by Thomas Dimopoulos Saratoga TODAY SARATOGA SPRINGS – Inside City Hall Tuesday night, council members took their chamber room seats behind newly installed COVID-precautionary glass, where they voiced their opinions about decisions that will have long-reaching effects for the residents of Saratoga Springs, and points beyond.

Just outside of City Hall meanwhile, police made several arrests that stemmed from an investigation following protestrelated activities that occurred in

Saratoga Springs in July.

Four people were charged Sept. 7 in connection with the investigation. A fifth person is facing multiple misdemeanor charges following an alleged altercation with an officer outside City Hall.

According to a statement released by Saratoga Springs Police Department Wednesday afternoon, the July 14 protest that started in Congress Park spilled into the streets and interfered with traffic, resulting in motorists stuck inside their vehicles.

Entrepreneur of Corinth

A

century ago, Corinth was home to some of the top Rhode Island Red chickens in the state. Backyard hens have become popular in recent years but poultry breeding was a big business in our region in the earlier 1900s.

Charles August Diedrich was born in 1877 to German immigrants, who came to Corinth in the last half of the nineteenth century. He married Agnes Judge and opened a grocery store in Corinth in the fall of 1900.

Less than a year later he took his brother-in-law, Clifford Bush, as a partner. The Diedrich and Bush Grocery store was located on Palmer Avenue where the current Dollar General now stands.

The progressive grocery store later took orders and made deliveries by automobile, a first in this community. In 1906 they were “dealers in groceries and provisions, fruit, candy, tobacco and cigars, also hardware, tinware, drugs and patent medicines.”

Seven years later they advertised the store as “leading grocers, dealers in grocery and provisions, salt and smoked meats, poultry foods and poultry supplies.” They were also agents for Prairie State egg incubators. This increased emphasis on their

poultry line of goods corresponded directly with Mr. Diedrich’s second endeavor – the Adirondack Poultry Yards. This part of the business was located at his home on the corner of Sixth and Pine Streets, a few blocks from the store. Here he worked to breed some of the finest stock of Rhode Island Red chickens in the area and eventually the state.

All across the region the Adirondack Poultry Yards had displays of their fowl – at the Saratoga County Fair, the Washington County Fair held in Hudson Falls, the Mohawk Valley Poultry Show in Schenectady and the Fort Orange Poultry Show in Albany. Each time Charles Diedrich and his Rhode Island Reds brought home numerous ribbons and cash prizes. In 1913 at the Saratoga Armory Show he had the biggest class of birds in the poultry exposition. An exhibit of the birds won top honors at the state fair and he even showed poultry at Madison Square Garden in 1915. A year later the poultry show in New York City was promoted as an “American billion-dollar industry” and visited by thousands who witnessed the Adirondack Poultry Yards receive numerous ribbons.

Tragedy hit the Adirondack Poultry Yards in the early spring of 1920.

Fire broke out at about 5 a.m., possibly from a defective brooder, a device used to keep young chicks warm. Forty pure bred chickens and thirty large fowl died in the fire. It was reported that all of these fowl had won prizes at the state fair the previous year and many of them were valued at more than $100 each. Mr. Diedrich had no insurance on his poultry business.

Soon he was back in business and shipping eggs to be incubated and hatched throughout the United States. Ironically, he even displayed pet foxes at the Saratoga County Fair in 1921. The last mention in the newspapers of the Adirondack Poultry Yards was in 1925. After nearly 50 years of business Charles Dietrich and Clifford Bush were ready for retirement, closing the store in the summer of 1946. Their innovative and entrepreneurial ideas made their store a favorite for shoppers in the area. Mr. Diedrich’s poultry endeavors were recognized throughout the state and beyond.

Who: Armand Vanderstigchel, Chef/Owner of Brasserie Benelux Q. Can you describe the experience of opening Brassiere Benelux during a pandemic, and why you chose Saratoga?

A. I signed the lease in October, but I have been visiting Saratoga for a long time. I knew when I opened a restaurant it had to been on Broadway. Saratoga is a great inspirational place for me and has done a lot for me so far in terms of my cookbooks, and now it has come full circle because I finally have a restaurant here. It’s a great honor.

Q. Did you experience any challenges opening the restaurant?

A. There were so many things working against us – supply line issues, shortage of materials, and the length of time it took to get permits because everyone was working from home. The City of Saratoga Springs was very helpful, there was just a lot of external factors. Construction was done in early spring when a lot of other restaurants were temporarily closing. I looked at it in a positive light that it would be better to wait to open.

Q. When did Brassiere Benelux officially open and are you still facing any of those challenges today?

A. Around Easter we got our liquor license and that was when everything else started opening up as well.

Surprisingly, towards the tail end of the pandemic, it was a little easier to find help and we were able to obtain some really good employees that are still with us today.

Q. How has business been this summer with the track open?

A. We had a really good summer. When we were open, we were busy. Going into summer we had to restrict our hours because we didn’t have enough help. I preferred to just open at night to give great service and great food. Before the track, we were open five days a week with lunches. When the track started, we decided to open on Tuesday nights as an extra night. Now with fall, we are going back to five days and two lunches on Saturday and Sunday.

Q. How do you expect business to be this fall?

A. We just signed up with Discover Saratoga, so we are looking forward to doing a lot of conventions and parties in our party room in the back. I think the fall is going to be great.

Q. What are the reviews and feedback from the community so far?

A. From the moment we opened we got tremendous, positive feedback. People like the fact that we offer a different cuisine in the restaurant scene of Saratoga. There are a lot of great Italian, American, and Mexican restaurants, but our food is a celebration of European beer culture. We feature foods from Belgium, Holland, Germany, Austria, Poland, and France. We also have a lot of local beers on tap because we support local companies, such as Common Roots from Glens Falls.

Adirondack Cuisine was published with Norton Books, resulting in a PBS Mountain Lake series called Adirondack Cuisine. Wings Across America, Chef Armand’s first national book, led him to become a judge at the National Chicken Wing Festival in Buffalo, held at the Buffalo Bills stadium every year; he was also inducted into the Chicken Wing Hall of Fame.

Pia Marie D’Aiello

was a prolific artist who worked in multiple mediums but is best known for her tremendous oil painting and her sensitive and delicate watercolors.

While growing up in NYC she resided with her mother, Gloria, also an artist and art teacher, and her two brothers Edward and Peter in Westbeth Artist Housing, the first federally funded artist housing of its kind.

While living in Manhattan she created a successful Papiermâché hat doll business that resulted in her having a whole window display in Bonwit Teller on 5th Avenue. The most recent showing of her art was in a trigenerational art show at Madison Art Cinemas with her mother,

Gloria and daughter, Abigail, also an artist. During her life Pia had the opportunity to travel to Haiti, Paris, Southern France and Spain. She was married to Robert C. Wilcox for a time.

Pia is pre-deceased by her brother Peter J. Wall and is survived by her mother, Gloria D’Aiello Wehle, her brother Edward J. Wall and her daughter, Abigail Deborah Wilcox as well as her extended family in Saratoga Springs and the tri-state area.

There will be a memorial service at Connecticut Valley Hospital in September. One of Pia’s paintings is being gifted to the hospital.

Employed by General Electric Co. 37 years, retiring in 1992, Dick was a Sonar Electronics Design manager. Starting in 1993 he worked as an Adjunct Professor for Onondaga Community College for a few years.

He was active in many civic activities and fraternal affiliations: GE Syracuse Elfun Society, chairman 1986; Syracuse YMCA Board of Directors, Lake Shore Yacht and Country Club, and Saratoga and Liverpool United Methodist Church. He was especially active in Optimist International. He originally joined the Optimist Club of North Syracuse, NY and was a secretarytreasurer, president, and director.

On the NYS District level he served as lieutenant governor, oratorical contest chairman, membership and attendance chairman, governor-elect, governor, and is a golden circle member. And he was a charter member of the Optimist Club of Liverpool, NY. Dick’s hobbies were golf, bowling, and photography. He was

a huge fan of Syracuse University football and basketball.

Along with his parents, Dick was predeceased by his sister Beverly Kittrell and his brother Robert (Bobby) Bauer. Surviving is his beloved wife Irmgard (Irmi) Bauer; a son Richard J. (Kim) and a daughter Donna B. Peck (Jack); three grandsons, Gregory R. Bauer (Emily), Christian J. Bauer and Garrit J. Peck; one step-grandson Joshua P. Peck and two greatgranddaughters Renée S. Bauer and Cecilia (Cece) G. Bauer.

