The Goodstock girls are in the business of making dreams come true, and have been doing so since 2015.   Amy Sieffert and Anne Wilcox know their city from the inside-out. After all, they’re Stockton natives. And while the duo spent the early parts of their careers honing their skills, the ladies always had their sights set on how they could help in planting the seeds to transform their hometown.   “We’re an events company, but more than that, we are trying to support the community and the people in it,” says Amy. “We work with a lot of arts groups and people who want to do great things in our community. We want our events to have something bigger behind them.”    Stockton residents couldn’t have been happier, and Goodstock’s first official event, Stockmarket, became more than a one-hit wonder. “So, we built on creating things that we wanted to see,” adds Anne. “Something that would benefit the city in some way.”   Amy and Anne’s efforts have continued to unfold, highlighting local creators and venues that don’t get the attention they truly deserve. “Some of the most rewarding aspects of our work are seeing our vendors follow their dreams,” Anne grins. “Cast Iron Trading Co. started at Stockmarket; now they have a restaurant in downtown Stockton—and we got to be spectators of that success and growth.”    But Stockmarket is only a small piece of the ever-evolving picture that is Goodstock. “We’ve [worked] with the Haggin for a three-part series called Evening in the Archives,” Anne explains. Items from the archives were selected and paired with someone who was keeping the craft alive, providing attendees with educational and interactive demonstrations.    “One of our most frequently requested events is our Style Swap,” Amy laughs. “We gather contributions from ladies in the public who will attend the event weeks ahead of time. And for only fifteen bucks, you’re given a large bag to go through our ‘pop-up shop’.” With mimosas and crazy-chic items up for grabs, Style Swap allows women to enjoy themselves, but also give to a good cause.    “‘After all the guests left with full bags, we were still able to donate thirty-five bags to the Women’s Center!” says Anne.    Goodstock’s efforts have even been noticed by City of Stockton, who requested they put on a five-day event in conjunction with Stockton Arts Week. “We brought in different artists and performers each day,” Anne describes. We had everything, from poetry, dancing, music, live painting. Even 3D Paper Art.”

While Amy and Anne continue to bring their incredible events to our county seat, their aspirations are always just a little bit higher. “‘We love doing events, but we want to work with people to bring their dreams to reality—not just our own ideas. That may sound cheesy, but it’s true,” says Amy. Anne agrees. “Seeing their dreams come to fruition, and knowing we made a difference in some way. ENJOYING A BRITISH PASTIME AT THE HIDDEN TEA ROOM  BY COPPER WILLIAMS / D It begins in a parlor where pressed linens spill over tabletops and seasonal décor drapes across walls. Freshly baked scones sit alongside delicate china and pots of piping-hot tea. Generous dollops of sweet cream, lemon curd, and preserves await the decisive dip of a knife or spoon. And as the chatter of delighted guests and the clink of silverware echo throughout, the first course of High Tea begins.

This two-hour event has become a cherished pastime for Lodi’s locals and a definitive draw for many coming from out of town, all thanks in part to Terrie Green. As owner to the highly popular Corner Scone Bakery, which just so happens to be around the corner from The Hidden Tea Room, Terrie has offered a cherished part of English culture in our own backyard.   The Hidden Tea Room first began in the small interior of Corner Scone

Bakery itself on reserved weekends. But when demand for seating far exceeded capacity, Terrie knew it was time to expand. Thus, Lodi’s only tea room was born, providing patrons with a variety of tea services as well as a darling venue for private functions.    Currently, The Hidden Tea Room provides two variations of teatime. High Tea is a two-hour event based around the British custom. It’s garnished with five courses prepared from scratch, delivered straight from Corner Scone Bakery, and served at fifteen-minute intervals. The best part? No two tea services are ever alike, accented with seasonally served sweets and pastries. High Tea is served every Saturday by reservation.    “It is important to us to change the tea rooms atmosphere as well as food selections monthly to create a new experience for returning customers,” says Terrie. “We want to create a memorable experience for our guests by engaging all of the senses!”    Cream Tea is the younger sibling to High Tea, in that it is more of a mini service that offers equally delectable dishes you’d find at high tea, but with some lunch item favorites offered alongside! This service requires no reservation, and you are free to enjoy your meal at your own pace. Simply drop in during afternoons on Tuesdays or Thursdays! Terrie adds that this event is perfect for a lady’s day out.    “We love to be a part of the relationship that mothers, daughters, grandmothers, and friends are sharing at the Hidden Tea Room. Her love of fashion and her hometown of Stockton inspired a dream early in life that she just couldn’t let go of— owning her own boutique. And location was never a question.    In March 2011, her dreams were realized when Angela opened the doors to Sassy Pants Boutique, a fashionable children’s clothing shop in Lincoln Center. Inside, racks of dresses in a rainbow of colors and more relaxed gear for young boys and girls fill the bright store. ICE SKATER LANDED

