Story by Katie O’Malley, Katie O’ Weddings & Events Some brides have had their wedding day vision since the moment they pulled their mother’s gown from the dress-up box, put on her high heels and looked in the mirror... then there is everyone else! Many brides come to me and don’t have their “perfect vision” pulled together. They know the basics involved in a great wedding: the venue, the food, the music and the people. But it is pulling all of these elements together to create a theme – a vision that represents the couple and their love story, that is sometimes the hardest part.
So where do you start? Once you have the basics figured out, a great first step in establishing your theme is considering seasonality – the time of year you are getting married.

Every season in the Saratoga-Adirondack region brings new atmosphere, color and imagery. Incorporating the season in your design can be the perfect way to get started and inspired!
n It helps to look beyond the obvious and dig a little bit deeper. A December wedding doesn’t have to mean snowflakes and icicles, just like an October occasion can exclude token fall elements like baskets of apples and burnt red leaves.
Start with your venue: What do you love about the venue and want to highlight? Bring out the best elements of your venue for the time of year you are hosting the wedding. Draw inspiration from the stonework in an elegant castle-like venue, or from the rustic charm of a barn for the fall or spring. Why not embrace the colors and environment of the ocean for a lakeside wedding in the summer?
Décor Once you have settled on the perfect location, you can have fun with adding your special touches through the design and décor. Winter weddings are becoming increasingly popular, especially for couples that are watching their budget or keeping their summer free for vacation. There are so many amazing venues in our region that radiate a magical winter feel on their own, but you’ll want your décor to contribute. Sparkle is always a unique way to bring the snowy feel from the outside in. Crystals hanging alongside votives from curly willow branches add a touch of brilliance that creates a warm glow. Soft, romantic colors like blush, ivory, silver and champagne are fantastic options for winter brides. Fashion can be really fun in the winter, too! Try a soft mink stole to keep the chill out of your bridal ensemble, or fun snow boots for the bridal party! Spring is such a delightful time for a wedding celebration, especially in upstate New York – the bitter winter is over and the summertime triple Hs (hazy, hot and humid!) are still months away. feel! Consider grass green, yellow, pink and Robin’s egg blue. Tulips, daffodils and daises are fun accents to bring into your décor and even stationery. As guests enter the cocktail hour, use brightly colored pinwheels for escort cards. Thinking about a summer wedding but want to put your own twist on the season? You can incorporate fresh limes and lemons into your overall design. Use soft shades of yellow and green in your printed materials and then use real bright fruit in your centerpieces. Or why not create an “upscale” picnic feel with whimsical red and white details in a fun outdoor barn location? You can have a fresh baked pie dessert buffet with ice cream to top it off.
Try and utilize flowers that are in season no matter what the time of year. This will not only help with the budget, it will allow you to get the feel of the season in a soft and beautiful way.
Fall has become one of the busiest seasons for weddings – more couples are choosing dates between September and November than ever before. People love the idea of a late-summer/early fall celebration because they can enjoy the outdoors without worrying about heat and humidity or a major snowstorm. You can achieve a warm, autumn feel without baskets of apple centerpieces and carved out pumpkin table numbers. Instead, focus

on the rich hues that the season provides and take them to another level using jewel tones rather than the usual matte browns and reds. I suggest adding small touches of the season: greet guests with some fresh local apples in their welcome tote, or line an outdoor ceremony with leaves. The possibilities are endless.
In addition to pouring over blogs, inspiration boards and seasonal imagery, I also suggest that couples identify what truly represents them and makes their love unique. Sometimes this can spark ideas that you would not typically consider.
Menu: Food is a really creative way to incorporate the tastes and smells of the season. • In the spring, present individual strawberry shortcakes for each guest instead of the traditional wedding cake. Try crème brûlée in the winter. • Top a fresh summer salad with delicious berries • Incorporate a warm butternut bisque, maple glaze or fresh local cheese for a fall-inspired menu Talk to your venue’s event staff and your chef directly to get the freshest and most seasonal items on your menu.

Music: Believe it or not, music is a great way to infuse hints of the season. An elegant winter affair could have an authentic “big band” playing classics from the 30s and 40s (you could then switch it up later in the night with a DJ to play the recent hits). A light and airy springtime cocktail hour could incorporate a fun solo pianist playing upbeat tunes for guests. Invite a fun bluegrass band to play the cocktail hour at your late summer celebration. Or how about having a strolling Italian acoustic quartet to transport your guests to a summery evening on the piazza? Bring in a simple harpist for your fall wedding ceremony to create a unique, rich warm sound that keeps it classic and elegant.

Spring • Provide seed packets as favors for guests to plant for the season • Place an individual brightly colored tulip in a bud vase with escort card attached
Summer • Fill up a white laminate or wooden box with sea glass and place escort cards on top • Have an ice cream truck drive right up to your reception space and let guests enjoy a snow cone or ice cream sandwich
Fall • Mini white pumpkins to accent the escort card table • Place wraps and flip-flops for your guests in apple baskets • Provide guests with a hot apple cider bar with creative twists on the usual recipe using cinnamon sticks and salted caramel accents in mason jars
Lastly... Remember there are no rules when it comes to “fitting” the season into your wedding day. You can have a spring/summer palette in the winter or fall if you really want to, just keep in mind that certain flowers might be available at opposite times of the season. W
e always hear stories about “the one that got away,” but what about the one that didn’t? Some people are lucky enough to realize they’ve reeled in the catch of a lifetime, and when they do they hold on tight. Just ask Matthew Campbell, a local groom who knew he couldn’t possibly let his future bride, Ashley Strom, get away. Their love story begins in sixth grade, when they both attended Maple Avenue Middle School. “Matt asked me out when I was 14, but I was too young to date.” Strom said. “She made me wait,” Campbell said. His persistence and patience paid off in college, when they both enrolled at SUNY Adirondack and wound up spending most of their time within the same group of friends. As time went on, Campbell and Strom naturally paired off. They had a lot in common, sharing

