welcome Welcome to our pre World of Coffee issue of Café Europa, as usual full of interesting and challenging news and information about SCAE and the speciality coffee industry. Nice promises to be another great event, with so much happening, as you will see on page 27 and I really hope that you will be able to join us there. If you do please make sure you come to the SCAE stand, shop or members lounge and say Hello.

We already look to the future, however, and for the first time ever SCAE has planned for the next three events, all at exciting and diverse locations. Our 2014 event will be held in Rimini, Italy at the impressive Rimini Fiera. This beautiful seaside town on the Adriatic Riviera will provide another warm and sunny location for our event following our visit to Nice. In 2015 we will be in Gothenburg on the west coast of Sweden, which becomes the first Swedish city to host World of Coffee. The team from Gothenburg and the local chapter worked really hard on their bid and the award of the 2015 event is just reward for their hard work. So to 2016, and Dublin is sure to put on a great party for our event, the local chapter are really excited to get the event at last and all coffee lovers will get a great welcome.

Please put all of these events in your calendar, we intend to build the size, success and diversity of our World of Coffee year on year and make it the premier coffee event in Europe.

Wilkommen Bienvenue dans notre édition de Café Europa précédant le World of Coffee qui est, comme d’habitude, pleine de nouvelles et d’informations intéressantes et stimulantes à propos de la Stratégie Café Europa et le secteur du café de spécialité. Nice promet d’être encore un grand événement où se déroule-ront tant de choses, comme vous le verrez à la page 27 Et j’espère vraiment que vous pourrez être des nôtres à cette occasion. Si c’est le cas, ne manquez pas de passer au stand de la SCAE, dans notre boutique ou dans notre salon des membres pour nous dire bonjour.

Néanmoins, notre regard est déjà tourné vers l'avenir et, pour la toute première fois, la SCAE a planifié pour les trois prochains événements qui se dérouleront tous sur des sites passionnants et différents. Notre événement 2014 se tiendra à Rimini, en Italie, à l’occasion de l’impress-ionnante Fiera de Rimini. Cette splendide ville au bord de la mer Adriatique nous fournira encore un site ensoleillé et chaud pour notre événement qui suivra notre visite à Nice. En 2015, nous serons à Göteborg sur la côte ouest de la Suède qui devient, ainsi, la première ville suédoise à héberger le World of Coffee. L’équipe de Göteborg et le secteur local ont énormément travaillé sur leur offre et l’organisation de l’événement 2015 est une juste récompense pour l’assiduité de leur travail. Et pour 2016, nous sommes sûrs que Dublin nous préparera une grande fête pour notre événement : le secteur local est vraiment enthousiaste de pouvoir enfin l’organiser et une bienvenue chaleureuse sera réservé à tous les amateurs de café.

S’il vous plait, notez tous ces événements dans votre agenda, nous avons l’intention d'accroître la taille, le succès et la diversité de notre World of Coffee d’année en année et en faire le premier événement du café en Europe.

Bienvenidos a nuestra edición de Café Europa previa al World of Coffee que, como siempre, está repleta de interesantes y desafiantes novedades e información sobre la SCAE y la industria del café especializado. Niza promete ser otro estupendo evento, con muchas actividades, como verán en la página 27 y realmente espero que puedan sumarse a nosotros para la ocasión. Si lo hacen, por favor acérquense al puesto, tienda o salón de miembros de SCAE para saludar.

Siempre tenemos la mirada puesta en el futuro; aún así, por primera vez en la historia SCAE ya tiene programados los próximos tres eventos, todos ellos en lugares fascinantes y diversos. Nuestro evento 2014 tendrá lugar en Rímini, Italia, en la imponente Fiera di Rímini. Esta hermosa ciudad al lado del mar sobre la Riviera Adriática será un marco cálido y soleado para nuestro evento posterior al de Niza. En 2015 estaremos en Gotemburgo sobre la costa oeste de Suecia, que será la primera ciudad sueca en recibir a World of Coffee. Nizza promette di essere un altro evento importante e ricco di eventi, come potrete vedere a pagina 27 e spero davvero che riuscirete ad unirvi a noi.

Se parteciperete all'evento, assicuratevi di venire a trovarci allo stand, al negozio o alla sala riservata ai membri SCAE. Ma noi guardiamo già al futuro, e per la prima volta nella storia di SCAE, abbiamo già pianificato i prossimi tre eventi, tutti in location eccitanti e diverse tra loro. Il nostro evento 2014 si terrà a Rimini, in Italia, nella bellissima struttura Rimini Fiera.

Questa magnifica cittadina costiera sulla riviera adriatica sarà un'altra calda e soleggiata location per il nostro evento dopo la nostra visita a Nizza. Nel 2015 saremo a Göteborg, sulla costa occidentale della Svezia, che sarà la prima città svedese a ospitare il World of Coffee. Il team di Göteborg e il Chapter locale hanno lavorato davvero sodo alla loro offerta, e la vincita dell'evento 2015 è solo la giusta ricompensa per questo duro lavoro. Per quanto riguarda il 2016, Dublino sa già con certezza che realizzerà una grande festa per il nostro evento; il Chapter locale è davvero molto felice di poter finalmente organizzare questo evento, e tutti gli amanti del caffè riceveranno un caloroso benvenuto.

Segnate tutti questi eventi sul calendario; vogliamo costruire la grandezza, il successo e la diversità del nostro World of Coffee anno dopo anno per renderlo l'evento più importante dedicatoal caffè in Europa.

A new coffee awakening

Burundi : la résurgence du café

The Republic of Burundi is a small Central African country, landlocked between Rwanda, DR Congo and Tanzania. It is the most densely populated country of the continent, but unfortunately also one of the poorest nations in the world, with 70% of its 10 million inhabitants living on less than USD $1.00 a day.

Burundi’s history has seen a lot of ups and downs. After gaining independence in 1962, the land was riven by civil war between 1993 and the mid-2000s. Now, however, this beautiful country is picking up the pieces and has started a promising reconstruction.

La République du Burundi est un petit pays d'Afrique centrale, enclavé entre le Rwanda, la République Démocratique du Congo et la Tanzanie. Il s'agit du pays le plus densément peuplé du continent, mais c'est malheureusement aussi la nation la plus pauvre au monde, 70 % de ses 10 millions d'habitants vivant avec moins d'un dollar US par jour.

History of coffee in Burundi The first arabica coffee trees in Burundi were introduced by the Belgians in the early 1930s, and coffee cultivation has been growing in the country ever since. Although robusta used to be present in the plains in the south of the country decades ago, today arabica varieties are almost omnipresent. The most common cultivar is Bourbon, an heirloom-related bean that had been imported from the island of Réunion, which grows very well at higher altitudes. From 1980 to 1993, Burundi invested heavily in the coffee subsector with assistance from the World Bank, engaging in an ambitious programme of constructing coffee washing stations and planting trees. Today, there are over 160 washing stations and more than 200 million trees in the country.

Throughout these years, coffee production in Burundi increased rapidly. On average, over 31,000 metric tons were produced per year, but with the advent of the civil war in 1993 the production of coffee took a precipitous downward turn.

In the mid-2000s, after over a decade of civil strife, Burundi returned to the development of its coffee industry, giving rise, once again, to its coffee production by investing in producing higher quality coffee and, through the course of the sector’s privatisation and liberalisation, in building stronger ties with the international market.

Il y a plusieurs dizaines d'années, le robusta était présent dans les plaines méridionales du pays, toutefois ce sont aujourd'hui les variétés arabica qui sont pratiquement omniprésentes. Si bien décadas atrás solía haber robusta en las llanuras del sur del país, hoy en día las variedades arábica son casi omnipresentes. During these years, a series of reforms were initiated. In 2008, Burundi opened the doors to buyers of specialty coffee by liberalising market legislation. An outcome of this coffee sector privatisation is that coffee growers became more organised, forming small cooperatives (linked directly to the washing stations). From the perspective of specialty coffee traceability, these smaller associations will offer Burundi an important opportunity for producing smaller, high value lots of coffee with distinct flavour profiles and strong marketability in the speciality sector.

Five regional production areas have emerged with the growth of the five so-called Sogestals (Sociétés de Gestions des Stations de Lavage – translated: Management company of the washing stations).

Geographically based, the Sogestals are the organising bodies behind the majority of washing stations in Burundi, and look after the latter for financing, transport, fertiliser, commercialisation, etc. A total of 141 washing stations are divided between the five Sogestals, namely Kirimiro, Ngozi, Kayanza, Kirundo-Muyinga and Mumirwa, each with its own typical overall cupping characteristics.

The main crop is harvested from late March until early May, after which the smallholder farmers bring their yield to the washing station.

This is a period where there is no other crop harvesting in the region, highlighting the importance of coffee for Burundi. The farmers use the income from their spring harvest to grow other crops, but also to send their children to school that year. At the mills, coffees are cleaned, destoned, hulled, graded, sorted on gravity tables and finally sorted by screen size. Most coffees are fully washed, and then dried on raised drying beds in the sun for 8 to 10 days. When the entire process is finished, the beans are transported to Dar es Salaam or Mombasa for export.

Geography and climate The terrain of Burundi is rather mountainous, dropping to a plateau in the east. Lake Tanganyika not only forms a beautiful sight and a huge fresh water stock, it is also the lowest point of the country (772 metres above sea level), while the highest point is Mount Heha (2,684 metres).

Burundi has a tropical highland climate with a considerable daily temperature range in many areas. The area around Lake Tanganyika is warmer (23 °C on average), while the highest mountain areas are cooler (16 °C on average). Rain is irregular, but mostly occurs in the northwest, and dry seasons vary in length. The high average altitude of the farms, fertile soils and favourable weather conditions, make Burundi’s potential as a specialty coffee producer even greater.

Importance of coffee With 95% of the Burundian people living in rural areas and depending on agriculture, the importance of coffee cannot be overemphasised. Representing 78.8% of the country’s export revenue, coffee is paramount for Burundi’s economy and is the

There are an estimated 600,000 coffee producers (or 800,000 by other calculations) who depend almost entirely on coffee, of which the vast majority are smallholder farmers with a cultivated area smaller than 0.5 ha (or between 300 and 500 coffee trees). Large-scale plantations are very rare. Although nearly all of the coffee growing in the country is sold almost entirely as ’commercial‘ coffee, the highly favourable agroecology and well-established processing infrastructure offer significant potential for Burundi in the specialty coffee market.

Production Burundi has been producing solely ’commercial‘ coffee – but of a high quality – however this has not been produced very efficiently. While countries like Brazil can produce 20 to 30 bags per hectare on average, Burundi farms have only managed to attain 5 to 8 bags per hectare.

Moreover, the crop cycle is relatively unstable, with very low productivity every second year. The fundamental reasons for the production problems are the poor agricultural practices in place at the coffee farms. Old trees are under-producing and cannot recover fast enough.

The trees are not pruned well, and the soil is barely fertilised. This situation creates an environment where pests and diseases can thrive, while there is not enough knowledge sharing and education to counter the problems. A recent study commissioned by the Kahawatu People’s Coffee project (for more information, go to www.kahawatu.org) and conducted by Rainforest Alliance confirmed that the yield of coffee trees in Burundi can be increased twofold by implementing simple agronomic practices. Burundi coffee is harvested during the summer, with shipment from August onwards, making it one of the few really fresh coffees available for roasting and selling in the run-up to the holiday season.

Bien que pratiquement la totalité de la récolte de café du pays soit vendue comme café « commercial », l'agro-écologie extrêmement favorable et les infrastructures de traitement bien établies prêtent au Burundi un important potentiel sur le marché des cafés de spécialité.

Sono emerse cinque aree regionali di produzione a seguito della crescita delle cinque cosiddette Sogestal (Sociétés de Gestions des Stations de Lavage – tradotto: Società di gestione delle stazioni di lavaggio). Distribuite su base regionale, le Sogestal sono gli enti responsabili dell’organizzazione della maggior parte delle stazioni di lavaggio in Burundi; esse si occupano in particolare di finanziamento, trasporti, acquisto di fertilizzanti, commercializzazione, ecc. Future Initiatives like the Kahawatu Project are a strong catalyst for the development of Burundi’s coffee production. With a plan based on agricultural training, technical support programmes for fertilising, a sustainable loan system, and political dialogue in the coffee supply chain and beyond, Kahawatu and its partners have a realistic vision of doubling coffee production (up to 12 to 15 bags per hectare) by 2017. The improvement in agronomical practices will also be a key factor in the production and marketing of specialty coffee.

For the moment only the UTZ Certified programme is present, but the possibilities for other certification programmes are under study.

Burundi coffees in the cup The classic Burundi coffee cup features a full body and a high yet fine acidity. Also, slight cherry aromas are often found, and a typical chocolaty aftertaste. However, due to the different conditions on every farm and on every mountain, there is a large variety of flavours to be encountered, which is ideal for the future of specialty coffee in Burundi.

