Kathryn Nance, 45, is the second female police officer to promote to captain at the Stockton Police Department. However, she isn’t fulfilling any great lifetime dream with her success. In fact, Kathryn never had any intention of becoming a cop at all. It was a stroke of luck that the 21-year-old Stockton native was job hunting when she heard of openings at the local PD. “It just kind of happened,” she says. “I just kind of liked the idea.” And that’s an accurate description of how much of her PD career has played out since. While it’s been necessary to shelter in place and keep our distance for quite some time due to COVID-19, we’ve spent the whole “break” dreaming of the days we can start seeing people again. The orders, however, aren’t going to be lifted all at once, and we will need to practice some form of social distancing for the forseeable future. The Lost Sierra sounds like a mystical place better suited for a J.R.R. Tolkein novel or James Cameron film than the real world. But many will be surprised to hear that this real-life wonderland is not only in California, it’s just three short hours from San Joaquin County. While escaping hasn’t been the easiest thing to do lately considering recent shelter-in-place orders, we know as soon as travel begins to normalize, we’re all going to want to get away at least for a little while, and what better place than somewhere you’ve never been before that doesn’t require extensive planning to get away to? navirus COVID-19 decimated much of our county, we, too, were affected by its rage. That’s why you may have noticed that our May edition didn't publish. Instead, our issue became a May/June combo, an issue we reimagined to best serve our community and what it looks like today. During these trying times, as people who work and live in San Joaquin County, we have been focused on supporting local businesses as best we can, and we urge those who can to do the same. We don’t want to lose any more beloved businesses due to economic downturn caused by the virus. So, if you’re able, please continue to shop and eat at locally owned businesses. This includes picking up to-go orders at favorite restaurants to ensure they’re around when Governor Newsom lifts orders and buying from boutiques like Boxwood Finch and The Owlbox that offer curbside pickup. From calling in orders to shopping online, local business owners are taking the steps needed to garner as much business as they can during these difficult times, including some changes we’re seriously into such as to-go cocktails and wine delivery. For some businesses, creative change includes virtual gym classes and for others it’s kid sports and camps offered over Zoom. No doubt, San Joaquinians have had to get creative in their business models to keep the world turning and to keep earning money, but for us, as consumers, it’s also helpful to have resources that cater to our new needs. We hope, too, that our magazine will be a refuge for you. A place to escape when playing teacher and working from home feels like more than you can bear. We encourage you to pick up a copy, pour yourself a glass of Lodi wine, and get lost in the pages. Plan a road trip, for when you feel safe to travel again, or choose which eatery you’ll get your next meal from. Whatever it is, use this issue as an excuse to treat yourself—after all, you deserve it.

Kathryn Nance, 45, is the second female police officer to promote to captain at the Stockton Police Department. And while Kathryn loves her career, she honestly never had any intention of becoming a cop, let alone a prominent voice for female success in a male-driven profession. It was a stroke of luck that the 21-year-old Stockton native was job hunting when she heard of openings at the local PD. “It just kind of happened,” she says. “I just kind of liked the idea.” And that’s an accurate description of how much of her PD career has played out since. Kathryn landed her job at the PD while on a quest

upfront feel as monumental as it truly is because she’s just doing her job. But Kathryn has been proving her Rockstar status every step of the way. At the same time that she was promoting through departments, she was also raising four kids with her husband James Nance, also a police officer with the SPD. To this day, Kathryn says she still isn’t sure how herself, her husband, or her kids survived. Kathryn, though humble, is not unaware of her position as a role model in the community, especially for young girls. “It took me a long time to see myself in that way,” she says. “I realize that it is very, very important to see more women promote and to see more women that are willing to take risks in leadership.” She preaches to young girls she sees out and about at parades and community engagement events, many of who refer to her as “the lady policeman,” that the only barriers that exist are yourself; women can achieve everything men can and become leaders in their professions. Ultimately it’s work ethic, performance, and attitude that matter—at least that’s how it’s always felt for Kathryn at
for a position with good pay and good benefits. As a single mother, taking care of her children was her number one priority. After becoming an officer, she later transitioned into the role of training officer before becoming a gang detective in 2003. She was the first female gang expert in San Joaquin County—the first glass ceiling she broke through as a female officer. She served in the position for three years before following the natural progression into homicide, where she was promoted to sergeant during her six year career. Eventually she became a lieutenant and finally, in August, Kathryn was named captain. “Most of my career has been like that where it hasn’t been something I planned out,” she says. While Nance is aware of her status as a trailblazer in the department, and currently serving in the special operations department, she says the title of second female captain ever within the SPD doesn’t weigh heavy on her day to day. She says it’s just a fact, but it’s a title she is honored to have regardless. “I think it’s really just a reflection of the department. and the inclusiveness that they have for everything,” Nance says. Ultimately, Nance says it doesn’t

