value. They explain

that many of the clocks in their store have been handed down through generations of families and it means a great deal to be able to both cherish and pass on heirlooms to new generations. Galletto Ristorante Okay, we admit it. This place may be a hop, skip, and a jump away from San Joaquin, but how can we write about our love for Italian cuisine and not include Galletto Ristorante? Tucked away in the heart of downtown Modesto, it’s a feast for fans of fine dining and fine design. Indoor and outdoor seating whisk guests away to Mediterranean shores, abundant in wine barrels, classically inspired high ceilings, and open floorplans. But as much as we love the surplus in romantic scenery, we’ve got to move on to the menu.    Succulent entrees entangle the senses, featuring specialties like the Foie Gras in all its sautéed glory, the Risotto, and Grilled Ribeye. Long-time customers know they can’t go wrong with the simple, sweet bite of Bruschetta, and many with an appetite for something savory sink their teeth into the Chicken Parmesan.

It’s hard to find an empty table during the dinner rush, but that’s fine by Chef and Owner Kevin Fahey, who has just celebrated their first year in April.   Beyond wood-fired Italian sausage pizzas, and fig and bacon pies, are plates of butternut squash gnocchi, bathed in cream sauce, smoked chicken, and candied almonds. The mushroom risotto is a must-try staple, loaded with cherry tomatoes and sugar snap peas. Didn’t think the world of pasta noodles was limited to penne, spaghetti, and those little squiggly ones—right? Behold! Our bountiful array of pasta variations is sure to prep you for any Italian dish you decide to prepare.

Cappelletti

Hailing from northern Italy, cappelletti take the shape of little hats, a cute nickname it’s become known for. The cappelletti is stuffed with cheese— often Parmigiano Reggiano—and twisted into its unique visage.

Fettucine

Made popular for Americans by the infamous “Fettucine Alfredo” of Italy and two silent film actors who brought the recipe back to the U.S., fettucine itself has simple roots in being a thinner version of a similar noodle.

Cavatappi

Lasagne

Marked by its tight spiral shape, cavatappi are a type of macaroni with ridges running along its sides. Its name “cava” and “tappi” translates to “tap extractor”, better known as a corkscrew.

There’s not a single Italian food enthusiast who doesn’t know the lovely flat shape of the lasagne pasta, one of the oldest pasta forms around. Born in the Emilia-Romagna region, its name changed only slightly on its trip oversea, becoming lasagna to us Americans.

Conchiglie

Served in small, medium, or large sizes, conchiglie are perfect for housing various cheeses, meats, and vegetables. They’re known for their shell-like exterior.

Farfalle

Whether you’re calling them “bow ties” or directly translating them into “butterfly”, farfalle are a cute option for a variety of pastas. These beauties can be traced as far back as the 1500s in Northern Italy. 72

Linguine

Long, flat, and slender, linguine are known as “little tongues” hailing from Campania. They’ve been touted as a perfect complimenting pasta for seafood-based dishes.

Manicotti

Known in Italy as cannellone, which translates to “a big pipe” (Who knows why we keep changing the names of pasta!), the manicotti is perfect for stuffing, as it is often 5 – 6 inches long, and 2 – 4 inches in diameter. These delectable tubes are often associated with Sicily and Campania.

Penne

The picture-perfect penne was given its unique angled cut in honor of its namesake, the quill pen. Penne hails from southern Italy, where it’s known for being served in heavier sauced dishes.

Rigatoni

Pesto Sauce

Basil, Olive Oil, Parmesan Base Oil-rich, Nutty, Mild Farfalle, Linguine

Rigid like its cousin—the cavatappi— rigatoni has a large diameter that holds sauce-based pastas well. Its roots follow back and into central and southern Italy.

Rotini

An excellent choice for hot and cold pastas, the rotini offers a lovely spiral twist that picks up delicate seasonings, oils, and sauces alike. Its name translates to “small wheels”, and traces back to southern Italy.

