publisher's note
EAT, DRINK, & REPEAT! It’s really no surprise, given I work where I do, that zinfandel is my favorite varietal. I grew up on the grape known as our region’s claim to fame, and I haven’t tired of it yet. But as our burgeoning wine scene grows, I find myself reaching for glasses of other delightful sippers. I’m intoxicated by the heavy aromas of ripe berry and spice that swift through the air as I swirl a goblet of full-bodied cabernet sauvignon, and encouraged by the crisp, sweet-dry taste of a well-made—and perfectly chilled—rosé on a hot summer day. The longer I spend in this region, the more my palette finds to love. From albarinos and tempranillos hailing from Spain and French syrahs to those fruity California barberas and every red blend, I’m certainly enjoying the fruits of Lodi’s labor. And while a wino I may be becoming, a foodie is something I have always been. As new restaurants pop up from Tracy to Lodi, Manteca to Ripon, I’m constantly stumped on where to grab my next meal— because it all just sounds so good. I’ve long been a sucker for sushi, gorging on creatively named rolls and bowls of miso soup, but I’d be lying if I said the new combinations coming to every corner didn’t have me enticed—reaching for plates filled with Mexican seafood and artfully crafted contemporary Italian cuisine. It’s this love of wine and food that drove me to start publishing an annual Wine Dine 209 guide three years ago. Now I look forward to the issue every year, when I get to share with the world all of the wonderful new additions—and classic mainstays—to our developing, local food and wine scene. Flip through the pages and point out your favorites to friends, or discover a new place you’ve never been. The goal of this publication is to set you on an adventure without leaving home, a rolledup glossy as your guide to the oysters (and other delectable dishes) in front of you.
Bon Appétit!

LONG LIVE
A LITTLE HISTORY
LODI With history as rich as its soil, Lodi Wine Country has made quite a name for itself in recent years. Fourth and fifth generation famers and vintners have taken the reins, guiding our appellation through an evolutionary period—with creativity and innovation working as driving forces. Old meets new and excels, not only in bottled blends, but in the picturesque tasting rooms that have been renovated from family homes of the farmers that fill your cup. Their humble beginnings are honored and celebrated as the fruits of their labor allow for growth— resulting in ridiculously quaint spaces and brandnew tasting rooms along the Lodi Wine Trail. nurtures with granitic-based minerals that support the cultivation of complex flavors.
So, what makes Lodi wines so delicious? We say it’s the people and the rich history. It is also the hot days that stress the vines and the cool evenings that allow them to rest. And with the Delta breeze, grapes in our county get the best of both worlds—hot sun and natural air conditioning! In other words, our Mediterranean climate is the perfect storm for quality wine grapes.

After decades of hard work, the Lodi wine region is finally getting the respect it deserves. In 2015 Lodi Wine was named Wine Region of the Year by Wine Enthusiast Magazine. In 2018, Adam Mettler (winemaker for Michael David and Mettler Family Vineyards) was named Winemaker of the Year by W.E. AGE MATTERS The Old Vine Zinfandel
If you’ve ever taken the scenic route home and noticed the gnarly vines that adorn our local landscape, you know they are our region’s prized possessions. After all, our old vine zinfandel is one of the many reasons tourists and journalists keep flocking here. These low yielding, high maintenance vines are pricey to farm, but totally worth it.

Those who protect the community and the climate are the real MVP’s in Lodi’s wine region. With the environment and society in mind— growers, scholars, and wine experts formed Lodi Rules, the first third party certified sustainability winegrowing program in the nation. Under the Lodi Winegrape Commission, Lodi Rules works to be environmentally sound, socially equitable, and economically feasible. Today over 24,000 acres are certified sustainable in the AVA and the program went international last year, with the addition of 550 acres farmed in Israel. Local wines wearing the ‘Lodi Rules’ seal are putting the planet first, practicing more than 100 sustainable farming practices. Utilizing integrated pest management by maintaining habitats for natural pest predators and regulation of water usage, while over 92 percent of growers have installed owl boxes. FEBRUARY
APRIL
February is for lovers and nothing says I love you like the combination of dark chocolate and port. A fortified dessert wine, port makes the perfect pairing to your Valentine’s Day desserts!
JANUARY
You can never go wrong with a bottle of bubbly. Especially, when ringing in the New Year. There is something about the tiny effervescent bubbles and the clinking of glasses that will make you want to keep the celebration going!
Pinot Noir is a Bordeaux varietal that oenophiles love to sip. Low in tannins, bold with flavors of ripe red fruit, and highly acidic, this wine is food friendly. Pair it with your Easter ham or turkey.
MARCH
When St. Patrick’s Day rolls around, why not skip the Guinness and reach for a crisp, dry vermentino? The unique combination of corned beef and vermentino just might blow your mind.
MAY
In May, we drink zinfandel! After all, it’s the month where Lodi wine country hosts its biggest festival of the year—ZinFest. And here in Lodi, we make the good stuff.
JUNE
As the weather warms up, we look to a lighter red wine to pour at dinner. Grenache is a beautifully expressive varietal that is light in tannins, easy to drink, and easy to pair with food.