Evan Mullins’ foray into figure skating started late. At 11 ½, most

skaters already have a few competitions under their belt. But it wasn’t until a pair of men’s figure skates in his size just happened to be donated to his mother’s ice rink in Sacramento that Evan started learning the sport. Before that the only time he spent on the ice was in hockey skates.   Evan took to figure skating quickly. His mom, an ice rink manager in Sacramento and a high-level figure skating coach at Oak Park Ice Arena in Stockton, taught him a few tricks and one month after lacing up his first pair of figure skates, Evan was at competition. He won and was asked to return. Even Evan knew it was a big deal.    Figure skating is in Evan’s blood. Shannon Mullins, Evan’s mom, competed in the 1990 US Nationals as a novice lady (two levels from the top) and calls watching her son compete in a sport she loves as “surreal.” “Evan fell in love with skating all on his own, which is very important to me.”   A master of double jumps and double-double combinations (when the skater lands two tricks back to back that each require two full in-air rotations) Evan is working on landing his first triple jump. He finished last season as an intermediate man, three levels from the top, and has his sights set on more. In the interim, he’s focused on ice dancing, where he and his partner Juliana recently competed in Evan’s first US Nationals in San Jose.   Realistic about the sport, Evan says Olympics are the dream, but that’s a perfect scenario. Ultimately, he’s letting figure skating take him as far as possible.    “My goal is to skate as hard as I can and go as far as I can,” Evan says. “I want to keep going until I can’t.”   International travel appeals to the high school freshman, as well. Evan says he’d like to travel the world, competing and representing the USA.   January and February offer a bit of a reprieve between seasons but for the most part Evan is on the ice six or seven days each week. When he isn’t, Evan enjoys drawing, working out, playing video games, hanging out with friends, and helping his mom at the rink.    “It can be a very hard world and takes so much work and commitment,” Shannon says of the sport she loves. “When I had children I never planned to have a figure skater.”

TINY SLIVERS of SPARKLY GLASS LOCAL MOSAIC CREATOR TAKES HER TALENTS FULL-TIME  BY FAITH LEWIS

For years, Kristi Halva’s glass mosaics were confined to a makeshift studio in a corner of her garage. And the time she spent there was constricted to the hours of 9 PM and midnight, after she put her kids to bed. Occasionally she would pack up her supplies and haul them over to her kids’ school to help the students make a mural to auction off at the annual fundraiser. But, for the most part her art took a backseat to being a working mother and wife.   Now that her kids are grown, the Stockton-based artist is finally being showcased—not only as an artist, but also as an art teacher.   “I don’t know that I’ve ever seen anything that I do in art galleries,” Kristi says. “My stuff is unique because it’s a lot like stained glass, but it has more freedom.” 32

Unlike most mosaic artists who use precut glass squares or tiles, Kristi cuts her own glass. This frequently results in Band-Aid wrapped fingers, but also allows her incredible diversity in the shapes she can achieve.   The process is straightforward, but far from simple. Using particleboard as a base layer, Kristi first sketches out her design, then cuts and glues down the glass, section by section. She finishes it with black grout to contrast the bright colors.   “I don’t really ever know how it will come out,” she admits. “When I grout it, things happen to the picture that I had no way to anticipate. I feel like I’m channeling some energy that’s greater than mine.”   Though she welcomes any subject for commissioned work, Kristi specializes in floral and nature scenes. Several of the pieces she is most proud of feature California poppies, gnarled trees, and prominent suns.

In addition to creating her own art, Kristi teaches private group classes. Hosted either in her home studio or at local wineries, these events are often small and cozy, but now she is turning her attention to teaching larger and more frequent classes.   The first step toward that goal was taken on September 30, when she once again found herself packing up her supplies—this time for a class of more than 30 students on Alcatraz Island in San Francisco.    According to Kristi the possibilities are endless when it comes to pairing mosaic classes with interesting themes or venues. She’s currently toying with ideas like an afternoon “Mosaic and Mandala” class that would incorporate yoga and serve as both a creative outlet and a relaxing retreat for students. Sparks flew when Andrea ‘Kitten’ Perry and Brandon ‘Tiger Owndabea’ Wiggins met—igniting a flame that fiercely burns in hopes to set fire to a rebirth of art and culture in the Stockton community.   “It’s like we auditioned for each other,” Andrea laughs of their first meeting that set the tone for their influential year together. “That’s a big part of our story,” Brandon adds.    Andrea was born and raised in Stockton, returning after 12 years of traveling, performing, publishing her poetry, and organizing groups of creative people—including the performing arts troupe D.OP.E. Poetz.    Brandon writes, produces, and engineers his music, performing his first original jazz song on his keyboard at 13 years old.    The artists instantly respected and complimented each other’s talents—but it didn’t stop there.    Filling a community void and the urge to perform, the duo reached out to venues and organized their first show in April 2017 at the Sycamore—The Vibe

