Hope Nelson Founder Katie Monsen Founder & OwnerTexas barbeque (or barbecue) is known for its smoky, savory flavors, and nothing exemplifies that more than Texas-style brisket, typically defined by a dense salty bark and heavy black pepper. There are many different styles of barbeque in Texas, from the South Texas-style that uses mesquite wood, to Central Texas, which uses primarily post oak wood, to East Texas, where the barbeque is mainly cooked with pecan wood. But what really defines most Texas-style barbeque is the lack of sauce or wet ingredients. Texas-style barbeque predominately is made with dry rubs and rarely sauced (with the exception of pork ribs, which many pitmasters choose to glaze with a light, sweet sauce).