Spaghetti

Balboa Island

Balboa Island is perhaps best known for its long, boat-filled waterfront, but the neighborhood in Newport Harbor boasts some of the best shopping, dining, and strolling in the city. Find parking downtown (if you can) and walk Marine Avenue where the majority of shops and restaurants take up residence. High-end boutiques that stock designer finds sit next to custom embroidery shops, a throwback candy store, and eateries with ample patio seating. Walk the full length of the strip before heading back; each block houses more surprises than the next. GET OUTSIDE: Most of Balboa Island’s businesses cater to ambling outdoors, but to really take it all in, set off down the harbor. You’ll pass cute vacation 80

homes and residences right on the water, along with plenty of other tourists and residents strolling the walkways with pooches in tow. UPGRADE: Ditch the hotel and stay here instead. The Real Original Frozen Banana

If Newport Beach had a mascot it’d probably be the frozen banana. For some reason, unbeknownst to most, frozen banana shops can be found on just about every corner. We went on a mission to find the true original (since more than one shop markets itself this way), and we’re pretty sure we uncovered the truth on Balboa Island. Located just a couple doors down from Dad’s Original (a bakery that serves donuts and other goodies, as well) sits Sugar N’ Spice (310 Marine Ave.), a frozen banana shop opened in 1945; the grub at both is good, but we’re fairly confident the original-original is served at Sugar N’ Spice.


Newport Beach Pier

Located on the Balboa Peninsula, Newport Beach Pier is the stuff Southern California beach dreams are made of. Surfers, swimmers, and sunbathers (oh my!) all take refuge on the five-mile stretch of soft sand, complete with coastal breezes and warm California sun. Stretch out a blanket, plant your umbrella, and claim your little piece of paradise for the day.    When you’re ready to get out and explore, step into Newport Bike & Beach Rental (106 22nd St.) to pick up some wheels. The narrow Where to Stay: Balboa Bay Resort (1221 West Coast Hwy.) is the only waterfront resort in the city, and it grants guests easy access to the onsite A+O Kitchen and Waterline restaurant (a sophisticated white table-cloth locale with outdoor eating options and a menu that boats fresh seafood and prime cuts of beef). Be wary when booking, however, several on-site amenities are reserved for members only, including a separate pool and adjacent bar.   When weather permits, paddleboards, kayaks, and other gear rental are available on the property’s own little stretch of beach. And, for a fee, you can upgrade your room to a Bay view, where not only do guests get glimpses of the breathtaking bay right from their bed, a patio overlooking the water is an ideal place for staff to set up room service.

The Best Beef Jerky in Town

One of Balboa Island’s newest shops is the Balboa Jerky Company. A small storefront on Marine Avenue, the owner hands out free samples of the retail store’s many flavors, including jalapeno garlic and peppered teriyaki brisket. There’s even jerky for your dog! EXPERT TIP: Ask to try the Snapping Turtle Jerky. Yes, it’s made from real turtle. GET OUTSIDE: Crystal Cove State Park offers four levels of trails for those who want to hike the wilderness habitat. An easy, three-mile trek is best for beginners, and for those who want to go all out, there’s a strenuous nearly 9-mile hike that offers more ups and downs.

The affluent neighborhood south Newport City’s main hub was once its own censusdesignated place, however it has since been annexed into Newport Beach. Here, visitors can enjoy miles of state parks and hike around Buck Gully Reserve (a coastal canyon set between urbanized areas).

Touted as an open-air lifestyle center in Newport Beach, Fashion Island is a shopper’s paradise. The huge outdoor mall boasts retail giants like Orange County’s only Neiman & Marcus, beauty stores such as Urban Decay, and luxury labels including Elie Tahari and Trina Turk. GET OUTSIDE: Fashion Island takes advantage of Newport Beach’s ideal location on the Southern California coast with an open-air concept that means you’ll spend plenty of time in the sun between retail stops. When you break to refuel, dine al fresco at one of the mall’s more than 30 restaurants, many with outdoor seating. Fig & Olive (Mediterranean fare prepared with flavored olive oils) is a favorite.

Beachcomber Café, a cute little beach hut located in the Crystal Cove Historic District that serves breakfast, lunch, and dinner (try the tiny Ahi tacos and grilled marinated artichokes) once served as a popular backdrop for silent films. The historic café works to maintain some authenticity from its early-1900s start, where the stretch of beach once featured nothing but palmthatched homes reminiscent of exotic locales such as Hawaii or Tahiti. GET OUTSIDE: Reserve a fire pit and food package on the beach to roast s’mores, bbq, or order from the express menu (11 AM-5 PM.) UPGRADE: For the real Beachcomber experience, head to the café during happy hour when staff hoists a martini

flag into the air as a bugle blast salutes the sunset in a mid-century tradition.