WINEDINE209 2019 EDITION
AUGUST
Sauvignon Blanc is the ultimate summertime sipper. With zippy citrus and crisp fruit, you can pour yourself a glass or two while relaxing poolside.
OCTOBER
Barbera is the wine of the month. This Italian varietal grown in Lodi is one of the area’s finest red wines. Light enough to enjoy with or without food and elegant beyond words.
SEPTEMBER
JULY
Because when it’s hot outside, we reach for rosé. Nothing is as refreshing as the soft pink juice with bright acidic qualities. Heck, if it’s hot enough, you can even make a slushie out of your favorite rosé.
International Albariño Day is in September, so why not celebrate all month long with some of Lodi’s finest albariños? There are a dozen local wineries making this delightful Spanish varietal—and they are crafting them with finesse.
NOVEMBER
To honor tempranillo, several Lodi wineries host a Tour of Tempranillo, where folks can get a passport and sample a taste of the tasty juice. It’s also one of our favorite wines to pair with cheese.
DECEMBER
When celebrating the holidays, there is only one varietal that can stand up to the cause. Cabernet sauvignon is the ultimate wine to sip while indulging in prime rib and potatoes on Christmas Day—or any other day of the month.

ARROYO’S CAFÉ AND CANTINA One of Stockton’s oldest, family operated restaurants, Arroyo’s Café and Cantina was established in 1946. They serve up delicious, authentic Mexican cuisine for locals, and you can feel the love and family tradition in every bite. With an array of seafood, chicken, and steak options, there is a dish or platter for everyone in your group. Be sure to try the over-the top Micheladas or the perfectly crafted strawberry margaritas. You can find this gem in Quail Lakes where you can dine on the picturesque waterfront with plenty of room to serve the whole family.

DAVID’S NEW YORK STYLE PIZZA
A Taste of the East Coast in San Joaquin It’s one of the hardest decisions you’ll ever make. Staring down that list of specialty pizzas is a trip onto a game show. You know you’re going to win, but what will you be walking away with? A Taste of Gilroy, in all its pepperoni, garlic, and tomato splendor? Or perhaps a Chicken Fajita, garnished with chicken, bell peppers, red onions, and colby jack cheese? Or you could, you know, spice things up and build your own, too. And when there are so many appetizers, salads, sandwiches, and burgers to choose from, you’ll be straight back in that hot seat. Not that it’s a bad thing.

FINDING LUMPIA THE TRADITIONAL FILIPINO APP IN PORT CITY BY BY ALEXANDRA KRUEGER
PAPA URB’S GRILL
/ D ALY MONTEZ
Are you looking for something delicious and totally different? Let us introduce you to this hidden gem of a grub spot. Located in Downtown Stockton, Papa Urb’s is known for Filipino fusion, however, he still knows how to cook up a totally tradition Filipino dish: lumpia. This Filipino-style fried spring roll is fried to perfection and filled with the good stuff, with choices of either beef, just veggies, or Shanghai-style with a combo of pork and carrots. Stuffed with corn, green beans, carrots, lima beans, and served with sweet and house sauces, Papa Urbs’ lumpia bursts with flavor and boasts a satisfying crunch.
BEST LUMPIA
The selection at Best Lumpia has been revered by customers for years. If you favor beef, their Beef Pack is cooked with ground beef, carrots, and celery, wrapped in a pastry wrapper and fried until golden. The Pork Pack (AKA Shangai-style) comes with ground pork, carrots, green onions, and water chestnuts. The chicken pack is stuffed with beans as well as veggies, and for you vegetarians out there, there’s a vegetarian option featuring freshly cut beans, beansprouts, celery, carrots, and peas. Though Lumpia is often served as an appetizer, these rolls are something you won’t mind filling up on. 9305 Thorton Rd., Ste J, Stockton (209) 952-8300 BestLumpiaStockton.com
RED ORCHIDS RESTAURANT
Look no further for the golden roll—this allyou-can-eat Filipino buffet has stacks of lumpia just waiting to be devoured, but you can also get them made fresh on arrival. Aside from the vegetarian, beef, or pork varieties, Red Orchids also serves up a chicken option. All varieties are served with sweet and sour sauce or vinegar for your dipping pleasure. Plus, if you visit this Downtown Stockton restaurant for lunch, you’ll get 10 pieces for just six dollars. For dinner, check out any one of the combo plates that come with three pieces of this crunchy appetizer—you’re sure to leave satisfied. 3203, 126 E. Market St., Stockton (209) 467-8140

