In fact, many birds relocate to the wet marshlands of the California Delta during colder months, enjoying a warmer climate than their northern homes offer this time of year. And while many of Northern California’s flying residents relocate south, some stick around for the season. Migration patterns essentially cause a noticeable shift for birding enthusiasts. Instead of the song birds most are accustomed to seeing in spring and summer, winter brings flocks of sandhill cranes, geese, swans, and many duck breeds. Some smaller birds, such as sparrows, also stick around and feed on the edibles left behind in the leaf litter. “People come [to San Joaquin County] from Southern California, from other parts of the United States, from the Bay Area… for large numbers of geese, swans, and cranes because they just don’t get those,” says Jim Rowoth, a member of the San Joaquin Audubon Society since the 1980s. Jim notes the Aleutian subspecies of the Canada Goose, a type of cackling goose, is of special interest in this area. The entire population once resided in Stanislaus County, but changes to breeding grounds in the arctic have allowed populations to increase and now

trees (or sweetgums) and rotting persimmons. If you’re looking to expand your own knowledge of the local bird population, join the Audubon Society for a walk held the first Saturday of each month at 8 AM. Membership is encouraged, but the walks are open to everyone. “The main focus [on bird walks] is the birds that are around but we also look at other things,” Jim explains, adding mammals, plants, fungus, and other aspects of nature are all of interest. The walks are held at Lodi Lake and the group meets on Laurel Avenue. Walks are led by nature but do occur rain or shine (as long as weather is not excessive). The group strolls through the area and points out what they see and hear. When new people are present, members make it a point to answer questions and share knowledge. LODI HIGH SCHOOL GIRLS’ CROSS-COUNTRY TEAM OUTPACES COMPETITION BY REBEKAH MOAN
T
he Lodi High girls’ cross-country teammates continuously push themselves and each other to improve and compete at a high level, which shows. In October 2023, they won their 20th consecutive league championship with a dominant run in the third Tri-City Athletic League center meet. Coach Dylan Silva says he’s looking forward to continuing the tradition with future athletes and also to see what’s next for the team. He started coaching the team in 2020 and says he used that time to implement changes to the cross-country program. “I implanted in their minds that they had the talent to be competitive not only in our league but also in our section,” he

says. “Previous teams were only focused on being league champions, but I wanted to set their eyes on something higher.” That “something higher” is to become the first team since 2009 to make it to state championships. The thinking goes if the young women work hard to achieve that goal, the league championships will continue to follow. So far they have but the state championships remain elusive. However, despite not qualifying for state as a team yet, the young women have proved to themselves and everyone around them that they are a force to be reckoned with. “These girls have not only had an impact on the teams in our league, but they have reached teams on the outside,” Dylan says. “The girls would be at meets
and overhear other teams talking about them and even asking to take pictures with them. I think it's great to see them get recognition from teams in our section because it just shows that they see all of the hard work they're putting in and are inspiring other teams to do the same.” It’s not only hard work that makes the Lodi girls’ cross-country team special. It’s also how bonded they are. “We will celebrate with you during your highs and we will be there to pick you up at your lows,” Dylan adds. “You're surrounded by likeminded individuals who will support and push you when needed. We're a family.”.

T
he Amelia Ann Adams Whole Life Center (AAAWLC) seeks to cultivate change and move individuals and families from surviving to thriving. With $200,000 from the City of Stockton Youth Services Grant, received in late 2023, they can enact that mission a little better, specifically for youth. The Stockton-based nonprofit plans to use the funds to expand its youth center, “Wonka’s Crib,” which was named after a staff member who was killed. With the money, AAAWLC can hire a program manager, two staff members to oversee and facilitate the youth center, add equipment such as a ping-pong table, and purchase groceries to make homecooked meals for teens. “We want to make it more appealing and fun for the young people around Stockton,” says Tanice

Wallace, AAAWLC’s director of youth and healing services. On Friday and Saturday nights, AAWLC converts its large conference space where it holds community events into the teen center. At other times of the day and during the week, all youth center items are locked away in a storage room so that the space is usable for office activities and events. Already in the time since the youth center opened in July 2023, Wonka’s Crib has received 283 visits, some of which were duplicates, but many of which were not. With the $200,000 grant, Wonka’s Crib can become an even better youth-led safe space. The space was born out of the youth’s ideas and their vision of what they wanted to see. After surveying them, AAAWLC staff learned the youth already felt comfortable at their office, which they frequented
for a weekly youth meeting, and just wanted more amenities such as a PlayStation 5, movie nights, board games, and a TikTok wall. “If you listen to young folks, oftentimes they’ll tell you there’s nowhere safe for them to go,” Tanice says. “They get bored easily, and oftentimes when they do, they end up in trouble or have interactions with law enforcement because there’s nowhere to go and nothing to do. We’re trying to answer that call and support that need.”

