In a large skillet, heat the oil over medium heat. Add the garlic and red pepper flakes, and sauté for 30 seconds, until fragrant.

Add the spinach and use tongs to stir-fry for about 2 minutes, until the spinach just begins to wilt.

Add the rice vinegar. Cook for 1 minute. Sprinkle the spinach with the sesame seeds, salt, and ground pepper. Serve immediately.
