BURGER BLISS I won’t judge if you try to take a bite out of this month’s cover. I would, too. Another fun foodie project inspired a team-

up with one of our favorite local restaurants, and Chef Michael Midgley. After deciding on an excursion of all things charbroiled and packed between buns, I called the celebrity chef up to talk over-the-top burgers.    I’m not going to say I’m easy to please—but the San Joaquin Magazine Burger in all its glory definitely had me drooling. And not just as a culinary creation, but also as an aesthetic piece of art that would make you say, ‘Whoa! I need to try that.’ So, I had to put it on my cover!    Head to Midgely’s Public House in Lincoln Center for a much juicer bite than our cover can provide (my dog says the paper stock is a bit dry). Sink in to 8 ounces of Certified Angus Beef boasting melty American and Pepper Jack Cheese. Does Chef stop there? Oh, no. He decided to top that monster of a patty with 4 ounces of barrel-smoked prime rib. What’s next? Equally thick cuts of bacon and fried onion strings! And the never-failing, always necessary pickles, lettuce, and mayo. Add a local favorite, that lately, I’ve been putting on everything—Bruno’s peppers, for some extra tang, and dress it all up in horseradish cream—for a kick to senses. Hallelujah! The burger gods are pleased.    My Vegan managing editor is over here wondering what she’s going to eat for the next few months—because of course, our staff lunches must now involve the burger—and lucky for her, we’ve also included some local burger alternatives. So, the “The Other Meat” is for all you pescatarians and vegetarians out there, holding it down! Chomp in to some delicious black bean burger patties and join us on our journey.   Have we got your senses reeling, yet? Then you’re going to love what we have in store to drink it all down. Before you leave Midgley’s, don’t forget to sample the pairings that Laci and Michael Midgley have prepared for your pampered palates. Then, swing on by the remainder of our food section to tour the perfect Thanksgiving wines in All Bottled Up. Who knows? Beth Lambdin just radiates this intense energy. I felt it the moment she sat down for our interview—opting for the seat next to me, instead of the typical one across the table. She looked right into my eyes and asked questions about my life. “In high school, my plan was to either be the president, or go into acting,” she says of her initial life goals. But, God had something different in mind. At 17, Beth explains that He spoke to www.sanjoaquinmagazine.com

her during a leadership conference, and called her to work with young people.   “It defined my path,” she says. And who could argue, when witnessing the way she lives her life?   University of the Pacific brought Beth to Stockton—on an athletic scholarship—where she earned a degree in Recreational Leadership with an emphasis on Youth Agencies. At 21, she became the Youth Pastor at Lakeview Assembly, where she served for four years and met her husband, Dan. Together, they founded Jim Elliot Christian High School in Lodi, and today, head Inspire Ministries, a 501(c)(3) that provides

marriage, parenting and family counseling, and adoption and foster youth services.    Who better to lead such an organization than the parents of a diverse family of 10? “We are a good team,” she says of her husband, a former teacher who still speaks with students he mentored some 20 years ago. “We balance each other out really well—I am intense, and he’s funny [usually at my expense].”   When this dynamic duo decided to grow, a small family was out of the question. “If I’m going to have kids, I’m not just going to have two, because who wants to be normal?!” Beth cackles. And after years of growing and homeschooling her family, she decided to adopt. Beth and Dan perused foster-to-adopt, but didn’t qualify because they were a family of 6 in a three-bedroom house.    But in 2003, divine intervention brought an addition to the Lambdin family—a 17-year-old who was abandoned at 12. “She was so smart, she learned how to not be caught by the system,” Beth says of Tiffana, who ended up in her husband’s class at Jim Elliot, and today holds a Masters degree. After welcoming Tiffana into their home, Beth had her last birth child (and only son)—at 44 years old—and decided to give adoption another go. The Lambdin daughters held garage sales, bake sales, and teamed with the community to raise the $16,000 needed to adopt Christiana, a six-weekold baby from Tennessee. But, the family’s outreach didn’t stop there. 34