A&O Kitchen at the Balboa Beach Resort serves casual fare on the hotel’s main floor, with floor-to-ceiling windows that look out over the bay. The dining room is open to guests not staying at the hotel, as well as a slew of yachtsman who slip in to grub between jaunts on their luxurious liners, which you can enjoy views of from your seat in the dining room. GET OUTSIDE: Request a table outside next to one of the patio’s large fire pits. The Balboa Bay is gorgeous regardless of the time of day. UPGRADE: Don’t settle for mixed drinks you can get at any bar, instead order up a Dutch Mule (it’s only Dutch due to the origin of the liquor). Walk in any day of the week, and you might just forget that you’re not standing in one of the five-star restaurants doting San Francisco piers. Black and white tiled floors greet you, with simple, classy seating arrangements adorning the perfect parts compact and cozy floorplan. Alongside brick-styled walls and candles guarding high shelves, a wine menu brimming with local blends hangs decoratively near the kitchen window. The place is small, capable of hosting maybe three-dozen guests at full capacity. And that’s exactly how owners Melissa and Walter Ng like it. “We’re not trying to be a big restaurant,” Melissa explains. “We can seat maybe thirty people. We do our best with that kind of space, and there’s only two people in the kitchen at a time.” Those two chefs? The owners themselves, preparing succulent plates that have delivered customers as far out as the Bay to their door, just to discover what local friends are raving about.

Dishes such as the Asian Shrimp Salad have been a favorite for summer, both light and savory. “The specials that we run tend to be popular as well. We ran a salad that sounds like an unlikely combination, but it has oranges and beets and red onions in a citrus vinaigrette.” And don’t get repeat customers started on the New York Steak sandwich, which has always been a big seller. This bad boy is served plank style (opened faced) on a roll. And when covered in the bistro’s own red wine reduction sauce, it’s an entrée that never makes it into a to-go box. Dinner is equally popular, if not more so for those couples who are looking for a romantic evening for two. Among many delectable opportunities, a Halal chicken breast and leg quarter is served in a natural pan reduction, with lemon, rosemary, and white wine. And we dare you to sample the lamb shank, a savory dish that’s offered up in pan-roasted vegetables in a marsala sauce. “We typically don’t serve it

during summer,” Melissa laughs. “But we can’t pull it off the menu, it’s requested too often!” From the restaurant’s name, which pays homage to our appellation’s love for Zinfandel wine, to the couple’s adoration for their community, it’s no wonder that Zin Bistro has continued its fruitful success. “The first night we had a full dining room—a couple weeks after we opened—I looked out from the kitchen,” Melissa thinks back. “And I said to my husband, ‘Look at that. That’s what we dreamed of.’ People would come up and visit with other tables. They’d grab their bottle of wine and go and share it with their neighbors. At the core of it, that says exactly who we are.” With their continued success, Melissa and Walter Ng hope to find more friends among the many familiar faces frequenting the bistro. KLINKER BRICK

WINERY A century ago, you might have found rows of juicy strawberries growing at Klinker Brick Winery. Today, one of the winery’s best-selling vintages is Bricks and Roses, a rosé with notes of strawberry, grapefruit, and watermelon. Klinker Brick Winery is a rustic, friendly winery built by the Mehlhaff family. The first generation came from Germany to Tripp, South Dakota. Finding the region quite cold, the family moved in the late 1800s to North Alpine Road on the east side of Lodi. The 650-acre estate, now surrounded by other wineries, is home to deep loam soil cooled by the Delta breeze. “The breeze blows right through our portion of the valley, keeping the air around 50 degrees through the night. The vines absolutely love that,” says Stefan Jolley, vice president of operations. The versatile climate of Lodi wine country, chilly at night and hot during the day, encourages wine grapes that love warm climates. That’s how Klinker Brick is able to grow grapes

for Albariño—a vintage with aromas of stone fruit and honeydew. The most popular Klinker Brick wine is the Old Vine Zinfandel, which tastes of dark, sweet fruit with a hint of black pepper. The vines that create this vintage come from vineyard blocks 40 to 120 years old. Another favorite is the Farrah Syrah, which features aromas of ripe plum, cacao, and smoky oak. The winery’s unusual name comes from an offspelled version of “clinker bricks.” These black, split, overfired bricks got their name from the metallic sound they make when hit together. “The winery has this name because five generations of the Mehlhaff family have lived in homes made of clinker bricks. These bricks are dense in color and weight, just like our wine,” says Stefan. Visitors to the winery are welcomed to a pleasant,

