As a certified personal trainer with the National Academy of Sports Medicine (NASM), Marnie’s passion for health and adventure collided when she received her first aerial gym as a gift from a friend eight years ago. “I will do almost anything to avoid the gym’s weight room. Not that I was looking to become a body builder, but I understand that resistance training is key,” smiles Marnie. Avoiding the weight room became easier as Marnie embraced her aerial gym. In 2009/2010, Marnie was ranked in the top 3 percent in her age bracket of triathletes in the country. Slowly Marnie’s interest and passion in aerial fitness became her main focus. To most of us, a 100-mile bike ride on a Sunday morning might seem like a daunting task. For Gilbert residents Mary Knott and Dan Beaver, it’s just a warmup. Upon moving to Arizona in 2005, these Midwestern marathon runners caught their first glimpse of what would become their new lifestyle. “That was the first year that Tempe hosted Ironman Arizona,” Knott recalls. “I was racing a half marathon in St. Louis that weekend, but Dan went to Tempe Town Lake to spectate and was inspired. That year we joined a master’s swim class (Dan didn’t know how to swim), and when our flight landed in Sky Harbor after the Chicago Marathon in October, we drove to Landis and bought our bikes. We raced our first triathlon two weeks later and enjoyed every second.” It wasn’t until almost two years later, however, that the couple took things to the next level with their first Ironman triathlon – a 2.4-mile swim and 112-mile bike ride followed by a full marathon, 26.2 miles. “We made sure that we had enough time to build a base, gain knowledge and skills, and were physically and mentally prepared for the race,” Knott explains. “Our patience paid off and we were rewarded with a great first race and a lifelong passion!” While both Knott, 37, and Beaver, 45, work full time jobs, they are somehow able to fit in an astonishing amount of training time each week. “Our training involves a lot of swimming (12,000-15,000 yards per week), biking (150-250 miles per week) and running (30-50 miles per week),” Knott says. “We also regularly strength train one to two hours per week, which is important for injury prevention.” Training for the couple also involves maintaining a

healthy diet that includes organic fruits and vegetables, lean meats, and healthy grains, all consumed in moderation. “We get a CSA share of vegetables from Desert Roots Farm every week,” Knott mentions, “so our meals will be based on what we get from them – it changes weekly and by season.” Today, the pair race on average 12-15 times per year, which includes running races (marathon, half marathon, trail races, 5k) and triathlons. While they typically limit themselves to one or two Ironman events, this year Knott will participate in four. To date, her fastest time is 10 hours, 54 minutes, 30 seconds – just one hour slower than Beavers’ best performance. While Knott admits the Ironman isn’t for everyone, she believes triathlons can be. “You don’t have to spend 10 hours a week on the bike to do a sprint triathlon [0.465 mile swim, 12.5 mile bike, 3.1 mile run] and enjoy the health benefits and camaraderie of the sport,” she declares.

“A lot of training and organization and effort goes into planning one of these,” says Scott, who mentions the event takes a good year to plan, with only a week break in between the end of one festival before planning for the next one begins. No, we’re not talking about seeing the latest Hollywood blockbuster, it’s edutainment at this month’s American Heritage Festival, taking place Nov. 22-24 at Schnepf Farms in Queen Creek. Now in its 11th year, the American Heritage Festival is the largest living history event west of the Mississippi. If you’ve never attended an event like this before, you can expect a completely immersive experience, like stepping into a time machine that allows you to transcend various time periods throughout American history. The American Revolution, Pioneers, 30

There’s just a lot of great things for anyone interested in a creative interaction centered around history.” About 250-300 men, women and children come together to play these living historical characters at the American Heritage Festival.