Flavour perspectives In selecting the Burundi coffees from the 2012 crop, our green coffee import company, 32cup, conducted an unprecedented research exercise, putting lots from more than half of all washing stations on the cupping table for scrutiny. From the 21 lots that remained on the table after the first quality selection, no less than 14 were from the same Sogestal: Kirimiro! All the coffees we tasted scored very well, but with scores between 86 and 92, the dominance of Sogestal Kirimiro was clear. The jury was especially impressed by its steady quality (great acidity, good body, nice mouth feel and long aftertaste) and immense variety of flavours. Washing

Burundi ha un clima tropicale tipico degli altopiani, con considerevoli escursioni termiche diurne in molte aree. L’area intorno al Lago Tanganyika è più calda (in media 23 °C), mentre le aree montuose più alte sono più fresche (in media 16 °C). Le precipitazioni sono irregolari, ma si riscontrano principalmente nel nord-ovest del paese; la durata della stagione secca è variabile. L’altitudine media piuttosto elevata delle piantagioni, i suoi terreni fertili e le condizioni climatiche favorevoli rendono ancora più alto il potenziale del Burundi come produttore di caffè specialty.

Producción Burundi viene produciendo exclusivamente café ‘comercial’ – pero de alta calidad – aunque no con demasiada eficiencia. Mientras que países como Brasil pueden producir entre 20 y 30 bolsas por hectárea en promedio, los cafetales de Burundi apenas logran entre 5 y 8 bolsas por hectárea. Además, el ciclo de cultivo es relativamente inestable, registrándose cada dos años una muy baja productividad. Las razones principales de los problemas de producción son las malas prácticas agrícolas que se implementan en los cafetales. Los cafetos viejos no producen lo suficiente y no se pueden recuperar con la rapidez necesaria. Los árboles no son bien podados y apenas se fertiliza el suelo. El café de Burundi se cosecha en verano, con despachos a partir de agosto, lo que lo convierte en uno de los pocos cafés realmente frescos que están disponibles para tostado y venta previo a la temporada de vacaciones.

L’importanza del caffè L’importanza del caffè in Burundi non può assolutamente essere sottovalutata, dal momento che il 95% degli abitanti del paese vive in aree rurali e dipende dall’agricoltura. Poiché rappresenta il 78,8% dei profitti derivanti dalle esportazioni del paese, il caffè riveste un ruolo fondamentale per l’economia del Burundi ed è la principale fonte di scambio di valuta estera del paese. È stato stimato che ci sono circa 600.000 produttori di caffè (o 800.000 secondi altri calcoli) che dipendono quasi interamente dal caffè; la maggior parte di essi è costituita da piccoli proprietari terrieri con appezzamenti di estensione inferiore a 0,5 ha (o tra 300 e 500 alberi di caffè). Le piantagioni su larga scala sono molto rare. Benché quasi tutto il caffè coltivato nel paese sia venduto quasi interamente come caffè ‘commerciale’, l’agro-ecologia altamente favorevole e l’infrastruttura di lavorazione ben consolidata offrono al Burundi un notevole potenziale per imporsi sul mercato dei caffè specialty.

Produzione

La taza de café clásico de Burundi tiene cuerpo y una acidez alta aunque delicada. También suelen detectarse aromas suaves a cereza y un típico resabio achocolatado. No obstante, debido a las diferentes condiciones que existen en cada cafetal y en cada montaña, hay una gran variedad de sabores a encontrar, lo cual es ideal para el futuro del café especializado de Burundi.

Fino ad ora il Burundi ha prodotto esclusivamente caffè ‘commerciale’, sebbene di alta qualità, ma con metodi non del tutto efficienti.

A differenza di paesi come il Brasile, che è in grado di produrre in media 20-30 sacchi per ettaro, le fattorie del Burundi sono riuscite a ottenere solo 5-8 sacchi per ettaro. Inoltre il ciclo dei raccolti è relativamente instabile, con una produttività molto bassa ad anni alterni.

Le ragioni principali alla base dei problemi di produzione sono le scarse tecniche agricole adottate nelle piantagioni di caffè. Gli alberi più vecchi producono meno del previsto e non si rigenerano abbastanza velocemente; gli alberi non vengono potati bene e il terreno è appena fertilizzato. Questa situazione crea un ambiente in cui parassiti e malattie si sviluppano con facilità, mentre non vi sono abbastanza condivisione di conoscenze ed istruzione per contrastare tali problemi. Un recente studio, commissionato dal progetto People’s Coffee di Kahawatu (per ulteriori informazioni, visitare il sito web www.kahawatu.org) e condotto da Rainforest Alliance, ha confermato che la resa degli alberi di caffè in Burundi può essere raddoppiata implementando alcune semplici pratiche agricole. Para seleccionar los cafés de Burundi de la cosecha 2012, nuestra empresa importadora de café verde, 32cup, llevó a cabo un trabajo de investigación sin precedentes, colocando sobre la mesa de degustación, para analizarlos, lotes de más de la mitad de todas las estaciones lavadoras. De los 21 lotes que seguían en la mesa después de la primera selección de calidad, no menos de 14 eran de la misma Sogestal: ¡Kirimiro! stations such as Ruhande (91.6), Kibungere (91.0) and Mahonda (90.4) have delivered coffees that are likely to become a brand of their own in the near future. In our opinion, these ratings can be a very helpful in promoting the quality of these ‘cream of the crop’ Burundi coffees, thus raising their price in future international auctions. We also hope that our results will inspire more Burundian farmers to improve their crops. We are more than ever convinced of Burundi’s qualities and future potential as a specialty coffee stronghold, and are looking forward to the 2013 crop.

Below, we present our findings for the five, regionally-based, Sogestals.

Sogestal Kirimiro Location: Central Provinces Washing Stations: 32 Mean altitude: 1,689 metres Mean production: 725 metric tonnes Cupping: Fine acidity, light body. The Kirimiro excels with its sweet and sour aroma, and distinctive green apple fruitiness.

Sogestal Ngozi Location: North-Central Washing Stations: 25 Mean altitude: 1,691 metres Mean production: 646 metric tonnes Cupping: Greasy mouthfeel, meaty body, fresh acidity. The cup of the Ngozi is all about tropical fruit, raspberry and caramel, with a hint of raisins.

Direct Trade

In recent years, the concept of Direct Trade has become somewhat of a buzzword, a dangerous thing in an industry where our customers, and even many within the (consuming) industry itself remain unaware of the complexities surrounding coffee farmers and producers.

Direct Trade, should not just mean knowing the name of a producer, the occasional visit to a farm, a set of photographs supplied by an importer or the one-off purchase of small lots. For us at Union Hand Roasted Coffee, its truth lies in the ability to secure long term supply from farms that we have identified as having the ability to produce truly outstanding coffee. Many factors influence this, and a coherent Direct Trade model should seek to define strengths, weaknesses and limitations of both buyer and seller, and to create joint programmes that give the farmer the required information, support and market access with which to commercialise their crops.

As a member of the Ethical Trading Initiative since 2003 Union Hand Roasted has attached great importance to labour conditions as well as working and environmental standards for all engaged in coffee growing, harvesting and milling. Over a period of three to five years, based upon our experience visiting and working alongside specific coffee communities, and working with experienced people in various industry supply chains, we created a code of conduct for producers that we use as a developmental toolkit that forms the basis of our relationship and expectations. It should be noted that this type of document is also under constant review and development.

All of this comes from posing a simple question; how can a farmer produce coffee that we are interested in if we don’t share a language with which to describe or realize it? Direct Trade should take the form of an extended conversation where we talk about and clarify standards, volume, quality and shipping requirements. We try to understand the complexity in which smallholders operate and look for ways in which we can contribute either through education such as cupper training which places the awareness of their own quality in

Negli ultimi anni il concetto di 'Direct Trade' (commercio diretto) è diventato in un certo senso un termine di moda, una cosa pericolosa in un settore in cui i nostri clienti, e perfino molti all'interno del settore (di consumo) stesso, non hanno la consapevolezza delle complessità che riguardano coltivatori e produttori di caffè.

Direct Trade non dovrebbe significare solo conoscere il nome di un produttore, la visita occasionale a una fattoria, una serie di fotografie fornite da un importatore o l'acquisto straordinario di piccoli lotti. coffee markets their hands, or through shared investment possibly in cupping lab equipment or provision of consultants to address environmental concerns.

The most common misconception around direct Trade is that it’s all about the roaster cutting out the middleman and getting better prices.

In fact nothing could be further than the truth. We believe in explaining to all parties what we expect: traceability, transparency, trust and open dialogue in case of problems and resolutions. Direct Trade for Union Hand Roasted does not necessarily mean cutting out all middlemen and only buying from the farm directly without using other chain actors. What it does mean is that prices are negotiated directly and transparently with the farmers, and services provided by other chain actors such as logistics, trade financing and warehousing are negotiated separately to the coffee prices. The middlemen therefore become ‘sidemen’ with a clear value chain all the way back to the farm.

To agree with some commentators on the subject, yes, it’s not easy, and often there are hugely frustrating challenges, but my concern is that the term Direct Trade will increasingly become used without real substance behind it. It is not defined or regulated; we must use it wisely and not alienate the consuming public by dumbing down a good intention that has the opportunity to serve all of us well in the future.

En accord avec certains commentateurs sur ce sujet : non, ce n’est pas facile et souvent nous sommes confrontés à des défis extrêmement frustrants mais mon souci est que la notion de commerce direct soit de plus en plus utilisée sans réelle substance. Elle n’est pas définie ou régulée ; nous devons l’utiliser judicieusement et ne pas aliéner les consommateurs en nivelant par le bas une bonne intention qui a l'opportunité de bien nous servir à l’avenir.

Todo esto viene de plantear una pregunta simple: ¿cómo puede un agricultor producir el café que nos interesa si no compartimos un idioma con el cual describirlo o desarrollarlo? Comercio Directo debería plasmarse como una conversación de amplio alcance donde hablemos acerca de, y aclaremos patrones, volúmenes, calidad y especificaciones de despacho. Intentamos entender la complejidad dentro de la que se manejan los minifundistas y analizamos medidas y métodos que podríamos aportar ya sea mediante la educación tal como la capacitación para catadores, que coloca en sus propias manos la toma de conciencia de su calidad, o través de inversiones compartidas posiblemente en equipos de laboratorio para cateo o contratación de consultores para que se ocupen de las inquietudes ambientales.

El error más común en torno al Comercio Directo es que simplemente se trata del tostador que suprime al intermediario y así obtiene mejores precios. En realidad, nada podría estar más alejado de la verdad. Nosotros creemos en la idea de explicar a todas las partes lo que esperamos: rastreabilidad, transparencia, confianza y diálogo abierto en caso de problemas y resoluciones. Para Union Hand Roasted, Comercio Directo no necesariamente significa suprimir a todos los intermediarios y simplemente comprarle a la finca en forma directa sin recurrir a otros actores de la cadena. Lo que significa es que los precios se negocian de manera directa y transparente con los agricultores, y que los servicios que prestan otros actores de la cadena tales como logística, financiación de la operatoria y almacenamiento se negocian por separado de los precios del café. Por lo tanto, los intermediarios se convierten en ‘acompañantes’ existiendo una cadena clara de valor a lo largo de todo el recorrido de vuelta a la finca.

Para coincidir con algunos comentaristas en el tema, sí, no es fácil, y muchas veces se plantean desafíos enormemente frustrantes, pero mi preocupación es que el término Comercio Directo es cada vez más usado sin un verdadero fundamento que lo sustente. No está definido ni regulado; debemos usarlo con inteligencia, en lugar de distanciar al público consumidor tirando abajo una buena intención que tiene la oportunidad de servir a los intereses de todos nosotros en el futuro.

Tutto questo nasce da una semplice domanda: come può un agricoltore produrre un caffè che ci possa interessare se non condividiamo una lingua con cui descriverlo o realizzarlo? Il Direct Trade deve assumere la forma di un'ampia conversazione in cui chiarire e parlare di condizioni di standard, volumi, qualità e spedizione. Cerchiamo di comprendere la complessità in cui i piccoli proprietari terrieri operano, e cerchiamo modi con cui contribuire a risolvere questioni di tipo ambientale, sia attraverso la formazione, come il training all'assaggio, che rende queste persone consapevoli della loro qualità, sia attraverso investimenti condivisi, possibilmente in apparecchiature da laboratorio di assaggio o fornitura di consulenti.

Il malinteso più diffuso sul Direct Trade è che si tratti solo del torrefattore che, sbarazzandosi degli intermediari, riuscendo a ottenere prezzi migliori. E in effetti non c'è niente di più lontano dal vero.