similar interests in fishing and a love for the great outdoors, commonalities that eventually set the backdrop for Campbell’s proposal. Six years into the relationship, Campbell felt the time was right to ask Strom to be his blushing bride. On June 8, 2011, while Strom was attending a Phish concert (an unusual coincidence), Campbell purchased the ring at Hannoush Jewelers in Clifton Park before having dinner with her parents to ask for their approval. Of course, they said yes. Knowing that Strom was the catch of his lifetime, he wanted the moment to be special and memorable. So he planned a getaway to “the small mouth bass capital of the world.” It was a trip to end the summer and begin their lives together. “I really had no idea what was planned,” Strom said. Sometimes, the best things in life are surprises. While Strom was gearing up for what she thought was a regular fishing trip with her beau, he was trying to keep his cool and keep the ring in the tackle box. The day was as perfect as it could have been. The weather was ideal, and Campbell’s nerves were under control, as he neared closer to the big moment. He waited until they were out on the lake. Then, as Strom was looking away, he set up her fishing pole, tied the ring to the end of the line and requested her attention: “I’m looking to get a keeper. Do you think I’d be able to catch one with this?” Strom’s initial reaction was one that many women have – she was a ‘deer in the headlights.’ “My first words were ‘are you serious?’ she said. Then a minute went by, which probably felt a lot longer for Campbell, before she said “YES!”
Both of their families are very excited about the couple’s September 8, 2012, nuptials. The ceremony is planned for Campbell’s family property in Wilton, outdoors under a wedding tent. Tents will be provided by Allerdice Rent-all, where Strom is currently employed. Entertainment for the event will be provided by The Refrigerators, and the couple has chosen Niki Rossi Photography to capture the precious moments of their new life beginning. Congratulations to Ashley and Matt!

Dessert For Two Story by Yael Goldman
M
eredith McClain will marry Paul von Schenk, her perfect match, on Sunday, September 2, 2012. Their romance is sweet and their story is simple. Meredith and Paul have always been close. They grew up in the same town, attended the same kindergarten Halloween parade, and orbited the same social circles in high school. But it wasn’t until their freshmen year in college, when the two set out for faraway campuses, that Meredith and Paul finally became an item. Despite the distance, their young love grew stronger with each semester, and it wasn’t long before they were looking back on eight years together. Paul’s proposal was perfect. It was Valentine’s Day weekend of 2010, and he had planned an obstacle course of aversions – all of them romantic, of course.

He first asked Meredith to take that Friday off from work. That morning she woke up at 6 a.m. to the tones of Andrea Bocelli streaming through the house. Paul was in the kitchen, preparing her a delicious breakfast on a special plate. It only took a few forkfuls for the secret to be revealed – a poem detailing their weekend adventure ahead. She had a feeling he would propose then and there, but he didn’t. The couple got in their car and headed to New Hampshire for a ski getaway. As Meredith explained, Paul always took her away for Valentine’s Day; she had no reason to expect anything out of the ordinary. A full day went by, then a romantic dinner and a carriage ride. Still no proposal. It wasn’t until that Saturday evening, when Paul disappeared upstairs to prepare a dessert that a chill ran up her spine (the good kind!). Until that moment, nothing unusual had occurred, as Paul was always romantic. The dessert tipped her off – “I thought to myself, ‘I don’t even know if he can make dessert.’” It was time. Paul beckoned Meredith, and with each step her heart skipped a beat. “This is probably the last time I am going to be single,” she thought. And it was. She opened the door to find a room sparkling with pillar candles and there was Paul, “nervous and cute,” resting on one knee. Meredith, of course, said yes.
The Saratoga Springs couple will say ‘I do’ next September before their family and friends at St. Edward’s Church in Clifton Park. A celebration at the Canfield Casino will follow. Nicole’s of Albany will provide the menu, Dehn’s Flowers the arrangements and bouquets, and J.S. Watkins is creating the cake. The couple has selected DJ Andy Pratt of Bigler Productions to entertain and elate their guests. Meredith, a bride made for wedding couture {see pages 29 and 32}, will grace the aisle in an elegant gown from La Reine Bridal of Boston. Her bridesmaids will be dressed by Lily~Saratoga. Congratulations to Meredith and Paul!