However, he recommends five products for the average healthy mouth:

locals looking to optimize mouth care and tailored his suggestions to those receiving oral care or who have recently had braces removed. 1) Waterpik. “There are lots of different types but these are great at removing food and plaque that can build up around braces,” Dr. Samra says. “I particularly like this for our younger patients as they seem more eager to use a waterpik as opposed to other oral hygiene products.” 2) Nightly retainers. These products prevent orthodontic relapse when worn routinely. “As an added benefit, retainers can also serve as a night guard for people
with mild grinding habits to help protect their enamel. Of course, if the grinding habit is higher in severity, then a night guard made by a general dentist is the more appropriate choice,” Dr. Samra says. 3) Platypus Orthodontic Flossers. “These work great for people with or without braces,” Dr. Samra says. “Highly recommend flossing to make sure there is no food and plaque build-up in between teeth.”

here appears to be a pretty obvious link between those who play a lot of video games and insomnia. According to SleepDoctor.com, “studies have found that video games are linked to later bedtimes, more difficulty falling asleep, and fewer hours of sleep. Players may also find it more challenging to wake up on time and are at an increased risk of feeling tired the following day.”

The physical and mental stimulation linked to video game play is partially to blame. “The most logical explanation as to how video game playing can reduce sleepiness, relates to the stimulating nature of the activity,” says Ashish Patel, MD, chief of sleep medicine for Kaiser Permanente Central Valley. “Playing video games for a longer duration and before bedtime can delay sleep onset, interfere with sleep duration, and reduce the quality of sleep.” The American Academy of Sleep Medicine recommends children ages 6-12 sleep 9-12 hours regularly per night while those 13-18 years of age should get 8-10 hours of sleep per night.
While excessive gaming can be linked to several health issues, what time of day gaming takes place can also be a problem. “Encourage your child to disconnect from all electronic devices at least 30 minutes to an hour before bedtime to help them wind down for the night,” Dr. Patel says. This includes video gaming systems as well as television and cell phones. Any electronic devices that emit light can exacerbate sleep problems. Blue light, known to come from these devices, is especially problematic, suppressing melatonin and causing neurophysiologic arousal, which makes it harder to fall asleep even after the games are off. “The key is moderation and balancing playing time with healthy sleep habits, especially avoid playing video games one to two hours before bedtime,” Dr. Patel advises. If your child is still struggling to get to bed, try creating an electronic-free sleep routine that includes a warm bath, reading, or journaling.

O
ur hearts are in trouble. Nearly half of adults in the United States have hypertension (high blood pressure), according to the Centers for Disease Control and Prevention. High cholesterol, coronary artery disease, and type 2 Diabetes, all rank among the most common medical conditions affecting Americans. The good news is that simple, consistent changes to diet and lifestyle can help mitigate all these conditions and help prevent them from occurring. For example, the foods that are best for

your heart are those that are low in cholesterol, refined sugars, sodium, and saturated fats, and high in micronutrients and protein. Start by using heart-healthy foods as the main ingredients in your dishes then make small changes like using olive oil instead of butter to sauté your vegetables or meat. Those changes can add up over time and lead to a healthier heart. Remember, olive oil and canola oil are better choices than butter, lard, coconut oil, and palm oil. Other mindful switches? Reach for almonds instead of peanuts, low-sugar or no-sugaradded drinks over sodas and alcohol, and opt for sweet potatoes, which have less sugar, over white potatoes. Instead of habitually salting your dish, try other herbs and spices to flavor it first. When eating at a restaurant, ask for sauce or dressing on the side so that you have better control of the portions you consume. Make your favorite foods at home a bit healthier by swapping out a
portion of the flour with oats in items like muffins, waffles, and pancakes, alter your recipes by not adding all the salt and sugar recommended by the cookbook, and make your portions smaller by creating mini versions of the treats you enjoy. Another great way to encourage healthy eating at home is to change your prep. Air fryers offer a healthier way to “fry” your food without using nearly as much oil as deep frying. While they might not be the healthiest way to cook (roasting, grilling, and slow cooking tend to be good options), air fryers can create the crispy texture so many of us love with less of the artery-clogging oils needed with other frying methods. While it wasn’t always the same, there was a free component always available to people who wanted to visit but perhaps didn’t have the means to do so. As we embark on
a month of love, The Haggin Museum offers a unique—and potentially free—date spot. “As you explore the galleries you have the opportunity to engage in thought provoking conversation about art and history while creating memories,” Susan says. “The beautiful galleries are a perfect space for two people to make meaningful connections and to snap a cute selfie.” The free admission day as well as free school tours are considered a gift to the community, allowing entrance to the core art and history galleries, including those that celebrate local artists and the origin stories of many prominent San Joaquin families. “Visitors also get to experience the current temporary exhibitions that are on display in our three changing galleries [on First Saturdays],” Susan says. And the museum store is open, as well. Continue the fun throughout the month with the Haggin’s other ongoing offerings. On the second Saturday of each month, for example, families are invited to partake in a hands-on activity that includes both art projects and interactive programs. All needed materials are free with regular admission. On the first and third Thursdays of each month, the museum opens for evening hours and includes extras such as live music. Hosted by the Junior Women’s Group, guests get a complimentary glass of wine prior to the festivities.

