A place for literal reflection and contemplation, recognised for inspiring poets, musicians and creatives alike. Here’s a pick of some of the world’s most iconic waterways, with a little insight into why they deserve such status.

As Europe’s second-largest river, the Danube passes through 10 countries before emptying into the Black Sea. Inspiration to many a classical composer, like Johan Strauss, it has since become a symbol of imperial Vienna.

THE ROMANCE OF THE RIVERS OF EUROPE BY PROFESSOR IAN COOPER
Professor Ian Cooper, international business author and travel writer, experiences the Romantic Rhine and Moselle, from Amsterdam to Basel on a luxury Scenic river cruise. I’m sitting on the top deck of our river cruise ship, feeling very relaxed, sipping a Kir Royale and trying to distinguish between the real and the reflections of the spectacular colours of the vineyards as they merge into the mirror-like Moselle river. It’s no wonder river cruising has become so popular and that our vessel is aptly named the ‘Scenic Crystal’. Our epic 14-night river cruise adventure on the Rhine and Moselle rivers visiting five countries begins with a very short flight from London to Amsterdam, followed by a seamless private pick-up and transfer to our ship. One of a fleet of Scenic Space-Ships, so called because of their space-to-people ratio, the Scenic Crystal, with around 120 of us on this trip, is luxury river cruising at its best. Our Balcony Suite, to use its official marketing jargon, gives us a sumptuously
comfortable huge bed; a high-tech bathroom with fancy lotions and potions; bathrobes and slippers; a safe big enough for a laptop; an enormous flat screen TV and an ingenious balcony with a lounge. We also have a butler, though in truth we don’t know what to do with him. My wife isn’t keen on him unpacking her undies and my trainers don’t need shining too often! Nevertheless, it is great to know that a quick call and our butler … I call him Aladdin … will magically pop up to carry out our every wish. Our fellow guests? Mostly 55-plus from varying backgrounds. We meet accountants, entrepreneurs, an ex-pilot, an author and a gold-miner. About eighty per cent are from Down Under, whilst most of the rest are from Canada and the UK. Everything about this cruise is informal. No dressing up for dinner and you can sit anywhere and with whomever you want at any meal. With such a small number of people, it doesn’t take long to make friends. Conversation is always easy. We all have this cruise in common and most have travel stories of previous trips to share. The moment folk know we are from England, they want to show off their mastery of PAGE 10
British geography, though at one point we do hear the question: “so why did they build Windsor Castle so near Heathrow airport?” The Australians have a favourite dinner topic. Without too much prompting, various couples tell us about the killer snakes and spiders in their gardens. “They are like pets after a while … you just stomp and they go away, but you musn’t put your fingers in their mouths”. Sounds like good advice to me! I have been lucky enough to sample various river cruise lines, but one of the distinguishing features about Scenic is ‘choice’. I have never experienced a more dazzling array of choices on any trip. For example, you can choose from a range of pillows; 12 types of teas and six coffees on tap 24/7; a never-ending supply of free drinks and snacks in our mini-bar fridge; at least three optional included excursions every day and a very extensive range of wines and menu items to choose from at every meal. Even the shower involves serious decisionmaking. It has 14 separate settings. Apart from different water pressures and three nozzles aimed at various bodily parts, six special coloured lighting effects are on offer. When conversation over dinner about cruising, grandchildren and Australian
wildlife wanes, the control panel on the shower always offers room for debate and analysis! What about the service on this cruise? Well, the truth is we feel more like guests than customers. A major contributing factor is the all-inclusive nature of Scenic’s business model. Once you have paid, everything is included. This is transformational in terms of the overall atmosphere and customer experience.