WINEMAKERS' DINNERS
FOOD & WINE PAIRING TIPS FOR THE HOSTESS
BY NORA HESTON TARTE
You don’t have to be a master sommelier to pull off a wine and food pairing that will wow guests. With a little effort, creating a tasting menu is as easy as saying “zinfandel.”
KNOW THE BASICS.
Wine should balance food, not compete with it. For example, mixing a sweet wine with a salty meal offers a better combination than pairing sweet with sweet, and if you’re serving wine with dessert, the wine should always be sweeter than the dessert. If you’re serving something bold, go for a red with a similar intensity as the meal but that is also more acidic. If you’re serving fish or chicken, opt for white (unless you have a good reason not to). If you’re stumped, pick a wine that compliments the sauce or gravy you are serving instead of the meat or other main part of the meal.
THIS WITH THAT White meat with white wine Red meat with red wine Shellfish with albariño Red-sauced pasta with zinfandel Asian Food with dry riesling Mushrooms with pinot noir Chicken tacos with sauvignon blanc Cheeseburgers with tempranillo Dessert with port
KEEP THESE TIPS IN MIND.
If you’re not a chef, the tips above might be a little confusing. Let’s make it easier: Pinot noirs are a good match for earthy ingredients, while it’s better to mix salty or oily foods with a dry champagne. Bordeaux varietals such as cabernet sauvignon compliment red meat. Chardonnay is the ideal counterpart for rich fish dishes, syrah for foods rich in spice, rosé for cheesy pastas, and pinot grigio for lighter fish.

MAKE IT AN EXPERIENCE.
Knowing how to select the perfect wine to accompany a hosted dinner is a great skill to possess, but if you want to truly impress, try creating a wine and food-pairing menu featuring sips of several wines over multiple courses. This adds an interactive element to any dinner party where guests compare and contrast the wines and food from course to course, instead of enjoying one bottle at a time. Not to mention, it’s much easier to pair wines with a single dish as opposed to trying to find balance over an entire meal.

HOPELESS RAMEN-TIC BY BY FAITH LEWIS
RE-DISCOVER WHAT YOU LOVE ABOUT RAMEN
With a history as long and twisty as the wheat noodles themselves, ramen has evolved beyond its origins as a cheap and quick meal for the early twentieth century working class in Tokyo’s Chinatown to the well-loved, flavor-packed comfort food it is today. A far cry from the bricks of dry noodles that have become a staple for college students, these are our favorite ramens in the county to cozy up with as temperatures cool.
TANGY SHRIMP CILANTRO RAMEN
In Yume’s Tangy Shrimp Cilantro Ramen, shrimp takes the center stage. With noodles made fresh in Stockton, succulent shrimp, and a rich broth, this ramen checks all the boxes. Plus, it’s the most popular ramen on the menu. Order a bowl and savor the blend of fresh cilantro and spicy broth. YUME 2401 W. Turner Rd., Lodi (209) 224-5169 YumeLodi.com

PORK RAMEN
If you’re looking to dip into a good bowl of traditional ramen, Satomi’s Pork Ramen is sure to please. The rich, fatty flavors of the pork give the broth depth. On top, the fish cake, corn, and boiled egg are reminiscent of every ramen you’ve ever loved. Topped with green onions, sesame seeds, and seaweed. SATOMI 819 W. 11th St., Tracy (209) 221-0562