A local bride plans her wedding from afar Story by Barbara Cook ong-distance has always been part of Emily and Jason Matthews’ relationship. Emily was working at Dolly Parton’s amusement park, Dollywood, and became friends with Jason’s father, who worked backstage. Jason came home for a week and the two got acquainted. “When I met him I immediately thought he was adorable,” Emily said. But he was about to go to Korea with the Air Force for a year, and Emily thought their new connection would quickly fade with the distance between them. In 2009, Jason, then stationed in Iraq, contacted Emily and they began emailing daily. When he was discharged he moved to New York City, where Emily was pursuing her acting career. “Pretty much as soon as he got here we started dating officially,” Emily recalled. “Both of us had never forgotten the other person.” In September 2010 the couple went away for a weekend. Emily had a feeling Jason might propose. “As soon as we walked into the room there were flowers. It was a big bouquet of white flowers from his parents and it said ‘welcome to the family,’” she explained. As she turned around, Jason was ready to propose. “He definitely caught me off guard because I figured it would be over dinner or on top of a mountain.” Emily immediately said yes. “Pretty much since he emailed me from Iraq I knew that I wanted to marry this boy.” Emily asked her mother to book the National Museum of Dance, where she had danced growing up, right away. They had nine months to pull everything together, but the couple lived three hours away and didn’t have a car. Each month, Emily took the train to Saratoga Springs.

They chose a vintage theme, complete with old family photos, Emily’s great-grandmother’s suitcase to collect cards and gifts, and another great-grandmother’s handmade gloves. “We’ve always been very family oriented,” said Emily’s mother, Lisbeth Crockett. Emily said she loves pink but didn’t want the wedding to feel like a tea party, so they tempered pale pink with gray. Invitations were vintage-looking hankies silk-screened by Sunflower Graphics in Schuylerville. Her dress, purchased from Lily~Saratoga, was “beautifully simple,” according to her mother. Three floral pieces at the waist matched three flowers on the antique gloves. “The dress had a vintage feel but wasn’t literally vintage,” said Crockett. Emily’s bridesmaids lived in California and Washington, D.C. and her maid of honor lived in Richmond, VA. She didn’t see some of them until the wedding weekend. “But I wouldn’t have changed it,” she said, “because they were the girls I wanted to be with me.” She found the bridesmaids’ dresses online. They submitted their measurements and the finished dresses were shipped to them. The couple met their DJ, Jim Diaz of Cool Cat Entertainment, after picking out all their songs on his website, just so they could get to know him. Catering was by Lily and the Rose, and included the meal, a small cake and a dessert buffet. “Over half of my clients are destination-bound to Saratoga from elsewhere,” said owner Kim Klopstock. “I like to do tastings and luckily I have a restaurant (Fifty South in Ballston Spa) so that makes it very easy for them to come up on a weekend and do a tasting.” Klopstock said the dessert buffet has been a growing trend which allows guests to enjoy their dessert over an extended time. A small cake is provided so the bride and groom still have an opportunity to feed each other a piece. The reception was held outside the Museum of Dance, under a tent provided by Big Top Tent Rentals. Photographer Rob Spring captured images of the special day. Flowers were from Peony Passion in Delanson and arranged by Jody Hayes. Envelopes to mail the silkscreened hankies were purchased from PaperDolls of Saratoga. One of the decorations was a map of the United States with a pin marking each city a guest came from, and lines leading to Saratoga Springs. With the power of the Internet, Emily Crockett became Emily Matthews on June 18.

Retrospective How will you remember your wedding day?
Planning your wedding is about far more than that special day; it’s about creating memories that last a lifetime. Selecting the right photographer is the key to capturing the moments you want to look back on. We consulted Courtney and Peter Nettleton of PJN Photography to get some advice on selecting the right photographer for your wedding.
Look for talent and style, but that’s not all! A photographer’s talent, skill, experience and style may initially attract you, but you should also assess their ability to make your day as easy as possible from a photography standpoint. The more comfortable and confident you are with your photographer, the more at ease you are going to be in front of their camera. Give it a test run. Engagement shoots are a great opportunity to really experience what it's like to be in front of your photographer’s camera. Likewise, there is nothing like a two-hour photo session for a photographer to see how you react in front of the camera – a lot of insight is gained by that interaction. Lists and descriptions! Give your photographer a list of names for formal shots. It will prepare them for a smooth and quick process, and also ensure no one is left out. It’s also helpful to discuss relationships and dynamics with your photographer to avoid potentially awkward situations. Kick the clutter. Getting ready photos can be really amazing, but most brides and grooms forget that clutter can sometimes be distracting in photographs. Be aware of your surroundings when planning where you are getting ready and try to eliminate obstructions like plastic bags, hangers, drinking bottles, etc. Double Up. Two photographers are always better than one. You’ll be able to capture each moment from two different angles and from two artistic perspectives. All-in-all... Find a photographer whose work speaks to you. Then arrive at your first meeting armed with inspiration photos, and you’re off to an excellent start! Your Bag Have you considered what you’ll carry in your purse on you wedding day? Who will be in charge of looking after it? Do you even need a bag? Do you want or need your phone with you? What about your lipstick or perhaps a special keepsake? No matter what you need, you will be happy you planned ahead.
Your Shoes • Be creative and have fun with your shoe selection! Just like all of the other details of your wedding, your shoes should be a reflection of your style. • Heels can be tricky for an outdoor ceremony – sand, grass and cobblestone are not the most stiletto-friendly surfaces. Try a pair of heel protectors. Just snap them over your heels and voila! you can safely wear that fabulous pair of four-inch heels. Buy them for your bridesmaids as well! • Give yourself a few trial runs by wearing your shoes around the house before committing to them for your big day. • Once you decide on a pair, make sure you bring them with you to each of your dress fittings. • If you have your heart set on wearing a pair of fourinch heels for the ceremony, bring a second more comfortable pair for the reception. Variety. Instead of sticking with just two or three varieties in your centerpieces or bouquets, try a wide mix of blooms coordinated with your color scheme. You’ll add texture and dimension. Work with a variety of textures to make a statement with your floral arrangements. “Textures make a bouquet,” Rena said. “For example, you could start with a base of rich dahlias and ranuncula and mix in feathery crocosmia and velvety coxcomb. Add more texture such as viburnum, berzelia, lotus pods, fiddlehead ferns or wooly lambs ear leaves to make the arrangement more remarkable.”