Dream big. Those are two words that are one thing to say, and another to put into action. But the Girls Rule Foundation, a local 501c(3), is helping young girls learn the tools they need to create bright futures and achieve their goals. The Girls Rule Foundation was founded in 2008, the fruition of four Valley business women. After having met through a similar program put on by the Girl Scouts, the four women quickly became friends. And when the program went away, they saw the void in the community and decided to fill the gap themselves. The Girls Rule Foundation was born. “All of us had passions for girls, to empower and educate and inspire and make a difference for girls,” explains co-founder and Chandler resident, Dena Patton. The organization is for girls ages 12-18 of all walks of life. They conduct workshops to help girls with their leadership skills, building self-confidence, goal setting and ultimately, providing the tools, resources and education that will be necessary for them to achieve their dreams. The cornerstone of the foundation is the Teen & Women’s Annual Summit Luncheon featuring inspirational speakers, awards, activities, shopping and workshops. “It’s a fun interruption in their lives” Patton says. “It’s a day that’s all about them and all about their dreams. We get them in the conversation of who they are in the world and what they want in the future; we get them communicating what their dreams are. Girls don’t just sit around talking about their dreams so it’s a real powerful conversation about their dreams, their future, what they want to be.” The Girls Rule Foundation also emphasizes the importance of attending with an adult, female mentor. This can be a mother, aunt, older sister, grandmother or anyone in the girl’s life that can be supportive once a plan is outlined. “We give them really tangible skills,” Patton says. “If they say they want to be a vet they are going to walk away with the steps Dena Patton, Co-Founder they need in the next two years to become a vet. A lot of people don’t realize they need to take steps to their dreams and their goals today. You don’t wait until 18 or 19, you do it now.” 32

But it’s also a place for exploring, too, targeting both girls who know what they want to do with their lives and those who are still unsure. This year’s summit featured a photo booth and a morning of shopping to welcome the girls into the event, in addition to the speakers and workshops. “We incorporate the fun but also incorporate life-changing tangible tools and education for getting them to their next step and bright future,” Patton says.

Walk outside. Inhale a big deep breath of fresh air. Take in all of your surroundings. Say hi to a passer by. Notice something? You aren’t dripping in sweat are you? This is the reason we live in Arizona. Fall is officially here. The next several months are the best time of year to enjoy the outdoors and appreciate the beautiful surroundings the Valley has to offer. But guess what…you can’t do it from inside. It’s time to lace up your walking or hiking shoes and go get a healthy dose of vitamin D. That’s right, the sun’s healthy rays provide your body with much needed benefits such as sufficient nutrient absorption, bone strength, regulated blood pressure, and disease prevention. As little as 10 minutes a day in direct sunlight does a body good! Now that your shoes are laced and you are outside enjoying the beautiful weather, take a look around. There is so much to do. Beautiful parks sit throughout neighborhoods and on different street corners waiting for visitors. If you have an animal, the dog parks in the East Valley are some of the coolest places to go, and not just for your dog. Many people flood to these parks during this time of year to allow their pets the opportunity to get out and run 36
but also for themselves to get out and network and socialize. Dog parks provide the perfect opportunity for you and your four-legged friends to increase your heart rates, get some of that good vitamin D, and to enjoy Mother Nature. If you are looking for a more challenging adventure today, let your eyes drift about the skyline and notice what you see in the distance. No matter what part of the Valley you live in, there are multiple mountain peaks all around you. Where there are peaks, there are hiking trails! Unless you were one of the bold ones still hiking in the extreme temperatures or super early in the morning, chances are you haven’t been on a local trail since April or May. Guess what…now is your time to get back out there! Hiking is an excellent exercise option this time of year because you can increase leg strength and endurance, improve your cardiovascular condition, and challenge yourself across different terrains. Depending upon which mountain you visit, trails range from easy to moderate to vigorous climbs. Make sure you bring your water bottle, comfortable hiking shoes, and stay on the path.