the SPD. In August, not long before she promoted, Kathryn’s husband got into an accident on duty. He suffered a complete spinal cord injury and is now a paraplegic. From August to November he was living in the hospital, with Kathryn by his side preparing for her captain’s test. Today, James is home and getting ready to retire from the PD. Kathryn, however, has returned to work. She says James is not only independent and able to be on his own but he remains supportive of her career. “After the accident, as terrible as everything was, it was so amazing to me how much community support we had,” she says, referencing community fundraising and just general encouragement and assistance from their lifelong hometown and neighbors. “We really do love this community.” FOR MORE INFORMATION: STOCKTON POLICE DEPARTMENT 22 E. STOCKTON NATIVE’S SIDE HUSTLE IS A FOODIE INSTAGRAM ACCOUNT BY NORA HESTON TARTE / D @DUDEWHERESMYTACOS Michael Patterson, 35, has an alter ego. The fulltime Comcast employee started a side gig as a foodie instagrammer under the name @dudewheresmytacos. On it he uncovers not just tacos but other delicious meals from San Joaquin County, the Bay Area, and beyond, bringing creative menu items and yummy street

food to people all over. “I eat a lot of delicious food,” Michael laughs. “When I started it wasn’t meant to be like a business or anything more than foodie adventures.” It didn’t take long, however, for Michael’s social media venture to monetize. In addition to paid content and social media consulting side-side jobs, he also offers food photography services to businesses and is starting to dabble in other types of photography. Mostly though, he just gets free meals. Credibility is at the forefront of his account. He makes it clear that even if he is paid he won’t promote a dish on his feed unless it’s “dude approved.” And if he does post a cool photo of something that isn’t as delectable as it sounds, he’ll let you know right there in the caption. So, what does the foodie master say you should be chowing down in San Joaquin County? His ultimate go-to meal is the deep-fried quesadilla at Arroyo’s Café. “The chicken one is okay but you’ve got

to get the beef one,” he suggests. “That’s my goto spot I’ll send anyone to.” His other suggestion? Eat your chips with gravy instead of salsa. True to his insta handle, Michael is also somewhat of a taco connoisseur. “Tacos are my favorite food,” he says. Michael loves to grub at food trucks around town including Tacos La Palmita—his personal favorite— which stays open until 1 AM and has “the best sauce.” Another favorite is Chimulita G.G., where the man himself suggests an enchilada taco with a cheese skirt. His next favorite food is hamburgers, and he’s not short on recommendations in that department. Chuck’s Hamburgers is “his spot”
for burgers and more, but he also gives praise to Flip’s, Port City Burgers, Market Tavern, and Cast Iron Trading Co. He even once downed a $100+ burger at Hell’s Kitchen in Las Vegas (there’s now a South Lake Tahoe location). When it comes to food, Michael used to get his recommendations from Yelp. Now he gets invitations to visit spots across California, but he also takes a lot of recommendations from his followers, even trying menu items he wouldn’t usually order. “It has brought some people together. There are two types of non-native
mosquitoes on the CDC’s radar this year, Aedes aegypti (the yellow fever
mosquito) and Aedes albopictus (the Asian tiger mosquito). Both mosquitoes can live and reproduce in California, however the prevalence of the yellow fever mosquito is much greater, especially in Northern California, and those who live in San Joaquin County should brush up on their knowledge of these pesky pests. WHAT TO KNOW: The yellow fever mosquito, like the Asian tiger mosquito, is a small black insect with white stripes on its back and legs. The stripes appear to create a harp pattern on its midbody and bands on its legs. One of the best ways to distinguish this mosquito from other types is by its daytime biting habit because most mosquitoes only bite at night. These bites typically occur on ankles and elbows. “The Aedes aegypti is very difficult to control. It glues individual