In October 2017, Tiger Kitten Productions reminded over 400 middle and high school students that they could, in fact, accomplish their creative dreams. As hosts of the University of the Pacific BLOCK Conference, Andrea and Brandon curated four workshops with a focus on finding your voice. “We like to deal with the inner voice,” Brandon explains. “Everyone has it, but some people don’t know how to use it to their benefit.”    Tiger Kitten Productions also teamed with Art Expressions of San Joaquin to bring creative writing workshops to people from eight years old to 80. Worldwide—a poetically theatrical musical experience featuring five artists who perform their original work, woven together by Andrea and Brandon to produce a truly unique experience. “And then we really began to push each other to higher heights,” Andrea states.   The first event’s success inspired Andrea and Brandon to found Tiger Kitten Productions and later produce two more The Vibe Worldwide shows.   But, Tiger Kitten Productions does much more than just put on shows. Their events connect and uplift the creative community with a powerful message and outcome cohesive with their brand.   And as they took to the stage of their newest event, The Open Mic Experience, at the Buena Vista Social Club in Stockton, their dynamite energy and dynamic vibe quickly stole the bustling room’s attention. They kicked the night off with original pieces, rhythmically intertwined into pas-

sionate and thought-provoking performances.    Other talented artists followed, with each act rich in appreciation for an outlet. “It’s not just an open mic night. You walk away from our shows with a good feeling,” Andrea says.   And that feeling is one of unity. With witty commentary, energetic introductions, dynamite performances, and artfully crafted local food, The Open Mic Experience is a high-energy, inspirational celebration of local talent and the arts. A sudden squeezing pain in the chest, tightness that spreads to the left arm, a wave of dizziness, shortness of

breath. These are the symptoms most

sufferers feel when they have a heart attack. The problem is the symptoms are sudden; they only come on when a heart attack is in full swing. For most, there are no warning signs of cardiovascular disease before the event, no small shocks leading up to the big boom. Heart disease is called the silent killer.    “We’re very sensitive to things that happen around us in our environment,” says Eric Keyser, MD, medical director of the Stanford Cardiac Surgery Program at Dameron Hospital and Stanford clinical assistant professor of cardiothoracic surgery. On the inside, our bodies harbor the warning signs of heart disease but on the outside there’s no way to tell. “It’s only when its become a critical issue, a functional issue, we become aware that it is a problem.”

“With the increasing degree of people not being active… people are becoming less aware they are having a heart attack,” Dr. Keyser says. They are not used to exerting themselves and chest pain is not as obvious. “Sometimes heart attack symptoms can be as subtle as just feeling unwell or feeling weak.”    One in three women will have heart disease in their lifetime. That’s more than cancers, car accidents, and stroke. Fifty percent of the time, the first sign of heart disease is sudden cardiac death. Hypertension is the most dangerous form, as most people do not feel hypertension until they suddenly have a stroke or heart attack. Because they don’t feel it, they do nothing to prevent it. However, hypertension is still doing the damage and screwing up the organs. “Most people have hypertension even five years without symptoms,” warns Dr. Ramin Manshadi, author of The Wisdom of Heart Health: Attaining a Healthy and Robust Heart, and cardiologist at Manshadi Heart Institute in Stockton.

Building Strength

Even after an individual has built up strength and become a more effective exerciser, it’s still possible to take it too far. “When you overdo it, you stress your body out,” Ian says. This releases stress hormones, which is the opposite of what you want to achieve cardiac health. Instead of spending hours in the gym each day, Ian recommends working out for 45 minutes at a reasonable pace. Too much muscle breakdown, overtraining, injuries, and exhaustion are counterproductive to the process.