Crediamo di dover spiegare a tutte le parti ciò che ci aspettiamo: tracciabilità, trasparenza, fiducia e dialogo aperto in caso di problemi e risoluzioni. Per Union Hand Roasted, Direct Trade non significa necessariamente tagliare fuori i mediatori e acquistare solo direttamente dalle fattorie senza includere gli altri attori della catena.

Quello che Direct Trade significa realmente è che i prezzi vengono negoziati direttamente e in modo trasparente con gli agricoltori, e i servizi forniti dagli altri attori della catena, come logistica, trade finance e stoccaggio, vengono negoziati separatamente dai prezzi del caffè. I mediatori pertanto non mediano più, bensì affiancano le trattative, con un catena di valori chiave che li riconduce direttamente alla fattoria.

A grande event for France As SCAE World Coffee Nice approaches, all members of our French chapter eagerly anticipate this event and look forward to coming together in beautiful Nice this June.

The French coffee community is showing a growing interest in speciality coffee and the importance of quality coffee across the coffee chain. Some people might believe that speciality coffees are proposed and known only by the small artisan roasters and ignored by the larger ones. This is certainly not the case in France, when you analyse the diversity and scale of businesses there is a balance of interest across large and small alike.

Many will attend as delegates at the first World Roasters Summit, there will be support by French exhibitors and visitors to the trade fair and we will all celebrate the ethos of quality coffee through participation and support of the world competitions.

It is a paradox to note that the change for coffee taste has been favoured by the action of big firms encouraging development of “Dosettes”. The increase in ready-to-drink pods or similar have brought many people to drink espresso. They learn about coffee and the marketing strategies are inducing a better knowledge and also a bigger appetite for speciality coffee. This could explain why some machines builders anticipate that several hundred coffee shops will open in France during the next five years. This would be a tremendous change in the country of “Bistros” and that could be a decisive step to promote all types of good coffees and the many ways to prepare and consume them. Nobody wants to miss this market opportunity and it is the role of our association to drive this move in the right direction for quality coffee.

We were surprised and delighted to learn that Nice won the bid to host SCAE World of Coffee this year. We can now feel a wave of interest from the French coffee community as participants sign up for this event including roasteries and distributors. The media is also gearing up for our event and are becoming more and more attentive through coverage of events and do not want to be suspected of missing out on a “ World Championnat”.

SCAE France is confident that NICE will prove to be a great success, everybody is doing their utmost to achieve a great event assisted through the spirit of volunteers, this is the biggest event for coffee that has ever been held in France.

Questo potrebbe spiegare perché alcuni produttori di macchine espresso prevedono che in Francia saranno aperte molte centinaia di caffetterie nei prossimi cinque anni. Si tratterebbe di un cambiamento epocale per la patria dei "Bistrot", e potrebbe essere un passo decisivo per la promozione di tutti i caffè di qualità e dei moltissimi modi esistenti per prepararli e consumarli. Nessuno vuol lasciarsi sfuggire questa opportunità di mercato, ed è compito della nostra associazione guidare questo cambiamento del caffè di qualità nella giusta direzione.

Siamo rimasti piacevolmente sorpresi dall'apprendere che sia stata Nizza a vincere l'appalto per ospitare lo SCAE World of Coffee di quest'anno. A medida que se acerca la World of Coffee de SCAE en Niza, todos los miembros de nuestro capítulo francés esperan con ansias este evento y no ven la hora de congregarse en la hermosa Niza en el mes de junio.

Con l'avvicinarsi dello SCAE World of Coffee di Nizza, tutti i membri nel nostro chapter francese aspettano con impazienza questo evento e non vedono l'ora di ritrovarsi nella bellissima Nizza il prossimo giugno.

La comunidad cafetera francesa está demostrando cada vez más interés en el café especializado y en la importancia del café de calidad en la cadena del café. Alguna gente podría pensar que los cafés especializados son propuestos y conocidos solamente por los pequeños torrefactores artesanos e ignorados por los más grandes.

Ciertamente no es el caso de Francia, cuando uno analiza la diversidad y la dimensión de operaciones existe un equilibrio de interés entre los pequeños y los grandes por igual.

La comunità francese del caffè dimostra un interesse crescente per i caffè speciality e per l'importanza del caffè di qualità lungo la filiera del caffè. Alcune persone potrebbero credere che i caffè speciality siano offerti e conosciuti soltanto dalle piccole torrefazioni artigianali e che siano ignorati dalle più grandi. Aprenden sobre el café, y las estrategias de marketing están induciendo un mejor conocimiento y también un mayor interés por el café especializado. SCAE is proud to be hosting THE WORLD ROASTERS SUMMIT – the world’s first coffee roasters’ summit at World of Coffee, Nice 2013 The afternoon conference will take place in the exquisite Palais de la Méditerranée hotel on Tuesday, 25th June 2013. (The Palais de la Méditerranée is ideally located on the Promenade des Anglais and close to the city centre).

Roasting is an integral part of coffee making and is right in the heart of the process from growing to brewing. Deemed the ‘alchemists’ of the industry, roasters’ skill, innovation and expertise play a pivotal role in the production of fine quality and taste in coffee.

Indeed last year saw the launch of the hugely popular Roasters Challenge during World of Coffee, Vienna 2012. The challenge was the precursor to the premier of the World Coffee Roasting Championship taking place this year and the roasting theme is highlighted once again with the summit.

The event will act as an industry think-tank targeting roasters throughout the world to focus on the areas of Terroir, Direct Trade, the Science of roasting and Roast Profiling.

SUMMIT SPEAKERS Alain Copigny President of Serpac, Paris Alain has 25 years of experience primarily focused on roasting (sourcing roasting machines and advising roasters) as French partner of the well-known german firm PROBAT WERKE. He is an authority on roast profiling and how it affects the taste. Alain is currently president of major products distribution company Serpac in France.

Jeremy Torz Union Hand Roasted Coffee Jeremy has been an active participant in the speciality coffee industry since 1991 whilst resident in California.

Returning to the UK in 1995 he along with Steven Macatonia established one the UK’s first boutique micro-roasteries which was instrumental in changing the face of the UK coffee scene.

In September 2001, Jeremy and Steven launched Union Hand Roasted Coffee to supply ethically-traded, exceptional coffees to the developing marketplace. The company has a mission to raise consumer understanding of the human effort involved in coffee production and to develop sustainable coffee trading in quality Arabicas as a route out of commodity dependence for producers.

George Howell founded The Coffee Connection in Massachusetts in 1974. For the following 2 decades, he grew Coffee Connection into 24 company-owned stores throughout New England, emphasizing coffee as a noble beverage, worthy of the same respect as fine wine. In 1994, Howell sold his high-quality popular coffee company to Starbucks.

After graduating with a degree in Food Chemistry from the California State University – Joseph began working with the Coffee Quality Institute (CQI), a non-profit educational research foundation. During his time at the CQI he combined his knowledge of chemistry with practical coffee science to better understand coffee quality thus allowing him to play a key role in the development of numerous international certification programs including the Q-Program, Roasters Guild, Barista Guild, WBC as well as various other SCAA Certification Programs.

In 2001, Joseph accepted the position of Director of Science and Technology with the Specialty Coffee Association of America (SCAA) and worked as their in-house coffee scientist and information technology director. He has served as the specialty coffee industry’s leading technical expert on issues pertaining to coffee science, chemistry and technology.

After being awarded the Lifetime Achievement Award by the Specialty Coffee Association of America in 1996, he returned to coffee-traveling world-wide, and from 1997 to 1999 worked with the United Nations and the International Coffee Organization on models of economic sustainability for coffee farmers. This led directly to his conceiving the first international green coffee competition in Brazil, followed immediately by a green coffee internet auction to roasters around the world. He then co-founded the Cup Of Excellence program, a non-profit organization, designed to help break the commodity/price cycle and to give identity to coffee farmers in the specialty coffee industry.

Howell, educated at Yale University, lives in Wayland, MA, and travels extensively to coffee producing farms.

He has written for many food and beverage publications, guest lectured at Harvard University, Boston University and Johnson & Wales and is working on a new book about producing high quality coffee. After leaving the Cup of Excellence he created the George Howell Coffee Company and its Terroir Coffee brand (www.terroircoffee. com) in 2004. His company emphasizes single estate coffees and is a pioneer in raising quality coffee standards to much higher levels. In 2007 Howell was awarded the Specialty Coffee Association of Europe’s highest honor, the Better Coffee World Award.

He has also been a frequent technical contributor to several trade publications and has been featured on the History Channel, National Public Radio (NPR), Australian Broadcasting Corporation (ABC), and the British Broadcasting Corporation (BBC). In 2004 he launched www.coffeechemistry.com - a scientific information portal dedicated to the advancement of coffee science.

In 2009 after a decade in the specialty coffee industry, Joseph left the SCAA to launch Coffee Intelligence, a independent technical consulting firm dedicated to coffee testing, training and addressing the future needs of the industry using both science and technology.

SCAE WORLD OF COFFEE

Crafting the World Coffee Roasting Championship Ten national champions prepare to take to the stage at SCAE World of Coffee, Nice this June in the first-ever World Coffee Roasting Championship. Creators Filip Åkerblom & Trish Rothgeb reveal their joys and tribulations in conceiving this new competition.

What were the biggest challenges to creating a competition from scratch?

Trish: I think the biggest challenge was to get some people to understand the vision of a roasting competition, and we’re still working on that. Luckily, there are enough enthusiastic people out there who are happy to be cheerleaders for it.

Filip: To get a global perspective and create an interesting format based on education & skill levels. Also to find a level that will make the competition challenging for a broad group of roasters worldwide. It’s important to create a competition that will involve everyone who would like to be part of it and to highlight a profession with international standards.

What did you enjoy the most about the creative process?

Trish: The most fun was brainstorming the rules of play. We thought about what we wished a good roaster would know, which skills they need to show and their competency. And then, we tried to make it challenging.

We wanted this [competition] to focus as much on real roasting skill as possible. A truly confident roaster will win this thing every time.

Filip: Meeting up with colleagues and discussing the expectation from the speciality industry. It’s really an amazing experience when you agree on what’s important for the industry. Especially when the interest of learning about developing flavour in coffee is growing all the way from the barista level.

Did the event in Vienna reflect what you had envisaged? And what would you change, if anything?

Trish: It worked out way better than I had hoped. I only wish we had had more roasters to come to see it!

Filip: The Vienna show was a great dry run for a format of these proportions. The design and size of the event was great as was the spirit from the competitors. As with all new organisations many things can be improved. The installation was a critical part of the competition, and it needs to be more formal and structured ahead of time. The judging and scoring needs to be more focused on production roasting rather than the sensorial quality level.

How do you see the future for the Roasting Championship?

Trish: My overarching goal is to make this a beacon of a sort. The WBC created better baristas worldwide. The positive impact to the industry cannot be adequately measured. I want all roasters to get the information and education they need and want, in the way WBC helped baristas get what they needed.

Filip: A world championship for coffee roasters has the potential of developing a global community for roasters that doesn’t exist today. I hope the competition will contribute to bringing recognition to a sometimes forgotten profession and skills to a broader group of interested coffee people.

Quels ont été les plus importants défis à relever pour créer une compétition en partant de rien ?

Trish : Je pense que le plus gros défi consistait à faire comprendre aux gens le concept d’une compétition de torréfaction et nous y travaillons encore.

Heureusement, il existe suffisamment de personnes enthousiastes qui en font la promotion avec bonheur.

Filip : Avoir une perspective mondiale et créer un format intéressant fondé sur les niveaux de formation et de compétence. Et également de trouver un niveau qui rende la compétition stimulante pour un grand nombre de torréfacteurs du monde entier. Il est important de créer une compétition qui impliquera quiconque souhaite y prendre part et de mettre en lumière une profession dotée de normes internationales.

Qu’avez-vous apprécié le plus dans le processus créatif ?

Trish : Le plus drôle a été de réfléchir tous azimuts aux règles du jeu. Nous avons réfléchi aux connaissances que nous voulions qu'un bon torréfacteur possède, aux compétences qu’il devait démontrer et à son expertise. Puis nous avons essayé d’en faire un défi. Nous voulions que cette [compétition] soit axée autant que possible sur les véritables compétences de torréfaction. Un torréfacteur véritablement sûr de lui remportera cette compétition systématiquement.

Filip : Les réunions avec nos collègues et les discussions sur les attentes de l'industrie du café de spécialité. C’est vraiment une expérience extraordinaire lorsque vous êtes d’accord sur ce qui importe pour l’industrie. Surtout lorsque la volonté de s’informer sur le développement de l’arôme du café grandit auprès de tous, à commencer par les baristas.

Le salon de Vienne vous a-t-il renvoyé l’image que vous attendiez ? Et que changeriez-vous le cas échéant ?