eggs to the sides of containers like flower pots and small sources of water around homes. Even a discarded bottle cap with water is enough for their development,” says Aaron Devencenzi, public information officer for SJC Mosquito & Vector Control District. “The eggs are resistant to drying out and can survive without water for many months in the egg form, until water covers them.” Keeping properties clean and disposing of containers that can hold a teaspoon of water or more can help. THE INVASION: Yellow fever mosquitoes were first found in Stockton in summer 2019. Resident complaints led SJC Mosquito to deploy

A POTENTIAL HEALTH THREAT: “Although we have Aedes aegypti in San Joaquin County, we have not found the presence of any virus in these mosquitoes,” Aaron says. That being said, these mosquitoes are of concern because of how invasive they are. In addition to being an annoyance, both the yellow fever mosquito and the Asian tiger mosquito have the ability to carry diseases such as Zika, dengue, chikungunya, yellow fever, and others.
Wear protective clothing, such as long- sleeved shirts and pants. Check and repair all window and door screens to keep mosquitoes out of your house. Minimize outdoor activities if mosquitoes are active. Call the District to report daytime biting mosquitoes or significant numbers of mosquitoes. With the warm weather upon us, everyone wants to get outside, bask in the sunshine, and soak up that Vitamin D! Although a glowing complexion is often perceived as a sign of good health, skin color obtained from the sun can actually speed up the effects of aging and increase your risk of developing skin cancer.
WHAT IS SKIN CANCER? Skin cancer is the #1 cancer diagnosis in the United States – it’s more common than breast, prostate, and lung cancers combined. There are three main types of skin cancer: • Basal cell carcinoma • Squamous cell carcinoma • Melanoma Basal cell and squamous cell carcinoma are less serious types, making up 95 percent of all skin cancers. Melanoma, is the most serious form of skin cancer and causes 75 percent of all skin cancer deaths. Each year, some 90,000 people are diagnosed with melanoma with numbers rapidly rising.

WHAT ARE THE SIGNS AND SYMPTOMS OF SKIN CANCER? The most common warning sign of skin cancer is a change on the skin, typically a new mole, change in an existing mole, or a new skin lesion. • Basal cell carcinoma may app- pear as a small, smooth, pearly, or waxy bump on the face, or neck, or as a flat, pink/red- or brown-colored lesion. • Squamous cell carcinoma can appear as a firm, red nod ule, or as a rough, scaly, flat lesion that may itch, bleed, and become crusty. • Melanoma usually appears as a pigmented patch or bump. It may resemble a normal mole, but usually has a more irregular appearance.
WHEN LOOKING FOR MELANOMA, THINK OF THE ABCDE RULE THAT TELLS YOU THE SIGNS TO WATCH FOR:
ASYMMETRY: The shape of one half doesn't match the other.
BORDER: Edges are ragged or blurred.
COLOR: Uneven shades of
brown, black, tan, red, white, or blue.
DIAMETER: A significant change in size (greater than 6 mm).
EVOLUTION: Changes in the way a mole or lesion looks or feels (itchy, bleeding, etc). TIPS FOR PREVENTION • Apply sunscreen with a sun protection factor (SPF) of 30 or greater 30 minutes before sun exposure and reapply every two to three hours. • Choose cosmetics that offer UV protection. • Wear sunglasses with total UV protection. • Avoid direct sun exposure as much as possible during peak UV radiation hours between 10-4 PM. • Perform skin self-exams regularly to become famil- iar with existing growths and to notice any changes or new growths.

