“Every day is different. I get to meet new people from around the world and I get to go everywhere on the ship, from welcoming guests on board, to bringing breakfast to the room and serving guests at Portobellos.”
WITH A SCENIC BUTLER By offering a butler to every guest, we combine quality with personal attention to detail. Trained to the highest standards at recognised European butler academies, they’re dedicated to providing you with a 5-star experience. Here, one of our esteemed butlers, Balo, describes his role on board a Scenic Space-Ship. Balo
1. What does the job of a butler involve?
From the very first moment a guest steps on board a Scenic Space-Ship to the time they disembark, I am here to provide the highest level of personal attention and exceptional service to ensure all guests have a memorable time throughout their whole cruise. This includes responsibility for looking after guests’ every need from nightly turndown and shoeshine service to laundry concierge, as well as providing early morning tea and coffee in their suite or a late-night snack before bed. All guests need to do is call me through the cabin phone and I will be there to assist, day or night.
2. How did you become a butler?
I had previously worked on board an ocean cruise liner for 10 years as a butler before moving across to river cruising. I first started with Scenic as part of the restaurant staff, before being promoted to butler last season which I am loving.
3. What training is involved to become a butler with Scenic?
Training for all butlers commences at least two weeks before the river cruising season starts. This helps us learn about the level of service each guest can expect depending on their cabin, as well as the restaurant etiquette, specifically for Table La Rive and Portobellos/ L’Amour. PAGE 10
We need to have an in depth understanding about the region’s different wines served on board and the chef’s special dishes as well as the different service levels, between each of the restaurants throughout the ship.
4. What is the best part of your job?
Being a butler is never boring. Every day is different. I get to meet new people from around the world and I get to go everywhere on the ship, from welcoming guests on board, to bringing breakfast to the room and serving guests at Portobellos. We also have free time to explore the towns we visit and can join guests on an onshore excursion, visit a local restaurant or even cycle on the e-bikes if we like.
5. What is your favourite meal?
I love most food so if I had to choose, it would have to be Fillet Mignon, cooked medium and served with mashed potato and garlic, washed down with a Chianti 2012, followed by cheesecake and a cognac for after.
6. What is the funniest request you’ve been asked?
I recently received a phone call from a guest asking for me to help remove a bug which was flying around in their Scenic Sun Lounge. That was a first for me!

GLORIOUS FOOD
“Ask not what you can do for your country. Ask what’s for lunch.” - Orson Welles Gastronomy has become a central part of the tourism experience. From degustation and fine-dining, to a relaxed café style meal, highlight evenings or unwinding with new friends. There’s a venue and a menu to suit every occasion on board our Scenic SpaceShips and, with so much choice, Orson Welles asked the right question – “what is for lunch?” Diverse and delicious food experiences are one of the highlights of your Scenic cruise. From your first coffee of the day to that last relaxing nightcap, your mini-bar to late night room service, you’ll be spoilt for choice. Our chefs draw inspiration from the regions you travel through so all our food is seasonal and regional as well as freshly prepared and delicious.
And what would food be without just the right drink to go with it? Choose French champagne, a delicate cocktail, regional wines, selected by our sommelier, or a local beer at all of our dining venues. Affording a broad spectrum of sumptuous dishes that perfectly echo the culinary highlights of Europe, Scenic takes you on a gastronomic journey. On board our luxury Space-Ships you’ll find up to six dining options and a menu to suit every occasion. Whether you’d like a light bite to accompany the first coffee of the day, sumptuous a-la-carte fare shared with new found friends in our Crystal Dining restaurant, or a fine-dining experience in L’Amour, our chefs guarantee an enriching banquet for the senses.
B
SCENIC CULINAIRE As well as gastronomic experiences onshore, we want to introduce you to regional recipes during your time on board your Scenic Space-Ship. That’s why we’ve transformed one of our dining venues into a private cooking space where you can participate in a series of cooking classes, taught by experts. Using the finest, locally sourced ingredients, Scenic Culinaire boasts its very own cheese and wine cellar, as well as a live camera with screen, so you won’t miss a single drizzle or slice as the chef creates recipes you’ll adore.