Even with genetic markers that can increase the instance of heart attack, prevention is possible. A healthy lifestyle is the best defense against heart disease, and an even better defense for minimizing the effects of heart disease on the body. Eating vegetables, exercising regularly, and avoiding unhealthy habits such as smoking and drinking alcohol help lower risks for both men and women.    A proper cardio fitness routine has also been linked to improved cardiovascular health. As little as 30 minutes of cardio three times each week can greatly reduce the chances an individual will develop a heart-related illness.   So why does it work? Cardiovascular exercise reduces the risk of suffering from medical conditions that can impact your heart health such as diabetes, high cholesterol, high blood pressure, and obesity. Reducing the risk of developing these diseases removes strain from the heart that can wear it out and lead to a heart attack.    The American Society of Sports Medicine states every individual in the U.S. should do a minimum of 30 minutes of moderate physical activity each day or 150 minutes each week. “If you do that, there are significant reductions in cardiovascular mortality and morbidity,” says Dr. Manshadi.   The key word is moderate. Light exercise, for most, isn’t enough, and strenuous activity can wear down the heart.   For runners, three to five mph is a moderate speed. Isometric exercises such as push-up and sit-ups are also a positive. There should be a mix of weight training and resistance exercises in every heart-healthy exercise routine.

HOW it WORKS

Lets look at this in medical terms for a minute. Regular, moderate exercise benefits the lipid profile (lipids include cholesterol and triglycerides), and reduces bad particles that cause blockages in the arteries, which leads to heart attack, and raises good cholesterol. “Exercise by itself makes the inner lining of the arteries more healthy,” Dr. Manshadi explains. It helps the arteries relax during stress or other times blood pressure rises. With moderate exercise, hypertension rates are lower, reducing risk for stroke and heart attack. 48

Think of it as a sort of conditioning for your heart muscles. When the heart is conditioned to manage a sudden spike in blood pressure, a small decrease in oxygen, or other environmental changes, the fallout is less severe. For many, stress builds to a point the heart can no longer take and gives out, but if you exercise, your heart muscles will know how to manage the extra stress without sending you in a giant red taxi to the hospital.    Weight control is the other part of this equation. Obesity increases the risk of heart attack by approximately 60 percent in middle-aged men, according to a University of Glasgow study. Extra weight puts strain on the organs and diets high in fatty foods that cause obesity clog the arteries. Weight control not only creates more positive outcomes for those who suffer myocardial infarctions, it reduces the risk of diabetes, a main culprit for heart attacks.

Getting STARTED

Ian Fisher, owner of The Shop Fitness in Lodi, makes it simple. “Get moving,” he says. “Twenty to 30 minutes a day on a piece of cardio equipment at a moderate pace… you don’t need to overdo it.” One

of the biggest mistakes people make is doing too much too fast, which puts additional stress on the body.    Adding light weight lifting or resistance training to your routine breaks down and builds muscle. “The more muscle mass you have in your body, the more calories you burn everyday,” Ian says. And while weight loss isn’t the only goal, it is part of maintaining a healthy heart. Smaller waistlines and less belly fat greatly reduce the risk of cardiovascular disease, including heart attacks.   For those who already have heart disease, regular exercise reduces the severity of preexisting conditions by strengthening the heart and cardiovascular system and improving circulation. Reversal of angina and other issues is possible, but even without full reversal, adopting a healthy cardiovascular exercise routine can prevent worsening of the disease.    Remember, the heart is a muscle and it needs to be properly worked just like biceps and glutes.   When a person has cardiovascular disease, is at risk for cardiovascular disease, or has lived a sedentary lifestyle for a long period of time, taking it slow is important. These patients should never start a new

Not All Heart Attacks are Created Equal We see it in the movies; the sudden gripping of the chest, falling to the knees, an immediate inability to breathe. It’s what we all recognize a heart attack to look like. The problem is, not all heart attacks look this way, especially for women.    The American Heart Association as well as local hospitals has made it their mission to spread awareness of heart disease, to reduce the risk of sudden cardiac death through education.    Many women who experience heart attacks never feel pain in their chests and weakness in their arms, jaw, and chest. These, of course, are the most common signs of a heart attack, but they are by no means a cookie-cutter reaction.    Some women describe an increase in stress, a feeling of impending doom, and increased fatigue as symptoms experienced before a heart attack. Sometimes symptoms are gastrointestinal. In too many cases, these patients do not get to the doctor in time because their symptoms are atypical.    Dr. Keyser explains it best. At any time something feels off, especially in the chest, and does not improve with rest, or keeps coming back, head to the hospital. Lightheadedness, chest pain, dizziness, and cold sweats can be signs of something less severe, however, they can also be warnings of cardiac arrest to come.    His suggestion: if it feels out of the ordinary, doesn’t improve with rest, and is persistent, it’s important to follow up with a doctor. If pain is severe, go to an emergency room right away. Symptoms can be subtle.