“God started bringing these aged-out foster kids [in their 20s] into our lives,” Beth says. “The stories I would hear… Every single one of them didn’t have a driver’s license, hadn’t graduated high school, and couldn’t read or write.”   These encounters brought issues with the foster system to the forefront of Beth’s mind, and in another seemingly serendipitous moment, Beth found herself seated next to Shauna Jacob, the Development Director of the county’s Child Abuse Prevention Council (CAPC). Knowingly unable to foster, Beth became involved in Court Appointed Special Advocates (CASA), where she today serves as the CASA Recruiter & Trainer for CAPC.   One thousand-six hundred children in the county call the foster system home. This is often a life full of changes, inconsistences, new places and new people. CASA’s serve not only as a voice for the child, but a constant who provides love and support. Empowered by the court, these volunteers connect with everyone in the child’s life, from parents and foster parents, to attorneys, social workers, and medical professionals. This is a lifechanging role for a child who feels forgotten—and in some cases—is.

Beth simultaneously began working with Safe Families, an organization that provides a safe home for the child—without entering a government system—so that the mother can focus on getting her life together. And on August 27, 2014, Beth received a call she’ll never forget—“We have a two year old here in our office, she needs a place to go within the hour.” Beth and Dan jumped in the car and headed to CAPC, where they met Megan and Rosie, who later became their ninth daughter, and very first granddaughter.   Rosie, the two-year-old who came to live with the Lambdins through the program, knew nothing, but a life on the streets. “She had horrible fits of rage,” Beth remembers. But, after about three months of stability, nourishment, and love—Rosie made serious advancements.   “Then I really began thinking about Megan… She was just a child herself,” Beth says. Megan’s upbringing included 57 Child Protective Service Reports, none of which resulted in removal from her destructive, abusive home. Once again, Beth was reminded of the faults of the system, and worked to instill life skills needed for success, while growing her family.    “That’s all these kids ever want, to be part of a family. To have love and support.” And through her current role as CASA Recruiter, Beth works to ensure that each child in the foster system has someone truly advocating for their rights, education, and health.    “My goal is to have a CASA for every single foster kid in the county, and I won’t stop until I do.”

WHAT YOUR NAILS CAN TELL YOU ABOUT YOUR HEALTH  BY JENNIFER MOULAISON Most of us think of a trip to our local nail salon when we think of ensuring our nails look their best. However, our body’s overall health can often times be reflected in our nails’ appearance and can offer insight into potential health concerns, if we know what to look for.   According to the Mayo Clinic, these are some of the indications and characteristics of nails not to be ignored: Nail pitting and Beau’s lines are types of small indentations in the nail. Nail pitting can occur in conjunction with psoriasis, or dry, scaly patches on the skin, as well as other connective tissue disorders, and even alopecia areata—a disease causing hair loss.   Beau’s lines are most often apparent when the cuticle has been interrupted by injury or serious illness, but could also be a sign of controlled diabetes, peripheral vascular disease, and even illnesses like Scarlet fever, mumps, or pneumonia. If none of these illnesses are potential, you might want to look into a possible zinc deficiency and supplement with vitamins. Nail clubbing doesn’t entail taking your fingernails out for a good time. It describes cases in which the nail bed widens and extends to the edges of the finger, almost curving around the entirety of the finger. This can be a result of low oxygen in the blood, as well as various types of lung disease, bowel disorders, liver disease, and AIDS. NAILS HEALTHY Equal to monitoring our nails’ health and appearance, practicing good nail hygiene is important in maintaining overall good health. According to the Center for Disease Control (CDC), nail hygiene plays an integral role in maintaining good general health and limiting exposure to germs and infection. The CDC recommends keeping nails short and well-groomed with sanitized manicure tools, and washing and scrubbing nails with soap and water, ensuring the soap reaches under the nail bed to remove dirt and germs. The CDC also recommends never cutting or trimming the cuticles, which are portions of live skin and act as vital barriers to infection in the nail beds. by nail ends that curve up on the corners. This can be a serious indicator of iron deficiencies like anemia, liver conditions, or, in more serious cases, heart disease and hyperthyroidism. Lifting and yellowed nails are surprisingly common but can sometimes indicate serious issues. Nails that lift and detach from the nail bed

altogether are most often due to injury or infection—but if you’re experiencing any nail lifting you’ll want to be conscious of potential issues like thyroid disease and psoriasis. Yellowed nails, which lack growth and have reduced cuticles, can be a sign of respiratory disease, or swelling of the hands and feet known as lymphedema.