Trish : Cela a fonctionné au-delà de mes espérances. J'aurais seulement souhaité que davantage de torréfacteurs y participent !!

Filip : Le salon de Vienne a été un terrain d’essai formidable pour un format de cette ampleur. Le concept et l'ampleur de ce salon étaient fantastiques, à l'instar de l'esprit des compétiteurs. Comme pour toute nouvelle organisation, de nombreux aspects peuvent être améliorés. L’installation était une partie essentielle de la compétition et elle doit être plus formelle et structurée à l'avance. Le jugement et la notation doivent être davantage axés sur la torréfaction de production plutôt que sur le niveau de qualité sensorielle.

Comme voyez-vous l’avenir du Championnat de torréfaction ?

Trish : Mon principal objectif est de faire de ce championnat un événement phare. Le WBC a créé les meilleurs baristas du monde. L’impact positif pour l’industrie ne peut pas être mesuré de manière adéquate. Je veux que tous les torréfacteurs reçoivent les informations et la formation dont ils ont besoin et qu’ils souhaitent, de la même façon que le WBC a répondu aux besoins des baristas.

Filip : Un championnat du monde destiné aux torréfacteurs de café a le potentiel de donner naissance à une communauté mondiale de torréfacteurs qui n’existe pas à ce jour. J’espère que la compétition contribuera à amener de la reconnaissance à une profession parfois oubliée, ainsi que des compétences à un groupe de professionnels du café passionnés.

Trish: La cosa più divertente è stato il brainstorming per le regole del gioco. Abbiamo pensato a cosa volevamo che sapesse un buon torrefattore, quali abilità dovesse dimostrare e le competenze che dovesse avere. E poi abbiamo cercato di rendere il tutto stimolante.

Volevamo che questa competizione si incentrasse quanto più possibile sulle vere abilità dei torrefattori. Un torrefattore davvero sicuro di sé vincerà questa gara ogni volta.

Filip: Incontrarci con i colleghi e discutere con loro delle aspettative dell'industria dei caffè speciality. E' davvero meraviglioso trovarsi d'accordo su ciò che è importante per il settore. Specialmente quando, a partire dal livello barista, l'interesse di imparare come sviluppare gli aromi del caffè va sempre crescendo.

L'evento di Vienna è stato come avevate previsto? E cosa vorreste cambiare?

Trish: Ha funzionato molto meglio di quanto sperassi. Avrei solo voluto che ci fossero più torrefattori presenti!

Filip: L'evento di Vienna è stato un ottimo banco di prova per un formato di queste proporzioni. La struttura e la grandezza dell'evento sono stati grandiosi, e lo è stato anche l'entusiasmo dei partecipanti.

Per quanto riguarda l'organizzazione, c'è molto da poter migliorare.

L'impianto è stato un punto critico della competizione, dev'essere più formale e strutturato in anticipo. I parametri di giudizio e punteggio devono essere più incentrati sulla torrefazione di produzione piuttosto che sul livello di qualità sensoriali.

Come vedete il futuro del Campionato di Torrefazione?

Trish: Il mio ambiziosissimo obiettivo è di rendere questo evento un vero e proprio baluardo. Il WBC ha creato baristi migliori in tutto il mondo. L'impatto positivo sull'industria non può essere adeguatamente misurato. Voglio che tutti i torrefattori ricevano le informazioni e la formazione che vogliono e di cui hanno bisogno, così come il WBC ha aiutato i baristi ad ottenere ciò di cui avevano bisogno.

A taste for learning

by JEREMY SOUTHGATE SCAE Workshops and Education SCAE World of Coffee, Nice provides a great opportunity to combine your visit with certified coffee training. SCAE’s Coffee Diploma System has become an internationally recognised coffee education and certification programme that is to evolve into three levels at Nice: Foundation, Intermediate and Professional.

The Sensory and Cup Tasting Foundation Level In April of this year, I attended a beta test of this course, a development phase that all courses go through prior to launch. Lead by creator John Thompson of Coffee Nexus Limited, we assemble in a well-equipped training room at Masteroast in Peterborough.

John begins with an introduction examining each of our five senses – sight, smell, taste, touch and hearing – and how best these can be used as a scientific discipline to measure, analyse and interpret reactions to food characteristics and materials and apply this to coffee.

John explains that the flavour wheel describes aroma in a way that we collectively recognise and use as a common language to describe aroma from coffees – in bean, ground and wet form. The small glass bottles of a Nez du Café are passed around the group to analyse its aroma. Each bottle marked only by number and with practice, I understand that this will help me identify the most typical aroma characteristics in the world’s finest coffees.

I’m generally acknowledged to be a bit of a foodie and as such look to describe taste with descriptors, bosque comes to mind when describing fungi, clearly one to avoid in coffee! But when it came to the three classifications of coffee aroma, the cedar-piney scents (Dry Distillation Aromas) of Kenyan and Rwandan coffees was less familiar, whereas the caramelly and chocolatey notes of Sugar Browning Aromas and plant extracts (Enzymatic Aromas) of lavender were much more familiar. I had no idea that coffee aroma could be described in this way and now understand the language used by coffee professionals.

As a head judge to Cup of Excellence recently in Guatemala, John is on very familiar territory as he leads us through the protocol of a tasting, he must surely have cupped thousands of cups. Firstly we assess the aroma of dry grounds in the cup before immersing them in hot water. After a carefully timed brew, we break the crust and cup, focusing our attention on mouth-feel. I learn that sweet and clean are prevalent qualities of speciality coffee and that salty isn’t desirable in coffee.

At the end of the day, some people gave me their feedback, one said, ‘The Foundation Level provides a good base introduction to sensory and cup tasting without being intimidating for beginners’.

John a débuté par une introduction passant en revue chacun des cinq sens : la vue, l'odorat, le goût, le toucher et l'ouïe. Il a expliqué comment ils pouvaient être utilisés au mieux de manière scientifique pour mesurer, analyser et interpréter les réactions aux caractéristiques et aux textures des aliments, et comment appliquer ces techniques au café.

John a expliqué que la roue des saveurs décrit l'arôme d'une manière que nous reconnaissons tous et utilise un langage courant pour décrire les arômes des cafés, qu'ils soient torréfiés, moulus ou infusés. Les petits flacons en verre d'un « Nez du Café » sont passés d'une personne à l'autre pour en analyser l'arôme. Chaque flacon n'est identifié que par un chiffre et avec de la pratique, j'ai compris que cela m'aiderait à reconnaître les caractéristiques les plus typiques de l'arôme dans les meilleurs cafés au monde.

On dit généralement de moi que je suis un gourmet et un gourmand.

Ainsi, je cherche toujours à expliquer le goût par des termes descriptifs : forêt me vient à l'esprit pour décrire un champignon, clairement un terme à éviter pour le café ! Mais en ce qui concerne les trois catégories d'arômes du café, les parfums de cèdre et de pin (arômes de distillation à sec) des cafés du Kenya et du Rwanda m'étaient moins familiers, alors que les notes de caramel et de chocolat des arômes de sucre carbonisé et les extraits de plante (arômes enzymatiques) de lavande l'étaient beaucoup plus. Je n'avais jamais imaginé qu'on pouvait décrire ainsi l'arôme du café et je comprends désormais le langage utilisé par les professionnels du café.

John, qui a récemment été juré principal de la Cup of Excellence au Guatemala, sait de quoi il parle lorsqu’il explique le protocole d'une dégustation. Il a sans aucun doute dégusté des milliers de tasses.

Premièrement, nous évaluons l'arôme de la mouture sèche dans la tasse avant de l'immerger dans de l'eau chaude. Après une infusion soigneusement minutée, nous brisons la surface du liquide et goûtons, en concentrant notre attention sur la sensation en bouche. J'ai appris que « doux » et « propre » sont des qualités prédominantes des cafés de spécialité et qu'une sensation salée n'est pas souhaitable dans le café.

En fin de journée, certaines personnes m'ont fait des commentaires.

L'une d'entre elles a dit : « Le niveau Débutant est une bonne introduction fondamentale aux caractéristiques sensorielles et à la dégustation, sans se sentir intimidé parce qu'on est débutant ».

El Sistema de Diploma del Café de la SCAE se ha convertido en un programa de educación y certificación en café de reconocimiento internacional que en Niza estará conformado por tres niveles: Básico, Intermedio y Profesional.

El Nivel Básico de Degustación En abril de este año, asistí a una prueba beta de este curso, una fase de desarrollo por la que pasan todos los cursos antes de su lanzamiento.

Bajo la dirección del creador John Thompson de Coffee Nexus Limited, nos congregamos en una sala de capacitación muy bien equipada en Masteroast, Peterborough.

John comienza con una introducción en la que analiza cada uno de nuestros cinco sentidos – vista, olfato, gusto, tacto y audición – y cómo podrían utilizarse de la mejor manera como una disciplina científica para medir, analizar e interpretar reacciones a características y materiales de los alimentos y aplicar esto al café.

John explica que la rueda del sabor describe el aroma de una forma que colectivamente reconocemos y usamos como un lenguaje común para describir el aroma de los cafés – en grano, molidos y húmedos.

Las pequeñas botellas de vidrio de un Nez du Café van pasando por el grupo para analizar su aroma. Siendo que cada botella está marcada solamente por número, entiendo que esto me ayudará a identificar las características más típicas de aroma de los cafés más refinados del mundo.

Por lo general reconozco que soy un tanto gourmet y por lo tanto, intento describir el gusto con descriptores; bosque me viene a la mente para describir a los hongos, pero, obviamente, algo que hay que evitar en el café. Pero cuando llegó la hora de las tres clasificaciones de aroma del café, los aromas cedro-pinoso (Aromas de Destilación Seca) de los cafés de Kenia y Ruanda eran menos familiares, en tanto que las notas acarameladas y achocolatadas de los Aromas del Azúcar Negra y de los extractos vegetales (Aromas Enzimáticos) de la lavanda eran mucho más familiares. No tenía idea que el aroma del café podía describirse de esta forma y ahora entiendo el lenguaje que usan los profesionales del café.

Como presidente del jurado de la Taza de la Excelencia recientemente en Guatemala, John se encuentra en un territorio muy familiar recorriendo el protocolo de una cata; seguramente debe haber probado miles de tazas. En primer lugar, evaluamos el aroma de molidos secos en la copa antes de sumergirlos en agua caliente.

Después de una preparación con un esmerado cuidado del tiempo, rompemos la corteza y catamos, poniendo atención a la sensación en la boca. Me entero que la dulzura y pureza son cualidades predominantes del café especializado y que lo salado no es deseable en el café.

Al final del día, algunas personas me dieron sus comentarios; una dijo: 'El Nivel Básico brinda una buena introducción básica a la degustación sin sentirse intimidados por ser principiantes’.

Livello Base: analisi sensoriale e degustazione Lo scorso aprile ho partecipato a un beta test del corso Base di analisi sensoriale e degustazione, ossia una fase di sviluppo che precede il lancio di ogni corso. Guidati dal creatore stesso del corso, John Thompson di Coffee Nexus Limited, ci siamo riuniti in una sala training ben attrezzata presso Masteroast, a Peterborough.

John ha esordito con un'analisi di ognuno dei cinque sensi - vista, olfatto, gusto, tatto e udito - e ha parlato di come questi possono essere utilizzati al meglio come strumento scientifico per misurare, analizzare e interpretare le diverse reazioni alle caratteristiche e alle sostanze del cibo, e come possono essere utilizzati per il caffè.

John ha spiegato che la ruota degli aromi descrive le caratteristiche organolettiche in un modo che tutti noi riconosciamo e usiamo come linguaggio comune per descrivere l'aroma del caffè - sia esso in chicchi, macinato o sotto forma di bevanda. A tutti i partecipanti sono poi state passate le bottiglie di vetro del Nez du Café per procedere all'analisi degli aromi; ogni bottiglia era contrassegnata soltanto da un numero.

Con un po' di pratica, sono convinta che questo esercizio mi aiuterà a riconoscere i tratti aromatici più tipici dei migliori caffè del mondo.

Tutti sanno che sono una nota buongustaia, e quindi una persona che cerca di parlare di gusto in termini molto descrittivi: ad esempio, se devo descrivere i funghi, la parola che mi viene in mente è bosco, un termine assolutamente da evitare quando si parla di caffè! Ma quando si è trattato di analizzare le tre tipologie di aromi del caffè, la fragranza di cedro e pino (aromi a distillazione secca) dei caffè provenienti dal Kenia e dal Ruanda mi risultava meno familiare, mentre riconoscevo bene le note di caramello e cioccolato degli aromi zucchero caramellato e gli estratti delle piante (aromi enzimatici) di lavanda. Non immaginavo che il caffè potesse essere descritto in questo modo, e ora capisco il linguaggio usato dai professionisti del caffè.