DRIVER A driver is typically used by an experienced thrower to soar far distances, often as the first throw from a tee. It is characterized by its sharp, beveled edges. MID-RANGE This disc has a dull beveled edge and medium-sized rim width better for precise throws. They don’t typically travel as far as drivers so beginners often favor these discs even for faraway throws because they require less technique.

Disc golf is a hybrid of golf and frisbee with the objective of getting a disc into a target in as few throws as possible. Like golf, courses feature 9 or 18 holes, and discs are thrown from a starting “tee” to a finishing “hole.” The sport has a fairly large professional following with 53,366 registered players in the Professional Disc Golf Association (PDGA) as of 2019, and players often play in singles or doubles. Right now, we’re loving disc golf for one big reason: it’s easy to play while also following social distancing guidelines. Played on outdoor courses, people can engage without getting too close. Most players bring their own discs so they aren’t sharing a lot of equipment and aside from the starting point of the “tee,” you’re not likely to be clumped together in one

spot. The best part? Disc golf is hosted outside. And San Joaquin County has its share of courses. To play, disc golfers simply need to seek out a course and pay the fee to play. Most have a nominal amount posted that help fund the permanent play areas. In Lodi, Micke Grove Park offers an 18-hole course of moderate difficulty with lake obstacles and several trees. At Oak Grove Regional Park, an 18-hole course is also available and the only associated cost is for entrance to the SJ County park ($5-6 per car). Also, in Stockton, Swenson Park Golf Course boasts its own 18-hole course intertwined with the Magnolia Executive Course. And for those who are members, Eagal Lakes Resort boasts a nine-hole course on its property.
PUTTER These slow-flying discs are best reserved for short throws, especially those into the basket at the end of a “hole.” Some players use them when dodging obstacles such as trees on a course.

Hey, we miss you. And I bet you’ve missed us—and everyone else—too. While it’s been necessary to shelter in place and keep our distance for quite some time due to COVID-19, we’ve spent the whole “break” dreaming of the days we can start seeing people again. The orders, however, aren’t going to be lifted all at once, and we will need to practice some form of social distancing for the foreseeable future. But we’re positive we can do that while still enjoying, and supporting, our community. Check out our recommendations for getting out while still following guidelines put in place as we move toward normalcy. The key is zeroing in on outdoor spaces and keeping a little bit of distance from strangers. But it’s okay, we’ve got a plan to make it happen.