exercise routine without consulting a healthcare professional. Dr. Keyser also suggests spending more time on warm-up and cool down and being more measured in your approach to exercise by avoiding excessive strength training “because it puts an extra strain on the vascular system and an extra strain on the heart.”    Diversification of exercise is another important step. Well-rounded exercise routines add resistance training twice per week for about 30 minutes each session to further reduce risk.   Diversified workouts keep your body from getting bored. As bodies adapt to repetitive exercise, those exercises become less effective and new exercises should be introduced to keep your body on its toes and work new muscle groups.    Lifting weights, isometric exercises such as planks, and TRX all develop muscular strength, which reduces the risk of breaks. Any type of cardiovascular exercise resets how much oxygen you need to perform an activity. You get tired and fatigued faster when you do not exercise. “As we age, all our reserve goes down,” Dr. Manshadi says. “[Resistance training] will

help the muscles to be more efficient.” Exercise is so important that a 50-year-old with a healthy exercise routine can be in better physiological shape than a 25-year-old who doesn’t exercise.   If people are sedentary, they have to start slow. Moving from an inactive lifestyle to an active one is risky, but necessary.   Start with walking. Once you’ve built up some strength, move on to moderate exercise such as racket sports, basketball, soccer, and moderately intensive yoga. Don’t jump into vigorous exercise like cross fit, which is only good for the body if you work up to it.   The goal is 30 minutes per day but if you need to take it down a notch, 15 minutes will do in the beginning, according to Ian. It’s hard but you will find a balance between stepping outside of your comfort zone and doing more than your body can handle.    Too much too fast can lead to injury or simply turn people off to the idea of exercise. “Do what you can do until your body builds up the strength,” Ian suggests.

Lessons in dental care are passed from generation to generation. Your habits and the ideals you instill in your child about dental health will stay with them for a lifetime. Set your child up for a forever of healthy smiles by starting dental care as early as pregnancy. It’s never too late to adopt healthy practices and the earlier good oral habits are taught the more likely they are to have a lasting impact on children.

IN THE WOMB/INFANCY A child’s dental healthy begins far before the appearance of their first tooth. In fact, healthy habits in utero have an effect on lifelong dental health.   A baby’s teeth begin to develop as early as month three of pregnancy, which means the habits you adopt while pregnant affect your child’s future smile. Rule number one is to eat a healthy, well-balanced diet. When it comes to

pregnancy, what you put into your body has the greatest affect on your baby’s health; and while many nutrients are important during pregnancy, vitamins A, C, and D, protein, calcium, and phosphorous have all been linked to the development of healthy mouths.    Doctors suggest that pregnant women fill their plates with plenty of fruits and vegetables, grains, and lean proteins. Foods low in sugar and high in folic acid, such as leafy, green vegetables, are best.

TOOTH DECAY

Baby Bottle Tooth Decay is the name for tooth decay found in infants and toddlers, and it’s called that because of the connection between baby bottles and early childhood caries. Going to bed with a bottle filled with milk or juice can be detrimental to a young child’s oral health. These drinks contain sugar that sits on the child’s teeth all night, turning into bacteria that leads to tooth decay. Don’t let bottle soothing and in-crib feedings become a habit (even if you’re just trying to catch a few extra zzz’s). For prevention, always wipe your child’s teeth after a feeding and only send them to bed with water.

Supplements are another important part of pregnancy. Prenatal vitamins contain more folic acid to lower the risk of birth defects. Calcium is also important, as it helps create strong bones (and teeth are bones after all!)   Children are typically born without teeth and for many parents it’s out of sight, out of mind. Oral care, even without the presence of teeth, is important.    A baby’s gums should be wiped down after feedings with a washcloth. Non-bristle toothbrushes can be used to massage gums for both teething pain relief and as a way of keeping the mouth clean. As soon as that first tooth erupts, start brushing it. And follow the American Academy of Pediatrics’ suggestions for dental visits by scheduling an appointment around your child’s first birthday, or six months after the first tooth appears. A full appointment, with x-rays and a tooth cleaning, will typically come around age 3.

EARLY CHILDHOOD Most good hygiene habits are formed in early childhood. What you model for your children at an early age will form their routines and personal care into adulthood.   There are two main ways to ensure healthy lifelong dental habits. The first is to model good oral hygiene behavior, such as brushing and flossing often in front of your children, avoiding sugary foods and snacks that cause nasty tooth decay, and visiting the dentist on schedule. Even without a conversation about it, children will understand the importance of dental health because you demonstrate it’s a priority. “An engaged parental role is crucial to a child’s dental health,” says Jeff McComb, DDS, Pediatrics Dental Director at Kids Care Dental & Orthodontics. “We as your dental team typically only see your child(ren) twice per calendar year unless they need additional care.