mily and Jacob’s winter wedding at Saratoga National Golf Club – a grand setting with old-world charm and rustic tones – was a fairy tale, a snowfallen dream. Situated on the hem of a meandering golf course and set back from the road by a fieldstone gatehouse and a mile-long pathway, Saratoga National lends itself to imagery of a faraway place. For Emily and Jacob, a couple that has overcome challenges of distance and war, there was not a more fitting place to fulfill their destiny. “It was perfect,” Emily said. A frost-kissed ceremony and reception drew from the romantic winter atmosphere in Saratoga Springs to highlight the powerful love between Emily and Jacob. With rich and faint blues, graceful white accents, crystalline snowflake embellishments, and a heavy snowfall that blanketed the golf course the day prior to their wedding, Emily and Jacob’s special day was the winter wonderland they’d dreamed of. Their design was understated yet romantic; sophisticated and relaxed. Symbols of Washington D.C., where the couple made their first step toward forever, were sprinkled throughout the setting – guest tables were named after Washington landmarks and cherry blossoms decorated the edges of their white buttercream cake. “It was elegant and simple,” Emily said. For this couple, timing was of the upmost importance. Jacob, a marine, was deploying to Afghanistan. The planning process posed unique challenges. Jacob was overseas for the majority of that year, and decisions were made via email and over the phone. Emily relied on the expert wedding staff at Saratoga National to plan a flawless wedding they could wholeheartedly enjoy. Starting with a fabulous menu – “It was absolutely delicious,” she said – the team handled all coordination and fine-tuned each detail to ensure the couple’s special day was seamless. “We enjoyed our wedding from the moment we got there until the moment we left,” she said. Planning a wedding in a long-distance relationship is tough, especially when there are so many decisions to be made. Even though Emily and Jacob were separated for the majority of the process, they worked together to create the wedding they both dreamed of. Emily did all of the research and narrowed down the options for Jacob to pick from. For Emily, the wedding plans were the perfect distraction from the distance: “It really made the deployment fly by because I was so busy planning the wedding and looking forward to him coming home.�

iro’s Trattoria at The Lodge is an elegant space with history and natural charm. Situated near Saratoga Race Course on acres of lush land, this estate is fit for celebrations of love and family. For Leticia and Brian, there was not any better setting. The couple welcomed family from near and far for their June wedding, an event inspired by the combination of her Brazilian culture and his American heritage. Siro’s Trattoria at The Lodge was in full bloom for the occasion, ripe with lively colors – yellow, lavender and deep purple. Flowers were everywhere. “It was beautiful,” Leticia said. They said their vows under an arboretum overflowing with floral scents and buds, yellow carnation balls lined the aisle – a modern touch, and calla lilies graced every tabletop. Their cake, filled with strawberries and lemon custard, was laced with an arrangement of flowers and lemon crème frosting. This bright theme translated into their menu, which was custom designed by the venue’s exceptional event staff. Guests enjoyed a mix of Brazilian specialties (including a plate of coxinhas and paes de queijo brought by the mother of the bride) and American delights, while sipping Caipirinhas, a signature drink of Brazil. Leticia and Brian made sure to spend time with their company and each other. They stopped at every table to interact with their family and friends. “We wanted to share the moment,” she said, “and it was perfect.”

Include everyone. Many of Leticia’s guests traveled from Brazil to celebrate the wedding, and it was important to the couple that everyone felt included and part of the occasion. Aside from the Brazilian-inspired dishes and drinks, the couple hired a bilingual DJ who also spoke to their guests in Portuguese. “It was a nice touch. We wanted them to feel at home as well,” she said.

Sing your heart out. After the newlyweds danced their first dance to Michael Buble’s rendition of “The Best Has Yet to Come,” Leticia surprised Brian with a song. Air strumming a guitar, she sang “Green Eyes” by Coldplay for her groom in front of their guests. This gesture wasn’t about hitting all the right notes, but about expressing her love.

erfectly situated between downtown Saratoga Springs and Saratoga Lake, Longfellows is an elegant yet rustic venue that juxtaposes classic charm and modern fancy. That’s why it was the perfect fit for Kailee and Jared – a couple that enjoys as many elaborate dates as they do casual picnics in the park. Kailee and Jared’s spring wedding was inspired by the many occasions, traditions and inside jokes that make up the mini-anniversaries and milestones in their love story. Each table was named for a special moment in their journey from ‘hello’ to ‘I do.’ A delicate lantern and a framed anecdote placed at the center of each table shared the details. St. Augustine told the story of their first date; 46 West 85th Street recalled the Manhattan apartment where Kailee said they “moved in together on a huge leap of faith!”; and their sweetheart table, which kept them close throughout the reception, was named after Belvedere Castle, the romantic getaway where Jared proposed. These personal notes, combined with an enchanting mix of navy blue and pale pink hues, understated décor and candlelit place settings, created the intimate and romantic ambiance this couple had dreamed of. “We wanted it to feel completely like us, and when it all came together it was truly perfect,” Kailee said. This romantic reception was everything they dreamed of and more!

