Pumpkin Swirl Muffins Prep Time: 7 minutes | Bake Time: 15 minutes | Yield: 12 muffins
These naturally gluten-free muffins are a healthy alternative to many pumpkin-spice indulgences. Packed with protein and fiber, these completely clean muffins are a perfect treat for any time of day. The best part is that these muffins are as easy to make as they are delicious. Muffins
Step 1: Pumpkin Batter
2 cups gluten-free rolled oats 1 cup pumpkin puree 2 eggs 1 cup whole Greek yogurt ¼ cup maple syrup 1 ½ teaspoons baking powder ½ teaspoon baking soda 1 teaspoon vanilla extract ⅛ teaspoon kosher salt 1 teaspoon cinnamon 1 teaspoon pumpkin pie spice
Preheat oven to 400° F. Measure all ingredients for muffins and place in a high powered blender. Blend ingredients together, starting on low speed and gradually increasing to high speed, until the batter is smooth.
Swirl 1 cup whole Greek yogurt 1 egg 2 tablespoons maple syrup
Step 2: Greek Yogurt Swirl In a bowl, mix together ingredients for the Greek yogurt swirl until completely combined.
Step 3: Swirl the Muffins Line a 12-cup muffin pan with parchment liners. Fill ⅔ of the way full with pumpin muffin batter. Spoon approx 2 tbs of the Greek yogurt mixture on top of the batter. Using a knife, swirl the two batters together, being careful not to overmix.
Step 4: Bake Bake muffins for 15 minutes, or until a toothpick inserted into the center comes out clean.