Belgium We opted for a guided walking tour to see the historic sights of Antwerp, whilst many chose to travel to Bruges to sample the atmospheric canals and cafés serving the best hot chocolate on the planet.
The backbone is the cruise itinerary. Everyday as mentioned, there are usually three main excursion choices, all included in the cruise price. Alternatively you can stay on the ship and enjoy its facilities; go for a walk and use the special Scenic Tailormade handheld audio touring gizmos, that we all have, or even take advantage of the electric powered bicycles that the Scenic Crystal makes available to guests. Too soon, this wonderful 15-day adventure finally comes to an end in Basel where, before we leave, the ship’s captain is keen to give my wife and I a private tour of his bridge. As a parting piece of philosophy, he insists on taking a photo of my wife sitting in the ‘captain’s seat’ so that … “it will remind you of who is really in charge when you get home!” As if I need reminding!
BLACK FOREST GATEAU
Ingredients • 175g plain chocolate • 200g butter • 200g self-raising flour • 300g muscovado sugar • 25g cocoa powder • 1 tsp baking powder • 4 eggs
For the Filling • 400g black cherries, fresh or frozen, stoned • 2 tbsp caster sugar • 2 tbsp Kirsch or almond liqueur • 4 tbsp cherry jam • 450ml double cream, whipped • 50g grated chocolate
Method 1. Heat the oven to 180C/160 fan/gas 5. Grease and line 2x 20cm round sponge tins with baking parchment. 2. Place 100ml hot water in a small pan and add the chocolate and butter and heat gently until melted. Remove from the heat. 3. Place the flour, sugar, cocoa powder and baking powder in a mixing bowl. Beat in the eggs, then pour in the chocolate mixture, beating until smooth. 4. Divide the mixture between the two tins and bake for 30 mins until just firm in the centre. Allow to cool for 10 mins then turn out and allow the cake to cool on a wire rack. 5. To make the cherry filling, place the cherries, sugar and 2 tbsp water in a small pan and heat gently for 5 mins until the cherries are just tender. Stir in the liqueur. 6. Place one cake flat side up on a serving plate. Spoon the cherry juices over the cake and allow to soak in. Spread the cake with jam and top with most of the cherries reserving a few for decoration. 7. Whip the cream until just thick and spread half over the cake, top with the second cake. Spoon the remaining cream on top and sprinkle with grated chocolate. Arrange the cherries on top and serve chilled.

see Bavaria’s second-largest city and the unofficial capital of Franconia, Nuremberg has so much to offer all year round, that there’s something to interest everyone. From the distinguished Medieval architecture and fairytale streets of the Old Town, which includes The Kaiserburg and 11th-Century Nuremberg Castle, to the historic WWII sites and the quaint home of the German Renaissance artist Albrecht Dürer. During the November and December months, the city is also home to one of the most spectacular Christmas markets in Germany.
Be sure to sample the Nürnberger bratwurst, at one of the real sausage restaurants within the city. This delicacy is traditionally grilled on a barbecue and served with Sauerkraut, potato salad, horseradish and pastries. Or, as part of Scenic Freechoice, why not take part in a traditional gingerbread making class before enjoying the fruits of your labour. If you visit Nuremberg during the festive season, try the sweet specialty of Knieküchle, served at the Christmas markets.

And, if you visit Nuremberg during the festive period, you can encounter one of the biggest Christmas markets in Europe, Nuremberg’s Hauptmarkt, which is home to over 200 stalls selling traditional Christmas gifts and unique souvenirs.
explore There are many ways to get around Nuremberg from the subway and buses, to on foot and by bike. The Old Town is best explored on foot, whilst the rest of the city can be explored by Scenic guests on the complimentary e-bikes. For those less active, the subway and buses cover a large proportion of city, providing access to all the main attractions.

Our cruise director, surely, is exaggerating about the temperament of Scenic Diamond’s e-bikes. “If you put the speed up too high, it’s like a wild stallion underneath you and you won’t know how to handle it,” Anita van Vliet warns during an early port talk in Bordeaux. I hop aboard a bike to cruise along Bordeaux’s stunning riverfront

two white swans that glide up to greet us right on cue. This château made it into the prestigious five-tier 1855 Classification of Bordeaux wines that still holds sway today – and tonight we’re headed to another estate on the Classification. Passengers dress in their finest for the elegant dinner at Château Giscours* in the Margaux appellation. The menu features the likes of confit lamb with a vegetable and raisin roll, sea bass in a thyme and lemon emulsion with a turnip and eggplant roll and platters of cheese with dried fruit and raisin bread.