Summer is the perfect time to soak up some sun, and being outdoors is also one of the best ways to limit the possible spread of COVID-19. So, why not spend your first days out of isolation enjoying nature in San Joaquin County?
BREATH OF FRESH AIR
When the doors reopen at the 180-acre Oak Grove Park, it will become our summer amusement park. The park includes a 10-acre lake stocked with catfish and trout, an 18-hole disc golf course, horseshoe pits, picnic tables, and grills. The park’s two nature trails—a 1.5 mile nature hike among the grove trees and a ¼-mile accessible trail—offer more ways to explore outside of close quarters. Rent a boat from Delta Boating and get on the water. The Delta waterways from here to Sacramento are the perfect place to explore. Plus, there’s some really cool spots to stop for lunch along the banks, inside or out. Garlic Brothers in Stockton is an obvious favorite, serving up seafood and other fare on the wooden deck, as is Bob’s at the Marina if you’re after a casual meal between casts. If you have your own vessel to park, check out the Stockton Marina and the Joan Darrah Promenade.
4 PM Start with drinks at a local winery. There are many to choose from but we recommend a stop into Berghold Vineyards & Winery if you want to feel a bit fancy on your first romp back into social life. 5 PM At 5 PM it’s time to move on as the winery closes its doors. For dinner, treat yourself to a sit down meal—finally!—at Townehouse Restaurant at Wine & Roses. The indoor space is open, which means it’s easier to grab a table without bumping elbows, and the outdoor patio set with twinkly lights is decidedly romantic. 2505 W. Turner Rd., Lodi
Lodi Lake is a favorite for outdoor recreation. The lake itself is perfect for kayaking and SUP (stand up paddle boarding) made easy by rentals at Headwaters Kayak Shop & Boathouse. Plus, when small events get up and running again you’ll be able to tour the lake in a variety of themed events, including a full moon paddle, a sunset wildlife tour, starlight paddle, and more. We may be waiting awhile for our favorite sports to get up and running again—we’d love to be at the ballpark cheering on the Stockton Ports—but in the meantime we can pretend we’re in the big leagues with a trip to Big League Dreams in Manteca. Get a group together and hit the park, where you can take a swing in the batting cages or start your own tournament on one of the replica baseball fields that will make you feel like you’re playing at Fenway. 1077 Milo Candini Dr., Manteca
7 PM Walk Downtown Lodi and just marvel at being back outdoors with a buzz that was missing for quite some time. We may not be back to full-service just yet, but the sound of people laughing and smell of food wafting from nearby restaurants will certainly be a welcome change from the desolate streets we were experiencing just weeks ago. And if you feel so inclined, step into an open shop—the business will be appreciated.
Micke Grove Zoo is still planning to open its doors soon bringing families face-to-face with its over 170 cuddly creatures that have been quarantined themselves. The zoo also plans to host its summer camps in June and July. Outside of the zoo at Micke Grove Park, Wortley Lake and other park features including softball fields and water features are eagerly awaiting their chance to open. Our favorite? If you haven’t already been to Eagal Lakes Resort, now is the time to become a member. The 2,100-foot man-made lake was primed for sports use including water skiing, tubing, boating, fishing, swimming, kayaking, paddle boarding, and pedal boating. While navigating the lingering effects of social distancing, patios also help us be near others and support local businesses without putting ourselves, or others, at high risk of possible transmission. We’ve rounded up some of our favorite patios to grab a meal in San Joaquin County. Settled in Downtown Lodi, West Oak Nosh’s patio is a favorite. Order up German-inspired grub on the quaint front porch and wash it down with brews, tea, and specialty craft cocktails. 10 W. Speaking of seafood, when it comes to sushi, and otherwise Japanese cuisine, we can’t get enough of the fresh rolls, overflowing salads, and warm soups at Komachi. STEP BY STEP: STEP ONE is to plan your design. Mortar dries fast and once you stick something you might not be able to get it back up, so you’ll want to have a physical or mental drawing of the finished project before you get started. STEP TWO, gather your materials. Have everything nearby and easy to grab to prevent running to grab items while you create. STEP THREE, immerse the concrete stepping stone in water.

FOR MORE FUN: STEP FOUR, prepare the thin-set mortar according to package instructions. It should be the consistency of slightly runny peanut butter. STEP FIVE, using a notched trowel, spread the mortar onto the wet stone in sections. Because it dries fast, you’ll want to lay your design pieces one section at a time, pressing each one lightly into the mortar. You’ll need to spread about a ½-inch layer of mortar for the best results. Repeat step five until you’ve placed all of your pieces on the stone. Pro Tip: Leave space between pieces for grout.

STEP NINE, wet a sponge and clean excess grout from the stone. Rinse sponge as you work to carefully remove all of the extra grout. This will help the finished stone look clean and professionally-done. Pro Tip: If you accidentally remove too much grout, go back and replace it with more grout and repeat the steps above.

Video game play is common among children of all ages, especially teenage boys. In fact, a Pew Research study found that 97 percent of teenage boys play video games. Another study found most kids play for more than two hours per day and average 15 hours of video game play per week. So, is the video game obsession a problem? Well, it can be. “As the school nurse, disrupted sleep patterns are one of the first signs I see at school,” Crystal Stotts-Petzold MS, RN, PHN, at Venture Academy Schools in Stockton, says of excessive video game usage. “When students are not getting enough sleep, they are not able to come to school ready to learn.” As a result, grades may suffer because children are prioritizing video game play over homework, kids may withdraw from social situations, and both communication skills and behavior can be negatively affected. The key is striking a healthy balance between gaming and other interests.