Essendo recentemente stato il giudice di punta della Cup of Excellence in Guatemala, John ci ha guidati attraverso il protocollo della degustazione , dando prova di conoscere a menadito il territorio in cui si muoveva: nella sua vita avrà di certo degustato migliaia di caffè. Innanzitutto abbiamo valutato l'aroma dei caffè macinati secchi in tazza prima di immergerli in acqua calda. Dopo un'infusione attentamente cronometrata, abbiamo dissolto la crema e abbiamo degustato, concentrandoci sulla sensazione palatale. Ho imparato che dolce e pulito sono qualità prevalenti dei caffè speciality, mentre il salato non è una qualità desiderabile nel caffè.

Alla fine della giornata, diverse persone hanno espresso la loro opinione sul corso; una di queste mi ha detto: "Il livello Basic fornisce una buona introduzione all'analisi sensoriale e alla degustazione, senza però spaventare i principianti".

How do you feel the industry has changed over the years?

The Summit will be presented in English and French.

The industry has changed from being a subjectively focused industry to one that is much more objective and open to scientific and technological innovation. This is in part due to education programs that have slowly become a greater part of the industry as a whole.

How did you get started in the coffee world? Comment avez-vous débuté dans l'univers du café ?

My career in coffee started after I was hired as a researcher for SCAA following an infamous coffee scandal with adulterated coffee in the US. The project that started off as more of a CSI episode - was actually the start of a fascinating journey and one that I continue to enjoy even today.

Not a day goes by without coffee being mentioned in the news, media or printed press. Coffee over the years has taken a centre spotlight over many other beverages and I only see the industry growing, especially in emerging countries such in Asia, Eastern Europe and Russia.

Over the coming year, what do you see as being the two or three biggest factors that will shape the industry? Dans l'année à venir, quels sont selon vous les deux ou trois facteurs les plus importants qui influeront sur le secteur ?

I see science, technology and online collaboration as the biggest drivers in reshaping our industry.

Yes, my first SCAE event was in Berne, Switzerland in 2006. I made several key contacts during that event that still continue on today.

I think the most important person in the entire coffee chain is the farmer and we must support them. It’s certainly wonderful that we’ve innovated tremendously on the consuming end, but without them, there would be no coffee industry to speak of.

When I first tasted Kenya coffee I was truly fascinated. Never had I experienced a coffee with such acidic complexity. It also happens to be the coffee that I based a big part of my research on early on.

Improving education at every level

Strategy In the last issue I set out the framework of our three year strategic plan, and highlighted the objectives we have set to improve our member benefits, grow our membership and support our chapters and National Coordinators in a better way. This time I would like to talk about what we intend to do with our education programme.

The strategic objective of the education committee is to supply and control a researched coffee education and certification programme which is recognised by, and in harmony with, speciality coffee associations worldwide, enhancing industry respect towards coffee professionals globally, whilst imparting knowledge, understanding, appreciation and enthusiasm for speciality coffee. But what does this mean? What will we do to enable it to happen?

Firstly we will introduce a quality audit structure for ASTs through an online feedback system for students and spot audits to ensure that the quality and integrity of our Coffee Diploma System is upheld. The online feedback system has already started.

Secondly we have started a review and reorganisation of the Coffee Diploma System curricula, including rewriting most of the modules and introducing a third tier, so in future there will be foundation, intermediate and professional levels in all subjects. Some of the new modules have already been written, the new professional levels should be ready by the end of the year.

Thirdly we intend to give much more support to our existing and new ASTs to help them to deliver more certifications. In addition we will form partnerships with coffee schools and academies to further enhance the activity and integrity of the education programme.

For the future we have bold plans: • Benchmark the Coffee Diploma System against other coffee education programmes • Develop and publish an e-learning strategy • Achieve international third party accreditation • Broaden our education offering beyond Coffee Diploma System • Engage consumers (coffee lovers) by building a consumer education programme • Employ a second Education Coordinator • Employ an education specialist

Ans le dernier numéro, j’ai défini le cadre de notre plan stratégique triennal et j’ai souligné les objectifs que nous nous sommes fixés pour améliorer les avantages que nous apportons à nos membres, pour agrandir leur nombre et pour mieux soutenir nos branches et nos coordinateurs nationaux. Cette fois-ci, je voudrais parler de ce que nous avons l’intention de faire avec notre programme d’éducation.

L’objectif stratégique du comité d’éducation est de fournir et de contrôler une éducation au café documentée et un programme de certification reconnu par les associations mondiales de café de spécialité et harmonisée avec ces dernières et qui stimule globalement le respect de l’industrie à l’égard des professionnels du café tout en transmettant le savoir, la compréhension, l’appréciation et l’enthousiasme pour le café de spécialité. Mais qu’est-ce que cela signifie au juste ? Qu’allons-nous faire pour concrétiser cela ?

Premièrement, nous introduirons une structure d’audit qualité pour les AST (formateurs spécialisés) à travers un système de rétroaction en ligne pour les étudiants et des audits sur place pour veiller à ce que la qualité et l’intégrité de notre système de diplôme de café soient maintenues. Le système de rétroaction en ligne est déjà lancé.

Deuxièmement, nous avons lancé une révision et une réorganisation du programme du diplôme de café qui inclue la réécriture de la plupart des modules et l’introduction d’un troisième niveau de sorte à ce que, à l’avenir, il existe, pour tous les sujets, trois niveaux : basique, intermédiaire et professionnel. Certains parmi les nouveaux modules ont déjà été rédigés, les nouveaux niveaux professionnels devraient être prêts d’ici la fin de l’année.

Troisièmement, nous avons l’intention de soutenir beaucoup plus nos formateurs spécialisés actuels et nouveaux pour les aider à délivrer plus de certifications. De plus, nous formerons des partenariats avec les écoles et les académies de café pour augmenter les activités et l’intégrité du programme d’éducation.

Pour l’avenir, nous avons des plans audacieux : • Faire du système de diplôme de café une référence par rapport à d’autres programmes d’éducation de café • Développer et publier une stratégie d’e-learning • Obtenir l’accréditation internationale d’un organisme tiers • Elargir notre offre d’éducation au-delà du système de diplôme de café • Intéresser les consommateurs (amateurs de café) en établissant un programme d’éducation pour les consommateurs • Employer un deuxième coordinateur en éducation • Employer un spécialiste de l’éducation L’éducation est l'un des clous de la Stratégie Café Europe et elle est au cœur de nos valeurs et de notre éthique. En la última edición comuniqué el marco de nuestro plan estratégico trienal, y puse de relieve los objetivos que nos hemos impuesto para mejorar los beneficios para nuestros miembros, hacer crecer nuestra membresía y secundar mejor a nuestros capítulos y Coordinadores Nacionales. En esta ocasión me gustaría hablar sobre lo que pretendemos hacer con nuestro programa de educación.

El objetivo estratégico del comité de educación es dictar y controlar un programa de educación y certificación en café que sea reconocido por, y esté en armonía con, las asociaciones de café especializado de todo el mundo, elevando los patrones de respeto hacia los profesionales del café a nivel mundial, e impartiendo a la vez conocimientos, explicaciones, aprecio y entusiasmo por el café especializado. Pero, ¿qué significa esto? ¿Qué haremos para que esto se haga realidad?

En primer lugar, presentaremos una estructura de auditoría de calidad para los AST mediante un sistema de consultoría en línea para estudiantes y auditorías puntuales para asegurar que se mantenga la calidad y la integridad de nuestro Sistema de Diploma del Café. El sistema de consultoría en línea ya está en marcha.

En segundo lugar, hemos iniciado una revisión y reorganización del plan de estudios del Sistema de Diploma del Café que incluye volver a escribir la mayoría de los módulos y presentar un tercer nivel, por lo que en el futuro habrá niveles básico, intermedio y profesional en todas las materias. Algunos de los módulos nuevos ya están redactados, y los nuevos niveles profesionales deberían estar listos para fin de año.

Nell'ultimo numero ho definito la struttura del nostro piano strategico triennale, e ho messo in evidenza gli obiettivi che ci siamo preposti per migliorare i vantaggi per i nostri membri, aumentare il numero dei nostri iscritti e sostenere nel miglior modo possibile i nostri Chapter e i Coordinatori Nazionali. Questa volta vorrei parlare di ciò che intendiamo fare con il nostro programma di formazione.

L'obiettivo strategico di questo comitato di formazione è fornire e controllare un programma di formazione e certificazione di alto livello in materia di caffè, riconosciuto da, e in armonia con, le associazioni di caffè Speciality di tutto il mondo, facendo crescere nell'industria il rispetto nei confronti dei professionisti del caffè a livello globale, e allo stesso tempo condividendo conoscenze, comprensione, apprezzamento ed entusiasmo per i caffè Speciality. Ma che cosa vuol dire? Che cosa faremo perché tutto ciò accada?

Innanzitutto presenteremo una struttura di verifica della qualità degli AST (Trainer Autorizzati SCAE) attraverso un sistema di feedback online per gli studenti, e verifiche sul posto per assicurare che la qualità e l'integrità del nostro Coffee Diploma System siano sempre all'altezza.

Il sistema di feedback online è già stato avviato.

In secondo luogo, abbiamo avviato una revisione e una riorganizzazione dei curricula del Coffee Diploma System, comprese la riscrittura della maggior parte dei moduli e l'introduzione di un terzo livello, affinché in futuro ci saranno i livelli base, intermedio e professionista per tutte le materie. Alcuni dei nuovi moduli sono stati già scritti, i nuovi livelli professionista saranno pronti per la fine dell'anno.

2013 Uk Coffee Events Results SCAE UK Chapter and UK Coffee Events are pleased to announce the results for the 2013 UK Coffee Events, hosted by Allegra at The London Coffee Festival.

Winning this event was Bath barista Jason Gonzalez. Jason will represent the UK in the World Cup Tasters competition being held at the SCAE World of Coffee in Nice.

Between Thursday 25 April and Sunday 28 April 2013, more than 70 baristas from across the UK took to the stage in the UK Coffee Events performance arena at The Old Truman Brewery. The competitions were also broadcast live to 39 countries around the world.

SCAE field trip to Guatemala Day one – Sunday 3 March The first day sees the arrival of 14 visitors who come from: England, Germany, Honduras, Hungary, Ireland, Sweden and Ukraine.

Day two – Monday 4 March Anacafé invites us to a welcome reception at their offices in the city.

Miguel Antonio Medina, Anacafé’s vice chairman welcomes us, whilst Anacafé director and plantation owner, Juan Luis Barnos, presents some background history to Anacafé and Guatemalan coffee market.

Coffee in Guatemala Coffee accounts for 2.5% of Guatemala’s land area, 667,663 sqm (108,889km2). Three elements bring unique qualities to the coffee: Mountain altitudes of 4,300-6,500 ft (1,300-2,000 m) above sea level. .

Major geographic influences of the Atlantic and Pacific oceans, large volcanic crater lakes, flat plains and mountain ranges all combine creating more than 300 microclimates.

Anacafé created the brand ‘Guatemalan Coffees’ and divided the country into eight coffee regions that have distinct cup profiles: Acatenango, Antigua, Atitlán, Coban, Frajanes, Huehue, New Oriente, San Marcos. And the last factor is rainfall. It is plentiful and varied with average ranges from 32 to 200 in (800-5000 mm).

Coffee is the second largest exported commodity. The main export markets are: USA (45-50%), Europe (27%) and Japan (13%).

Juan revealed a catastrophe that is unfolding right now, that will have huge socio-economic consequences. Leaf rust or ‘Roya’, has affected a growing area of nearly193,200 ha out of 270,000 ha (That’s 70% of farms). The outbreak followed a combination of ideal climatic conditions in 2010/11. Whilst systemic fungicidal sprays are costly some farmers have used them but with so many plants to treat and that are only accessible by hand, furthermore the treatment is only effective in the early stages. The alternative is stumping or complete replacement – it then takes four years to replenish fruit bearing plants.

It is estimated that around 185,000 jobs will be lost and more than halving the revenue will be lost, to the sum of around 580 million USD. Next we visit Anacafés Soil and Leaf analysis laboratory and Cupping Room. The head of the laboratory, Umberto Jimenez provides a tour of facilities and practices. Then it’s into the Anacafé Cupping Room where Peter Engelharett talks us through cupping all 8 regional coffees.

Anacafé a créé à la marque « Cafés guatémaltèques » et divisé le pays en huit régions caféières, qui présentent des profils distincts en tasse : Acatenango, Antigua, Atitlán, Coban, Frajanes, Huehue, New Oriente, San Marcos. Le dernier facteur est la pluviosité. Elle est abondante et variée, avec des moyennes comprises entre 800 et 5000 mm.