A private memorial service with military honors will be held at the Gerald BH Solomon Saratoga National Cemetery, 200 Duell Road, Schuylerville, NY 12871 on Friday, September 10, 2021, at 9 a.m. Arrangements are under the direction of the William J. MIDDLETOWN, CT — Pia Marie D’Aiello, formerly Deborah Ann Wall Wilcox, passed away on August 7, 2021 at 71 years old. Pia was born in Saratoga Springs on February 27, 1950. She was a resident of Connecticut Valley Hospital when she passed, where she had been a patient since June 1990.

SARATOGA SPRINGS — Richard (Dick) C. Bauer, 91, passed away Saturday, September 4, 2021, at Saratoga Hospital. Born in Batavia, NY to the late Gertrude and Orville Bauer, he was a 1948 graduate of John Marshall High School in Rochester, NY. Dick attended Union College in Schenectady. He then enlisted in the Air Force as an Electronics Instructor and served in Keesler, Miss. AFB and Freising, Germany. He graduated from Syracuse University with a BS in Electrical Engineering in 1958 and was elected to the Eta Kappa

Beverly Valentine

SARATOGA SPRINGS — It is with deep sadness that we share the passing of Beverly Ann Hanna Valentine who left this world on Wednesday, September 1, 2021, surrounded by her loving family.

Beverly was a lifelong resident of Saratoga Springs, living at various addresses in and around the city.

She was the only child born to the late Spencer Jay and Mary Frances (Hickey) Hanna on August 21, 1933. She attended St. Peter’s Academy and graduated from it in 1951. Following graduation, she went on to work for the New York Telephone Company as a long-distance operator. She met the love of her life at a local restaurant when Ed (a Tennessee native stationed at the Air Force’s local radar station) was given a quick introduction made by the waitress and then asked to move out of the way and take a seat for a night of conversation. That began a long history of togetherness, sharing over 48 years together from the time of their marriage on February 1, 1953.

Ed and Bev went on to raise four children on Pinewood Avenue, known years later by friends and family as the “Leave It to Beaver” Street. Beverly thoroughly enjoyed the social scene in Saratoga Springs, especially August at the track and her day trips shopping and lunching with friends, especially enjoying a Lillian’s hamburger.

Every February 1st she made the yearly pilgrimage to the Geiger outlet in Middlebury, VT to shop

for the latest woolen fashions to add to her collection. She made friends with a large group of women in the Red Hat Society. This trip was the highlight of her monthly calendar along with “besties” Karen Brown, Karin Noob, and Carm Moffett.

Following busy times in the summer months, Beverly also enjoyed winters in Florida with Ed. Beverly enjoyed planting rose bushes but wouldn’t prune or cut any tree in her yard until it was well beyond the pruning stage.

She never moved further than her kitchen table, because all the problems of the day were solved here with a cup of instant coffee.

She enjoyed her daily crossword puzzles (pencil only). She also enjoyed her Lhasa Apso’s: Mr. Bud, Maddie and Sam. They were a big part of her family after her children had moved away from the Pinewood Avenue home. Beverly was also a lifelong communicant of St. Clement Church.

Along with her parents, Beverly is predeceased by her husband Edward Valentine who passed away September 17, 2000. She is survived by her four children: son Michael (Ann) Valentine, daughters Mary T. (Bernard) McCue and Cheryl (Charlie) ValentineHobbins, and son Scott (Jennifer) Valentine; her grandchildren Marcus (Lucia) Valentine, Wesley (Jolinda) Valentine, Tyler (Stefanie) Parisi, Stephanie Valentine, Trevin Valentine, Shayler Valentine, Jesstin Valentine and Caden Valentine, Tessa Valentine, Malina Valentine, Chauncey Valentine-Hobbins and great-granddaughters Charlotte Maben and Daisy Valentine.

David Morris, 21, of Troy, was charged Aug. 29 in Saratoga Springs with criminal possession of a weapon, and criminal possession of a firearm – both felonies, criminal possession of a controlled substance, unlawful fleeing a police officer in a motor vehicle, reckless driving, and aggravated unlicensed operation of a motor vehicle.

Narrative: At approximately 12:30 a.m. on Aug. 29, while on patrol, a Sheriff ’s Deputy observed a 2005 Ford Freestyle SUV commit several traffic infractions. The deputy attempted to stop the vehicle, but the driver did not pull over. A short pursuit led to the vehicle crashing into a fence near the intersection of Rock Street and Maple Street. Morris, alleged to be the driver of the vehicle, was placed into custody. Two occupants of the vehicle fled on foot and were not apprehended. Cocaine is suspected to be in the car, and Morris is accused of unlawfully possessing a 9mm pistol.

Historic Congress Park tour meets in Congress Park in front of the Canfield Casino at 10:30 a.m. Additional Autumn Strolls include tours of mail-order houses of the east side on Oct. 3, the return of Pups for Preservation on Oct. 17 where dogs and their humans stroll North Broadway, and the Gut neighborhood on Oct. 24.

All Sunday morning tours last approximately 90 minutes and require walking and standing on varied terrain. Tours will be limited to 30 people and tickets must be purchased in advance.

Saratoga County Provides Tips & Resources For National Emergency Preparedness Month SARATOGA COUNTY — Saratoga County Office of Emergency Services (OES) reminds residents to be ready and to have a plan in recognition of National Emergency Preparedness Month. Officials recommend residents take advantage of resources from Saratoga County including the CodeRed emergency notification system and Special Needs Registry in their readiness planning.

Residents can sign up for the County’s CodeRed emergency notification system to stay informed of emergency situations such as storm advisories, boil water advisories, road closures or important COVID-19

information. By enrolling in this free service, residents will receive text messages or emails in the event of a critical event near them.

Participants will receive “passports” which list locations and unique historical items. They will then hunt for each object and record its location in their passport, learning about local and regional history along the way. The first three completed passports received by the History Center will win prizes.

Participants are also encouraged to post their sleuthing adventures on

social media, tagging the History Center as appropriate.

Historians and volunteers at each location will be eagerly awaiting arrivals and ready to answer any questions.

DIGITIZING HISTORY Geyser Crest Well Saratoga County Oral History Project Online at Saratoga Springs Public Library SARATOGA SPRINGS — A digital exhibit, featuring more than one dozen local voices and images, has been made available via the Saratoga Springs Public Library website.

The Saratoga County Oral History Project — a collaboration between the Library, the city and county historians, and the Saratoga County History Center at Brookside Museum — includes several interviews that are part of the West Side Oral Narrative Collection.

The interactive exhibit highlights several interviews with community members whose voices and stories were initially captured on what was the technology of the time - cassette tapes.

The taped interviews, which have been languishing on shelves for many years before recently being digitized, offer poignant insights into how people came to live in the area and what their families’ experiences were like. The stories offer glimpses into life

on the Brookside Dairy Farm in Greenfield, the early days of Mt. McGregor as a tuberculosis hospital, reminiscences of the early Pitney Farm, and a description of the development of the Saratoga Spa as a medical facility.

Also featured are - interviews from that collection commemorating the Feast of St Michael, an annual celebration for many years on the City’s West Side, were previously included in the Library of

Congress’ Local Legacies Collection.

The Project Committee included Lauren Roberts, MaryAnn Fitzgerald, Trevor Oakley, Anne Clothier, Jim Richmond and Lorie Wies. Members of the Saratoga County History Roundtable also contributed to the exhibit.

System Upgrade Design Underway

SARATOGA SPRINGS — Department of Public Works Commissioner Anthony “Skip” Scirocco announced last week that the Geyser Crest well system will be upgraded to increase water draw from well #7. DPW contracted with CT Male Engineers of Latham to study and design the rehabilitation of Geyser Crest Well #7.

The Geyser Crest well system represents a critical water supply source for the City’s southwest neighborhoods, and along with the Bog Meadow wells, supplements the City’s main water source at Loughberry Lake.

“This is an investment into an important part of our water infrastructure to ensure the continued delivery of great quality water to the southwest neighborhoods of our city, ” said Scirocco, in a statement. “The growing infrastructure needs of Saratoga Springs continue to expand and it’s important to plan for today

with a vision toward what will be needed in the future.”

