站的美食推荐榜,世界名人更是 纷沓而至。在店铺内外,就贴满 包括“意大利厨神”Massimo Bottura、首位米其林三星华人 厨师陈恩德等厨界名人的到访照 片。而这家超过半个世纪历史的 名店,可谓老骥伏枥,志在千 里;特别近几年在品牌和口味上 都创新求进,收获硕果,在惹兰 勿刹(Jalan Besar)共延开六个 相毗邻的店铺单位。

品质卓越 但安于“小而美” 吉祥的厨房一共十来名员工。如今在 外来员工紧缩的情况下,吉祥的人手也相 当紧。被问到有没有可能开分店,他的回 答是:如果开多一家店,就要多一倍的员 工!Jack继承了父亲对传统味道的严谨, 不愿意为了使用机械而修改秘方,因此坚持 以手工来制作馅料。他也指出,吉祥的红龟 粿在24小时内如果不能全部出售,就会捐 出或是丢弃,不会留到第二天卖。价格方 面,吉祥虽然品质卓越,但每个红龟粿都只 定一块钱左右,走薄利多销的路线。对产品 的严格要求、其街坊小吃的定位,或许使这 家小企业不易扩张;但能安于“小而美”, 赢得一代又一代人的味蕾记忆,亦不失为常 青之道。