A skateboarder is cruising towards me as I’m on a medium-level boost and things don’t look good. We both veer one way then the other before colliding. No one’s hurt but it’s a salutary lesson in taking baby steps on these two wheels. By outing’s end, I have the hang of it. Lucky, because I’ve already signed up for two cycling trips offered as part of Scenic’s 11 day Beautiful Bordeaux river cruise. From Pauillac, 50km downstream from Bordeaux in the Gironde estuary, we cycle out among rows of grapevines, heavy with fruit in the lead-up to harvest, to reach Château Lagrange. The picturesque château, in the Saint-Julien appellation, features a lake with
All this feasting requires another workout: this time it’s a 30km round-trip cycle from the 17th-Century citadel of Blaye, established on the Gironde’s right bank to protect the Bordeaux region from invasion, along what’s known as the Captain’s Road to Bourg. Fittingly, Scenic Diamond’s Captain Jeremy Dike, also a keen cyclist, accompanies us on the outing that includes passengers whose ages range from 38 to 78. Now that I have the hang of this e-bike thing, there’s no stopping me. Back in Bordeaux, it helps me widen my outings. The ship is docked within walking distance of La Cite du Vin, a striking wine museum that opened on the banks of the Garonne in 2016, but it’s a snip to dash up there on the bike (allow about three hours to explore the museum). It’s handy, too, for lunch outings to local bistros such as Le Bistrot des Anges. From the ship, there’s also a great cycling circuit that travels along the promenade, past the wonderful Miroir d’eau (Water Mirror) feature, over the picturesque Pont
de Pierre bridge and along the right bank. Stop at the Darwin enterprise to admire the hip makeover of abandoned military warehouses – and for perhaps another glass of wine – before returning to the ship via the Pont Jacques Chaban-Delmas vertical-lift bridge that the ship shuttles under many times.

A JOURNEY ON THE MYSTICAL WATERS OF THE MEKONG by David Pryde A
My Scenic journey began with a two-hour drive south to My Tho, where we would board the Scenic Spirit. A very picturesque drive through endless rice fields was made even better by our luxurious coach. As we reached the port, the sheer scale of the Mekong Delta was mind-blowing. I hadn’t realised just how big this river was, and the volume of water and scale of the delta is second only to the Amazon. Once we’d reached our boarding point, it was time to board the Scenic Spirit Space-Ship that we’d be calling home for the next eight days, and what a stunner she was, too. After a welcome cocktail, we left My Tho at around 5pm for our cruise to the province of Cai Be. At a Sunset Cocktail reception, our Cruise Director, Paula, introduced the team and then it was G&T time, before a sumptuous buffet dinner. At 8pm, we anchored in Cai Be and spent the evening getting to know our fellow
travellers, some of whom quickly became close friends.

The next morning, after breakfast, we embarked on our first excursion. There were three sampans attached to the ship, to get us to shore.
After another exceptional lunch back on board our ship, we were off again, this time to another ancient house made famous in a movie called ‘The Lover’. Full of some amazing artefacts and furniture, it gave us a sense of what life was like over a hundred years ago.
Firstly, we went to the famous Cai Be floating markets, where every conceivable fruit, vegetable and fish can be bought, some of which we’d never seen before. The vibrancy and bustle of this unique market made for an incredible spectacle, and one we’ll surely never forget. The next stop on the day’s itinerary was a visit to a traditional Vietnamese homestead, which had been carefully preserved to reflect its French Colonial heritage. We spent hours exploring the various authentic cottage industries and had the chance to sample the local ‘Snake Wine’, which, despite the