breezy space that used to house tractors. In the 1990s, when the family switched from growing cherries and the crisp-skinned, fruity table grapes called Flame Tokays, they put up barn wood walls to create the welcoming tasting room. Visitors should try one of the more unusual vintages that Klinker Brick offers, the Old Ghost. This Zinfandel won the 2017 Gold in the San Francisco Chronicle Wine Competition. The Old Ghost is carefully made with small berries from an Old Vine block. The grapes for this vintage offer more “skin to flesh,” producing a wine that tastes of brambleberry, anise, and clove. WHITE PEACH & TEQUILA COCKTAIL INGREDIENTS:

2 ripe white peaches, peeled, pitted, and chopped • ¼ C. silver tequila • 1/4 C. peach liqueur (recommended: Creme de Peche) • 1/4 C. lime juice • 2 tbs. simple syrup • Ice cubes • Slice peaches, for garnish • Mint sprigs, for garnish DIRECTIONS:

Place the peaches in a food processor and process until smooth. Pass through a mesh strainer into a bowl. Combine the peach puree, tequila, liqueur, lime juice and simple syrup in a blender and blend until smooth. Serve over ice in rocks glasses. PEACH ICED TEA INGREDIENTS:

Simple Syrup 1 C. organic cane sugar • 1 C. water 2 ripe peaches, thinly sliced Tea • 2-3 Tbs. loose leaf black tea (3-4 tea bags) 8 C. filtered water DIRECTIONS:

Bring sugar, water, and peaches to a boil in a small saucepan. Lower heat and stir to infuse flavor until sugar is dissolved. Remove from heat, cover, and let steep for 25-30 mins. Once your simple syrup is finished, pour into a bottle or container over a fine mesh strainer to strain out peaches. Brew your tea using either a large pot or a tea maker. Don’t steep more than 4-5 minutes! Remove tea bags, transfer to a pitcher and refrigerate. To serve, either set out simple syrup and add as much to the tea as you like, or add all to the tea and stir. Serve tea over ice and fresh sliced peaches.

As one of the world’s top producers, our nation we produce over 100 varieties commercially. Our nation’s favorites? The most beloved of all are the Red Delicious, Golden Delicious, and the Gala apple. Fuji and Granny Smith trail behind in crisp delectability. There’s a good reason why the saying goes: “An apple a day keeps the doctors away”. An apple makes for the perfect snack, with little to no calories, carbs, and fat! They’re a sweet treat that brings you 12% closer to your daily dietary fiber requirement. But apples aren’t just available in fresh, crunchy form! Oh, no. Our ancestors made sure to squeeze every ounce of possibility out of this delightful morsel. Throughout the ages, specific types of apples were used to make hard cider, supped up by more Americans than beer itself! It took the prohibition to turn the alcoholic tides in beer’s favor, but in modern times, cider has started to make a none-too-sweet comeback. Whether you’re taking a bite straight from the fields, brewing a batch of cider all on your own, or hoping to add a few apples to your next batch of pies, the apple has, and in the foreseeable future, will always be, a centerpiece in American culture. APPLE CINNAMON SANGRIA INGREDIENTS:

1 Red apple • 1 Yellow apple 1 Green pear • 1 Bottle red wine 1 C. spiced rum • 3 Oz. cinnamon liquor 1 L. ginger ale soda 12 Oz. apple juice concentrate DIRECTIONS:

Chop apples and pear into small, bite sized cubes, leaving a few slices whole for garnish. Add apples, whole bottle of red wine, frozen concentrated apple juice, rum, and cinnamon liquor to pitcher. TAPAS INGREDIENTS:

3 Slices Ciabatta bread • 3 Tbsp. olive oil • 1 Crisp apple, cored and cut into slices ¼ Lb. manchego cheese, cut into 6 slices • 1 Tbsp. garlic chives, for garnish DIRECTIONS:

Slice ciabatta bread into 6 slices. Heat a skillet over medium-high heat. Brush bread with olive oil, and toast in skillet for 1 – 2 minutes on each side, or until golden brown. Remove from heat, and set on your serving platter. Add 2 tablespoons of olive oil to skillet. Add apple slices and cook for 2 – 3 minutes on each side, or until slightly golden. Top each slice of ciabatta bread with two slices of apples, and one slice of cheese.