SHOYU RAMEN
This is the iconic ramen. This classic dish has a clear, salty broth flavored with soy sauce and swimming with BBQ pork, steamed cabbage, bamboo, mushrooms, and more for a filling and flavorful meal. USHIO RAMEN HOUSE 3558 W. Hammer Ln., Stockton (209) 955-1590
SPICY SEAFOOD RAMEN
If you’re a firm believer that everything is better when it’s spicier, then Tokyo Ramen has just the ramen for you. Their Spicy Seafood Ramen is filled to the brim with shrimp, mussels, scallops, fish cake, imitation crab, bean sprouts, egg, and—of course—those telltale ramen noodles, all swimming in a spicy broth. TOKYO RAMEN 5620 N Pershing Ave., Stockton (209) 955-1988
MISO RAMEN
For a heartier ramen, opt for the Miso Ramen at Yujin. Voted Best Ramen in San Joaquin, this variety of ramen originated in Hokkaido, an island in Japan where the cold winters called for a more filling meal. Miso, made of soybean paste, is used to flavor and thicken the broth. Then, add your choice of pork or chicken, a soft boiled egg, corn, cabbage, and green onion to round out this flavorful soup that is sure to have you smiling as you slurp. BUBBLE TEA ROUND UP MILK, TEA, & TAPIOCA BY NORA HESTON TARTE
This Taiwanese tea treat is taking over. Invented in Tainan and Taichung in the 1980s, its popularity has swelled in San Joaquin County over the last decade, spawning several tea-centric businesses in the area, including several that opened in the last year. So, what is it exactly? The drink is classified as a tea made with milk and sugar. It’s defining characteristic, however, is the tiny tapioca balls inside. Sip it with an extra-thick straw to suck up the “pearls.” It’s also commonly called pearl milk tea, boba milk tea, boba tea, tapioca tea, or simply boba. But creative businesses are making their own variations. Trek through our favorite cities to find your favorite. Look below for a round up of some of the best our region has to offer.

Start by choosing your tea flavor. Next, choose a sweetness level from 25-100 percent. Then, pick your milk. Lastly, choose the tapioca balls of your choice (mango, strawberry, chili, and peach). BOBA OR BUBBLE? Both names are interchangeable though "Boba" is used more often here in the west coast.
Passion Fruit Tea with Mango & Strawberry Boba @ Sweet Lab Boba Tea & Desserts
This passion fruit tea with other fruity bobas offers a good blend of tart and sweet. Finish it with a dessert. Bubble waffles and offbeat ice cream and cone flavors (think lavender and red velvet) make the sleek, modern café unique. 1401 S. Lower Sacramento Rd., Lodi. (209) 426-5683
5.
Lychee Snow with Mango Boba @ Tea Time Boba Café
A cutesy panda character greets all patrons who stop by, but the real draw is the hot-weather drinks. Grab a snow to go, and don’t forget to add the boba. We recommend the lychee snow with mango-flavored tapioca balls. 1375 E. Yosemite Ave., Manteca. (209) 639-0944

BERNIE’S MIXOLOGY SERVES FUN IN SAN JOAQUIN COUNTY BY NORA HESTON TARTE
/ D DAN HOOD
Every time her family hosted an event, Bernadette Pimentel had one specific job. Family barbecues found her not manning the grill, but instead mixing up drinks for everyone to enjoy. “Before you know it, someone had approached me and told me I was good at it,” Bernadette says. But it wasn’t until her children were getting married that Bernadette thought about turning her flair for drink making into a business. She noted many venues limited alcohol service, and others didn’t have their own bartenders on staff, creating limitations for brides and grooms. Bernie’s Mixology—a bartending business—was the solution. She went to classes, became a certified mixologist, and got a liquor license. In July 2017, she hosted her first event. From weddings and
quinceañeras to corporate parties, Bernadette’s business includes bartending services, supplies, and signature cocktails at a variety of venues. One of the biggest perks of hiring Bernie for an event— aside from her delicious blends, of course—is the red tape she can cut through. With liability insurance and other documents of her own, Bernie is legally allowed to pour hard liquor at venues that only allow beer and wine otherwise. “It’s just like any longue,” she says of her business. She checks IDs, pours drinks, and does the dirty work—cutting people off when necessary. Bernie’s packages start at basic bartending services and go all the way up to an all-inclusive package. Guests purchase their own alcohol, with Bernie’s guidance, and she brings the rest—ice, cups, garnishes, nonalcoholic beverages, and mixers. One service guests especially love is Bernie’s signature

cocktails. Her favorite is a refreshing, year-round drink dubbed the Cucumber Bubbly Cocktail (see below for recipe). Her favorite non-alcohol sipper is an infused detox water. “Detox while you tox,” is her motto, pushing a blend of fresh lemon juice, mint, cucumber, lime, basil and rosemary, to guests as they imbibe. “It’s refreshing because it replenishes the liver,” Bernadette explains. Bernadette’s best service, however, is taking care of her customers. Talking to guests, making brides happy, and getting grooms a shot before their “I Dos.” Bernadette says going the extra mile and being involved in the planning of people’s biggest days are the best parts of her job.