Kailee wore a pair of royal blue crystal embellished pumps, an almost hidden piece of the wedding day that felt uniquely hers. “Jared and I were so focused on making sure our wedding suited our personalities, and that was a little piece of “me”– when my family and friends saw my shoes they said ‘yup, that would be Kailee!’” She paired these bold pumps with a navy blue pedicure.

aratoga Polo is a pastoral setting with natural grace. Nestled in Greenfield, on the outskirts of Saratoga Springs, the historic Whitney Field and clubhouse is beautiful any time of year – in the fall, it’s striking. Lillian and Dan began their life together at Saratoga Polo, surrounded by family, friends and the brilliance of autumn. It was raining. Their theme was inspired by the great Adirondacks in the fall, an ambiance achieved with earthy tones – deep and burnt oranges, soft and rich browns, reds and yellows; wild bunches of hydrangeas, soft calla lilies and bold circus roses; arrangements of gourds, fallen leaves and candles, handmade by Lillian’s aunt. A menu of delicious hors d’ouevres was designed to fit the occasion – small, flavorful bites were the perfect complement to autumn sentiment. In décor, theme and company, the couple brought their family into every detail, including the menu: Lillian’s uncle, a third-generation clam digger, brought a thousand fresh delicacies for the couple to share. “They were delicious!” Lillian said. It’s fitting that this couple’s menu included a taste of family history. The occasion brought members of Lillian’s family together for the first time in years, and, despite the rain, it was a perfect reunion. “The wedding was everything we wanted and more,” she said. “It was miserable outside, but it was beautiful inside!”

ith its grand columns, marble surfaces, sparkling chandeliers and picturesque surroundings, the Hall of Springs is an impeccable Saratoga landmark marked by timeless beauty and grace. As a wedding venue, this unique space beckons romantic celebration – at least it did for Aurelia and Aaron Mensh. When the couple called to inquire about availability, the only open date was August 20, exactly one year after Aaron had proposed. The venue just fit – “it felt magical,” Aurelia said – and everything else fell into place. They wanted their wedding to tell their story, beginning with their outdoor ceremony, which Aurelia and Aaron wrote together, and ending with the fabulous vintage-inspired reception inside the grand 19th century ballroom. They found their theme at the Hall of Springs – in the landscape, the elaborate walkways and fanciful portico, selecting décor that complemented this grandeur and timeless beauty, while also incorporating aspects of their own personalities. Soft cream, white and purple hues graced the scene and fresh lavender sprigs filled the air with heavenly aroma. Aurelia wanted simple, elegant and girly – a tone achieved with small touches like purple pin-striped cocktail straws and delicate centerpieces. A club-like lounge area was designed for their guests, a relaxing space to inspire conversation and calm. Monogrammed pillows lined a carefully placed couch, calling upon guests to sit down, relax and enjoy their surroundings. The occasion was joyful and fulfilling for all in attendance, and that’s exactly what Aurelia and Aaron had intended. “I think our wedding day was truly a reflection of us,” she said. Tell your story. The couple handmade their favors, including 270 “seven layer bars,” which were a special tribute to Aurelia’s mother who passed away while she was in high school. Aurelia fondly remembers her mother baking this sweet layered treat, which she called “Hello Dollies.” For their wedding, the couple put a modern twist on the tradition: “We called them Hello Menshs,” she said.

Tasty tips for menu planning Create an experience. When designing a reception or rehearsal dinner menu, talk with your caterer about the venue, tone and theme you desire for your celebration. With a little bit of forethought and planning, food, location and feel will come together to create a memorable evening that guests will be talking about for years to come. No one should go hungry. Design a menu from which all guests can find something to enjoy for the main course. For large parties with a wide spectrum of different tastes and preferences, the safest bet when selecting entrée menu items typically includes a beef dish, fish dish and a vegetable-based dish. Make it personal. While it’s usually best to play it safe with the main course, the salad, desserts, cocktails and appetizers are a great place to be a bit more creative with your selection. Include an ethnic dish made just the way mom used to, a raw bar loaded with vegetarian food, special pastries, desserts and more. The sky’s the limit! Your venue sets the tone. Use it to your advantage! For those who enjoy dancing, consider doing away with the traditional sit-down dinner. Instead, Klopstock suggests designing food stations strategically placed throughout the venue to encourage guests to move around the space and dance more. For those who have chosen a more formal venue where dancing isn’t as much of a priority, a sit-down dinner may be more comfortable. Savor the moment. Make sure you give yourself time to eat. Between greeting guests, hitting the dance floor, giving and receiving toasts, and, of course, stealing away for a private moment together, it is easy to forget about the wonderful menu you have planned.