Well #7 had originally yielded 500 gallons per minute (GPM) when it was installed in 1988 but is currently averaging around 180 GPM. CT Male Engineers will investigate the current well issues and determine how to increase the GPM flow. Their services include investigation, design, and construction administration services.

The actual construction of well #7 improvements will be handled by a well drilling contractor through a separate request for proposal.

DPW hosted a kick-off meeting with CT Male Engineer Jonathon Dippert, P.G. on Tuesday, August 31, 2021 to start the project.

DPW anticipates the engineering analysis, design and construction bid documents by CT Male Engineers will be completed during the Fall of 2021 with the construction phase to follow shortly thereafter.

“This included one motorist who suffered from a heart condition, which was openly shared with protestors blocking his vehicle in. After learning of these added details regarding this protest, Chief (Shane) Crooks ordered that an investigation be conducted and that those identified be charged and held accountable, where appropriate,” according to the statement.

Subsequent to the investigation, arrest warrants were obtained on Aug. 31, and arrests made Sept. 7. They include: Samira K. Sangare, 23, of Halfmoon, Chandler M. Hickenbottom, 25, of Ballston Spa, and Molly B. Dunn, 44, of Saratoga Springs, each charged with disorderly conduct: obstructing traffic, a violation.

Dunn was additionally charged with unlawful imprisonment in the second-degree, a misdemeanor.

Alexis A. Figuereo, 34, of Saratoga Springs, was charged with disorderly conduct violation, and two misdemeanor counts of obstructing governmental administration - the latter charges in connection with Figuereo’s alleged disruption of Saratoga Springs City Council meetings on July 6 and July 20, according to police.

Police said the charges from July 14 allege “the protestors not only obstructed traffic, but by doing so they prohibited the movements of those on Broadway

individual with the medical condition noted above.”

According to court documents, a voluntary witness whose name was redacted in court records provided police with a statement dated Aug. 12 that read, in part, that the July 14 protest resulted in halting vehicle traffic. “They had the traffic stopped for about 15 minutes before they let the cars go.

At one point while I was stopped, one of the protesters thanked me for waiting…I have never been in a situation like that. I was surprised it was happening in Saratoga.”

Gabrielle C. Elliot, 27, of Ballston Spa, was charged Sept. 7 with attempted assault, resisting arrest, and endangering the welfare of a child. All three charges are misdemeanors. While officers were affecting warrant arrests Tuesday night, Elliot is accused of throwing and striking a uniformed officer with a full water bottle who was involved in the arrests. When informed she was under arrest, Elliott refused to comply and pulled away from officers, according to police, and grabbed on to the stroller where her small child was seated until she was taken into custody. Police said “the child was fine and sent with another family member at the scene.”

“The Saratoga Springs Police Department recognizes the right to peacefully and lawfully protest but many of the acts committed on July 14 are not only unlawful acts, but they placed the protestors and the public in harm’s way,” Chief Crooks said, in a statement.

NEWS 9 Police say the investigation of the events of July 14 is ongoing and additional arrests are likely.

CITY COUNCIL Saratoga Springs City Council adopted a variety of measures Tuesday night. They included: • The council approved the sale of a city-owned property located at the southeast corner of Caroline Street and Henry Street to Frank J. Izzo, of Ballston Spa, for $801,000. Adjacent to the public library and currently used for surface parking, the city has owned the parcel since the early 1980s. It consists of approximately 7,344 square feet or 0.17 acres. A recent appraisal set the property value at $500,000. The $801,000 bid by Izzo was the only bid submitted. The closing is anticipated to take place within 60 days.

• The council unanimously approved a bond resolution regarding the proposed East Side

Fire/ EMS station on Henning Road.

The City Council plans to finance the total cost by the issuance of serial bonds of the city in an amount not to exceed $6.7 million.

“We are ready to bond, we are ready to build, we still need to work on the employment model,” Finance Commissioner Michele Madigan said. Since bonds will not be publicly sold until next June, a bond anticipation note is being secured to cover any costs needed until a bond is obtained.

• The city approved “a jumpstart investment” by moving to grant $250,000 to the Saratoga Springs City Center “One of its prime revenues is hotel occupancy tax, bringing in about $1.2 million for the City Center.

As you know our occupancy tax (due to COVID) has dropped significantly,” Madigan said.

“They find themselves in a serious cash flow deficit and are working

through this…I do see them as too big to fail which is why we have this on the agenda.”

• The council unanimously approved the 2022-2027 Capital Budget. The six-year plan is flexible and may be altered as the council sees fit. The six-year plan currently counts 26 projects at a total cost of approximately $6.5 million, with the Loughberry Lake Dam – at a cost of $1.275 million, at the top of the committeeranked project list.

• Outlook – 2022 Budget.

Approximately $57.65 million in requested general operating fund expenses. “While 2021 revenues continue to improve (and) 2022 projections are very strong, matching the $57.65 million in expenses remains beyond our current outlook,” Madigan said.

The 2022 Comprehensive Budget will be presented at the Oct. 5 City Council meeting.

A First Responder

SARATOGA SPRINGS — Barbara Floryshak remembers marveling at the view when her eyes scanned the landscape of the great city.

“Up at the top you saw all of New York City, the city in all its glory and vastness,” she says.

“There was a young lady visiting from Germany. I asked her, ‘Hey would you like to go over to the World Trade Center?’ So we went, got on the elevators, rode all the way to the top. When we were in the elevator, I remember telling her about the first time we had a bombing, in the garage.”

In February 1993, a terrorist bomb had exploded in a parking garage of the World Trade Center. Six people were killed that day and more than 1,000 injured. Later, the FBI would refer to the attack as a deadly dress rehearsal for 9/11.

“We saw the view, we came down, and I put her back on a plane.

That was on Monday. On Tuesday was when 9/11 occurred.”

Rev. Dr. Barbara Floryshak served as a pastor at Tribes Hill Presbyterian Church near Amsterdam, NY and has served a part-time as Chaplain at the Albany VA. Originally from Long Island and a Saratoga resident since 2006, while with the ministry she became a go-to person with people visiting from Germany.

“I became their guide to New York City, because I knew the city back-and-forth having graduated at NYU,” she says. Floryshak had lived in Germany for a spell, where she has a familial background. “I was almost stuck behind the Berlin Wall in 1961 – but that’s a whole other story.”

On Sept. 12, 2001, she returned to the Trade Center. “It was a day later. I went down and responded to the area for people who lost somebody and needed help spiritually,” says the retired Presbyterian minister.

“The subway was bombed out, so I had to take a bus from Grand Central. It was terrible. You’d just see a white cloud with all this stuff floating around. Nobody was wearing masks or anything. And it was heartbreaking to see where the building used to be, not being there. It’s hard to explain.”

Hundreds of rescue workers descended upon Lower Manhattan searching for survivors and sorting through the ruins.

Floryshak stayed at the Marriot Hotel near Ground Zero for several days. “They were using a church, an Episcopal church there, for recovering the bodies, I think it was. It was a terrible scene. I was trying to help people emotionally and spiritually – the first responders, the people from the families,” she says. “I was with a priest down there and I remember him saying: the hardest thing is to give counseling to the families of people who just jumped out the window. He was having a hard time, too, just trying to give some comfort, because how this all happened, it doesn’t make any sense.”

Floryshak’s son worked downtown. He was able to make it out. His best friend with whom he graduated from Syracuse that year, did not. He worked on the 100th floor. “He was supposed to go to his friend’s wedding the next week. Instead, he had to go to his funeral. His best friend.

When I go down there now, I look for his name.”

In the 20 years since the attacks of 9/11, memorials have been sited across the country. In Saratoga Springs, at High Rock Park, stands the 25-foot-tall sculpture titled “Tempered By Memory.”

Commissioned by Saratoga Arts and created by artists Noah Savett and John Van Alstine, it is comprised of five twisted pieces of Trade Center steel. Four pieces came from the North Tower, one came from the South Tower. It is not an easy memory. After much public and political debate of potential sites that varied from

the City Center to the Visitors Center, the sculpture stood in a field in Northumberland awaiting a permanent location in Saratoga Springs. It was eventually placed at High Rock Park in 2012.