Le café est le deuxième produit d'exportation. Les principaux marchés d'exportation sont les suivants : les États-Unis (45-50 %), l'Europe (27 %) et le Japon (13 %).

Juan a révélé une situation catastrophique actuelle qui aura d'énormes conséquences socio-économiques. En dépit du coût des fongicides systémiques, certains exploitants les ont utilisés mais le nombre de plantes à traiter est immense, d'autant plus qu'elles ne sont accessibles qu'à la main. D'autre part, le traitement n'est efficace que s'il est appliqué de manière précoce. L'autre solution consiste à tailler ou à remplacer complètement les plantations. Il faut alors attendre quatre ans pour que les caféiers donnent des fruits. Gita SCAE in Guatemala Primo giorno - Domenica 3 Marzo Il primo giorno ha visto l'arrivo dei 14 visitatori provenienti da: Inghilterra, Germania, Honduras, Ungheria, Irlanda, Svezia e Ucraina.

Día 1 – Domingo 3 de marzo El primer día se produce la llegada de 14 visitantes que vienen de: Inglaterra, Alemania, Honduras, Hungría, Irlanda, Suecia y Ucrania.

Día 2 – Lunes 4 de marzo Anacafé nos invita a una recepción de bienvenida en sus oficinas de la ciudad. Miguel Antonio Medina, el vicepresidente de Anacafé, nos da la bienvenida, mientras el director y dueño de la plantación de Anacafé, Juan Luis Barnos, nos explica un poco la trayectoria de Anacafé y del mercado de café guatemalteco.

El Café en Guatemala El café ocupa el 2,5% de la superficie de tierras de Guatemala, 667.663 m2 (108.989 km2). Hay tres elementos que aportan cualidades especiales al café: Montañas con altitudes de 4.300-6.500 pies (1.300-2.000 m) sobre el nivel del mar. Importantes influencias geográficas de los océanos Atlántico y Pacífico, grandes lagos con cráteres volcánicos, llanuras y cadenas montañosas se combinan generando más de 300 microclimas.

Anacafé creó la marca ‘Cafés de Guatemala’ y dividió al país en ocho regiones cafeteras que tienen perfiles distintivos de cata: Acatenango, Antigua, Atitlán, Coban, Frajanes, Huehue, New Oriente, San Marcos. Y el último factor es la lluvia. Es abundante y variada con promedios que oscilan entre 32 y 200 pulgadas. (800-5000 mm).

El café es la segunda exportación más grande de productos básicos.

Los principales mercados de exportación son: EE.UU. (45-50%), Europa (27%) y Japón (13%).

Juan hizo mención a una catástrofe que se está desatando en este preciso momento que tendrá enormes consecuencias socio-económicas La Roya del cafeto ha afectado a una superficie de cultivo de casi 193.200 ha del total de 270.000 ha (Eso equivale al 70% de las fincas). La epidemia siguió a combinación de condiciones climáticas ideales que se dieron en 2010/11. Aunque las fumigaciones sistemáticas son costosas, algunos cafetaleros las han aplicado pero con tantas plantas para tratar y que además sólo se puede acceder a ellas en forma manual, el tratamiento es efectivo únicamente en las etapas tempranas. La alternativa es poda o reemplazo total – luego lleva cuatro años repoblar plantas con frutos. Se estima que se perderán alrededor de 185.000 puestos de trabajo y más de la mitad de los ingresos, por una suma de aproximadamente 580

Miguel Antonio Medina, il vicepresidente di Anacafé, ci ha dato il benvenuto, mentre il direttore di Anacafé, nonché proprietario terriero, Juan Luis Barnos, ci ha illustrato la storia di Anacafé e del mercato del caffè del Guatemala.

LOS ANDES FARM Day three – Tuesday 5 March Cooperativa La Voz, Lake Atitlán Anacafé provide a minibus along with a driver, Alberto and Enrico our guide. We set route west, on a three-hour drive. Arriving at Lake Atitlán we speed across by ferry and meet Lucas Bizarro at Cooperativa La Voz. The 150 ha plantation of organic coffee sits at 1625 m above sea level.

Started in 1979 by 20 families it now employs around 140 families today growing Bourbon and Caturra varietals. The last of the parchment coffee is being slowly turned by rake on the sun-kissed patios. 320 bags of 69 kg of green coffee were harvested this year, down by almost 30% on 2012. We pass through the shade grown coffee plants that display telltale signs of Roya, with blotchy leaves and naked stems.

Day four – Wednesday 6 March Los Andes farm, Atitlán. A protected area on the southern slopes of the Atitlán Volcano the farm produces 2,500 bags of parchment coffee over 104 ha Varietals include Caturra, Catuai, Catimor and Sarchimor.

Owned and operated by a third generation, James and daughter Olga Hazard provide a warm welcome. Olga is a strong and yet cheerful leader, who places women on the estate in leadership roles that traditionally are assigned to men. There’s the School Director who we are on our way to visit, others include the Tea Factory Coordinator, Coffee Mill Coordinator, Office Assistants and the Compost Lab Coordinator.

Los Andes was one of the first cloud forests dedicated to the protection of the resplendent Quetzal bird, the national symbol, although elusive in life, we are shown the call to summon them; for now at least we content ourselves with viewing one long-narrow iridescent tail feather. James is a keen advocate for biodiversity and it’s benefit to farming and the people who live and work on the estate.

The coffee wet mill is gravity fed using the natural slope of the hillside with large terraced patios for drying that have an underground network of pipes to transport them on their journey to the mechanical driers and bagging area. The production is over for this year; harvest came two weeks to early for us.

We visit the nursery. The young plants are nurtured here for eight months before grafting onto Robusta rootstock that brings natural disease resistance although not for Roya.

The cherry pulp is composted on site using small worms that enrich the humus with up to five times more nitrogen, potassium, seven times more phosphorus and twice the quantity of calcium.

On returning to the plantation house we set up a cupping table on the verandah with the expert assistance of Tibor Hajcsunk, from Hungary. After dinner and one or three practices of Ukrainian vodka toasting (thank you Sergii), we were exhausted and settled down for a night on the farm.

Day five – Thursday 7 March Up with the Quetzal! And following a quick bite to eat, we set off at 5.30am to watch the dawn rise up over Los Andes Acatenango

Nous sommes partis vers l'ouest, pour un trajet de trois heures. Arrivés au Lac Atitlán, nous l'avons traversé en ferry et avons rencontré Lucas Bizarro à la Cooperativa La Voz. La plantation de 150 ha de café organique se situe à 1625 m au-dessus du niveau de la mer. Créée en 1979 par 20 familles, elle emploie aujourd'hui environ 140 familles, qui cultivent des variétés de Bourbon et Caturra. Les dernières parches de café sont tournées lentement au râteau sur les terrasses caressées par le soleil. 320 sacs de 69 kg de café vert ont été récoltés cette année, une baisse de près de 30 % par rapport à 2012. Nous avons traversé les zones ombragées où poussent les caféiers, qui présentent les signes caractéristiques de la rouille, avec des feuilles tachées et des tiges dénudées.

Jour 4 – Mercredi 6 mars Exploitation Los Andes, Atitlán. Zone protégée sur les pentes méridionales du volcan Atitlán, l'exploitation produit 2500 sacs de parche de café sur 104 ha.

Les variétés sont les suivantes : Caturra, Catuai, Catimor et Sarchimor.

James Hazard, propriétaire et exploitant de troisième génération, et sa fille Olga nous ont réservé un accueil chaleureux. Olga est une dirigeante à la personnalité forte, mais joyeuse, qui place les femmes qui travaillent sur la propriété dans des rôles de responsabilité traditionnellement réservés à des hommes. Il s'agit par exemple de la directrice d'école à laquelle nous allons rendre visite, de la coordinatrice de l'usine à thé, de la coordinatrice du centre de traitement du café, des assistantes administratives et de la coordinatrice du laboratoire du compost.

Los Andes a été l'une des premières forêts ombrophiles dédiées à la protection du magnifique quetzal, l'oiseau symbole du Guatemala. Bien qu'il soit insaisissable dans la nature, on nous montre le cri qui permet de l'attirer.

Pour le moment, nous nous contentons d'admirer une plume irisée, longue et étroite de sa queue. James est un fervent partisan de la biodiversité et des avantages qu'elle confère à l'agriculture, ainsi qu'aux gens qui vivent et travaillent sur la propriété.

Le centre de traitement du café par voie humide fonctionne par force de la gravité, exploitant la pente naturelle de la colline, avec de grandes terrasses pour le séchage, dotées d'un réseau souterrain de canalisations pour le transport jusqu'aux séchoirs mécaniques et à la zone d'ensachage. La production est terminée pour cette année. La récolte est survenue deux semaines trop tôt pour nous.

Nous visitons la pépinière. Les jeunes plants s'y développent pendant huit mois avant d'être greffés sur un porte-greffe de Robusta, qui procure une résistance naturelle aux maladies, mais toutefois pas à la rouille.

La pulpe des cerises est compostée sur place au moyen de petits vers qui permettent d'apporte à l'humus jusqu'à cinq fois plus d'azote et de potassium, jusqu'à sept fois plus de phosphore et de doubler la quantité de calcium.

Partimos en dirección al oeste, en un viaje de tres horas. Al llegar al Lago Atitlán, cruzamos en balsa y nos encontramos con Lucas Bizarro de Cooperativa La Voz. La plantación de 150 ha de café orgánico está a 1.625 metros sobre el nivel del mar. Iniciada en 1979 por 20 familias, en la actualidad da empleo a alrededor de 140 familias que hoy cultivan las variedades Bourbon y Caturra. Los últimos cafés de pergamino son rastrillados lentamente en los patios bañados por el sol.

Este año se cosecharon 320 bolsas de 69 kg de café verde, casi un 30% menos que en 2012. Pasamos por las plantas de café que se cultivan a la sombra donde se observan indicios soplones de la Roya con sus hojas manchadas y tallos desnudos.

Día 4 – Miércoles 6 de marzo Finca Los Andes, Atitlán. Ubicada en un área protegida sobre las laderas sureñas del volcán Atitlán, la finca produce 2.500 bolsas de café de pergamino en una extensión de 104 ha. Las variedades incluyen Caturra, Catuai, Catimor y Sarchimor.

Como tercera generación de propietarios y explotadores, James y su hija Olga Hazard nos brindan una cálida bienvenida. Olga es una mandamás de carácter pero jovial, que asigna a las mujeres de la finca a puestos de liderazgo que tradicionalmente se les reserva a los hombres.

También está el Director de la Escuela a quien estamos yendo a visitar, además del Coordinador de la Fábrica de Té, el Coordinador del Beneficio de Café, asistentes de oficina y el Coordinador del Laboratorio de Compuestos Vegetales.

Los Andes fue uno de los primeros bosques de nubes dedicados a la protección de la esplendorosa ave Quetzal, el símbolo nacional; aunque es esquiva y evasiva por naturaleza, se nos muestra el llamado para congregarlas; por ahora nos contentamos con ver al menos una larga y angosta pluma de su cola tornasolada. James es un ferviente defensor de la biodiversidad y del beneficio que aporta a la agricultura y a la gente que vive y trabaja en la finca.

El beneficio húmedo de café es alimentado por gravedad aprovechando la inclinación natural de la ladera con grandes patios aterrazados de secado que tienen una red subterránea de cañerías para transportar los granos hasta las secadoras mecánicas y zona de embolsado. La producción ya finalizó por este año; la cosecha fue dos semanas antes de llegar nosotros.

Visitamos el semillero. Las plantas jóvenes son criadas aquí durante ocho meses antes de ser injertadas en un rizoma Robusta que le confiere una resistencia natural a las enfermedades aunque no a la Roya.

La pulpa de la cereza recibe abono en el lugar por medio de pequeños gusanos que enriquecen el humus con hasta cinco veces más de nitrógeno,

È stato poi nella sala degustazioni che Peter Engelharett ci ha fatto degustare gli 8 caffè regionali del Guatemala.

Terzo giorno - Martedì 5 Marzo Cooperativa La Voz, Lago Atitlán Anacafé ha messo a nostra disposizione un minibus con l'autista, Alberto, e una guida, di nome Enrico. Abbiamo viaggiato per tre ore in direzione ovest. Abbiamo attraversato il lago Atitlán in traghetto e abbiamo poi incontrato Lucas Bizarro alla Cooperativa La Voz. Questa piantagione di 150 ettari di caffè biologico si trova a un'altitudine di 1625 m sopra il livello del mare. Avviata nel 1979 da 20 famiglie, la cooperativa oggi impiega ben 140 famiglie nella coltivazione delle varietà Bourbon e Caturra. L'ultima parte del caffè in pergamino veniva lentamente girata con il rastrello sui patii baciati dal sole. Quest'anno sono stati raccolti 320 sacchi da 69 kg di caffè verde, quasi il 30% in meno rispetto al 2012. Siamo passati attraverso le ombreggiate piante di caffè, che mostravano i segni inequivocabili della Roya: foglie chiazzate e radici nude.