There's nowhere better to experience the gastronomic delights of river cruising than Bordeaux
A Day in Lyon One of France’s oldest cities and the country’s gourmet capital, Lyon finds itself uniquely positioned at the confluence of the Rhône and Saône rivers. Here's our guide to exploring the second city with Scenic. Morning
Afternoon
Make an early morning venture into Lyon to witness the sunrise at La Basilique Notre Dame le Fourivere. Built between 1872 and 1844 by Pierre Basson, this beautiful structure has been described as a ‘treasure of humanity,’ taking watch over the city and providing a truly wonderful vantage point, from which to watch the sun come up. Head back to your ship for a wonderfully French breakfast of croissants, eggs Florentine and even a glass of champagne if you wish in Crystal Dining.
As the gastronomic capital of France, it wouldn’t make sense to visit Lyon and not immerse yourself in its culinary delights. Head out to the local market with the on board chef and choose your own locally grown produce, then cook up a storm in Scenic Culinaire, making a delicious creation with your findings. If you’d rather watch than get hands on, why not join a tour of the Paul Bocuse Institute, the exclusive culinary school owned by the famous chef? Here you’ll see the students perfecting the art of French cuisine before watching a cooking demonstration.
Later in the morning, why not wander through Lyon's hidden traboules – secret passageways that date back to the 4th century, or visit the medieval village of Perouges, which has been well preserved since the 14th century and is one of the most picturesque villages in the region. Using your free time, we recommend paying a visit to the Musée des Confluences. Aptly located at the confluence of the Rhône and Saône rivers, the contemporary metal and glass surrounds of the museum houses exhibitions that tell the tale of humankind and the science behind life as we know it.
Evening Delve into fine dining on board at L’Amour, where your taste buds will be tantalised by an array of delicacies cooked and plated to perfection, with delights such as traditional soupe l’oingion cidre, lamb carré and pistachio crème brulée on the menu.
Try something different? If you want to explore independently, we recommend the following favourites whilst in Lyon.
Breakfast at Pimpernelle Enjoy the most important meal of the day at this chic café where you can opt for French pastries and a selection of teas and coffees to start your day off right.
Lunch at Le Bouchon des Filles Hearty, fresh and home-cooked without pretension. Run by friends Laura and Isabelle, aka Les Filles, they serve delicious mains like roast Andouliette sausages and beef and pork chips, with decadent desserts to finish.
An afternoon at the Museum of Fine Arts Discover sculptures and paintings dating from the 14th century along with oriental and Egyptian artefacts, and visit the delightful tea room which looks out over the gardens.
Wander Halles Lyon-Paul Bocuse Visit the city’s first covered market place, where 48 traders showcase the produce of local butchers, fishmongers and wine merchants.
Pre-dinner drinks at Le Vin des Vivants This beautiful wine bar is the perfect spot for a pre-dinner drink. The warm lighting and authentic interior design make you feel as though you’re sat in your own private wine cellar.
Michelin-star dining at the Les troil Domes Exquisite gourmet food in a romantic setting overlooking the banks of the Rhône.