WAR COMES HOME  BY JENNIFER MOULAISON

The struggles of war throughout history have been told from just about every angle and perspective. Arguably the most compelling perspective

is that of the soldiers’ and their families. The San Joaquin County Historical Museum in Micke Grove Regional Park is hosting a rare and unique exhibit, “War Comes Home,” exploring the joys and hardships of soldiers and their families spanning conflicts from the Civil War through modern times.    Featuring thirteen panels of historic letters, and contemporary letters and emails, the exhibit focuses primarily on the experiences of veterans and families during their transition from deployment back to their hometowns. Every major conflict is represented and explores emotions of grief, joy, doubt, and love. These panels are from the collection of the Center for American War Letters but the Museum will also be supplementing the exhibit with letters from its own collection from the Civil War through the Vietnam conflict.    A majority of these communications were written to Arthur Marquardt at the Lodi News Sentinel for his column, “Over the Morning Coffee.” In addition to Marquardt’s letter archive, the Museum’s exhibit also features letters from Corporal Clarence Tappan, who served the U.S. Army in France and Germany during World War I. Tappan’s communications offer chilling perspective on his experiences. One quote from his letters reads, “Perhaps I do not think of wounds or of seeing a soldier lying where he was struck dead as much as you would. I have seen hundreds of them.” 42

Taking in the exhibit, viewers will find letters are coordinated and divided into sections according to the theme of their content. Examples of the sections are: The War Experience: Perception vs. Reality; Far From Home: Wartime Separations; and Enduring Loss: The Costs of War.   Though the age of letters is apparent as conflicts move from hand-written letters to electronic communications, the sentiments and struggles in each letter remain consistent and relatable for soldiers serving throughout America’s history.    These rare communications are particularly relevant to the Central Valley community as San Joaquin County has had veterans from each conflict and has played important stateside roles with the airfield, port, and supply depots.    The San Joaquin County Historical Museum is proud to offer this unique experience to its patrons through their close partnership with the non-profit organization—Exhibit Envoy—who worked with the California State Library and California Humanities in order to make this graphic and in-depth experience told from the soldier’s perspective possible. “WAR COMES HOME” WILL BE ON DISPLAY

YOUNG STOCKTONIAN IGNITES HOPE  BY NORA HESTON TARTE / D

Once a foster youth, Xavier Mountain is now pursuing his Master of Social Work at University Southern California. Since attending Lincoln High School in Stockton, he went on to become an alumnus of University of the Pacific. His goal is to attend law school at an Ivy League college.   Though his maternal mother was addicted to drugs, and he experienced both physical and mental abuse while under the care of his adoptive family—which eventually resulted in his adoption papers being voided at 15 years of age and catapulting him into the foster care system—Xavier’s story is one of hope.   “I want everyone to know there is hope,” Xavier says. “I am an example of what you can be—if not more, if not better… I notice when I put my mind to something it happens.”   At 17 years old, after three years back in the foster care system, Xavier decided to take back control of his life. He says it required him waking up one morning and deciding not to be a product of his circumstances.   Shortly after, he was honored by his high school for his academic achievements. Although he wavered in his next few years, he managed to refocus and attended Delta College, before a scholarship from Mary Graham Children’s Foundation and a woman named Kerry Heckman—who Xavier now calls his mother—took him to Pacific, his dream school. “As I grew, I learned to let everything go.”   After receiving his bachelor’s in Sociology, Xavier applied to USC where he is currently