ORAL Genetics When it comes to genetics, how straight teeth are and the position of wisdom teeth may come from mom and dad, but the myth that “soft teeth,” when enamel is worn down, is genetic holds no truth. However, we can never be a replacement for an involved parent at home.” The second step is to get your child into a healthy dental routine of his or her own. This includes regular dental visits every six months, brushing your child’s teeth twice each day—once in the morning and once at night—and flossing daily.    There are a lot of reasons these early practices work for long-term dental care. First off, all habits formed early are more likely to last a lifetime. Secondly, tooth decay and other dental issues are harder to reverse (though it is possible in many cases) than to avoid in the first place.    A staggering 96 percent of adults will experience tooth decay in their lifetime, and 42 percent of 2-11 year olds will have dental caries in baby teeth. That’s double the amount of children ages 6-11 with the same issues in their permanent teeth.    “Flossing is huge! Please floss teeth as soon as you see two teeth that touch. If you don’t floss, 35 percent of the tooth surface doesn’t get cleaned,” says Dr. Anisha Ranchhod, owner and pediatric dentist at Lodi Kids.   Parents need to ditch the mentality that baby teeth don’t matter. “Although baby teeth will eventually fall out, they are important for maintaining proper dental health for incoming permanent teeth,” says Dr. Rafat S. Razi, a pediatric dentist in Tracy. Even though the teeth will eventually fall out and be replaced with permanent adult teeth, the damage done can spread to the gums and other areas of the mouth. Well cared for primary teeth make way for healthier, straighter adult teeth to come in. And don’t forget those baby molars stay in place until 10-12 years old. Not to mention those nasty habits that caused the tooth decay in the first place—infrequent brushing and too many sugary juices and snacks—have already been cemented into your child’s mind as appropriate oral care.   “Despite all our advances with technology, safer digital x-rays and other preventative products, early tooth decay still remains very prevalent in our community,” Dr. Ranchhod says. “Starting early with brushing and flossing and maintaining a healthy diet can help prevent this.”

HEALTHY BABY TEETH • After baby’s teeth are present, do not send them to bed with bottles or sippy cups containing anything but water. • Schedule your child’s first dental checkup no later than the child’s first birthday or six months after the eruption of the first tooth, whichever comes first.

• Parents must brush and floss for their child. Children do not have the manual dexterity to brush properly until about age 6 and floss till about age 8. • Eat healthy snacks such as fruits and vegetables and limit soda, candy, and juices to once a week as a treat.

HOW TO CHOOSE YOUR FLOORING

Our floors are high-traffic, highly visible areas of our home. They either work for us or against us—trapping dirt and stains that force us to spend Saturdays steam cleaning, or facing our brood with style and grace while we live our lives.    Choosing the right flooring for your home and family is much more than “that looks pretty!” Several other factors come into play, like budget, durability, moisture, location, square footage, installation, maintenance, and more. “It really starts with budget, but there’s always a floor for every budget,” says Tom Mathews, Director of Operations at Shelton Lee 74

He explains that identifying your square footage budget is an important and efficient first step because, “…you can outprice yourself, waste your time, and like something you can’t afford.” He suggests you choose a budget for each room, and make that number somewhere in the middle, with a little bit of give on top and bottom.   Second, ask yourself what you’re trying to achieve. Do you want functionality, and durability? Ease of maintenance? Or is it all about style? “Flooring should be a long-term investment,” Tom stresses. “Even carpet! With the wax, you can see the actual wood, you can feel the grain on your feet; but the aluminum is a little more durable, flat, and water resistant.”

Wood flooring remains popular, but 2018 is all about wide planks! “At seven or eight inches,” adds Jackie Embery, Showroom Manager at HT Home Design in Stockton. Some are opting for a foot or even wider! This look perfects shabby chic, wine country flair.   Colored wood is high on the interior design radar, with medium, one-tone, wood, and natural colors. Neutral color palettes are the name of the game this year, with beiges, whites, and light and airy colors heading the trend. “This creates a cozier, more relaxed feel,” Jackie adds.   Another great trend for wood lovers is the switch to a wax finish instead of polyurethane. As Jackie explains, “It allows for re-apply of the wax, which makes the floor look like new again!” “The wax comes in a matte finish, a draw back to the casual feel we’re seeing now,” she adds.