Floryshak has since made several trips from her upstate home to downtown Manhattan. “There was an organization for people who lost their loved ones and First Responders, and I became a part of a group. They got together once a year, so every year I kept on going down,” she says.

On the first anniversary of the attacks, she befriended a woman who explained she had lost her son who was working on one of the upper floors in one of the towers. A requiem was sung for the people who had passed away.

A memorial gathering was being staged. “It was in the morning and when I started walking down the street, suddenly I couldn’t walk. The wind was so terrific it stopped me in my tracks. It was the same time, the same day, one year later. I said to myself: what is going on? Eventually I got on a train and went back to Albany.

The very next day I picked up the paper and there it was. It showed all the people around doing the ceremony, but the wind was blowing so hard things were flying all over the place.”

At Ground Zero, while the families of the victims crowded deep in the pit around the Circle of Honor while all 3,000 names were read aloud, the wind slipped over the sides and whipped the dust into a thick cloud that billowed all through the complex, eerily replicating the smoke that hung in the air a year before,” wrote Charles Shaw in 3 a.m. Magazine.

“When I picked up the newspaper the next day and looked at the picture, the caption read: ‘Are Those The Lost Souls Coming Back?’ Floryshak says. “For people who are not involved spiritually, it maybe doesn’t matter. But to me?

In 2011 I went to Dana-Farber in Boston. They took out a lung. It’s connected to my time there, it’s all a result. So now this year they’re working to give me radiation and

I’m just trying to find out if I have some more cancer in it, so I don’t know if this is kind of the end or what,” Floryshak says. “I yell at myself: ‘Why did you go down there?’ And then I snap back: ‘You went down there to help out,’ so I have to put it aside.”

Freedom doesn’t come free.

This was never more evident than September 11, 2001, when radical Islamists from 7,000 miles away launched the most sophisticated and deadly terrorist attack in world history.

Families sat in shock, worried about loved ones, while young

patriots answered the call and signed up for the armed forces. The American spirit is strong, and we don’t take kindly to attacks on our Republic, or our brothers and sisters.

Our nation mobilized as we prepared for the global war on terror. American flags lined our streets, and patriotism was at an alltime high. It was the best of times, and it was the worst of times.

Now, two-decades later, those terrorists are back in control of their heartland, Afghanistan.

Their immediate neighbors, the Islamic Republic of Iran and the

Islamic Republic of Pakistan, share similar goals of extremism and global Islamic dominance, ruled by Sharia law.

After the attack it was easy for us to label the terrorists cowards, but make no mistake, they are not cowards. They are ruthless, calculating, cold-blooded killers who will sacrifice their lives in the name of religious extremism.

They have been killing for centuries, and they will kill for centuries more.

While there are differing views on our role in the middle

east, I think all sensible Americans can agree on one point: we need to secure our nation. This means tightening our borders and enforcing the existing immigration laws. Vet those coming into our country and make sure they share our values. In July alone, 212,000 immigrants were apprehended at the southern border and released into our nation. In just one month, it was nearly the population of Saratoga County!

The sad reality is, if we can’t control our borders, there will be another 9-11.

We owe it to the fallen, and the survivors, to never forget the events of 9-11; never forget those who lost their lives; never forget the children left orphans; never forget the mothers who will never see their children again; never forget the service men and women who fought and died far from home; and never forget the realities of the world we live in.

Remain vigilant my friends, and always do the next right thing.

20 years ago, life in our country changed. Even in the quaint village of Ballston Spa, we had a new perspective on life. To remember those who we lost, the community of Ballston Spa came together to created its own 9/11 Memorial Garden, next door to Village Hall. The Memorial, complete with a section of the subway track that ran under the Twin Towers, is a treasured part of the Ballston Spa community.

Saratoga-Wilton Elks Lodge No. 161’s 53rd Flag Day Parade will take place Sept. 11, at which time it will commemorate the 20th Anniversary of the 9/11 tragedy.

Parade participants will march down Broadway in the City of Saratoga Springs starting at 12 p.m.

This year’s ceremony is very special. The 20th Anniversary marks an important milestone for all Americans. To honor those who died in the attack and those who gave their lives trying to save others, Ballston Spa is planning a special ceremony.

This year’s parade theme will be “Honoring Our First Responders.” The Elks plan to honor not only our brave local first responders who went to New York City to assist with search and rescue efforts after the Twin Towers fell, but also our community’s first responders who have been at the forefront of the local response to the COVID-19 pandemic, including medical personnel, public health officials, law enforcement members, and emergency services personnel.

The program will include music by the Union Fire Company Band, a dramatic light display and art banners, presentations by elected officials and a special candlelight ceremony. The event will be attended by the McBoston Fire Truck flying their massive American Flag and members of the local Fire Companies, Police and Ambulance Corp.

Everyone is welcome to attend this personal small town event. Bring a chair. We will be following CDC guidelines.

A Grand Opening for The Dance Factory

Saratoga TODAY SARATOGA SPRINGS — The Dance Factory, one of the most renowned performing arts studios in the Capital District, is celebrating the grand opening of their new studio space in the Wilton Mall this month.

The Dance Factory held a ribbon cutting on Sept. 7 to formally celebrate the grand opening of their new studio after relocating inside the Wilton Mall to a larger space across from Bath & Body Works. The Dance Factory moved into the Wilton Mall in 2016, and the new studio is triple the size of their previous space at approximately 6,000 sq. ft. Classes will begin on Friday, Sept. 10.

The studio features two dance floors, a lounge for parents, a lounge for dancers, and a small

boutique – “Tutu Perfect” – with leotards, dance dresses, and other dance accessories. Owner Dianne Sporko-Carola said that the space, formerly a Forever 21, is a perfect fit with the large windows for displays, ornamental shelving, and even chandeliers in the dressing rooms.

“This isn’t your typical dance studio,” said Sporko-Carola. “I wanted this place to be sparkly and magical.”

Sporko-Carola has done just that with her decorating, giving the studio a bright, positive atmosphere for dancers with personal mementos and motivational signs.

“Like one of my signs says, this is my happy place,” said Sporko-Carola. “I have spent my whole career doing this and I wouldn’t trade it for the world.”

Sporko-Carola is in her 44th season of her career. The Dance Factory offers classes in ballet,

pointe, jazz, hip-hop, tap-dancing, and more. The studio puts on performances at least twice yearly in June and at Christmas. They teach dancers as young as threeyears-old to seniors in high school.

But there is really no age limit, as Sporko-Carola has a group of tapdancing mothers and grandmothers and even a group of fathers who have been taking lessons from her for five years now.

To this date, Sporko-Carola has seen up to three generations of dancers walk through the doors of her studio. Students who have graduated often come back to teach the younger ones and go on to have successful careers in dance, including her daughter Rachel who is a professional dancer.

“They learn a lot of life lessons

here like time management, teamwork, commitment, and dedication,” said Sporko-Carola. “They make lifelong friends here and grow up with each other.”

Saratoga TODAY HALFMOON — Trader Joe’s new location in Halfmoon is officially open for business.

On Sept. 8, the Trader Joe’s in Halfmoon opened its doors following a ribbon-cutting ceremony.

At 3 Halfmoon Crossing, this is the first Trader Joe’s in Saratoga County. Store Captain Thomas Witte, who is a 20-year veteran of the company, will manage the approximate 12,500 sq. ft. store, open from 8 a.m. to 9 p.m. daily.

The ceremony also featured live music, and the first 100 customers were given a bouquet of fresh flowers and a welcoming from Trader Joe’s Crew Members. There was a build-up

of excitement in the community around the opening, and a line had already formed before the ribbon-cutting was underway.

“Some faces I recognize from around the community, and some I don’t,” said Witte after the ribbon cutting. “We are hoping to make a good first impression here today.”

Trader Joe’s offers “unconventional and interesting products” with their label, as well as fresh grocery staples. This location features colorful artwork that pays tribute to the area, including the Twin Bridges, Saratoga County apple orchards, and wildlife native to the shores of the Mohawk and Hudson Rivers.

“The Town of Halfmoon is proud that Trader Joe’s has chosen Halfmoon as its home for

another location. Trader Joe’s will be another grocer that provides unique products to our town’s residents and our community,” said Town Supervisor Kevin J. Tollisen. “At the grand opening this morning, it was evident that so many people were looking forward to this new grocer in our community. We wish Trader Joe’s great success in the Town of Halfmoon and thank them for their long-term investment in our community.”