BEAR MAN
Having spent almost 25 years studying Whistler’s bear population, expert researcher Michael Allen shares his passion for these extraordinary animals as part of a Scenic Enrich experience on a selection of our itineraries in Canada. Jeanie is a brown bear with 766 friends on Facebook. The Whistler mother is also notorious for taking her children into the resort village and picking food out of the garbage. “She’s just trying to be a good mother, doing what she thinks is best for her young,” says her long-time friend Michael Allen. Life’s been rough for Jeanie. Last year, one of her daughters was struck by a motor vehicle and died. Another daughter, Juniper, was shot and killed while perpetrating a break-in. Her son, Jack, was found on the shores of Lillooet Lake, shot by persons unknown. For five nights in December, Allen stayed with Jeanie from dusk to dawn, trying to keep her out of trouble. Allen studied Jeanie, and the 100 or so other bears around Whistler, since moving to the area in 1993. “As soon as I got here,” he recalls, “I jumped on my mountain bike and rode down to the landfill. A bear ran across the old Cheakamus River bridge right in front of me. Then I got around the corner and there were four bears in the garbage. They didn’t even look up at me. I was in heaven.”
“A bear will feed for about 15 to 16 hours a day, eating up to 50,000 berries in that time to gain weight for winter. Pasta with cream sauce from a dumpster, or even pet food, pack far more bang for the bite.”
Allen is not a trained biologist or zoologist. He’s simply a guy with an intense, unwavering interest in bears. “I’m not an environmentalist, not an advocate,” says Allen. “I just give people information.” Born in Trail, B.C., in 1964, Allen is the second child and only son of a “tough, fiery” Italian mother and an old-school deer hunter who felt more comfortable in the bush if he had a rifle. Allen found himself spending more and more time alone, away from school and home, wandering the woods. It was during his time in the woods, encountering bears that fear turned into fascination. “I just recognised bears—I’m not understood, and bears aren’t either.” At his cabin, on the patio table by the front door is a pinkish organ preserved in a large jar. It’s the heart of a bear, a lanky male named Slim that was hit by a car. “God, I miss Slim,” Allen says. “He had a lot of character.” Slim’s skull sits next to the fruit bowl on the kitchen table. His bleached bones are in a plastic bin on the seat of a chair. We hop into Allen’s new Toyota Tacoma and head to his old stomping grounds. Though the landfill’s been closed for two years, there’s the unmistakable pong of garbage in the air. He stops to point out where he watched two cubs, yearlings, repeatedly sliding down a slope. They discovered Allen, perhaps still smelling of the pizza he’d eaten earlier, and clambered over him like kittens, stepping on his face. The sow looked on unperturbed. He realised that this was not a precedent he wanted to set, left, and never let it happen again.
Some bears have become accustomed to encroaching on human habitat, down in the valley. As they do, they develop a taste for what humans leave out. A bear will feed for about 15 to 16 hours a day, eating up to 50,000 berries in that time to gain weight for winter. Pasta with cream sauce from a dumpster, or even pet food, pack far more bang for the bite. When there’s a bad berry crop, habituated bears will come down into the valley seeking calorie-rich, efficient food sources. Along with the garbage they’ll also ingest crushed glass and huge amounts of plastic. Leaving space and corridors for the bears to roam is important, but what’s absolutely critical to our peaceful coexistence with bears, is taking control of our communities’ garbage. I ask where Jeanie is denned. He knows where she is, of course: buried deep beneath the snow in a den on the north side of Whistler. She and her remaining cub will eventually emerge from their den and head down into the valley, to the nearest skunk-cabbage swamp. The next time she has cubs, she’ll probably turn to garbage again. However many friends she may have, old habits die hard, and Jeanie’s will probably only die when she does.

HOW TO BE A SUSTAINABLE TRAVELLER Louise Southerden is a sustainable travel writer. You can follow her travels at www.noimpactgirl.com
1. BYO reusables
6. Eat less meat
Reducing our reliance on single-use plastics is one of the best ways to make a difference. Invest in a stainless steel water bottle, a reusable coffee cup, cloth shopping bags, maybe even reusable chopsticks; Japan alone uses 24 billion single-use wooden chopsticks every year.
Follow in the footsteps of Sir David Attenborough, who recently switched to a plant-based diet “because of the state of the planet”. Whether you go vegan, vegetarian or “flexitarian” you’ll help reduce carbon emissions, deforestation and the suffering of farmed animals.
2. Pick up litter
7. See wildlife in the wild
Trying to leave every place you visit better than you found it can start with the simple act of picking up rubbish. Maybe set yourself a target of collecting ten pieces of litter for each day of your trip, then dispose of it responsibly when you return to your accommodation.
Cruelty often happens behind the scenes, so remember World Animal Protection’s mantra: if you can ride, hug or take a selfie with a wild animal, it’s probably suffering. Instead, see wild animals in their natural habitats (or ethical enclosures).
3. Pack light
The art of
SUSTAINABLE TRAVEL
10 ways to make a difference Travel has long been a way to cast off our cares and forget about the world’s woes, for a while at least. We might not be able to disconnect as easily these days and travelling with an awareness of climate change, overtourism and plastic pollution, among other issues, isn’t a bad thing. But it’s helpful to remember that travel has plenty of positive impacts too – and not just for us. It promotes cross-cultural understanding, for one thing. Our travel dollars, euros, riels and dinars can help stimulate local economies and create employment. And visiting natural places helps fund
Taking less luggage reduces your carbon footprint, according to Finnair regional manager Arnaud Michelin. “If every Finnair passenger takes one kilogram less, we can save 1.2 million kilograms of fuel in a year, enough to fuel 20 flights between Helsinki and Tokyo,” he says.
A bit of pre-trip research into environmental and social issues affecting your destination can help you make informed choices about what to eat, do and buy when you’re there. Are there any local foods or products that might be sourced from unsustainable farming, logging, hunting or fishing practices?
4. Give back
9. Talk the talk
Taking useful toys, clothes, medical supplies and household goods to donate to underprivileged children in developing countries is a great way to give back. Some airlines will help by increasing your luggage limit if you put in a request two months before your trip.
Actions might speak louder than words, but words are important too. Chatting to your fellow travellers and asking about sustainable travel issues can help change attitudes and actions. Why not celebrate key events while you’re away such as Earth Hour (28 March), World Environment Day (5 June) or World Toilet Day (19 November)? It helps remind us we’re all in this together.
5. Shop wisely
By Louise Southerden conservation, gives governments an incentive to protect them and connects us to the global ecosystem we all depend on. Put simply, travel has the power to make advocates of us all and there are now more ways to travel sustainably than ever before. It doesn’t have to be a chore. Just remember to travel with kindness, awareness and respect – for the people, places and animals that so enrich our lives every time we travel. Try these ten ways to maximise the positive impact of your next trip.
We don’t use plastic water bottles on board our ships on the Mekong and Irrawaddy rivers, and have introduced recyclable glass straws on our Europe ships.
8. Be informed
Buying locally made souvenirs supports the local economy and keeps traditional crafts alive, but avoid those made from shells, ivory, coral, tropical hardwoods and protected or endangered animals. And remember to leave shells, feathers and other natural things where you find them; taking them home can disrupt local ecosystems.
10. Be changed The more we’re affected by the places we visit, the more connected we are to them and the more motivated we feel to help lessen our impact. So jump in with both feet, take everything in and bring home stories about how amazing this world really is.