pursuing his Master of Social Work with a concentration in Policy. He wants to study policy in order to affect change in the foster care system and help more troubled youth find positive futures. He believes he’s in a unique position to affect change because he’s experienced the system. Most policy makers don’t know firsthand what it’s like going through the system as a foster youth.    “As a foster youth, even though you don’t like the system, the system is what raised you,” Xavier says.   Xavier is working with the John Burton Foundation in San Francisco to pass SB12, which would expand access to the Pell Grant for foster youth. Together with the foundation, he is writing letters to Governor Jerry Brown, working with lobbyists and state politicians, and signing petitions.   Xavier also wants to spread his positive attitude to others. He says in a time of constant bad news, hope is most important.   “I understand hope more than a lot of people because I didn’t give up,” Xavier says. “Every experience I had in my life was for a reason.”

“If you tell them that you want to honor them they’ll say they don’t deserve it, that they don’t want it, that they don’t need it,” explains Gail Belmont. “But—

as a surprise gesture—the quilt and all it represents brings recipients to tears. You’d be shocked to hear that many have never been thanked for their service, yet we hear it all the time.”    When Gail—of the 14th Women’s Army Corps Band, and founder of the nonprofit Quilts of Honor—stitched one of her very first quilts together, she’d no idea how much her efforts would come to mean to the many men and women who serve in our military. But a quilt is a thing of beauty, a showcasing of commitment and fortitude, security and understanding. An instant heirloom upon completion, it’s passed down from generation to generation, rich

in both color and pattern, with love sewn into every seam.    Quilts of Honor first became a nonprofit in April 2010, but its threads of influence began five years prior. Gail hoped to provide her fellow veterans with tangible evidence that their service had not gone unnoticed. And so, Gail worked alongside an organization to provide quilts to men and women who had served. “I decided to do the quilts because I played taps when I was in the army. I was a bugler,” says Gail. “At 18 years of age, it changed my life. It was a way for me to give back to my brothers and sisters who suffered.”    Today, Quilts of Honor has donated over 6,000 quilts and established seven chapters across the United States. But no matter how many they’ve bestowed upon veterans young and old across our nation, their work is never done. “We have a whole generation of men and women who are coming home.

And we pray Quilts of Honor will continue when we’re gone,” says Flora Brooks, a long-time quilter with the organization, and wife of late Vietnam veteran, Johnny Brooks.    It’s a simple, and yet incredibly complex token of thanks that the men and women behind Quilts of Honor wish to bestow upon those who’ve served, honoring their courage and years of duty. And it’s a gift not lost on a single one. “We hear, over and over, that no one has ever thanked them for their service,” explains Flora. “I’ve presented hundreds of quilts—many to Vietnam guys in their 60’s and early 70’s, and their mouth will quiver. Every year as I’m preparing our family’s Thanksgiving feast, my husband asks the rhetorical question “Can I help with anything?” He knows that the answer is in fact always “no”, because, I admit it—I’m a bit of a control freak. So, of course I’d take my first swing at Friendsgiving weeks before the appointed day, because—C’mon—you can’t waste a holiday on a practice run.


One month before

TIP #1:

Find a date that works for everyone. No easy task! I put together a rough outline for the night’s festivities, and invitations to send out to friends.   With today’s technology, you don’t have to spend money on printing. Apps like Evite allow you to send out electronic invites, but be prepared to follow up with guests who respond better to a formal invitation!   It is the host’s responsibility to organize this friendly potluck, so be smart about who you ask for what! As host, I had the honor of making the turkey, which leads to making the gravy, and the stuffing, too! If you plan to host this party before Thanksgiving, be sure to order your turkey ahead of time. The remaining comfort food must-haves can be delegated to friends. The easiest way? Have them bring an appetizer, potato, vegetable, and dessert dish.    A great piece of advice to remember is to always assign your MOST reliable friend to bring the appetizer. You know—the one that is never late to anything! And if someone has a coveted specialty for cranberry sauce, by all means, have them make it. Otherwise, the standard cranberry in a can will suffice—I promise! Once the dishes are decided and friends have RSVP’d, you are more than half way there.

Send out an email asking for any dietary restrictions. After guests respond, follow up with an email of planned dishes.