Du Cahteau Floors, a brand carried at HT Home Design, hits the trendy nail on the head with a natural look, and a series that features reclaimed lumber. These floors come with that wax finish, a variety of colors to choose from—ranging from almost burnt or black, to white—and a wide array of textures. “The colors in this line are fantastic!” Jackie raves.    For the traditionalist, fear not! Though he says no floor is truly waterproof, this is the closest you can get. Through time these traditional foods are adapted and come to incorporate the best flavors of their adopted culture, even becoming an icon of its new home. This is the case with New York style pizza, TexMex burritos, and New Orleans crepes. Harkening back to France of the 1100s, the crepe served as an important food staple for the people of the rock-strewn region of Bretagne (Brittany in English). Carried across the sea, the crepe found a new home in the cultural melting pot of a budding New Orleans.    And now the crepe has found a home on the Miracle Mile in Stockton thanks to a pair of modern travelers. Midtown Creperie & Café owners Matthew and Melissa Grizzle have preserved many of the flavorful Cajun elements that the crepe picked up in New Orleans and added a flair of their own that has made their café a local favorite.    “We felt like the New Orleans feel would be a better fit for the area here in Stockton,” Melissa says of their French Quarter inspired café. “We love the small hole in the wall places in New Orleans and desired to have the same feel here on the Miracle Mile.”   Among the most popular items on the menu are the Rex, a savory smoked tri-tip and asparagus crepe topped with a basil pesto sauce, and

BIG ON FAMILY, BIG ON FLAVOR TWISTED BARREL WINERY  BY COPPER WILLIAMS

It takes equal portions of passion and commitment to turn a beloved hobby into a thriving business, but fortunately for Lodi’s wine aficionados, the Tanner family behind Twisted Barrel have both traits in spades! Tucked along the outskirts of Lodi, the winery has made a serious claim to fame in their Spanish and Italian Varietals, harnessing their love for all things vino into small batches that are big on flavor!   “We specialize in the more unusual wines such as Primitivo, Touriga Nacional (a Portuguese varietal) Mourvedre’, and Barbera,” explains Mark Tanner, owner of Twisted Barrel Winery.    But where does Twisted Barrel’s story begin? While the business first opened its doors in 2014, the Tanner family has had its hands in wine-making since 1988. Verl Tanner, fellow owner and senior wine maker, harbored a love for crafting his own unique blends and sharing them with friends and family. As the popularity 100

of his efforts grew, Verl moved from Modesto to Lodi, joining with the Lodi Amateur Vintners Association. By 2004, Verl’s son Mark was ready to join the family team in what was quickly evolving into something much larger than mere hobby.   Fast-forward to 2017, and Twisted Barrel Winery has committed to crafting deep, rich reds such as their Petite Sirah, a luscious, full-bodied wine with lots of fruit on the palate. And Charbono, a big wine with great mouth feel and complex flavors. Twisted Barrel’s whites are also in high demand, such as their Chardonnay— fruity, crisp, and delightful.   While the winery’s tasting room has evolved since its opening in 2015, the Tanner family has decided to expand. “We are very excited to be moving our tasting room into the lively downtown Lodi scene as of January 1, 2018,” says Mark. “Here, we can offer extended hours, music, and a convenient setting to meet up with friends.”

theKNIFE: BEHIND NICK KUBITZ OF RANGE  SUZANNE LEDBETTER

It is time to familiarize yourself with an allstar chef and player in the San Joaquin County culinary landscape, Nick Kubitz. Born and raised in Stockton, he credits his culinary arts teacher at Lincoln High School for urging him to pursue a culinary career.   Nicks’s culinary style can best be described as American Cuisine with a hint of home. His talent lies in his ability to incorporate traditional ingredients with a modern twist. A great example is his take on a classic American staple—deviled eggs. Nick’s version utilizes fresh grapefruit and crispy, homemade potato chips as garnish. The rich, creamy eggs are reminiscent of childhood get togethers, but the grapefruit and truffle remind you why it is so good to grow up and explore playful food combinations.   Nick attended the Art Institute of California, San Diego where he earned a Bachelor’s of Science degree in culinary management and hospitality. His education and culinary training led him to help a friend open a restaurant in Santa Cruz, and then to 102

