INTRODUCTION Food is defined as, ‘any nutritious substance that people ... eat or drink ... in order to maintain life and growth’. We, the South Carolina Specialty Food Association, believe that food is more than just a basic necessity. Food should be an experience – like waiting in a line that stretches out of the door to order barbecue, retrieving your sauce selection from an antique piano-turned-sauce-bar, and being served homemade corn pudding so good it’s all you dream about for the next week. Food is cultural – like preserving generations-old family buttermilk biscuit recipes that are critically acclaimed by Oprah herself. Food is a way to be creative – from the bakers and cooks that dream up the recipes to the gourmands that put the same delectable, tangy sauce on anything and everything from seafood, to fries, or even on plain-old crackers for a little kick. This catalog is a celebration of South Carolina’s unique food producers from across the Palmetto State. From stone-ground grits to handcrafted small-batch ice cream, pimento cheese, and every lip-lickin’ sauce flavor in between, members of the S.C. Specialty Food Association are creative and hard-working entrepreneurs that can cure any craving. As the Yellow Pages say, “Let your fingers do the walking.” Here you will find many of our South Carolina artisanal food producers and most will send samples! Each product is made with a passion for food and a passion for representing the heritage of South Carolina. Unique to the Lowcountry since Colonial times, Benne (the Bantu-word for sesame) was brought to the southern United States by slaves from West Africa. Sesame is a versatile seed that has a nutty, sweet aroma with a milk-like, buttery taste. When toasted, its flavor intensifies, yielding an almost almond or peanut butter-like flavor. KETCHUP: Whereas vinegar-based sauces are more of a basting liquid, BBQ sauce made with ketchup is a thick, sweet flavor that often coats the smoky end product. It is heavy, hearty, and just as important to any BBQ meal as the meat it rests on.

Aunt Dottie’s Parmesan Balsamic Chicken INGREDIENTS 2 pounds chicken breasts ½ cup Aunt Dottie's Parmesan Balsamic Vinaigrette 3 tablespoons olive oil 2 tablespoons butter 1 pound mushrooms, sliced 2-3 sprigs fresh rosemary, stems removed 3-4 cloves fresh garlic, chopped or sliced (or substitute an entire head of roasted garlic) Cracked black pepper and sea salt, to taste DIRECTIONS Place chicken breasts in an air-tight container. Sprinkle with salt and pepper. Coat with Aunt Dottie's Parmesan Balsamic Vinaigrette. Refrigerate 1-2 hours. In a cast iron skillet, brown the mushrooms in olive oil over medium-high heat, then reduce heat and add garlic and rosemary. Sauté until tender. Remove from heat and set aside. Heat olive oil in skillet over medium heat. Add the chicken, skin side down, reserving the marinade. Salt and pepper to taste. Brown chicken on both sides. Add liquid marinade then bring to a boil. Partially cover and cook until inside is no longer pink and juices run clear. Remove lid, add mushrooms and garlic then cook until remaining liquid has reduced. Serve warm. Heirloom Tomato Pies with Blue Pimento Cheese INGREDIENTS 1 10 in. regular round pie shell (not deep dish) 1 lb. fresh heirloom tomatoes (around 3 medium tomatoes) 1 oz. chopped Kalamata olives 12 oz. Blue Moon Blue Cheese Pimento Cheese 4 ox. sharp cheddar cheese Sprinkle of fresh chopped basil 2 tbsp flour (enough for a light dusting on your tomatoes) 1.5 tbsp YEP! Shake Original seasoning (enough for a heavy coating on your tomatoes)

DIRECTIONS Slice tomatoes. Chop basil coarsely. Dice Kalamata olives. Lay tomatoes out flat and coat heavily with YEP! Shake Original seasoning and then dust lightly with flour. Flip tomatoes and repeat. Add tomatoes into the bottom of the pie shell. Add Kalamata olives and sprinkle with chopped basil. Top with Blue Moon’s Blue Pimento Cheese. Sprinkle with sharp cheddar cheese. Bake at 300° for approximately 1 hour or until bubbly. Allow to settle after removing from oven. Slice and enjoy! Serves 4-6. Toasted Brussel Sprouts with Smoked Sea Salt INGREDIENTS 1 cup brussel sprouts 1 tablespoon olive oil 1 teaspoon Smoked Sea Salt 1-2 tablespoons water

DIRECTIONS Wash brussel sprouts and trim off ends. Cut brussel sprouts lengthwise. Drizzle olive oil in a cast iron or non-stick pan. Sprinkle the smoked sea salt directly onto the oiled pan. Place brussel sprouts with the cut side down in the pan, rub them around a bit so they get coated with oil and salt on the cut side. Heat on high without stirring until they begin to toast and get toasted and browned on the bottom. Add water to the pan to steam the brussels. Jimbo's Lowcountry Shrimp and Rice INGREDIENTS 2 cups cooked white rice ¾ cup chopped celery ½ cup chopped scallions ½ cup chopped roasted red peppers 1 lb fresh local shrimp ½ stick butter 5 tablespoons Jimbo's Lowcountry Seasoning DIRECTIONS Ten minutes before cook time, cut peeled shrimp in half or thirds. Sprinkle 3 tablespoons of Jimbo's on the shrimp. Saute celery in butter on medium heat until translucent. Add scallions, peppers and 2 tablespoons of Jimbo's. Cook for 3 minutes, stirring every 30 seconds. Add shrimp and reduce heat to low, stirring occasionally. Cook shrimp until just pink, add rice and blend thoroughly. CERTIFIED SOUTH CAROLINA The Certified South Carolina program is a cooperative effort with specialty food producers, farmers, wholesalers, retailers, restaurants, institutions and the South Carolina Department of Agriculture (SCDA) to brand and promote South Carolina agricultural products. Certified SC makes it easy to find fresher, tastier options grown right here in South Carolina all while supporting local farmers and our state’s economy. Under the leadership of SC Commissioner of Agriculture Hugh Weathers, SCDA established the Certified South Carolina branding program to help consumers easily identify and purchase South Carolina products while increasing market opportunities for value-added food producers and farmers from across the Palmetto state. Research indicates that consumers are more likely to purchase products from a brand they trust. An addition of the Certified SC Product logo to any label sends a message to the consumer that what they’re buying is produced in their home state and meets strenuous standards for food safety and quality. The Certified SC program is free to join and all specialty food producers, farmers, and food manufacturers are eligible to apply. Upon approval, members will be listed on the Certified SC website, gain access to use of the logo and the ability to take advantage of the multi-media advertising campaign.