Quarto giorno - Mercoledì 6 Marzo Piantagione Los Andes, Atitlán. Questa piantagione, area protetta che si trova sui pendii meridionali del vulcano Atitlán, produce 2.500 sacchi di caffè in pergamino su un'area di oltre 104 ettari. Le varietà coltivate includono Caturra, Catuai, Catimor e Sarchimor.

James Hazard e sua figlia Olga, la terza generazione di proprietari della piantagione, ci hanno dato un caldo benvenuto. Olga è una leader forte e brillante, e dà alle donne della tenuta i ruoli da leader che sono tradizionalmente assegnati agli uomini; c'è ad esempio la direttrice della scuola, da cui siamo poi andati in visita, la coordinatrice della fabbrica di tè, la coordinatrice del mulino, l'assistente d'ufficio e la coordinatrice del laboratorio di compostaggio.

La foresta pluviale di Los Andes è stata la prima a diventare oasi protetta del magnifico Quetzal splendente, l'uccello simbolo nazionale, che, sebbene piuttosto sfuggente, è stato chiamato con un richiamo; ci siamo dovuti accontentare della vista di una piuma iridescente lunga e stretta della coda. James è un appassionato difensore della biodiversità e dei benefici che questa porta alla coltivazione e alle persone che vivono e lavorano nella tenuta.

Il mulino ad acqua è alimentato dalla gravità derivante dalla naturale pendenza collinare; i grandi patii terrazzati per l'essiccatura si trovano al di sopra di una rete sotterranea di tubature che servono a trasportare i chicchi alle essiccatrici meccaniche e all'area di insaccamento. La produzione per quest'anno è ormai terminata; il raccolto era stato fatto due settimane prima del nostro arrivo.

Abbiamo poi visitato il vivaio. Qui le piante giovani vengono accudite per otto mesi prima dell'innesto di Robusta, che aiuta a prevenire alcune malattie naturali, ma non la Roya.

La polpa delle ciliegie viene compostata in loco tramite l'utilizzo di alcuni vermi che arricchiscono l'humus con cinque volte più azoto e potassio, sette volte più fosforo e il doppio della quantità di calcio.

FINCA LA MERCED Volcano, just as a plume of smoke wafted out of the active Fuego Volcano, and what a site it was to behold.

With temperatures soaring to 30°C we travelled west towards the Mexican border, to Retalhuleu and finally onto Finca Rosario Quezada. Estate owner’s, the Raida family welcomed us upon our arrival. This is one of the oldest coffee plantation mansion houses in Guatemala built in 1900.

The coffee farm is run by a 4th generation of women administrators who are associated to Mujeres en Café (Women in Coffee). Farm manager, Dulce escorts us through the rubber plantations until we reach the first coffee plantation. Of the 109 acres, a third is set aside for coffee and they have their own wet and dry processing mill. Varietals grown here include: Caturra Catimor, Catuai, Bourbon and Columbia, a sport of Catimor.

Mid afternoon we set off for some culture at the Mayan archeological site of Takalik Ab’aj. The project receives funds and support from the owners of Rosario Quezada farm. Our hosts served a local feast. As tired and weary travellers we slept well.

Day six – Friday 8 March We set off early, to the south of Guatemala City to visit the dry mill and exporter Fedecocagua, R.L., in Pacaya. Fedecocagua was founded in 1969 to support farming cooperatives. Katell Sagellen shows us around the two mills, one being dedicated to organic production. Katell shows us a short film about the company, whilst Gustavo Galicia and the coffee lab team prepare a cupping. Fedecocagua is represented on the conventional coffee market and on other specific and source-certified markets. They are key suppliers to Starbucks, Rainforest Alliance, and UTZ to name a few.

Inside the mill, the new computerised bean sorter was proudly presented, it recognises defective beans by video and discards them with a blast of air.

Continuing our journey, we went North to visit Finca La Merced, in Chimaltenango. The farm is owned and operated by Juan Luis Barrios Ortega, who is a director of Anacafé. He has kindly invited us to visit his farm so that we can experience a harvest and wet mill in action. The farm is located at 1600-1800 m and as a consequence, he has a later harvest. Juan operates his own water processing plant, adjacent to the mill. This enables him to reuse the water twice in the processing of beans. The Bourbon and Typica coffee plants were established by Juan’s grandfather who introduced coffee here in the 1950’s.

Day seven – Saturday 9 March Finca San Sebastian, Antigua. This 2,000-acre farm grows 450 acres of coffee; the varietals include Bourbon (70%), Caturra, Villabos, and Pacamara with a few exotics such as Geisha. The wet mill at San Sebastian was in full swing, the belt drives spinning noisily. It wasn’t long before the washed beans were cascading out of the hopper onto the patio floor to dry.

We headed into beautiful Antigua were we enjoyed some sightseeing and dinner in this former capital city of Guatemala, staying overnight at the luxurious Portas Hotel.

Day eight – Sunday 10 March The journey to Finca El Socorro y Anexos became more treacherous

dégustation sur la véranda, assistés par l'expertise de Tibor Hajcsunk (Hongrie). Après le dîner et un...ou trois... toasts de vodka ukrainienne (merci Sergii), nous étions épuisés et nous nous sommes retirés pour passer la nuit sur l'exploitation.

Jour 5 – Jeudi 7 mars Debout avec le quetzal ! Et après un petit-déjeuner rapide, nous partons à 5h30 pour voir le jour se lever sur le volcan andin, l'Acatenango, alors qu'un panache de fumée s'échappe du volcan actif, le Fuego. Quelle vue !

Avec des températures atteignant les 30°C, nous avons poursuivi notre voyage vers l'ouest et la frontière mexicaine, en passant par Retalhuleu, pour arriver enfin à Finca Rosario Quezada. Les propriétaires de l'exploitation, la famille Raida, nous ont accueillis à notre arrivée. Il s'agit de l'une des plus anciennes maisons de plantation de café du Guatemala, construite en 1900.

L'exploitation caféière est dirigée par une 4ème génération de femmes administratrices, associées aux Mujeres en Café (les femmes dans le secteur du café). La responsable de l'exploitation, Dulce, nous escorte au travers des plantations de caoutchouc jusqu'à la première plantation de café. Sur les 44 ha, un tiers est réservé au café. La plantation possède son propre centre de traitement par voie sèche et par voie humide. Les variétés sont les suivantes : Caturra Catimor, Catuai, Bourbon et Columbia, un peu de Catimor.

En milieu d'après-midi, nous partons pour un peu de culture au site archéologique maya de Takalik Ab'aj. Le projet reçoit des fonds et le soutien des propriétaires de l'exploitation Rosario Quezada. Nos hôtes nous ont servi un festin de mets locaux. Voyageurs fatigués et las, nous avons bien dormi.

Jour 6 – Vendredi 8 mars Nous sommes partis tôt, vers le sud de la capitale, Guatemala, pour visiter le centre de traitement par voie sèche et l'exportateur, Fedecocagua, R.L., à Pacaya. Fedecocagua a été fondée en 1969, pour soutenir les coopératives agricoles. Katell Sagellen nous fait visiter les deux centres de traitement, dont un est consacré à la production biologique. Katell nous montre un film sur la société, pendant que Gustavo Galicia et l'équipe du laboratoire du café préparent une dégustation. Fedecocagua est représentée sur le marché conventionnel du café et sur d'autres marchés spécifiques, certifiés à la source.

C'est le principal fournisseur de Starbucks, Rainforest Alliance et UTZ, parmi tant d'autres. À l'intérieur du centre, on nous présente avec fierté la nouvelle trieuse électronique des grains de café, qui reconnaît les grains défectueux par vidéo et les élimine par un jet d'air.

Poursuivant notre voyage, nous sommes partis vers le nord pour visiter Finca La Merced, à Chimaltenango. L'exploitation appartient à Juan Luis Barrios Ortega, directeur d'Anacafé. Il nous a aimablement invités à visiter son exploitation afin de faire l'expérience d'une récolte et d'un centre de traitement par voie humide en action. La propriété est située à une altitude comprise entre 1600 et 1800 m et par conséquent, la récolte est tardive. Juan exploite son propre centre de traitement de l'eau, à côté du centre de traitement du café. Cela lui permet de réutiliser l'eau deux fois dans le traitement des grains. FINCA SAN SEBASTIAN Tornando verso la piantagione abbiamo allestito un tavolo per la degustazione sulla veranda, sotto le esperte direttive dell'ungherese Tibor Hajcsunk. Dopo aver cenato, e dopo un paio di degustazioni di vodka ucraina (grazie Sergii) eravamo piuttosto esausti, e abbiamo passato la notte alla piantagione.

A nuestro regreso a la casa de la plantación, armamos una mesa de degustación en la terraza con la asistencia experta de Tibor Hajcsunk, de Hungría. Después de cenar y de una o tres vueltas de brindis con vodka ucraniano (¡gracias Sergii!), estábamos exhaustos y nos acomodamos para pasar la noche en la finca.

Día 5 – Jueves 7 de marzo ¡Arriba con el Quetzal! Después de un rápido bocado, partimos a las 5.30 de la mañana para ver el amanecer por sobre el volcán Acatenango de Los Andes, justo cuando un penacho de humo salía del activo volcán Fuego, y ¡qué lugar fue para contemplar!

Con temperaturas de hasta 30°C, viajamos hacia el oeste hacia la frontera mexicana, hasta Retalhuleu y finalmente llegamos a la Finca Rosario Quezada. Al llegar, los dueños de la finca, la familia Raida, nos dio la bienvenida. Se trata de una de las mansiones de plantaciones de café más antiguas de Guatemala, cuya construcción data de 1900.

La finca es dirigida por la 4° generación de administradoras mujeres que están asociadas a Mujeres en Café. La administradora de la finca, Dulce, nos acompaña por las plantaciones de caucho hasta que llegamos a la primera plantación de café. De los 109 acres, una tercera parte se reserva para el café, y tienen su propio beneficio seco y húmedo. Las variedades que se cultivan aquí incluyen: Caturra Catimor, Catuai, Bourbon y Columbia, una recreación de Catimor.

A media tarde emprendimos una visita cultural al sitio arqueológico maya de Takalik Ab’aj. El proyecto recibe fondos y apoyo de los propietarios de la finca Rosario Quezada. Nuestros anfitriones organizaron una fiesta local. Como viajeros cansados y rendidos, dormimos muy bien.

Día 6 – Viernes 8 de marzo Partimos temprano, hacia el sur de la ciudad de Guatemala para visitar al beneficio seco y exportador Fedecocagua, R.L., en Pacaya. Fedecocagua fue fundada en 1969 para ayudar a las cooperativas agrícolas. Katell Sagellen nos hace recorrer los dos beneficios, uno dedicado a la producción orgánica.

Katell nos muestra una breve película sobre la compañía, en tanto Gustavo Galicia y el equipo del laboratorio del café preparan una degustación.

Fedecocagua está representada en el mercado convencional de café y en otros mercados de orígenes certificados y específicos. Es un importante proveedor de Starbucks, Rainforest Alliance, y UTZ para nombrar sólo algunos.

Dentro del beneficio, se hizo una orgullosa presentación de la nueva clasificadora de granos computarizada que reconoce los granos defectuosos mediante un mecanismo de descarte por vídeo con una ráfaga de aire.

Continuando nuestro viaje, fuimos hacia el norte para visitar la Finca La Merced, en Chimaltenango. La finca es propiedad de y es explotada por Juan Luis Barrios Ortega, director de Anacafé. Muy amablemente nos invitó a visitar su finca para que podemos ver una cosecha y beneficio húmedo en acción. La finca está ubicada a 1600-1800 m y en consecuencia, tiene una cosecha más tardía. Juan opera su propia planta de procesamiento de agua, que está contigua al beneficio. Esto le permite reutilizar el agua dos veces para el procesamiento de los granos. Las plantas de café Bourbon y Typica fueron iniciadas por el abuelo de Juan, quien introdujo el café aquí en la década del 50.

Día 7 – Sábado 9 de marzo Finca San Sebastián, Antigua. En esta finca de 2.000 acres se cultivan 450

Quinto giorno - Giovedì 7 Marzo E' stato il cinguettio del Quetzal a svegliarci! Dopo una breve colazione, ci siamo piazzati ad osservare il sorgere del sole sul vulcano Acatenango di Los Andes, mentre un fil di fumo saliva dolcemente dal vulcano attivo Fuego: che spettacolo meraviglioso!