WRITER ALISON STEWART CONTINUES HER JOURNEY THROUGH EGYPT
2020/21 New Collection Now On Sale
NILE RIVER CRUISE
B
As we launch our new 2020/21 season, writer Alison Stewart explains why everyone should sail Egypt's magical river.
It is not a cliché. A traveller to Egypt must sail the Nile. Sitting on the empty upper deck of our river yacht watching this eternal ribbon of light unspool invokes something profound within the raucous babble of the land of the pharaohs. The multifaceted light, the vastness of African sky, the density of heat, and the reflective river silence conjure a rich saga of empire, greed, longing and beauty. It is the enduring watery equivalent of the tree of life, representing the story of our world. The Nile River stretches like a skeletal arm up through Egypt, the bony fingers of its delta reaching into the Mediterranean. It may look emaciated, but it provides plenty beyond imagining.
C
Without the Nile, there would be no Egypt as we know it, no rich and enduring culture, nor indeed, much of water-dependent northern Africa – more than 300 million people from 11 African countries rely on its water and the Nile river basin contains more than 10 per cent of Africa's land. Without this serene waterway, there would be no Egyptian antiquities and even if there were, no easy way to view them. This is why a Nile cruise is such an essential part of an Egypt sojourn, just as it was for the pharaohs' processions down the Nile, the three-month dahabiya (large houseboats with sails) cruises. Scenic's 11-day Treasures of Egypt journey includes four nights of pampering aboard the Sanctuary Sun Boat III, sailing from Luxor to Aswan, following the course of the ancients as they sailed grandly south. This is an elegant, luxury "river yacht" in British colonial style interspersed with Egyptian/ Bedouin touches. Sanctuary Sun Boat III, which Architectural Digest once dubbed the Jewel of the Nile, has a shorter draft than many Nile cruisers, which means we can anchor at less-populous places such as Qena, especially when water levels drop in summer.
D

Fresh from Luxor's Valley of the Kings and Queens and seeing Queen Hatshepsut's and Rameses II temples and the Colossi of Memnon, we settle in before visiting the vast open-air temple complex of Karnak with its monumental Hypostyle Hall. During the following days, it's an easy glide from the river to the marvels that pepper the river plains – Luxor Temple, Qena and Hathor's Temple at Dendera, Kom Ombo Temple and finally Aswan for the unfinished obelisk, a felucca cruise to a Nubian village, and the Osiris temple complex at Philae, raised from the floods. FACTS ABOUT AFRICA
EIGHT
Africa is a continent of monumental beauty, a place where the natural law of eat or be eaten prevails. As we launch our new collection, here’s our top ten facts you may have never known about this extraordinary country.
ONE
Four of the five fastest land animals reside in Africa: the cheetah, the wildebeest, the lion, and the Thomson’s gazelle. All of these animals can run short distances at speeds above 80 kilometres per hour, with the cheetah reaching a top speed of about 113 kilometres per hour. Go in search of Africa's vast wildlife on one of our fully-inclusive escorted tours. From the magnificent Kruger National Park, where as part of our Scenic Enrich, you can dine under a starlit sky with the sounds of the African wildlife close by, to the Maasai Mara National Reserve, where you can visit a traditional Maasai village and learn all about their culture.

