Welcome to our little mountain home of Jackson Hole. Nestled at the gateway of Grand Teton National Park and Yellowstone, our surroundings are rare, breathtaking, and a bit wild. This is a land where buffalo still roam across the valley, rivers remain clear and untamed, and the rugged beauty of the Teton’s silhouette grows more striking with each new season. From winters filled with backcountry skinning expeditions and unmatched downhill turns, to summers packed with camping, hiking, and boating, the lives we lead here are nothing short of extraordinary.

Perhaps it is this adventurous mindset that has allowed us to remain resilient throughout this unsettling time. Maybe it’s that old wild-west hard-

headedness that comes from years of living in a place so intense that has allowed us to make it through these unprecedented events. Whatever it is, our community has stayed strong and true – a fact proved by the strength of our local businesses. Allow me to introduce you to some heroes of Jackson Hole, to the backbone of our little town: small businesses and individuals that have exemplified the never-back-down-from-a-challenge spirit of our community. I am so proud to represent these businesses and community members in Volume 7 of The Scout Guide.. Mediterranean Quinoa Salad 1 cup Kalamata olives, drained, halved 1 cup quinoa 1 head cauliflower, cut into small florets 2 tbsp extra virgin olive oil 1/2 cup roasted almonds, chopped 2 oranges, zested, peeled, cut into segments 2 tbsp fresh parsley, chopped 1 tbsp fresh mint, chopped Salt & freshly ground pepper

Instructions Preheat oven to 425Â° F Bring quinoa and 1 cup of water to a boil in a small saucepan. Reduce the heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with fork. Spread cauliflower onto baking sheet and toss with olive oil, season with salt and pepper, and roast until golden brown and slightly crisp, about 25 minutes. Let cool. In a large bowl, combine quinoa, cauliflower, olives, almonds, orange zest, orange segments and any juices, parsley, and mint. Season with salt and pepper to taste.