Plan for the season. “Seasonality greatly affects how food for a wedding is planned,” said Kane. For a spring or summertime wedding, keep it light! Think mangos, local berries, asparagus and chutneys – no heavy sauces. For a fall or winter celebration, squashes and pumpkins are right at home on the menu, adding a warm splash of color to a table that can dare to be a bit heartier. Keep in mind allergies and dietary restrictions. If one of your guests is allergic to peanuts, it’s important to speak with your caterer to avoid any potential conflicts. Special precautions can also be taken ahead of time to avoid any cross contamination, which will allow guests to find an item that safely fits within their needs. Variety is the spice of life. The rehearsal and reception dinners are very different events – keep the menus different and exciting too! “Create different vibes for each event,” said Palazzolo. “Rehearsal dinners in many cases are casual-fun events where the family wants to host an interactive social event.” For the less formal rehearsal dinner, consider small plate barbeque, gourmet street food or your favorite comfort foods. Guests will appreciate the contrasting menus when they get to the reception dinner, which traditionally tends to feature a richer, more robust and formal selection. Get your families in on the action! Have an aunt, cousin or grandparent who makes special homemade cookies or a unique dessert that they wouldn’t mind sharing with your guests? Ask if they would like to make a special batch for your wedding celebration, adding that one-of-a-kind personal touch to your evening. Add a name card in front of their thoughtful addition to let everyone know who made the goods when compliments start flying. Don’t forget about breakfast. “Breakfast the morning after is my favorite time, because now that you’re saying goodbye, you get to rehash and recap all the wonderful experiences you’ve had over your wedding weekend,” said Klopstock. For breakfast, keep it casual. After all the fun from the late night reception celebration, the breakfast meal is a great time to relax, reflect and wish all your guests well before they go. We spoke with local bakers to get their advice on how to find and design the dessert that’s right for you! Do your homework. With so many available designs, flavors, color schemes, sizes, and formats to choose from, take some time to study what’s out there to help you get a better sense of what you like best before heading to the baker. “I ask my girls to bring in three, four or more pictures of cakes that they like,” said Debbie Alberino, co-owner of the Lake George Baking Company. Coordinate colors. If you prefer going the traditional route of having a white frosted cake, consider adding a splash of color on the inside! Make it your own. “The wedding cake should really emulate the bride and groom,” said Alberino. The wedding day is your day – so get as creative with flavors, colors, formats and frosting as you’d like. If you can dream it, then you can do it. Stand the test of time. The multi-tiered, classical white wedding cake is great for a formal, traditional celebration – but traditional isn’t code for boring. Use frosting to create delicate shell boarders, swirl patterns, pearl drops and beautifully intricate edible flowers to make your cake a work of art. Bling it up. Frosting artistry isn’t the only way to add some pizazz to your wedding cake. “Some of my girls are using peacock feathers, gems, jewels or broaches to dress up their cake,” said Alberino. Add fresh flowers to the mix for a colorful, delicate touch. Flavors galore. There are a million and one flavors you can choose, from the traditional white or angel cake varieties to vanilla, chocolate, espresso, cinnamon or even pineapple for the brave and the bold. Cupcakes are a great alternative to the traditional wedding cake, a hot wedding day dessert trend that can be as simple or extravagant as you’d like. “Cupcakes are a modern way to express yourself for your wedding day. Individual servings, unique designs and alternate flavors for every guest allow you to have your cupcake and eat it too!” said Laura Margaret, owner of Stomach Cakes. A cheesecake for every season. Cheesecake can add a rich, decadent flavor to your wedding day celebration. A miniature cake dipped in white chocolate icing and served on a popsicle stick, cake pops are a fun alternative for those looking to shake up the wedding cake tradition. “Cake pops can be decorated any way you’d like,” said Alissa Woods, owner of Cake By Alissa. “And they can look really cool when you set them up. They also make really great favors, and can even act as a place setting or centerpiece for your tables.” Pie not? Whether you’re looking for pumpkin and apple pies to complement a fall wedding, or blueberry and strawberry rhubarb pies to go with a spring or summer celebration, fruit pies are a delightful treat sure to please you and your guests. Looking for something different and unique? Try the pumpkin spice cake from the Lake George Baking Company, made from scratch with buttermilk and filled with vanilla mousse in the center. For the sweet tooth in all of us. Candy stations are another popular alternative. There’s so much to choose from - chocolate covered fruits, decorative truffles and bon-bons, gummy candies, mints, even cookies and gum balls! But above all, “it’s all about the colors,” said April Bruno, owner of Jo-Anne’s Candy House in Wilton, “especially if you display them in decorative vases or vessels.” And, of course, variety. The Lucy Salad

ucy is a couple of years younger than Rory, which of course is hardly that much of a difference now that the two are in their late 20s. But as teens attending Saratoga Springs High School, the age difference was just wide enough to ensure that both their paths never really crossed. After graduating, Rory went off to SUNY Albany, Lucy to FIT in New York City. Absolute strangers with hundreds of miles between them, it would seem that Lucy and Rory were destined to remain strangers. But life has a funny way of working out, and mutual friends with mischief in their eyes are sometimes all you need to give things a push in the right direction. “About a month before I met him, I had been planning to open up my store here,” said Lucy, owner of Lucia Boutique on Broadway. “It was originally going to be just a summer venture type of thing,” she says, and laughs. “I don’t know why I ever thought that would work.” Lucy still remembers the exact date she and Rory were first introduced – “February 10, 2006,” she says, unprompted. Before mutual friends introduced the pair, Lucy planned to stay
The more and more we got to know each other, the more we fell in love. in Saratoga only for the summer. But after meeting Rory, it became clear rather quickly that, business or no business, Lucy would be sticking around for more than just a season. “We both immediately got along so well,” said Lucy. “The more and more we got to know each other, the more we fell in love. There was never really any question.” “It happened very quickly for me,” said Rory, who suddenly found himself going to extraordinary lengths to spend as much time as possible with Lucy. As Lucy was finishing up her last semester of college abroad

