Bounty of Broccoli

INGREDIENTS

1 tsp. red pepper flakes

4 oz. parmesan cheese

4 tbsp. olive oil, plus 3 tbsp. for pasta

½ c. chicken broth

4 cloves garlic, minced

4 bunches broccolini

½ tsp. salt

¼ tsp. pepper

Farfalle pasta

Directions

In large sauté pan, add 4 tablespoons olive oil and trimmed broccolini over medium-high heat. Sauté for 4 minutes, until florets begin to crisp. Add chicken broth and garlic and sauté for 4 additional minutes. Add red pepper flakes and set aside. Meanwhile, fill a medium stock pan with water and salt. Add farfalle to boiling water and cook for 9 minutes, until pasta is al dente. Drain pasta and add back to pan. Add three additional tablespoons of olive oil to coat. Add broccolini and freshly shaved parmesan. Enjoy!