Come for the beer, stay for the ambiance. By far a favorite spot in Blairsden is The Brewing Lair. It’s truly a one-of-a-kind place, offering up picnic tables for gathering and BBQs for communal use while you grab beers or complete tastings at the nearby bar. WHERE TO HIKE/BIKE Hit the trails at these great spots. Don’t forget Nakoma offers fat bikes for guests to rent! Plumas National Forest is 2,613 square miles with over a million acres of tree-covered mountains, alpine lakes, and streams. Where the Sierra Nevada, the Cascades, the Modoc Plateau, and the Great Basin meet, Lassen National Forest has many trails, including one that will take you to the top of Mt. Lassen. For all of your favorite activities, check out Plumas Eureka State Park for guided tours, picnic spots, and fishing. Bucks Lake offers over 20,000 acres alive with flora and fauna including photographyworthy plant life, trees, and landscape features. Lakes Basin Recreation Area includes Frazier Falls Trail, Round Lake Loop Trail, Long Lake Trail, Plumas Eureka State Park, Madora Lake Nature Walk, Little Jamison Creek, Eureka Peak Loop Trail, and the Frenchman Lake area. Start at the Plumas Eureka Ski Bowl parking lot for an intermediate trek to Eureka Lake. South of Graeagle off highway 89 on Gold Lake Road, the Lakes Basin Area offers winding trails that are intermediate to advanced in difficulty. Seven miles north of Portola, Lake Davis is a great spot to cast a line. Within the Lakes Basin Recreation Area, Gold Lake, Salmon Lake, Long Lake, and Sardine Lake are popular, just a few of the nearly 50 glacial lakes and streams in the area.

And when it comes to matching drinks and dishes like this, Habanero Hots is doing it well. “Many tequilas have different flavor characteristics and pair well with spicy food,” explains John DeNigris, owner of the Lodi Mexican restaurant nearing 40 years of continuous service in its Victor Road location. John keeps his bar stocked with a variety of tequilas—over 180 to be exact—and is constantly introducing new options to the menu including well-known brands like Patron and exclusives like the Habanero Hots tequila only available with them. Pairing the two together is somewhat of a specialty for John, and he’s dishing out his secrets on the perfect combos. “Burritos were originally made to be a convenient way to eat your lunch or dinner on the run so you could continue working, but Here at Habanero Hots we recommend that you slow down, grab a margarita, and enjoy your burrito covered with sauce and melted cheese,” John says. Expert Tip: Order yours grande if you’re feeling hungry, although we warn you, even the regular-sized burritos are large! The Southwest Chicken Chipotle Burrito is a customer favorite, loaded with spicy chipotle-flavored chicken, fire-roasted corn, and black beans before being topped with Mexican gravy, melted jack cheese, and cool sour cream to balance the spice. If you order this mouthwatering burrito, John recommends pairing it with a fresh-squeezed Margarita blanco, made with tequila blanco, fresh-squeezed lime, agave nectar, and Gran Gala orange liqueur, served on the rocks. The science behind this pairing is in the tequila; opting for a silver tequila offers a sweeter taste because it isn’t aged in oak barrels and pairs especially well with chicken. Not to mention, the sweet tequila offers balance for the spicy burrito. The Chili Colorado burrito is another menu favorite. This classic Mexican dish includes all of the staples of a good burrito—shredded beef, beans, and cheese—but it is then smothered in enchilada sauce and other toppings. For this one you can go a little heavy on the drink. John’s suggestion? Pair it with a boldly flavored tequila anejo old fashioned, made using tequila anejo,