The proliferation of foodie experiences, TV cooking shows, and fine dining establishments have provided room for cheese to take on a life of its own and evolve into a diverse collection of culinary offerings and accompaniments. Local dairies and wine rooms have answered the call for unique and elevated cheese offerings, boasting variety, quality, and flavor. Kicking it up a notch, these cheesecentric businesses offer unique experiences, tasting opportunities, and fun events.

One of the greatest assets of Stuyt is the foundation on which it was built. Stuyt Dairy Farmstead Cheese Company was founded in December 2015 by Rick and Ansally Stuyt. Rick and Ansally descend from five generations of dairy farmers in the Netherlands, and both had uncles who made cheese in exchange for goods so that their families could survive during World War II. Rick grew up in the Netherlands and developed a passion for the cheesemaking process. When he immigrated to the U.S. in 1985, he built a small facility that is now Stuyt Dairy Farmstead Cheese. The company is still family owned and run by Ansally and Rick’s daughter, Anastasia Stuyt. “In 2015 when we began by making cheese, our cheese was best described [as] Dutch-style cheese handmade from raw cow's milk,” Anastasia says. “Stuyt cheese is aged a minimum of 60 days; yet, preferred 90 days, for the best flavor.” Stuyt specializes in award-winning raw milk cheeses. Cheese varieties now include aged, cumin, smoked, bacon, garlic herb, onion parsley, jalapeño, and habanero. In summer 2018, Stuyt began offering cheese curds, also commonly known as "squeakers,” and guests to the creamery are invited to sample the cheese curds and grab a bag to take home. “In 2020, with an exponential amount of down

time, we developed our Spanish-style cheese, El Capitan,” Anastasia explains. “This raw milk, Spanish-style cheese is fully aged. The semi hard texture provides a unique creaminess with sweet, slightly spicy undertones and a long lactic, pineapple finish.” This cheese was awarded third place at the American Cheese Society competition in Oregon and has quickly become a fan favorite at Stuyt. All of Stuyt’s cheeses are available year-round, and the fresh cheese spreads are always the most popular. Anastasia also offers suggestions of a few of Stuyt’s favorite cheese pairings: the original fresh cheese

spread topped with spicy jelly is perfect for dipping or on top of artisan bread; Stuyt’s cheese curds skewered with tomato, onion, and cucumber then kissed with a drizzle of traditional balsamic vinegar mimic a caprese salad perfectly; and the Cumin cheese or the bonnie, brie style cheese, topped with honey is a treat. If you want to put in a little more work, the jalapeño fresh cheese spread stuffed into a jalapeño popper makes for a unique and fresh appetizer. By far, her family’s favorite is the original

Spenker Winery had its earliest incarnation in 1902 when it started as a humble dairy farm. In 2019, the family opened its winery and creamery commercially. It has evolved into a robust and exciting operation that is met with much enthusiasm by visitors from near and far. Farmstead artisan goat cheese is the specific specialty at Spenker, and they continuously win fans and awards. Wine and cheese are a classic pairing, and Spenker has perfected the art and craft of both! Bettyann and
her job is reflected in everything she does. It ws shortly after a 2021 “baby shower” for the mama goats that took place at the creamery, that the family saw how their visitors reacted to the goats and their babies. “It’s been so much fun to watch it grow so fast!” Bettyann says of Spenker Winery. “It was sometime in early 2022 when the world was coming back alive, and people wanted to go out. We decided on what our ambitions were as far as cheeses. We had a sense of how excited people were about goats and a goat dairy.” Spenker produces 100% goat’s milk soft cheese, called chevre. “We flavor it several different ways—with herbs or making SJMAG.COM