SARATOGA SPRINGS — The New York Racing Association, Inc. (NYRA) announced that the 1863 Club at Saratoga Race Course will for the first time be available for private events during the racing off-season.

The 1863 Club, which debuted during the 2019 season, is a three-story, climate-controlled hospitality building located on the Clubhouse turn overlooking the historic main track at Saratoga Race Course. The building features hospitality options for a wide variety of uses and experiences, including weddings, fundraisers, reunions, and corporate dinners.

SARATOGA SPRINGS — The judging is complete at the 54th annual World Dairy Expo, and once again Stewart’s Shops has some of the best dairy products in North America. The judging is based on flavor, body and texture, melting quality, appearance and color.

Stewart’s Shops had a total of six winners at the competition, two first place winners, a second-place finish, as well as three third-place finishes. This year’s competition received over 1,400 submissions from dairy producers across North America.

Stewart’s Shops officially has the best chocolate ice cream in North America – Stewart’s Chocolate Ice Cream was the winner in the Regular Chocolate Ice Cream category. Stewart’s Mango Dragon

Fruit debuted as a seasonal flavor in 2020 and quickly became a customer favorite, as it was named The Best Sherbet in Show for the Open Class Sherbet category.

Mango Dragon Fruit is now available in half gallons at all shops.

The three third-place finishes were in the frozen dessert division: Mint Cookie Crumble in the Mint Ice Cream category, Peanut Butter Pandemonium in the Ice Cream with Peanut Butter category, and Milk Chocolate Gelato in the Gelato category.

Also notable, Stewart’s Milk was awarded second place in the Open Class Pasteurized Milk category. All of Stewart’s Shops dairy products are made fresh at their plant in Greenfield, NY with milk picked up from over 20 local family dairy farms.

Forensic Marketing Technology Captures Evidence in Albany Jewelry Store Heist Becomes First Case in Northeastern US to Utilize SelectaDNA ALBANY — Shepherd Communication & Security, a leading provider of advanced technology solutions for electronic and specialty security systems, and CSI Protect, the exclusive U.S. distributor of SelectaDNA forensic marketing and technology, has announced the first successful use of synthetic forensic technology as a crime-fighting tool in the Northeastern United States.

Deploying innovative SelectaDNA technology, synthetic DNA evidence was captured following an April 23 larceny at Truman Jewelers at 71 North Pearl Street in downtown Albany.

In that incident, a suspect made off with approximately $4,000 in merchandise. Unbeknownst to him, he was “misted” by a forensic Criminal Tagging System, which had been installed at the store

by Shepherd Communication & Security as part of a pilot crime suppression initiative.

The forensic marking, or synthetic DNA, is applied covertly using a water-based, non-toxic solution that is invisible and remains on a suspect’s skin or clothing for months after being misted, enabling authorities to scientifically and irrefutably identify them long after a crime is committed. In this case, after the alleged perpetrator was apprehended

by Albany Police, forensic mist was detected on his person using a special frequency UV light.

The evidence is now available to prosecutors as the case proceeds through the legal system.

SARATOGA COUNTY — Tri-County Literacy Center is excited to announce that they have received a three-year pledge from The Sandy Hill Foundation for their reorganization project.

This funding will enable TriCounty Literacy Center (TLC) to help their neighbors improve their lives by fostering literacy skills through practical, learnercentered education. TLC provides adults in Warren, Washington, and Saratoga Counties with oneto-one volunteer tutors who work with their learners to help them achieve their literacy goals.

Participants will be provided a hands-on learning experience from professional shearer Siri Swanson.

Siri Swanson is a Shepherd and Shearer of Yankee Rock Farm.

Swanson has an abundantce of background knowledge in the sheep industry and has been shearing for the last five years. Siri along with shearing partner, Colin Siegmund, strive to maintain animal comfort and top-quality clipping.

“MOTHERING BOYS” ’m sure all mothers know that feeling of being at both ends of a spectrum of emotions at the same time. When you can’t wait for your baby to become more self-sufficient and less needy, for example, and yet you lament the fact that the time is going way too fast and why can’t they stay little forever. Or when your kids are hanging backwards off the couch for hours/days/weeks in the summer moaning because they have nothing to do and you long for school to start again, and then it does and you’re all going from the crack of dawn until bedtime with all of the busyness of the school year and you wish it was summer again.

Or you think that these carefree kids who make fun of you for always being tired and cranky have a real thing coming when they have to start jobs and have adult responsibilities, and then those things start happening and you cry into your coffee because you know that their carefree days will never be here again and you feel so bad for them.

It’s exhausting, this “both/and” existence! And I have been over my head in it all summer.

My oldest is starting his senior year in high school!

We’re (I’m) thinking and talking all the time these days about college and career ideas, and he worked two jobs this summer to save for school and life expenses, and I could just bust with pride and devastation that my tiny boy is such a man.

I read Charlotte’s Web to the boys as I’ve done every summer for years, but only to the younger four because the big boys were always at work or doing other big-boy things. My tallest boy’s pants have a 36” inseam, and I also bought a size 3T T-rex costume as a birthday present for my dino-obsessed baby. I spend a lot of time making mental lists of the things my oldest will need for his first away-fromhome living space next year while also trying to adjust to the fact that my youngest is transitioning out of his daily naps.

It’s no surprise to me at all that the day I emailed the baby’s teacher to introduce myself, which was also

I think so often of my mom and the other older moms I know when I’m wrung out with the intensity of coexisting happiness and sadness because of these kids and coexisting big boy things and little boy things — they all went through these kinds of things and survived, after all. Not a one of them has disappeared in a puff of exhausted smoke; not a one of them has gotten whiplash from the back and forth between emotional extremes, or spontaneously combusted from feeling everything all at once. It’s just the growing pains of motherhood, I guess! I bet a lot of you are feeling your own versions of these things as your kids go back to school — good luck to you all and be patient with yourselves!

My youngest, who I still refer to as “the baby,” is turning three today and will be spending a little time in his nursery school classroom this morning to meet his teacher and see all the “big boy things” he’s heard about from his brothers, and I’m so thrilled for the fun he’ll have and absolutely wrecked that my baby is so big.

My exact middle boy — the one who has three older brothers and three younger brothers — is moving on to middle school this year, which means that I’ll have more kids in the big school than in the elementary school. I’m finding it very difficult to wrap my mind around this whole-family shift from a family with mostly little ones to a family with mostly big kids — I really can’t think too much about it.

I constantly look at the enormous desk calendar I’ve started writing everything on (since the normal-sized wall calendar I’ve always preferred to techie options is no longer nearly big enough) — I check in with it frequently during the day, updating and revising our family’s goings-on as needed; it’s the first thing I look at in the morning and the last before I go to bed.

Whether I’m laughing or crying — or both — with little boy stuff and/or big boy stuff, my to-do list and daily calendar keep me focused and able to care for

Estate Planning Post-Pandemic a look back and the path forward

by Matt Dorsey for Saratoga TODAY Given that we are still dealing with the impact of the Covid19 Delta variant, people can differ as to whether we are truly “postpandemic” at this time. Hopefully, however, we are past the worst of the Covid-19 pandemic and can look to forging a path forward.

Before determining that path, it would be advisable to reflect on how the pandemic changed the world of estate planning since the early months of 2020.

Remote Notarization Authorized by Executive Order On March 19, 2020, the Governor signed Executive Order 202.7 allowing remote notarization.

This authority permitted a Notary Public to notarize the signature of someone who they saw sign a document via video conference. The Governor allowed for this authority so that important documents like deeds or powers of attorney could be notarized without the need for the Notary Public to be physically present with the signer. At the time, due to lockdowns, quarantines, and other restrictions, it was increasingly difficult to access the services of a Notary Public.

Remote Witnessing Authorized by Executive Order On April 7, 2020, the Governor signed Executive Order 202.14 allowing remote witnessing. This authority permitted remote witnessing of certain legal documents, including wills and health care proxies. The authority for remote notarization and remote witnessing allowed basic documents for an individual’s estate plan (will, health care proxy, and power of attorney) to

be executed without the witnesses and a Notary Public being present with the signer.

