2 cups finely chopped cooked chicken breast 2 ½ cups packaged shredded cabbage with carrot ¼ cup chopped green onions 2 Tbsp chopped unsalted peanuts or sliced almonds 1 Tbsp grated fresh ginger 1/3 cup bottled light Asian salad dressing 1/3 cup drained canned crushed pineapple 12 leaves Boston or Bibb lettuce or green leaf lettuce

In a large bowl, combine chicken, cabbage with carrot, green onions, nuts, and ginger. Add salad dressing and pineapple to chicken mixture; stir until well mixed.

Spoon about ¼ cup of the chicken mixture onto each lettuce leaf. Fold in opposite sides of each lettuce leaf; roll up and secure with a cocktail pick.