We then walked through the ‘Wet Markets’, and what an experience it was. The vast array of food and produce on show was mind boggling, with frogs, mice and even chicken feet among some of the more exotic cuisines on offer. The next day, we visited Tra Su Forest, a bird sanctuary, home to a diverse range of species. We were treated to a 45-minute journey up one of the huge tributaries of the Mekong in a very fast speedboat, a thrill enough in itself, before boarding a bus for the last leg of our journey.
Five things I loved about the Mekong The People
The fact they have so little is extremely humbling, they really are so happy. Overall, the people will last long in my memory.
The History I was privileged to meet people who had been affected by the political regimes that were imposed. It is something that will stay with me for a long time.
The Diversity
From trips in speedboats, to the thrill of my first tuk-tuk ride, the ‘wet markets’ and the calm serenity of the beautiful Tra Su Forest, not to mention being blessed by a Buddhist monk.
The Scale The scale of the Mekong Delta took my breath away. I hadn’t realised just how big this river was. The End Game What could be a more special ending to the trip than to see the magnificent Angkor Wat temple at sunrise?
After a one-kilometre walk through a beautiful forest, where we boarded flat-bottomed motorboats to transport us through the wetlands. We were moved into an even smaller, three-man craft with an oarsman, so we could glide through the dense forest quietly, so as not to disturb the wildlife. An absolutely fantastic experience that pictures simply don’t do justice. Back on board, I opted for a tour of the galley with the Head Chef. It was a real eye-opener and gave me a newfound respect for the chefs who work so hard to deliver exceptional food every day. That evening, the entertainment was a traditional Vietnamese ‘Lion Dance’ performed by a local troop of young boys. We then enjoyed a sumptuous ‘Farewell Vietnam Gala Dinner’, as we set sail for Cambodia and the capital, Phnom Penh.
Our last night on board Scenic Spirit was in Kampong Cham. In the morning, a beautiful sunrise signified an early start as we prepared for the last leg of our trip and the bus journey to Siem Reap. There were only 18 on board our bus so there was plenty of room to spread out for the long journey north. As always, passenger comfort is the number one priority when travelling with Scenic, and the staff ensured there were plenty of stops along the way. During the journey, we stopped off at an amazing Stone Cutter’s village where the carvings can fetch up to 10,000 US dollars, hardly surprising when you see the work that goes into making them. Another memorable stop was at Naga Bridge, dating back to the 12th Century, it’s showing its age, but is still quite the spectacle.

wonderful experience. They truly are masters at making you feel incredibly special and valued, and genuinely cater for your every need. I can’t remember the last time I ever gave a straight ten out of ten for customer feedback, but feel that every single point is earned.
On arrival into Siem Reap, we were taken for a slap-up lunch at a local restaurant, and then it was a short transfer to the Park Hyatt Hotel to say goodbye to our fellow cruisers.
If you want to see Vietnam and Cambodia in style, you will not find a better way.

STEP 1 Look for Good Light
STEP 2: Use Flash During the Day
The best times to shoot are closer to sunrise and sunset, when the light is soft and warm. During the day, make sure you shoot with the light source to the side or behind the subject.
You may think that the flash should only be used at night time, but on a bright day, by forcing extra light onto your subject, you will be able to fill in shadows and create an even exposure.

The closer you are to your subject, the better. As photojournalist Robert Capa said, “If your photographs aren’t good enough, you’re not close enough.”
Experiment with different angles. Moving around will teach you a lot about the strengths and weaknesses of the different positions.
Don’t overthink it. You learn by experimenting and you gain confidence by doing. On the way, you’ll take some fantastic photos. Make your camera do the work. It’s the best way to improve.

Nicky Phelan is Reservations Manager at Scenic HQ. Her main objective is to provide guests with a service that imitates the company’s five-star philosophy. I joined Scenic eight months ago after working in the travel industry for 20 years. As UK Reservations Manager, I saw this as a fantastic opportunity to work within a growing company who offer an amazing product, travelling to destinations across the globe. In my opinion, people are at the heart of the business, whether that’s our guests or my colleagues, who work hard on a daily basis to create the perfect trips for the individual. As manager, I do my best to support and motivate my team in the hope I can get the very best from every one of them. Teamwork requires the ability to communicate effectively, recognising and understanding their viewpoints and appreciating the contribution I am expected to make as a manager. This ensures I have great working relationships where each individual continues to reach their targets and, as a result, the aims of the company. Since starting, I have been lucky enough to experience a Scenic river cruise for myself, as part of an itinerary which sailed the iconic
Danube. This took me to the Austrian capital of Vienna where I visited the Spanish Riding School amongst many other wonderful places. I was also fortunate enough to stop off in quirky Budapest. The architecture was mesmerising and I had a fantastic afternoon relaxing in the Thermal Baths and Spa. The past few weeks have been very exciting as we worked towards the launch of Scenic’s brand new ship, Scenic Eclipse, the World’s First Discovery Yacht. Travelling to all four corners of the world, this specially-commissioned yacht is changing the way the world views ocean cruising. Able to dock centrally and in smaller ports than others, guests can travel to the Mediterranean, The Americas, the Arctic, Antarctica and everywhere in between. I am really looking forward to talking to guests about this exciting new product, as it’s something that we’re extremely proud of. There’s nothing more satisfying than helping to create memories that will be treasured for a lifetime.