On June 24, 2021, the New York State of Emergency expired, and the authority for remote notarization and remote witnessing ended. This is important, because any document utilizing those techniques from June 25, 2021 forward would not be properly notarized and/or witnessed.

The Future of Remote Notarization & Remote Witnessing Undoubtedly, remote notarization and remote witnessing were important tools during the worst days of the pandemic. In their absence, it would have been more difficult, or even impossible, to get important documents signed by clients. Whether remote notarization and remote witnessing might be made legal in the future in New York is uncertain at this time.

I currently have the honor of serving as the President of the Estate Planning Council of Northeastern New York. Last year, our group hosted a panel with three local Surrogate Court Judges, who gave us their view from the bench regarding a variety of legal topics. In response to a question about the judges’ opinions regarding remote notarization and remote witnessing, all the judges agreed it was a positive development. Given that these processes have been viewed favorably by respected members of our judiciary, we may see an effort to make them a permanent part of New York law.

Other Options Beyond Remote Notarization and Witnessing Currently, there is no real alternative to remote notarization; however, a version of remote witnessing is available. Remote witnessing pursuant to Executive Order 202.14 allowed the witnesses to be in a physical location different than the signer. As long as the witnesses could see what the signer was doing via video conference, remote witnessing was possible.

One potential alternative is to have an attorney supervise the signing of an important document, like a will, via video conference, with the two witnesses

present with the signer. This is not “remote witnessing” per se, because the witnesses are present with the signer – although the attorney is not. This is a potential alternative to remote witnessing when it would be difficult for .te signer to come to a lawyer’s office and could be considered “remote supervision.”

The conventional process for signing a will, i.e. coming to a lawyer’s office and signing before the lawyer and two witnesses, will continue to be the most common practice. It has the advantage of not being susceptible to any technical snafus that might occur with the use of video conferencing technologies.

A New Awareness of the Importance of Estate Planning Beyond the issues of remote notarization, remote witnessing, and remote supervision, the Covid19 pandemic has definitely made people more aware of the need to “get their affairs in order.” Given the dangers presented by Covid-19, it is certainly wise to consider taking action on an estate plan.

The Path Forward for Estate Planning If you have not engaged in proper estate planning, the path forward entails the following simple steps. First, put together a list of your assets and liabilities. Second, put together a list of your family, friends, or organizations that you wish to leave your assets to. Third, consider who you may want to appoint as an agent during your lifetime or after your passing. These agents are the trusted people who can potentially act as your executor, trustee, power of attorney agent, and health care proxy agent.

Fourth, give appropriate thought to what assets you would like to give to what persons or organizations.

Armed with this basic information, you can have a discussion with the appropriate professionals regarding a proper estate plan. In the absence of taking these steps, you risk your assets not being left to the people and organizations of your choice. You also risk having your financial and medical decisions made by someone other than who you would have chosen. As with many things in life, the most difficult thing is simply starting the

process. With the four steps listed above, you will be on your way.

Managing Market CORRECTIONS WITH MARKET INDICES AT, OR NEAR, ALL-TIME HIGHS, IT’S NATURAL FOR SOME TO WONDER IF THEY CAN GO ANY HIGHER?

Never mind the fact that every all-time high has necessarily been prefaced by every other all-time high, loss-aversion makes many investors wary of a cliff. This is when you may start hearing the word “correction” tossed around.

So, what is a correction?

The standard definition of a market correction is a 10% pullback in the value of an asset, like a stock, or of an index, like the S&P 500. These pullbacks can happen slowly over a period of time, or as quickly as in a single day. Corrections can vary in length, as well, from just a few days to a several months.

Market corrections are notoriously difficult to predict, however they generally happen when the price of assets far exceed their fair value, and markets become overly inflated. How inflated an asset must become is the great unknown.

Understandably, a 10% drop in the price of assets sounds like something that should be devastating. In the short-term it can be, but in the longterm corrections can be a boon to the market. Since market corrects tend to be overly broad, can they provide opportunities for investors to rebalance their portfolios and reallocate from areas that are truly overvalued, to those which may be undervalued.

While eliminating the effects of a correction may be impossible, mitigating the effects can be much more feasible. A properly diversified portfolio, a basic tenet of investing, can be your best defense against the impacts of a correction. Although diversification can’t guarantee against losses, it can help soften the blow when the eventual correction happens by.

So, what can be done during a correction?

The biggest mistake investors make during a correction is to panic.

People are naturally tuned to loss-aversion, which tends to make them react exactly when they shouldn’t. Selling into a down market only drives prices further down, and exacerbates the effects of the correction.

Savvy investors know that, for this very reason, corrections provide a buying opportunity. Knowing, and doing, however, is the tricky part!

It’s important to remind yourself that, historically, every single time the US markets have experienced a correction, they have eventually recovered to find new highs. 100% of the time. Now, this isn’t a guarantee by any means, but as far as track records go, it should help you sleep better at night, and help keep you from making any rash changes to your portfolio.

The accompanying chart shows you the intrayear lows and eventual annual return of the S&P 500, going back forty years. Note that in 2020, the index was down as much as 34%, and if you sold at the bottom that would have been your return. If, however, you had stayed invested, you would have

been rewarded with a 16% gain. You’ll find similar stories in many other years.

Is there a correction around the corner? Nobody can say for sure. What we do know is that corrections can provide opportunities, and that long-term investors should generally not let themselves be spooked by their eventuality. Afterall, you probably wouldn’t rush to sell your home next month, just because of a drop in value.

Work closely with your Certified Financial Planner® to determine how best to position your assets so that, when a correction does come around, your portfolio is ready. Be sure to communicate with your CFP® to create an investment policy around your portfolio so that you both know if and how you’ll react. Ultimately your needs will determine the proper course of action.

Our neck, also called the cervical spine, begins at the base of the skull and contains seven small vertebrae. Incredibly, the cervical spine supports the full weight of your head, which is on average about 12 pounds.

While the cervical spine can move your head in nearly every direction, this flexibility makes the neck very susceptible to pain and injury.

The neck’s susceptibility to injury is due in part to biomechanics. Activities and events that affect cervical biomechanics include extended sitting, repetitive movement, accidents, falls and blows to the body or head, normal aging, and everyday wear and tear. Neck pain can be very bothersome, and it can have a variety of causes.

Here are some of the most typical causes of neck pain: • Injury and accidents: A sudden forced movement of the head or neck in any direction and the resulting “rebound” in the opposite direction is known as whiplash. The sudden “whipping” motion injures the surrounding and supporting tissues of the neck and head. Muscles react by tightening and contracting, creating muscle fatigue, which can result in pain and stiffness. Severe whiplash can also be associated with injury to the intervertebral joints, discs, ligaments, muscles, and nerve roots. Car accidents are the most common cause of whiplash.

• Growing older: Degenerative disorders such as osteoarthritis, spinal stenosis, and degenerative disc disease directly affect the spine.

• Osteoarthritis, a common joint disorder, causes progressive deterioration of cartilage. The body reacts by forming bone spurs that affect joint motion.

• Spinal stenosis causes the small nerve passageways in the vertebrae to narrow, compressing and trapping nerve roots. Stenosis may cause neck, shoulder, and arm pain, as well as numbness, when these nerves are unable to function normally.

• Degenerative disc disease can cause reduction in the elasticity and height of intervertebral discs. Over time, a disc may bulge or herniate, causing tingling, numbness and pain that runs into the arm.

• Daily life: Poor posture, obesity and weak abdominal muscles often disrupt spinal balance, causing the neck to bend forward to compensate. Stress and emotional tension can cause muscles to tighten and contract, resulting in pain and stiffness. Postural stress can contribute to chronic neck pain with symptoms extending into the upper back and the arms.

CHIROPRACTIC CARE OF NECK PAIN During your visit, your doctor of chiropractic will perform exams to locate the source of your pain and will ask you questions about your current symptoms and remedies you may have already tried. For example: • When did the pain start?

• What have you done for your neck pain?

• Does the pain radiate or travel to other parts of your body?

• Does anything reduce the pain or make it worse?

Your doctor of chiropractic will also do physical and neurological exams. In the physical exam, your doctor will observe your posture, range of motion, and physical condition, noting movement that causes pain. Your doctor will feel your spine, note its curvature and alignment, and feel for muscle spasm. A check of your shoulder area may also be performed. During the neurological exam, your doctor will test your reflexes, muscle strength, other nerve changes, and pain spread.