in Rome, distance that had once kept the pair separate and unknown seemed like hardly any hurdle at all. For the first time in his life, Rory found himself boarding an airliner and crossing the Atlantic, where he met up with Lucy for eight days of sightseeing and gallivanting through one of the world’s most romantic locations. But for Rory, “It was just another opportunity to spend time with Lucy. Being away from each other for three months was a little difficult,” he admitted, “and so going over to Europe and visiting with her was just a great opportunity for me.” Rome set the stage for the couple, who four years later trekked back to Europe to visit the Cliffs of Moher in County Clare, Ireland. Surrounded by the breathtaking scenery high up on the hills, Rory found himself nervous and out of breath. “I had bought the ring at Finkle Jewelers here and decided to try and sneak it through customs hidden in my boot,” said Rory, who after skirting security planned to propose to Lucy in Ireland. The setting couldn’t have been more perfect. “I remember thinking, as I was struck by the beauty of the setting, that if he was going to propose this would be a great place,” said Lucy. One year later, June 11, 2011, Lucy and Rory Moran were married in a retrofitted family barn, draped with sparkling crystal chandeliers and bursting with close family and friends. The two have rarely been apart since. Travel, food, and traveling for food have become something the new couple loves to do together. In fact, Rory, who plans to open a new restaurant called Comfort Kitchen in the near future, already has a dish set to commemorate his new wife and their common interests. “It’s named after the first meal she made for me, complete with figs and local goat cheese,” said Rory. “I call it: The Lucy Salad.” SaratogaTodayNewspaper.com

A Halloween Ruse
t all began with a little red dress. “I knew then,” said Dan, thinking back to a day over 20 years ago when sparks began to fly. “I said to myself – this is the woman that I’ll marry.” “He still asks me if I have that dress!” said Jill. The marriage between Dan and Jill Snyder is firmly rooted in friendship, a solid foundation that has only helped to strengthen their bond for well over a decade as man and wife. But when the duo first started dating, the transition from casual friends to something more was, admittedly, a little rocky. “Before Dan and I got together, Dan would always throw the best Halloween parties,” said Jill. “But when we first started dating (it was in September), he did not invite me to the party for that first year.” It was, Dan admits, an error on his part, and one that it took some time to live down.
Humor is the secret ingredient in Dan and Jill’s relationship. “Everytime we would go out or see people that we knew, they’d tell us about how great the Halloween party was. I would always look at him and he would go, ‘I know, I didn’t invite you,’” said Jill. It was largely their existing friendship that helped the couple survive the initial stumble. But it didn’t hurt that the next year, Dan pulled out all the stops for Jill’s first Halloween party. Dressed as a couple from the roaring 20s, Dan had to excuse himself from the festivities for a moment to pick up his brother from the airport. “That was the ruse, anyway,” said Dan. A little while later a limousine pulled up to the curb outside Dan’s party. “The limo just waited there until I went outside to see who might be pulling up,” said Jill, “and then he popped out in front of everyone with this big ring that he had made and he proposed to me that way. It was great! I really had no idea!” Humor has played a huge role in Dan and Jill’s relationship. The couple laughs easily and often with each other, and their good-natured jibes and digs are always underscored with warmth and affection. Still, marriage isn’t something that just happens, the couple admits. It’s something that needs to be worked at from both sides, something that takes both care and attention. “At the beginning, she really didn’t have much experience with handling money, so setting up a household budget was dicey. But I was amazed at how good a cook she was, and that made all the difference,” said Dan. “I’d put her spaghetti and meatballs up against anyone’s!” “His confidence about where he was going was always so attractive to me. He always thought a lot about himself!” Jill jokes. “But after marriage, I was pleasantly surprised that during disagreements, he’s the perservering one, the one that stays and insists on working things out.” “Bottom line – get those spaghetti and meatballs!” Dan joked back. d and Veronica Stevens have much to be proud of – two daughters, two sons, eight grandchildren, three great-grandchildren and 55 years of marriage – but none of that would have been possible if the pair hadn’t agreed to meet on a blind date nearly 60 years ago. “Our first date was chaperoned roller skating,” said Ed, who first met Veronica in 1952 while both were attending Saratoga Springs High School. “There were immediate sparks,” added Veronica, as she looks over at her longtime husband and smiles. Somehow, after over half a century of marriage together, those sparks still fly. It wasn’t long before the couple was engaged. Ed was still a junior in high school when he proposed to his young bride-tobe. Just a few years later, in July of 1956, the couple was wed. Looking back at the Stevens’ wedding photos, it’s hard not to be struck by how young and fresh-faced the couple looks. With much of their lives ahead of them, both were still in the process of discovering who they were and, in many respects, what they each wanted out of life. One’s answer may not always have
A young love lasts a lifetime coincided with the other’s, and yet somehow, after all this time, the Stevens have not only made their marriage work – they’ve seen it flourish and grow with each passing year. “Well, to make a marriage work, it all has to be grounded in love, of course,” said Veronica. “But the common interests that we enjoy together such as travel and golf – it’s those things that keep us together,” said Ed, finishing Veronica’s thought. “Not to mention involvement in your children’s activities,” Veronica chimed back in. “From our son’s baseball to our grandson’s basketball, all of that really binds us together as a family.” Shared activities are still a huge part of what keeps the Stevens’ marriage strong and true, from golfing trips to Myrtle Beach to road trips down country drives and tiny side streets. But it’s work, not just leisure, that has also kept Ed and Veronica as close as they are today. 90 | Enchanted Wedding