New kid on the block Barrelhouse bills itself as a neighborhood “from scratch” kitchen, focusing as much on its bar menu as it does on its dinner menu. But this new restaurant deserves destination status, and its desserts are worth prioritizing. The Lemon-Lime Napoleon with Raspberry Coulis is a kicky take on the French classic. Barrelhouse’s version has a few things in common with its Francophile ancestor: it is a stacked puff pastry sweet with a custard-like filling. But this is where tradition ends and zest begins. The custard zings with citrus and it’s a great foil to the flaky, pastry triangles. The raspberry coulis is brilliantly tart, matching the pucker of the zesty custard while contrasting its silky texture. Tiramisu means “pick me up”, and what better way to kick off your evening than with this espresso-soaked treat? Italian biscuits called savoiardi are dipped in espresso and layered with mascarpone cheese, coffee liqueur and finished with fine cocoa. You can see why this dessert would give you a lift. Although there is much controversy surrounding the origin of this Italian sweet, there is no question that Brio’s version is smooth and creamy, with just the right amount of liqueur per tasty bite after bite. It’s a pleasant surprise when a sushi restaurant rolls out a tasty sweet course, and Otaku’s offering is a delightful, whimsical version of a cheesecake dish. Its straightforward name, Strawberry Cheesecake Roll, does little to advance the idea of its far-out flavor and the crazy combination of textures that lie in store. Thinlysliced New York Cheesecake is paired with slivers of strawberries, wrapped in rice paper and then flash fried for a crackling, crispy crunch. The roll is then portioned, dolloped with whipped cream, and drizzled with vanilla and strawberry sauces. ADOPTION According to Margaret Soberg from Christian Family Care Adoption Agency, almost 15,000 children are in foster care in Arizona alone. Sadly, some of these children, even babies, are being placed in group homes and shelters because there are not enough families licensed to take them. Numbers can seem overwhelming, but they become almost too much to bear when you consider that each number represents a real living, breathing child. Consider the difference that can be made in the life of one child: an energetic toddler who could swing all day, if only he had a safe place to play; a sweet girl who yearns to dance and dreams of baking cookies with her mom; a little boy who wishes to play ball or fly a kite; the young woman who needs a father to teach her how to stand up for herself; a teenage boy who wants to ask a date to prom but hasn’t been taught how to properly treat a young lady. The joy that comes with experiencing life though the eyes of a child who may not have had a chance in life is immeasurable.
Adoption means committing to loving and caring for a child as if they were born into your family. When everything is finalized, the adopted child is given a lifelong family, a new home, a new birth certificate, and a new future. Family isn’t always a biological connection. Family can also mean choosing to love someone. Adopting, whether internationally or domestically, gives new life to a child. International or private adoption can be quite costly – upwards of $30,00040,000 including the home study, attorney fees and travel expenses. Through the foster care system, however, adoption can cost close to nothing. Contrary to popular belief, you don’t have to be part of a young, married couple to adopt or foster. A single parent can also provide a loving, stable home. In 2012, the number of children adopted by a single parent was close to 30 percent. And the number of “non-traditional” families is gradually increasing as well. In addition, approximately one in four adopted children lives happily with an adoptive parent 55 years or older. Many retirees have found great joy in mentoring, fostering, or adopting instead of joining social groups. Rather, their new social circles may include other families that foster or adopt.
FOSTERING
Fostering means giving loving, stable care to a child whose parents (or guardians) are no longer able to ensure their well-being. Typically, the case plan is to reunite the birth family, if possible. If it becomes evident that reunification cannot take place, the child may become available for adoption. In that case, many foster parents choose to adopt, as they are already emotionally invested and have come to love the child. To be licensed to foster, one must attend 30+ hours of training.

On average, it takes about six months to complete the training, interviews, and home study required to be licensed to foster or adopt. Too many precious children sit in foster or group homes long-term, awaiting lifelong families without the support of the community. These are children who have lost everything familiar to them – their birth parents, siblings, friends, neighbors, and their homes. Many are whisked away to safety by someone they have never met, often without their favorite toy, baby blanket or pet. The fortunate few have a moment to throw a few clothing or personal items into a trash bag. Although their birth homes may not be safe or healthy, it’s all they have ever known. Sadly, they have been robbed of their sense of belonging, self-worth, joy, hope, and their dreams. The longer these children wait, the more uncertain their lives become. Some are juggled between multiple foster homes. Some – around 27,000 each year – age out of the foster care system never having known a real family. Without direction, many will end up homeless, become victims of human trafficking or end up in prison. Those who have taken in children by either fostering or through adoption agree that there is tremendous joy in raising these kids, whether it is for just a season or their entire childhood. The rewards come in smiles, laughter, relationships, and seeing these kids overcome tremendous obstacles. It is truly a gift to give a child new hope, but the gift is returned tenfold to the giver. In honor of National Adoption Month, consider one thing YOU can do to make a difference in the life of a child. You might investigate fostering, adoption or serving a child or family in need. An incredible story of love is found with one Gilbert family. Rick and Ann were a young couple with adoption in their hearts, long before knowing that having a biological child would be difficult for them. They had longed to be parents and prayed for a baby for years. After being married for 7 years, Ann was approached by a friend about a teenage girl who was pregnant. The young teen reluctantly knew the best choice was to give the baby up for adoption. Rick and Ann met the birthmother and spent time getting to know each other. At their second meeting, the birthmother asked if they would like to be the parents of a baby boy. Ann explaines, “No words can truly describe how honored and overjoyed we were. Rick leapt across the table to hug the birthmother! That day we figuratively “became 37 weeks pregnant.” They were even able to listen to the baby’s heartbeat. Without delay, a nursery was prepared. Gifts were showered upon their family by loved ones. Twelve days after learning they would be parents, they were headed to the hospital to meet their precious babe. The birthmother graciously allowed them to be in the delivery room. The couple agreed, “It was the most amazing thing ever!” Ann placed the blue-eyed, dark haired, 8 ½ lb chubby-cheeked infant on the birthmother’s stomach. Rick was honored to cut the umbilical cord. The couple was overwhelmed by emotion and instantly fell madly in love, holding Brock for the first time. Before taking their little one home from the hospital, Rick and Ann prayed over their son and his birthmother. They thanked God for the enormous gift of a child and they prayed for the birthmother – for healing, for peace, and for confirmation of her choice. Five months later, on National Adoption Day 2006, Brock’s adoption was finalized. When asked if they love Brock just like a biological child, the answer was a resounding, “Yes, exactly!” How do they know this? Rick and Ann were surprisingly able to conceive two children after adopting Brock. Claire was born in 2010 and Colt was born in 2012. Brock is an amazing big brother and he is just as much “their own” as are their biological children. They say that Brock is their constant reminder that God is faithful. He is a smart, funny boy who loves Legos, reading, swimming, sports, and video games. In addition to gaining a son through adoption, Rick and Ann have welcomed the birthmother into their family. While intentionally seeking what was best for Brock, everyone has benefited. She has celebrated birthdays, holidays, and family vacations as a member of their family. They have had the privilege of watching her grow up, graduate from college and even attended her wedding. They love each other just like family. Rick and Ann believe that they were graced with the greatest, most selfless gift someone could give and they are eternally grateful.