One Week Before

Create a bitchin’ playlist. Because music will be one of the last things on your mind the day of, set a phone alarm 10 minutes before start time to remind you to pump up the jams, or quietly start the concerto (depending on your group of friends).   Choose the dishes, glasses, napkins, and serving plates, and set the table early, with the exception of fresh flowers. You can refer to my checklist for complete tablescape needs.    Consider creating personalized place card holders for a next-level table design. Pick up a few locally grown pumpkins, and start crafting these now! And of course, finalize your grocery list.

Remind everyone to bring a bottle of wine!

Day Before ONE

Prep till you can’t. This included chopping apples, oranges, potatoes, and onions into quarters. This essential part of my recipe keeps the turkey moist and infuses flavors throughout the cooking process! You can also prep the stuffing by chopping celery and onions and storing them in a Tupperware container for the night.    Start cracking on the sangria, because it’s always tastier with time. Place it in an airtight beverage dispenser overnight—this allows the juices from the oranges, apples, wine, and brandy to macerate.

I opened the bottles of wine for the dinner table to allow them time to breathe, and added the club soda to the Festive Fall Sangria. Be sure to fill your ice bucket and do a quick wipe down of the counter tops.

As my guests began to knock at the door, I knew we’d have a blast sharing in an evening of gratitude and festive libations. When the turkey was ready, I was sure to let it set for around thirty minutes. This allows the meat to rest and keeps the juices inside. I rushed, and I really do mean rushed, to finish the gravy by using the drippings from the turkey pan to make a simple rue with flour. I let the mixture bubble for a couple of minutes before adding enough chicken stock (or milk). It was then time to season the gravy with salt and pepper, and pour it into a gravy boat.   I tossed the salad, took the stuffing out of the oven, and transferred the mashed potatoes from the crock pot (warmer) to a serving dish. Ask one of your friends to fill the water glasses on the table.

Finally, I invited my mingling dinner guests to take a seat and welcomed them to join me for our shared Friendsgiving Feast.   Before everyone digs in, be sure to offer a toast. I said something to the effect of being grateful for years of friendships and closed by offering a thought that speaks to my entire philosophy—“May our lives be full of both thanks and giving.”    It was then time to dig in!

TIP #8: Don’t forget to make a toast!

For the host, this is by far the most rewarding part of Friendsgiving. You get to sit back and relax with those that mean the most to you, devour the best in comfort food, and imbibe with some wine, or maybe even some whisky. Oh, and don’t forget the dessert.   My one rule for Friendsgiving is that there must be pie. Luckily, our friend Madelyn has mad baking skills and made a homemade heaping apple pie of goodness. I’ve never tasted an apple pie as good as this one. I was immediately reminded how grateful I am to be sharing this dinner with such great friends.

Looking to throw an era-themed wedding? Whether it’s a prohibition period affair complete with a speakeasy atmosphere or a big-band party reminiscent of the 40s, the success is in the details. You can’t skimp on an era-based wedding. To truly transport guests back in time, check out our tips for throwing the best time period bashes.

COMMIT

The theme of the day is commitment, and when it comes to throwing a wedding rooted in a specific time period, that’s key for party planning, too. If you want to convey the atmosphere and mood of another time and place, say the 1920s for a swinging good time, set the stage for the occasion. Stock a photo booth with headpieces and feather boas, require a password for drinks at the bar, play timely music, and give guests a heads up on the dress code. When the details match the theme, it takes the affair from gauche to grand.

EMBRACE THE VINTAGE

If you’re looking to the past for wedding day inspiration, be authentic. Browse garage sales or Etsy.com to find vintage champagne glasses that match your theme, ask your grandmother for lace doilies to decorate the reception, and purchase a gown that either nods to the era or is actually from the moment in time you are looking to recreate.

HIRE THE RIGHT PHOTOGRAPHER

When booking your photographer, find someone with experience in era-themed events. Photographers can infuse the style of yesteryear into your wedding photos if properly trained. It’s more than adding a Nashville filter to your photos. Even if you’ve opted for more modern dress, pick up some accessories to use during the photos, from detachable cap sleeves to draped pearl necklaces to hats that mark the period in time. You can even bring in a vintage car as the backdrop.