Although Bettyann makes a point to say that they aren’t competition-driven people, Spenker’s wins at the California State Fair were real

Bettyann explains, “Some of it is an adjustment in the cheesemaking process itself because we don’t standardize our milk. Hilmar was founded in 1984 by 12 jersey cow dairy farmers. Jersey cows are prized for their milk as it is higher in milk solids and makes for excellent cheese. Hilmar produces natural cheeses and specializes in private label brands that are sold regionally and nationally. Established in 1948, Rinaldi’s Market has a long and storied history, and 2024 marks their 76th year of business. The formula for its success? offee and cycling just go together. “The one guaranteed thing that 90% of road cyclists either pre- or post-drive [do] is they stop and have coffee somewhere,” says Brian Shirk, owner of Lodi Cyclery. So, adding a coffee shop inside of Lodi Cyclery wasn’t a stretch. The partnership is, “a marriage of businesses under one roof that really makes a lot of sense,” Shirk says, adding that on group rides, he always stops for coffee along the way. What started as a satellite location for Trail Coffee Roasters inside of the bike shop has since expanded to a full-blown café, named Tandem Café, that serves Trail coffee. Today, the menu

includes not just coffee, but also breakfast, wine, and beer. The menu boasts signature toasts, such as avocado toast, a savory version with olive tapenade and prosciutto, a sweet toast made from Nutella, bananas, and honey, and a seasonal toast. They also have an in-house baker who makes home-made granola and cinnamon rolls on the weekends (although the latter sells out fast). “It’s just such an enhancement to the customer’s experience,” Brian says of adding the café. It allows for deeper conversations and a less transactional relationship between staff and customers. They can sit and have coffee and talk about rides or wait for a service to be completed
on their bike. “Bringing that element to the store just creates such a really cool and deep culture,” he says. “It’s not just a bike shop.” And because the café is offering up delicious cuisine, the customer base has also expanded; it’s not just cycling enthusiasts visiting now. “We have plenty of regulars,” Brian says, adding people stop in two to four times a week just for the food and coffee. At the beginning of the year, wine and beer taps were added to bring another element to the shop. There’s also board games and decks of cards for people who want to stay and hang out, and the space is certainly family friendly.

busiest time of the year for Treats by Ness, a Stockton-based sweets company that offers online ordering. Opened in 2020, her first Valentine’s Day, Owner Vanessa Norton worked for nearly 72 hours straight to bake and pack 120 dozen orders in three days. “My first year I slept two hours in 72 hours,” she says. “After Valentine’s weekend was over, I slept 18 hours straight.” “We offer various dessert items such as chocolatecovered strawberries, gourmet cupcakes, specialty cookies, cake pops, and so much more,” Vanessa shares. “We [also] specialize is custom order desert tables for events and gatherings.” It’s her chocolate-covered strawberries that draw most of the attention for the holiday, decorated in pretty pinks, whites, and reds. You can even order up a dozen with the words Be Mine printed on them. Strawberries can be customized in a variety of designs so every order is individualized for the recipient. This year, customers will have the option to pair their goodies with roses. You can also order up strawberry shortcake cupcakes, heartshaped macaroons, gourmet caramel-dipped apples in shades of light pink, and hot chocolate bombs in a variety of colors and flavors. Vanessa’s
personal favorites include the banana pudding cupcake and her decadent chocolate chip cookie. Another stand-out is the miniature cheesecake berry cups complete with a strawberry on top and a champagne shooter. “My love language is gift giving,” Vanessa shares. “I was always the person who came to school starting as early as 10 years old with homemade cupcakes or cookies for my friends’ birthdays.” It was actually those early days baking for friends and running a snack shack for a local nonprofit her mother was involved in that showed Vanessa how much she not only liked baking and sharing food with others but also being her own boss. By the age of 13, she was already an entrepreneur. Treats by Ness spent one year at Weberstown Mall as a sweets pop-up, and while that gig ended in October 2023, Vanessa is still doing popups at The Humble Hustle Market inside of Weberstown. been delighting guests with at-home spectacles since opening the business in 2018. “This style of cooking has long been a passion of mine,” Binh explains. “I wanted to share that passion with others and an opportunity arose to create this at-home catering business. It was the right time to offer people the food they love with the service they desire.” The catering company creates private dining experiences at the convenience of your home and provides everything you need, from the Hibachi grill right down to the napkins and chairs. “My favorite dishes have to be the filet mignon, the salmon, and the garlic shrimp,” says Bihn. “The steak is of the highest quality and known for its tenderness. The salmon is packed with flavor and prepared with special grilling techniques. When we cook the shrimp, it becomes an incredible combination of crunchy and tender at the same time.”
The chefs generally train for several months, learning to create delectable food and how to put on an amazing show. At the end of each meal, the chef will dazzle guests with a memorable fire show, a token of appreciation, demonstrating how thankful the chef is for the opportunity to cook and interact. Booking well in advance is encouraged as these meals are quite popular. For those who adore the food and experience of Hibachi, but who aren’t quite ready to have the catering experience at home, there is good news: Sakura Hibachi Catering plans to open a store in Stockton’s Miracle Mile Community District in the spring of this year.