NATHAN & LORI | QUEEN CREEK, AZ “You may not have my eyes or smile, but from that very first moment, you had my heart.”
Many people think they could never adopt because they don’t have enough patience. Lori and Nathan have been married almost 30 years and have been parents for more than 27 of them. When told that they must be naturally patient parents, Lori laughs, “Patience comes with time, practice and age. We have been practicing for a very long time, so we have become better and more patient parents. We definitely didn’t start off this way.” After meeting on their first day of college at Azusa Pacific University, they both earned degrees in social work. Immediately, they put their efforts into working with underprivileged youth, mentally ill teens and the disabled. At the young married age of 24, they each attained a foster care license and genuinely found strength, passion, purpose and oneness in caring for the 56
VALLEY LIFESTYLES MAGAZINE | NOVEMBER 2013
developmentally disabled. Even while dating, the couple had talked about adoption. Nathan had two adopted aunts and Lori’s family did foster care. Today, Nathan and Lori have 10 children – four of whom were adopted – ranging from ages nine to 30. In order of age, they are Samuel, Elizabeth, Lamar, Luke, David, Elijah, Faith, Jeremiah, Hope and Grace, and each brings their own character and personality to the family. They have also fostered 15 children over the years, and what’s even more admirable is many of these children have special needs (spina bifida, Down syndrome, seizures, brain damage, apraxia and cerebral palsy). Their family has endured multiple hospital stays, countless doctor appointments, weekly therapies and life-threatening surgeries (two open heart,
six urological, 10+ neurological, 20 orthopedic, etc.). According to Lori, “We have figured out how to enjoy our children, just the way God gave them to us.” Literally pouring themselves into their family every day, Nathan and Lori take their parenting job very seriously. Consistent routines bring harmony to their home. Remarkably, they are still fostering and are open to more adoption; especially if they are presented with what they believe is a wonderful gift – the honor of adopting special needs kiddos. When asked why they do it, Lori replied, “All of these kids deserve a family. People go their entire lives not knowing what their purpose is, not knowing what they are good at. We found it. This is something we really enjoy and we are pretty good at it.” Challenges encourage their children to find their uniqueness. Each one is proud of their large, blended family, despite the sacrifices that must be made in a large family that includes members with disabilities. In addition to the many doctor and therapy appointments, they busy themselves with family trips, visits with friends, school, wheelchair races, piano lessons, choir, church activities, Special Olympics swim competitions, karate and archery tournaments. Three of their adult children have gone on to college and have made their marks on the world – from teaching English in South Korea to working with disabled and at-risk youth to solving engineering problems. As one can see, compassion is a learned trait; a fiery torch that is handed down from one generation to the next. There is no doubt that each one of these children will strive to make a difference as their siblings joyfully root them on, and their parents passionately pave the way with enthusiasm, dedication and above all, love.