In some instances, your chiropractor might order tests to help diagnose your condition. An x-ray can show narrowed disc space, fractures, bone spurs, or arthritis. A computerized axial tomography scan (a CT or CAT scan) or a magnetic resonance imaging test (an MRI) can show bulging discs and herniation.

Doctors of chiropractic are conservative care doctors; their scope of practice does not include the use of drugs or surgery. If your chiropractor diagnoses a condition outside of this conservative scope, such as a neck fracture or an indication of an organic disease, they will refer you to the appropriate medical physician or specialist. They may also ask for permission to inform your family physician of the care you are receiving to ensure that your chiropractic care and medical care are properly coordinated.

NECK ADJUSTMENTS A neck adjustment (also known as cervical manipulation) is a precise procedure applied to the joints of the neck, usually by hand. A neck adjustment works to improve the mobility of the spine and to restore range of motion; it can also increase movement of the adjoining muscles. Patients typically notice an improved ability to turn and tilt the head, and a reduction of pain, soreness and stiffness.

Of course, your chiropractor will develop a program of care that may combine more than one type of treatment, depending on your personal needs.

In addition to manipulation, the treatment plan may include mobilization, massage or rehabilitative exercises.

ate summer’s bounty of fruits and vegetables is here. Vine-ripened tomatoes shift from green to red almost overnight, ripe cucumbers seem to hide under every leaf, and zucchinis of all shapes and sizes make impressive harvests. Whether you are a home gardener or an avid farmers’ market shopper, the abundance of summer produce can be overwhelming as they are only fresh for so long.

YIELDS: 8, ½ cup servings

INGREDIENTS: *Ingredients currently available at the farmers’ market

• 1 quart beets*, roasted, microwaved or steamed (see below) • 1 small red onion* • 4 whole cloves

While enjoying fresh food is undoubtedly the best, preserving fresh fruits and vegetables has many benefits. Canning, drying, and freezing allow you to control your food ingredients and eat healthy yearround. Preserving food reduces food waste, waste in landfills, and our environmental footprint. It also contributes to the local economy and your wallet.

With time and proper instruction, canning, drying, and freezing food is surprisingly easy.

There are specific methods to preserve certain foods; however, the fruits and vegetables that can be preserved are countless. Apples may be cooked down into applesauce for canning or freezing.

Tomatoes may be stewed or dried or made into sauce or salsa. Cucumbers, beets, bell peppers, cauliflower, and green beans can be pickled.

Mushrooms, berries, herbs, and even kale can be dried. You can freeze fruit, and many vegetables can be blanched and frozen.

Before getting started, Diane Whitten, Food Preservation Educator for Cornell Cooperative Extension of Saratoga County, stresses the importance of food safety. “Always start with good quality fresh fruits and vegetables,” says Whitten.

“Preserve them as soon as possible,” she adds.

In the day of online recipes and instructions, Whitten emphasizes the importance of using safe preservation methods to avoid spoilage, contamination, and even botulism (food poisoning caused by bacteria).

Whitten offers several in-depth presentations and how-to videos from verified sources on Cornell Cooperative Extension’s website http://ccesaratoga. org/nutrition-food/food-preservation.

Whitten also recommends The National Center for Home Food Preservation as an online source for current research-based recommendations for most home food preservation methods.

• 1 whole cinnamon stick • 2/3 cup sugar • 1 cup cider vinegar* or red-wine vinegar • 1 cup water

INSTRUCTIONS: Cut cooked beets in ¼ inch slices. Cut onion in half, then slice thinly. Layer beets and onion in a glass dish, bowl, or jar. Put remaining ingredients in a saucepan and bring to a boil. Pour over beets and onions, cover beets completely adding extra water if necessary. After they have cooled completely, cover and refrigerate for 3-7 days before serving. Will keep in the refrigerator for several weeks.

Note: This recipe should not be canned, as it is not acidified enough to prevent botulism food poisoning.

Nutrition per serving: 44 calories, 0 g fat, 10 g carbohydrate, 2 g protein, 2 g fiber, 66 mg sodium.

Don’t shy away when you find a good deal on a flat of tomatoes, a bushel of apples, or quarts of beets, cucumbers, or beans at the farmers’ market. There is a use for everything and preserving food at home can be fun and very beneficial.

To roast beets, wrap in aluminum foil and cook in a slow-cooker for 3-4 hours or in a 400 degree oven for 40 minutes. Peel after cooling.

To steam beets, peel the skins with a vegetable peeler, and cut into 1/4 inch slices. Place in steamer basket over water, turn heat to high and cook for 10-15 minutes.

To microwave beets, slice ¼ inch thick, place in a microwavesafe dish, add ½ inch water, cook on high for 2 minutes per cup of beets. Time varies depending on wattage of microwave.

With life, we are always seeking new experiences, and with food, new tastes. Who doesn’t taste their food when they’re cooking? Tasting what you make is such a fundamental principle in preparing good food.

i u c s i B e s e e Flaky Ch INGREDIENTS • 8 oz. (1-3/4 cups) unbleached all-purpose flour

• 3/4 tsp. salt

• 1 TbS. granulated sugar

• 1/4 tsp. baking soda

• 3/4 cup very cold buttermilk

• 4 oz. (8 Tbs.) very cold unsalted butter

• 2 cups grated sharp Cheddar, Gruyère, Gouda, or provolone

• 2-1/4 tsp. baking powder

INSTRUCTIONS 1. Mix and fold the dough.

2. Heat the oven to 500°F and position a rack in the middle of the oven.

3. Line a rimmed baking sheet with parchment.

4. Put the flour, sugar, baking powder, salt, and baking soda in a large mixing bowl and stir with a whisk to distribute the ingredients evenly.

5. With a bench knife, cut the cold butter crosswise into 1/4-inch-thick slices. Stack 3 or 4 slices and cut them into three even strips. Rotate the stack a quarter turn and cut the strips in half.

You should create 6 small bits of butter per slice.

6. Toss the butter bits into the bowl with the flour mixture. Continue cutting all the butter in the same manner and adding it to the flour mixture. When all the butter is in the bowl with the flour, use your fingers to separate the butter bits (they tend to stick to each other), coat all the butter pieces with flour, and evenly distribute them throughout the flour mixture.

Don’t rub the butter too hard with your fingertips or palms, as this will melt the butter.

You’re just trying to break the butter pieces apart, not blend the butter into the flour.

7. When all the butter is evenly distributed, add the cold buttermilk and stir with a large spoon until all or most of the flour is absorbed by the buttermilk and the dough forms a coarse lump, about 1 minute.

8. Pat and fold the dough: Dust a work surface with flour and dump the dough onto the floured surface, cleaning out the bowl with a spatula or a plastic bowl scraper. Dust the top of the dough and your hands with flour and press the dough into a 3/4-inch-thick rectangle. Sprinkle a small amount of additional flour and one-third of the cheese on the top of the dough.

9. Fold the dough over on itself in three sections, as if folding a letter (also called a tri-fold). With a bench knife, lift the dough off the counter and dust under it with flour to prevent sticking, if necessary. Dust the top with flour and press the dough out again into a 3/4-inch-thick rectangle. Sprinkle on another third of the cheese and repeat the tri-fold. Repeat this procedure one more time (three times in all), using the remaining cheese. Cut and bake the biscuits: After the third tri-fold, dust under and on top of the dough, if needed, and roll or press the dough into a 1/2-inch-thick oval. Dip a round biscuit cutter in flour and start cutting biscuits, dipping the cutter in flour between each biscuit.

Press straight down to cut and lift straight up to remove; twisting the biscuit cutter will seal the sides and interfere with rising. Use a bench knife or spatula to transfer the biscuits to the baking sheet, placing them about 1/2 inch apart. Gently gather any scraps of dough, pat and roll out again, and cut more biscuits from the remaining dough.

You can gather and roll the scraps two times total and still get good results (the more times you roll out, the tougher the biscuits will be).