Don’t get caught failing history. Do your research ahead of time to ensure you aren’t wearing a 1990s style dress to a 1980s-themed affair. As the bride, you’ll stick out in a way you really don’t want to, especially if guests are dressed the part.

The restaurant is 800-feet above the action, and every 80 minutes it completes a full 360 degree rotation.   A little bit lower—at 56 floors—sits Alize in the Palms Casino Resort (4321 W. Flamingo Rd.) It’s not nearly as high at the Stratosphere’s peak, but it does offer delicate French cuisine and gorgeous views for diners to drool over, frequently topping lists of best dinner views in the city. Las Vegas Blvd., serving up high-end pastas, pizzas, and more) sits diners close enough to practically reach out and touch the water.

There are two other options for those who love to zip and zoom—one horizontal and one vertical. For those who want to visit both the of the Rio’s towers, there’s a more creative way to travel in between (3700 W. Flamingo Rd.) Voodoo Zipline is a 490-foot zip ride that allows two riders to go together. It’s a littler different than the Fremont experience—but still worth the trip! To hit up the third and final zip line experience, you’ll need to head back to the Stratosphere where, let’s face it, a good portion of these high stakes activities exist. Skyjump advertises itself as a “controlled free fall,” where riders rush down 108-stories at speeds up to 40 mph.

VEGAS OBSERVATION DECKS The Eiffel Tower Experience in Las Vegas lets guests tour the hotel, even if they aren’t staying there. Head up 46-stories in glass elevators to enjoy the excitement and beauty of The Eiffel Tower— well, sort of. This half-size replica proffers 360-degree views of the city while tour guides point out notable attractions during the tour.    The Stratosphere Observation Deck offers a similar experience with a much higher end-point. Zip lining is often associated with tree canopies in forested areas, but in Las Vegas, experts bring the thrill of soaring through the air on a string to the city streets. Ever noticed that 12-story slot machine in the middle of Vegas’ original strip on Fremont Street? Well, that’s where riders are invited to zip line under the infamous canopy at speeds up to 35 mph. The zip and zoom lines are offered in two levels. One ride, Slotzilla, takes flyers 77 feet up and 850 feet across. To learn your concerns, have a blood test done every six months to identify vitamins in which you may be deficient.   It is important to inform your doctor about other drugs you are consuming, including juices, herbal supplements, homeopathic remedies, and over-the-counter medicines—because many substances cause interactions with prescription drugs. For example, ginger and turmeric are blood thinners. So, it is dangerous to take them and anticoagulants like warfarin 136

And it was that connection to the land that drove Dino and Ron to the everevolving wine industry.    “Abundance started out as a partnership in Sonoma, California,” says Anisa Keyser, General Manager of Abundance Vineyards. “After several years, Dino and Ron decided to buy out the partnership, and move it to Lodi, where they originated from. BEHIND theKNIFE: CHEF IAN BENS WELCOME TO A NEW CHEF’S SERIES SPOTLIGHTING OUR REGION’S MEN AND WOMEN BEHIND THE KNIFE.

If it’s been awhile since your last dinner at Rosewood Bar & Grill, now is the time to visit. With moves to elevate Lodi Wine Country’s cuisine, the community is buzzing as Rosewood welcomes a new, incredibly talented chef—Ian Bens.   With a resume boasting roles at famed establishments like The Claremont in Berkley, Banff Springs Hotel, and the Fairmont Georgetown in Washington D.C.—one may wonder what draws a chef of this caliber to San Joaquin. A fleeting bounty of regional produce at your fingertips, of course. “I purposely came to Lodi for access to local farmers, ranchers, and vintners of this region,” Ian explains. “The quality of our region’s produce is exhilarating, and gives me the energy to be the best chef I possibly can.”    Since joining the Rosewood team this May, Chef Bens has cultivated 152