opportunity pass her by to tell people how much God loves them. She and Sophie (8) are inseparable, just like typical sisters. Karina’s big sister Micah (15) does her hair and helps her pick out clothes. Karina is her brother’s biggest fan. She loves watching Carter (18) play basketball and enjoys playing Wii with him. Walks with Mom, Dad and the family dog, Judah, are also a favorite. Terrance and Donna agree that the adoption experience has strengthened their marriage. They find themselves parenting more intentionally and consistently, resulting in better communication and oneness. Busy parents of three, Terrance and Donna never intended to adopt. Their lives were filled with children’s sports, coaching, activities, school, and work. On occasion, they would mention the idea of adoption. That’s as far as the idea was ever carried. Until one day the process naturally began. For years, they were friends with a family at church who lovingly fostered a sweet little girl, Karina. In 2010, it became apparent that Karina would need a “forever family”. Seeing this up close and personal was heart-wrenching. A few days later, a serious Terrance approached Donna, “I just wish that we could take her.” Without question, they both agreed, “Why can’t we?” They confidentially began seeking information on how to legally make Karina their daughter. During the transition of bringing Karina into their family, they spent weekends together. One day, 58

Karina and her soon-to-be sister, Sophie were playing merrily as usual. Donna was caught off-guard when Karina timidly asked, “Do you think it would be okay if I called you Mom, and Mr. Terrance, Dad, and Carter, Micah, and Sophie my brother and sisters? It would just be for fun, to pretend that you’re my real family.” Donna was covered in goose bumps and knew they were meant to do this. On National Adoption Day 2011, less than one year later, their family of 5 became 6, amidst thousands celebrating adoptions at a Maricopa County courthouse. That day, over 330 children were legally placed with their forever families. There were balloons, bounce houses, bubbles, clowns and superheroes, all to make the day special for some very special kids. Karina is a kind-hearted 9-year old, always seeking ways to help others. As many times as we’ve visited Yosemite, we never ventured over Tioga Pass within the park to the Eastern Sierras. Big mistake! When we’ve visited the Western Sierras, usually in late fall or winter, this scenic highway east has been closed to traffic. Other times, when it was open, we just blew it off! Never again! The spectacular vistas we experienced traveling east over Tioga Pass Road enhanced our appreciation for Yosemite when we thought we had already reached the limits of our affection. The views from Olmsted Point and along Tenaya Lake and the Tuolumne River were practically inspirational. Other recommended stops are Tuolumne Meadows and Tuolumne Grove. And more importantly, the trip introduced us to the spectacular splendors of the Eastern Sierras, Mammoth recreational area and the region’s remarkably gorgeous lakes. Even 66

though forest fires occasionally plague the Sierras, the awe-inspiring beauty shall always return as Mother Nature invokes her restorative powers. www.yosemitepark.com Our first stop after crossing Tioga Pass into Eastern Sierra country was the town of Lee Vining, on the western edge of Mono Lake. Lee Vining is home to the remarkably well-known Whoa Nellie Deli, located in a very upscale gas station. Yes, you read that right. One of the most popular dining spots in the Eastern Sierras is in a GAS STATION! The day we were there, a wedding rehearsal dinner was scheduled that night. A rehearsal dinner in a gas station was definitely a first for us, but apparently not for Whoa Nellie. www. whoanelliedeli.com; www.leevining.com. Mono Lake is one of the most unusual lakes anywhere on our planet, mainly due to the geologically unique tufa towers ris-
ing above the water. These stalagmite-like rock formations resulting from petrified spring water mineral deposits have been forming for hundreds of years, giving the lake an eerie moon-like appearance. It’s also one of North America’s premier bird watching destinations. www.monolake.org A few miles north of Mono is Bodie State Historic Park, one of the best ‘preserved in decay’ and non-commercial mining ghost towns in the West. The town includes over 160 buildings, some with original furnishings as if frozen in time. It is now known as California’s official ghost town and was really much more interesting than any ghost town we’d ever visited. Frankly, we were mistakenly not too excited about visiting Lee Vining, Mono or Bodie but did so at someone’s suggestion. We are now wholeheartedly recommending them as ‘should sees’ to friends, family and readers because of their unique tourism features. www.bodie.com Heading back south, our next stopover was in the beautiful June Lake area. We stayed at the highly regarded Double Eagle Resort and Spa nestled in a
stunning wooded setting with awesome mountain views. Their luxury hotel-type accommodations are worthy of four-star status and are perfect for those seeking a romantic escape. Their cabins, although less luxurious, are much larger, come equipped with full kitchens and fireplaces, and are perfect for families or fishermen seeking more practicality. The critically acclaimed spa at Double Eagle has received national kudos and deservedly so. The spa’s ambience, utilizing a plethora of western antiques and accent pieces, is strikingly unique. Dining in their Eagle’s Nest restaurant was exceptional for both breakfast and dinner and their heated indoor pool was a welcome treat. One of the best family features is a fully stocked trout pond on property that is free to guests if you bring your own poles. A catch and release policy is in effect. The kids will LOVE it! Other recommendations for your stay in the June area would include: a scenic drive around the June Lake loop; breakfast at the funky Silver Lake Resort Café-a local favorite; and a boat ride and/or fishing on Silver, June or Gull Lake. Driving further south to our last destination of the Mammoth Lakes area was full of wonderful surprises. Mammoth is probably Southern California residents’ favorite skiing and snowboarding area but is more difficult to reach for northern California snow lovers during winter sports season. Limited or no air service and highway pass closings are the major factors. But late spring, summers and early fall are perfect times for our readers to head to Mammoth. World renowned fishing, incredible hiking, rock climbing and off-road mountain biking await your visit, as well as championship golf and horseback riding. When we arrived in early June, there were very few tourists and virtually no traffic. We understand from late June to Labor Day the tourism crowds escalate, but believe us the scenic wonders are absolutely worth it at any time. We had a very pleasant stay at the moderately priced Village Lodging’s Grand Sierra Lodge, a condominium hotel in the heart of the ‘village’.
Another lodging property to consider is the dazzling new four star Westin Monache Resort, the premier hotel in the Mammoth area. Dining in their restaurant, Whitebark, is a culinary adventure and should garner rave reviews from critics and diners alike. www.westin.com/mammoth Our personal favorite activities in the Mammoth area were our hikes to the strangely curious Devils Postpile National Monument, awe-inspiring Rainbow Falls, the scalding geothermal Hot Creek Geological Site and the infamous Convict Lake. Our drives around Lake Mary, Twin Lakes and Horseshoe Lake provided more indelible memories.