B
Hippos are susceptible to sunburn, and spend most of their days with just their noses out of water. Their noses have special flaps that close when submerged, and they can stay under water for up to 25 minutes.
THREE
Africa makes up 16% of the world’s total population with approximately one billion people. More than 25% of the world’s languages are spoken only in Africa.
PAGE 28
“Hippos are susceptible to sunburn, and spend most of their days with just their noses out of water.”
Africa is the world’s hottest continent with deserts and drylands covering 60% of the land surface area (e.g. Kalahari, Sahara and Namib deserts), and is the world’s second driest continent after Australia.

HOW TO CAPTURE THE PERFECT NATURE SHOT
Mother nature can be a tricky one to capture, whether you’re a budding photographer or a selfconfessed novice. So, here’s our top tips on how to return from your Scenic adventure with photographic works of art...
CREATE DEPTH
CAPTURE MOVEMENT
Creating depth is one of the most important ways to achieve realism. Using a tripod keeps your camera still and a wide-angled lens distorts parallel lines. Ensure you keep the subject or subjects sharp by using a small aperture and focus on lighting from the side, as this emphasises an object’s 3D form.
If you’re lucky enough to spot wildlife as they exist in their natural habitat, you’ll want to ensure you get the best shot of them doing their thing. Use a fast shutter speed to avoid blurry shots, increase the aperture on your camera and use the flash to counter low light.
FIND THE RIGHT LIGHT
BE PREPARED
BE PATIENT
It’s a good idea to research which times work best in every location, it can be the difference between an exquisite shot and a disappointing one. Getting up early as the sun rises, or waiting until the sun begins to set is often referred to as ‘golden hour’, providing excellent lighting for any subject.
It may seem simple, but if you have an idea of what you’re on the lookout for, you can be as prepared as possible if or when it occurs. A long lens will work wonders for tracking the ‘big five’ from a distance, and it doesn’t hurt to research patterns of behaviour to encourage the ‘perfect’ shot.
Nature is predictably unpredictable, so it’s almost impossible to guarantee you’ll ever get ‘that’ wildlife shot. However, if you can afford it, your patience can go a long way as nature takes its course. You’ll find the most impressive photographs come from hours of observing the same spot, in the hope your persistence pays off.

This most perfect of perfect sunrise feels somehow suspiciously preordained. Perhaps, I wonder momentarily, it’s yet one more aspect of the impeccable service that distinguishes every facet of Scenic Spirit.
On a voyage full of magical moments, Travel Editor Anthony Dennis captures a memorable first morning Mekong scene from his suite on board Scenic Spirit. It’s a good morning in Vietnam. A very good morning in Vietnam. In moments before dawn following my first night aboard Scenic Spirit, now anchored in the midst of the Mekong Delta, I’m up. I’m lowering the automatically-operated blinds in my suite to greet not merely the new day but the beginning of an Indochina river odyssey. As the blinds open, shafts of delicate pink light immediately pour into the room. The fully lowered blind reveals a singularly spectacular sunrise, seemingly purloined straight from the publicity poster for Miss Saigon.
Of course, the spectacle before me is all as authentic as the Mekong itself, at 4,350 kilometres in length the world’s 12th longest river, beyond the tinted glass pane.
A
Fortunately, there are no menacing “American War” vintage military choppers to complete the scene (and the poster). Instead there’s simply the perfect, timeless outline of a silhouetted wooden fishing boat with its conical-hatted rower standing with a raised oar, the craft drifting before the increasingly fiery red ball hoisting itself above the river’s distant eastern bank. From my bed, in the lap of luxury, I recline on my side watching as rippling, chocshake-coloured waters lap almost level to the bottom of the panoramic window of my suite. Never did I believe that the muddy waters of the Mekong could ever appear so alluring. PAGE 32
Wide and brown it’s no blue Danube. Yet it takes no time to succumb to its charms, anchored here not far from the Mekong Delta town of Cai Be with the lofty spire of its historic French-style Catholic church protruding magnificently, if incongruously, above the rusting tin rooftops of huddled riverside shanties. In her book, The Lover, set during the late 1920s and early 1930s of French colonial era rule in the Vietnamese riverside city of Sa Dec and based on a chance, illicit love affair – every bit as steamy as any monsoonal night in Vietnam, – the French author Marguerite Duras writes lovingly of the mighty waterway itself. “Never in my whole life shall I ever again see rivers as beautiful and big and wild as these, the Mekong and its tributaries going down to the sea, the great regions of water soon to disappear into the caves of the ocean. In the surrounding flatness stretching as far as the eye can see, the rivers flow as fast as if the earth sloped downwards.”
Up river, the Scenic Spirit, with room for just 68 passengers on my 15 Day Treasures of the Mekong journey, will visit Sa Dec, allowing its passengers to wander the riverside market that extends impressively all the way along the neat waterside promenade and, notably, the faded home of Huynh Thuy Le, a member of a wealthy local Chinese family, and Duras’s lover.

