ith everyone spending so much more time at home these days, eating healthy can be quite challenging. Even with my refrigerator stocked with a great assortment of farmers market fresh fruits and veggies, my house, I’m sure much like many other households at the moment, is also brimming with, chips and other less healthy snacks to avoid extra trips to the grocery store. For myself, this makes it much harder to resist the temptation to graze every time I pass through the kitchen. One thing I have been stocking up my kitchen with for an easy, nutritionally packed food source, is these tofu sushi rolls. Brimming with chopped baby bok choy, shedded carrot and cabbage, as well fresh mint, cilantro, and green onion, the combination pairs perfectly with the seared off tofu inside. Rolled in nori with a little sticky rice, they store quite well in the refrigerator. You can also add avocado to the roll as well. In his 20,000 square-foot greenhouse, Kevin Childerley, owner of Santa Barbara Aquaponics, grows vegetables using aquaponics, which he says is “a method of organic food production that combines the best aspects of aquaculture and hydroponics to create a highly productive living ecosystem. It is the combination of aquaculture, the study of fish and things related to fish, and hydroponics, the growing of plants in solution. It’s the relationship between water, fish and land management. The fish are the engine for the system. They are the workers.”

Cut tofu block in half down middle (cross-section cut). Then cut into half inch thick long strips (should have about 10 strips). Spray nonstick pan with cooking spray and place over high heat. Once pan is hot add tofu and cook about 2 minutes per side (4 sides). Then turn off heat and add teriyaki sauce to pan and gently mix to lightly coat exterior of tofu. Let cool. In a mixing bowl combine bok choy, carrot, cabbage, mint, cilantro and green onion. Lay your nori flat on a sushi roller and cover the bottom 3/4 of the sheet with a very light layer of sticky rice. Towards the bottom, add 2 slices of tofu side by side, and then top with veggie mixture. Carefully roll the nori closed. You may need to dab the top of the nori with a little water to help seal. Wet a sharp knife and cut into 8 rounds. This takes some practice but eventually you will get the technique down. Refrigerate until ready to enjoy. Dip in soy sauce, sweet chili sauce peanut sauce or a blend of all 3 when serving. Yield: Makes 10 rolls.