THE LIVING ROOM CREATES A SPECIAL NICHE IN CHANDLER Ambiance is the foundation for any establishment, but the ambiguity in ambiance and environment has allowed The Living Room to create its own niche in Chandler. “We are just did a remodel and wanted to build a place for the community to just chill,” says Tom Kaufman, owner of The Living Room. “We have five different seating options, including soft seating, tall tables, patio, couches and love seats. Every time a guest comes they are greeted with a different experience.”

food&wine Kaufman acknowledges that the design and ambiance created at The Living Room is extremely different than the national chain restaurants that populate the Chandler area. Extreme thought was put into the design, furniture and artwork that is found throughout The Living Room. “We wanted to create a safe and inviting environment for the female demographic where they can meet friends for drinks, enjoy formal dining or just chill,” says Kaufman. “They can use The Living Room for whatever they want.” While the reservation driven dining experience dominates the entire Phoenix metropolitan area because of its reliance on large national chain restaurants, the demand remains strong for the unique experience found at The Living Room. “It is an open-ended experience that doesn’t require a commitment,” says
Kaufman. “We present a low-risk attitude so that everyone is welcomed.” Guests are especially welcomed at the popular daily happy hour. The five-dollar glass of wine and fivedollar skinny cocktails are always in demand from the after work crowd, along with the three-dollar beer and draft specials. “We are a value-driven place that anyone can experience,”

says Kaufman. “The drink specials have been important to our marketing and we are sticking with it.” The wine menu holds a special place in the heart of Kaufman, who spent time earlier in his career as a wine sommelier at the Hotel Bel Air in Los Angeles. He enjoys hunting down unique wines available only in limited supply at The Living Room. “That experience definitely influences The Living Room, but in a welcoming way,” says Kaufman. “An establishment like this would have been boring and snobby 10 years ago, but we are inclusive and exciting, and our guests appreciate that.” The Living Room also boasts one of the best patio areas in the Valley. This area accentuates and caters to the female demographic with fun, pink cushions in a relaxed, backyard setting. “The patio can hold groups from two to 20 people and the feel
is a down home environment, not a commercial dining outdoor setting,” says Kaufman. “The finishes, feel and texture both inside and outside cater toward our women guests, and we only use round tables to help create this ambiance.” The menu of The Living Room is just as dynamic as the ambiance. The appetizers, like the entire restaurant