strong relationships with local famers to fill Rosewood’s coffers with amazing products. The result? A plethora of fresh dishes fueled by local produce from Golden Bear Ranches, R and G Farms, and others.    A recent discovery and partnership with Nakagawa Ranch—a local Wagyu Beef producer from Valley Springs—inspired Chef to excitedly add a home-style meatloaf to the menu. “The ranch tends to no more than 40 cattle at a time,” he explains. “And I hope to add a Kobe Burger to the menu soon.”    While Chef Bens was formally trained by both French and German chefs, he prides himself on pulling from a multitude of culinary influences to bring a true farm-to-fork experience to Lodi. Chefs Albert Adrià and René Redzepi, both of Denmark, influenced Bens to source local products and use them in a meaningful way. Upon his arrival in California, Chef Alice Waters also played a significant role in

encouraging him to build relationships with local farmers, fisherman—and the value of hyper-local food sourcing.   Admittedly, Chef’s true passion is in fermentology. “For years, I watched pounds of local produce go to waste because everything ripened at the same time,” Bens explains. So, he began preserving the produce through a simple process using salt, pepper, and time (patience), AKA, fermentation. Several of Rosewood’s dishes utilize different elements of fermentation, allowing diners to feast on Pulled Pork with a Cherry Conserva, available at the peak of cherry season. Muddle apple and scotch in the bottom of a glass. Pour the remaining ingredients into the apple mixture and shake. Pour over an ice-filled bucket glass. Garnish with three apple cubes on a bamboo toothpick.

Make your own cinnamon simple syrup. Combine equal parts water and sugar until it reaches a boiling point. Add the ground cinnamon and simmer for a couple of minutes.

Get excited folks! Pomegranate season is here in the San Joaquin Valley, and their seeds are synonymous with the upcoming holiday season. Because, frankly, it’s hard to resist the ruby-red, perfectly sweet and tart crunch of pomegranate seeds as an addition to festive fall dishes. A single pomegranate can contain 400 to 600 juicy seeds, and provide plenty of uses for both home and professional chefs. The pomegranate arils—commonly referred to as seeds—pack a punch of health benefits. Loaded with fiber, the seeds are an excellent source of vitamin C, vitamin K, and potassium.    Vitamin C helps with immune system function, wound healing, healthy gums, manufacturing of collagen, and the production of elastin. Vitamin K is important for maintaining strong, healthy bones as well as facilitating proper blood clotting.    The crunchy treat is also high in phytochemicals that promote heart health and help prevent cancer. Boneless lamb shoulder, trimmed and cut into 1 inch cubes 1 Medium onion • 3 Garlic cloves 2 tbsp. Cilantro leaves, chopped 1 tbsp. Mint leaves, chopped 2 tbsp. Pomegranate arils DIRECTIONS:

Combine broth and pomegranate juice in a large heavy pot, Dutch oven or tagine. Whisk in coriander, cumin, paprika, cinnamon, ginger, salt and pepper. Add lamb, onion and garlic, toss to coat and gently simmer over low to medium heat while covered for one and half hours. Uncover and increase heat to medium and continue to cook until juices are thickened about 15 minutes. Transfer lamb mixture along with juices to a serving dish. Around here, we love to celebrate all things food! And in celebration of National French Toast Day on November 28th, we thought we’d share some fun facts about a nostalgic breakfast dish whose origins date back to the fourth century.    French Toast can be traced to Ancient Roman times when a version referred to as Le Pain a la Romaine or Roman Bread, was mentioned in a collection of recipes by Apicius. The French adapted its own version of this recipe and called it Pain Perdu, still available on menus throughout France.   Despite its multiple names throughout history, French 160

toast has always included a few key ingredients: eggs, dayold bread, and cream or milk. Some folks like to add cinnamon, but most would agree the dish requires a sprinkling of powdered sugar and a healthy dose of maple syrup.    So on National French Toast Day you have two options: make your own French toast at home or better yet, head to Market Tavern, Chucks Hamburgers, or Avenue Grill for their version of America’s favorite breakfast dish! While you are at it, invite some friends to join in on the fun, order some mimosas and raise your glass to National French Toast Day.