San Francisco where he worked with culinary legends. After stints at famed San Francisco dining establishments Zuni Café and Jardiniere, Nick was offered the position of Executive Sous Chef for Zynga, the video game developer based in San Francisco. He was responsible for managing, hiring, and producing three meals a day for 1,800 employees. It was during his time at Zynga that Nick experimented with flavors and foods from cultures around the world. “Creating 60 to 70 recipes a week forced me to expand my culinary arsenal,” he explains. “One dish would feature Indian cuisine, and the next would explore the flavors of Malaysia. It was a fun time of experimentation and growth.”   But eventually, Chef Kubitz felt a calling to return to his roots and find greater culinary independence in Lodi’s burgeoning wine country. He bought a home with his wife Katie and launched Range, a private catering company in San Joaquin County, where he offers a multitude of services for private parties. You have probably

tried his farm to fork food at one of the dozens of wineries he has partnered with for wine dinners—including Acquiesce Winery, Harney Lane, and Mettler. Nick also collaborated with Cast Iron Trading Co. for a prix-fixe meal, and had the opportunity to cook with James Beard Chef Molly Sims of Ellerbe Fine Foods in Dallas, when they cooked up a storm for a PreZinFest wine dinner at Lange Twins Family Winery and Vineyard last May.   But Chef has found his greatest support from local families that have hired him for private parties, dinners, and corporate functions. “It’s a great feeling to have the community behind you, championing your food and what you are trying to do,” he shares. “Coming from an oversaturated market in San Francisco to San Joaquin County demonstrated the importance of building relationships and creating killer dishes.” FOR MORE INFORMATION: RANGE RangeLodi.com Facebook: @rangelodi Instagram: @chefnickkubitz

CHOCOLATE THE FOOD OF GODS  BY SUZANNE LEDBETTER

Who doesn’t love chocolate in all its glory? They say chocolate is the food of Gods, and we couldn’t agree more. After all, chocolate originates from the ancient times of the Mayan and Aztec civilizations. Back then, chocolate was enjoyed by the Mayan Indians as a spicy drink called chocolatl’, made from roasted cocoa beans.    Chocolate’s storied history was transformed when the Aztecs introduced cocoa to the Spaniards, who, in turn, took it back with them to Europe during the 16th century. During this time, chocolate was reserved for the uber wealthy and was still drank in its liquid form. Eventually, a technique was devised during the Victorian era that allowed chocolate to be enjoyed in a solid state, and the love affair with all things chocolate was born! Now chocolate is found everywhere and used in everything, from cakes and treats to sauces, molé, and chili. 104

But you might ask yourself, where does chocolate come from? It arrives to us in stores across America in bars, sauces, morsels, powders and so much more. But cocoa is actually grown in pods on trees of the Theobroma cacao species. And where they are typically grown is often referred to as the Cocoa Belt, which extends a few miles north and south of the equator. They thrive in the humid weather and heavy rains of the region. It is said that Africa produces up to 70 percent of the world’s cocoa, with other top producers of cocoa including Central America, South America, and the Caribbean. Much like the terroir of wine grapes, cocoa hailing from different regions has unique flavor profiles based on where it is grown. Some chocolates exhibit fruity aromatics and some hints of burnt caramel. Below are some generalized characteristics of cocoa from some of the most prolific growing regions throughout the world.

Ghana Expect a fruit forward creamy finish with musty wed wood notes. Sao Tome This cocoa is earthy, nutty caramel and sometimes bitter flavor. Madagascar High acid, floral notes with citrus, dried fruit and honey. Dominican Republic Expect a bitter profile with touches of tobacco, acid and a slight sweetness. Peru These beans are smoky, slightly sour, fruity with a woody nose.

Ecuador Superior quality cocoa beans with balanced flavors, floral notes, and a touch of burnt-smoke. You will be sweetly surprised by their versatility and decadence!


DARK CHOCOLATE SEA SALT PISTACHIO BARK INGREDIENTS

8 oz. semis sweet or bittersweet chocolate, chopped 2 C. shelled pistachios, unsalted Jacobsen Sea Salt or other large flake sea salt for garnish DIRECTIONS

Prepare a sheet pan with parchment paper. Melt chocolate in a double boiler or in a glass bowl over simmering water, stirring until smooth. Remove from the heat and stir in the peanuts until covered in chocolate. Spread the mixture onto parchment lined sheet pan and chill LOCAL FEATURE:

½ C. 1 stick unsalted butter 2 oz. bittersweet chocolate, chopped ½ C. packed light brown sugar 1 tsp. ground cinnamon 1/8 tsp. kosher salt ¾ C. Captain Morgan ½ C. heavy cream Freshly grated nutmeg for garnish DIRECTIONS

Melt the butter and chocolate over a double boiler (or glass bowl over a pot of simmering water), stirring until chocolate is melted and smooth. Remove from heat and whisk in brown sugar, cinnamon and salt. Meanwhile, bring 2 and ½ cups of water to a boil in a saucepan. Remove from the heat and stir in the rum and chocolate mixture until combined. Using an electric mixer on high, beat cream in a medium bowl until soft peaks form. Pour the hot chocolate into mugs and garnish with whipped cream and nutmeg.