muddled citrus, aged bitters, and agave nectar. For those who can’t choose between burritos on the Habanero Hots menu, the La Bomba Combo is for you. This dynamic burrito is one-half Chili Colorado and one-half Chicana, oven baked and topped with both ranchero sauce and green salsa. In addition to being big enough to share, it’s certainly an Instagram-worthy dish. When you order this over-the-top combination, it’s best to go a little simpler on the drink. John recommends pairing it with a Paloma—made with tequila, fresh grapefruit juice, lime, and soda water—to bring out the spicy, smoky flavor. Rounding out the menu of specialty burritos is the Chili Verde Burrito, covered with the telltale green salsa that everyone knows comes with some extra kick. To balance the spicy tomatillo chili sauce, you’ll want something refreshing like the El Tesoro reposado Margarita. And if you’re looking to go vege-
tarian, the bean and cheese burrito is a versatile option for customers. With this one, John says you really can’t go wrong because any cocktail will offer the flavors needed to elevate the meal. And to make it even better, if you’re looking to skip the alcohol you can certainly dive into any of the cocktails on Habanero Hots’ menu without the liquor, simply by asking for a mocktail version. Don’t forget to load up your plate with delectable and authentic sides. “We take the word fresh very seriously,” John says. San Joaquin County is home to some of the finest cherry producers in the world and we live right here where all the magic happens. The colorful fruit is in season now, and one simple bite of these sweet morsels will have you hooked for life. Lucky for us, cherries ripen just in time for all of our sunny spring activities. Yes, cherries are the perfect addition to traditional baked goods like coffee cakes, morning muffins, and dark chocolate brownies. Did you know they can also add depth to a hearty meal of pork tenderloin or sweet BBQ ribs? Cherries even play a crucial role in the crafting of two American classics: cherry pie and a Manhattan cocktail! Without even realizing it, cherries have become ubiquitous, interwoven into the very fabric of American cuisine.

Pork Tenderloin with Cherry Thyme Pan Sauce INGREDIENTS 1 tsp. coriander 2 pork tenderloins, about two pounds total 2 tbsp. olive oil 1 shallot, sliced thin 10 sprigs thyme 4 sprigs rosemary 1 ½ c. red wine 1 tbsp. balsamic vinegar 1 tbsp. sugar 1 10 oz. package frozen sweet cherries, thawed, halved 1 tbsp. unsalted butter Salt and pepper to taste
DIRECTIONS Preheat oven to 350 degrees. Combine coriander, kosher salt, and pepper in a bowl. Rub the pork loin with seasoning. Heat oil in a large skillet over medium-high heat. Add pork loins to the pan and sear for two minutes on each side until meat is browned. Place rosemary sprigs and five thyme sprigs into the bottom of a glass baking dish. Transfer the pork to a baking dish and bake for 10 minutes, or until the internal temperature reaches 145 degrees. Meanwhile, cook shallot and thyme in the skillet with drippings from the pork for about two minutes. Add wine, vinegar, and sugar. Bring the mixture to a simmer and cook, until the liquid is reduced by half. Stir in the cherries and ¾ tsp. salt and cook for one minute. Remove from heat, add butter, and swirl skillet to combine. Remove pork from the oven, slice, and serve with cherry sauce.
Dark Chocolate Cherry Cookies INGREDIENTS 1 ½ c. flour 1 c. granulated sugar 1 tbsp. dark brown sugar ½ tsp. cardamom ½ tsp. baking soda ½ tsp. salt 1 egg beaten ½ c. unsalted butter, melted ¼ c. milk 1 ¾ c. rolled oats 1 c. dark chocolate chips 1 c. fresh cherries, pitted, diced
DIRECTIONS Preheat the oven to 350 degrees and prepare baking sheets with parchment paper or silt pats. In a large bowl, whisk together the flour, sugars, cardamom, baking soda, and salt. Stir in the beaten egg, melted butter, milk, and rolled oats. Mix in chocolate chips and fold in cherries. Be careful not to overwork. Arrange by teaspoonfuls onto cookie sheets and bake about 10-12 minutes.

Cherry Cobbler INGREDIENTS 1 c. flour 2 c. sugar 2 tsp. baking powder ¾ c. milk ¼ lb. butter, melted in dish 4 c. cherries, pitted DIRECTIONS Melt the butter in a 9 x 13 baking dish. In a large bowl, combine four cups of cherries with one cup of sugar and let macerate. Meanwhile, in a medium-sized bowl, combine flour, one cup of sugar, baking powder, and milk. Pour milk mixture over the butter. Then, add cherries to the top and bake at 350 degrees for one hour.