his season, plan to enjoy some delicious crab as a part of your menu rotation. Crab is rich in protein, healthy Omega-3 fats, and vitamins such as B12, zinc, selenium, and copper. It is known to boost cognitive function, and support healthy skin, and hey, did we mention it’s delicious? Keep reading for three recipes featuring crab to make this month.
CRAB SEAFOOD BOIL Serves 6
Prep Time: 5 min Cook Time: 25 min
INGREDIENTS: Broth: 1 c. purified water 2 c. white wine 1 yellow onion, peeled and chopped 4 garlic cloves, peeled and minced 2 tsp. sea salt
1 tsp. black pepper 4 medium radishes 2 sheets of nori seaweed 2 whole scallions, chopped 1 tsp. dried red chili flakes 2 tbsp. raw apple cider vinegar 1 tbsp. fish sauce 1 whole lemon, quartered
SEAFOOD & MEAT: 1 lb. mussels, in their shells 4 oz. tailon shrimps 2 Dungeness crabs 2 pork sausage links, chopped
GARNISHES: 4 tbsp. butter ½ c. fresh dill, minced 5 sprigs of fresh thyme, stems removed
INSTRUCTIONS: Place all broth ingredients into large stockpot or Dutch oven and bring to a boil. Simmer for 10 minutes. Add seafood and meat to pot while simmering. Cook covered until shrimps are pink, and mussel shells have popped open, about 5 minutes. Remove from stove and strain. Return liquid to pot and toss with butter, dill, and thyme. Store leftovers in a glass container in fridge for up to three days.

Serves 6 as an appetizer Prep Time: 15 minutes
INGREDIENTS: 2 tbsp. toasted sesame oil 2 tsp. sea salt 1 tsp. black pepper 2 tsp. garlic powder 2 tbsp. coconut aminos 1 tbsp. fresh lime juice ½ lb. steamed or canned crab, shredded 1 c. shredded cabbage, minced ½ c. fresh basil, minced ½ c. fresh cilantro, minced ¼ c. fresh mint leaves, minced ¼ c. shredded coconut, toasted ¼ c. pecans, chopped 3 Belgium endive heads, leaves separated
Vinaigrette: 2 tbsp. olive oil 1 tbsp. balsamic vinegar ½ tsp. sea salt
INSTRUCTIONS: In large bowl, whisk together sesame oil, sea salt, black pepper, garlic powder, coconut aminos, and lime juice. Add shredded crab, minced cabbage, herbs, dried coconut, and pecans. Spoon salad into endive leaves, and arrange on platter. Whisk together vinaigrette ingredients to dress salad. Store leftovers in a glass container in fridge for up to three days.
CARROT SOUP WITH CRAB Serves 4
Prep Time: 5 minutes Cooking Time: 10 minutes
INGREDIENTS: Soup: 2 tbsp. avocado ½ medium yellow onion, chopped 1 medium garlic clove, peeled and minced 8 medium carrots, ends removed and chopped 2 medium celery stalks, ends removed and chopped 1 tsp. dried thyme ½ tsp. smoked paprika ½ tsp. dried red pepper chili flakes 1 tsp. sea salt ½ tsp. black pepper 2 c. chicken or vegetable stock 1 c. heavy cream Garnishes: 1 c. steamed or canned crab Fresh parsley, chopped
INSTRUCTIONS: Heat avocado oil in soup pot set to mediumlow heat. Add onion and garlic, sauté until soft, about 5 minutes. Add chopped

carrots and celery. Stir well. Season with thyme, smoked paprika, dried red chili flakes, sea salt, and black pepper. Let simmer for 10 minutes. Add in chicken or vegetable stock. Transfer to blender and mix on high until creamy. Return soup to pot and add heavy cream. Stir well. Garnish each bowl with crab meat and parsley. Store leftovers in an airtight container in fridge for up to three days.