Eventually, the Miss Saigon sunrise show being unveiled in my stateroom, replete with all of the mod-cons and features of a five-star hotel suite onshore, concludes. Like the sun, it’s time for me to rise. Breakfast, and a day of sightseeing on and along the Mekong, beckons. But even inside Scenic Spirit – purposebuilt for cruising these waters – itself the views are impressive. The walls are decked in fetching chocolate timber panelling and festooned with appealing artworks while upstairs there’s a stylish, palm-fringed deck and bar complete with a compact, but not too compact, swimming pool. From there, with more than a week of the cruise to Siem Reap still ahead of me, I rather fancy my chances in attempting, over a cooling cocktail, to experience a sequel Miss Saigon-style sunset as captivating as the sunrise I’ve just witnessed from the plush eyrie of my suite.

CITY GUIDE
taste
Ho Chi Minh City
1. Tip the beef stock along with 500ml of water into a large saucepan.
Renowned for its remarkable dishes and distinctive flavours, Ho Chi Minh City is a foodie’s paradise. From street food to fine dining, there’s something to suit everyone. Many say that the best Vietnamese food available can be found on the streets of Ho Chi Minh City, and the best way to sample what the locals eat is on a guided tour. No matter if you’ve been to Vietnam before or not, you’ve likely heard of pho, a combination of soft rice noodles in a soup broth, often accompanied with either chicken or beef and lots of fresh herbs. Simply delicious.
2. Char the onion and ginger in a frying pan over a high heat for around 3-5 mins (you can also do this under your grill). 3. Once charred, add to the beef stock 4. In the same pan, toast the spices for 2-3 mins and once they begin to smell fragrant, add them to the beef stock as well. 5. Bring the stock to the boil, then turn to a simmer and cook for 30 mins before straining.
Ho Chi Minh City local street food
6. Meanwhile, cut the fat from the steak, wrap it in cling film and put it into the freezer for 15 mins – this will make your steak easier to slice.
see
7. Slice it thinly, then cover with cling film again and pop into the fridge.
Learn about Ho Chi Minh City‘s fascinating combination of colonial, post-colonial and post-Vietnam War history through its architecture and museums, on a visit to the War Remnants Museum and Reunification Palace. Occupying several buildings and outdoor courtyards, visitors to the War Remnants Museum can see military equipment including helicopters, fighter planes, tanks and bombs, perfect for history buffs young and old.
8. Taste the beef stock and use the palm sugar, fish sauce and soy to season. 9. Cook the noodles according to package instructions and split between two bowls, topping each with the sliced beef. 10. Bring the stock to the boil and then pour into the bowls (the heat will cook the beef). 11. Top each with the spring onions, chilli slices and herbs.
Reunification Palace
12. Serve with the lime wedges to squeeze over.
play INGREDIENTS 1l low salt beef stock
1 tsp palm sugar
1 large onion, peeled and cut into quarters
1 tbsp fish sauce
large thumb-sized piece ginger, peeled
1 ½ tbsp soy sauce
1 cinnamon stick
200g flat rice noodles
2 star anise
2 spring onions , shredded
1 tsp coriander seeds
1 small red (bird’s-eye) chilli, finely sliced
½ tsp cloves
A handful of Thai basil and coriander
230g sirloin steak
1 lime, cut into wedges PAGE 36
There’s so much fun to be had in Ho Chi Minh City. Join a vintage Vespa tour and hit the streets. China Town, also known as Cho Lon, on the west bank of the Saigon River, is a great place to start. The art galleries and museums, namely the Fine Arts Museum and History Museum, are a treat and a free guided tour of the Reunification Palace is an absolute must. Visit Notre-Dame Cathedral, the City Post Office and Municipal Theatre, also known as the Opera House.
Cu Chi Tunnels
explore Steeped in history, a visit to the Cu Chi Tunnels are an absolute must during your time in Ho Chi Minh City. Built by the Viet Cong in the 1940s as protection from French air raids during the Indochina conflict, the tunnels extend underground for more than 155 miles. Soldiers used these underground routes to house troops, transport communications and supplies, lay booby traps and mount surprise attacks, after which they could disappear underground to safety.