and lounge, cater to a wide variety of tastes, as many groups prefer to nibble on multiple appetizers instead of selecting one entrée per person. A house favorite is the prime rib sliders, three sliders with gorgonzola crumbles, au jus and creamy horseradish. The Marghertia flatbread is another popular item, along with two Fondue dishes. The Cheese Fondue uses imported creamy brie, pretzel, cauliflower, broccoli and apples, and is served with toasted ciabatta bread. The dessert Chocolate Fondue is served with pretzel, apples, strawberries and marshmallows. “No matter where you order on the menu, you will receive good value and sufficient portions,” says Kaufman. Another house favorite are the Turkey Wrap Pinwheels. Featuring perhaps the most dynamic mix of ingredients on the menu, the tomato basil wrap includes arugula, carrots, apples, cranberries, shaved almonds and apple cider vinaigrette. To ac-
centuate the welcoming ambiance and the high quality and value offered throughout their menu, The Living Room provides entertainment with a DJ spinning music every Wednesday to Saturday night, and live music on Sunday nights as part of its weekend wind down experience. “We offer a total experience of food, ambiance and entertainment that can only be found at The Living Room,” says Kaufman. “Everyone is welcomed to kick it up a notch on the weekends and enjoy friends, food, wine and music while laughing, lounging and enjoying life.”

KEY LIMES BY KIMBERLY STREDNEY
Key limes are often confused with their larger, greener counterparts that are found in most grocery stores today, Persian limes. But Key limes (also known as Mexican or West Indies limes) are smaller – think golf or Ping-Pong ball – and rounder in shape with a yellowish tint to their thinner skin. Although many mistakenly believe Key limes come from the Florida Keys, they are actually thought to have originated in North Africa and the Near East, having made their way to Florida via Palestine, Mediterranean Europe and Haiti through Arab and European traders and settlers. This type of lime flourished in an area where soil had been depleted by hurricane damage, so in the 74
early 1900s Floridians switched from pineapple commercial crops to Key limes. Business boomed until a later hurricane destroyed the lime groves, and they were unable be restored. Today, most Key limes come from Mexico. The juice of this tart fruit is most commonly used in meat and fish marinades and is the main ingredient in the signature Key lime pie. Due to geographical growing limitations, however, the fruit is not often readily available outside of Florida and California; many pies are actually made using the juice of Persian limes instead. One alternative that is carried in many grocery stores today is bottled Key lime juice.

While opinions differ on what constitutes a traditional Key lime pie recipe – eggs or no eggs, whipped cream or meringue, graham cracker or pastry crust – two rules are held sacred for Key West locals when it comes to making the dessert. True Key lime pies should be a creamy yellow color – never green, and they should always be made with sweetened condensed milk as opposed to regular. (Milk was unavailable in the Florida Keys until the 1930s when the overseas highway was opened, and trucks were finally able to deliver ice to island residents.) In 2006, Key lime pie became the official pie of Florida.
KEY LIME PIE 1 1/2 cups graham cracker crumbs 1/2 cup granulated sugar 4 tablespoons (1/2 stick butter) melted 2 (14-ounce) cans sweetened condensed milk 1 cup key lime or regular lime juice 2 whole large eggs 1 cup sour cream 2 tablespoons powdered sugar 1 tablespoon lime zest DIRECTIONS:
CREAMY KEY LIME CHICKEN ENCHILADAS
Preheat the oven to 375 degrees F. In a bowl, mix the graham cracker crumbs, sugar, and butter with your hands. Press the mixture firmly into a 9-inch pie pan, and bake until brown, about 20 minutes. Remove from the oven and allow to cool to room temperature before filling. Lower the oven temperature to 325 degrees F. In a separate bowl, combine the condensed milk, lime juice, and eggs. Whisk until well blended and place the filling in the cooled pie shell. Bake in the oven for 15 minutes and allow to chill in the refrigerator for at least 2 hours. Once chilled, combine the sour cream and powdered sugar and spread over the top of the pie using a spatula. Sprinkle the lime zest as a garnish on top of the sour cream and serve chilled.
1 medium onion, chopped (1/2 cup) 1 can (4.5 oz) Old El Paso速 chopped green chiles 2 1/2 cups shredded deli rotisserie chicken 1 container (6 oz) Yoplait速 Greek 100 Key lime yogurt 1/2 cup chopped fresh cilantro Juice of 1 medium lime 1 can (10 oz) Old El Paso速 enchilada sauce (hot or medium) 12 corn tortillas 1/2 cup shredded reduced-fat Mexican cheese blend (2 oz)
DIRECTIONS
Heat oven to 350属F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch nonstick skillet, cook onion, chiles and chicken over medium-high heat about 3 minutes or until chicken is warm and onion is starting to turn translucent. Remove from heat; stir in yogurt, 1/4 cup of the cilantro, and the lime juice. Stir in 1/2 cup of the enchilada sauce. Fill each tortilla with 1/4 cup chicken mixture. Roll up; place seam side down in baking dish. Spread remaining enchilada sauce over tortillas; sprinkle with cheese. Bake about 30 minutes or until cheese is melted and bubbly. Sprinkle remaining cilantro over enchiladas; serve warm. EXPERT TIPS
If you like a spicier enchilada, use hot enchilada sauce. If desired, serve enchiladas with salsa and shredded lettuce on the side.