10. Put the baking sheet in the oven and reduce the temperature to 450°F. Bake for 8 minutes; rotate the pan 180 degrees; continue baking until both the tops and bottoms of the biscuits are a rich golden brown and the biscuits have doubled in height, revealing flaky layers on the sides, 4 to 6 minutes more. It’s all right if some butter seeps from the biscuits. Remove the pan from the oven and set it on a cooling rack, leaving the biscuits on the pan. Cool the biscuits for at least 3 minutes and serve them hot or warm (they will stay warm for about 20 minutes).

There is something magical about the act of preparing meals and eating together. It is an act of giving and sharing. Our relationship with cooking can become more adventurous with trying out new culinary skills and recipes we have wanted to try. In preparing that special culinary creation, there may be some cool culinary tools you need to help.

One tool that has become a “must have” in the kitchen drawer is the bench scraper. A bench scraper, which is also called a pastry scraper or dough scraper, is also used in working with pastry, bread, and other doughs. But even if you don’t bake regularly, it can still be a worthy investment for general cooking prep. It’s also space-efficient and easy to stow away in a prep drawer and is a crazy-easy-to-clean, dishwashersafe tool that can last you for decades. A bench scraper is one of those inexpensive utensils that lasts a lifetime and has a million uses.

When chopping vegetables, a bench scraper makes short work of transferring the veggies from the cutting board to the skillet or soup pot without losing half the veggies onto the floor during the transfer. Think of that flat piece of metal as a wide extension of your hand. Imagine the joy you would feel by only making ONE journey from your cutting board to your soup pot instead of your usual six trips as you balance those diced veggies on your knife or in your hand. You can also use your trusty scraper to smash whole cloves of garlic or to smash boiled potatoes before frying them.

48th annual Adirondack Balloon Festival The festival takes place Thursday to Sunday, September 23 - 26, in multiple locations. The event is free. Festival merchandise, one of the event’s biggest fundraisers, will be for sale at select events.

This year, the festival cannot allow vendors, children’s activities, or the Open Door breakfast. Pilots can’t take paid passengers this year. At the airport, you can attend a drive-through moonglow to observe 40 tethered balloons on display, lit up from within.

Looking Fine on Television: Phila “New Jerusalem” Local Street Venue Launches CaffeLena.TV Presentation to Stream SARATOGA SPRINGS — Saratoga Springs’ Caffe Lena is moving its live streams off Facebook and YouTube to a new donate-to-watch platform called CaffeLena.TV. “Streaming is here to stay. It has become an essential tool in keeping artists and venues afloat and audiences engaged. We need to make it a great experience for the viewer, and economically viable for the producers,” said Executive Director Sarah Craig, in a statement.

Heading into a fall when the music industry was hoping to return to normal, the Delta variant is once again causing tour cancellations and venue restrictions. Bands that had hoped to off-load their home streaming rigs on eBay are rethinking the decision. “While our first choice is to have everyone here

Players Wanted: Annual Golf Tourney Benefits Pediatric Heart Patients SARATOGA SPRINGS — Rotary Clubs throughout the Capital Region are sponsoring the 23rd annual Gift of Life International Golf Tournament on Monday, Sept. 20 at Pinehaven Country Club in Guilderland.

The fee is $130 for individuals or $500 for a foursome. The tournament will follow a handicap scramble format with a 10 a.m. shotgun start. Players may pick up a box lunch on the patio.

New Fall ’21 - Challenger Soccer Following the tremendous success of Saratoga Little League’s Challenger Baseball Program and the Saratoga Springs City School District’s Unified Athletic programs, Saratoga Rec. is excited to announce that it will be introducing an adaptive Soccer Program that gives players with specialized needs a place to join in and play the game of soccer in our community.

This program, for ages 4 to 22, is structured to educate participants about the game of soccer, develop the physical skills needed to play the game, and compete against their peers in a weekly game.

Challenger Soccer will be held on Saturdays from Sept. 11 to Oct. 30 from 10:45 to 11:45 a.m. at the Saratoga Casino & Hotel (34 Jefferson St, Saratoga Springs). Players will need to bring water and wear sneakers/cleats – no jewelry or watches. Fees are $45 for city residents and $65 for non-city residents, and a t-shirt is included in the fee.

Drive up your skills! The Field Hockey League is geared towards the individual looking to learn the

sport through drills and team play. Tuesday’s session will focus on skill development and Saturday’s sessions will focus on team play.

The Field Hockey League is for ages 8 to 14. The league will run from Sept. 14 to Oct. 23 on Tuesdays from 5:30 to 6:30 p.m. and Saturdays from 12 to 2 p.m. at the Rec. Center Field (15 Vanderbilt Ave). Players will need a water, stick, shin guards, and mouth guard; the Rec. Department will supply each participant with the necessary equipment if they do not own it.

Fees before Sept. 6 are $55 for city residents and $65 for non-city residents. Fees after Sept. 6 are $80 for City residents and $90 for non-city residents.

Coordinator is Jenna Cappezutti, Elmira College four-year starter and former Scotia-Glenville coach.

Volleyball Serve up your best! The Volleyball Program focuses on skill development and the teaching of rules and strategy in order to become a better volleyball player. Two sessions will be offered, one for 8 to 12 year-olds and another for 13 to 16 year-olds.

The Volleyball Program will run from Sept. 15 to Oct. 20 at the Rec. Center (15 Vanderbilt Ave). Ages 8-12 will play on Wednesdays from 5:30 to 6:30 p.m. and

The Beginners workshop for ages 16+ is from 5:30 to 7:30 p.m. The Beginners workshop for ages 18+ is from 2:30 to 4:30 p.m. The rest of the workshops are for ages 18+ with the Advanced Beginners from 12 to 12:30 p.m. and the Intermediate from 9 to 11:30 a.m. The workshops will be held at the East Side Rec Pickleball Courts (226 Lake Avenue). Fees before Sept. 13 are $45 for city residents and $65 for non-city residents. Fees after Sept. 13 are $70 for city residents and $90 for non-city residents.

Saratoga TODAY ALBANY — The elite field for the Freihofer’s Run for Women is beginning to take shape, with Ballston Spa native Megan Hogan among the pack.

The 43rd Freihofer’s Run for Women is set to take place on Saturday, Sept. 25 starting at 9 a.m.

The elite field is typically made up of about 15-25 runners and the masters, for women 40+, is about 10 runners. Kristen Hislop, Event Director of the Freihofer’s Run for Women, said that this year they are looking at a more regional group of competitors.

“The course is fun and enjoyable for a variety of women,” said Hislop. “Its strategic though, as it

starts on a hill and finishes on a downhill. Its not a record-setting course, but it will have a great finish.”

Megan Hogan, a two-time NCAA All-American and twotime Atlantic 10 Cross Country Performer of the Year at George Washington University, will be competing in the race. The Ballston Spa native and Saratoga Catholic graduate was the first American to finish the race in 2014, and finished 11th at the 2015 race with a time of 16:18.

Hogan has previously spoken alongside Benita Willis and Melody Fairchild in an elite runners panel hosted by Hislop. All three women are well-known runners, with career heights at different stages throughout life. Hogan now lives in Boston, MA. She is working as a full-time interior designer and strategist, studying to be a wine sommelier, and runs on the side.

“What is special about running,” said Hislop “is that these women are balancing work and

families and still make time for it.”

Hislop mentioned that they have already started planning the 44th Freihofer’s Run for Women for June 22, hoping that before next year’s race they can resume having these collegiate and post-collegiate competitors visit and speak with local high school athletes.

“The Freihofer’s race sheds a light on runners from this region.”

Hislop continued, “out of all the sports, this region produces some of the most successful runners.”

NYRA and Dunkin’ Present Coffee Donation to Backstretch Employee Service Team SARATOGA SPRINGS — The New York Racing Association, Inc. (NYRA) presented more than 120 pounds of Dunkin’ coffee to the Backstretch Employee Service Team (B.E.S.T.) at Saratoga Race Course on Monday, Sept. 6 – closing day of the 2021 racing season.

The 126 pounds of coffee was donated based on a pledge from Dunkin’ to supply B.E.S.T. with one pound of coffee for every win by the leading owner, trainer, and jockey of the 2021 Saratoga meet.

Klaravich Stables was the meet’s leading owner with 21 wins, while Chad Brown claimed the H. Allen Jerkens training title with 41 wins. Luis Saez captured the Angel Cordero Jr. riding title with 64 wins.