SCENIC ECLIPSE CHRISTENING WITH DAME HELEN MIRREN
C
D
10 SEPTEMBER 2019, NEW YORK CITY Overseeing the prestigious event, master of ceremonies Claire Newell was on hand to introduce Scenic Eclipse Captain James Griffiths and NYC Ports General Manager Ken Winkler, who presented the 1st Visit Plaque to Mr Moroney. Mr Moroney then delivered a short speech that spoke of the creative drive and determination to deliver such a unique sailing experience and detailed the history of the build, from its first moment of conception. Mrs Karen Moroney and her design team comprising Carmen Mikus (Interior Project Design) and Niksa Fiorienni (Architect) were acknowledged as the creative drive behind Scenic Eclipse. Reflecting the ship’s stylish and exclusive ethos, the official naming ceremony
was attended by over 350 global media, agents and VIPS who witnessed Dame Helen Mirren christen the ship dockside by breaking the ceremonial bottle of champagne against the hull and bestowing the traditional blessing of safekeeping over all those that sail in her. Dame Mirren added: “I was thrilled to be invited to take on the role of Scenic Eclipse Godmother, even more so now that I have stepped aboard and seen the level of design detail and technology that have gone into her creation. She is an exceptional cruising experience, and I’m honoured to have christened her. I wish her crew and guests many years of sailing adventures and discovery”.
A
Following August’s much anticipated launch of Scenic Eclipse, a groundbreaking few weeks for Scenic – and ocean cruising in general – were topped off in spectacular style with the yacht’s Christening ceremony in New York City this September. Heralding a new and exceptional era in ocean cruising, the official christening ceremony took place on 10 September at Pier 88, Manhattan Cruise Terminal, set against the world-famous backdrop of Manhattan itself. Joining Scenic for the ceremony was our very special guest and Scenic Eclipse Godmother, Dame Helen Mirren, along with

her husband, Academy Award-winning director Taylor Hackford. Dame Helen Mirren and Taylor Hackford were both welcomed on board by Scenic Eclipse’s co-owners Glen and Karen Moroney, enjoying a private tour of the yacht ahead of the official ceremony. “It was an honour to welcome Helen and Taylor on board and to share with them our vision and passion which together with the dedication and talent of the Scenic team has created an experience which has set a brand new benchmark in discovery cruising”, said Mr Glen Moroney, Chairman and Founder, Scenic Luxury Cruises and Tours.

