exactly in the country side nestled among the Apuane mountains, Appennino mountains and the Tyrrhenian Sea , only 5 km from the urban city walls of Lucca. The winery is developed between two rivers, La Freddana and the Serchio. The soils are sandstones of the Tuscan Boulder with neutral ph. On the plain the soil is loose, silt –sandy with shingles. On the hill the soil is clay with good

skeleton. The exposure goes from SouthEast to South-West. The proximity to the sea ensures a lot of sunshine and constant ventilation. The mountains provide plenty of water and cool nights also during the summer time. The Fattoria Sardi estate owns woods, cultivated fields, olive groves and 18 hectares of specialized vineyards.

atteo Giustiniani and his fiancĂŠe Mina are today managing the Fattoria Sardi

winery, owned by the Sardi Counts for over two centuries. They both graduated in oenology from the University of Bordeaux. The winery has been well-known since 1926 for the production of fine meal wines. Since 2006 the company has been producing sustainable grapes and since 2011 certified organic grapes.

T

he countryside is today managed respecting the rhythm, harmony and

balance of nature. The production of the agricultural products complies with the European specifications of organic agriculture and uses biodynamic agricultural tools. The wines are created carefully following the spontaneous transformation of the grapes into wine, without adding exogenous products to the wine, except for small sulfite quantities. In addition the winery has produce olive oil in some years.

Variety: Blend of sangiovese grapes and other red grapes. Vinification and aging: Harvested by hand. Selected and de-stemmed. Spontaneous fermentation with controlled temperature in concrete and stainless steel vats. Maceration time depending on the years. Spontaneous malolactic. Aging in wood for 12 months. Filtered. Sulfites are added to the wine.

Colour: Ruby red. Nose: Intense and fragrant. Floral notes of violet and iris. Fruity notes of cherry and blackberry. Spicy notes of vanilla and pepper. Palate: Juicy, round and fresh. Good persistence.

OUR SUGGESTIONS Thanks to its roundness and freshness, Fattoria Sardi Rosso is a wine for any meal and for any season. It is best appreciated at a temperature of 18째C. During the summer it can be served a little chilled.


Fattoria Sardi Vallebuia NO ADDED SULFITES

Variety: From certified organic sangiovese, colorino and other red grapes. Vinification and aging: Harvested by hand . Selected and de-stemmed grapes. Spontaneous fermentation with controlled temperature in concrete vats. Maceration time depending on the year. Spontaneous malolactic. Aged in concrete for 6 months. Filtered. The wine has no sulfites added.

Colour: Ruby red. Nose: Intense and fragrant. Spicy notes of green pepper. Floral notes of rose flower and violets. Fruity notes of cherry and plum. Palate: Juicy, round and fresh. Good persistence.

OUR SUGGESTIONS Thanks to its roundness and freshness, Fattoria Sardi Vallebuia is a wine for any meal and for any season. It is best appreciated at a temperature of 16-18째C. During the summer it can be served more chilled.


Fattoria Sardi Sebastiano DOC COLLINE LUCCHESI ROSSO. One of the oldest denominations of Northern Tuscany.

PRODUCTION

Variety: 60% merlot, 20% sangiovese, 20% cabernet sauvignon. Vinification and aging: All grape varietals are harvested, then specialty selected and destemmed carefully by hand. Grapes are pressed and then put into stainless steel vats, which then allows spontaneous fermentation to occur. Maceration time is dependent on the vintage year. Spontaneous malolactic fermentation also varies by year. The wine is aged in French oak for 18th months and is then filtered and bottled. Sebastiano, is a special wine for the Fattoria Sardi family because it is named after the winemakers grandfather.

Colour: Deep ruby red. Nose: Elegant notes of dark and red berries, followed by hints of violet, spicy licorice aromas, cinnamon and an undertone of tobacco and leather. Palate: Silky body with a balanced acidity matching the ripe berries, violets, licorice & cinnamon present in the bouquet.

OUR SUGGESTIONS With its full body and freshness this is a true gem in the Fattoria Sardi Rosso Portolio. This wine compliments all meat dishes for all seasons. This fresh and easy drinking red wine will be enjoyed by all.


Fattoria Sardi BIANCO DOC COLLINE LUCCHESI BIANCO. One of the oldest denominations of Northern Tuscany.