In 1986, the couple founded the business EBI – Excelsior Beverages, Inc., a family business they operated together for seven years. “It was great having the whole family involved with the business,” said Veronica, “particularly around the holidays, when you wouldn’t believe the activity!” Family is, of course, the most important part of Ed and Veronica’s life together. After 55 years spent building, raising and supporting their family, both find it a source of immeasurable joy when everyone comes together for the holidays. “We’re just so happy that the whole family has stayed mostly local,” said Veronica, who noted that the furthest away a family member lives is Fort Edward. “It leads to the most wonderful holiday gatherings, something we used to host, but now – even better, I get to go and enjoy them!” Even the grandchildren have mostly decided to make the Saratoga region their home, something the couple finds constant strength and happiness in. “Family is the biggest thing in life,” said Veronica, surrounded by portraits of her children, grandchildren, great-grandchildren and more. “It’s without a doubt the most important thing there is,” Ed agreed.

A Dream Come True
A fairytale wedding for a Saratoga princess Story by Barbara Cook

airy tales really do come true. Just ask Patty Riggi. Her autumn wedding at the Hall of Springs surpassed every girlish fantasy – it was beyond her most outrageous dreams. Vincent Riggi, Patty’s doting Prince Charming, also absorbed the enchantment of the day, for he too got his wish. He wanted his bride to feel like a princess at their wedding, and she most certainly did. In fact, Patty says being married to Vincent makes her feel like a princess every day. This fairy tale begins on the morning of October 29, 2011, when Patty was slipping into an exquisite wedding gown, custom designed by Lea-Ann Belter Bridal, a Toronto designer represented locally by Something Bleu Bridal. She was a vision in off-white silk satin. The dress was a modified mermaid with a sweetheart neckline and fluted skirt, featuring delicate lace, hand-embellished with Swarovski crystals and a detachable train. Patty’s hairpiece was custom made by Tessa Designs with hand-wired Swarovski crystals to match her gown and jewelry. She looked and felt like a princess bride. The day unfolded with a ceremony and proceeding reception at the Hall of Springs, located on the grounds of Saratoga Performing Arts Center. They chose the venue for its size and atmosphere. With high vaulted ceilings and marble floors, the Hall of Springs was ideally suited for their 320 guests and the romantic Tuscan-themed décor that transported them across the sea to Italy. Carpeting and drapes were installed to enhance the atmosphere and create the perfect environment for the 14piece band that graced the ears of all in attendance. “Perfect doesn’t even describe it,” she said. Outside, an oxcart overflowing with a bountiful harvest of gourds, apples, mums and flowering kale greeted wellwishers with the promise of a memorable evening.

Thirty thousand roses adorned the interior, forming fragrant, delicately-hued arches in a chapel created especially for the ceremony. Both Patty and Vince included their family in the ceremony and celebration. Patty’s brother, Frankie Eckardt, walked her down the aisle – a runner embellished with the couple’s initials and the date – to her father, who gave her away. Patty’s sons, Johnny and Robert, were ushers along with Vince’s sons, Adam and Matthew. Her daughter, Nicole, was the maid of honor. Vince’s twin granddaughters, Sophia and Josephine, were flower girls and his grandson, Adam, was the ring bearer. Ronald Riggi, Vince’s twin brother, was the best man. A two-hour cocktail reception followed the beautiful ceremony and included a pig roasted right outside the Hall of Springs, a sushi bar, Italian cuisine and seafood. Deep red roses nestled in a weathered wagon held place cards to direct guests to their tables for the surf and turf dinner. Seasonally colored centerpieces interspersed with candles graced the tables. The Sicilian cassata wedding cake with cannoli filling was adorned with ornate gold rosettes and leaves. golden vase of flowers. In addition to the Italian cake, guests had a myriad of desserts to choose from in a special room. Guests danced to a variety of music, from swing to Italian to disco. “Regardless of what age you were, they played the music that you would get out and dance to,” said Patty. Beneath glowing chandeliers, the couple gracefully danced for the first time as husband and wife. With his classic black suit and her floor-length gown, the two glided around the gleaming floor, which was accented by a large, flowing R. Guests weren’t the only ones dancing. Ricardo Sopin and Iraida Volodina from Arthur Murray Dance Studios, who had taught Patty and Vince their wedding dance, entertained the crowd with their artistry. The dancers performed on “Dancing With the Stars” in 2010. Volodina also made Patty’s short party dress. As the evening wound down, the newlyweds had a surprise. The team that created the fairy tale wedding had arranged for a fireworks display. And, adding to the magic, during the fireworks delicate snowflakes began to float from the sky. With all the excitement and decadence brought to their special day, Patty’s favorite part of the wedding was seeing all their family and friends when they arrived at the Hall of Springs. With seven siblings and a multitude of extended family, Patty was pleased that her large family could be together for such a happy occasion, some of them traveling from afar. Adding sweetness to the occasion, Patty’s parents, Robert and Mary Eckardt, celebrated their 57th wedding anniversary the day before. With her family beside her and Prince Charming in her heart, Patty became Mrs. Riggi on a perfect autumn day in Saratoga Springs. “I was very happy that day,” said Patty. “I still am.”