MITCH GOBEL FOR SCENIC ECLIPSE Specially commissioned artwork for Scenic Eclipse reflects the complexity of the world around us, inspired by nature, love and the evolution of self. A discerning interior design vision led to the commissioning of a select number of artists whose work have been chosen by Scenic Project Director of Design, Karen Moroney, to bring to life the walls of recently-launched Scenic Eclipse's suites and public spaces. With a focus on artists who represent the Scenic owners’ Australian connection, and share their deep passion for the environment, Byron Bay inhabitant and Australian-born Mitch Gobel fitted the profile perfectly with his unique form of abstract art, using resin. And Gobel’s bold and beautiful works of art now adorn the walls of The World’s First Discovery Yacht™. “His works are truly beautiful. They reflect the colours and movement of the ocean and exhibit a passion for life and the environment, which is at the very essence of the design of Scenic Eclipse”, said Mrs Moroney. “Mitch’s work is a true reflection of the incredible talent in this country, and we are incredibly proud to be able to feature his works”.
Gobel’s dedication to helping raise awareness of worldwide conservational issues has led him to collaborate with Greenpeace as part of their Save the Reef campaign, designed to impart knowledge on preventing the destruction of the Great Barrier Reef, one of the world’s great wonders.
B
THE THOUGHT BEHIND THE MELT COLLECTION
D
“The intention behind these works was to create a collection of art which illustrates a few specific oceanic environments of beauty and natural wealth. The artwork pays tribute to what we value from a positive perspective, as a reflection of our love, wonder and appreciation for the natural world.
He’s combined forces with the Sea Shepherd Conservation Society, a non-profit marine wildlife group taking action to protect the ecosystems and species of the world’s oceans, and is an ambassador for the Goongerah Environment Centre (GECO), a grassroots community group based in the town of Goongerah, Victoria, working to protect the forests of East Gippsland against logging. Here at Scenic, we’re delighted to have commissioned three original pieces from Mitch Gobel’s The Melt collection, entitled Costeria Amalfitana, Raja Ampat and The Antarctic Peninsula, as well as 124 prints selected for display in the yacht’s stunning suites. Consequently, we currently hold the largest selection of his work in the world, all on board Scenic Eclipse.
PAGE 42
I invite you to dive into my perception of three very unique environments which we know are vital to the health, diversity and abundance of life in our oceans. These areas deserve great recognition, and conservation should be at the forefront of our consciousness towards them.”

WITH NATIONAL GEOGRAPHIC PHOTOGRAPHER SISSE BRIMBERG.
Award-winning National Geographic photographer Sisse Brimberg has produced more than 30 stories for National Geographic magazine over the last four decades. Her work ranges from documenting the life of fairytale writer Hans Christian Andersen to a National Geographic project chronicling the Viking culture. We caught up with Sisse as she reflects on the pleasures of travelling by ship and some of the unique photo opportunities that await travellers on these trips.
What do you most enjoy about travelling by ship?
In my opinion, there is no better way to travel than sailing on board a ship. I’ve always enjoyed this type of travel, where you venture ashore and get to know new places and people. Then you return to your lovely ship—your home base—which is ready to take you on the next adventure. From a practical standpoint, I like to spend my energy on being creative and not on having to move from place to place, with no need to unpack more than once. You can focus on really getting to know the places you explore. A B C D
What can our guests expect to learn about photography while travelling with you?
As the on board photographer, I have a wonderful opportunity to teach my fellow travellers about photography, whatever their level is. I love that I can help guests take better pictures, and through the medium of photography, help them capture the spirit of the places they explore. This gives them the chance to take home a great set of photos from the journey, which they can share with family and friends.
What are you looking forward to as the National Geographic photographer on board these new river cruises?
Over the years, I’ve had the opportunity to work at many of the destinations where we visit; I can’t wait to share my experiences and my knowledge of these places with our travellers. I will also have the opportunity to give talks on board the ship to open the door to the world of photography for anyone interested. We are going to have fun.

I’m required to come up with new and innovative concepts throughout the year, working closely with numerous departments internally and externally in order to achieve this. With so many new and exciting itineraries and destinations, life at Scenic is far from dull. I manage several brochure launches throughout the year, kicking off with Southeast Asia and The Americas, right through to our popular Australia & New Zealand and evergrowing Asia & Far East Collection.
At the heart of Scenic’s philosophy is the opportunity for our guests to visit some of the most amazing destinations in 5-star luxury, with a whole host of once-in-a-lifetime experiences included. From our expert Journey Designers curating each and every unique itinerary, to our knowledgeable Tour Directors who allow guests to see the very best of what the destination has to offer. Back in May last year, I was lucky enough to experience a river cruise and escorted tour to Southeast Asia on board the incredible Scenic Spirit. Two weeks before my wedding and after my final dress fitting, I was wondering whether an all-inclusive luxury river cruise was the way to go, but there was no way I was missing out on this fantastic opportunity. With the vast array of fresh local produce, healthy wellness shots and delicious Asian cuisine, alongside a trip or two to the on-board gym, I actually felt healthier than I had in a long time.

There were so many amazing highlights to my trip. We watched the sunrise over the magnificent Angkor Wat, before a lovely champagne breakfast in a secret location, and attended a stunning gala dinner at an Angkor temple in Siem Reap, where we were treated to traditional entertainment from Apsara dancers, whilst being served mouth-watering food. My time at Scenic has taught me so many things about the world of travel, as well as the many different cultures and traditions opened up to our guests on every adventure. I love my job and look forward to seeing where in the world we’ll be exploring next.