Con una temperatura che ha velocemente raggiunto i 30°C ci siamo messi in viaggio in direzione ovest verso la frontiera messicana, prima verso Retalhuleu e infine verso Finca Rosario Quezada. I membri della famiglia Raida, i proprietari della tenuta, ci hanno accolti al nostro arrivo. Costruita nel 1900, questa è una delle tenute di caffè più antiche del Guatemala.

La piantagione è gestita dalla quarta generazione di amministratrici donne, socie di Mujeres en Café (Donne del Caffè). Dulce, la manager della tenuta, ci ha accompagnati attraverso le piantagioni di gomma prima di raggiungere la prima piantagione di caffè. Dei 109 acri della tenuta, un terzo è riservato al caffè, con impianti di molitura a secco e a umido dedicati. Le varietà coltivate qui includono: Caturra, Catimor, Catuai, Bourbon e Columbia, una mutazione del Catimor.

A metà pomeriggio ci siamo dedicati alla cultura visitando il sito archeologico Maya di Takalik Ab'aj. Il progetto riceve fondi e supporto dalla tenuta Rosario Quezada. I nostri ospiti ci hanno preparato un banchetto locale. Ci siamo poi addormentati da bravi viaggiatori esausti.

Sesto giorno - Venerdì 8 Marzo Ci siamo alzati presto per dirigerci a sud verso Guatemala City, per visitare Fedecocagua, R.L., esportatori e macinatori ubicati a Pacaya. Fedecocagua è stata fondata nel 1969 per sostenere le cooperative agricole. Katell Sagellen ci ha fatto visitare i due mulini, di cui uno è dedicato alla produzione bio. Katell ci ha fatto vedere un breve filmato sull'azienda, mentre Gustavo Galicia e lo staff di laboratorio preparavano la degustazione. Fedecocagua è rappresentata sia sul mercato convenzionale del caffè, sia su altri mercati specifici e certificati all'origine. L'azienda rifornisce Starbucks, Rainforest Alliance e UTZ, giusto per nominare alcuni dei suoi clienti.

All'interno del mulino ci è stato orgogliosamente presentato il nuovo selezionatore computerizzato di chicchi, che riconosce i chicchi difettosi tramite video e li scarta con un colpo d'aria.

Proseguendo nel nostro viaggio, ci siamo spostati a nord per visitare Finca La Merced a Chimaltenango. La piantagione è di proprietà e gestione di Juan Luis Barrios Ortega, il direttore di Anacafé. Juan ci ha gentilmente invitati a visitare la sua tenuta cosicché potessimo assistere al raccolto e alla molitura a umido. La piantagione si trova a un'altitudine di 1.600-1.800 m, e di conseguenza il raccolto è più tardivo. Juan gestisce un suo proprio stabilimento di lavorazione ad acqua adiacente al mulino.

Questo gli consente di utilizzare la stessa acqua due volte nella lavorazione dei chicchi. Le piante di caffè Bourbon e Typica sono state piantate dal nonno di Juan, che ha introdotto il caffè in questa zona negli anni '50.

COOPERATIVE ACATENANGO as the roads gave way to dirt slides and boulders. Alberto did well to traverse this terrain. Finca El Socorro is revered for its speciality coffee, Diego de la Cerda and father Juan’s trophy cabinet is laden with rows of Cup of Excellence awards and packets of his coffee from renown US and European micro-roasteries. The view from 1800 m was spectacular.

The Yellow Bourbon and Geisha plants are laden with ripening cherries.

Due to elevation and the remote location the wet mill employs solar power and the heated water takes less time for fermentation to occur at around 18 hours, Diego says that this is also good for preserving flavour. The washed beans are being turned on the patios whilst a worker pushes them along an over ground channel away from the mill.

We return to the house for a fantastic barbecue before returning to the Clarion Hotel, Guatemala City.

Day nine – Monday 11 March Cooperative Acatenango, Acatenango Valley consists of 3000 producers. The region has been producing coffee here since 1880.

A short slide presentation is given in a make shift shelter. They speak of the potential to produce 45,000-55,000 bags but this year saw the lowest yields ever, with just 10,000-15,000 bags. A large group of farmers came to meet us and share their experience and coffees.

Finca la Soledad, following a light lunch we head up into the plantation hills in jeeps. Owner Raoul is the 5th generation, they have been producing coffee here since 1895.

On our return journey to the Clarion hotel we have just time to visit the milling station used by the cooperative in Acatenango. Farmers were bringing bags of coffee in their old cars for weighing in.

It was such a memorable experience and many thanks to Colin Smith, the organizer of this event. I shall now let Colin have the last word, ‘SCAE would like to thank Anacafé for their invitation to visit their lovely country and sample their excellent coffees. Very special thanks goes to Gabriela Alvarez and Doris Quijivix, who organised the whole visit enabling us to visit so many farms in different regions, the coffee laboratory at Anacafe, Fedecocagua dry mill and the wet mill at Acatenango. Nous nous sommes dirigés vers la belle ville d'Antigua, que nous avons pu visiter. Puis nous avons dîné dans cette ancienne capitale du Guatemala et avons été hébergés pour la nuit dans le luxueux hôtel Portas.

Jour 8 – Dimanche 10 mars Le trajet pour se rendre à Finca El Socorro y Anexos est devenu plus traitre, les routes étant envahies de glissements de terrain et de rochers. Alberto a très bien manœuvré sur ce terrain difficile. Finca El Socorro est vénérée pour son café de spécialité. La vitrine des trophées de Diego de la Cerda et de son père Juan déborde de prix de la Cup of Excellence et de paquets de café de microtorréfacteurs de renom aux États-Unis et en Europe. La vue depuis 1800 m était spectaculaire. Les plants de Bourbon jaune et Geisha étaient recouverts de cerises en plein mûrissement. En raison de l'altitude et de l'isolement du lieu, le centre de traitement par voie humide utilise l'énergie solaire et le réchauffement de l'eau permet de réduire la durée de fermentation à environ 18 heures. Diego explique que c'est également bénéfique pour la préservation du goût. Les grains lavés sont retournés sur les terrasses et un ouvrier les fait avancer sur un chenal en surface, à la sortie du centre de traitement. Nous retournons à la maison pour un incroyable barbecue, avant de rentrer à l'hôtel Clarion, dans la capitale Guatemala.

Jour 9 – Lundi 11 mars La Coopérative Acatenango, dans la vallée de l'Acatenango, regroupe 3000 producteurs. La région produit du café depuis 1880.

On nous projette une petite présentation dans un abri de fortune.

On nous parle d'un potentiel de production de 45 000 à 55 000 sacs, toutefois, cette année le rendement a été le plus bas de toute l'histoire, soit 10 000 à 15 000 sacs. Un grand groupe d'exploitants est venu à notre rencontre, pour partager leur expérience et leurs cafés.

Finca la Soledad : après un déjeuner léger, nous nous dirigeons en jeep vers les collines de la plantation. Raoul est le propriétaire de 5ème génération.

Sur le chemin du retour à l'hôtel Clarion, nous avons juste le temps de visiter le centre de traitement utilisé par la coopérative à Acatenango. Les exploitants apportaient leurs sacs de café dans leurs vieilles voitures pour la pesée.

Une expérience absolument inoubliable. Tous nos remerciements à Colin Smith, organisateur de cet événement. Día 8 – Domingo 10 de marzo El viaje a la Finca El Socorro y Anexos fue un poco más traicionero a medida que los caminos daban paso a resbaladizas superficies de tierra y rocas. Alberto logró sortear bien este terreno. La Finca El Socorro es reverenciada por su café especializado, Diego de la Cerda y el armario de trofeos del padre Juan está repleto de filas con premios a la Taza de Excelencia y bolsas de su café provenientes de renombrados microtorrefactores de EE.UU. y Europa. La vista desde una altura de 1.800 metros era espectacular. Las plantas de Bourbon Amarillo y Geisha estaban cargadas de cerezas maduras. Debido a su elevación y remota ubicación, el beneficio húmedo emplea energía solar y el agua caliente hace que la fermentación tarde menos tiempo, alrededor de 18 horas; Diego dice que esto también es bueno para preservar el sabor. Los granos lavados son revueltos en los patios mientras un empleado los va empujando por un canal superficial. Retornamos a la casa para disfrutar de un fantástico asado antes de volver al Hotel Clarion, en la ciudad de Guatemala.

Día 9 – Lunes 11 de marzo La Cooperativa Acatenango, en el Valle de Acatenango, está compuesta por 3.000 productores. La región produce café aquí desde 1880. Se nos hace una breve presentación de diapositivas en un cobertizo improvisado. Hablan del potencial de producir 45.000-55.000 bolsas pero este año se registraron los rindes más bajos de todos los tiempos, con apenas 10.000-15.000 bolsas.

Apareció un gran grupo de cafetaleros que vinieron a saludarnos y a compartir sus experiencias y cafés.

Finca la Soledad, tras un almuerzo liviano nos encaminamos hacia las colinas de la plantación en jeeps. Su propietario Raoul es la 5° generación de productores de café desde 1895 en esta zona.

En nuestro viaje de regreso al Hotel Clarion, nos quedó algo de tiempo para visitar el beneficio que usa la cooperativa en Acatenango. Los cafetaleros estaban trayendo bolsas de café en sus viejos automóviles para el pesaje.

Fue una experiencia tan memorable y damos nuestro agradecimiento a Colin Smith, el organizador de este evento. Lo último que diré va dirigido a Colin, 'La SCAE desea agradecer a Anacafé por su invitación a visitar su encantador país y probar sus excelentes cafés. Villabos e Pacamara, oltre ad alcune varietà esotiche come il caffè Geisha. Il mulino ad acqua di San Sebastian era in piena attività, e le sue pale ruotavano rumorosamente. Non c'è voluto molto prima che i chicchi lavati piovessero dalla tramoggia direttamente sul patio.

Ci siamo diretti verso la bellissima Antigua, dove abbiamo fatto un magnifico giro turistico; dopo aver cenato nella ex capitale del Guatemala, abbiamo trascorso la notte al lussuoso Hotel Portas.

Ottavo giorno - Domenica 10 Marzo Il viaggio verso Finca El Socorro y Anexos è stato piuttosto pericoloso, date le strade dissestate e piene di sassi: Alberto ha fatto un ottimo lavoro guidando su questo tipo di terreno! Finca El Socorro è molto apprezzata per il suo caffè speciality; l'armadietto dei trofei di Diego de la Cerda e di suo padre Juan è pieno zeppo di Cup of Excellence e di pacchetti del loro caffè provenienti da famose micro-torrefazioni americane ed europee. La vista da 1.800 m era spettacolare. Le piante di Bourbon Giallo e di Geisha erano colme di ciliegie in fase di maturazione. Data l'altitudine e la distanza da centri abitati, il mulino ad acqua utilizza l'energia solare, e l'acqua riscaldata ci impiega meno tempo per la fermentazione, che avviene in circa 18 ore: Diego ci ha spiegato che anche questo è un ottimo modo per preservare l'aroma. I chicchi lavati venivano girati sui patii mentre un lavoratore li spingeva lungo un canale lontano dal mulino. Siamo tornati alla casa per un ottimo barbecue, prima di fare ritorno all'Hotel Clarion a Guatemala City.

Nono giorno - Lunedì 11 Marzo Cooperativa Acatenango. La Valle Acatenango conta ben 3.000 produttori. La regione produce caffè sin dal 1880. Ci sono state mostrate alcune diapositive in una capanna improvvisata. Ci hanno parlato del potenziale di produzione di 45.000-55.000 sacchi, aggiungendo che però quest'anno ha visto la produzione più bassa di sempre, ossia 10.000-15.000 sacchi. Un bel gruppo di contadini è venuto a trovarci e a condividere con noi le loro esperienze e i loro caffè.

Finca la Soledad. Dopo un pranzetto leggero ci siamo diretti verso le piantagioni collinari in jeep. Raoul, il proprietario, appartiene alla quinta generazione di una produzione che è iniziata nel 1895. Durante il viaggio di ritorno verso l'Hotel Clarion ci siamo fermati a visitare l'impianto di macinatura utilizzato dalla cooperativa di Acatenango. I contadini, con le loro vecchie automobili, portavano i sacchi di caffè per la pesatura.

E' stata un'esperienza davvero memorabile; vorrei ringraziare Colin Smith, l'organizzatore dell'evento. Ed è a lui che lascio l'ultima parola: "SCAE ringrazia Anacafé per averci invitati a visitare il loro meraviglioso paese e assaggiare i loro ottimi caffè. Un ringraziamento speciale va a Gabriela Alvarez e Doris Quikivix, che hanno organizzato l'intero viaggio consentendoci di visitare le moltissime tenute dislocate in varie regioni, il laboratorio di Anacafé, il mulino di Fedecocagua e il mulino ad acqua di Acatenango.