PRODUCTION

Variety: Blend of trebbiano, vermentino and other white grapes. Vinification and aging: Harvested by hand. Maceration time depending on the years, in pneumatic press. Soft pressing and racking of the juice at low temperatures. The juice is fermented at controlled temperatures in concrete and stainless steel vats. The fermentation is spontaneous adding pied de cuve from the vineyard. Aging on fine lees for 4 months. Clarified with bentonite and filtered. Sulfites are added to the wine.

Colour: Pale yellow with greenish nuances. Nose: Intense, fragrant and lightly aromatic. Floral notes of white and rose flowers. Yellow and white pulp fruit notes. Light spicy note of white pepper. Palate: Juicy, fresh and sapid.

OUR SUGGESTIONS Thanks to its freshness and sapidity, Fattoria Sardi Bianco is an aperitif wine, also ideal with fish and shellfish dishes. It is best appreciated at a temperature of 10째C-12째C.


Fattoria Sardi vermentino DOC COLLINE LUCCHESI VERMENTINO. One of the oldest denominations of Northern Tuscany.

PRODUCTION Variety: Vermentino. Vinification and aging: Grapes are first harvest by hand followed by maceration. Grapes are soft pressed using a pneumatic press; which soft presses the grapes with gentle air pressure. The total duration of time fluctuates due to the vintage year. The juice is then fermented at controlled temperatures in concrete and stainless steel vats. The fermentation occurs spontaneously after the pied de cuve (vineyard-specific yeast to initiate fermentation) is added from the vineyard. Aging takes place on the lees for 4 months followed by clarification and filtration.

TASTING Colour: Pale yellow with gold and light green hues. Nose: Complex with hints of white flowers, fresh pears, summer peach, and ripe grapefruit. Palate: Fresh, medium bodied wine with nuances of citrus fruits, summer peach, finishing with an essence of Mediterranean sage & mint and light spice.

OUR SUGGESTIONS This authentic Vermentino is truly versatile, ideal with appetizers of all styles, seafood, pasta and light meat dishes. The complex flavors in this wine make an excellent compliment to spicy fare.


Fattoria Sardi Rosato Igt Toscana Rosato

PRODUCTION Variety: Organic sangiovese, merlot, ciliegiolo grapes and a small quantities of white grapes. Vinification and aging: First the grapes are harvested with great care by hand. Then depending on the vintage a large portion of the Rose goes through a longer maceration process using a pneumatic press; which soft presses the grapes with gentle air pressure. A small portion is then utilized by bleeding the vats of the red wine to extract color. In some cases where cold maceration takes place, the juice obtained is then fermented at controlled temperatures in concrete and stainless steel vats. In some cases where the

technique of bleeding is used, the juice is then fermented in wood. However, in both cases racking of the juice is always done at low temperatures, fermentation can then began after adding the pied de cuve (vineyard-specific yeast to initiate fermentation) from the vineyard. The wine is aged on the lees for 4 month then clarified and filtered.

TASTING Colour: Pale pink, hues of mango, and grapefruit. Nose: Refreshing, and crisp with hints of rose petals, raspberry, and melon. Palate: Fresh notes of summer fruits, white flowers, and balance. Finishing with a crisp, clean flavorful finish.

OUR SUGGESTIONS This Rose is a masterful match with almost any dish. Fattoria Sardi Rosato is ideal for light appetizers, seafood or light pasta dishes and is perfect all year around.

Fattoria Sardi Le cicale Igt Toscana Rosato

PRODUCTION Variety: Organic sangiovese and small quantities of white grapes. Vinification and aging: Harvested by hand. Maceration time depending on the year, in pneumatic press. Low temperature juice racking and spontaneous fermentation by adding pied de cuve from the vineyards. The fermentation and aging in wood on fine lees for 8 months. Clarified with bentonite and filtered. Sulfites are added to the wine.

TASTING Colour: Pale pink, with nuances of onion skin. Nose: Refreshing, complex and intense. Floral notes of wild rose and white flowers, fruity notes of raspberries and citrus. Particularly creamy to the nose. Palate: Fresh, full, sapid and well balanced. The final is persistent, sapid and silky.

OUR SUGGESTIONS Thanks to the balance between freshness, creaminess and minerality, Fattoria Sardi “Le cicale” is ideal with fish, shellfish, white meat and cheese dishes. It is best appreciated at a temperature of 12°C-14°C any time of the year.