Tired of boring, traditional turkey? Not down with deep frying? Head to your backyard and fire up your smoker. 1. Choose your favorite wood combination like white oak and apple, and heat up your smoker to 225-250 degrees F. 2. Place your thawed, brined, seasoned and patted dry bird breast-side up onto the greased smoker. Don’t forget to put a disposable pan with water underneath the turkey to catch the drippings and add moisture. 3. Cook your bird at 225-250 degrees F for 30-40 minutes per pound. When the breast hits 160 degrees F on your meat thermometer, it’s done! 4. Remove the turkey from the smoker, wrap it in foil, and let it rest for 20 minutes. 5. Carve and enjoy!

On Veterans Day, each November, it is our duty to honor all the veterans that have served our country. This year, Tempe is doing it big again with their Veterans Day Parade. The parade starts at ASU Gammage and runs north on Mill Ave to Tempe Beach Park. Participating in the parade, of course, are veterans as well as high school bands, Boy Scouts, Girl Scouts and community members. The Gilbert Promotional Corporation prides itself on keeping the Western tradition alive in Gilbert. They do so perfectly with their annual Gilbert Days. Actually a week long event, Gilbert Days features rodeos, dances, parades, and an all day festival on Saturday, November 23rd. LUMPY GRAVY AND
WHITE MEAT DREAMS

Thanksgiving is quite possibly my favorite holiday. No presents to buy or returns to sneak back to the store. No irresistible pillowcases full of candy and stolen while your children sleep (not to mention the last-minute Halloween costume fixes at midnight the night before). Just food, family and football. Mix in the requisite wine or spirit of choice and it is a holiday of bliss and overindulgence, a few of my favorite things. You bet I’m thankful! My family has unceremoniously handed the torch over to me as hostess. Although I love Thanksgiving and the menu at hand, there are a few complications. For example: my complete disdain for preparing Tom the Turkey. Don’t get me wrong. I love turkey - I gobble it up. To put it bluntly, I’m squeamish. Handling turkey necks and giblets doesn’t exactly fire up my appetite. Good thing I have the wine to dull the pain of the slippery prep. I have also yet to master the art of homemade gravy. Eventually I’ll have to learn the proper way without leaning on a hidden stash of the canned variety. How come it’s so difficult for me to skim fat from the drippings, for one thing? And then after all that work, those pesky clumps of flour still refuse to blend into a smooth gravy of fatty goodness. If only they blended as well as my extended mish mash of family.

ABOUT THAT BLENDED FAMILY...
My house isn’t huge, but mix my husband’s clan with my collection of biological and step-relatives, and it’s impossible to have a formal sit-down Thanksgiving feast. Buffet is the name of my game. Sure I’d love to have a candlelit sit-down dinner with white tablecloths and a separate kids table complete with mini plates of china. But the buffet means my family can sprawl all over the sectional couch, various tables, benches and ancient TV trays inherited from my grandmother. The sprawl combined with blaring sports on TV and flowing wine encourages us to talk even louder over each other. One thing that has suffered under the responsibilities and weight of hosting a huge holiday dinner is my baking ambitions. In my carefree years, I always brought fresh pies made from scratch, right down to the buttery pie crusts. Once I had two wild boys underfoot, I relied on Betty Crocker for her pre-made crust shortcut and still passed off the pies as homemade. Now that I also make dressing, lumpy gravy and sweet potatoes, Costco has been my new pie chef. My grand scheme to pass off the slimey turkey prep and cooking to my husband this year may be at the mercy of which players are on his fantasy football roster that week in November. So, wine, please wash away my aversion to all things carcasslike and pull me through this day of cooking. Even while I’m screwing up the gravy, I will enjoy the loud chaos of my family as proof that I have so much to be thankful for.
